El fantasma de los impuestos Ya es un hecho. Michelle Bachelet será la próxima presidenta de Chile y ello significa que en los próximos meses se iniciará la discusión sobre la reforma tributaria que la coalición que representa quiere llevar a cabo.

En lo que respecta a las bebidas alcohólicas, en su programa original la Nueva Mayoría planteó reemplazar el impuesto que las afecta por un tributo específico igual a 20 UTM por cada 100 litros de alcohol, pero su propuesta luego cambió y ahora señala que se establecerá “un impuesto a las bebidas alcohólicas específico, en proporción al volumen de alcohol puro incluido en cada tipo de bebida, cuya tasa estará en torno al promedio de las establecidas en los países de la OECD”.

De concretarse, los gremios sostienen que el impacto a la industria de cervezas, vino y pisco en Chile sería brutal. Se ha dicho, incluso, que el precio de los vinos podría su-

bir hasta un 109%. Hasta el cierre de esta edición, en Vinos de Chile no había una reacción oficial, pero el directorio encomendó a su presidente René Araneda y al asesor legal Federico Mekis la elaboración de un estudio para conocer el impacto de la medida.

Sin duda, un alza de precios será muy perjudicial tanto para los productores como para los consumidores, y una estocada para una industria que ha hecho importantes esfuerzos por aumentar el consumo a nivel local y la demanda por vinos de segmentos superiores de precio. Una implementación de la reforma tal cual se propone podría significar un impulso a la elaboración de vinos con menor contenido de alcohol –un tema que abordamos ampliamente en esta edición– y, probablemente, un lomo de toro más para las viñas que basan su estrategia en producciones bajas y de alta calidad.

los chilenos definitivamente se les subieron las burbujas a la cabeza. En los últimos cinco años el consu-

mo de espumosos casi se ha doblado, pasando de US$ 31 millones a US$ 61 millones. Pero no sólo eso. Ya no necesitan esperar la noche de Año Nuevo para descorchar una botella. Tampoco quedarse pegados en los demisec o moscato. Los paladares se han refinado. La demanda por vinos secos empuja un carro que parece no tener punto de retorno. Los consumidores ya gastan casi US$ 4 al año, despertando una categoría que hibernaba como los espum-osos.

Ha sido un proceso mucho más lento, pero la demanda de espumosos chilenos en el exterior comienza a sacudirse la modorra.

De acuerdo con datos de ProChile, durante los primeros nueve meses de 2013 se exportaron prácticamente US$ 15 millones, un 8% superior al mismo período del año pasado, principalmente a Japón, Venezuela y Reino Unido. Liderados por Undurraga, Concha y Toro y Valdivieso, los envíos al extranjero, en una estrategia de mediano y largo plazo, también representan un aliciente para que las viñas nacionales aumenten la oferta y calidad de sus productos.

El mercado chileno, aunque es muy pequeño en comparación a otros países –los argentinos beben US$ 364 millones de espumosos–, es atractivo en segmentos superiores de precio debido al sostenido crecimiento económico durante los últimos años y al carácter cada vez más cosmopolita de su capital Santiago. Esto no sólo ha tentado a marcas extranjeras a comercializar sus productos en Chile, especialmente argentinas, españolas y francesas, sino además ha generado un cambio cualitativo en la oferta de vinos locales, levantando fuertemente la categoría de espumosos secos y elaborados bajo el método tradicional o champenoise.

Hoy en Chile se producen espumosos desde Limarí hasta BíoBío, destinando los mejores terruños para cosechar uvas frescas y vibrantes. La mayoría de ellas proviene de valles costeros, como Casablanca y Leyda, pero en los últimos años el sur profundo ha sido redescubierto como un muy buen proveedor de uvas con pHs bajos y una personalidad muy distintiva.

Chilean wineries have refined their techniques and now produce bubblies from Limarí to Bío-Bío.

Although most of them are issued from coastal valleys like Casablanca and Leyda, in recent years the deep south has contributed with interesting examples.

Chileans have definitely lost their minds to bubbles. In the last five years, they have doubled the consumption of sparklers, from USD 31 million to USD 61 million. Moreover, they no longer feel they have to wait until New Year’s Eve to open a bottle or to stick to demisecs or Muscats. Palates have greatly evolved and become more sophisticated. Demand for dry wines is pulling a train that seems to have passed the point of no return.

Consumers now spend almost USD 4 a year, awakening a category that seems to have been hibernating.

It has certainly been a long process, but international demand for Chilean sparkling wines is also showing signs of increased activity. According to data from ProChile, exports during the first nine months of 2013 represented almost USD 15 million, 8% more than a year ago, with shipments mainly to Japan, Venezuela and the UK. Led

by Undurraga, Concha y Toro and Valdivieso, international shipments –part of a medium and long-term strategy– constitute a good incentive for domestic wineries to increase the variety and quality of their products.

Although very small when compared with other countries –consumption in Argentina is approximately USD 364 million– the Chilean market is attractive in higher price segments due to the sustained economic growth and the increasingly cosmopolitan character of the capital Santiago. Not only has this lured in foreign labels, especially from Argentina, Spain and France, to sell their products in Chile, but also introduced a qualitative change in the offer of local wines, with the category of dry sparklers produced following the Champenoise tradition benefiting the most.

Today, bubblies are produced from Limarí in the north to Biobío en the south, saving the best terroirs for those grapes with the freshest and most vibrant personality.

Most of them are sourced from coastal valleys like Casablanca and Leyda, but in recent years the deep south has been rediscovered as an excellent provider of grapes of low pH and a distinct personality.

In Itata, for instance, a group of traditional producers have come together to return their old Muscat and Cinsault vineyards to profitability, thus initiating a promising saga that is enthusiastically expected by

En Itata, por ejemplo, un grupo de productores tradicionales ha unido fuerzas para rentabilizar sus antiguos viñedos de Moscatel y Cinsault, comenzando una auspiciosa saga que tiene muy expectante a la prensa especializada. Incluso en la orilla del lago Ranco –un proyecto de la familia Silva– y en la ribera del río Pilmaiquén –un emprendimiento de Christian Sotomayor y Alejandro Herbach–, han logrado atrapar burbujas que deparan futuras y felices sorpresas.

Junto con los terruños adecuados para la elaboración de los vinos base, la mayoría de ellos mezclas de cepas tradicionales francesas, se ha depurado muchísimo la técnica para la producción de champenoise y charmat. Hoy la oferta es amplia y de una calidad creciente. Podemos encontrar espumosos simples, alegres y refrescantes. Otros elegantes, complejos y firmes. Ya no hay que buscar excusas. Los espumosos chilenos ya no sólo sirven para aplacar la sed de las festividades, sino que son una celebración en sí mismos.

Morandé Brut Nature, Casablanca

Con un 60% de Chardonnay y 40% de Pinot Noir provenientes del fundo Belén, estamos ante un espumoso elaborado bajo el método tradicional, elegante y ambicioso, producto de casi cuatro años de crianza. Con aromas florales y frutosos, pero muy bien apoyados por notas de pan tostado y trufa fresca, seduce por su fineza y complejidad. Su boca es firme, oleosa y fresca.

Made up of 60% Chardonnay and 40% Pinot Noir sourced in the Belén estate, this stylish and ambitious sparkler has been produced using the traditional method, with almost four years aging. In addition to choosing the proper terroirs for making the base wines, most producers blend traditional French varieties and have refined the techniques used in the Champenoise and Charmat methods. Today, the offer is extensive and the quality is consistently improving. We can find simple, merry and refreshing sparklers, and others that are elegant, complex and well-structured. So, no more excuses. Chilean sparkling wines are no longer used solely to quench the thirst during year-end celebrations, but constitute a celebration themselves.

Casa Silva Fervor, Colchagua

Con Pinot Noir y Chardonnay provenientes de sus campos de Lolol y Paredones, este espumoso con segunda fermentación en botella conquista por su carácter, elegancia y potencia en boca. Con notas cítricas y minerales, que regala el Colchagua más costero, es un vino hecho para sentarse a la mesa y disfrutar con fervor de una gran sierra grillada.

Made of Pinot Noir and Chardonnay grown in the Lolol and Paredones vineyards, this sparkler with a second fermentation in the bottle seduces with its personality, elegance and power in the mouth. Valdivieso Blanc de Blancs, Casablanca y Curicó

Es un Chardonnay delicado y elegante.

Elaborado bajo el método champenoise, con nada menos que 30 meses de crianza, regala notas de flores silvestres, manzana verde, nueces y pan tostado. Es un vino muy equilibrado en sus aromas y con el peso justo para acompañar un lujurioso ceviche de lenguado.

Miguel Torres Estelado País, Secano Interior

Este Rosé no sólo rescata una olvidada denominación como Secano Interior, sino además pone en valor una cepa rústica y castiza como la País, destinada principalmente a la elaboración de humildes vinos campesinos. El resultado: un espumoso que cautiva con sus aromas de frutilla y frambuesa, pero al mismo tiempo con una boca firme, suave y chispeante.

This Rosé not only rescues an almost forgotten appellation –Secano Interior– but also adds value to a rustic variety like País, traditionally used to produce humble peasant wines. Cono Sur Brut Special, Bío-Bío

A partir de su cosecha 2012 ya no tiene Riesling en su mezcla, pero continúa conservando su carácter y esa acidez distinta del sur de Chile. Con un 93% de Chardonnay y el resto Pinot Noir, este espumoso elaborado bajo el método charmat presenta notas de flores blancas, manzana roja y ciertos tonos amielados que complementan su vocación por la frescura.

From the 2012 vintage, the wine no longer includes Riesling in its blend, but has retained its personality and distinctive acidity from the south of Chile. Made of 93% Chardonnay and the rest Pinot Noir, this sparkler made following the Charmat method offers notes of white flowers, red apple and honey that complement its fresh side.

Bandido Neira Cinsault 2012, Itata

Es un espumoso hecho a lo bandido. Y desde su primera cosecha nos tomó por asalto su elocuente personalidad. Con notas de frambuesas y guindas ácidas, este espumoso con segunda fermentación en botella abre un promisorio camino para el Cinsault del Itata. Es un rosé para beberlo joven y despreocupadamente. Hasta la última gota.

MIGUEL TORRES REFUERZA SU APUESTA POR LA CEPA PAÍS

Hace seis años que la viña Miguel Torres comenzó a trabajar en el rescate de la cepa País.

Fue un trabajo largo y arduo que vio sus primeros frutos en 2010, cuando lanzó Estelado, el primer espumoso elaborado con esta variedad y que ha recibido una aprobación unánime de la crítica y los consumidores.

Pero consciente de que para lograr una industria vitivinícola exitosa es necesario tener una viticultura sustentable donde se paguen mejores precios por la uva, buscar la diferenciación (y en ello una buena herramienta son los viñedos antiguos), y enfrentar de buena forma el futuro aumento de la temperatura, la viña siguió trabajando con esta cepa y, como resultado, acaba de lanzar Reserva de Pueblo, un tinto elaborado en un 100% con uvas País de pequeños agricultores de las zonas del secano interior y costero de los valles del Maule y Bío-Bío.

Reserva de Pueblo 2012 destaca por su baja graduación alcohólica (12°), la que se consigue gracias a una cosecha temprana. Su aroma evoca a guindas secas y frutillas; en boca es muy fresco, de buena acidez y agradable final. Es un vino fácil de beber, que invita a buscar otra copa. Precio: $6.990.

MIGUEL TORRES CONTINUES TO BET ON PAÍS VARIETY. Viña Miguel Torres undertook the rescue of the País variety six years ago. It was a timeconsuming and hard effort that bore its first fruit in 2010 with the launching of Estelado, the first sparkler made with the País variety that has been unanimously acclaimed by critics and consumers.

Well aware that success in the wine business requires sustainable viticulture with higher prices paid for grapes, differentiation (where ancient vineyards play a key role), and a wise approach to efficiently manage higher temperatures, Miguel Torres continued to work with this variety. The outcome is the recently launched Reserva de Pueblo, a red made entirely with País grapes produced by small farmers from the interior and coastal drylands in the Maule and Bio-Bío Valleys.

Reserva de Pueblo 2012 has very low alcohol (12%) because it is made from grapes harvested early in the season and features dried cherry and strawberry aromas, a refreshing mouthfeel, good acidity and a pleasant finish. It’s an easyto-drink wine, so one glass is not enough.

CASA SILVA PRESENTÓ SUS VINOS MÁS AUSTRALES Y JUGADOS

El vino no es poesía, pero la nueva apuesta de Casa Silva –elegida Viña del Año por Vinos de Chile– coquetea con una saga literaria, tanto por la belleza de su entorno como por la decisión de hacer viticultura nada menos que en los 40º de Latitud Sur. Sus poco más de 6 hectáreas, que caen suavemente sobre el Lago Ranco, marcan con aires sureños la personalidad de sus vinos.

Según su director técnico Mario Geisse, las condiciones son muy buenas para producir vino. Los suelos son muy permeables, con una primera capa de trumao y luego un perfil de piedras lacustres.

No hay heladas por el efecto moderador del lago. Tampoco botritis.

Sólo hay que cuidarse del oídio y lograr una buena cuaja, lo que no es fácil debido a las bajas temperaturas primaverales. De hecho, saben que algunos años corren el riesgo de no producir vinos.

Los dos primeros ejemplares que salen al mercado son Lago Ranco Sauvignon Blanc 2013 y Pinot Noir 2013 (aún permanece en crianza con sus lías un espumoso producido bajo el método tradicional). Ambos se venderán juntos, en una caja de madera, por un valor aproximado de $32.000. casa silva presented its SOUTHERNMOST and BOLDEST WINES. Soils are very permeable, with a first layer of trumao or volcanic soil and a profile of lake rocks underneath. The lake prevents frosts and the risk of botrytis is nonexistent. The only concerns are powdery mildew and fruit set, which is not easy because of low spring temperatures. In fact, some years they risk producing no wine at all.

The first two wines launched are Lago Ranco Sauvignon Blanc 2013 and Pinot Noir 2013 (a sparkling wine produced with the traditional method is still aging on its lees).

They will be sold together in a wooden box for CLP 60.00, approximately.

UNDURRAGA PRESENTA ESPUMANTE CON SÓLO 9° DE ALCOHOL

Primero introdujo el concepto Sparkling People, siendo la primera viña en convocar una comunidad sparkling en redes sociales. Luego fue más allá, hablando de la “actitud sparkling” y fomentando las nuevas formas y ocasiones de consumo de los espumantes. Hace poco presentó una botella de forma piradimal, hecha exclusivamente para la marca, y ahora Viña Undurraga sorprende con Low, un espumante de sólo 9° de alcohol, ideal para quienes buscan bebidas con menor aporte calórico (una copa de Low tiene 50 calorías y una de pisco sour, 300).

Elaborado a través del método charmat, Low es 100% Syrah de Colchagua. Según explicó su enólogo Carlos Concha, quien trabaja con la asesoría de Hernán Amenábar, se eligieron uvas de este valle porque permite una cosecha más temprana de la uva y se puede lograr así una menor graduación alcohólica. De color rosado pálido y finas burbujas, Low presenta aromas florales y una marcada acidez en boca, en buen equilibrio con el dulzor. Es un vino fresco, ideal para el aperitivo. Como se trata de una edición limitada, por ahora Low se comercializará sólo en Chile ($4.990).

UNDURRAGA LAUNCHES A SPARKLING WINE with ONLY 9% ALCOHOL. First, it introduced the Sparkling People concept and was the first winery to call for a community of sparkling wine drinkers in social networks. Then, it moved to another level when it disseminated the “sparkling attitude” and fostered the new ways and occasions to enjoy sparklers. Not long ago, it launched a pyramid shape bottle, an exclusive design for the brand and now Viña Undurraga is drawing attention towards a sparkling wine with only 9% alcohol, ideal for consumers who seek low-calorie drinks (a glass of Low has 50 calories, while a glass of pisco sour has 300).

Made under the Charmat method, Low is 100% Syrah from Colchagua. Winemaker Carlos Concha, who is supported by Hernán Amenábar, explains that this valley was chosen because grapes can be harvested earlier, which ensures a lower alcohol content in wine. With a pale pink robe and delicate bubbles, Low features floral aromas, remarkable acidity on the palate and good sweetness/acidity balance. A fresh wine; perfect as an aperitif.

Since it is a limited edition, Low will only be sold in Chile for now (USD 10.00).

urante los últimos 20 años, el nivel promedio de alcohol en los vinos ha ido en aumento. De acuerdo a un estudio de muestras de vinos del LCBO de los últimos 17 años, el promedio de alcohol subió en alrededor de 1 grado. De hecho, hoy más del 95% de los vinos está en un rango entre 11º y 15° de alcohol.

A nivel local, la realidad no es distinta. De los 1.435 vinos chilenos catados por el periodista Patricio Tapia para la guía Descorchados de este año, 306 tenían 14,5 y más grados de alcohol (con un máximo de 15,5°), 457 estaban entre los 14 y 14,4°; 537 entre 13 y 13,9°; y sólo 135 bajo los 13°. El vino de menor graduación correspondió a un Moscatel del Valle de Curicó de 8,5°. Es decir, prácticamente el 70% de los vinos se movieron en el rango de los 13° y 14° (37,4% y 31,8%, respectivamente). Según esta misma muestra, el promedio de alcohol de los vinos de la cosecha 2009, una temporada cálida, fue de 14,16°, mientras que la del año siguiente, bastante más fresca, fue de 14,06°.

A survey conducted by Wine Intelligence showed that over 80 million consumers prefer low alcohol wines. This is major and growing market in the U.S., Germany, Canada, and the UK in which Chile, according to world experts, has good chances to become a major player.

Over the last 20 years, the average alcohol content in wines has been on the rise. According to a study conducted by LCBO on a sample of wines, the alcohol content has increased by roughly 1 degree in the past 17 years. In fact, the alcohol content in over 95% of wines presently ranges from 11% to 15%.

Things are not different in the local market. Out of the 1,435 Chilean wines tasted by wine writer Patricio Tapia for his 2013 Descorchados wine guide, 306 had 14.5% or more (up to a maximum of 15.5%), 457 ranged from 14% to 14.4%; 537 from 13% to 13.9%; and only 135 had an alcohol content below 13%. The lowest content –8.5%– was found in a Muscat from the Curicó Valley. In other words, the alcohol content in nearly 70% of the

Not surprisingly, over 80 million consumers prefer low alcohol wines nowadays, as disclosed by a report issued by Wine Intelligence on occasion of the First Lighter Style Wine Forum held recently in Santiago.

Accordingly, this is an important market segment that is growing steadily in the U.S., Germany, Canada, and the UK. During the forum, Marina Ferfolja from Wine Intelligence UK, showed the results of a study conducted in eight markets –UK, France, U.S. Canada, Denmark, Sweden, Germany and Switzerland– among 7,785 wine drinkers. A pesar de que la oferta de vinos se concentra en aquellos con mayor graduación, cada vez son más los consumidores que buscan bebidas menos alcohólicas, básicamente debido al mayor nivel de información sobre los efectos del alcohol en la salud y a las restricciones impuestas por las autoridades de algunos países.

Sin ir más lejos, actualmente más de 80 millones de consumidores en el mundo beben vinos bajos de alcohol, de acuerdo a un informe elaborado por Wine Intelligence y que fue dado a conocer en el Primer Foro Lighter Style Wine organizado recientemente en Santiago. Es, por tanto, un mercado relevante con creciente presencia en EEUU, Alemania, Canadá y Reino Unido.

En la oportunidad, Marina Ferfolja, de Wine Intelligence UK, expuso los resultados de un estudio realizado en 8 mercados –Reino Unido, Francia, EEUU, Canadá, Dinamarca, Suecia, Alemania y Suiza– en el que fueron encuestados 7.785 consumidores de vino. La investigación concluyó que la mayoría de los bebedores no sabe calcular el nivel de alcohol en los vinos y que el factor más importante a la hora de decidir una compra es la variedad de uva, seguido por el precio y por el país de origen (esta última variable disminuyendo en importancia). Al mismo tiempo, menos de la mitad de los consumidores considera el nivel de alcohol como un factor importante o muy importante al momento de comprar un vino, tal como se aprecia en el Cuadro 1.

En el caso de Reino Unido, el porcentaje de consumidores para los que es importante el contenido de alcohol ha aumentado de 30% a 44% en los últimos cinco años, lo que significa que 4 millones de consumidores más que en 2007 piensan en esta variable al momento de elegir un vino. Cabe destacar que este aumento se ha dado en forma paralela a la presencia cada vez mayor de productos bajos en alcohol.

El estudio también determinó que el principal factor que hace preferir este tipo de vino para los consumidores de Reino Unido, Alemania, EEUU y Canadá es la salud. “Son mejores para mi salud”, “Tienen menos calorías que otros vinos”, fueron algunas de las respuestas dadas por quienes participaron en la investigación. Como contrapartida, la principal barrera para optar por estos vinos es la percepción de que son de menor calidad.

less than half of the consumers think that the alcohol content is important or very important when buying wine, as shown in Table 1.

In the UK, the percentage of consumers to whom the alcohol content matters has increased from 30% to 44% in the past five years, which means that there are 4 million consumers more than in 2007 who take alcohol content into consideration when choosing a bottle of wine. Interestingly, this rise has occurred simultaneously to the increasingly larger presence of low alcohol products.

The study also shows that the most critical factor leading consumers in the UK, the U.S., Germany, and Canada to prefer low alcohol wines is health. “They are better for my health,” and “they have less calories than other wines” were some of the answers given by respondents. Conversely, the main barrier to opt for these wines is the perception that they are lower in quality.

In numbers, American and German drinkers buy wines with an alcohol content below 10.5% (42%), followed by Canadians (39%) and British consumers (38%), as shown in Table 2.

In conclusion, only in the eight markets included in the study there are over 83 million low alcohol wine consumers from a total universe of 221 million regular wine drinkers, and 38% of them have bought this type of wine and would buy it again.

“Clearly, low alcohol wines are a market niche and convincing customers of their taste and quality will be a major challenge. On the other hand, the occasions and motivations to drink this type of wines may vary. Retailers and producers can influence behavior through marketing and clear communication,” Marina Ferfolja expressed as a conclusion to her presentation.

Del estudio se puede desprender que sólo en estos ocho mercados, existen más de 83 millones de compradores de vinos bajos en alcohol, considerando que hay 221 millones de bebedores regulares de vino y el 38% de ellos ha comprado este tipo de vinos y volvería a hacerlo.

“Claramente los vinos de bajo alcohol son un nicho de mercado, y el principal desafío será convencer a los consumidores sobre su sabor y calidad. Por otro lado, las ocasiones y motivaciones para consumir este tipo de vino pueden variar. Los minoristas y los productores pueden influir en el comportamiento a través de la comercialización y una comunicación clara”, concluyó en su presentación Marina Ferfolja.

QUÉ DICEN LOS BRITÁNICOS

PLB Wines, la más importante distribuidora privada de vinos en Reino Unido, también ha hecho investigaciones sobre este tipo de vinos. En una encuesta a consumidores, les consultaron en qué ocasiones les gustaría beber vinos bajo 9° de alcohol: el 22% dijo que en la noche a mitad de semana en un bar o restaurante, el 35% en la noche a mitad de semana pero en casa, y el 37% a la hora de almuerzo en un fin de semana.

Según Peter Darbyshire, director de PLB Wines, esto quiere decir que existe una oportunidad para los vinos ligeros, pero lo más importante es que éstos mantengan su calidad y tengan buen sabor. Afirmó que los consumidores no están satisfechos con los productos actuales de esta categoría, principalmente por su mal sabor, situación en la que ha influido en forma importante la mala experiencia con los vinos de la marca australiana First Cape, de 4% y 5,5% de alcohol y que mezclan vino con jugo de fruta. Por esto, dijo, para que los nuevos productos tengan éxito, deben saber muy bien y ser posicionados de manera positiva (apelando a los beneficios para la salud). En su opinión, si bien este nicho se ve interesante, no es necesario bajar demasiado el contenido de alcohol como para llegar a los 5,5°.

En este punto coincide Jamie Goode, reconocido crítico internacional de vinos, quien sostuvo que es muy difícil hacer buenos vinos de 5,5%. “Los vinos de 8%-9% están empezando a surgir”, señaló.

WHAT BRITISH CONSUMERS HAVE TO SAY PLB Wines is the largest private wine distributor in the UK and has also conducted studies on low alcohol wines. As part of an opinion survey, consumers were asked when they would like to drink wines with less than 9% of alcohol: 22% answered on weekday evenings at a bar or restaurant, 35% said weekday evenings but at home and 37% said lunchtime on weekends.

According to PLB Wines Director Peter Darbyshire, this means that low alcohol wines stand a chance but, most importantly, that they need to maintain their quality and good flavor. He emphasized that consumers are not satisfied with the products currently featured by this category, mainly because of their poor taste.

Moreover, the bad experience of the Australian 4 and 5.5% alcohol-content First Cape wine-fruit juice coolers has played a key role in this situation. Accordingly, he said that to succeed in the market, new products must not only be tasty, but their positioning must highlight how beneficial they are for health. In his opinion, this is an interesting niche, yet the alcohol content should under no circumstances be as low as 5.5%.

Jamie Goode, a renowned international wine critic, agreed with such statement when he said that making good wines with an alcohol content of 5.5% is rather difficult. “Wines with 8-9% alcohol are beginning to emerge,” he stated.

During the forum, Goode addressed the importance of the alcohol content when making a base wine and described an experiment conducted by Vicente Ferreira and his team from Universidad de Zaragoza.

The researchers separated red and white wine in their non-volatile matrix and aromatic components; then, they recombined them, that is, they added white wine aromas to the non-volatile matrix of the red wine and vice versa. During the tasting, participants associated

THE NEW ZEALAND PROJECT In late November, New Zealand announced it would launch a research program intended to turn the country into the largest producer of high-quality, low alcohol wines.

The 7-year project fostered jointly by the wine industry and the government involves an investment of NZD 17 million (USD 14 million).

The purpose is to produce premium low alcohol wines under the standard method, but using sustainable viticulture techniques and native yeasts, among other tools

This means that a change in alcohol levels does change the matrix and significantly affects wine aroma. “Consequently, producing convincing wines with a lower content of alcohol calls for high blending skills and experience. If alcohol is reduced dramatically, making a convincing product will be a major challenge,” he explained. For Goode, this category can grow in importance, as long as high-quality wines with alcohol hovering at 9% are produced.

THE CONTRIBUTION OF TECHNOLOGY Although the interest for low alcohol wines is

Si sacas mucho alcohol, es difícil producir algo convincente”, precisó.

Para el crítico, ésta puede ser una nueva categoría muy importante, siempre y cuando se produzcan vinos de calidad en torno a los 9°.

QUÉ APORTA LA TECNOLOGÍA

Si bien el interés por vinos bajos en alcohol se ha manifestado más en los últimos años, lo cierto es que este tipo de vinos existe hace siglos.

Ahí están el Vinho Verde de Portugal, los Riesling de Alemania y Austria, los blancos del norte de Italia, todos vinos que tienen su nicho de mercado, pero bastante limitado, pues muchos de ellos no son del agrado de los consumidores: unos pueden ser muy ácidos, otros muy delgados y con sabores verdes, y otros demasiado dulces. Queda claro que hacer un vino con alcohol reducido es un desafío no menor.

Justamente la enóloga Jane Milligan –creadora de varios vinos bajos en alcohol y coautora de la famosa rueda de aromas–, se refirió en el seminario a las alternativas existentes para elaborar este tipo de vinos.

All these wines have their own, although limited, market niche, because they are not too popular among consumers: Some may be too acidic, others are too thin or too grassy, while others are too sweet. Needless to say that making low alcohol wines is quite an endeavor.

During the forum, winemaker Jane Milligan –who has crafted several low alcohol wines and co-authored the famous wine aroma wheel–, addressed the various alternatives to make this type of wines.

The simplest, less-technology intensive options involve using grapes harvested earlier, stopping fermentation, or simply diluting wine with water. In general, grapes harvested early produce green, thin, highly acidic wines with weak aromas and flavors. In addition, the risk of interrupting fermentation is that a second fermentation may take place and the resulting wines will be too sweet for knowledgeable consumers.

Finally, diluting with water –which is illegal in some countries, including Chile– results in thin wines with poor acidity balance and artificial flavors. This impairs the image of the category,” the winemaker stated.

De acuerdo a su experiencia, la mejor tecnología es la columna de conos rotatorios. Sus ventajas: el producto final es 100% vino, sin adición de agua; es un proceso continuo altamente eficiente; el aroma y sabor se mantienen intactos; se somete a tratamiento una fracción menor de vino (10% de vino para bajar 1% de alcohol); es muy económico en grandes volúmenes; y no hay problemas de eliminación de residuos. Los inconvenientes, en tanto, son que los equipos son muy grandes (no portátiles), de muy alto costo (los más grandes valen cerca de US$ 1 millón) y requieren personal experto para su manipulación.

Pero independiente de la tecnología utilizada, lo que hay que tener en cuenta es que no todos los vinos son aptos para ser desalcoholizados. ¿Cómo debe ser el vino base? “Con una gran expresión del carácter varietal y características de fruta madura, sin notas verdes ni vegetales, sin amargor, baja astringencia, alto contenido de alcohol, baja acidez y pH alto, y, obviamente, un vino sin defectos”, señala la enóloga.

A very useful methodology to determine whether a wine is a good or bad candidate for alcohol reduction is the CARE Wheel (CARE = Candidate for Alcohol Reduction Estimator), where the different characteristics of white and red wine are specified.

The ones on the upper part (red) are non-desirable characteristics, while those in the lower part (green) are the characteristics the base wine should have.

How is this wheel used? The various sensory variables are analyzed and scored from 1 to 10. The results are displayed in a spider chart. If it uses mostly the red portion, that means the wine is not a good candidate for alcohol reduction (as shown in the Petit Verdot example). Conversely, if it covers the green portion, it means the wine is suitable for alcohol reduction (Merlot in the example and Chardonnay 789).

Las que están en la parte superior (roja) son las características no deseables y las que están en la parte inferior (verde) son las que debiera tener el vino base. ¿Cómo se utiliza esta rueda? Se analizan las diversas variables sensoriales y se puntúan de 1 a 10. Con ello se forma un gráfico de araña. Si éste ocupa mayoritariamente la parte roja, el vino no es apropiado para desalcoholizar (como se muestra en el ejemplo del Petit Verdot) y, si por el contrario, ocupa la parte verde, sí es el indicado (Merlot en el ejemplo y Chardonnay 789).

Con respecto a la clarificación, la enóloga recomienda el uso de PVPP, que en el caso de los vinos blancos es efectivo para eliminar el amargor causado por los compuestos fenólicos más pequeños. En tintos también se puede usar gelatina, porque suaviza la astringencia, normalmente elevada después de la reducción de alcohol.

En su opinión, Chile tiene una gran oportunidad para elaborar vinos de bajo alcohol ya que no sólo cuenta con el clima y una gran variedad de cepajes apropiados, sino además con la tecnología necesaria.

Pero el desafío no está sólo en ofrecer vinos de calidad. Tal como planteó Jamie Goode, los productores deben tener la capacidad de llegar a los consumidores con un mensaje claro, convencer a los compradores y periodistas, y finalmente vender a un precio mayor que el actual para que sea un segmento rentable. t

El enólogo italiano es un enamorado de las cualidades vitícolas de nuestro país, pero sostiene que los productores deben hacer un click: dejar de vender las cepas y comenzar a vender Puente Alto, Marchigüe o Leyda para diferenciarse. s un asesor atípico, un anti-flying winemaker. El italiano Attilio Pagli, enólogo del Gruppo Matura, esta asociación interdisciplinaria que fundó con su amigo Alberto Antonini en 1997, no vuela por el mundo para sólo dar tips, definir el punto de cosecha o meter la nariz en las mezclas finales, sino que está metido de cabeza en los viñedos, acompañando a las parras en cada uno de sus procesos genealógicos. Respira tierra, taninos y vino. Entrega experiencia, pasión y un profundo conocimiento de los mercados. Dice que le gustan los vinos que comuniquen, que reflejen un lugar, que muestren una personalidad única. Ahí pone su empeño. Ahí –asegura– está el futuro.

“El vino es alma y pasión”, repite esta frase que hemos escuchado tantas veces, pero cuando sale de su boca se escucha distinta, con una emoción que se aleja de los lugares comunes.

Es un fan de la vitivinicultura chilena, pero al mismo tiempo no puede evitar cierta crítica honesta y constructiva. Con un discurso siempre amable, pero punzante y sin dobleces, sostiene que le cuesta mucho entender a un país-productor de vino que se llama a sí mismo “industria”, que basa principalmente su producción en vinos genéricos, que no busca la diferencia, que no busca exaltar su identidad, sino persigue satisfacer los supuestos gustos de algunos críticos o mercados que mañana pueden ser completamente distintos.

A Pagli le cuesta mucho entender que con la calidad y multiplicidad de terruños y mesoclimas que existen en Chile –costeros, de secano, de montaña y muchos otros por descubrir–, no se profundice en vinos con personalidad, que reflejen con propiedad las particularidades de su origen. “El problema son los asesores internacionales”, dice con una sonrisa llena de ironía, específicamente esos gurúes que no toman riesgos y replican una receta que supuestamente es exitosa en todas partes del mundo.

“Chile should give up selling just varieties and begin selling Chile” The Italian winemaker is a big fan of our country’s viticultural qualities, although he believes producers should take a leap forward: Stop selling grape varieties and start selling Puente Alto, Marchigüe or Leyda as a differentiating attribute. That is the way to go. There, he says, is the future of Chilean wines.

Attilio Pagli is an atypical advisor, an anti-flying winemaker. A wine advisor for Gruppo Matura, the interdisciplinary association he founded with his friend Alberto Antonini in 1997, he flies the world over not only to give tips, define the right harvest point or stick his nose in the final blends; on the contrary, he immerses himself in the vineyard, accompanying the grapevines through each stage of their genealogical processes. He breathes dirt, tannins and wine and shares his expertise, passion and deep knowledge of the markets. He says he likes wines that have something to say, that reflect a certain place and display a unique personality. That is where he puts in his efforts. There, he says, is the future.

“Wine is both soul and passion”. The sentence we have heard so many times before sounds different when coming from his lips, with an emotion that is very seldom found.

He is a fan of Chilean winemaking, but at the same time he gives his honest and constructive criticism. With a kind yet pungent, straightforward language, he tells us he finds it difficult to understand why a country that produces wine calls itself “industry”, relies almost entirely on generic wines, does not seek to differentiate itself or boost its identity but instead prefers to satisfy the alleged preferences of certain critics and markets that may be utterly different tomorrow.

Pagli has a hard time trying to understand that with the quality and multiplicity of its coastal, dryfarmed, mountain and other yet-to-be-discoverd terroirs and meso-climates, Chile does not further explore wines with personality that truthfully reflect the peculiarities of their origin. “The problem is international advisors”, he says with an ironic grin, referring to those wine gurus who do not like to take any risks and continue to clone a recipe that is allegedly successful in every market.

- Advisors like you?

- I like to look for personality. Using a work like “industry” in Italy is simply horrendous. Wine cannot be cloned. Wine is always different, an undertaking, a product that responds to a different logic: The logic of nature.

- But there is always the temptation to compare oneself with some of the world’s emblematic places.

Often times I have heard Chilean winemakers say: “Limarí is our Chablis” or “Puente Alto our Médoc” when explaining the characteristics of a vineyard to an international journalist.

- You should not compare yourself to anyone. You need to differentiate yourself! That has been Chile’s big mistake.

–Me gusta trabajar en la búsqueda de la personalidad. Hablar de “industria” del vino en Italia es terrorífico. El vino es irrepetible. El vino es siempre distinto. Es un emprendimiento. Es un producto que responde a una lógica diferente: a la naturaleza.

–También está la tentación de compararse con algunos lugares emblemáticos del mundo. Muchas veces he escuchado a enólogos chilenos decir: “Limarí es nuestro Chablis” o “Puente Alto, nuestro Médoc”, cuando explican las características de un viñedo a un periodista extranjero.

–No hay que compararse con nadie. ¡Hay que diferenciarse! Ése ha sido un error grande que ha cometido Chile. En lugar de vender Limarí, Puente Alto y Marchigüe, por nombrar algunos de los lugares más interesantes, las viñas han optado por seguir la corriente de los mercados y vender cepas como Cabernet Sauvignon, Merlot, Sauvignon Blanc… Chile debería dejar de vender cepas para comenzar a vender Chile.

MONTEPULCIANO MARCHIGUANO

A pesar de que es uno de los pocos enólogos en el mundo que se puede jactar de obtener 100 puntos en Wine Spectator, con Brunello di Montalcino Madonna del Piano 2001 de Valdicava, Pagli no es un coleccionista de asesorías. Elige con pinzas los desafíos para dedicarle todo el tiempo que merecen. A Argentina llegó en 1993 a desarrollar un proyecto con Sangiovese en Catena. Hoy asesora a Alto Las Hormigas y, trabajando con el Doctor en Terroir Pedro Parra, ya ha realizado más de 300 vinificaciones para medir el real potencial de cada rincón de sus campos.

Estampa es la única bodega a la que presta sus servicios en Chile. Se unió a la viña colchagüina en 2009 y desde entonces se ha dedicado a trabajar los campos de Marchigüe y Paredones, convirtiéndose en un factor muy importante del gran salto cualitativo que han experimentado sus vinos. Las nuevas ediciones Del Viento Sauvignon Blanc 2013, Estampa Reserva Carmenère, Cabernet Sauvignon y Syrah Reserva 2012, y la mezcla tinta en base a Carmenère Lacruz 2009, son ejemplos de vinos con carácter, que representan su origen, pero con una enología bien cuidada, especialmente en el manejo de sus texturas.

Hoy además trabaja en un verdadero centro de experimentación en Marchigüe. Hace ya un par de años la familia González Ortiz introdujo 16 cepas italianas, como Montepulciano, Nebbiolo y Trebbiano.

Nueve de ellas –500 plantas por cada cepa– han logrado adaptarse a los pobres suelos de granito de sus laderas y muy pronto tendremos los primeros vinos ítalo-marchiguanos del mundo.

–¿Y qué vas a hacer con eso?

–No lo tenemos claro. Aún tenemos que ver el potencial de cada una de ellas. Quizás hagamos una gran cofermentación, mezclando cepas blancas y tintas.

MARCHIGUAN MONTEPULCIANO Despite being one of a handful of winemakers around the world who can boast having received 100 points in Wine Spectators with his Brunello di Montalcino Madonna del Piano 2001 from Valdicava, Pagli does not accept just any advisory work. He chooses his projects with great care in order to give them all the time they deserve. He went in Argentina in 1993 to develop a Sangiovese project with Catena. Today, he provides his services to Alto Las Hormigas and, in collaboration with Doctor in Terroir Pedro Parra, has conducted more than 300 vinifications to test the real potential of each corner of its fields.

Estampa is the only Chilean winery to which he lends his advisory services. He joined the Colchaguabased winery in 2009 and since then has developed the vineyards of Marchigüe and Paredones, becoming a pivotal factor in the great qualitative leap of its wines.

The new editions of Del Viento Sauvignon Blanc 2013, Estampa Reserva Carmenère, Cabernet Sauvignon and Syrah Reserva 2012, and the Carmenère-based blend Lacruz 2009 are all examples of wines filled with great personality that express their origin thanks to the wellachieved winemaking techniques applied, especially texture management.

Today, he also works at a experimental center in Marchigüe. A couple of years ago, the González Ortiz family introduced 16 Italian varieties such as Montepulciano, Nebbiolo and Trebbiano. Nine of them –500 plants for each variety– have successfully adapted to the poor granite soil of its slopes and very soon we will be tasting the world’s first Italo-Marchiguan wines.

- And what are you going to do with that?

- We do not know yet. We still need to test the potential of each variety. Maybe we will make a big cofermentation, mixing white and red varieties.

- And isn’t it a bit strange to produce Montepulciano in Marchigüe?

- Why not? We must dare to produce different stuff.

And, in this case, it will not be Montepulciano, but a Marchigüe made from Italian varieties.

- In your opinion, what are the varieties with the greatest potential in Chile?

- Carmenère, because I am not very fond of anything

–¿Y no es un poco extraño hacer un Montepulciano en Marchigüe?

–¿Por qué no? Hay que hacer cosas diferentes. Y, en este caso, no será un Montepulciano, sino un Marchigüe con cepas italianas.

–¿Cuáles son hoy las cepas que ves con mejor proyección en Chile?

–El Carmenère, porque no me gustan las cosas simples. Si se encuentra el lugar donde cultivarlo, es una cepa fantástica. En un clima como el de Chile aguanta la frescura. Los taninos son frescos. La nariz es elegante, no verde, y es un vino largo con taninos aterciopelados.

–Pero también es complicada de cultivar…

–Es difícil. No te aguanta nada. Cualquier error, es un desastre.

–Y sobre todo en los segmentos bajos se producen los mayores desastres. Es una cepa que no logra la misma consistencia en todos los niveles de precio.

–La rentabilidad es más baja. Es una cepa más para gamas altas. En Marchigüe las cepas pirazínicas se dan fantástico. No te puedo decir si el Cabernet Sauvignon es mejor que el Carmenère. Pero, ¿qué ha pasado? A Chile le gusta hablar de la cepa, pero primero tiene que comprender qué es Marchigüe. El consumidor de vino de un nivel más alto pide eso. Quiere viajar a través del vino y conocer los distintos lugares. ¿Qué es el Cabernet por sí sólo? No me interesa la cepa. No me pongo limitaciones.

–Pero ése ha sido el gran negocio de Chile: vender millones de litros de Cabernet, de Merlot...

–Sí, pero en algún momento hay que hacer el cambio. Chile no puede ser sólo sinónimo de grandes compañías y millones de litros. El vino es alma, pasión y visión del dueño. Los pequeños productores van a hacer el click. Ya lo están haciendo.

–¿Aunque la masa de consumidores siga pidiendo otra cosa: vinos más dulces, suaves y con madera?

–El consumidor está pidiendo lugar. Si no, toma cerveza, toma Coca-Cola, toma cualquier otra cosa. Los chilenos tienen que darse cuenta. Hoy el mundo está hablando otro idioma. t

easy. If you find the right place to plant it, the results are simply fantastic. In a climate like Chile’s it withstands cool temperatures. Its tannins are fresh, the nose is elegant, not green, and the mouthfeel is long, with silky tannins.

- But it is also hard to grow…

- That is correct. It is also very whimsical. Any mistake will lead to disaster.

- And the biggest mistakes occur in the lower segments. It is a variety that does not achieve the same consistency in all price ranges.

- Profitability is lower. It should be used preferably in higher-end wines. In Marchigüe, pyrazinic varieties feel very much at ease. I cannot tell you whether Cabernet Sauvignon is better than Carmenère. But look at what happened. Chile likes to talk about this variety, but first it needs to understand what Marchigüe is. That is what consumers of higher-level wines ask for. They want wine to take on a journey to know the different growing places.

What does Cabernet have to offer by itself? I am not interested in the variety alone. I do not limit myself.

- But that has been Chile’s great business: to sell millions of liters of Cabernet, Merlot…

- Yes, but at some point you need to change that. Chile cannot be just synonymous with large companies and millions of liters. Wine is the soul, passion and vision of its owner. Small producers will take the leap. And they are already doing it.

- Even though consumers at large continue asking for something else: wines that are sweeter, smoother and woody?

- Consumers are asking for an origin. If not, they just turn to beer, Coke or any other beverage. Chileans need to realize that. Today the world is speaking a different language. t

BUENA PERFORMANCE DE VINOS DE LA CORDILLERA Un éxito fue la última versión de Vinos de la Cordillera: nada menos que 23 de los 24 vinos chilenos y argentinos participantes superaron la barrera de los 90 puntos. Este encuentro anual, organizado por Enrique Chrabolowsky y Mariana Martínez, no sólo es una valiosa instancia de camaradería entre chilenos y argentinos, sino además permite medir la evolución cualitativa de nuestros vinos y la diversidad de estilos que ofrecen ambos países.

Si bien en el panel hubo un 20% más de chilenos, los resultados fueron bastante parejos, demostrando la objetividad de los catadores locales. 92 puntos obtuvieron 3 argentinos y un chileno; 91 puntos, 8 chilenos y 4 argentinos; y 90 puntos, 4 argentinos y 3 chilenos. Los vinos nacionales que superaron los 90 puntos fueron: 92 puntos: Volcanes Tectonia Sauvignon Blanc 2011.

SANTA RITA SE CONVIERTE EN LEYENDA EN REINO UNIDO Casa Real 1989 fue calificado como Vino Leyenda por la revista británica Decanter, logrando un inédito reconocimiento para Viña Santa Rita y para la industria vitivinícola chilena. “Casa Real es uno de los vinos más antiguos y elegantes desde su primera cosecha a la actualidad; este ícono ha tenido una evolución de carácter y calidad consistente en el tiempo.

Uno de los mejores Cabernet Sauvignon chilenos”, señala la publicación.

Este logro instala al emblema de Alto Jahuel, elaborado actualmente por la enóloga Cecilia Torres, junto a otras leyendas mundiales que han recibido esta distinción, como Château Petrus 1945, Château Margaux 1983, Château Lafite-Rothschild 1982 y Vega Sicilia 1941.

SANTA RITA BECOMES A LEGEND IN THE UK. The British magazine Decanter celebrated Casa Real 1989 as a Wine Legend, an unprecedented recognition for Viña Santa Rita and Chile’s wine industry as a whole. “From its first vintage to the present day, Casa Real has been one of the oldest and most elegant wines, boasting an evolving character and consistent quality. One of the best Chilean Cabernet Sauvignons,” Decanter published.

A major achievement that places the signature wine from Alto Jahuel, currently crafted by winemaker Cecilia Torres, at the same level of other world wine legends: Château Petrus 1945, Château Margaux 1983, Château Lafite-Rothschild 1982 and Vega Sicilia 1941.

EXCELLENT PERFORMANCE AT VINOS DE LA CORDILLERA WINE TASTING. The 2013 Vinos de la Cordillera Wine Tasting was nothing short of a great success: 23 out of the 24 Chilean and Argentine participant wines scored over 90 points! This annual wine tasting organized by Enrique Chrabolowsky and Mariana Martínez is both a wonderful opportunity for Chilean and Argentine wineries to share and socialize and an occasion to measure the qualitative evolution of wines and diverse styles of both countries.

Although the panel consisted of 20% of Chileans, the results were quite even, which evidences the objectivity of the local tasters. 3 Argentines and one Chilean scored 92 points; 8 Chileans and 4 Argentines scored 91 points; and 4 Argentines and 3 Chileans scored 90 points. UNIVERSIDAD DE CALIFORNIA Y TRES PLANTELES CHILENOS SE ASOCIAN PARA CREAR CENTRO DE INVESTIGACIÓN Un centro de innovación e investigación de vanguardia para los sectores frutícola y vitivinícola operará en Chile gracias a un proyecto CORFO que posibilitó una alianza entre las universidades de Talca, Tarapacá y Andrés Bello, junto a la norteamericana Universidad de California.

Las investigaciones se realizarán en los laboratorios de cada una de las universidades e incluyen tres plataformas de trabajo: agricultura y cambio climático; detección y caracterización de plantas en base a metabolómica y genómica; y análisis genómico completo.

Además se trabajará en diferentes aplicaciones, desde biosensores en postcosecha hasta caracterización de enfermedades que afectan a los cultivos.

UNIVERSITY OF CALIFORNIA AND THREE Chilean universities JOIN TOGETHER IN A RESEARCH CENTER. A CORFO project paved the way for a state-of-the-art R&I center to be established in Chile in which universities of Talca, Tarapacá, Andrés Bello and California will join efforts.

Research will be conducted at each university’s labs based on three platforms: Agriculture and climate change; detection and characterization of plants based on matabolomic and genomic analyses; and full genomic analysis. Various new applications will also be developed, including bionsensors in post harvest activities and the characterization of crop diseases.

VIÑAS DE COLCHAGUA PROYECTAN UN GRAN ENSAMBLAJE DE TRADICIÓN E INNOVACIÓN Sólo es su segunda versión, pero la avant première Viñas Valle de Colchagua, se ha transformado en uno de los encuentros imperdibles en el calendario vinícola. Bajo el concepto de mostrar primores y nuevos proyectos enológicos, las 13 viñas que forman parte de esta asociación refuerzan su identidad como denominación de origen, y la proyectan con innovadoras propuestas.

Hay dos aspectos fundamentales que muestran este nuevo camino: primero, el desarrollo de la viticultura en la precordillera de los Andes y en su costa, convirtiendo a Colchagua en un valle más ancho y multidimensional en cuanto a estilos enológicos; segundo, la nueva generación de vinos a partir de cepas mediterráneas, que se han adaptado maravillosamente bien en las zonas templadas y más cálidas del valle.

Algunos notables ejemplos son el nuevo Carmenère de Los Vascos (un proyecto que demoró nada menos que una década); el ViBo mediterráneo y un minimalista Cabernet Sauvignon vinificado en huevos de cemento de Viu Manent; el trabajo de Bisquertt con sus rulos locos y la cepa País; los vinos de altura de Luis Felipe Edwards; el Grenache y Mourvèdre de Montes en Apalta y un extraordinario Cinsault de Itata; los vinos mediterráneos de MontGras en Pumanque; y la fresca profundidad que ha logrado Casa Silva en Paredones, que se expresa a través de su flamante Syrah.

COLCHAGUA WINERIES’ AWE-INSPIRING MIX OF TRADITION AND INNOVATION. Although this is only its second year, the Viñas Valle de Colchagua avant-première quickly turned into one of the not-to-be-missed events of the wine agenda. Intended to showcase new vintages, additions and brand-new winemaking projects, the event organized by the 13-winery association reinforces the appellation identity approach and advances their innovative projects.

This endeavor consists of two pillars: The development of wine projects at the Andean foothills and the coastal areas of the valley, which has turned Colchagua into the widest and most multidimensional valley in terms of wine styles; and the new generation of wines made with Mediterranean cultivars that have adapted extraordinarily well to the temperate and warmer zones in the valley.

Some remarkable examples are Los Vascos’ newly launched Carmenère (a project that took no less than a decade); the Mediterranean ViBo and a minimalistic Cabernet Sauvignon vinified in concrete eggs by Viu Manent; Bisquertt’s unconventional management of País in dry-farmed vineyards; Luis Felipe Edwards’s high-altitude wines; Montes’ Grenache and Mourvèdre in Apalta and its outstanding Cinsault from Itata; MontGras’s Mediterranean wines from Pumanque; and the refreshing depth attained by Casa Silva at Paredones, with its newly launched Syrah.

DON MAXIMIANO 2010 SE IMPUSO EN ÚLTIMA CATA DE BERLÍN EN SANTIAGO Con una convocatoria que superó la esperada, y Don Maximiano 2010 como el mejor de los mejores, Eduardo Chadwick y Errázuriz celebraron la última versión de la Cata de Berlín en Santiago, después de casi 10 años de repetir este ejercicio en 15 países, donde los íconos de la casa se miden a ciegas con sus pares de Burdeos, Toscana y otras emblemáticas denominaciones del mundo.

En esta degustación dirigida por el enólogo Francisco Baettig, y donde participaron como moderadores los especialistas Ana María Barahona, Héctor Vergara, Patricio Tapia y nuestro editor de Vinos Eduardo Brethauer, se produjo un interesante debate sobre los estilos de los vinos y los criterios para calificarlos, pero por sobre se destacó la relevancia de este certamen para Errázuriz y para la imagen de los vinos chilenos en el exterior.

Los casi 80 degustadores, entre enólogos, periodistas y sommeliers, calificaron 10 vinos de España, Italia, California y Chile. El siguiente fue el orden de preferencia:

than anticipated and Don Maximiano 2010 reaping the top award, Eduardo Chadwick and Errázuriz held the 2013 Berlin Tasting in Santiago. These blind tastings, the earliest of which was held almost 10 years ago, have been organized in 15 different countries to measure Errázuriz’s icon wines against its peers from Bordeaux, Tuscany, and other signature appellations from all over the world.

This year, the tasting panel was led by winemaker Francisco Baettig and Ana María Barahona, Héctor Vergara, Patricio Tapia and our wine editor Eduardo Brethauer participated as moderators and engaged in an interesting discussion on styles of wine and classification criteria while highlighting the significance of this event for Errázuriz and for the image of Chilean wines abroad.

Este año se batieron dos nuevos records: por un lado, los vinos chilenos sumaron nada menos que 350 medallas de oro en los concursos nacionales y extranjeros y, por el otro, el Carmenère por primera vez se alza como la cepa más premiada en el exterior.

Estos dos grandes logros hablan de una oferta chilena dinámica y con una curva de crecimiento sostenida en términos de calidad.

C

uando comenzamos hace más de una década con nuestro Ranking VITIS Magazine, no podíamos intuir los enormes cambios que experimentaría la oferta de vinos chilenos y cómo éstos se reflejarían en el medallero.

La irrupción y consolidación de nuevas cepas y categorías, como Carmenère, Syrah, mezclas tintas y Sauvignon Blanc, no sólo han ampliado el portafolio nacional, sino lo han hecho con una sorprendente rapidez y consistencia. Recordemos que los Carmenère y Syrah recién nacieron como vinos a finales de los 90, y hoy son parte fundamental del tridente tinto que sale a batallar en los mercados internacionales.

Además resulta alentador el sostenido aumento de las medallas de oro para los vinos chilenos, especialmente en los certámenes internacionales. Si bien el año pasado celebrábamos una cifra record de 300 oros en Chile y el extranjero, que entonces nos pareció bastante difícil de superar, en 2013 alcanzamos una nueva cumbre: nada menos que 350 preseas. Este notable aumento ratifica la vigencia de los concursos como herramienta de marketing y, sin lugar para dudas, refleja la creciente calidad de la oferta de vinos chilenos.

La decisión editorial de separar nuestro medallero en concursos nacionales a partir de 2012 –Annual Wines of Chile Awards (AWOCA), Catad’Or y Mondial de Bruxelles Chile– e internacionales –Mundus Vini, Mondial de Bruxelles, Vinalies Internationales, Challenge International du Vin, Citadelles du Vin, Wine International Challenge, Decanter, Japan Wine Challenge e International Wine & Spirits– fue un doble acierto: por un lado, aquilatamos el valor de las medallas y, por el otro, sacamos a la luz las diferencias de los gustos y preferencias de los jurados.

Una de las grandes sorpresas de este año, y que al mismo tiempo son muy buenas nuevas para las viñas chilenas, es el arrollador éxito del Carmenère en los concursos internacionales. Por primera vez en la historia de nuestro ranking supera al Cabernet Sauvignon y a las mezclas tintas. Por otro lado, sobre todo en el plano local, ha sido importante el crecimiento del Sauvignon Blanc, convirtiéndose en la tercera cepa más premiada después de las mezclas tintas y el Cabernet Sauvignon.

2013 VITIS MAGAZINE RANKING Carmenère’s fiesta overseas Two new records were broken in 2013: Chilean wines hit the impressive mark of 350 gold medals in local and international competitions and for the first time ever Carmenère rose as the variety that reaped the most awards abroad. Two major achievements that confirm the dynamism of Chilean supply and the sustained growth shown by the quality of our wines.

When we started publishing our VITIS Magazine Ranking over a decade ago, predicting that our wines would experience dramatic changes and how this would affect the scoreboard never crossed our mind. The rise and consolidation of new varieties and categories like Carmenère, Syrah, red blends, and Sauvignon Blanc, have not only expanded the national portfolio but they have done so with amazing speed and consistency. Let us not forget that Carmenère and Syrah were born as wines only in the late 1990s and now both make up the three-variety spearhead on the attack to world markets.

Needless to say how rewarding it is to see how steadily the number of gold medals reaped by Chilean wines has grown, especially in international competitions. Although last year Chilean wines collected a record of 300 gold medals in Chile and abroad, which at the time we thought very difficult to break, our wines outperformed themselves in 2013 with an impressive 350 gold medals. This significant increase confirms the validity of competitions as a marketing tool and certainly evidences the growing quality of Chilean wines.

The decision we made in 2012 to publish results at local competitions –Annual Wines of Chile Awards (AWOCA), Catad’Or and Mondial de Bruxelles Chile– and international ones –Mundus Vini, Mondial de Bruxelles, Vinalies Internationales, Challenge International du Vin, Citadelles du Vin, Wine International Challenge, Decanter, Japan Wine Challenge e International Wine & Spirits– separately proved a double wise move since on the one hand we showcased the value of each medal and, on the other, we could pinpoint the different tastes and preferences of the judges.

One of the greatest surprises this year and at the same time excellent news for local wineries is the runaway success of Carmenère at international competitions. For the first time in the history of our ranking, the Chilean signature variety has ousted Cabernet Sauvignon and red blends from the top. On the other hand, mostly in Chile, Sauvignon Blanc has grown admirably to the third variety

CASABLANCA SORPRENDE. Una vez más Colchagua se impone como el valle más ganador en ambos escenarios, sobre todo gracias a la dulzura y suavidad de sus Carmenère. Maipo, después de años durmiendo en los laureles, parece haber recuperado el fulgor de antaño, especialmente a través de la elegancia de sus Cabernet Sauvignon, su marca registrada en el mundo. Maule mantiene su tranco, pero llama la atención su mejor performance en Chile, donde es el segundo valle más premiado, incluso no muy lejos de Colchagua.

Pero, sin lugar a dudas, 2013 fue el año de Casablanca. En Chile ocupa el tercer lugar y en el exterior alcanza a Maule también en el tercer puesto. Esta gran explosión no sólo se debe a sus reconocidos Sauvignon Blanc, sino también a sus cada vez más numerosos y sorprendentes Syrah. IT DID IT AGAIN. Once again, Casa Silva took home the largest number of awards among Chilean wineries, both in local and international competitions, tied with Casablanca and in a resounding win abroad, respectively. The Winery of the Year, according to Wines of Chile, has topped our ranking in nine of 11 years. Amazing!

In turn, Carolina Wine Brands –owner of Viña Santa Carolina and Viña Casablanca– had another outstanding performance in 2013.

A ALEMANIA LOS PASAJES. El año pasado debutó en este ranking con sólo 9 medallas, pero en 2013 el certamen alemán Mundis Vini tiró la casa por la ventana, premiando con oro a nada menos que 39 vinos chilenos y dejando en un segundo lugar al Concours Mondial de Bruxelles, el histórico regalón de las viñas nacionales.

Moreover, 2013 was a year of balanced results in French and British competitions. Although historically Chilean wineries have not managed to dominate British competitions, this year they reaped as many as 35 gold medals.

In Chile, Catad’Or remains at the lead with the most awards, this time closely followed by the Chilean version of Mondial de Bruxelles and Annual Wines of Chile Awards, AWOCA.

LA INFLUENCIA PORTUGUESA EN UN CHÂTEAU CHILENO Se podría decir que es una viña multicultural. Nació en pleno campo chileno –el Valle de Cachapoal– bajo el concepto de un château francés, con enólogo francés incluido, y hoy su propietario es el grupo portugués Sogrape, que además de Portugal, posee viñas en Argentina, España y Nueva Zelanda.

Pasados cinco años, los positivos efectos del cambio de propiedad en Château Los Boldos hoy están a la vista, comenzando por los viñedos, pasando por la bodega y, lo más importante, en sus vinos. Este es un buen ejemplo de lo crucial que resulta contar con fruta de buena calidad. El enólogo es el mismo desde que esta viña nació hace 20 años, pero hoy los vinos de Stephane Geneste muestran otro nivel.

Junto al viticultor Juan Pablo Aranda –y con la asesoría de Pedro Parra–, se repensó el viñedo y todo lo que fue necesario replantar se hizo con clones y portainjertos, además de reorientar las hileras, logrando una sustancial mejora en la calidad de la uva que se nota en la copa. Adicionalmente, Sogrape hizo una potente inversión en la bodega, tanto en infraestructura como en equipamiento, y hoy Los Boldos cuenta con varias líneas de vinos que muestran básicamente dos estilos: el clásico francés, más austero, elegante y buena acidez, y uno más moderno, donde básicamente se destaca la fruta.

Un buen ejemplo del presente de Los Boldos es su recién lanzado Assemblage Grand Reserve ($6.990), una mezcla 70% Cabernet Sauvignon y 30% Syrah, que con sus notas a pimienta, amplitud en boca y buena persistencia muestra un estilo más comercial.

nos Ayllu, que nacen a 2.400 metros de altura en distintos predios de la comuna de San Pedro de Atacama, han sido reconocidos hasta ahora por sus variedades blanco seco (Moscatel), tinto seco (País con algo de Cabernet) y blanco dulce (Moscatel). Este año, en su tercera cosecha, se ha lanzado también un tinto Syrah. El proyecto, impulsado gracias al programa de fomento agrícola de SQM, Atacama Tierra Fértil, comenzó con 1.600 parras y hoy ya se cuenta con 14 mil plantas de Moscatel, País, Pinot Noir, Malbec, Petit Verdot, Syrah y Chardonnay, distribuidas en 20 productores.

A CHILEAN CHÂTEAU WITH PORTUGUESE AIRS. One could say this is a multicultural winery. Located at Chile’s agricultural heart –the Cachapoal Valley– and conceived under a French château design, including its very own French winemaker, this winery is presently owned by the Portuguese group Sogrape, which has wineries in Argentina, Spain, New Zealand and certainly Portugal.

Five years into the new management, the effects of the transfer of property at Château Los Boldos are tangible at the vineyard, the winery and most importantly, its wines – the vivid proof of how critical superior quality grapes are. Stephane Geneste, the winemaker, has been with the winery since it was established 20 years ago. His wines, however, have moved to a different level.

Working jointly with viticulturist Juan Pablo Aranda and relying on the expert advice of Pedro Parra, Chateau Los Boldos restructured the vineyards, replanted some lots with new clones and rootstocks, and reoriented the rows.

The outcome: grapes of significantly higher quality that boast their attributes in the glass.

In addition, Sogrape made a major investment in the winery’s infrastructure and equipment that allowed Los Boldos to produce several wine ranges with two basic styles: The classic unpretentious, elegant French style with good acidity, and a more modern style that boasts fruitiness.

The perfect example of Los Boldos’s current wines is the recently launched Assemblage Grand Reserve (USD 13.50), a 70% Cabernet Sauvignon and 30% Syrah blend with a more commercial style that showcases notes of pepper, generous mouthfeel, and good persistence.

A NEW VARIETY PRODUCED AT THE ATACAMA SALT PAN. Until now, the Ayllu wines produced at an altitude of 2,400 meters in the various lots located in San Pedro de Atacama were known for their dry white (Muscat), dry red (País with a small contribution of Cabernet) and the sweet white (Muscat) varieties. Yet, a Syrah has been added in the third vintage. The project fostered by SQM agricultural development program Atacama shorthand Tierra Fértil started with 1,600 vines news and grew to as many as 14,000 vines of Muscat, País, Pinot Noir, Malbec, Petit Verdot, Syrah and Chardonnay, distributed among 20 producers.

SANTA CAROLINA AMONG BEST NEW WORLD WINERY OF THE YEAR NOMINEES. Wine Enthusiast has nominated Santa Carolina in the Best New World Winery of the Year category with the following description “With more than 130 years of winemaking history, Viña Santa Carolina competes with some of the world’s best wines, exporting nearly 80 percent of all production globally. With lauded wines from all over Chile, this urban winery is known for its high quality-to-price ratio and vineyard innovations.”

Enólogos chilenos auscultaron los ganadores del Six Nations Wine Challenge

Los puntos más altos de la degustación fueron un Syrah de Nueva Zelanda y un vino dulce de Australia, pero por sobre todo el encuentro sirvió para que los enólogos chilenos debatieran abiertamente sobre la realidad de nuestros vinos en la escena del Nuevo Mundo, planteando importantes desafíos para cada categoría en los próximos años. /EDUARDO BRETHAUER R.

ue una mañana intensa y reveladora. La cata de los trofeos del Six Nations Wine Challenge dejó importantes lecciones y un constructivo debate sobre las fortalezas y desafíos de los vinos chilenos. Este ejercicio comparativo, donde los enólogos chilenos tuvieron la oportunidad de catar algunos de los mejores vinos de Australia, Nueva Zelanda, Sudáfrica, EE.UU. y Argentina, abrió un debate que está lejos de terminar, pero que de alguna manera indica dónde están parados los vinos chilenos en la realidad del Nuevo Mundo.

Organizado por VITIS Magazine en el espacio Puro Wine de W Hotel, la cata reunió a una quincena de enólogos que sostuvieron una animada y honesta discusión. Primero se debatió sobre la ausencia de vinos chilenos entre los grandes trofeos de este concurso que se celebra todos los años en Sidney y donde los catadores, un representante por cada país, son quienes seleccionan e invitan a participar a los vinos. Si bien las marcas chilenas que entraron en la competencia reflejan el panorama de los distintos valles vitivinícolas, desde Limarí hasta Malleco, falta un mayor compromiso de las viñas por aprovechar de mejor forma esta valiosa instancia de promoción. Ganar un trofeo en este certamen significa nada menos que alzarse como el mejor del Nuevo Mundo en una de las 17 clases o categorías, y entrar en un circuito internacional de seminarios y catas en mercados relevantes.

En segundo término, el enólogo de Concha y Toro Marcelo Papa puso sobre la mesa la realidad del Sauvignon Blanc en Chile.

Nadie duda del extraordinario nivel cualitativo que ha alcanzado esta cepa con la irrupción de los valles costeros, convirtiéndose en pocos años en la segunda categoría en Chile detrás del Cabernet Sauvignon. Sin embargo, el enólogo criticó –secundado por su colega Rodrigo Soto– la desmedida búsqueda de acidez en los vinos, provocando muchas veces un final de boca poco amigable.

Sus pares concluyeron que se necesita llevar esta categoría a un tercer nivel cualitativo. Chile ya demostró que puede hacer vinos elocuentes y profundamente frescos. Ahora el paso es buscar mayores niveles de complejidad, nuevas capas aromáticas y una mayor redondez en boca.

Chilean winemakers gathered to taste the winners of the Six Nations Wine Challenge The highlights of this tasting were a Syrah from New Zealand and a sweet wine from Australia; however, the experience proved helpful for Chilean winemakers to openly discuss about the reality of our wines in the New World arena and the major challenges each category will have to face in the next few years.

It was an intense and revealing morning. Tasting the trophies from the Six Nations Wine Challenge produced important lessons and offered an opportunity for a constructive debate on the strengths of and challenges for Chilean wines. This comparative exercise in which local winemakers could taste some of the best wines from Australia, New Zealand, South Africa, the U.S. and Argentina launched a debate that is far from over, but somehow hints where Chilean wines stand in the New World.

Organized by VITIS Magazine and held at the Puro Wine room at the W Hotel, this wine tasting gathered some 15 winemakers who engaged in an active and honest discussion. One of the first matters discussed was the absence of Chilean wines among the trophies of this competition held every year in Sidney and where tasters, one from each participating country, chose and invite wines to participate. Although the Chilean labels invited to the event reflect the reality of the various wine valleys, from Limarí to Malleco, lack of commitment is observed among wineries to make better use of this valuable promotion event. Earning a trophy at this event means nothing else than rising as the best in the New World in one of the 17 classes or categories and joining an international circuit of seminars and wine tastings in major markets.

Secondly, Concha y Toro winemaker Marcelo Papa raised an issue on our own Sauvignon Blanc. Nobody questions the high quality this variety has attained through the introduction of coastal valleys, which in a matter of a few years has turned it into Chile’s second most important category after Cabernet Sauvignon.

Nevertheless, the winemaker criticized –which his colleague Rodrigo Soto supported– the disproportionate inclination for acidity that tends to result in a not-veryfriendly finish. His peers concluded that this category needs to move to a third level of quality. Chile has already proven it can make outspoken and remarkably fresh wines. The time has come to search for higher levels of

6NATIONSWINECHALLENGE También se puso en entredicho el real nivel del Pinot Noir chileno. Pese a las modas, y al nivel sobresaliente de algunas bodegas, falta afianzar esta cepa en niveles superiores de precio. El desafío es producir vinos con fruta fresca, pero que al mismo tiempo cuenten con suficiente complejidad y estructura para sentarse a conversar en cualquier mesa del mundo. Si bien los valles costeros lideran en esta categoría, se necesita redoblar los esfuerzos en la búsqueda de nuevos terruños, posiblemente en el sur profundo, como Malleco e incluso Osorno, donde ya contamos con algunos muy buenos exponentes.

No todos los vinos de la cata lograron convencer a los enólogos, especialmente en categorías como Cabernet Sauvignon y mezclas tintas, donde Chile tiene argumentos de sobra para imponerse, pero otros sencillamente despertaron elogiosos comentarios. Los favoritos de la mañana fueron Kusuda Syrah 2010, el Best in Show en Sidney y también en Puro Wine, un clásico neozelandés de clima costero, pero con muchas capas aromáticas y una sorprendente firmeza en boca; Pressing Matters R 9 Riesling 2012, un representante australiano de la nueva camada de Riesling, fresco, delicado y profundo; y De Bortoli Noble One Bot Semillon 2008, un vino australiano con podredumbre noble complejo y equilibrado, quizás lo más parecido a un Sauternes que se pueda hacer en el Nuevo Mundo, en palabras de Sven Bruchfel, enólogo y propietario de Polkura.

El encuentro terminó con un cóctel, una elegante selección de espumantes de Viña Valdivieso, Reserva de Pueblo de Miguel Torres –el nuevo maulino de la filial catalana hecha a partir de uva País– y con la promesa de que el próximo año será mejor, mucho mejor para Chile en Sidney.

complexity, new aromatic layers, and a rounder mouthfeel.

The true level of the local Pinot Noir was also questioned. Despite market trends and the outstanding quality of some bottlings, Pinot Noir needs to take a firm grip of higher price levels. The challenge is to produce wines with fresh fruit, but sufficiently complex and structured to compete on an equal footing with the best from anywhere in the world. Although coastal valleys dominate this category, efforts must be twice as big to identify new terroirs, perhaps as far south as Malleco or even Osorno, where some exceptional wines are being made.

Not all the wines tasted managed to convince the winemakers, which is especially true for categories like Cabernet Sauvignon and red blends, where Chile has more reasons that not to excel, but others were the matter of sincere praising. The favorites of the morning were Kusuda Syrah 2010, Best in Show in Sidney and also at Puro Wine, a classic coastal climate New Zealander boasting numerous aromatic layers and surprisingly firm mouthfeel; Pressing Matters R 9 Riesling 2012, a fresh, delicate and deep Australian from the new generation of Rieslings; and De Bortoli Noble One Bot Semillon 2008, a complex and balanced Australian noble rot wine, perhaps the closest one can find to a Sauternes in the New World, as Sven Bruchfel, owner and winemaker of Polkura, described it.

The event closed with a reception and an elegant selection of sparkling wines from Viña Valdivieso and Reserva de Pueblo by Miguel Torres –the new bottling made from País grapes in the Maule-based subsidiary of the Catalonian winery– and a pledge that next year will be a much better one for Chile in Sidney.

Lo positivo fue que encontramos algunos exponentes muy buenos. El trofeo se lo llevó un vino denso, de sabores elegantes, notas de brezo y tabaco, boca sabrosa y aterciopelada, y taninos suaves pero persistentes”.

“A disappointing class with many wines over-oaked and/or showing astringent tannins. These are not necessarily wines that will age well, although that’s probably the intention. La nueva mirada de Aresti

La llegada de un nuevo gerente general a la viña curicana, ahora en manos de las hermanas Begoña y Anita Aresti, ha implicado poner en marcha una estrategia a cinco años que busca básicamente elevar las ventas y la rentabilidad. / JORGE ENGLISH G.

n diciembre del año 2009 Empresas Tucapel, por lejos la principal compañía arrocera del país, fue adquirida por el grupo brasileño Camil Alimentos. Todo un hito para la familia controladora, los Aresti, quienes en julio de 2011 vendieron a Carozzi otra de sus firmas emblemáticas, Nutripro, que fabrica y comercializa las marcas de alimento para mascotas Master Dog y Master Cat. Pero los cambios no culminaron ahí.

Luego los hermanos Vicente, Begoña y Anita Aresti López decidieron hacer un reordenamiento de las participaciones que les correspondían en el resto de las sociedades controladas por la familia. Este proceso concluyó con los activos agrícolas dedicados principalmente a la exportación frutícola en manos de Vicente, mientras que Aresti Chile Winery, el tercer pilar del antiguo holding, pasó a ser en un 100% propiedad de Begoña y Anita.

Un tremendo paso para esta bodega que, sin embargo, no resultó traumático ni ha significado romper de raíz con el pasado.

El origen de la viña data de 1951, cuando Vicente Aresti Astica, el padre de las actuales dueñas, decidió aprovechar los viñedos familiares ubicados en Molina para iniciar un negocio dedicado a la elaboración de vino a granel. Casi medio siglo después, en 1995, el patriarca –fallecido la víspera de Navidad de 2012– comenzó a embotellar y exportar vinos con su propia etiqueta, con un portafolio enfocado en dos segmentos: varietal y reserva. Durante los años siguientes la cartera de productos se amplió progresivamente, hasta que en la cosecha 2001 se introdujo la línea súper premium Family Collection. En paralelo, Aresti invirtió en una bodega que hoy tiene una capacidad para 9 millones de litros y en una planta de embotellado de 3 mil botellas por hora.

Pese al profundo involucramiento de Vicente Aresti Astica en el día a día de la compañía, desde sus inicios ésta siempre contó con una administración profesional y con un directorio que, tal como ahora, estaba formado por seis personas. Bajo esta conducción la empresa logró crecer a ritmo constante y sin contratiempos posicionándose en más de 30 mercados.

Aresti’s new perspective The arrival of a new general manager to the Curicóbased winery now steered by sisters Begoña and Anita Aresti prompted the implementation of a 5-year strategy aimed to spur sales and improve profitability.

Empresas Tucapel, by far Chile’s largest rice producer, was acquired by the Brazilian group Camil Alimentos in December 2009. The transaction was a true milestone for the controlling family, the Arestis, who in July 2011 would sell another of their flagship companies –Nutripro– which produces and sells pet food brands Master Dog y Master Cat. Changes kept coming and later Vicente, Begoña and Anita Aresti López decided to restructure their stakes in all the others companies controlled by their family. As a result of this process, Vicente kept the agricultural assets mostly dedicated to fruit exports, while sisters Begoña and Anita took control of Aresti Chile Winery, the third pillar of the original holding.

As big as this step was, it was neither a traumatic event nor a change that forced the winery to break with the past.

The winery was established in 1951, when Vicente Aresti Astica, father of the current owners, decided to take advantage of the vineyard the family owned in Molina to start producing bulk wine. Nearly half a century later, in 1995, the head of the family –who passed away on the Christmas Eve of 2012– started bottling and exporting wines under his own label, with a portfolio focused on two segments: Varietal and reserve wines. Over the years to come, new products were gradually added to the portfolio until the Family Collection super premium line was introduced in the 2001 vintage. Around the same time, Aresti invested in a winery, the present capacity of which is 9 million liters, and in a bottling plant that produces 3,000 bottles per hour.

Although Vicente Aresti Astica remained deeply involved in the day-to-day business, since its early days the winery relied on a professional management and a Board that, as it is now, consisted of six members.

Thus, the company managed to grow steadily, without setbacks, and to consolidate its position in over 30 markets.

Hence, when Begoña and Anita Aresti took over, they found a healthy and mostly profitable operation (certainly depending on foreign exchange volatility) that this year

También se cambió el isotipo, ahora representado por una “A” acompañada de tres granos de uva que representan a las tres generaciones que han participado en la viña.

Así las cosas, al momento de tomar las riendas, Begoña y Anita Aresti se encontraron con una viña sana, en general rentable (dependiendo de los vaivenes del tipo de cambio) y con una facturación que este año bordeará los US$ 20 millones (7% más que en 2012) y ventas en torno a las 800 mil cajas.

NUEVA ESTRATEGIA A 5 AÑOS

Estaba claro que no era necesario hacer transformaciones radicales, pero las hermanas Aresti sí querían darle un nuevo impulso a la compañía. Para ello reclutaron al ingeniero agrónomo y enólogo Matías Rivera quien asumió como gerente general, el mismo cargo que ocupaba hasta ese momento en Viña Santa Helena.

“Cuando llegué a principios de julio me encontré con una empresa consolidada, funcionando bien y con un equipo profesional comprometido. El directorio, por su parte, está muy presente y le gusta participar de las definiciones estratégicas importantes de la empresa”, cuenta Rivera, quien al mes de haber asumido propuso diseñar un nuevo plan estratégico para impulsar los resultados de la compañía, pues si bien contaba con salud financiera y un volumen de ventas competitivo, tenía algunas debilidades, como una concentración de los mercados y una alta dependencia de uvas de terceros.

Rivera detectó que existía el espacio para crecer en mercados que son relevantes para la industria vitivinícola chilena, que se podía definir mejor el posicionamiento de cada marca de la viña, y lograr un aumento del precio promedio de sus productos. NEW 5-YEAR STRATEGY Clearly, no major changes needed to be made; however, the Aresti sisters wanted to give the company new impetus. With that in mind, they hired a new General Manager, Matías Rivera, an agricultural engineer, enologist, and former general manager of Viña Santa Helena.

“When I joined in early July, I found a well-established, fully operational company that relied on a highly committed professional team. In addition, the board of directors likes to be on top of things and to take part in strategic decisions that are critical to the company,” mentioned Rivera, who a year into his general manager role proposed designing a new strategic plan to boost the company’s results, which although financially sound and with a competitive sales volume, still showed some weaknesses like market concentration and high dependence on third-party grapes.

Rivera identified room to grow in markets relevant for the Chilean wine industry and thought that better positioning could be achieved for each of the winery’s labels and a higher average price could be attained for its products in general. With this in hand, he designed a

El nuevo derrotero pretende agregar valor en todas las marcas de la compañía y subir el precio promedio de los actuales US$ 25 por caja a US$ 35 dentro de los próximos tres años. En términos de facturación, la meta es pasar durante dicho período de los US$ 20 millones que vende hoy la empresa a US$ 30 millones, saltando del lugar 21 al 15 en el ranking local del sector.

“Queremos ser más rentables, lograr mejores precios para nuestros productos, aumentar los volúmenes sobre la base de mejoramientos de la productividad en viñedos y bodega; ingresar a nuevos mercados y desarrollar una nueva línea gran reserva que agregue más valor a la marca”, sintetiza Matías Rivera.

Bajo este marco, el plan consideró una inversión de US$ 2 millones –que se ha estado concretando desde 2012– destinada a plantar 100 hectáreas, hasta sumar un total de 300, y así llegar a aproximadamente un 60% de abastecimiento propio. Además se están introduciendo técnicas de producción más modernas para suplir mano de obra y bajar costos, junto a un manejo del viñedo enfocado en elevar la calidad. Paralelamente se están buscando nuevos productores de uva y se están realizando inversiones en la bodega y en el área de producción.

Aunque el equipo de profesionales que hoy se encarga de las áreas agrícola, de marketing y comercial sigue siendo básicamente el mismo, se han sumado nuevos profesionales. Desde el punto de vista comercial, la intención es alcanzar una mayor penetración en América, con énfasis en Canadá, Brasil, Colombia y Venezuela. “Nos interesa darle una mayor importancia al continente, que hoy pesa en torno a un cuarto dentro de nuestras ventas”, puntualiza Rivera. Junto con los mencionados, en la actualidad los principales destinos de la compañía incluyen a Finlandia, Irlanda, Japón, Estados Unidos, China y Holanda.

El mercado chileno es actualmente el séptimo en importancia para la viña, pero la intención es que dentro de dos años ocupe el sexto lugar gracias a la introducción de vinos de mayor valor, a la participación en más canales de venta y a diversas acciones orientadas a alcanzar una mayor y mejor distribución.

Otra de las iniciativas incorporadas por Matías Rivera es el diseño de nuevas políticas de recursos humanos con el fin de aumentar el

How? The plan intends to add value to every brand and to raise the average price from the current USD 25.00 a case to USD 35.00 a case within the next three years. “We want to see larger profits, get better prices for our products, increase volumes based on improved productivity at the vineyard and the winery, penetrate new markets and develop a new grand reserve line that adds further value to the brand,” Matías Rivera explained.

In this framework, the plan considered a USD 2.0 million investment, the funds of which started to be injected in 2012, to plant 100 new hectares for a total area under vine of 300 hectares and become self-sufficient by 60%. Moreover, leading edge production techniques are being introduced to make up for labor shortage and to cut costs, while vineyard management seeks to boost quality. Meanwhile, new wine producers are being sought and investments are being made at winery and production level.

Although the team of professionals who presently oversees the agricultural, marketing, and commercial departments has remained virtually unchanged, some new professionals have been hired. Businesswise, the winery intends to further its penetration in America, particularly in Canada, Brazil, Colombia, and Venezuela.

“We would like to place greater emphasis on our continent, which currently accounts for 25% of our sales,” Rivera explained. In addition, Aresti’s largest markets of destination are Finland, Ireland, Japan, the U.S., China, and the Netherlands.

The local market is ranked 7th for the winery, and this is why efforts are now being aimed at causing it to climb to 6th place through the launching of higher-end wineries, the introduction of a larger selection of sales

Si bien ambas atacan sus mercados de manera separada, lo hacen a través del mismo equipo de ventas. Aún así, la filial argentina tiene a ciertos responsables de la marca operando directamente en ese país y algunos mercados son atendidos desde Mendoza.

UNA IMAGEN RENOVADA

En concordancia con ello, se decidió rediseñar los vinos, tarea a la que se abocó el enólogo Jon Usabiaga, en la empresa desde el año 2006. Como resultado, los varietales (línea Estate Selection) hoy son elaborados con uvas provenientes de campos propios ubicados en el valle de Curicó, a diferencia de antes, cuando se hacían con materia prima del Valle Central. En el segmento Special Release ahora se utiliza uva de distintos valles, de acuerdo a dónde se expresa mejor cada cepa (por ejemplo, Sauvignon Blanc de Curicó, Cabernet Sauvignon de Colchagua, Carmenère de Rapel).

Aside from Aresti, the winery owns two other brands – Espíritu de Chile and Espíritu de Argentina– the image of which will also be revamped. Although both brands do business separately, the same team is in charge of sales. Still, the Argentine subsidiary relies on some professionals who take care of the brand directly in that country and some markets supplied from Mendoza. According to Matías Rivera, efforts will also be focused on opening new markets and fostering increased sales for these two brands.

Consequently, the winery decided to redesign its wines, a task that was assigned to winemaker Jon Usabiaga who has been working for Aresti since 2006. As a result, varietals (Estate Selection line) are presently made from grapes grown in the winery’s vineyards in the Curicó

Valley. Formerly, these wines were made from grapes sourced from the Central Valley. Grapes from various valleys are now used in making the Special Release wines, which allows every cultivar to express at its best (for example, Sauvignon Blanc from Curicó, Cabernet Sauvignon from Colchagua, and Carmenère from Rapel).

Se contrataron los servicios de la agencia Piano & Piano, la que sugirió dejar de usar la pintura de Valenzuela Llanos que figuraba en todos los vinos Aresti, y utilizarla sólo en la etiqueta Family Collection. Aresti then engaged the services of advertising agency Piano & Piano, which suggested removing the painting by Valenzuela Llanos from all the wines, with the exception of the Family Collection line. As a result, the other lines now showcase a refreshed, more modern image.

ESPUMANTES SE ROBARON LA PELÍCULA EN CONCURSO DE RÁNQUIL Bajo el puente de Ñipas, en el corazón del Valle del Itata, se efectúa el Concurso del Vino y Muestras Tradicionales de Ránquil. Y año a año los jueces dan fe de los avances en términos enológicos de estos vinos que rescatan una vitivinicultura fundacional.

En el marco de un programa de innovación, que busca sumar valor a los vinos de la zona, los espumantes se robaron la película este año, demostrando un potencial que se acrecentará con la firma de un convenio con Indap, el cual permitirá contar con una embotelladora móvil avaluada en $50 millones para los pequeños productores de Ránquil.

DE MARTINO sigue innovando Para Viña De Martino innovar significa mirar hacia atrás, volver a los orígenes y rescatar la pureza e identidad de sus diferentes terruños.

Hace ya tiempo manifestó que renegaría de las barricas y de la madera nueva. Y poco a poco ha ido cumpliendo. Alto de Piedra Carmenère 2011 es su primer vino 100% elaborado en fudres, y a partir de 2014 se le unirán las restantes etiquetas de su línea Single Vineyard. La viña adquirió de un proveedor austríaco 36 fudres (30 de 5 mil litros y 6 de 2.500) con el fin de reemplazar las tradicionales barricas de 225 litros.

Dentro de las novedades, también lanzó Gallardía del Itata Cinsault 2013, un vino con marcadas notas de guindas ácidas y frambuesas, ligero y refrescante, ideal para el verano. Con este Cinsault completa su línea dedicada al valle sureño, conformada también por Rosé y Moscatel.

DE MARTINO PURSUES THE INNOVATIVE PATH. For Viña De Martino, to innovate means to look back, to go back to its origins, and to rescue the purity and identity of its various terroirs. Some time ago, the winery announced it would no longer use new barrels and new oak. They have kept that promise. Alto de Piedra Carmenère 2011 is their first wine fully made in wood vats.

The other labels of their Single Vineyard line will join this initiative starting in 2014. The winery bought 36 wood vats (30 5,000-liter vats and 6 2,500-liter vats) from an Austrian supplier with the intention to replace the traditional 225-liter barrels.

Another development at De Martino is the launching of Gallardía del Itata Cinsault 2013, a light and refreshing wine with delicious sour cherry and raspberry notes. The perfect choice for the summer, this Cinsault completes the Itata Valley line that also features Rosé and Muscat.

Under an innovation program aimed to add value to local wines, sparkling wines jumped into the spotlight this year, boasting a potential that will certainly grow bigger as a result of an agreement recently executed with Indap that will allow small producers from Ránquil to buy a $50-million mobile bottling machine.

NUEVO ERASMO DE CALIBORO, A BEBER “En La Reserva de Caliboro siempre hemos buscado aportar algo novedoso al mundo del vino chileno y con este Erasmo Barbera Garnacha pienso que lo estamos haciendo”, dijo Francesco Marone al presentar este nuevo vino que nace en los viñedos de San Javier de Loncomilla, en el secano interior del Maule. Y no se equivoca.

Realmente ésta es una mezcla novedosa y un interesante aporte al portafolio chileno.

Erasmo 2013 está compuesto por 65% de Barbera, 25% de Garnacha y 10% de Carignan, tres cepas tradicionales del Mediterráneo que se trabajan con levaduras nativas, fermentando el 50% de las distintas uvas juntas y el otro 50% en lotes separados, sin guarda y sin madera. El resultado es un delicioso jugo de frutas silvestres, fresco, vivo, de suaves taninos, y amable final. Un vino joven, ideal para el aperitivo o para acompañar pescados y carnes blancas. Precio aproximado: $10.000.

CALIBORO LAUNCHES NEW ERASMO. “With Reserva de Caliboro we have always sought to make an innovating contribution to Chilean winemaking. I believe we are delivering that promise with this new Erasmo Barbera Garnacha,” said Francesco Marone during the launching of this new wine from vineyards in San Javier de Loncomilla, in the interior dryfarmed areas of the Maule Valley. And he is quite right about it. This is an innovating blend and a sound contribution to Chile’s portfolio.

Erasmo 2013 consists of three traditional Mediterranean grape varieties –65% Barbera, 25% Garnacha and 10% Carignan– which are treated with native yeasts. 50% of the grapes are fermented together and the other 50% is fermented separately, without aging and without oak. The result is a delicious, fresh and lively juice of wild fruit with delicate tannins and gentle finish. A young wine, ideal as an aperitif or to marry with fish and white meats. Su trabajo en Cauquenes, que devolvió el orgullo a los productores de País, la creación del primer vino orgánico chileno en Lomas de Cauquenes, la constante búsqueda de innovación, como el concepto de “terroir microbiológico” en la línea Sans Soufre de La Fortuna, y el rescate y revalorización de la vitivinicultura fundacional del Valle del Itata, son algunos de los importantes hitos que han enriquecido su carrera.

VINO CHILENO SE IMPONE EN CONCURSO DE GRANELES. Durante la quinta edición de la World Bulk Wine Exhibition, se dieron a conocer los ganadores del Concurso Internacional de Vinos a Granel, único en el mundo en juzgar este segmento de vinos. El único ganador de Gran Medalla de Oro fue un vino chileno: Cabernet Sauvignon Plus elaborado por Viña Las Mercedes de Isla de Maipo. Viñedos Puertas fue la viña chilena más premiada, con dos medallas de oro y una de plata. En el certamen participaron 70 muestras de 9 países.

CASAS DEL BOSQUE RECIBE GALARDÓN EN LONDRES. El concurso International Wine & Spirit Competition premió a Casas del Bosque como la Viña Chilena del Año, en una ceremonia realizada en los salones medievales de Guildhall, en el corazón de Londres. Casas del Bosque fue la única viña chilena que se adjudicó dos medallas de oro. Además, su enólogo jefe Grant Phelps figuró entre los finalistas nominados como Mejor Enólogo.

21 años de PARTNER. La Cena Anual de Partner comenzó con mucho misterio. Más de 100 invitados, la mayoría de ellos enólogos, tuvieron una difícil prueba: reconocer a ciegas el origen, cepaje, añada y bodega de tres vinos. Felipe García, enólogo de García & Schwaderer, fue quien estuvo más cerca, con cuatro aciertos.

NUEVA COSECHA DE OVEJA DÍSCOLA DE VÍA WINES. No es común mezclar cepajes blancos y tintos. Para eso hay que tener un espíritu transgresor y atrevido, como el recién lanzado Oveja Negra Sauvignon Blanc Carmenère Reserva 2013. Una línea de Vía Wines que llegó a desordenar el rebaño con mezclas innovadoras, modernas, pero muy consistentes para su nivel de precio ($3.490). Este vino del Maule destaca por su marcado carácter especiado y una refrescante acidez. A pesar de que sólo contiene un 10% de Carmenère, este cepaje se hace notar.

CLAUDIO BARRÍA RECEIVES VITIviniCULTURAL MERIT AWARD. In an exciting ceremony, Claudio Barría was presented the 2013 Viticultural Merit Award, the highest distinction winemakers can receive from their peers along their career. Barría’s remarkable career and is filled with contributions to winemaking, including his work in Cauquenes, through which producers of the País variety recovered their pride; the creation of the first Chilean organic wine at Lomas de Cauquenes; the ongoing quest for innovation, like the “microbiological terroir” concept in the La Fortuna’s Sans Soufre line; and the recovery and revaluation of native winemaking in the Itata Valley.

CHILEAN WINE REAPS THE HIGHEST AWARD AT BULK WINE COMPETITION. The International Bulk Wine Competition, the world’s only event in which bulk wines are judged, presented its award winners during the 5th World Bulk Wine Exhibition.

The only bottling to take home a Great SHORTHAND Gold Medal was a Chilean wine: Cabernet NEWS Sauvignon Plus by Viña Las Mercedes from Isla de Maipo. In addition, Viñedos Puertas was the local winery that collected the most awards, with two gold and one silver medals. 70 samples from 9 countries participated in the competition.

CASAS DEL BOSQUE RECEIVES AWARD IN LONDON. The International Wine & Spirit Competition recognized Casas del Bosque as the Chilean Winery of the Year in a ceremony held at the medieval halls of Guildhall in London. Casas del Bosque was the only Chilean wine that collected two gold medals and its chief winemaker, Grant Phelps, made the short list among the nominees for Best Winemaker.

SANTA EMA AMPLUS PRESENTS NEW VINTAGE. Viña Santa Ema has just launched Amplus Cabernet Sauvignon 2010, a limited edition bottling originating in Maipo Alto vineyards. This wine aged for a year in French oak barrels showcases black fruit aromas like blueberries, plums and blackberries. A remarkably concentrated Cabernet with a persistent fruity finish.

PARTNER’S 21ST ANNIVERSARY. The Annual Partner Dinner had a mysterious debut. Over 100 guests, most of them winemakers, had a tough test to pass: A blind tasting where they had to recognize the origin, variety, vintage and winery of three wines. Felipe García, winemaker of García & Schwaderer, came the closest with four right answers.

VÍA WINES LAUNCHES A NEW VINTAGE OF OVEJA negrA. Blending white and red varieties is quite unusual.

Only the most adventurous, even bold of wines, like the recently launched Oveja Negra Sauvignon Blanc Carmenère Reserva 2013 would dare to do so. This line by Vía Wines is truly the black sheep in the family but in the good sense: innovative, modern, and very consistent price/quality ratio (USD 8.00). A Maulean wine to be recalled because of its spicy character and refreshing acidity. Although it only has 10% of Carmenère, this variety is clearly felt.

Mediterranean cuisine and the wines from Itata This is no arbitrary combination, but a naturally delicious one. Grape varieties like Muscat and Cinsault leap back to their Mediterranean origin, playing a very old tune that now includes the new and deep notes from the Itata Valley.

The story of Chilean winemaking stretches back to the 16th century with the Jesuit Missions established in southern Chile along the Itata and Bio-Bío valleys. The

Los colonizadores eligieron la región por sus lluvias invernales, pues dependían de la naturaleza para irrigar sus viñas. Por décadas, el paisaje vitivinícola estuvo dominado por cepas españolas, especialmente la País. Esta tinta jugó un papel crucial en la historia del vino chileno. Hasta hace muy poco era la más extendida y consumida en el mercado local.

Sin embargo, a partir de la segunda mitad del siglo XIX, comenzaron a imponerse los cepajes franceses, entre los cuales el Cabernet Sauvignon brilló con luces propias.

Pero en el sur de Chile, la País y otras cepas consideradas rústicas, como Cinsault y Moscatel de Alejandría, todavía son parte importante del paisaje cotidiano. El terroir del Itata, con sus antiguos lomajes de arcilla y granito, más sus cálidos pero siempre ventosos veranos, forman el ecosistema perfecto para que sus productores cosechen uvas sanas y con mucha personalidad, que armonizan muy bien con recetas internacionales, principalmente de la dieta mediterránea.

Voy a ser honesta: mi amor por esta zona no fue a primera vista.

En un principio no comprendí su encanto, esa rusticidad y estado casi salvaje, donde nada parece encajar con la lógica posmoderna.

Pero, cuando me sumergí más profundamente en el valle, entendí su ritmo, esa extraña vibración, casi mística, donde la naturaleza y el hombre parecen trabajar al unísono y no uno contra el otro. Esas parras de cabeza, que se desparraman por sus lomajes, en medio de bosques y casas de adobe, representan un verdadero museo viviente, que hoy se proyecta con mucho optimismo.

La Moscatel es una de las variedades más extendida y reconocida en el mundo entero por sus particulares aromas, tan florales, agradables y dulces, muchas veces matizados con notas de camomila, peras y miel. En Italia sus vinos son voluptuosos, masculinos y secos. Y en Itata, donde coincidentemente sus productores la llaman uva Italia, se caracterizan por sus cuerpos más bien medios y un perfume más delicado.

This red grape has played a decisive role in the history of Chilean wine, and until not long ago was the most widespread and consumed variety in the local market. However, during the second half of the 19th century, French varieties started to dominate the scene, among them Cabernet Sauvignon, which later became a star in its own right.

But in the south of the country, País and other varieties considered rustic –such as Cinsault and Muscat of Alexandria– are still an important part of the everyday landscape. The terroir of Itata, with its old clay and granite slopes and its hot yet always windy summers, make up a perfect ecosystem for producers to harvest healthy grapes of great personality that pair to perfection with international recipes, especially the ones stemming from the Mediterranean diet.

Let me be honest: my feelings for this area of the country were not precisely love at first sight. At the beginning, I did not quite understand its charm, its rusticity and almost wild state where nothing seems to fit with post-modern logic. But as I got to know the valley better I felt its rhythm and began to comprehend that odd, almost mystical vibration where nature and man seem to work in unison instead of against one another.

DOLCE VITA Muscat is one of the most widespread and widely consumed varieties for its unique floral, pleasant and sweet aromas often accented by notes of chamomile, pears and honey. In Italy, its wines are voluptuous, masculine and dry, while in Itata, where funnily enough local producers call the variety Italia, they present medium bodies and a more subtle scent.

Esta cepa odia la humedad y en el viento del Itata encuentra su mejor aliado, permitiéndole el desarrollo de aromas más frescos y crujientes, como de cáscara de pomelo, a veces ciertas notas terrosas o animales, y un seductor toque oriental que me recuerda el jazmín. Estas características devuelven a la Moscatel a su origen, a los alrededores del Mediterráneo, provocando este mágico encuentro con su cocina.

La cocina mediterránea es sinónimo de sol y playa. De vegetales, aceite de oliva, pescados, hierbas y fruta fresca. De recetas simples y saludables. De Italia, Francia, España, Grecia y Medio Oriente. ¡De dolce vita! Es una forma de vida que le confiere mucha importancia al disfrute, a la buena mesa, a reunirse con los amigos, a hacer un alto en la vida para dejarse llevar por los sentidos. Porque sus habitantes saben que no sólo es saludable comer bien, sino también compartir con la familia y las amistades. ¡Y qué mejor que hacerlo con un buen pescado a la grilla y brindar con una copa de vino!

Los aperitivos y el Moscatel representan el comienzo de esta fiesta mediterránea. El vino tiene suficiente estructura para armonizar muy bien con el hummus de garbanzos. Las proteínas de las legumbres son equivalentes a su peso, y sus notas florales –orientales, si se quiere–, potencian el sabor del tahini, esa sabrosa pasta de semillas de sésamo.

La acidez del vino, por otra parte, contrarresta perfectamente el acento más graso de preparaciones como el falafel, la tradicional receta del Medio Oriente. Esas imperdibles bolitas de garbanzos o habas viajan miles de kilómetros para encontrarse con el Itata más profundo.

En toda la región del Mediterráneo se prepara una ensalada en base a tomate, pepino, aceitunas, cebolla y aceite de oliva. ¡Mucho aceite de oliva! A veces aderezado con vinagre, y trocitos de queso –feta, por favor–, esta receta necesita un blanco estructurado y muy aromático como el Moscatel para que pueda enfatizar toda su frescura y crujencia.

The variety hates moisture and finds in the Itata wind its best ally, as it helps it to develop fresher and crunchier aromas of grapefruit skin and certain earthy or animal notes together with a seducing oriental touch reminiscent of jasmine. These characteristics take Muscat back to its origin somewhere in the Mediterranean basin, producing a magical encounter with its culinary tradition.

Mediterranean cuisine is synonymous with sun and beaches, vegetables, olive oil, fish, herbs and fresh fruit.

It is also synonymous with simple, healthful recipes, with Italy, France, Spain, Greece and the Middle East as its best representatives. In sum, with dolce vita! It is a way of life that places a big stress on enjoyment, good eating, dining with friends, stopping for a while and surrendering to our senses. Because the inhabitants of the Mediterranean basin know that health is not just eating well, but also sharing with family and friends. And what better way to celebrate than with a nice grilled fish while toasting with a glass of wine!

Aperitifs and Muscat are just the beginning of this Mediterranean feast. The wine structure is powerful enough to pair wonderfully with chickpea hummus. The vegetable protein matches the wine’s weight and the floral notes –oriental if you wish– boost the flavor of tahini, that savory sesame seed paste. The wine acidity perfectly counterbalances the fatty side of preparations like falafel.

These incredible balls made of chickpea or lima beans travel thousands of kilometers to dive into the deepest corners of Itata.

Sin embargo, la compañía más natural del Moscatel son los pescados y mariscos. Prueben con pescado grillado o frito, paella o pizza a la marinera. La cocina de Andalucía ofrece una gran selección de pescados fritos y apanados. La acidez del vino cortará esa sensación grasa en el paladar. El mismo mecanismo funciona con el mücver, esos panqueques turcos de zucchini, servidos generalmente con yogurt y ajo. Para todos los que aman las recetas livianas, los vegetales y la simpleza en la cocina, pueden hincarle el diente a estas felices combinaciones que nos regala la vida.

SIMPLEMENTE MÁGICO

Otros clásicos entrantes del Medio Oriente son las distintas variaciones de la berenjena, preparadas la mayoría de las veces con cebolla y tomate. Su aspecto, claro está, es inversamente proporcional a su sabor. No luce bien, pero cerrando los ojos –y con pan pita– es absolutamente delicioso. En Francia, la berenjena es cocinada al horno con ajo, perejil, limón y aceite de oliva. Una suerte de brunch para coronar una crujiente baguette. Otro clásico es el baba ghanoush –literalmente, seductor o vicioso–, muy popular en el Líbano, donde la berenjena desmenuzada y asada es potenciada con mil y una especias y, por supuesto, aceite de oliva.

A common salad across the entire Mediterranean region is the one made with tomato, cucumber, olives, onion and olive oil. Lots of olive oil! Sometimes dressed with vinegar and cheese crumbles –feta cheese, please– this recipe calls for a broad-shouldered, very aromatic Muscat that expresses all its freshness and crispiness.

Nevertheless, the most natural pairing for Muscat is fish and shellfish. Try it with fried or grilled fish, paella or seafood pizza. Andalusian cuisine offers an amazing selection of fried and breaded fish. The wine acidity cuts the fatty sensation in the palate. And the same goes for mücver, those Turkish zucchini pancakes normally served with garlic and yogurt. And those who love light recipes, vegetables and simplicity in the kitchen will be happy to feast on these nice combinations that the Mediterranean offers us.

SIMPLY MAGICAL Other classic Middle Eastern entrées are the various eggplant preparations, most often served with onion and tomatoes. Their aspect, of course, is inversely proportional to their flavor. They may not look yummy, but if you close your eyes and try them with pita bread the sensation is absolutely delicious. In France, eggplants are roasted in the oven with garlic, parsley, lemon and olive oil.

A perfect marriage for a crunchy baguette. Another classic is baba ghanoush –literally “a seducer”–, a very popular preparation in Lebanon, where shredded roasted eggplants are dressed with a thousand and one spices and, of course, olive oil.

Eggplant does not ask for, but demands a mediumbodied red. This vegetable does not have a great structure per se, but is enriched by a multitude of ingredients that change its appearance, even its personality. For eggplants, we like a dry red like Cinsault.

The lightness of the wine makes them very compatible in weight, but the nice pomegranate notes create a harmonious blend in this age-old recipe. Unlike its French cousins, which are generally vinified as Rosé or table wine, Itata Cinsault develops a surprising personality. La berenjena no pide, sino exige un tinto de cuerpo medio. La verdura no goza de una gran estructura per se, pero es enriquecida con un sinnúmero de ingredientes que le cambian la cara, incluso la personalidad. Para este plato rezamos por un tinto seco como el Cinsault. La ligereza del vino los hace muy compatibles en peso, pero además sus notas de granada crean una armoniosa relación con esta receta milenaria. A diferencia de sus pares franceses, donde generalmente se vinifica como Rosé o vino de mesa, en Itata logra una sorprendente personalidad. Gracias a sus suelos pobres y sequedad del verano, desarrolla frescas notas de cerezas y frambuesas, conformando un vino jugoso y redondo, muy fácil de tomar. Para mí, la real encarnación del estilo de vida mediterráneo.

El Cinsault es capaz de acompañarnos a lo largo de toda la comida, desde el aperitivo hasta el plato principal. Pruébenlo primero con tapenade, esta exquisita pasta de aceitunas machacadas, alcaparras, anchoas y aceite de oliva. La particular mezcla de notas saladas y terrosas, particularmente la grasa de los pescados, se llevan a las mil maravillas con su cuerpo medio y acentuada acidez. Esta receta, al igual que la cepa, comparten un mismo origen: Provenza. Es decir, estamos ante un maridaje de terroir, el mejor de los encuentros posibles.

Y para tabbouleh –una de las ensaladas más populares del Medio Oriente, preparada con bulgur, perejil finamente picado, cebollín, menta, tomate, jugo de limón y aceite de oliva– pueden elegir un buen Moscatel, pero mi personal recomendación es Cinsault. Me gusta cómo esta variedad armoniza con las notas terrosas del bulgur y cómo mis sentidos descubren ese toque nogado detrás de la frescura del limón.

Para el plato principal, no me queda otra opción que invitar a todos los extranjeros a Chile y degustar el Cinsault con porotos granados, esta sopa o guiso “caldúo” –según el gusto del cocinero– que combina porotos de la temporada, choclo, zapallo y albahaca fresca. round wine that is very easy to drink. In my opinion, the real epitome of the Mediterranean lifestyle.

Cinsault is perfectly capable of accompanying us throughout the meal, from the aperitif to the main course. Try it first with tapenade, a wonderful paste made with crushed olives, capers, anchovies and olive oil. The peculiar mixture of salty and earthy notes, especially the fish fat, is an incredible match for the wine’s medium body and bold acidity. This recipe and the grape variety share the same Provençal origin. So here we are in the presence of a terroir pairing that is the best possible encounter.

And for tabbouleh, one of the Middle East’s most popular salads prepared with bulgur wheat, finely chopped parsley, scallions, mint leaves, tomato, lemon juice and olive oil, you may choose a good Muscat, although my personal choice would be Cinsault. I like the way this variety harmonizes with bulgur’s earthy notes and how my senses discover the nutty touch underlying the lemon freshness.

For the main dish, I insist on inviting everybody to visit Chile and taste Cinsault with porotos granados, the hearty stew-soup made with fresh beans, corn, pumpkin, and fresh basil. They are equivalent in weight and the harmony of flavors is simply beyond this world. Besides the sweet notes of the dish, the fresh basil leaves combined with the other ingredients deliver a wild, somewhat earthy aftertaste that works wonders with the flavors of Cinsault. And if we add a touch of merkén, a Mapuche preparation that blends ground cacho de cabra

Además de las notas dulces del plato, las hojas de albahaca fresca combinadas con los otros ingredientes, nos regalan un retrogusto salvaje, un poco terroso, que corresponden maravillosamente con los sabores del Cinsault. Y si a eso le agregamos una pizca de merkén –aromática preparación mapuche en base a ají cacho de cabra machacado con semillas de cilantro– entramos a una dimensión que escapa de lo meramente mundano.

La otra dirección que pueden tomar es la parte este del Mediterráneo, específicamente Grecia, donde encontrarán la tradicional gemista, tomates y pimientos rellenos de arroz, carne picada, cebolla, hierbas y especias. El Cinsault coquetea con este plato en muchos niveles.

Sus dulces notas frutales armonizan mágicamente con los pimientos, y su cuerpo medio y alcohol moderado, con las proteínas de la carne suavizadas por el arroz y los vegetales.

Algunos de estos mismos ingredientes, como berenjena, carne picada, tomate y queso, cobran otra dimensión en Italia, a través de la clásica parmigiana. El plato es sencillamente espectacular. Y, personalmente, me gusta acompañarlo con un vino rústico y jugoso como el Cinsault de Itata.

Ahora los quiero invitar a que cierren los ojos y se dejen llevar por mis gustos personales del recetario mediterráneo, principalmente por todas aquellas recetas en base a tomates. Prueben con una botella de Cinsault y les aseguro que no saldrán decepcionados. Pueden jugar con gazpacho, ratatouille, pisto, caponata… Mmm, ¿pueden sentir los aromas de los tomates frescos, del ajo y del aceite de oliva? Me encantan estas preparaciones para el verano y las puedo comer una y otra vez, con pan o solas, frías o calientes, a veces con berenjenas y zucchinis, cocinadas separadamente y dispuestas en exquisitas, delicadas y elegantes capas. Nunca se den por vencidos hasta dar con la receta ideal. El secreto está en las verduras y hierbas.

DE VUELTA AL PAÍS

¿Por qué los colonizadores escogieron la País? Por sí sola, esta cepa no ofrece vinos deslumbrantes. Son más bien rústicos, con pHs altos y algo tánicos. Pero por esas mismas razones los jesuitas escogieron esta cepa para propagarla durante su evangelización. Su carga tánica permitía que los vinos conservasen sus propiedades durante todo el año, sin que terminaran avinagrando sus misas. Pero precisamente su rusticidad se ha transformado hoy en una de sus fortalezas. Su carácter campechano, jugosidad y, sobre todo, su honestidad, invitan a viajar hacia el pasado y redescubrir esta cepa.

Pienso en País y en esas tradicionales recetas mediterráneas con carne picada como las koftas. Las proteínas del vacuno o el cordero, en este caso, suavizan los taninos del vino. Estas recetas en base a carne, sobre todo si las marinamos con hierbas frescas como romero o tomillo, van muy bien con las notas silvestres de este vino tinto que, vinificado como corresponde, puede seducirnos con su frutosa y chispeante personalidad.

No importa que tan duro estuvo el día, un simple trozo de pan con aceite de oliva puede traernos la alegría mediterránea al atardecer, cuando el sol nos regala sus últimos estertores, cuando nuestros platos de terracota cobran un furioso brillo, cuando los tonos de la lavanda lucen más intensos que nunca. Y, cuando estamos en esa mágica atmósfera, en ese estado de exquisito sopor, merecemos vinos honestos, fáciles de entender, que nos sorprendan día a día, que nos conecten con nuestras recetas cotidianas. You may also choose to go to the eastern Mediterranean, specifically Greece, where you will find the traditional gemista, which consists of tomatoes and bell peppers stuffed with rice, minced meat, onion, herbs and spices. Cinsault is a good match for this dish at various levels. Its sweet fruity notes pair wonderfully with bell peppers, and its medium body and moderate alcohol content make it a good match for the meat protein already softened by the rice and vegetables.

Some of these same ingredients, namely eggplant, minced meat, tomato and cheese are beautifully utilized in Italy in the classic parmigiana, a dish that is simply spectacular. Personally, I like to pair it with a rustic and juicy wine like Cinsault from Itata.

And now I would like you to close your eyes and let yourselves be tempted by my favorite Mediterranean recipes, mainly those made with plenty of tomatoes.

Try a bottle of Cinsault and rest assured you will not be disappointed. You may play with gazpacho, ratatouille, pisto, caponata… Mmm, I can almost smell the fresh tomatoes, garlic and olive oil! I love these preparations in summer and I never get tired of eating them time and again, with bread or alone, cold or hot, sometimes eggplant and zucchini cooked separately and arranged in delicious, delicate and elegant layers. Never give up until you find the perfect recipe. The secret is in the vegetables and the herbs utilized.

BACK TO PAÍS Why did the settlers choose the País variety? Alone, this grape does not produce wines that we can call dazzling. Instead, they are rather rustic, with high pH and ubiquitous tannins. But that is exactly why the Jesuits chose it for propagating it during their evangelization efforts. Its tannin load kept the wines’ properties well protected during the whole year. Today, this rusticity has become one of its main strengths. Its country-like personality, juiciness and honesty invite on a trip to the past to rediscover this variety.

I think of País and those traditional Mediterranean recipes with minced meat like koftas. In this case, the protein from beef and lamb smooth out the wine tannins. These meat-based recipes, especially if we marinate the meat with fresh herbs like rosemary and thyme, go remarkably well with the wild notes of this wine, which, when vinified the right way, can seduce us with its fruity and sparkly personality.

No matter how hard our day was, a simple piece of bread dipped in olive oil can bring us the joy of the Mediterranean at dusk, when the sun sinks in the horizon, when our terracotta plates shine furiously, when the color of lavender becomes more intense than ever. And while we enjoy that magical atmosphere, that state of exquisite somnolence, we deserve wines that are honest, easy to understand and surprising day after day, wines that connect us to our daily recipes. These wines exist in Chile.

They are Muscat and Cinsault from the Itata Valley. t

Un revelador viaje por el Itata profundo

Con el fin de conocer, preservar y revalorizar la tradicional vitivinicultura de secano del Itata profundo, más de 50 enólogos y periodistas participaron de una gira técnica organizada por la Asociación de Enólogos y Profesionales del Vino del Valle del Itata y la Asociación de Ingenieros Agrónomos-Enólogos de Chile, que incluyó la visita a bodegas, degustaciones y una especial cata de espumosos de pequeños productores que buscan rentabilizar sus uvas de Moscatel de Alejandría y Cinsault.

An enlightening journey to the depths of the Itata Valley Over 50 winemakers and wine writers participated in a technical trip to the depths of the Itata Valley organized by the Association of Enologists and Wine Professionals from the Itata Valley and the Chilean Association of Agricultural Engineers-Enologists. The purpose of this journey was to learn about, preserve, and add value to the dryland viticultural tradition of this valley. Among the activities, participants visited wineries, took part in wine tastings, and in a special tasting of sparklers made by small vintners who are committed to increasing the profits of their Muscat of Alexandria and Cinsault grapes.

Más de 6 mil personas llegaron este año a Casas de lo Matta para disfrutar de la versión N° 21 de la Gala del Vino, que esta vez contó como novedad con un innovador Wine Bar con cócteles en base a vinos. Otras propuestas que provocaron mucho interés fueron el espacio de los espumantes y un Photo-Wall, que no cesó de registrar divertidas fotografías que eran inmediatamente compartidas en las redes sociales.

Escrito y compilado por la cronista gastronómica y de vinos Harriet Nahrwold, “Vinos de Chile” se plantea como una revisión general de los principales aspectos de la vitivinicultura chilena. Dividido en cinco partes principales: Historia del Vino, Valles Vitivinícolas, Las Cepas, Viticultura y Vinificación, y Nuevas Tendencias (donde se aborda la proyección de los vinos chilenos), el libro propone un recorrido histórico y técnico por la industria del vino en Chile, con textos claros, muy fáciles de leer, especiales para acercar al común de los lectores al mundo del vino.

Con 288 páginas y más de 600 fotografías de alta calidad, casi la mitad del libro entrega información de 101 viñas que quisieron participar de la publicación, aportando con sus imágenes y breves reseñas históricas, las que son incorporadas como una especie de ficha técnica de cada una.

Si bien resulta una obra llamativa por su presentación en tapa dura e imágenes cuidadas, su título no refleja exactamente el contenido, ya que en realidad el foco está puesto principalmente en las viñas y no en sus productos. Habría sido interesante haber incorporado información de los vinos más destacados de cada viña.

Otro aspecto que habría enriquecido aún más el contenido, es haber incorporado citas, notas, referencias bibliográficas, lecturas de foto explicativas, y una bibliografía de respaldo, de modo de haber dado mayor sustento al relato histórico.

Aparte de estas consideraciones, se trata de una obra atractiva para los turistas que buscan una guía sobre las viñas chilenas –teniendo en cuenta que hay una versión en español y una en inglés– y también para aquellas personas que quieren interiorizarse sobre la actividad vitivinícola en Chile, ya que hay buenas referencias sobre los valles, las principales cepas utilizadas en Chile, y cómo se elabora el vino en nuestro país.

Written and compiled by wine and food writer Harriet Nahrwold, “Vinos de Chile” (Wines of Chile) offers a general review of the main aspects of Chile’s wine industry. In five different chapters, History of Wine, Wine Valleys, Grape Varieties, Viticulture and Vinification, and New Trends (where a projection of local wines is discussed), the book offers a journey through the history and technical aspects of winegrowing in Chile by means of clearlywritten, easy-to-read texts intended to appeal to all readers.

Consisting of 288 pages and as many as 600 high-quality pictures, almost half of this publication refers to 101 wineries that wished to be included in the book and that contributed with images and historical accounts that have been incorporated in the form of a technical sheet of each of them.

Certainly an appealing book in terms of presentation including hardcover and professional pictures, its name falls short to accurately describe its contents, since it is mostly focused on describing wineries rather than their bottlings. Perhaps providing some information on each winery’s best-selling wines would have an interesting avenue to explore.

Moreover, the content could have certainly benefited from quotations, notes, references, picture descriptions, and a bibliography that would have supported the historical narrative.

Overlaying this, it is definitely an interesting book for tourists who look for a guide on Chilean wineries –the book is available in English and Spanish– and for all those wishing to learn about the Chilean wine industry, because the book offers excellent references on the valleys, the grape varieties most commonly grown in Chile, and local winemaking practices.
