Un mundo, muchos paladares No es casualidad que se llame Concours Mondial de Bruxelles. Porque es como las Naciones Unidas. Reunir a 320 catadores de 40 nacionalidades es un reto en términos logísticos, pero también una oportunidad para compartir y, sobre todo, aprender. Pocas veces tenemos la oportunidad de conversar con un enólogo de Marruecos, un sommelier de India o un periodista de Georgia.

Este intercambio de opiniones y experiencias es sumamente enriquecedor.

Dejamos, aunque sea por un momento, de mirarnos el ombligo para abrirnos a otras sensibilidades, otras preferencias, otros puntos de vista.

En mi comisión compartí con catadores de Francia, España, Portugal y Grecia y, pese a que estuvimos bastante calibrados durante los tres días de competencia, las diferencias de paladar se hacen sentir, sobre todo cuando los vinos provienen de regiones poco conocidas.

Tampoco es pan comido intentar adivinar el origen

de una serie. Las caídas suelen ser frecuentes. Y bastante feas. Por muchos títulos que uno tenga, por muchos litros que hayan corrido bajo nuestras narices, no es difícil equivocarse cuando un concurso es capaz de convocar nada menos que 8.200 muestras de 50 países.

El Concours Mondial de Bruxelles, que el próximo año volverá a su origen para celebrar su vigésimo aniversario, continúa batiendo records de participación. Y Chile continúa siendo uno de sus países predilectos: obtuvo el quinto lugar en el medallero (nada menos que el 30% de sus muestras fueron premiadas).

Dicen que no estamos de moda. Que no despertamos pasiones. Ni menos discusiones filosóficas.

Pero, cuando los expertos están a solas frente a una copa, sin más información que el color, aroma y sabor de un vino, nuestros representantes suman y suman reconocimientos.

Después de una larga siesta, donde costaba distinguir un vino de otro, una nueva generación de Chardonnay chilenos despierta nuestro entusiasmo, profundizando en la cepa y en las particularidades de sus distintos terruños. El presente de la cepa es promisorio, pero lo mejor aún está por venir.

stuvo descuidado.

Perdido. Travestido. El Chardonnay, uno de los cuatro cepajes fundamentales de la vitivinicultura posmoderna, no encontraba su justo medio. Jugaba en los extremos, con un ritmo cansino, predecible, empujado por las modas imperantes, sin desarrollar una personalidad propia ni menos profundizar en sus distintos orígenes. Cuando se plantó en Casablanca, a principios de la década del 80, pensábamos que su fortuna cambiaría. Incluso, intuíamos que sería la principal cepa del primer valle costero de Chile y la bandera de los blancos chilenos.

Sin embargo, se cometieron muchos errores. Algunos de ellos por omisión, pero otros derechamente fueron un impúdico atentado contra su naturaleza.

Alentados por el estilo californiano que dominó a partir de la década del 90, vinos gorditos y dulzones, maquillados con una madera con desvaríos hollywoodenses, los Chardonnay chilenos se convirtieron en un commodity, en una pachanga tropical, en un homenaje a la vainillina, en unos fisiculturistas con músculos decorativos, incapaces de correr 50 metros planos sin presentar síntomas de ahogo. La receta se fotocopiaba y pasaba de mano en mano en las bodegas. Cosechar bien entrado el otoño, fermentaciones reductivas en estanques y luego un uppercut de barrica nueva que nos dejaba en la lona.

Otro problema fue el material vegetativo. Como el Chardonnay estaba de moda, se propagaron indiscriminadamente las plantas que estaban más a la mano. Se trataba del tristemente célebre clon Mendoza, una selección masal que atravesó la cordillera sin dar nunca pruebas de blancura. Con aromas demasiado estridentes, y una mezquina acidez, no era el clon para estrenar la nueva generación de Chardonnay chilenos. Hoy se pagan los platos rotos.

Muchas de aquellas plantaciones, luego de superar la adolescencia, muestran signos de una vejez prematura, obligando a los viticultores a labores de replante y a un desesperado juego de ensayo y error con la importación de nuevos clones franceses.

El Chardonnay ya no goza de la incontrarrestable popularidad de antaño –el Sauvignon Blanc lo ha eclipsado incluso en Casablanca–, pero este cepaje vuelve a resurgir con mucha fuerza en los últimos diez o quizás cinco años. La introducción de plantas clonales y patrones, que se han adaptado a las distintas condiciones de suelo y tolerantes a plagas como los nemátodos, sumado a la búsqueda de nuevos conceptos enológicos, han provocado un vuelco cualitativo que se deja sentir en nariz, pero sobre todo en boca.

10 Chardonnays that escape the ordinary After a long slumber during which the different wines could barely be distinguished from each other, a new generation of Chardonnays is tickling our enthusiasm, giving a new insight on this variety and the peculiarities of its different terroirs. The present of this cultivar is already promising, though the best is yet to come.

For some time it was overlooked, lost and confused.

Chardonnay –one of the four pillars of post-modern winemaking– seemed unable to achieve a balanced expression. Its renditions were all so predictable due to the whims of the market that it just could not develop a personality of its own, let alone express the uniqueness of its different origins. When first planted in Casablanca in the early 1980s, we all thought its fate would finally change. We even predicted it would become the main variety of Chile’s first coastal valley and the flagship of all Chilean white wines.

But unfortunately many mistakes were made, some of them simple omissions, but others were a blatant defiance on mother nature.

Eager to reflect the trendy California style that prevailed in the early the 1990s, that is, fatty and sweetish wines disguised in a woody costume in the best Hollywood tradition, Chilean Chardonnays became a commodity, a tropical-like tribute to vanillin. A team of body builders with fake muscles that made them incapable to even run the 50 meter sprint without becoming physically exhausted and unable to deliver. The recipe was replicated over and over again and passed on from one winery to another: Harvest well into the fall, apply reductive fermentations in tanks and then apply an uppercut of first-use barrel that knocked consumers out.

Another problem was the vegetal material. Since Chardonnay was in full fashion, the plants that were more at hand were propagated without any control.

Unfortunately, the material used was the ill-famed Mendoza clone, a mass selection imported from across the Andes that never really stood the test of quality. Its strident aromas and scarce acidity made it very unsuitable to be part of the new generation of Chilean Chardonnays.

And today we are paying the consequences of such poor judgment. Many of those plantations are showing the signs of a premature old age, forcing vintners to replant and to engage in a desperate game of trial and error with the importation of new French clones.

Chardonnay no longer enjoys the overwhelming popularity of yesterday –Sauvignon Blanc has overshadowed it even in Casablanca– but in the last five years or so it has slowly regained some of its strength.

Aunque todavía no logra su consolidación definitiva, y aún encontramos una masa uniforme que baila al ritmo de las cambiantes preferencias de los mercados, cada vez son más los enólogos que han decidido tomarse el Chardonnay en serio, buscando su propio camino, su propia identidad. La vuelta de los fudres y tinajas, de fermentaciones más lentas y oxidativas, y en general el objetivo enológico de construir bocas más firmes y profundas, no sólo permiten alcanzar nuevos umbrales de calidad, sino vinos que pueden crecer con el tiempo, alcanzando otros sabores, otros matices, otras complejidades.

El descubrimiento y consolidación de nuevas zonas vitícolas, como los valles de Limarí en el norte y Malleco en el sur, también han abierto el abanico de posibilidades para esta cepa que hoy se reinventa para mostrar la mejor de sus caras. El respeto al tiempo durante el proceso, la pérdida del miedo al oxígeno, el uso más razonable de la madera, y una genuina búsqueda por resaltar las particularidades únicas de los distintos orígenes, han dado vida a una nueva camada de Chardonnay que despierta entusiasmo y, en ciertos casos, incluso logra emocionar.

The return of wood vats and tubs, slower and less oxidative fermentations, and, in general, the enological goal of building firmer and deeper mouth sensations all contribute to reaching new quality levels and achieve wines that can still grow with time, developing new flavors, new shades, new complexities.

The discovery and consolidation of new viticultural areas such as the Limarí Valley in the north of the country and Malleco in the south have also opened a range of new possibilities for this variety that has reinvented itself to display its best attributes. The respect for the time required to achieve the process, the loss of the fear of oxygen, a more reasonable use of oak and a genuine desire to highlight the singularities of the different origins have given birth to a new generation of Chardonnays that tickle consumer enthusiasm and, in certain cases, move their deepest emotions.

TABALÍ TALINAY CHARDONNAY 2011

Es el vino que más me gusta de esta joven bodega del Limarí. Es el más radical y jugado de la dupla conformada por Felipe Müller y Héctor Rojas.

Intenso y fresco, como pocos, quizás como ninguno. Cítrico y con un retrogusto salino que hace salivar, invitándonos a beber una nueva, una nueva, una nueva copa. Proveniente de la zona de Fray Jorge, a sólo 12 kilómetros del océano, este vino es hijo de la tiza, la camanchaca y el viento.

This is the wine I like best from this young winery of the Limarí Valley. It is the most radical and daring wine produced by the duo of winemakers Felipe Müller and Héctor Rojas.

Intense and fresh like few others, or even perhaps like no other. Citrusy and with a briny aftertaste, it extends an invitation to have one more glass, and then another, and another. Produced in the area of Fray Jorge, just 12 kilometers from the Pacific Ocean, this wine is a child of the chalky soil, the ocean fog and the wind.

DE MARTINO SINGLE VINEYARD QUEBRADA SECA CHARDONNAY 2010

A 19 kilómetros del mar, al norte del río Limarí, Quebrada Seca se ha convertido en un barrio de lujo para los Chardonnay chilenos. Y De Martino y su enólogo Marcelo Retamal han sabido resaltar las características de este paisaje desértico, donde las parras son manchones verdes en un suelo de tonos anaranjados y blancos. En un año de mucha concentración, este vino muestra su lado más potente y mineral.

Just 19 kilometers from the ocean and situated north of the Limarí River, Quebrada Seca has become a luxury neighborhood for Chilean Chardonnays. And De Martino and its winemaker Marcelo Retamal have successfully managed to underscore the characteristics of this desert landscape, where the vineyards make up green patches on a white and orange canvas. In a year of much concentration, this wine boasts its most powerful and mineral side.

CONCHA Y TORO AMELIA CHARDONNAY 2011

Proveniente del viñedo Las Petras, a sólo 10 kilómetros del mar, este Chardonnay es todo un referente de Casablanca.

No sólo reafirma la vocación de este valle por la cepa, sino que muestra una nueva dimensión en términos de fineza y profundidad. La mano de Ignacio Recabarren se hace notar. Es un vino de mucha complejidad aromática, pero por sobre todo con una exquisita textura.

Produced in the Las Petras vineyard, just 10 kilometers from the ocean, this Chardonnay is a true benchmark of the Casablanca Valley. Not only does it reaffirm the valley’s commitment to the variety, but it also shows a new dimension in terms of finesse and depth. The hand of Ignacio Recabarren is clearly felt. The wine stands out for it great aromatic complexity, but above all for its exquisite texture.

MAYCAS DEL LIMARÍ QUEBRADA SECA CHARDONNAY 2010

Es el vino que lidera el portafolio de Maycas. Y con todos los merecimientos. Es un Chardonnay intenso y concentrado.

A wine austere in aromas, but with great structure. Vinified by Felipe Uribe, this Chardonnay deepens its ties with the Andean foothills, funneling its winds to begin a long journey through our palate.

CALYPTRA GRAN RESERVA CHARDONNAY 2009

En el sector de Coya, entre las montañas del Alto Cachapoal, donde los días son más cortos y la relación con la naturaleza es más íntima, nace este Chardonnay que vuelve a los orígenes de la enología. Fermentado en barricas de roble francés, este vino coquetea con el oxígeno para entregar aromas y sabores voluptuosos, dulces, pero apoyados por una firme acidez. Es un vino hecho a la antigua, como le gusta decir a su enólogo Francois Massoc.

This Chardonnay that takes us back to the origins of winemaking is produced in the area called Coya, located among the mountains of the Alto Cachapoal where days are shorter and the relationship with nature is closer. Fermented in French oak barrels, the wine flirts with oxygen to deliver aromas and flavors that are voluptuous and sweet, yet supported by a firm acidity. It is a wine made in the old-fashioned way, as the winemaker François Massoc likes to say.

AQUITANIA SOL DE SOL CHARDONNAY 2009

Con sólo 5 hectáreas plantadas en 1995, el enólogo Felipe de Solminihac inauguró la denominación de Traiguén (Malleco), mostrando una nueva dimensión para el Chardonnay chileno. En un viñedo rodeado de trigales, despeinado por un constante e intenso viento, sus uvas maduran con mucha parsimonia, atrapando notas de frutos blancos, cítricos y una acidez que impresiona por su frescura y redondez. Firmeza y elegancia, son difíciles de conseguir, pero aquí está la mejor de las pruebas.

With 5 hectares planted in 1995, the winemaker Felipe de Solminihac inaugurated the appellation Traiguén (Malleco), opening a new dimension for Chilean Chardonnay. In a vineyard surrounded by fields of wheat and ruffled by a constant and intense wind, its grapes take their time to ripen, catching notes of white and citrus fruit and an impressively fresh and round acidity. Firmness and elegance are hard to achieve, but here is the best proof that it can be done.

CAMBIOS EN VIÑA UNDURRAGA LANZAN CONSORCIO I+D PARA ELEVAR COMPETITIVIDAD DE LA INDUSTRIA

Vinos de Chile y Corfo lanzaron el Consorcio I+D Vinos de Chile, iniciativa que supone una inversión total de $10.350 millones para un periodo de diez años, de los cuales $5.350 millones serán aportados por la industria y el resto corresponderá a recursos estatales.

Actualmente son dos los proyectos clave para el consorcio: el programa I+D de Calidad del Viñedo, que buscará tener nuevo material de vides libres de virus, y el programa I+D en Sustentabilidad, conformado por una serie de proyectos orientados a toda la cadena de valor del vino que busca hacerla ambientalmente amigable, socialmente equitativa y económicamente viable.

El directorio de Viña Undurraga decidió reorganizar la estructura gerencial de la compañía. De este modo a partir del 1 de julio, Rafael Urrejola asumirá la dirección enológica de la viña en reemplazo de Hernán Amenábar, quien estuvo ligado a la empresa durante 26 años.

El área comercial será dirigida por Stefano Rossi, quien desde hace cuatro años se desempeñaba como gerente de exportaciones.

Según explicó Ernesto Müller, gerente general de Undurraga, el área de exportaciones se fusiona con mercado local, y marketing pasa a depender de la gerencia comercial. Además se suprime la gerencia de mercado local y el área de marketing se reestructurará en función de la estrategia de marcas. La idea es tener un equipo más pequeño y enfocado, que permita mayor eficiencia y rentabilidad.

CHANGES AT VIÑA UNDURRAGA. The Board of Directors of Viña Undurraga decided to redefine the company’s management structure. Accordingly, starting July 1, Rafael Urrejola will replace Hernán Amenábar, who had worked at the company for 26 years, as head of the winemaking team of the winery.

The commercial department will be steered by Stefano Rossi, who had been the export manager for the past four years. As explained by Ernesto Müller, Undurraga’s CEO, the export department will merge with the local market department, and the marketing department will directly report to the commercial department. The local market department will no longer exist and the marketing department will be restructured based on the branding strategy. The goal is to have a smaller, more focused team that results in increased efficiency and return.

R&D CONSORTIUM ESTABLISHED TO INCREASE THE INDUSTRY’S COMPETITIVENESS. Wines of Chile and Corfo recently launched Wines of Chile R&D Consortium, a 10-year initiative with a CLP 10.35 billion investment, CLP $5.35 billion of which will be contributed by the industry while the remainder will be funded through public resources.

At present, the initiative is focused on two key projects: The Vineyard Quality R&D program aimed at producing new virus-free grapevine material, and the Sustainability R&D program, which consists of various projects targeting the entire wine value chain to make it more environmentally friendly, socially equitable, and economically viable.

Viña San Pedro Tarapacá Wine Group (VSPT), que controla las bodegas La Celia y Tamarí en Argentina, cerró sus oficinas de exportación en Mendoza y concentrará todos sus esfuerzos en las líneas de mayor valor agregado. Con un cambio de mix comercial, la empresa pretende consolidar las exportaciones y colocar un 95% de sus vinos en el exterior. Sólo el 5% de la producción quedará en el mercado interno.

“Desde mayo del año pasado analizamos que el escenario era incierto por los altos costos y que no podíamos seguir vendiendo vinos de baja gama, por lo que decidimos cambiar nuestro portafolio y generar productos de mayor valor agregado (sobre los US$ 25 la caja)”, explicó Sebastián Ríos Dempster, gerente general de la bodega, al medio trasandino Los Andes.

VSPT CLOSES EXPORT OFFICES IN ARGENTINA AND CHANGES STRATEGY. Viña San Pedro Tarapacá Wine Group (VSPT), owner and controller of wineries La Celia and Tamarí in Argentina, has closed its export offices in Mendoza and will focus all its efforts on higher added-value lines. By changing the business mix, the company intends to consolidate exports and ship as much as 95% of its wines to markets overseas. Only 5% of its production will be sold locally.

Como Enólogo del Año fue elegido Felipe Tosso, enólogo jefe de Ventisquero, mientras que Adriana Cerda fue distinguida por su Trayectoria Enológica.

El Premio Rosita Robinovitch recayó en Roberto Marín, miembro honorario del Círculo, autor del libro “Chilenos cocinando a la chilena”, entre otras publicaciones.

20% DEL CONSUMO EN CHILE CORRESPONDE A VINOS PREMIUM

Los vinos premium –es decir aquellos de un precio superior a $4.200– representaron el 20% del total de vinos consumidos por los chilenos en 2012, lo que equivale a ventas por US$ 110 millones y un millón de cajas. Así lo informó el presidente de Vinos de Chile, René Araneda, agregando que en tres años la categoría creció un 10% en valor.

Aunque los chilenos están demandando vinos de mayor valor, el consumo en volumen no despega. Según un reciente reporte de CCU, el año pasado el consumo per cápita fue de 12 litros, frente a 17 litros de hace diez años. La caída ha sido de 3,7% al año, de acuerdo a cálculos de CCU.

PREMIUM WINES ACCOUNT FOR 20% OF LOCAL CONSUMPTION. Premium wines –sold for close to USD 10 or more– accounted for 20% of all the wines purchased by Chileans in 2012 with sales totaling USD 110 million and a million cases.

The information was disclosed by Wines of Chile’s Chairman, René Araneda, who added that this segment grew by 10% in value terms in the past three years.

Although Chilean consumers are demanding higher-end wines, consumption in terms of volume is still not taking off. A report recently disclosed

by CCU says that consumption per capita in 2012 totaled 12 liters as compared to 17 liters ten years ago. CCU estimates that consumption has dropped by 3.7% per year.

na de las palabras que más se ha escuchado en el último tiempo es “identidad”. Muchos han hablado de la necesidad de buscar vinos con mayor identidad, que no es otra cosa que trabajar en la diferenciación del vino chileno. Y se sugieren tres caminos para lograrlo: crear una imagen o marca-país que proporcione identidad y revalorice los diversos vinos producidos en Chile; invertir más en innovación y calidad; y cambiar las expectativas del consumidor por medio de la producción de vinos de calidad mundial.

Se podría pensar que el primer camino es el más pedregoso –¡cuántos años se lleva discutiendo sobre la debilidad de nuestra imagen país y no se siente avanzar! –, pero puede ser el más seguro para lograr mejorar el precio promedio de nuestros productos y, en definitiva, la rentabilidad de las empresas. ¿Por qué es particularmente importante la marca-país en el mercado del vino? Porque al ser este producto un bien de experiencia, los consumidores pagan más por la calidad ‘percibida’ que por la calidad ‘efectiva’. “Y la calidad percibida en este mercado está muy determinada por el país de origen del producto”, según explican Rodrigo Berríos y Rodrigo Saens, profesores de la Facultad de Ciencias Empresariales de la Universidad de Talca, quienes realizaron un estudio orientado a evaluar el poder de marca de un país entrante al negocio del vino como Chile, Argentina o Australia y a conocer cuán sensible es el precio cuadro 1. Trapped in country branding The country brand is a sort of public asset that can play for or against the goods and services a country produces. According to a study on the U.S. market, Chilean wine is subject to some kind of countrypenalty since the mere fact of originating in a producer known for its low prices determines that a bottle of Chilean wine will, on average, be sold for half the price of one of equal quality, but from Napa.

A word we have heard time and time again lately is “identity.” Many have raised the need to strive to produce wines with a more remarkable identity, which is nothing but working on Chilean wine’s distinctiveness. Three vehicles to attain that goal have been identified: Building an image or country brand that fosters a unique identity and boosts the price of the wines produced in Chile; further investing in innovation and quality; and changing consumer expectations by producing world-class wines.

One could think this is the slowest vehicle, after all, how many years have we spent talking about our weak country image, yet, how much progress have we made?

However, and this is a big however, this is perhaps the safest vehicle to raise the average price of our products; hence the profit rate of our companies.

Why is country branding a determinant for the wine market? Because since wine is as an asset of experience, consumers pay more for the quality ‘perceived’ than for ‘actual’ quality. “And the quality perceived in this market is heavily determined by the product’s country of origin,” as explained by Rodrigo Berríos and Rodrigo Saens, professors at the Universidad de Talca’s School of Business Sciences, who conducted a study to assess

En este mercado, una mayor calidad no es garantía de un mayor precio. La relación entre precio y calidad depende más de la percepción que tiene el consumidor respecto del país de origen del vino que de la calidad efectiva del producto. De acuerdo a los resultados de Berríos y Saens, publicados recientemente en el número 106 de Cepal Review, los vinos chilenos logran obtener sólo la mitad del precio de un vino de igual calidad, pero del valle de Napa.

Y en este negocio, la historia también importa. Los vinos franceses, por ejemplo, tienen una calidad percibida muy superior a su calidad efectiva. Sus altos precios se deben más a su reputación histórica que a su calidad.

En este contexto, los vinos de un país entrante, sean buenos o regulares, son fuertemente castigados. El value for money usado por los vinos de países entrantes como Chile, parece que ya no sirve. Gracias a dicha estrategia de penetración, el grueso de los consumidores estadounidenses tiene una imagen de que el vino chileno es aceptable, pero sólo para uso corriente. Mientras los vinos argentinos, chilenos y sudafricanos se ubican en góndolas de supermercados donde se amontonan los vinos baratos, los californianos, y sobre todo los franceses, lo hacen en estanterías de tiendas especializadas donde se venden sólo los vinos caros. Acostumbrado a vincular directamente calidad con precio, el consumidor aprende a relacionar la calidad con el país de origen.

MIDIENDO LA MARCA-PAÍS

Para conocer el poder de marca de los vinos chilenos en el mercado de EEUU, Berríos y Saens tomaron una muestra de 14.284 vinos tintos evaluados por la revista Wine Spectator y que obtuvieron sobre 70

published in Cepal Review’s issue 106, Chilean wines only attain half the price of same-quality wines from the Napa Valley.

It goes without saying that history plays a key role as well. For example, French wines’ perceived quality is noticeably higher than their actual quality. The high prices they attain result from their historical reputation rather than from their quality.

In this context, the wines of an entrant country – regardless of their quality– are heavily penalized. It seems that the value for money approach used by wines from entrant countries like Chile is no longer a useful one. Thanks to such a penetration strategy, most U.S. customers see Chilean wines as pretty decent, but day-to-day wine. While Argentine, Chilean and South African wines share supermarket shelves along with low-end wines, Californians and particularly French ones are displayed at specialized outlets where only highend wines are sold. Used to linking quality and price, consumers learn to associate quality to the country of origin.

MEASURING THE COUNTRY BRAND In order to find out the power of Chilean wines’ brand in the American market, Berríos and Saens took a sample of 14,284 red wines reviewed by Wine Spectator that scored above 70 points. The analysis considers new vintages (1997 to 2005), because Argentine, Chilean and South African wines only penetrated this market in the 1990s.

puntos. El análisis considera nueve cosechas (1997 a 2005), debido a que la penetración de los vinos argentinos, chilenos y sudafricanos en este mercado comienza recién en los años 90. Los disímiles tamaños de muestra por cada región/país (Cuadro 1) reflejan el peso real que tienen sus vinos en este mercado.

Al analizar los indicadores de precio y calidad promedio (medida por los puntajes de WS), se evidencia que la disposición a pagar de los consumidores, más que por la calidad objetiva del vino, está muy influenciada por la reputación, la imagen del país de origen o por ambas. Como muestra el cuadro 2, los vinos franceses obtienen un mayor precio con respecto a su calidad media, aun en aquellas cosechas en que los puntajes promedio obtenidos son menores que los de otros países.

En el cuadro 3 se muestra la cantidad y proporción de vinos con más de 90 puntos producidos por cada país. La comparación entre las proporciones corrobora el patrón ya esbozado de abuso de reputación, dominio excesivo por imagen o de ambos. Por ejemplo, mientras la proporción de vinos australianos con más de 90 puntos sube de un 20% en 1997 a un 40% en 2005, en California cae de un 26% a un 24%; sin embargo, esto no se ve reflejado en los precios.

En el cuadro 4 se presenta un resumen de los resultados de tres cosechas en las que se analizaron la relación entre precio, calificación de calidad, reputación individual y reputación colectiva por región/país en el mercado del vino. Se muestran coeficientes para la elasticidad precio-calidad estadísticamente significativos, de signo positivo y de magnitud esperable. Los resultados indican, además, que la elasticidad precio-calidad se mantiene relativamente estable en el tiempo (con excepción del caso de Francia), oscilando entre 2,7 y 4,0.

Los resultados muestran que Argentina, Chile y Sudáfrica no mejoran en nada su poder de marca, y sus vinos experimentan un castigo de precios relativamente similar. En particular, los consumidores castigan al vino chileno con un descuento creciente (en dólares por botella) que va de un 34% en 1997 a un 40% en 2007, tal como lo muestran sus respectivos coeficientes de marca-país. También se aprecia que el castigo de precios de Australia es similar que el de Chile en 2007, lo que –en opinión de Berríos y Saens– no debe ser interpretado como muestra del desperdicio de esfuerzo de marketing y de calidad australiano; sólo ilustra la complejidad de ganar poder de marca frente a las grandes reputaciones. Considerando que Australia coloca

When analyzing average quality and price indicators (measured according to WS scores), it can be observed that consumers’ willingness to pay is mostly influenced by reputation, the image of the country of origin or both, rather than by the actual quality of wine. As shown in Table 2, French wines attain a higher price compared to their average quality even in vintages with lower scores than those of other countries.

Table 3 shows the quantity and proportion of wines with scores above 90 points produced by each country.

The comparison among proportions confirms the aforementioned pattern of reputation abuse, excessive image dominance, or both. For example, while the proportion of Australian wines with scores above 90 points increased from 20% in 1997 to 40% in 2005, Californian wines dropped from 26% to 24%, although this decline is not reflected in prices.

Table 4 summarizes findings of three vintages regarding which the relationship between price, quality rating, individual reputation, and collective reputation per region/country in the wine market was analyzed.

Price-quality elasticity coefficients that are statistically significant, positive in sign and of the expected magnitude are shown. Findings show that the price-quality elasticity has remained rather steady over time (with the exception of France), ranging between 2.7 and 4.5.

Moreover, it can be observed that Argentina, Chile and South Africa have not improved their brand power and that their wines are subject to similar pricing penalty. In particular, consumers penalize Chilean wines with a discount (in US dollars per bottle) that grew from 34% in 1997 to 40% in 2007, as evidenced by the brand coefficients shown in Table 4. Findings also show that the price penalty for Australia is similar to that of Chile in 2007 which, in the opinion of Berríos and Saens, should not be interpreted as a proof that the Australian investment in marketing and quality was

tres veces más volumen y consigue, a igual calidad, un precio un poco más alto que Chile, se puede afirmar que los vinos australianos tienen más poder de marca-país que sus competidores chilenos.

A modo de síntesis, los resultados de este estudio revelan que: 1. Chile tiene un castigo-país respecto a los vinos californianos de un 50% aproximado.

2. El castigo-país es comparable con el obtenido por los vinos argentinos y australianos y, además, se ha mantenido estable en los últimos 15 años.

3. La elasticidad precio-calidad se ha mantenido a través del tiempo. No ha aumentado.

Frente a este escenario, es pertinente preguntarse cuáles son los factores que explican la marca-país. Según los investigadores, la reputación o calidad percibida de los vinos de un país está determinada por una mezcla de factores, entre los que destacan: 1. La calidad media efectiva (u objetiva) de sus vinos, tanto la actual como la histórica.

2. El precio. Dado que en este mercado existen asimetrías de información, el precio es una señal de calidad.

Como se aprecia en el cuadro 5, las marcas australianas y chilenas tienen un volumen de producción muy superior a las de Napa, lo que afecta negativamente su reputación.

Since Australia exports three times as much in volume terms and manages to sell products of the same quality as Chile at an average price a little higher than Chile, it could be said that Australian wines have a stronger country brand power than its Chilean rivals.

Summing up, findings in this study show that: 1. Chile suffers a country penalty of approximately 50% as compared to Californian wines.

2. Chile’s country penalty is comparable to the one suffered by Argentine and Australian wines and has remained unchanged in the past 15 years.

3. Price-quality elasticity has remained stable over time and has not increased.

Given this scenario, perhaps we should review the factors that explain the country brand. According to researchers, the reputation or perceived quality of a country’s wines is determined by a combination of factors, including: 1. The actual (or objective) average quality of its wines, both at present and historically.

2. Price. Since some information asymmetries exist in this market, price is a signal of quality.

3. The presence or critical of mass of outstanding wines.

5. La especialización. Sobre este punto, cabe mencionar algunos ejemplos: el estado de Oregon redujo su castigo de precios respecto a Napa desde -0,93 en 1997 a -0,22 en 2007, período en que se especializó en Pinot Noir (el 92% de su producción son vinos de esta variedad). En el mismo lapso, Chile aumentó su castigo a -0,66 aproximadamente. Y otro ejemplo: en la revista Wine Advocate, Robert Parker le dio a 41 vinos argentinos entre 94 y 99 puntos, y a otros 158, entre 90 y 93 puntos. Lo relevante es que todos estos vinos eran Malbec.

Con respecto a la importancia de tener un volumen relevante de vinos sobre 90 puntos, los académicos realizaron algunos ejercicios que validan su tesis. “Asumiendo en el mejor de los casos que la elasticidad precio-calidad fuera 4,5 y que los viñateros de Chile aumentaran la calidad promedio en la calificación de Wine Spectator en un punto porcentual, acercándose a la calidad de los vinos del valle de Napa (tarea no fácil de realizar), el precio de mercado de los vinos chilenos subiría, en promedio, un 4,5%, esto es, sólo 1 dólar: de 22 a 23 dólares por botella. Así, elevar el precio promedio de los vinos de una región por la vía del mejoramiento de su calidad es un cambio demasiado lento”, señalan.

Y agregan: “El incremento de la masa crítica de vinos de excelencia no sólo acrecienta la calidad media de los vinos de un país, sino que también apalanca su imagen, lo que redunda en un aumento en el precio promedio de todos sus vinos. Si los viñateros de Chile doblaran la producción de vinos sobre 90 puntos obtenida en la cosecha 2005, pasando de 40 a 80 vinos, manteniéndose todo lo demás constante, el precio promedio de sus vinos se elevaría un 25% (0,253 x 100%, donde 0,253 es la elasticidad precio-prestigio-país de la cosecha 2005), esto es, de 25 a poco más de 31 dólares promedio cada botella. Estos resultados muestran cómo un país que produce una gran cantidad de vinos excepcionales –mediante la exposición a la crítica profesional especializada– envía una poderosa señal de calidad al mercado, que resalta la percepción y precio de todos sus vinos”, señalan.

Estos y otros datos permiten sostener que el precio de un vino individual –además de ser determinado por su calidad, edad, y número de cajas de la marca–, está directamente influenciado por la cantidad de vinos de 90 y más puntos que produzca su región/país de origen, y al mismo tiempo es inversamente influenciado por la cantidad promedio de cajas que produzcan las marcas de su mismo origen.

Asimismo, que las regiones o países ganadores se especializan en variedades con exceso de demanda y, después, las alimentan vía marketing. Tres ejemplos: Oregon con Pinot Noir, Argentina con Malbec (estos vinos tienen su premio de precio sostenido) y Napa con Cabernet. Por el contrario, los países perdedores hunden a sus variedades específicas produciéndolas a gran escala (Australia con Shiraz).

4. Mass production versus boutique production of labels (based on the notion that a boutique winery produces some 2,700 cases per label, on average). As shown in Table 5, Australian and Chilean wines have a higher production volume than Napa, which has a negative impact on their reputation.

5. Specialization. Some examples should be mentioned here: The State of Oregon reduced its price penalty to Napa from -0.93 in 1997 to -0.22 in 2007, when the valley specialized in Pinot Noir (a variety that accounts for as much as 92% of its production).

During the same period, the price penalty applied to Chile increased by roughly -0.66. Another example: In the Wine Advocate, Robert Parker scored 41 Argentine wines between 94 and 99 points, and other 158, between 90 and 93 points. All of them Malbec…

As to the importance of having a high volume of wines with scores above 90 points, the authors conducted some tests to validate their thesis. “Assuming a best case scenario in which price-quality elasticity was 4.5 and Chilean winemakers increased average quality on the Wine Spectator scale by one percentage point, approaching the quality of Napa Valley wines (not an easy task), the market price of Chilean wines would rise by an average of 4.5%, i.e., just USD 1, from USD 22 to USD 23 a bottle. Thus, increasing the average price of a region’s wines by improving their quality is too slow a process.

They also stated: An increase in the critical mass of outstanding wines not only raises the average quality of a country’s wines, but also leverages its image, increasing the average price of all its wines. If Chilean winemakers were to double their output of outstanding wines (above 90 points) from 40 in the 2005 vintage to 80, then, all other things being equal, the average price of their wines would rise by some 25% = 0.253 x 100%, i.e., from USD 25 to just over USD 31 a bottle on average. These findings show how, through exposure to specialized professional criticism, a country producing a large quantity of outstanding wines sends out a powerful signal of quality to the market, enhancing perceptions and prices for all its wines,” they explained.

These and other data support the notion that the price of an individual wine –determined also by its quality, age, and number of cases produced– is directly influenced by the number of wines with scores above

Moreover, the most successful regions or countries specialize in highly-demanded varieties, which they later feed through marketing campaigns. Three examples: Oregon with Pinot Noir, Argentina with Malbec (sustained price premium) and Napa with Cabernet. Conversely, unsuccessful countries sink their particular varieties by producing at large scale (Australia with Shiraz).

REVERSING THE PENALTY Since everybody in the industry knows who is who in the wine market, consumers find it easy to choose a wine based on reputation rather than quality. Still, building up

Como en el mercado del vino no se sabe quién es quién en la industria, al consumidor le sale más fácil decidir por reputación que por calidad. Pero construir reputación en este mercado es un proceso lento y complejo, sobre todo si se trata de competir con los vinos franceses y californianos, los que –al construir poderosas y únicas asociaciones de imagen– definieron y moldearon el significado cultural del vino moderno. Es precisamente esa inercia la que determina que los vinos chilenos y argentinos sigan sufriendo un fuerte castigo de precio. A pesar del aumento de productos de procedencia no tradicional en el mercado estadounidense, la elasticidad precio-calidad ha permanecido estable para el período de estudio 1997-2005, lo que significa que el mercado sigue decidiendo por reputación.

En este trabajo también se detecta que si el mercado es opaco –el consumidor no ve claramente la calidad de un vino y decide por las reputaciones–, la calidad media de la marca-país dominante tiene una tendencia natural a estancarse, o incluso a erosionarse, debido a la entrada de productores free riders que, aprovechándose de que proceden de una región reputada, venden vinos de baja calidad a un alto precio.

Sin embargo, para países entrantes, esperar que una reputación colectiva dominante pueda erosionarse debido a esta causa es un camino lento e incierto.

Los resultados de este trabajo revelan que el precio de los vinos producidos por países entrantes a esta industria, como Chile, no mejorará en tanto no produzcan una masa crítica de vinos de excepcional calidad (más de 90 puntos), que es a fin de cuentas lo que determina una buena imagen o reputación colectiva de sus productores. La reputación colectiva o marca de un país actúa como un bien público, y su premio o castigo se extiende a todos los vinos de la región/país.

Por lo tanto, más que utilizar el marketing mediante la asociación de imágenes para pretender cambiar la historia, sería más fructífero estimular y premiar (subsidiar) fuertemente la calidad excepcional de los vinos chilenos hasta llegar a una masa crítica interesante, concluyen los académicos de la Universidad de Talca. t

a reputation in this market is a slow and cumbersome process, particularly if the aim is to compete against French and Californian wines, which defined and shaped the cultural meaning of modern wine by constructing powerful and unique image associations. This is precisely the type of inertia that determines that Chilean and Argentine wines are bound to paying a heavy price penalty. Despite the increase of products from nontraditional origins sold in the U.S. market, the pricequality elasticity during the 1997-2005 study period has remained stable, which means that the market continues to decide based on reputation.

This study also revealed that when the market is opaque, that is, when consumers do not clearly see the quality of a wine and decide their purchase based on reputation, the average quality of the dominant country brand tends to stagnate or even decline due to the entry of free-riding producers who use the good reputation of their region of origin to sell low-quality wines for high prices. However, for new entrant countries, hoping that a dominant collective reputation may decline for this reason is a long, uncertain road.

Findings also evidence that the price of wines produced by new entrant countries like Chile will not increase as long as a critical mass of outstanding wines (scoring 90+) is produced, which is ultimately what determines the good image or collective reputation of their producers. The collective reputation or country brand acts like a public asset, the premium or penalty of which extends to all the wines in the region/country.

Accordingly, rather than relying on marketing by aligning images to change history, it would be more fruitful to foster and reward (subsidize) outstanding quality in Chilean wines to reach an interesting critical mass, Universidad de Talca professors conclude. t

VINOS ÍCONOS De vuelta a las raíces

o sé quién habrá inventado el concepto, pero la iconografía se ha impuesto en lo alto de los portafolios. La necesidad comercial de contar con un buque insignia, que apoye y muestre el camino a las flotas de varietales y reservas, ha empujado a muchas viñas a un profundo proceso de introspección, de búsqueda, pero también de mucha creatividad. Es muy fácil caer en efectismos. No se trata de realizar una selección de una selección de un viñedo (ni hablar de una selección de barricas), envasarla en la botella más pesada del mercado y ponerle un nombre rimbombante, pero que suene moderno, a la moda, muy minimalista. Los vinos íconos no sólo tienen que tener una calidad superlativa, sino también un peso histórico, o yendo más atrás, una razón de ser. Pareciera, porque no estoy seguro, que estos vinos nacen y no se hacen.

Hace algunos años muchos de estos vinos eran sólo un invento de los departamentos de marketing. Como las menciones de calidad premium, superpremium o ultra premium se vieron superadas (banalizadas, más bien), tuvieron la necesidad de crear el concepto de ícono para bautizar a su tope de línea, ese vino caro, escaso e incluso sacro, que en lugar de invitar a beber, supuestamente debería hacernos meditar. Era muy fácil reconocerlos. Concentraciones inusitadas (o sobreextracciones), años de guarda en barricas nuevas y un origen misterioso, que mezclaba, en muchas ocasiones, uvas de distintos valles para esconder sus defectos más que para realzar una identidad propia. Sin embargo, el mercado no es tonto (sólo se comporta como tal) y este estilo, esta apuesta, esta estrategia comercial se fue diluyendo ante una realidad cada vez más exigente y poco tolerante a los engendros de laboratorio.

Hoy los vinos íconos (así, tan siútico como suena) responden a otra lógica, a otro concepto, a otra búsqueda. Quizás más ligada con una identidad de lugar o de una casa productora, más enraizada con una historia y tradición, más cercana de una vitivinicultura genuina y honesta. Pienso en Don Maximiano Founder’s Reserve. Este clásico de Errázuriz, que nace de sus antiguos cuarteles

Icon Wines

Renewing their roots Icon wines are no longer an invention of marketing teams. They are now renewing their roots in a true quest for identity and distinctiveness that has resulted in a remarkable quality turnaround.

I don’t know who came up with this concept first, but icons have managed to dominate portfolios.

The business need to rely on a flagship that supports and leads the way for the fleets of varietals and reserve wines has driven many wineries to undergo a deep process of introspection, quest, and most of all, creativity. One can easily get carried away with theatricality. Creating an icon wine is far from making a selection from a selection from one vineyard (let alone from a selection of barrels), bottling it in the heaviest type of bottle and then giving it a flamboyant yet trendy and minimalistic name. Icon wines must not only boast the highest quality of all; they must also have a historic weight, they need to have a reason to exist. It seems to me –because I cannot assure such thing– that these wines are born, not made.

A few years ago, these wines were a mere invention of marketing departments. Since the premium, super premium or ultra premium quality designations became insufficient (or rather trivialized), the need arose to create the icon concept to name the top of their list, that expensive, rare, even divine wine that instead of inviting consumers to drink to the last drop, should call for meditation. They used to be pretty easy to recognize. Noticeable concentrations (over-extraction), years of aging in new barrels, and a mysterious origin that many times used to blend grapes sourced from a number of valleys to conceal its shortcomings rather than to highlight the true identity of wine. However, the market cannot be fooled (it just lets you think it has) and that style, that bet, that commercial strategy gradually lost strength when faced to a market that has become increasingly demanding and less patient with lab monstrosities.

Nowadays, icon wines (as snob as that term can sound) respond to other logics, to a different concept, and not the same quest. The notion pursued is perhaps

de Panquehue (Aconcagua), y que se ha hecho a sí mismo vendimia tras vendimia desde 1983, no nació precisamente con el cartel de ícono colgado del cuello de la botella. Antes lo lucieron sus familiares Seña y Viñedo Chadwick. Sin embargo, este vino, otrora 100% Cabernet Sauvignon (hoy recibe aportes de Carmenère, Petit Verdot y Syrah), ha logrado mantener su estirpe y posicionarse en lo más alto, empujado, más que por el departamento comercial, por su historia, por su origen, por su enología cada vez más respetuosa de su fruta.

EL EPICENTRO DE LOS ÍCONOS

No hay duda: la cuna de los íconos chilenos está fuertemente ligada al Cabernet Sauvignon de Maipo Alto. En los alrededores de Santiago, en ese terroir precordillerano, nacen los más clásicos y renombrados vinos de Chile. Desde que se importaron las primeras estacas francesas a mediados del siglo XIX, encontraron allí su lugar predilecto, donde se sienten a sus anchas y pueden desarrollar sus mejores atributos: esa mezcla de elegancia y potencia tan difícil de lograr en la bodega (ahí sólo se puede echar a perder). Estos portaestandartes, estos trasatlánticos que han trazado el prestigio de nuestra vitivinicultura, prácticamente perviven sin modificar su esencia, a veces golpeados por las modas (cosechas sobremaduras o abuso de la madera nueva), pero siempre mostrando un cuerpo más bien estilizado y una personalidad distintiva.

En Puente Alto, el barrio cuico de Maipo Alto (para la vitivinicultura, al menos), se emplazan los cuarteles de Viñedo Chadwick, Almaviva y Don Melchor. Este último, por ejemplo, el decano de los íconos chilenos, ha sabido mantener su prestigio en el tiempo a pesar de los vaivenes del mercado y de los cambios enológicos. Enrique Tirado, su actual enólogo, juega todos los años con las mismas siete parcelas que componen la mezcla del vino, interpretando cada temporada, anticipando sus aromas, buscando siempre aquella textura única, irrepetible, donde los inquietos taninos del Cabernet Sauvignon se sienten como terciopelo.

Próximo a Puente Alto, en Quebrada de Macul, encontramos otros portentos como Lota de Cousiño Macul, Lázuli de Aquitania y Domus Aurea de Clos Quebrada de Macul. Este último, vinificado por Jean Pascal Lacaze, es uno de los vinos que mejor refleja el carácter del Maipo Alto y que despierta grandes fanatismos por su capacidad de proyectar fielmente, sin malabares, la personalidad de sus uvas. Con aportes de Merlot, Cabernet Franc y Petit Verdot, este Cabernet Sauvignon transmite potencia, fineza y una profundidad que despierta conciencias. Con sus elocuentes notas herbales, y un fondo rojinegro extrovertido y a veces avasallador, ha sabido mantenerse leal a un estilo, sin traicionar la naturaleza de las cosas.

Un poco más al sur, en los alrededores de Pirque, asoman otros insignes Cabernet Sauvignon como Terrunyo de Concha y Toro, Character de Haras de Pirque y el recién estrenado Enclave de Ventisquero. Esta

closer to the identity of a place or winery, to deeper roots in history and tradition, and to true, genuine winegrowing. That’s when Don Maximiano Founder’s Reserve comes to mind. This classic wine by Errázuriz that originates in the winery’s ancient vineyards in Panquehue (Aconcagua) and has made itself up vintage after vintage since 1983, did not come to life with the icon sign hanging from the neck of the bottle.

That sign was first wielded by its relatives Seña and Viñedo Chadwick. Nevertheless, this wine, once 100% Cabernet Sauvignon (now also complemented with Carmenère, Petit Verdot, and Syrah), has managed to keep its lineage and climb to the summit, driven by its history, its origin, and a winemaking style increasingly respectful of its fruit, rather than by commercial efforts.

THE HOME OF ICONS It is unquestionable that the home of Chilean icons is strongly related to the Cabernet Sauvignon from Maipo Alto. Located in the vicinity of Santiago, this foothill terroir is the cradle of Chile’s most renowned, classic wines. Since the earliest French rootstocks were imported by the mid-nineteen century, they found here their location of choice, where they feel at home and allow their attributes to develop at their best: That mix of elegance and power almost impossible to produce at the winery (if anything, the winery is where everything can go wrong for this wine). These flagships, these icons, these cruise ships that have mapped the prestige of our winegrowing industry continue to exist without changing their essence, sometimes battered by fads (overripe vintages or excessive use of new oak), yet always showcasing a rather stylized body and a distinct personality.

Puente Alto, the upscale sector of Maipo Alto (at least in terms of viticulture), is the hometown of Viñedo Chadwick, Almaviva and Don Melchor. The latter, for example, the patriarch among Chilean icons, has managed to keep its lineage regardless of market ups and downs and winemaking changes. Enrique Tirado, its current winemaker, works every year with the same seven lots that source the grapes for this blend, interpreting each season, anticipating aromas, always trying to find that unique, peerless texture where the restless tannins of Cabernet Sauvignon feel like velvet.

denominación, donde encontramos un preciado reducto de parras viejas, juega con su accidentada geografía, donde el sol se abre paso entre los cerros, marcando la fresca personalidad de sus vinos. Aún más al sur, en Alto Jahuel, persisten, como verdaderos baluartes de nuestra vitivinicultura, Carmen Gold y Santa Rita Casa Real Reserva Especial. Con un importante patrimonio de viñedos antiguos, y un terroir más abierto al sol del poniente, representan un Cabernet Sauvignon algo más maduro, frutoso, pero con una suavidad extrema. En el caso de Casa Real, por ejemplo, la enóloga Cecilia Torres, sin disfrazar la estructura firme del vino, ha acentuado una personalidad cada vez más fresca y elegante.

Sin embargo, el Maipo Alto no termina aquí, sino que extiende sus dominios para inaugurar nuevos barrios con un prometedor futuro. With additions of Merlot, Cabernet Franc and Petit Verdot, this Cabernet Sauvignon boasts power, finesse and a depth beyond belief. With outspoken grassy notes and an extroverted, sometimes overwhelming red and black fruit background, this wine has remained faithful to one style, never to betray its nature.

A little farther south, near Pirque, other Cabernet Sauvignon flagships like Terrunyo by Concha y Toro, Character by Haras de Pirque and the newly launched Enclave by Ventisquero are crafted. This appellation, home of a few ancient vines, makes the best of its rugged geography, where the sun finds its way through the mountains to grant its wines a fresh personality.

the major heritage of ancient vineyards and a terroir with a westerly orientation to represent a somehow riper, fruitier Cabernet Sauvignon that boasts superb smoothness. Casa Real’s winemaker Cecilia Torres has opted for stressing an increasingly fresh and elegant personally that does not conceal the firm body of this wine.

Still, Maipo Alto has more to show in its new ‘neighborhoods’ with a promising future. For starters, Intriga is already casting its own light at Linderos (at an incredibly affordable price). Farther south, in Huelquén, winemaker Álvaro Espinoza makes progress with Antiyal, its biodynamic project where he masterly blends Cabernet Sauvignon, Carmenère and Syrah.

Pérez Cruz, under the lead of winemaker Germán Lyon, rediscovers the potential of Cabernet Sauvignon by launching Las Pircas. All these wines widen the flavor palette of Maipo Alto, but remain faithful to the spirit of the most classic of all Chilean terroirs.

DIVERSITY IN THE DEEP COUNTRYSIDE Following the Andes towards the south and perhaps looking for conditions similar to those of Alto Maipo, a new breed of high-altitude Cabernet Sauvignons is being born whose most outstanding attribute is elegance rather than hyper concentration. At an altitude of 600 meters in the so-called Alto Cachapoal, the winemaker Ana María Cumsille takes Cabernet Sauvignon as the base to craft a red blend that, in fresher seasons, produces all types of emotions. At 900 meters, in the area of Coya, the winemaker François Massoc surprises us with a pure, fresh Cabernet Sauvignon of unmatched personality.

Combining the different types of soil and the winds that funnel through the Andean foothills, the structure of Zahir builds up naturally, without pretense, leaving the fruit impose its presence. This wine of humble origin, born in a terroir that was not intended for Cabernet Sauvignon, has managed to convince critics and become a young icon of Alto Cachapoal (at the price of an icon, of course).

Further south and towards the coast, the transversal valley of Colchagua is home to many different varieties that have adapted to its higher temperatures. Here, Cabernet Sauvignon exhibits a broad shouldered and ripe structure, but Syrah is also coming on strong. For its part, Carmenère reaches its grandest expressions in Peumo, as attested by Carmín from Concha y Toro and Herencia from Santa Carolina. But despite this larger

Y el Carmenère, junto con Peumo, donde nacen los icónicos Carmín de Concha y Toro y Herencia de Santa Carolina, encuentra la mejor de sus expresiones. The valley gives birth to countless wines that time has turned into true classics of a winemaking tradition that keeps the deep countryside tradition updated in a remarkable way.

Apalta, Colchagua’s most luxurious neighborhood, is the birthplace of a whole generation of iconic representatives: let’s just mention Clos de Apalta from Lapostolle, Pehuén from Santa Rita, Neyén from Apalta, Pangea from Ventisquero, Caballo Loco Grand Cru Apalta from Valdivieso, and Folly, Montes M and Purple Angel from Montes. This last case is the best reflection of Colchagua’s tradition. Playing with the different soils, elevations, slopes and exposures that make up this amphitheater, Aurelio Montes successfully dares to bottle his three grandest emblems from a common origin. Except for Purple Angel –half of its grapes are sourced from Marchigüe–, Apalta produces enough diversity to reach great quality heights with varieties as different as Syrah, Cabernet Sauvignon and Carmenère.

For example, further south in the Curicó Valley, Miguel Torres once again surprises us with the character of Manso de Velasco, a wine made from 100+ year old vines. In the meantime, Reserva de Caliboro from Maule’s dry-farmed vineyards demonstrates with its Erasmo red blend that the old Chilean winemaking

This is the case of Syrah from San Antonio (EQ, Matetic), Pinot Noir from Casablanca (Ocio, Cono Sur), Sauvignon Blanc from Lo Abarca (Cipreses, Casa Marín), Chardonnay from Limarí (Quebrada Seca, Maycas del Limarí), Petit Verdot from Aconcagua (Toknar, Von Siebenthal), Merlot from Melipilla (Family Vintage, Tres Palacios), Cabernet Franc from Palmilla (Franco, Maquis), the Carignan-based wines from Loncomilla (Cabergnan, Bodegas RE) or Cinsault from Itata (Viejas Tinajas, De Martino).

The road ahead is still long but very promising.

Chilean wineries have learned from their mistakes. They know now that icons are not produced within the walls of a marketing department (let alone when resources are not available to support the brands), but are born out of determination and perseverance. It was not necessary to go far away to fetch them. They were right there, where they always were, where they should be.

Much closer than anybody thought. Right there in the vineyard. t

ESPAÑOL LUIS GUTIÉRREZ ES NUEVO CATADOR PARA CHILE DE THE WINE ADVOCATE Luis Gutiérrez es el nuevo responsable de España, Argentina y Chile para The Wine Advocate, la publicación de Robert Parker, según anunció su directora Lisa Perrotti-Brown. Gutiérrez es el sucesor de Neal Martin, quien estará a cargo de Côte D’Or, Mâcon, Beaujolais, Sauternes, Porto, Madeira, Banyuls y Sudáfrica.

El español de 48 años, hasta ahora directivo de una multinacional del embalaje en su filial española, es desde hace 13 años uno de los colaboradores del sitio web elmundovino. Además, desde el año pasado escribe en el sitio de la británica Jancis Robinson y es coautor del libro The Finest Wines of Rioja and Northwest Spain, ganador del premio André Simon 2011, el galardón británico más prestigioso para libros de gastronomía y vino.

NEAL MARTIN SE DESPIDE MENCIONANDO A VITIS MAGAZINE En un artículo titulado “Pensamientos finales sobre Chile, Argentina y España”, el británico Neal Martin, crítico de The Wine Advocate, se despide con “tristeza” de los países que cubrió durante 12 meses, catando casi 5 mil vinos, cerrando una relación corta, pero para muchos inolvidable.

En su despedida reafirmó los conceptos que tanta polvareda levantó en Chile, diciendo que se encontró con un “país gobernado por una industria fosilizada y manejada por compañías de gran escala, con amplios y muchas veces portafolios sin sentido, que con frecuencia esconden el terroir bajo un impenetrable y azucarado discurso marketero, injustificada preponderancia del roble, enología conservadora y ausencia de individualidad”.

“Para quienes interpretaron mi reporte como un ataque al país deberían volver atrás y releerlo. El reporte responde por la calidad de los vinos y sólo me dejaron muy contento nombres como Antiyal, O. Fournier, las cosechas recientes de Seña, Undurraga, De Martino, Intriga y Matetic, por nombrar algunas de las viñas que se me vienen a la cabeza”, sostiene.

También dedica algunas palabras a un artículo de Eduardo Brethauer, editor de Vinos de VITIS Magazine, publicado en nuestra última edición. “Está escrito de forma muy inteligente. A primera vista, parece condenar mi artículo y confunde ‘falta de diplomacia’ con ‘lenguaje directo’.

Pero, en una segunda lectura, el autor realmente concuerda con todo lo que escribí, al punto que no podría separar su opinión de la mía. Estoy de acuerdo con cada una de sus “Claves para dejar de ser aburridos”, muchas de las cuales fueron expuestas en la introducción del reporte. Una de esas claves es que, en lugar de ser sumisos con las puntuaciones, deben escuchar a los de afuera que realmente quieren que sus vinos tengan éxito y no tienen miedo de decir lo que piensan”.

SPANISH LUIS GUTIÉRREZ IS THE WINE ADVOCATE’S NEW REVIEWER FOR CHILEAN WINE. Luis Gutiérrez is the newly appointed taster for Spain, Argentina and Chile of The Wine Advocate, Robert Parker’s publication, director Lisa Perrotti-Brown has announced. Gutiérrez is Neal Martin’s successor, who will take over Côte D’Or, Mâcon, Beaujolais, Sauternes, Porto, Madeira, Banyuls, and South Africa.

Until now, the 48-year old professional had so far worked as an executive at a packaging multinational company’s Spanish subsidiary and for the past 13 years has been a contributor of elmundovino.com Website.

Since last year he has been a contributing writer in Jancis Robinson’s site and is the coauthor of The Finest Wines of Rioja and Northwest Spain, a book that reaped the André Simon 2011 award, the largest British award presented to wine and gastronomy publications.

NEAL MARTIN REFERS TO VITIS MAGAZINE IN HIS FAREWELL ARTICLE. In an article called “Final thoughts on Chile, Argentina and Spain,” The Wine Advocate’s British wine critic Neal Martin bids farewell with ‘sadness’ to the countries he was responsible for reviewing for 12 months, during which he tasted some 5 thousand wines and thus closes a brief, yet to many ‘unforgettable’ relationship. In that farewell article, he confirmed the concepts that caused so much turmoil in Chile when he said Chile is "a country governed by an somewhat ossified industry ruled by large scale enterprises with unwieldy, often meaningless portfolios that often buried terroir and individuality under an impenetrable carapace of marketing gloop, unthinking preponderance of oak, conservative winemaking and absence of individuality.”

“Those that interpreted my report on Chile as an attack on the country should go back and actually read it. Reports are dictated by the quality of wines and I was only too happy to praise the likes of Antiyal, O. Fournier, recent vintages of Seña, Undurraga, De Martino, Viña Intriga and Matetic Vineyards to name but a few off the top of my head,” he wrote.

He also referred to an article by Eduardo Brethauer, VITIS Magazine’s wine editor, published in our last issue. “It’s a cleverly written piece. On first reading, it sets out to damn the report and conflates ‘lack of diplomacy’ with ‘straight talking’. But re-reading the article, the author actually agrees with everything I wrote, to the point where I could disentangle my opinion from his! I would agree with every one of his ‘Keys To Stop Being Boring’, most of which were expounded in the introduction to the report. However, one of those keys is that rather than being submissive to scores, listen to outsiders who genuinely want your wines to be successful in the future and are unafraid to say what needs to be said.”

“Perhaps Martin needs to read my article a third time,” editor Eduardo Brethauer merely noted.

VIÑA SANTA CAROLINA

Grandes desafíos y nueva imagen Nuevos aires soplan en Santa Carolina, una de las viñas más antiguas de Chile, con 137 años de tradición. A la reapertura de la casona colonial y bodega, Monumento Nacional que resultó severamente dañado por el terremoto, se suma la adquisición de una bodega para vinos premium, y la presentación de una renovada imagen en todas sus líneas de productos.

ras años de crecimiento sostenido y con ventas anuales de US$ 44 millones, Santa Carolina comenzó el año 2013 una nueva era con la inauguración de sus nuevas oficinas rodeadas de un remozado parque y la reapertura de su casona colonial y bodega, Monumento Nacional desde 1973, ubicadas en el centro de la ciudad de Santiago, que sufrieron importantes daños tras el terremoto que afectó a Chile el año 2010.

Como parte de los festejos de reinauguración, se realizó en la famosa cava subterránea un remate de 25 botellas magnums de la primera edición del vino ícono Herencia, un Carmenère 2007 de Peumo -uno de los mejores terroirs para esta cepa en Chile- recientemente destacado con 92 puntos por la revista Wine Spectator y la cosecha 2008 con 93 puntos por la misma publicación. La última botella de la noche fue rematada en US$ 2.500 y los fondos recolectados fueron destinados a obras de la reconstrucción en la región del Libertador Bernardo O´Higgins, una de las zonas más afectadas por el terremoto.

A lo anterior se sumó la adquisición de una bodega para vinos premium en Totihue, Valle del Cachapoal, equipada con tecnología de punta con capacidad de almacenamiento de 9 millones de litros.

Para Santiago Larraín, Gerente General de Viña Santa Carolina, “la empresa inicia un nuevo ciclo que resume a la perfección la historia y tradición de sus fundadores, junto a la constante búsqueda de nuevas inversiones, cepas y terroirs para ofrecer a los consumidores vinos que representen nuestra esencia”.

NUEVA ERA, NUEVA IMAGEN Con el objetivo de transmitir al consumidor esta nueva etapa de la historia de Santa Carolina, durante este año la viña presentará una renovada imagen en todas sus líneas de productos que se distribuyen en más de 85 mercados.

Los nuevos diseños de etiquetas buscan reflejar la esencia de la marca, incorporando el concepto Chilean Heritage en sus etiquetas premium y bajo un sutilmente modernizado logo Santa Carolina, que le aporta unidad a sus líneas de productos.

En los próximos días, también se lanzará la nueva campaña comunicacional de la marca para la emblemática línea Reserva bajo el concepto de Herencia Viva. Esta línea de productos presenta vinos de alta calidad que nacen en los viñedos de los mejores valles vitivinícolas de Chile.

Paola Korach, Brand Manager de la marca, explica: “Luego de seis años en el mercado con la imagen actual de nuestro portafolio, surgió la necesidad de renovar y de apostar por diseños que nos permitieran transmitir la positiva transformación que la viña ha experimentado durante este último tiempo. Nuestros vinos han sido consistentemente reconocidos por su calidad y el cambio de imagen era una oportunidad para transmitir este valor al consumidor. Enfocados en el concepto de Herencia Viva, trabajamos intensamente en reforzar la esencia de la marca, manteniendo su personalidad; una fusión perfecta entre tradición y vivacidad”.

Otra importante novedad es el cambio de nombre de la línea premium Barrica Selection por Gran Reserva. Great challenges and a new image A breath of fresh air is blowing at Santa Carolina, one of Chile’s oldest wineries spanning a history of 137 years.

The reopening of the colonial house and the cellar –declared National Monument– that were seriously damaged by the earthquake of 2010 has been complemented by the acquisition of a new cellar for premium wines and the launch of a new image for all its product lines.

After years of sustained growth and annual sales of USD 44 million, in 2013 Santa Carolina began a new era coincidental with the opening of its new corporate offices located amid a renewed park, and the reopening of its colonial house and cellar, located at the heart of the city of Santiago, after the devastating effects of the big earthquake that shook the country in 2010.

As part of the celebration, the underground cellar provided the stage for the auction of 25 magnums of the first vintage of its icon wine Herencia, a 2007 Carmenère from Peumo – one of the best terroirs for this variety –, which was awarded 92 points by the Wine Spectator magazine. The same publication rated the 2008 vintage with 93 points. The last bottle of the evening was sold for USD 2,500 and the funds thus raised were destined to the reconstruction of one of the most damage areas in the south of Chile.

The winery also acquired a cellar for premium wines in Totihue, Cachapoal Valley, that is equipped with state-of-the-art technology and storing capacity for 9 million liters.

For Santiago Larraín, Managing Director of Viña Santa Carolina, “the company is initiating a new cycle that perfectly summarizes the history and tradition of its founders, as well as the constant search for new investments, varieties and terroirs to offer consumers wines that truly embody our essence.”

The new label designs seek to be a reflection of the brand’s essence by adding the legend Chilean Heritage to its premium labels under a slightly modernized Santa Carolina logo that adds a refreshed and unified appearance to its different lines.

In the next few days, a new campaign in the media will be launched for the emblem line “Reserva” under the concept Chilean Heritage. This line includes highquality wines that are born in the vineyards of Chile’s best winegrowing valleys.

Brand Manager Paola Korach explains: “After six years with the same image in our portfolio, the need arose to modernize it and to incorporate designs that would convey the positive transformation the winery has undergone during this recent period. Our wines have been consistently recognized for their quality and therefore their new image came as an opportunity to transmit this value to our consumers. We have focused on the notion of Chilean Heritage, working hard to reinforce the essence of the brand while maintaining its personality; a perfect blend of tradition and liveliness.”

Also worth noting is the name change of the Barrica Selection premium line to Gran Reserva. Korach points out that in this case the idea was to highlight the quality of this line and to underscore its ties with the underground cellar, where the wines are stored during their aging in oak barrels.

o existen cifras

oficiales, pero se estima que los vinos orgánicos representan cerca del 2% del consumo mundial de vinos. Si según los pronósticos de la OIV, en 2012 la demanda en el mundo llegó a 245,3 millones de hectolitros, significa que 4,9 millones de hl, es decir, 40,8 millones de cajas, correspondieron a vinos orgánicos. Un volumen que va creciendo año a año, pues de lo que sí hay certeza es que cada vez hay más personas interesadas en consumir productos que tengan la menor intervención posible de aditivos.

Nuestro país no ha quedado ajeno a esta tendencia. Hace más de una década, las primeras viñas empezaron a incursionar en el manejo orgánico de sus viñedos, algunas de ellas motivadas por el interés de proteger a sus trabajadores de la exposición a los agroquímicos, más que por una visión comercial. Sea como fuere, el hecho es que en 1998 se entregó la primera certificación orgánica de uvas viníferas en nuestro país, correspondiente a 44 hectáreas.

Actualmente la superficie de viñedos bajo manejo orgánico alcanza a 4.555 hectáreas, lo que equivale al 3% del total de vides plantadas en el país (149.237 hectáreas según el Catastro Vitícola 2011). La mayor parte se ubica en la región de O’Higgins, vale decir, en los valles de Cachapoal y Colchagua.

Este paulatino aumento de la superficie de viñedos orgánicos se ha traducido en que los volúmenes de vinos orgánicos y de aquellos elaborados con uvas orgánicas comercializados en el extranjero y en

The green business Although the exports of organic wines merely attain 2.5% and 1.9% of the total amount and volume exported, respectively, it remains a very attractive and growing business. The higher average prices obtained and the growing interest shown by green product consumers are prompting more and more companies to go ‘organic’ in their vineyard management approach.

No official numbers have been disclosed; however, according to estimates organic wines must account for roughly 2% of global consumption. Based on OIV forecasts, global demand hit 245.3 million hectoliters in 2012, which means that organic wine accounted for as much as 4.9 million hl or 40.8 million cases worldwide.

The volume is growing every year because one thing is certain: the number of consumers seeking products with as little additives as possible is on the rise.

Our country is not alien to this trend. The first local wineries started to implement organic management in their vineyards over a decade ago for various reasons, some of them were seeking to protect their workers from exposure to agrochemicals; others were following a business approach. Regardless of why, the first organic certification was given to wine grapes (44 hectares) in 1998 in Chile.

el mercado local sean cada vez más importantes, tanto así que en enero del año pasado el Servicio Nacional de Aduanas amplió los códigos armonizados arancelarios, incorporando los vinos orgánicos, por lo que desde esa fecha se dispone de estadísticas de exportaciones de este tipo de vinos y sus distintas variedades.

Así es posible saber que la situación en Chile hoy es un reflejo de lo que sucede a nivel mundial: el 1,9% de los vinos embotellados exportados en 2012 fueron orgánicos (944 mil cajas frente a 47,9 millones de cajas de vino tradicional). En monto, se exportaron US$ 1.384,1 millones en vinos tradicionales y US$ 35,9 millones en orgánicos, lo que corresponde al 2,5% del total. Este mayor porcentaje se explica porque el precio promedio de los vinos orgánicos supera ampliamente al de los vinos tradicionales (US$ 38,4 v/s US$ 29,2 por caja).

Probablemente este mayor precio y la crisis internacional que ha contraído la demanda, sean las causas que durante los tres primeros meses de este año los envíos hayan disminuido en valor y volumen con respecto al mismo período de 2012, aunque el precio promedio en este primer trimestre es mejor que el año pasado: US$ 42,4 por caja.

Como hasta el año 2011 los vinos orgánicos se consideraban dentro de los vinos tradicionales, no se conoce a ciencia cierta la evolución que han tenido las exportaciones, aun cuando se puede suponer que va en aumento por el creciente número de empresas que están elaborando vinos orgánicos o con uvas orgánicas. Según Intelvid, en base a información de Aduanas, el año pasado 90 empresas exportaron vinos orgánicos, aun cuando este número probablemente sea mayor pues es muy posible que varias viñas hayan incorporado sus vinos orgánicos en la glosa correspondiente a la variedad sin hacer la distinción correspondiente.

Perhaps this higher price and the international crisis that has slowed down demand have caused shipments in the first three months this year to drop in value and volume compared to the same period in 2012, although the average price recorded this first quarter has been higher than that of last year: USD 42.3 per case.

Since until 2011 organic wines were considered as part of traditional wines, the evolution of their exports remains unknown, although it can be ascertained that they are on the rise based on the growing number of companies that are making organic wines or producing wines from organic grapes. According to Intelvid, based on the data disclosed by Chilean customs, last year 90 companies exported organic wines, although that figure may be higher because it is highly likely that several wineries have introduced organic wines in their varieties without making express distinction.

Según Cristián Rodríguez, gerente comercial de Emiliana, la viña orgánica más grande del mundo, esto se debe principalmente a que los costos de producción más altos de los vinos orgánicos no permiten hacer vinos varietales, sino del rango de reserva hacia arriba. Aclara, en todo caso, que en general los vinos tradicionales y los orgánicos de la misma categoría compiten al mismo precio. Es decir, el solo hecho que un vino sea orgánico no lo hace más caro.

HIGHER RETURN. Unlike what happens with traditional bottled wines where most of the volume exported corresponds to wines sold for less than USD 25 per case, the price of 40% of shipments of organic wines ranges from USD 30 and USD 40 per case, while 20% is sold for USD 40 to USD 50 a case. What explains this higher price? In the opinion of Cristián Rodríguez, commercial manager of Emiliana, the world’s largest organic wine, this is mostly due to organic wines’ higher production costs, which do not support the production of varietal wines. Accordingly, all organic wines are reserve or higher in quality. In any case, he points out that in general, traditional and organic wines in the same category compete on equal ground when it comes to price. In other words, wines are not more expensive solely because they are organic.

LOS QUE EMPUJAN EL MERCADO. Tal como sucede con los embotellados tradicionales, EEUU es un importante comprador de vinos orgánicos chilenos, mercado donde alcanzan un precio promedio de casi US$ 41 la caja. El consumo de alimentos orgánicos en EEUU ha venido experimentando tasas de crecimiento promedio de 15% anual durante los últimos 5 años. En particular, el mercado de vino orgánico en este país ha seguido esta tendencia de crecimiento llegando el año 2009 a totalizar ventas por US$ 161 millones.

Sin embargo, el mayor volumen de orgánicos chilenos se envía a Holanda, aunque con un precio promedio bastante menor (US$ 28,4). Canadá, que se ubica como el tercer destino, es el mercado que promete el mayor crecimiento en el consumo de vinos orgánicos, de acuerdo a un estudio de la certificadora Letis. Allí se está observando un crecimiento del consumo de productos orgánicos de 20% anual. En Reino Unido, en cambio, pareciera que el concepto orgánico aún no seduce demasiado a los consumidores. Se ubica octavo en el ranking, siendo que es el primer mercado para los vinos tradicionales.

Dentro de los 20 principales destinos, destaca Hong Kong, mercado donde nuestros vinos orgánicos alcanzan un valor medio de nada menos que US$ 103 por caja. Como curiosidad podemos acotar que durante el año pasado se enviaron 55 cajas a Argentina, logrando un precio promedio de ¡US$ 296 la caja!

MARKET DRIVERS. Just as it happens with traditional bottled wines, the U.S. is a major buyer of Chilean organic wines, where they are sold for USD 41 a case, on average. Consumption of organic food has been growing at a rate of 15% per year over the past 5 years in the U.S. In particular, the organic wine market in this country has followed this growth trend, so much that total sales hit USD 161 million in 2009.

Still, the largest volume of Chilean organic wine is shipped to the Netherlands, although the average price is considerably lower (USD 28.4 per case). Canada is the third market of destination and the most promising one in terms of consumption growth, a study conducted by certification firm Letis has found. Consumption of organic products is growing at an annual rate of 20% in Canada. Conversely, the British market doesn’t seem to be too fond of organic products. The top buyer of traditional wines is only ranked eighth among consumers of organic products.

Hong Kong excels among the largest markets of destination as the average price per case of organic wines amounts to USD 103 per case. Interestingly, 55 cases of organic wine were shipped to Argentina last year, and the average price per case was a whopping USD 296 per case!

MEZCLAS TINTAS LA LLEVAN. El consumo de vinos orgánicos no difiere de lo más demandado en vinos tradicionales. El año pasado, las mezclas tintas fueron las más exportadas con 227.811 cajas y un precio promedio de US$ 47,48 la caja, bastante más alto que los US$ 31,06 logrados por las mezclas no orgánicas.

Los otros tintos exportados fueron Cabernet Sauvignon, con poco más de 145 mil cajas y un promedio de US$ 37,53 la caja, y Merlot con 60.047 cajas a un valor medio de US$ 35,67 por caja. Estos son los tres tipos de vino tinto que Aduanas clasifica como orgánicos.

RED BLENDS LEAD THE WAY. Consumption of organic wines does not differ from traditional wines. Last year, red blends were the bestsellers, with 227,811 cases and an average price of USD 47.48 per case, which is significantly higher than the USD 31.06 of non-organic blends.

The other reds exported were Cabernet Sauvignon, with a little over 145K cases and an average price of USD 37.53 per case, and Merlot with 60,047 cases and an average price of USD 35.67 per case. These are the three types of red wine Customs classifies are organic wines.

SAUVIGNON BLANC A LA CABEZA. En los blancos se da la misma lógica que en los tintos. El orgánico más demandado es el Sauvignon Blanc, al igual que lo que sucede con los blancos tradicionales. Durante 2012, se exportaron 164.459 cajas a un precio promedio de US$ 32,90 cada una, US$ 6 más que la media de los Sauvignon tradicionales. Sin embargo, es el precio más bajo de las tres categorías blancas orgánicas que registra Aduanas.

Las mezclas blancas se exportaron en menor volumen (88.751 cajas), pero se valorizaron bastante mejor: US$ 40,85 en promedio, mientras que de Chardonnay se enviaron al exterior poco más de 83 mil cajas a un precio medio de US$ 36,17.

SAUVIGNON BLANC TOPPING THE LIST. The same logic applies to whites. Sauvignon Blanc is the best-seller among whites, just as it happens with traditional whites. During 2012, exports of this variety amounted to 164,459 cases, at an average price of USD 32.90 per case, that is, USD 6 higher than the average price attained by traditional Sauvignons. However, this is the lowest price in the three categories of organic wines recorded by Customs.

Shipments of white blends were lower (88,751 cases), but they posted a much higher price: USD 40.85 per case, on average. In turn, 83K cases of Chardonnay were shipped at an average price per case of USD 36.17.

VIÑA WILLIAM FEVRE CHILE

Un completo cambio de piel

Los primeros 12 años de William Fevre Chile fueron una cosa y los 8 siguientes han sido otra: cambió el controlador, asumió una nueva administración, el modelo de negocio es distinto, los vinos evolucionaron, se buscaron otros mercados y se alió con nuevos agentes de distribución. vece s las empresas mantienen un nombre, a pesar de que con los años evolucionan de una manera que las convierte en algo diferente de lo que fueron. Algo así ha sucedido con William Fevre Chile, una viña que nació con un socio principal, un modelo de negocio, una cartera de productos y ciertos mercados, casi todo lo cual ha cambiado drásticamente. Hoy sigue siendo William Fevre Chile, pero en el fondo es otra cosa.

Remontándose al origen, hace 20 años el francés William Fevre, un productor de la Borgoña conocido por su Premier Cru Chablis, se asoció con el agricultor, director de empresas y empresario chileno Víctor Pino Torche. El resultado fue una viña que se asienta en San Luis de Pirque, a los pies de los Andes.

La sociedad se dividía en un 60% para William Fevre y el 40% para Víctor Pino. La idea era aprovechar el nombre, la logística y la red de comercialización del socio francés para penetrar en los mercados europeos, además de sus conocimientos enológicos. Era el esquema adoptado en esa época por todos los inversionistas europeos que vieron oportunidades en el Nuevo Mundo y en Chile particularmente.

La gestión de la empresa quedó en sus manos y de un equipo de profesionales europeos donde se mezclaban franceses y belgas.

La familia Pino, en tanto, se involucró en la parte financiera y vitícola del proyecto, y también aportó la experiencia de varias generaciones en el campo chileno, que incluía la producción de uva vinífera para venderla a terceros. La sociedad adquirió 45 hectáreas en el Alto Maipo e hizo sus primeras plantaciones en 1994, básicamente de variedades bordelesas.

Hoy, casi 20 años después, Gonzalo Pino, hijo del socio chileno y actual gerente general de la viña, reflexiona y dice que la complementariedad esperada entre un inversor galo que proveía sus redes internacionales y know how, y un socio chileno que contribuía con sus conocimientos de la realidad local en términos operacionales y legales, finalmente no fue tal. “La alianza no funcionó como se esperaba. La idea siempre fue embotellar en origen y vender en Europa aprovechando la logística del socio francés, pero empezamos a mandar el vino a Francia a granel para embotellarlo allá. Además vimos que tampoco se vendía el vino

Full renovation

William Fevre Chile’s first 12 years radically differ from the 8 years that followed: A new controlling partner, a new management, a different business model, renewed wines, new markets and new distribution agents. All that helped the winery to aim at new horizons and be just a few steps away from operational balance.

Sometimes companies keep a name even though they evolve over the years and turn into something completely different from what they were. This is pretty much what has happened to Viña William Fevre Chile, a winery that had one main partner, one business model, one product portfolio and a handful of markets, all of which has changed dramatically. In form it remains Viña William Fevre Chile but in substance, it’s a whole new world.

Back in its early days, 20 years ago, the Frenchman William Fevre, a wine producer from Burgundy known for his Premier Cru Chablis, partnered with Chilean agriculturist, manager and entrepreneur Víctor Pino Torche. That deal gave birth to a winery located at San Luis de Pirque, on the foothills of the Andes.

William Fevre used to own a 60% stake, while Víctor Pino owned 40%. Their idea was to take advantage of the name, logistics and sales network of the French partner to penetrate European markets, as well as his winemaking expertise. It was the same approach applied by all the European investors who saw opportunities in the New World and particularly in Chile.

The French partner took over the management, helped by a team of European professionals consisting of French and Belgian nationals. In turn, the Pino family took over the financial and grape growing aspects of the society and contributed the experience gained by several generations of farmers in Chile, including the production of vitis vinifera that was sold to third parties.

The company purchased 45 hectares in Alto Maipo and planted its first vineyards, mostly Bordeaux varieties, in 1994.

Today, almost 20 years later, Gonzalo Pino, son of the Chilean partner and current general manager of the winery, reviews the company’s origins and says that the expected complementarity between a French investor who was contributing his international networks and know-how and a Chilean partner who was bringing in his expertise in the local reality in operational and legal terms fell short. “The alliance did not work as expected. The plan had always been to bottle at source and to sell the wine in Europe by relying on the French partner’s logistics.

However, we started to ship bulk wine to France and then bottle it there. Moreover, we realized that sales of wine were not taking advantage of the distribution network Willian Fevre had in Europe, so we were forced to build a sales network from Chile,” he tells.

Disagreements started to pile up between the partners and the situation became worse because there was no clear agreement as to the type of wine that was going to be produced. We were a small producer according to Chilean standards –just a few vineyards and a small winery, capacity limited to one million liters– and we found ourselves using a sizeable portion of our production to make bulk wine, which made absolutely no sense if we think that the original plan was to make high quality wines by taking advantage of our location, that is, one of the best terroirs in the world.

In conclusion, we did not know where our project was heading.

STARTING FROM SCRATCH The company has undergone major restructuring over the past few years. One of the pillars of change was the balance of power at partner level. Today, having increased its interest by gradually buying Fevre’s stake, the Pino family controls 87.5% of the company and the remainder is owned by the French partner who regularly travels to

Incluso, se daba la situación de que una viña pequeña para los estándares chilenos en cuanto a campos plantados y capacidad de bodega (un millón de litros), destinaba buena parte de su producción a elaborar vinos a granel, un sinsentido si se considera que la vocación siempre fue la de hacer productos de altos estándares, aprovechando el plus de estar ubicados en un terroir considerado entre los mejores del mundo.

En definitiva, no existía una orientación clara acerca de hacia dónde iba el proyecto.

BORRÓN Y CUENTA NUEVA

En los últimos años la empresa ha sido objeto de una profunda reestructuración. El cambio parte desde la correlación de fuerzas a nivel de socios. Actualmente, y tras sucesivas compras de porciones de la participación de Fevre, la familia Pino controla el 87,5% de la compañía, con el restante 12,5% aún en manos del francés, quien –aunque periódicamente viene a Chile–, está alejado del día a día del negocio.

Así las cosas, el trajín diario de la viña está a cargo de Gonzalo Pino, un ingeniero comercial que antes de hacerse cargo de ella adquirió amplia experiencia en la industria del retail y que además ya se manejaba en las actividades agrícolas gracias a los intereses de la familia en este sector. La parte financiera sigue a cargo de Víctor Pino hijo, mientras que el patriarca de igual nombre supervisa todo desde el directorio.

La llegada de Gonzalo a mediados de 2004 fue consecuencia de la decisión estratégica de la familia de continuar en un negocio que hasta la fecha no generaba ganancias, más bien al contrario, al punto de que se evaluó vender su participación debido al cauce seguido por la bodega y las diferencias con los socios europeos.

“Nos pareció que era un tremendo desafío y que alguien debía darle continuidad a un lindo proyecto y a un negocio familiar (…) Me

The company is now run by Gonzalo Pino, a business administrator who before joining the winery had built a career in the retail business and was also experienced in agriculture because of his family’s business. Víctor Pino junior is still at the helm of the financial department, while the namesake head of family oversees the company from the board of directors.

Gonzalo joined the company by mid 2004 as a strategic move of the family to stick to a business that was yielding no profit. On the contrary, the family had previously even considered selling their share due to disagreements with the European partners and because they did not support the direction in which the company was going.

“We saw it as a major challenge and thought that someone had to make this wonderful project and family business work (…) When I took over, I found an ailing management that lacked clear goals, piles of wine in stock that was not going to be bottled but sold in bulk and very little market development,” Gonzalo Pino said.

Once at the helm, his first move was to conduct a study on the Chilean and world wine industry to learn about the state of business, projections and complexities, and then decide what to do to join the market. Back then, they were selling some 16K cases per year at an average price of USD 29 a case.

The first strategic decision was to make superior wines, which meant they would no longer produce bulk wine. So they made a drastic decision and cleaned the winery by selling thousands of liters in bulk. They also cut yields in the vineyard and changed the product portfolio, which until then consisted of varietals, one reserve and a couple of grand reserve wines without major continuity. “It wasn’t a consistent portfolio. So we came up with a consistent, high-quality reserve line and

we gradually eliminated the varietal line,” he explains.

In fact, at a certain point the decision was made that the winery had to raise its average price per case, because the project was not viable if a case continued to be sold for USD 29. Their efforts have proven right, because by late 2012, the average price per case had increased to USD 54 and the winery pursues an even higher price. In addition, their volume of sales is now 33K cases.

A CHANGE OF IMAGE Marketing-wise there were changes as well. Not only did they build a high-end family of wines, but they also

dad, lo que implicaba dejar de hacer vino a granel. Entonces se adoptó una decisión drástica: se limpió la bodega, de modo que miles de litros se vendieron a granel. Además, se bajaron los rendimientos en el viñedo y se cambió el portafolio de productos que en ese momento estaba formado por varietales, un reserva y un par de vinos gran reserva, sin tener gran continuidad. “Este portafolio no era consistente.

Por eso se creó una línea reserva consistente y de buena calidad, y paulatinamente fuimos eliminando la línea varietal”, explica.

El actual catálogo es fruto de definiciones estratégicas centradas en no competir con vinos de bajo precio. De hecho, en su momento se estableció que la viña sí o sí debía elevar el precio promedio por caja, porque a US$ 29 el proyecto era inviable. Dicho empeño ha sido exitoso, puesto que al cierre de 2012 se alcanzó una media de US$ 54 por caja, y la viña aspira a seguir incrementando la cifra. Paralelamente, se ha llegado a un volumen de 33 mil cajas vendidas.

Regarding markets, changes were as extensive. They switched from European customers to which wines were distributed by a winery owned by Mr William Fevre in France, to mostly Latin American and Asian ones.

They first relocated to Antwerp, in Belgium, where they contracted storage and logistics services to distribute their wines in the Old World. Yet, some time later, they changed again, this time to an agency model under which they commissioned sales and representation to a series of business partners.

This approach, which implied that all exports would be overseen by a commercial manager, led William Fevre Chile to start selling its products in 15 countries, with Brazil as the largest market of destination. “Europe

La nueva administración abandonó las tradicionales categorías “reserva” y “gran reserva” porque considera que contribuye a comoditizar el producto, y se ha volcado a destacar el terroir de William Fevre Chile y el embotellado en origen. En este sentido, la estrategia busca diferenciarse de los grandes actores de la industria, con quienes no se puede competir en volumen, adquiriendo una personalidad propia.

“Operamos con la consigna de que no importa si es reserva o gran reserva, tenemos un vino de calidad excepcional y de un terroir que también es excepcional”, destaca el ejecutivo.

Hubo cambios igualmente relevantes por el lado de los mercados.

De estar concentrados en Europa, empleando para la distribución una bodega propiedad de don William Fevre en Francia, los clientes pasaron a estar ubicados principalmente en América del Sur y Asia.

Primero se fueron a Amberes, Bélgica, donde contrataron servicios de bodegaje y logística a terceros para de esta forma hacer una distribución en el Viejo Mundo. Sin embargo, tiempo después dieron un nuevo giro en el modelo, hasta uno basado en el concepto de agenciamiento a través de varios partners encargados de la comercialización y representación de la marca.

CHALLENGES AHEAD Production and prices have increased gradually, which has resulted in improved balance. It isn’t a good business yet, just as it isn’t for most wineries due to the low exchange rate and the skyrocketing costs, but they expect to attain operational balance some time between this year and next.

This progress partly originates in the company’s financial health. A series of capital contributions have been made and the company has borrowed some funds from banks to finance long-term projects, like investment in plantations, infrastructure and vats, but always trying not to depend too much on the financial system.

To be profitable, the winery aims to export some 50K cases per year in two to four years, with sales amounting to 40K in the meantime. With that goal in mind, they just invested USD 500,000 to expand the capacity of their winery, improve infrastructure and provide working capital. However, in the long run, the winery expects that

their constant investments in vineyards will help them attain sales for roughly 80K cases. All that by improving the business mix and the average price. In addition, they just hired a new chief winemaker, Cristián Aliaga, who has

vast experience in Chile and abroad, which will allow them to consolidate their positioning in the high-end segment of the market.

Their goal is to boost sales in Chile through the Horeca channel and to increase their sales in the U.S., Canada and Asian markets. Ecuador, Peru, and Colombia are some of the Latin American markets the winery wishes to penetrate as well.

Wine tourism is also among the projects in the pipeline prompted by a visit to Mendoza, where this concept has been fostered by local producers. The plans are to start developing the project late this year by building the necessary infrastructure and alliances with tour operators.

Little or nothing is left of the project that started two decades ago. Just the name. And this is the proof that in business radical changes sometimes are a must. t

“Europa representaba el 60% de las exportaciones y hoy concentra el 25%, mientras Brasil tiene el 40% de las ventas y Japón casi un 25%”, resume Gonzalo Pino, quien destaca que este cambio de prioridades fue una de las consecuencias del análisis de los mercados que la nueva administración realizó al comienzo de su gestión.

LOS DESAFÍOS

Los incrementos productivos y de precios han sido paulatinos y han permitido mejorar los balances. Todavía no es un buen negocio, como para la mayoría de las viñas por el deteriorado tipo de cambio y el alza excesiva de los costos, pero se espera llegar a un equilibrio operacional entre éste y el próximo año.

Este progreso se debe en parte a que la empresa está sana financieramente. Se han efectuado sucesivos aportes de capital y tomado un bajo endeudamiento bancario para llevar a cabo los proyectos de largo plazo, como la inversión en plantaciones, infraestructura y cubas, evitando depender excesivamente del sistema financiero.

Para lograr que la empresa sea rentable, se pretende exportar unas 50 mil cajas anuales en dos a cuatro años, llegando a las 40 mil en el ínterin. Para ello acaban de invertir US$ 500 mil en ampliar la capacidad de la bodega, mejorar la infraestructura y en capital de explotación. No obstante, se planea que en el largo plazo la viña se estabilice en torno a las 80 mil cajas, gracias a sucesivas inversiones en campos. Todo lo anterior, mejorando el mix comercial y el precio promedio. Junto con ello, acaban de contratar como enólogo jefe a Cristián Aliaga, quien tiene una vasta experiencia en Chile y en el extranjero, lo que les permitirá consolidar el proceso de posicionamiento en el segmento de vinos de alta gama.

La idea es potenciar la venta en Chile a través del canal Horeca, así como profundizar la comercialización en EEUU, Canadá y mercados asiáticos. Otros mercados en los que tiene puesta su mirada en Sudamérica son Ecuador, Perú y Colombia.

El enoturismo también está en la carpeta de proyectos, idea que ronda desde una visita a Mendoza donde se observó el desarrollo del concepto por los productores trasandinos. Se pretende comenzar a fin de año, con la infraestructura estrictamente necesaria, trabajando en alianza con tour operadores.

Del proyecto que nació hace dos décadas, poco y nada queda, sólo el nombre, para demostrar que en los negocios los cambios de timón a veces son imprescindibles. t

Eslovaquia las dos caras de una medalla

Fiel a su faceta itinerante, la última edición del Concours Mondial de Bruxelles se celebró en Bratislava, Eslovaquia. Aprovechando esta breve estadía, visitamos la bodega Sanvin, un ejemplo de cómo la industria del vino de este país, prácticamente dormida durante medio siglo, hoy despierta para abrirse un espacio en el mercado.

iajar sin expectativas –o prejuicios– permite mantener intacta la capacidad de asombro.

Y Eslovaquia sorprende desde todos los ángulos. En este pequeño país de Europa del Este, franjeado por los Cárpatos y el Danubio, se respira una mezcla de fragilidad y belleza. Con un 40% de su territorio cubierto por bosques, asoman vestigios de aristocráticos castillos, iglesias de madera y antiquísimas viñas cuyos primeros ejemplares se remontan a los siglos VI y VII. A pesar de que sólo logró su independencia hace dos décadas, a partir de 2009 se integró a la Eurozona. Desde su separación de República Checa, su crecimiento ha sido espectacular, principalmente empujado por los aportes sectoriales de la Unión Europea y una industria basada, principalmente, en la fabricación de automóviles, turismo invernal y generación de electricidad. Como herencia de la Unión Soviética, posee nada menos que seis reactores nucleares, pero hasta hoy depende de la madre rusa para aprovisionarse de uranio y del 90% de su petróleo y gas natural.

Conocida por sus cervezas tipo Pilsen y un licor de cerezas llamado Slivovica, su ancestral vitivinicultura estuvo prácticamente dormida durante medio siglo, diluida en un cooperativismo cuya vocación era saciar la enorme sed del imperio. Con influencias romanas, checas, húngaras, austríacas y francesas, su industria del vino hoy despierta para abrirse un espacio en el mercado. Sus viñedos suman 22 mil hectáreas, divididos en seis regiones, donde conviven cepajes autóctonos como Dunajo Danubio –posiblemente un cruce de Muscat Bouchet, Oporto y la local Svätovavrinecké–, germanas como Grüner Veltliner, Müller-Thurgau y Rivaner y, por supuesto, las francesas de siempre, donde el Cabernet Sauvignon se abre paso a codazos, especialmente en el sur del país, de clima más templado.

Ahí precisamente, en la zona Okoc, visitamos la bodega Sanvin.

Próxima a la capital Bratislava, siguiendo el curso del Danubio, esta zona se especializa en tintos profundos y minerales. Sus suelos blanquecinos, con altos contenidos de calcio, fierro y manganeso, albergan escuálidas espalderas que luchan contra la niebla y el alto contenido mineral de los suelos. No por nada, a sólo 3 kilómetros de distancia, se encuentra Velkyn Meder, una de los más renombrados complejos termales del país.

Slovakia the two sides of a medal Consistent with its itinerant nature, the latest edition of the Concours Mondial de Bruxelles was held in Bratislava, the capital of Slovakia. And taking advantage of this brief visit, we visited Sanvin, a winery that constitutes an example of how the local wine industry is awakening after half a century of slumber to gain a place of its own in the wine market.

Traveling without any expectations -or prejudiceshelps keeps one’s capacity to be surprised intact. And Slovakia certainly surprises from every possible angle. This small country located in Eastern Europe is bordered by the Carpathian Mountains and the Danube River. Here the atmosphere is a combination of frailty and beauty. 40% of its territory is covered by forests peppered by aristocratic castles, wooden churches and age-old wineries whose first productions date back to the 6th and 7th centuries.

And despite its short 20 years as an independent nation, in 2009 it became part of the Eurozone. Since its separation from the Czech Republic, its growth has been nothing short of spectacular, mainly led by the sectoral contributions from the European Union and an industry based primarily on car production, winter tourism and the generation of electricity.

As a heritage of the Soviet era, it has six nuclear plants, but even today it still depends on Mother Russia for obtaining uranium as well as 90% of its petroleum and natural gas.

Well known for its Pilsen-type beer and a cherry liquor called Slivovica, Slovakia’s ancient viticulture was practically dormant for nearly half a century, diluted in a cooperativism system designed to quench the enormous thirst of the empire. With Roman, Czech, Hungarian, Austrian and French winemaking influence, its wine industry is slowly awakening to gain a place of its own in the market. Its vineyard area totals 22,000 hectares and is divided into six regions where six native varieties coexist: Dunajo Danube -possibly a crossover of Muscat Bouchet, Porto and the local Svätovavrinecké-, grapes of German origin like Grüner Veltliner, Müller-Thurgau and Rivaner and, of course, the classic French where Cabernet Sauvignon fights for its place, especially in the south of the country, a region with a more moderate climate.

There, precisely in the area of Okoc, is the Sanvin winery.

La zona Okoc, donde está la bodega Sanvin, se especializa en tintos profundos y minerales.

Allí las vides luchan contra la niebla y el alto contenido mineral de los suelos.

Dejando atrás las ruinas del cooperativismo, verdaderos fantasmas de concreto, asoma esta moderna bodega que cuenta con tecnología de punta, desde pequeñas cubas de acero hasta los muy de moda fudres de roble. Sus propietarios, que curiosamente provienen del negocio de los agroquímicos –me cuentan que se hicieron de la bodega mediante una permuta con sus numerosos acreedores–, están convencidos del potencial de sus cepajes internacionales. Con aportes de la Unión Europea, y una más que optimista visión del negocio, embotellan bajo esta marca desde Riesling hasta Cabernet Sauvignon, provenientes de 50 hectáreas repartidas en Okoc y Rúban.

Sus vinos se dejan beber con cierta facilidad, incluso con cierta simpatía, especialmente un floral y profundo Zweigeltrebe –un cruce de St. Laurent y Blaufränkisch–, pero me pregunto en cuántas generaciones podrán recuperar su millonaria inversión en un mundo plagado de varietales internacionales. A ellos parece no importarles. En Eslovaquia, empujados por los capitales europeos que ya comienzan a escasear, se respira una peculiar energía y optimismo. Como buenos kayakistas, saben sortear las corrientes del mercado y sobrevivir las vicisitudes históricas, manteniendo prácticamente intacta una pintoresca y atractiva cultura. t

vertically trained vines that fight against the fog and the highly mineral soil. And the presence of minerals coincides with the existence, just three kilometers away, of Velkyn Meder, one of the country’s most renowned thermal bath complexes.

Leaving behind the ruins of cooperativism, true ghosts made of concrete, we find this modern winery equipped with top-notch technology, from small stainless steel tanks to the so fashionable oak vats. Its owners, who oddly enough started with an agrochemical business -in fact they told me they received the winery after negotiations with its numerous creditors-, are convinced of the potential of its international varieties. With the help of the European Union and a very optimistic vision of the business, they bottle many different varieties under this name, from Riesling to Cabernet Sauvignon sourced from 50 hectares located in Okoc and Rúban.

Their wines are easy to drink, even pleasant to drink, especially a deep, floral Zweigeltrebe -a crossover of St. Laurant and Blaufränkish-, though I wonder how many generations will have to pass before they can recover this extremely high investment in a world overflowing with international varieties. But they do not seem to care much. In Slovakia there is a peculiar atmosphere of energy and optimism, driven mainly by European capitals that have already begun to decrease. But like seasoned kayakists, they know how to surf the currents of the market and survive the odds of history while maintaining a picturesque and attractive culture almost intact. t

Concours Mondial de Bruxelles CHILE, UN MERITORIO QUINTO PUESTO

Los números de la versión 2013 del Concours Mondial de Bruxelles, celebrado en Bratislava, no dejan de impresionar. 8.200 muestras. 50 países. 305 catadores de 40 nacionalidades. Total: 2.408 medallas, de las cuales 109 pertenecieron a Chile, ubicándose en el quinto lugar entre los productores, detrás de Francia (709), España (524), Portugal (288) e Italia (276).

De las 109 medallas obtenidas por nuestro país –de 363 muestras, es decir el 30%–, nada menos que 37 fueron de Oro. La única Gran Medalla de Oro la consiguió Cremaschi Furlotti Carmenère Single Vineyard 2011, proveniente del Valle del Maule. En esta categoría, el país ganador fue España con 24 medallas, por delante de Francia (18) y Portugal (9).

Los mejores vinos de cada categoría fueron RC Lemaire Cuveé Select Réserve Brut, Champagne (Mejor espumante); Circe Verdejo 2012, Rueda (Mejor blanco); Château La Gordonne La Chapelle Gordonne 2012, Provence (Mejor rosado); Duvalley Reserva 2010, Douro (Mejor tinto); y Peller Estates Riesling Icewine 2008, Ontario (Mejor vino dulce).

La próxima versión del concurso se realizará en Bruselas, entre el 9 y 11 de mayo, volviendo a sus orígenes para celebrar su vigésimo aniversario.

CHILE, A WELL-DESERVED FIFTH PLACE

The numbers of the 2013 edition of the Concours Mondial de Bruxelles held in Bratislava are quite impressive. 8,200 samples. 50 countries. 305 judges from 40 different countries. Total: 2,408 medals, of which Chile reaped 109, ranking fifth behind France (709), Spain (524), Portugal (288) and Italy (276).

Of those 109 medals -from 363 samples, that is, 30%-, 37 were gold medals. The only Grand Gold Medal went to Cremaschi Furlotti Carmenère Single Vineyard 2011, from the Maule Valley. This category was won by Spain with 24 medals, followed by France (18) and Portugal (9).

El directorio de Vinos de Chile reeligió como presidente de la entidad para el periodo 2013–2015 al vicepresidente de Viña San Pedro Tarapacá René Araneda. El directorio quedó conformado además por Aurelio Montes (Viña Montes) como vicepresidente, Alfonso Undurraga (Viña Koyle) como tesorero y los directores Eduardo Chadwick (Viña Errázuriz), Thomas Domeyko (Viña Concha y Toro), Ernesto Müller (Viña Undurraga), Silvio Rostagno (Viña Santa Rita), Mario Pablo Silva (Viña Casa Silva) y Daniel Vicuña (Viña Veramonte).

En su cuenta anual, Araneda hizo un llamado a la unidad de la industria y a la necesidad de fortalecer el vínculo público-privado para sacar adelante iniciativas pro competitividad y para potenciar la presencia de Wines of Chile en el extranjero, especialmente en Asia.

The Chair explained that the 2013-2015 agenda will focus on fostering more equitable regulations, harvesting the first fruit of the newly created Wines of Chile R&D Consortium, developing new products, implementing the 2020 National Plan to boost the domestic market, strengthening the image of Wines of Chile in the largest markets, and extending the industry’s Sustainability Code.

El ingreso oficial a la red será anunciado en junio en Vinexpo Bordeaux.

De esta forma, Casablanca se integra a la lista de las 10 regiones vitivinícolas más prestigiosas del mundo: Bilbao-Rioja, Burdeos, Christchurch-South Island, Ciudad del Cabo, Florencia, Mainz-Rheinhessen, Mendoza, Oporto, y San Francisco-Napa Valley.

CASABLANCA VALLEY BECOMES GREAT WINE CAPITAL. The Casablanca Valley-Valparaíso route has been voted the tenth region in the Great Wine Capitals Global Network, an exclusive global network pursuing excellence in wine tourism.

The official welcoming ceremony will be held next June at Vinexpo Bordeaux.

Valparaíso/Casablanca Valley is the tenth region in the Great Wine Capitals Global Network, joining Bilbao/Rioja, Bordeaux, Cape Town/Cape Winelands, Christchurch/South Island, Firenze, Mainz/Rheinhessen, Mendoza, Porto, and San Francisco/Napa Valley.

El Centro Tecnológico de la Vid y el Vino de la Universidad de Talca y la asociación Vinos de Curicó y Maule realizaron un interesante seminario denominado “Cómo cambia y se reinventa la industria vitivinícola”. En la oportunidad el periodista Patricio Tapia se refirió a la búsqueda de identidad de los vinos chilenos, el enólogo Rafael Tirado habló de su experiencia con los viñedos y vinos de altura, mientras los enólogos Derek Mossman y Sven Bruchfeld relataron la experiencia de asociatividad a través de Vigno y MOVI. En temas relacionados a la viticultura, Yerko Moreno se refirió al crecimiento sustentable versus las pérdidas de productividad; el viticultor Eduardo Silva a la mecanización y Samuel Ortega, al déficit de agua y el balance hídrico del viñedo en la Región del Maule.

El seminario culminó con la intervención del Subsecretario de Agricultura Alvaro Cruzat –quien señaló que la apreciación del peso no es momentánea, sino que obedece a una situación estructural y, por tanto, permanente– y un panel de discusión sobre el difícil momento que atraviesa la industria, tema que fue abordado de una u otra manera por todos los expositores.

THOUGHTS ON THE STATE OF THE INDUSTRY. Universidad de Talca’s Technology Center for Vine and Wine and the Wines of Curicó and Maule association organized an interesting seminar called “Cómo cambia y se reinventa la industria vitivinícola” (How the wine industry evolves and reinvents itself). On the occasion, wine writer Patricio Tapia addressed the quest for identity of Chilean wines, winemaker Rafael Tirado made a presentation on his experience in the vineyard and with high-end wines, and winemakers Derek Mossman and Sven Bruchfeld referred to the lessons learnt on associativity from their experience with Vigno and MOVI. On winegrowing related matters, Yerko Moreno spoke about sustainable growth versus productivity loss; viticulturist Eduardo Silva made a presentation on mechanization, and Samuel Ortega addressed water shortage and the water balance at Maule Region’s vineyards.

During the closing remarks, Deputy Secretary of Agriculture Alvaro Cruzat explained that the appreciation of the Peso is not a temporary thing, but originates in a structural, hence permanent, situation. A discussion panel followed on the difficult situation the wine industry is going through, an issue that was raised recurrently by all speakers.

VIÑA KOYLE YA TIENE SU VINO ÍCONO

Desde su creación el año 2006, Viña Koyle –empresa que la familia Undurraga fundó luego de vender su participación en la viña que lleva su apellido–se dedica exclusivamente a la producción de vinos premium, y desde el año 2008, bajo el manejo biodinámico de sus viñedos.

Después de siete años, está lista para empezar a comercializar AUMA, su vino ícono, una mezcla que varía con cada añada, y que proviene del sector de Los Lingues en Colchagua.

La cosecha 2009, actualmente en el mercado a un valor de $60.000, es un ensamblaje de Malbec (33%), Cabernet Sauvignon (25%), Carmenère (21%), Syrah (14%) y Petit Verdot (7%) que fue envejecido durante 9 meses en huevos de cemento. “El vino es de un color violeta profundo, con aromas limpios de flora nativa, junto a finas notas de higo molido, pimienta negra y grafito. Con taninos jugosos y redondos, ofrece grata sensación en boca, con una impresionante densidad y pureza que hace permanecer un largo retrogusto”, explica Cristóbal Undurraga, viticultor y enólogo de la viña.

Winemaker Adriana Cerda, Curicó-based wine broker Katherina Hantke, wine writer Patricio Tapia, and publicist Pablo Prieto, the author of ten annual issues of Guía de Vinos de Chile, are the new members of Cofradía del Mérito Vitivinícola de Chile (Chilean Viticultural Merit Guild), an organization established 20 years ago that gathers the most prominent local wine lovers and the mission of which is to disseminate, honor and preserve the prestige of Chilean wine.

VIÑA KOYLE NOW HAS AN ICON WINE. Since it was established in 2006, Viña Koyle –a company founded by the Undurraga family after it sold its interest in the namesake winery– exclusively produces premium wines, and since 2008, its vineyards are managed under a biodynamic approach. After seven years of work, the winery is now ready to sell its icon AUMA, a blend that will vary from vintage to vintage, made from grapes sourced from a vineyard in Los Lingues, in the Colchagua Valley.

The 2009 vintage, currently sold for approximately USD 120.00, is a blend consisting of 33% Malbec, 25% Cabernet Sauvignon, 21% Carmenère, 14% Syrah (14%) and 7% Petit Verdot that was aged in concrete eggs during 9 months. “The wine has a deep violet robe, clean native vegetation aromas, and fine notes of crushed fig, black pepper and graphite. Pleasant mouthfeel, juicy, round tannins, remarkable density and purity that leave a long aftertaste,” said viticulturist and winemaker Cristóbal Undurraga.

ay lugares en el mundo donde lo sustancial parece ser el silencio. Uno de esos lugares es Vosne-Romanée, un pueblo situado a tres horas de París.

Sin embargo, en esta pequeña aldea borguiñona de 500 habitantes, con una superficie de no más de 4 km2 y emplazada en un valle sin elevaciones ni paisajes asombrosos, lo extraordinario no es el silencio sino el suelo. El terroir de donde se obtienen los más prestigiosos vinos del mundo. Tras su apariencia austera, este pueblo de la Côte d’Or esconde un mito que tiene efecto de imán para enófilos del mundo entero. Se trata del Domaine de la RomanéeConti o DRC, como lo llaman los entendidos. Y el hombre que está atado a estas vides –y a su leyenda– por un nudo inexorable se llama Aubert de Villaine.

Nuestra cita con él es a las dos de la tarde, en la rue du Temps Perdu, en una antigua cuverie que perteneció a los monjes de la Abadía de Saint Vivant, destinada entonces a la fabricación de vino y que hoy es propiedad del Dominio de la Romanée-Conti. Aquí se encuentran sus oficinas administrativas y una de sus bodegas.

Cuando ingresa, Aubert de Villaine sostiene su sombrero de fieltro y saluda sonriente. “No tengo mucho tiempo”, es lo primero que dice luego de un bonjour firme y expeditivo.

Nos propone visitar las viñas. Subimos a su coche dispuestos a recorrer un camino que resume buena parte del pasado y del presente de este vignoble. Desde lo alto de la ladera, al borde de la ruta, la visión es espléndida: hileras de viñas en perfecta simetría, apenas separadas entre sí por un corredor lo suficientemente ancho para dejar pasar a un caballo de labor. Aubert de Villaine, 73 años, observa sus 25 hectáreas de vides como si allí se escondiera un secreto.

– La cepa Pinot Noir le da al vino un carácter especial –dice–.

Este vino tiene un alma, lleva consigo mucho más que el hecho de ser un vino. Y eso, ese plus, es difícil de describir. Se trata de una dimensión cultural a la cual se es o no se es sensible.

Al borde del camino un olor húmedo y acre surge de este suelo compuesto de caliza, arcilla roja, grava y piedras, donde la uva Pinot Noir encuentra –dicen los que saben– su expresión más sofisticada y fascinante. Aunque la región cultive casi exclusivamente esta variedad tinta, los vinos de cada clima son distintos.

Estamos en presencia de una filosofía completamente aparte.

Nos encontramos ante lo que se llama cultura de terroir. Una viticultura que trabaja en un terreno delimitado, con una cepa única y que comenzó hace 2.000 años y aún hoy se mantiene viva. Esta historia es tan o más importante que el producto en sí. El vino

Rendezvous with Aubert de Villaine from Romanée-Conti Together with Romanée-Conti co-owner, we had the opportunity to stroll through his vineyards, taste seven barrel samples of these highly rated wines and share a pleasant conversation that touched upon almost every possible topic.

Some places in the world seem to have been made to be silent. One such place is Vosne-Romanée, a town located just three hours from Paris. But in this small Burgundian spot of just 500 inhabitants and an area that barely reaches 4 square kilometers, what is really extraordinary is not silence but the soil, the terroir that gives life to some of the world’s most prestigious wines.

Behind its austere appearance, this town of the Côte d’Or hides a myth that draws winemakers from all over the world like a magnet: Domaine de la Romanée-Conti or simply DRC, as the experts call it. And the man inexorably tied to these grapes and their legend has a name: Aubert de Villaine.

Our appointment with him is at 2:00pm on the rue du Temps Perdu, in an old cuverie that once belonged to the monks of the Abbey of St. Vivant, then dedicated to the production of wine and today property of the Domaine.

Here are the administrative offices and one of its cellars.

As he comes in, Aubert de Villaine holds his felt hat and smiles at us. “I don’t have much time”, he apologizes after greeting us with a firm and sudden bonjour.

Next, he invites us to visit the vineyards. We hop into his car, ready to ride on a road that summarizes the history and the present of this vignoble. From the top of the slope on one side of the road, the view is spectacular: row after row of vines in perfect symmetry, barely separated by a space just wide enough to allow a labor horse to pass between them. Aubert de Villaine, age 73, looks at his 25 hectares of vines as if they were hiding a secret.

“Pinot Noir gives this wine a special personality,” he says. “This wine has a soul, it is much more than just wine.

And this plus is hard to describe. It is a cultural dimension that one either feels or not.”

At the side of the road, a moist and pungent smell rises from the soil made of limestone, red clay, gravel and pebbles, where Pinot Noir delivers its most sophisticated and fascinating expression, experts say. Even though the region is almost exclusively dedicated to this red variety, the wines produced in each particular climate differ greatly from each other.

We are in the presence of an absolutely distinct philosophy. This is what has come to be known as terroir culture: Winegrowing developed in a well-defined area,

DIFÍCIL COMIENZO. Aubert De Villaine cuenta que su padre y su

abuelo no se ganaban la vida gracias al viñedo. Su abuelo cultivaba viñas en Allier, un departamento de la región de Auvergne, y su padre era director de un banco de inversiones en la misma zona.

Ellos –recuerda– estaban extremadamente ligados a estas tierras.

Pero hay que saber que entre 1880 y 1972, prácticamente un siglo, el dominio no dio ganancias debido en gran medida a la plaga de la filoxera. Es por eso que la familia es la opción más sólida cuando se trata de ocuparse de estas viñas. Si un grupo financiero las hubiera comprado, esta propiedad ya hubiera sido vendida varias veces. Un momento muy difícil y doloroso –continúa– se vivió en 1945 cuando hubo que arrancar las viñas que se encontraban exangües. La Romanée-Conti fue la última en ser arrancada y luego replantada en 1947, para finalmente dar su primera cosecha en 1952.

PATRIMONIO DE LA HUMANIDAD. El sol alarga la sombra de su cuerpo mientras él se mantiene erguido frente a este retazo de un mundo que está empecinado en resguardar. Y para hacerlo, encabeza una campaña para que los climas de los vignobles de Borgoña sean declarados Patrimonio Mundial de la Humanidad por la UNESCO. – Se trata de un patrimonio que hay que reconocer; es un valor universal que merece ser defendido y protegido. Hoy en día, lo que nosotros transmitimos es el resultado de un trabajo que se hace de una manera completamente manual. Este es un terroir que se puede desnaturalizar y transformar completamente si uno se apresura demasiado, usando los nuevos medios tecnológicos que no siempre son los adecuados. Sería como ir en contra de todo lo que es esencial acá: la visión a largo plazo.

A DIFFICULT START De Villaine tells us his father and grandfather did not earn their living from the vineyard. His grandfather used to grow grapevines in Allier, a department of the region of Auvergne while his father was the director of an investment bank in the same area.

They, he recalls, were extremely connected to this land. But it should be noted that between 1880 and 1972, almost a full century, the domaine was a money-losing enterprise mostly due to the phylloxera pest. For that reason, family has been the best option to manage and take care of these grapevines. If a financial group had purchased them, the property would have been sold several times. A very sad and painful moment came in 1945 when the languishing vineyards had to be uprooted, he adds. Romanée-Conti was the last one to have its vines removed and replanted in 1947. Its first vintage was produced in 1952.

A WORLD HERITAGE The sun lengthens the shadow of his body as Mr de Villaine stands before this patch of history he is determined to preserve. And to do that, he is leading a campaign to lobby UNESCO into declaring Burgundian vignobles a World Heritage Site.

- This is a legacy that needs to be recognized, a universal value that needs to be defended and protected.

– Trabajamos para lograr un ecosistema donde no se utilice ningún abono. Sólo utilizamos un compost que se elabora con sarmientos triturados y pulverizados que, combinados con la piel de la uva y una pequeña cantidad de estiércol, permite su fermentación. Y practicamos sobre las vides una poda muy estricta. La meta es obtener un rendimiento equilibrado. Sólo en el caso de las vides jóvenes practicamos el aclareo, en el resto jamás. De este modo, los rendimientos no sobrepasan nunca los 25-30 hectolitros por hectárea.

Adoptamos una agricultura orgánica en 1986 y comenzamos a experimentar la viticultura biodinámica hace unos siete años. A través de ella tratamos de encontrar los medios para disminuir los aportes de cobre. Pienso que su aplicación nos obliga a una observación más completa e intensa del terreno, porque uno está realmente a la escucha del suelo. Hay un lazo entre la biodinámica y el hecho de tener un rendimiento más equilibrado. La biodinámica no es fácil de explicar científicamente, pero hay que reconocer que funciona. El resultado es un vino más equilibrado, con una madurez fenólica superior.

Pero –aclara con una media sonrisa– no hacemos una biodinámica filosófica, esotérica, sino concreta. La hacemos porque creemos que nos ayuda a hacer mejores vinos.

Today, what we produce is the result of work conducted manually. This terroir can be transformed and denaturalized radically if you hurry too much introducing new technological methods that are not always suitable.

It would simply go against the essence of this place, which is its long term vision.

BIODYNAMIC VITICULTURE As he looks at his grapevines, de Villaine explains that it is crucial to maintain the soil in top condition so that it can express its true identity. And to achieve that, it needs to be rid of all external intrusion.

– Our goal is to have an ecosystem that does not admit any type of fertilizer. We only utilize compost made of shredded and powdered twigs which, when combined with grape skins and small amounts of manure permit natural fertilization. And we practice very strict pruning too. The objective is to have a balanced yield. We only thin the foliage on young vines, never on older ones.

Managed this way, yields never exceed 25-30 hectoliters per hectare.

In 1986, we opted for organic agriculture and began experimenting with biodynamic culture around seven

viticulture and more balanced yields. Biodynamic farming is not easy to explain in scientific terms, but truth be told, it works. The resulting wine is more balanced, and its phenolic maturation is greater. But, he explains with what might be interpreted as a smile, we do not practice a philosophical, esoteric type of biodynamic culture here, but a realistic one. We resort to it because we believe it helps us make better wines.

PRICES AND SPECULATION Romanée-Conti produces only about 6,000 bottles a year, which are reserved way ahead of their release date and may cost between €5,000 and €10,000 each. And this in the official market, as speculators may sell them for even larger sums. That is exactly what happened in October 2012 at Sotherby’s in Hong Kong, where a case of 1990 Romanée-Conti was auctioned for USD 297,400.

Or we have the case of a 1945 bottle bought by a private collector for USD 123,919. Along this line, Aubert de Villaine points out: – The price of our wines is high. We try to maintain it at a level that is accessible for amateur consumers, but the real issue is what happens later on once they have been released into the market. If there are people out there that resell them at auctions, their price may simply

Y tampoco queremos vender nuestros vinos al precio del mercado, porque lo que deseamos es que sean los amateurs quienes puedan comprarlos y no únicamente los oligarcas rusos y los especuladores. Producimos vino para que sea consumido. Un vino no es un cuadro, un objeto cultural no perecedero; una vez que se lo bebió, se lo bebió. Me parece absolutamente irracional pagar un precio tan extravagante por algo que no puede ser contemplado. Una vez que el vino se bebio, c’est fini!

SELECCIÓN DE CLIENTES. ¿De qué modo se implementa la se-

lección de los clientes, tanto de particulares como de profesionales?

– La selección de nuestros clientes la hacemos sobre todo advirtiéndole a la gente que quiere comprar el vino que, junto a la adquisición de una botella de Romanée-Conti, también debe procurarse otros crus del dominio, en la proporción de la cosecha. Es decir, por ejemplo, una botella de Romanée-Conti por cada trece o quince botellas de otros

Personally I have nothing against auctions –he hastens to explain– but what we do not like is for someone to buy a bottle that a month later will be put for sale just to make money. On the other hand, we do not want to sell our wines at market value because we really want amateur consumers to buy them and not just Russian billionaires and speculators. We produce wine to be consumed. Wine is not like a painting, a non-perishable work of art; once it is drunk, it is gone. I find it completely insane to pay such a high price for something that cannot be admired. Once the wine is drunk, c’est fini!

CUSTOMER SELECTION How do you select your customers then, both private and professional?

– We choose our customers by telling people interested in buying our wine that, together with a bottle of Romanée-Conti, they should also buy other crus from

the domaine, in the proportion of the vintage. In other words, one bottle of Romanée-Conti for every thirteen or fifteen bottles of other grands crus. We ask restaurants that recommend our wines to commit to selling the bottles sur table, that is, for consumption inside the restaurant (not ‘to go’) and to keep them in good condition. And we ask our private customers to commit themselves not to sell the bottles on the market. We do some follow-up work. My assistant is responsible for

ROBERT PARKER A disturbing presence for many years in Burgundy was that of Robert Parker, the world’s most influential wine critic. In this respect he says:

ROBERT PARKER. Una presencia que fue durante años sumamente

perturbadora en Borgoña, es la de Robert Parker, el crítico de vinos más poderoso del mundo. Al respecto dice: – Creo que Parker, por un lado, ha hecho mucho por divulgar la cultura del vino –reconoce con cierto desgano. Pero en Borgoña estamos muy contentos de habernos sacado de encima a Parker, de no permanecer más bajo su influencia. Hace unos años escribió una crítica sobre un borgoñón que lo amenazó con hacerle un proceso (Nota de la redacción: el conflicto data de 1993 y fue con la Maison Faiveley a la que Parker habría acusado de trucar uno de sus vinos). Finalmente el conflicto se arregló de manera amigable. Luego Parker se enojó, sintió que toda la Borgoña estaba en su contra. Hubo viticultores que habían comenzado a hacer un vino para Parker, o sea, una vinificación con gran extracción. Nosotros tenemos una cepa que no soporta ese proceso. – I believe that, on the one hand, Parker has contributed quite a lot to spreading the culture of wine, de Villaine admits reluctantly. But in Burgundy we are all very happy to have ousted him and freed ourselves of his influence. Some years ago he wrote a critic about a local producer who threatened to file a suit (author’s note: the conflict started in 1993 and involved the Maison Faiveley which Parker accused of altering its wines). Eventually the conflict was resolved amiably. Then Parker began to feel that all of Burgundy was against him. Some vintners had even started to make wine to suit the Parker style, that is, vinification with great extraction. But the variety we grow simply cannot withstand such process. In the barrel the wines seemed impressive but they still needed at least three more years to become good wines. Tannins were too harsh and simply unpleasant. It’s a great thing to have gotten rid of Parker! Bordeaux is still under his influence, a real shame for them – he exclaims as he seems to regain some of his lost energy.

Aubert de Villaine está preparando a su sobrino Bertrand de Villaine para que dentro de pocos años asuma el control de la bodega.

Ya de vuelta de la visita a las viñas, vamos a la bodega ubicada en el subsuelo de la antigua construcción de la Orden de Saint Vivant. Allí se guarda la cosecha completa del año 2011. Aubert De Villaine introduce una pipeta en un primer barril de roble donde está inscrito el nombre de uno de sus grands crus: Echézeaux. “Es un vino menos complejo que los otros –explica– de una nariz profunda, penetrante, se siente el cassis”.

Luego frente a otro barril, sobre el que se lee Grand Echézeaux, realiza la segunda de las siete degustaciones de grands crus que hicimos en total. De Villaine explica entonces qué significa para él degustar un vino cuando está en barrica.

– Se trata de compararlo con cómo estaba este vino hace un mes o quince días, si evolucionó, si su color se aclaró.

Es el modo de observar su progreso, verificar si hay o no un riesgo en el modo en que el gusto se está desarrollando.

Lo esencial es confirmar que avanzamos en la buena dirección. En este estadío el vino no se encuentra lejos de ser embotellado, está terminado. Tiene la bouche ronde (sin asperezas), los aromas son delicados. Fíjese –dice, pedagogo– estas dos viñas, Echézeaux y Grand Echézeaux, esán pegadas una a la otra y dan vinos completamente diferentes. En un Grand Echézeaux encontramos una mayor profundidad, más discreción, un tanino diferente, más sutileza.

Es tal el valor de estos vinos y tan exiguo y preciado su nivel de producción que, una vez que se degusta, lo que queda en la copa vuelve a la barrica. Como un pescador que devuelve sus peces al mar.

– ¿Cuánto tiempo debe pasar para apreciar un vino Romanée-Conti?

– En una época teníamos un viejo distribuidor en Inglaterra que sostenía una teoría que era muy justa: a los quince años de un vino, uno no se equivoca jamás. Pasado ese tiempo, al abrir la botella, el vino ya llegó a una cierta madurez.

– ¿Qué vino le gustaría llevarse a una isla desierta?

– Si aún existiese, La Tâche ‘62; es un vino que me ha gustado mucho. Pero ya no existe, así es que llevaría conmigo sólo su recuerdo –dice, como alguien abandonado por su amante al que nada más le queda el consuelo de poderla imaginar.

Cuando le pedimos que nos diga su cita preferida sobre este vino, él evoca la más sencilla, pronunciada por un escritor inglés de quien ya no recuerda el nombre.

– Que es un buen vino –afirma mientras extiende su copa al aire.

“Es un buen vino”, repite y se aleja ofreciendo una sonrisa dulcemente irónica. t

TASTING WITH AUBERT DE VILLAINE Back in the vineyard, we head towards the underground cellar of the old construction of the Order of Saint Vivant. That is where the entire 2011 vintage is stored. Aubert de Villaine introduces a thief in the first oak barrel that bears the name of one of its grands crus: Echézeaux. “This wine is less complex than the rest -he explains- with a deeper, more penetrating nose. You feel the blackcurrant.”

Then, next to another barrel that bears the inscription Grand Echézeaux, he does the second of the seven tastings of grands crus we did in total. De Villaine then explains what it means for him to taste wine from a barrel.

- It is about comparing it with what it was like one month or even fifteen days ago, whether it has evolved, or if its color is clearer now. This is the way to assess its progress, to verify if there is a risk in the manner in which flavors are evolving.

What is important is to confirm that we are moving in the right direction. At this stage, the wine is not far from being bottled. It is already finished. It has a bouche ronde (no coarse sensation) and its aromas are delicate. Look, he says as if he were a teacher, these two wineries, Echézeaux and Grand Echézeaux are right next to each other and yet their wines are completely different. A Grand Echézeaux has more depth, more discreteness, a different type of tannin, and more subtleties.

Such is the value of these wines and so limited their production that, once tasted, all the wine that remains in the glass is returned to the barrel. Like a fisherman that returns his fish to the sea.

– How long should we wait before we can really appreciate a Romanée-Conti wine?

– We used to have an old distributor in England who had a very realistic theory: once the wine is fifteen years old, you can never go wrong. After that time, when opening the bottle the wine has reached a certain degree of ripeness.

– What wine would you like to take with you to a desert island?

– If it were still around I would take La Tâche ’62, a wine that I liked very much. But it no longer exists, so I would only take its memory with me, he says like someone who has lost the love of his life and has no other choice but to imaging her.

sta variedad es extremadamente delicada y produce algunos de los más finos y renombrados vinos del mundo. Si se la trata bien, si encuentra su lugar en el mundo –un clima moderado, con un largo período de maduración, sumado a suelos de arcillas y componentes calcáreos–, desarrolla quizás sus mejores versiones. En esa cadena de interacciones, esta cepa voluble y camaleónica juega con los enólogos, asustándolos con su fragilidad, donde cualquier error puede ser fatal, pero también sorprendiéndolos, de cuando en vez, con una elegante y atractiva personalidad.

Seriamente, no conozco a un periodista o sommelier que no responda “Pinot Noir” cuando se le pregunta por su cepa favorita.

Es imposible no caer rendidos ante sus aromas elocuentes y armoniosos, donde encontramos todo el espectro de los cherries (rojo, negro, dulce, ácido, amargo, salvaje), frambuesas y notas terrosas.

Con la guarda, también aparecen notas de trufa, charcutería, hojarasca y cuero, todo ello envuelto en una estructura delicada, pero firme. El Pinot Noir del terroir adecuado (seamos honestos, todos pensamos en Mâconnais o Côte d’Or) es balanceado, vívido y misterioso. Es una irrepetible (y contradictoria) mezcla de poder y fineza.

El Pinot Noir funciona con una gran variedad de comidas. Sin duda es la cepa más versátil y entretenida a la hora de los maridajes. ¿Por qué? Porque su cuerpo delicado armoniza con un gran espectro de proteínas y su bouquet se complementa con un impresionante abanico de sabores de las más disímiles cocinas del mundo. ¿Cuál es la razón, entonces, que sea tan desafiante? Porque, precisamente, esas mismas características permiten jugar con tantos ingredientes, que es muy fácil traicionar su fineza y distintiva personalidad.

PALETA CHILENA

No estoy segura que exista un estilo definido de Pinot Noir chileno. Y no me importa, honestamente. Quiero dejarlo así. Quiero seguir buscando nuevas caras, nuevas personalidades, nuevos rincones donde esta cepa pueda desarrollar sus mejores atributos.

Hoy el Pinot Noir entrega algunas interesantes facetas y estoy segura que mañana la cepa sorprenderá con una personalidad cada vez más fresca y atractiva. Pero hagamos foco en el presente. Los amantes del Pinot Noir pueden encontrar en Chile vinos delica-

The whims of Pinot Noir Pinot Noir breaks many rules. Some of its subtler versions are nice matches for fish and shellfish, while its bolder varieties are better served with heavy red meats.

Such a wide array of options may pose some difficulty when trying to choose the right pairing, but at the same time it is an irresistible challenge where Chile has a lot to say.

Pinot Noir is an extremely delicate variety that produces some of the world’s finest and most prestigious wines. If treated right and grown in the right place –a moderate climate with a long maturation period and a mixture of clay and calcareous soil– it reaches its most glorious versions. This voluble and chameleonic cultivar likes to play jokes on winemakers, scaring them with its frailty –any mistake may have fatal consequences– but also surprising them every now and then with its classy and attractive personality.

Seriously speaking, I do not know of any journalist or sommelier who does not answer “Pinot Noir” when asked about their favorite variety. It is simply impossible not to surrender to an eloquent and harmonious palette that contains the entire range of cherry aromas (red, black, sweet, tart, bitter, wild), raspberries and earthy notes.

Barrel aging also produces notes of truffle, charcuterie, forest litter and leather, all surrounded in a delicate yet firm structure. Pinot Noir from the right terroir (let us be honest, don’t we all think of Mâconnais or Côte d’Or) is a balanced, vivid and mysterious wine. It is a unique (and contradictory) mixture of power and finesse.

Pinot Noir is a good match for many different types of food. Without question, it is the most versatile and fun variety to pair with. The reason? Its delicate body harmonizes with a number of proteins and its bouquet works well with a wide gamut of flavors from the most varied countries of the world. Why is it so impertinent, then? Because precisely these same characteristics make it possible to play with a multitude of ingredients and therefore betray its finesse and distinctive personality.

A CHILEAN PALETTE I am not sure there is one defined style of Chilean Pinot Noir. And, frankly, I don’t really care. I just want it that way. I want to keep looking for new faces, new personalities and new places where the variety can develop its best attributes. Today, Pinot Noir delivers some interesting attributes and I am certain that tomorrow it will surprise us with an even fresher and fancier personality. But let us focus on the present. Pinot Noir lovers can find in Chile wines that are delicate and

El Pinot Noir funciona con una gran variedad de comidas. Mientras los vinos del Limarí armonizan muy bien con sushis, los del sur hacen lo suyo con un postre de chocolate amargo y guindas ácidas. dos y minerales en el Limarí, frutosos, florales y clásicos en Casablanca, vibrantes y poderosos en San Antonio, y firmes, estructurados y con un perfil aromático más salvaje en el sur de Chile, especialmente en Itata, Bío Bío y Malleco.

Las versiones más delicadas van muy bien con los pescados y mariscos. La regla esencial para un buen maridaje es que los pesos sean equivalentes. Mientras los vinos del Limarí armonizan muy bien con sushis, especialmente en sus versiones tempura, los de Casablanca requieren de pescados más grasos, como atún e incluso albacora. El viaje gastronómico por la costa chilena puede comenzar con un pescado grillado y un Pinot Noir de Casablanca, seguir con paella y una copa de San Antonio y terminar con un curanto en Chiloé en compañía de sus representantes más firmes y estructurados.

El tipo de proteína predominante y el nivel de grasa de la carne son cruciales antes de tomar cualquier decisión. Asimismo el método de cocción –desde pescados al vapor hasta ahumados–, las distintas salsas, toppings o especies que se utilicen en una receta. Es por eso que los vinos más corpulentos, como algunos del Maule costero, aguantan carnes rojas de vacuno, venado o preparaciones tan complejas como boeuf bourguignon o carnes de caza con reducciones de vino tinto.

Junto con el peso de la materia prima, ya sea carnes blancas o rojas, también hay que tomar en cuenta el poderío de las especias. Los sabores más complejos, intensos y profundos, como un pollo masala, pueden coquetear con los más estructurados exponentes de San Antonio. Por otro lado, los jugosos, y en ciertos casos más livianos vinos de Casablanca, van muy bien con las combinaciones semi especiadas de la cocina marroquí. También pienso en el clásico tajine d’agneau (o ragout de

mineral in Limari; floral and classic in Casablanca; vibrant and powerful in San Antonio; and firm, well-structured and with a wilder aromatic profile in the south of the country, especially Itata, Bio-Bío and Malleco.

The more delicate versions pair remarkably well with fish and shellfish. The rule of thumb for a successful combination is that the weights should be equivalent.

While Limarí wines go very well with sushi, especially tempura, Casablanca Pinots need a fattier kind of fish, like tuna or even albacore. A culinary journey along the Chilean coastline may begin with a grilled fish served with a Casablanca Pinot Noir, then continue with paella and a glass from San Antonio and end with a Chiloé curanto paired with firmer, more structured Pinots.

The type of predominant protein and the fat content of the meat play a crucial role in any decision. Also important are the method of cooking –from steamed to smoked– and the different sauces, toppings or spices used in the recipe. For that reason, more muscular wines like some from coastal Maule withstand red meats like beef, venison or preparations as complex as beef bourgignon or game meat with red wine reductions.

In addition to the weight of the basic ingredients, red or white meat, it is also important to consider the spice factor. Complex, intense and deeper aromas like a chicken masala may be accompanied with the more structured representatives from San Antonio. On the other hand,

the juicier and, in some cases, lighter wines from Casablanca go very well with the semi-spicy preparations of Moroccan cuisine. Here I think about the classic tajine d’agneau (or lamb ragout) and, why not, tabbouleh or couscous salad, which in Chile may be perfectly prepared by substituting quinoa for couscous.

Casablanca has earned a reputation as Chile’s main producer of Pinot Noir. Nobody can deny the elegance of its wines and, without question, some of the best examples are grown in this valley. At this point I would like to mention another key aspect to consider at the

En este lugar quisiera detenerme para hablar de otro de los aspectos cruciales a la hora realizar un maridaje: ¡la fruta! Sí, el Pinot Noir casablanquino hace gala de elocuentes notas de guindas y frambuesas.

Este carácter frutado aporta dulzor a una cepa que conocemos por su potente acidez. Nos empuja a abrir la mente y buscar recetas que combinen con salsas de cherries o grosellas. Permiso, cierro los ojos y pienso en un pato con salsa de arándanos ácidos. Los sabores dulces y ácidos serán abrazados con mucho placer y naturalidad por el Pinot Noir. En mi país, en Polonia, usualmente preparamos lomo de cerdo al horno con ciruelas y pasas. Ni les explico… Mejor dejémoslo hasta ahí. No me puedo concentrar con la sola idea de acompañar el plato con una copa de Pinot de Casablanca.

Como el Riesling y sus famosas notas de petróleo, el Pinot Noir desarrolla también sus particulares aromas cuando evoluciona en botella.

Ese carácter terroso, tan atractivo como particular, nos conecta directamente con las profundidades del bosque. Y tengo mi secreto para destacar esa faceta de la cepa: una ensalada de remolacha con un toque de ricota y una infaltable baguette. Con una copa de Pinot, es un sueño de una noche de verano.

En el caso del Carmenère, buscamos un compañero que refuerce su acidez, mientras que con el Pinot Noir optamos por el camino contrario. Si el vino es fresco y vibrante, como las mejores etiquetas de San Antonio, el truco es complementarlo con un toque cremoso que temple o amortigüe su acidez natural. La acidez de una salsa de tomates, por ejemplo, se quiebra con la dulzura de la lactosa y, si la condimentamos con un toque de pimienta negra, ¡voilá!, estamos listos para sentarnos frente a un plato de pasta y una copa de Pinot Noir.

La cepa no es demasiado amiga de los dulces, pero, como ustedes saben, soy una chocolate adicta, por lo tanto tengo la necesidad de extremar las cosas. Pienso en un Pinot Noir sureño con chocolate amargo y guindas ácidas. También pienso en esos vinos más complejos, donde encontramos aromas particulares como canela. Pienso en galletas de jengibre o en ravioles con camote y un toque de curry y canela. Y no nos olvidemos de los Pinot más antiguos, donde las notas terrosas se intensifican, maridando a las mil maravillas con platos del recetario vegetariano, como lentejas con arroz salvaje, obligadamente acompañadas con toda clase de setas.

Además de ser una cepa caprichosa en el viñedo y en la bodega, el Pinot Noir se comporta también como una prima ballerina a la hora de saltar a la mesa. La clave del éxito es entender sus aromas únicos y engañosa estructura, que es mucho más firme de lo que aparenta. Tienen que maridar el vino con un plato hecho a la medida. No es un comodín como muchos piensan. En términos generales, las armonías entre vino y comida es un asunto de balance. En el caso de Pinot Noir, en cambio, también es un desafío operático, donde en cada bocado, en cada sorbo, tenemos que sentir lo mejor de cada uno. t

time of pairing a wine: Fruit! Indeed, the Pinot Noir from Casablanca boasts eloquent notes of cherries and raspberries. This fruity character adds sweetness to a variety that is famous for its powerful acidity. It opens our minds and makes us look for recipes that combine with cherry or gooseberry-based sauces. For example, I close my eyes and think of duck in sour blueberry sauce.

The sweet and sour flavors will be embraced with utmost pleasure and natural fondness by Pinot Noir. In Poland, my homeland, we usually prepare roasted pork tenderloin with prunes and raisins. What a treat it is. I can barely concentrate with the idea of pairing this dish with a glass of Casablanca Pinot Noir.

Like Riesling and its well-known petroleum notes, Pinot Noir also develops its particular aromas when it has evolved in the bottle. This earthy character, as attractive as it is peculiar, connects us directly with the depths of the forest. And I have a little secret to highlight this side of the variety: a beetroot salad with a dash of ricotta and some baguette bread. With a glass of Pinot, this is just a summer night’s dream.

In the case of Carmenère, we look for a companion that reinforces its acidity, but with Pinot Noir we look for exactly the contrary. If the wine is fresh and vibrant like the best labels from San Antonio, the trick is to pair it with a creamy touch that curbs its natural acidity. The acidity of tomato sauce, for example, is brought down with the sweetness of lactose and, if we add a touch of black pepper, voilà! ready to sit at the table and enjoy some pasta with a glass of Pinot Noir.

This variety is not a good match for sweet flavors, but as you already know I am a chocolate addict, so I tend to push things to the limit. What I have in mind is a Pinot Noir from the south with some bitter chocolate and sour cherries. I also think of more complex wines that exude particular aromas like cinnamon. I imagine ginger cookies or ravioli filled with sweet potato paste and a touch of curry and cinnamon. And certainly let us not forget those older Pinots where their earthy tones dominate the scene, pairing perfectly well with vegetarian dishes like lentils with wild rice garnished with all kinds of mushrooms.

Besides being whimsical in the vineyard and the winery, Pinot Noir is also a prima ballerina during meal times.

The key to success is to understand its unique aromas and somehow misleading structure that is much firmer than what it seems. This wine needs to be paired with a custom-made dish. It is not the universal token many people think. Broadly speaking, pairing wine to food is a question of balance. In the case of Pinot Noir, however, it is also an operatic challenge where we must learn to appreciate what each bite and each sip have to offer. t

Descorchando Chile Cheers from Chile

Muchos recordarán la serie documental de doce capítulos que hace un par de años se exhibió en la TV abierta y en la que el cineasta chileno Silvio Caiozzi y el periodista inglés Olly Smith realizaban un recorrido por las principales viñas del país. A partir de esta serie, nació el libro Descorchando Chile, una edición de tapa dura, imágenes maravillosas y pocas letras, en un formato de “libro-objeto” perfecto para tenerlo en una mesa de centro de la casa u oficina y poder compartir una mirada extraordinariamente benevolente e idealista de la vitivinicultura chilena.

Tanto la serie como el libro son, en rigor, un spot publicitario del vino chileno, pero en formato “long play”. Con imágenes muy cuidadas y de gran calidad, más algunos extractos de los diálogos de la serie televisiva, la publicación logra dar una mirada hacia los vinos de nuestro país como pocos han podido hacerlo. Con una clara orientación hacia el público extranjero, es una excelente pieza de marketing de las viñas chilenas, pues incluye una breve descripción en español e inglés de cada una de las viñas que financiaron tanto la serie televisiva como el libro.

Y es en este contexto donde aparece el mérito de esta obra: ser una valiosa contribución en el posicionamiento en el extranjero de Chile como país productor de vinos.

Cabe destacar, sin embargo, que existen algunos pasajes interesantes más allá de las imágenes y descripciones idealizadas, donde algunos de los principales profesionales de la industria del vino entregan su visión respecto a temas como la historia de la implantación de las primeras cepas viníferas en nuestro territorio, las bondades de la geografía chilena para la elaboración de vinos, y la cualidad prefiloxérica, naturalmente orgánica y, en muchos sentidos, única de los viñedos chilenos.

Descorchando Chile está a la venta en las principales librerías del país a un precio que bordea los $36.000.

Perhaps some of you remember a 12-episode documentary series aired by a broadcast TV channel, hosted by the English wine expert Olly Smith and directed by the award-winning Chilean filmmaker Silvio Caiozzi, who toured the Chile’s main wineries. That documentary gave birth to “Cheers from Chile,” the book: a hardcover edition with wonderful pictures and little text, making it the perfect “book-object” to put impressively on your coffee table at home or on shelves at your office to share an extraordinarily kind and idealistic glance of Chilean viticulture.

Both the series and the book are, strictly speaking, an ad of Chilean wine, but in a “long-play” format. With very neat high-quality pictures plus some excerpts from the TV series’ dialogs, this book manages to look at our country’s wines as few have been able to do it. Clearly targeting foreign audiences, it is a remarkable piece of marketing for Chilean wineries, because it includes a brief abstract, in English and Spanish, of each and every one of the wineries that financed both the TV series and the book.

And, within this context, here lies the true accomplishment of this work: being a valuable contribution to position Chile abroad as a winemaking country.

It should be noted, however, that it depicts some interesting passages beyond idealized images and descriptions, where some of the main wine industry players offer their point of view on matters such as the history of the first vinifera variety implantation in our country, Chilean advantageous geography for winemaking, and the naturally organic, and in many ways unique, pre-phylloxera quality of Chilean vineyards.
