En busca del tiempo perdido Una de las más repetidas críticas a los vinos chilenos es la falta de una identidad definida y reconocible. Los departamentos de marketing trabajan para crear historias que envuelvan sus marcas, pero obviando muchas veces lo que ya existe, lo que nos ha constituido desde el comienzo de nuestra historia.

Sin escarbar demasiado en los libros, sólo con una somera mirada al presente, nos encontramos con vinos que rescatan tradiciones centenarias, con cepas muchas veces subvaloradas, pero que hoy son un tesoro para los consumidores curiosos, con valles que parecían olvidados, pero que guardan la identidad y los secretos fundacionales de la vitivinicultura chilena.

En el marco del encuentro gastronómico Ñam, la sommelier Macarena Lladser organizó una muestra de “Vinos ancestrales”, reuniendo a los productores de Viña Armidita (Pajarete), la familia Villalobos (Syrah silvestre de Lolol), Viña Tipaume (tinto biodinámico en ánfora), Clemente Urrutia (País de Villa Alegre), Lucía Torres (Moscatel del Itata), la familia De Martino (Carignan y

Cinsault del Itata), Tierras de Tomenelo (tintos de Cauquenes), Cacique Maravilla (Pipeño de Yumbel) y LouisAntoine Luyt (chichas y vinos de Uva Huasa).

La respuesta del público fue impresionante. La terraza se repletó de curiosos y fanáticos del vino, quienes pudieron degustar y compartir con los productores.

El éxito de esta iniciativa se suma a la reciente visita de cuatro periodistas extranjeros al valle del Itata. Romain Batya y LylianTurmes de Luxemburgo, y Eduardo Viotti y Marcel Miwa de Brasil, recorrieron las viñas de Entre Cordilleras y del Itata Profundo, quedando impresionados con ese otro Chile, esa viticultura fundacional y campesina, que no aparece en los brochures y muchas veces la “industria” esconde bajo la alfombra.

Estos vinos no sólo representan el pasado, sino paradójicamente son la respuesta más innovadora para aquellos consumidores que andan en busca de ese potente pero escaso ensamblaje compuesto de identidad, tradición y originalidad.

After five years, Movimiento de Viñateros Independientes - MOVI (Chile’s Movement for Independent Vintners), the association of small producers that raised the flag of winemaking on a human scale is consolidating the model of associativity, both in commercial and communication terms. Today, their wines account for 0.05% of Chilean sales abroad; yet, their contribution to building a closer and more diverse image for local winemaker has been immeasurable.

P

uede ser una poesía, pero también un puñado de garabatos inconexos y sin sentido. El Pinot Noir es una de las variedades más demandantes del mundo. Caprichosa, egocéntrica y susceptible. Desde la Borgoña, se ha desparramado por el mundo con suertes dispares, convirtiéndose en un dolor de cabeza para los productores, en una estrella de cine, en un mito, en una categoría que brilla en los documentos de los críticos, pero aún muy poco en el ranking de preferencias de los consumidores.

Después de la fiebre desatada por la cinta “Sideways” en EEUU, el Pinot Noir volvió a su reducto de siempre, alejado de los neones y la pachanga. Hizo un alto en el camino, respiró hondo y planeó sus próximos pasos. Lo suyo sin duda no son los blockbusters, sino esas cintas intimistas francesas que muchos dicen ver, incluso disfrutar, pero que en realidad apuntan a un segmento muy acotado.

Este minuto de introspección, esta suerte de descanso metafísico, ha posibilitado que la cepa regrese a sus raíces, a reencontrarse consigo misma, a mostrar la mejor de sus versiones. No sólo en Chile, sino en gran parte del llamado Nuevo Mundo, el Pinot Noir comienza a dejar atrás las mermeladas y confituras, los chocolates y vainillinas, para expresar una personalidad más elegante y delicada, más fresca y profunda.

Nunca será un fenómeno de masas. Va contra su propia naturaleza. Es demasiado quisquilloso. Muy sensible al exceso de sol, de agua, de estrés, de popularidad. Su vocación va por los bajos rendimientos y rentabilidades. A diferencia de un Syrah, e incluso de un Cabernet Sauvignon, es muy difícil hacer un Pinot Noir decente con más 10 toneladas de uva por hectárea.

Por eso siempre apunta a un nicho más alto y los comerciales deben hipnotizar a sus importadores para colocar sus vinos en los portafolios.

Si bien el Pinot Noir en Chile se ha consolidado en los valles costeros, principalmente en Casablanca y San Antonio, hoy son muchos los enólogos que buscan climas más continentales, donde no sólo pueda profundizar en su frescura, sino además desarrollar una arquitectura a prueba de temblores.

No se trata sólo de buscar las frambuesas, frutillas y guindas ácidas, bienvenidas sean, sino además nuevas capas aromáticas, estructuras y complejidades.

10 Pinot Noir with style!

The frenzy for this variety is over –it was about time–, which now leaves room for temperance and learning.

Things have changed since Pinot Noir irrupted into coastal valleys; growers now take their time ponder about the next move, try to understand its whims to make it more elegant and delicate, and to grant just Chilean identity not to betray its essence.

It can be true poetry or a pile of incoherent nonsense. Pinot Noir is one of the most demanding varieties in existence. Capricious, self-centered, impressionable. From Burgundy it has spread worldwide, turning into a headache for many winemakers, a motion picture celebrity, a myth, a category that shines in critics’ papers, but not so much in the ranking of consumer preferences.

After the craze unleashed by the film “Sideways” in the U.S., Pinot Noir went back to its stronghold, far from spotlights and loud music. It took a moment, a deep breath, and thought about what to do next. Pinot Noir is not blockbuster material. It’s thing are those French inward-looking films many claim to watch and even love but are actually for a very select target public.

That minute of introspection, that metaphysical break has allowed this variety to go back to its origins, to come to terms with itself and show the best in itself. Not only in Chile, but also in most of the New World countries, Pinot Noir starts to walk away from jams and marmalade, chocolate and vanilla, to express a more elegant, delicate, fresh, and deep personality.

It will never be a mass phenomenon. That’s against its own nature. It’s too picky for that. Too sensitive to too much sun, water, stress, popularity. Low yields and low profits are the name of the game for this variety. Unlike a Syrah or even a Cabernet Sauvignon, having a decent Pinot Noir yield over 10 tons per hectare is most unusual.

So, Pinot Noir aims at a higher-end niche and advertising must hypnotize importers for them to be willing to include these wines in their portfolios.

Although in Chile, Pinot Noir has made coastal valleys its home, like in Casablanca and San Antonio, many winemakers are seeking more continental climates to allow the variety to increase its freshness and develop a quake-proof architecture. It’s not only about looking for raspberries, strawberries and sour cherries, but new aromatic layers, structures and complexities.

Así se han sumado promisoriamente otros barrios costeros, como Fray Jorge (Limarí), Chilhué (Aconcagua) y Paredones (Colchagua), pero también nos entusiasma de sobremanera el sur profundo. En Perquenco, Traiguén, Ranco y aún en los suelos trumaos de Osorno, nada menos que rozando la latitud 40, el Pinot Noir proyecta un carácter firme y jugoso, donde se sienten las notas de sus bosques húmedos, donde el málico permanece incólume para sostener la elocuencia de sus frutos.

Hoy el Pinot Noir camina más seguro. Más suelto. Con más estilo.

Spring frosts are strong as well. It took time for vines to grow deep roots, but the wait was worth it. This sturdy Pinot Noir full of aromatic layers originates in a vineyard planted in Traiguén in 2004. Cherries and sour cherries lead the way but later allow a universe of flowers, herbs, and spices to take over. A wine of remarkable structure but with fine, visionary lines.

Arboleda Pinot Noir 2012

A sólo 12 kilómetros del mar, sobre suelos de pizarra, este novel Pinot Noir de Chilhué (Aconcagua Costa) muestra un auspicioso futuro. Fermentado con levaduras nativas, es un vino de gran expresión y complejidad aromática. Con frutillas, frambuesas, pétalos de rosas, sobre una capa de tierra húmeda y setas, va llenando la boca con mucha armonía y personalidad.

Only 12 km from the ocean, on slate soils, this Pinot Noir from Chilhué (Aconcagua Costa) has a very promising future. Fermented with native yeasts, this wine is filled with expression and aromatic complexity. It coats the palate with strawberries, raspberries, rose petals, and a layer of moist earth and mushrooms, all in great harmony and with great character.

Nadie del equipo enológico del Grupo Belén tomaba en serio estas uvas que circundan el centro de eventos de House Casa del Vino en Casablanca. Hasta ahora. CASILLERO DEL DIABLO ES LA SEGUNDA MARCA DE VINO MÁS ADMIRADA DEL MUNDO En el ranking realizado cada año por la revista inglesa Drinks International, la marca emblemática de Concha y Toro obtuvo el segundo lugar, después de la española Bodegas Torres, que en esta ocasión lideró la lista, después de haber ocupado durante los últimos tres años la segunda posición.

Casillero del Diablo aparece por primera vez en el ranking debido al cambio de metodología experimentado por el estudio este año, que optó por analizar específicamente marcas de vinos asociadas a un producto.

CASILLERO DEL DIABLO, THE SECOND MOST ADMIRED WINE BRAND IN THE WORLD. Casillero del Diablo, Concha y Toro’s flagship brand, claimed the second place in the ranking published every year by the British magazine Drinks International. Casillero was only outperformed by the Spanish Bodegas Torres, which had been in the second place for the past three years.

This is a first time for Casillero del Diablo and its joining the ranking originates in the change in methodology introduced in the study, which as of this year analyzes specifically wine brands associated to a product.

The third place was for Château Latour, followed by Tignanello and Penfolds. The other Chilean brands that made the ranking are Cono Sur (16th), Viña Leyda (35th), Undurraga (43rd), and Santa Rita (47th).

EL APASIONANTE LADO B DE LAPOSTOLLE

Comenzó sólo como un ejercicio didáctico.

Enseñar a sus consumidores sobre el comportamiento de una misma cepa en diferentes terruños. Sin embargo, los vinos despertaron tanto entusiasmo, que finalmente se convirtieron en una línea experimental y minimalista, que suma nuevos atributos a una viña que nos tiene acostumbrados a sus vinos maduros y voluptuosos.

La línea Collection, elaborada por la enóloga Andrea León, debutó con dos cepajes: Carmenère (Portezuelo, Apalta y Pumanque) y Syrah (Elqui, Casablanca, San Antonio, Maipo, Cachapoal y Apalta). Sin embargo, muy pronto debutarán otros integrantes, como Carignan (Melozal, Cauquenes y Empedrado), Mourvèdre (Apalta), Petit Verdot (Apalta), Grenache (Elqui o Caliboro) y, tal vez, Moscatel (Itata).

Elaborados a la antigua, sin más armas que una prensa vertical, bins y barricas viejas, estos vinos encantan por su honestidad, frescura y capacidad para reflejar sus distintos orígenes.

LAPOSTOLLE’S FASCINATING EXPERIMENT. It was originally conceived as a didactic exercise. Nothing other than teaching consumers about the behavior of the same variety in different terroirs. However, wines sparked so much enthusiasm that they eventually turned into an experimental, minimalistic line of their own that gains praising for a winery renowned for ripe, voluptuous wines.

The Collection line by winemaker Andrea León debuted with two varieties: Carmenère (Portezuelo, Apalta and Pumanque) and Syrah (Elqui, Casablanca, San Antonio, Maipo, Cachapoal and Apalta). Yet, others will soon join them, like Carignan (Melozal, Cauquenes, and Empedrado), Mourvèdre (Apalta), Petit Verdot (Apalta), Grenache (Elqui or Caliboro) and, perhaps, Muscat (Itata).

Crafted the old-fashioned way, armed merely with a vertical press, bins, and old barrels, these are honest and fresh wines capable of boasting their different origins.

Market sources claim that the holding made this decision to capitalize on the good financial moment the winery controlled by the Luksic family is experiencing considering, most of all, the high USD exchange rate levels. The proceeds of this operation are likely to be allocated to developing the holding and seeking new business opportunities, mostly the local agro-industry.

CASA DONOSO APUNTA ALTO CON SUS TINTOS MAULINOS

Desde que la sociedad encabezada por Jorge Selume adquiriera Casa Donoso hace cuatro años, una nueva estrategia comercial y enológica se puso en marcha. La bodega del Maule decidió retirarse del segmento de varietales para concentrarse en los vinos de alta gama, proyectando para 2017 una producción de 300 mil cajas a un precio promedio cercano a los US$ 50 por caja.

Su enólogo Felipe Ortiz, quien ya lleva siete vendimias en Casa Donoso, presentó una acotada degustación de sus tintos, pero que entrega ciertas luces sobre los próximos años de la viña: Clos Centenaire 2011 (pionera mezcla tinta vinificada por primera vez por Álvaro Espinoza y compuesta por Cabernet Sauvignon, Malbec, Carmenère y Cabernet Franc); 1810 Cabernet Sauvignon / Carmenère 2011 (una mezcla en partes iguales); Perla Negra Two (una firme y jugosa mezcla tinta de San Javier); y D 2009 (top de línea que proviene de los mejores suelos y cepajes tintos de La Oriental).

CASA DONOSO HAS GREAT EXPECTATIONS FOR ITS MAULEAN REDS. Since the company led by Jorge Selume purchased Casa Donoso four years ago, a new commercial and winemaking strategy was put to work. The Maule-based winery decided to withdraw from the varietal segment to focus on high-end wines. As such, the winery is projecting sales of 300K cases at an average price of USD 50.00 a case for 2017.

Felipe Ortiz, the winemaker who has been with Casa Donoso for the past seven harvests, offered a tasting of a very modest sample of their reds that however foretells what’s next for this winery: Clos Centenaire 2011 (a pioneering Cabernet Sauvignon/Malbec/ Carmenère/Cabernet Franc blend first crafted by Álvaro Espinoza; 1810 Cabernet Sauvignon / Carmenère 2011 (a 50/50 blend); Perla Negra Two (a firm, juicy red blend from San Javier); and D 2009 (top-of-the-line from the best terroirs and red stocks from La Oriental).

Beware of the Spanish Armada In recent years, French and Chilean wines have dominated the Korean market. In 2013, France was the largest supplier in value and Chile the largest in volume.

But the game is not over. Last year, Spanish exports soared by 40% while Chilean ones only grew by 18.5%.

However, while Spain attacks with very low prices, Chile has managed to consistently raise its average price, but still behind Australia, Italy, and the U.S. And the ball keeps rolling.

Con una población de 50 millones de habitantes y un ingreso per cápita de US$ 33.589 en 2013, Corea ocupa el lugar 16 entre las economías más importantes del mundo, según el ranking 2013 del Fondo Monetario Internacional. Esta entidad proyecta que este año el ingreso per cápita aumentará a US$ 34.700, una señal de cómo este país ha mantenido un dinámico crecimiento en las últimas décadas: en torno al 9% durante los 80, al 6% en los 90 y al 4% en la década del 2000. Asimismo, fue uno de los países que logró recuperarse más rápidamente de la crisis asiática de 2009.

Corea carece de materia prima, la cual tiene que importar para desarrollar tecnología, el principal motor de su economía y que marca tendencias en el mundo. Samsung, Hyundai, LG, SK Energy, Hanwha, Lotte son grandes conglomerados que inciden fuertemente en el ritmo de crecimiento del país en una economía abierta al mercado global. Sin ir más lejos, en 2003 firmó el primer Tratado de Libre Comercio y el país con que lo hizo fue Chile. El TLC significó un gran impulso para las exportaciones de diversos productos chilenos, entre ellos el vino.

If we take the 15 largest markets for Chile, the Republic of Korea is where Chilean wines have obtained the best average price, no less than USD 41.10 per case and significantly above the average attained last year for bottled wine, almost USD 30.00 per case.

With 50 million people and per capita income equivalent to USD 33,589 in 2013, Korea is ranked 16th among the most important world economies, according to the 2013 International Monetary Fund Ranking.

Moreover, the IMF projects that their per capita income will increase to USD 34,700 this year, a signal that the country has grown at a steady pace in the last few decades: Around 9% in the 1980s, 6% in the 1990s, and 4% in the 2000s. It was also one of the economies that recovered the fastest from the Asian crisis in 2009.

Korea lacks raw materials, so it relies on imports to develop technology, the main driver of its economy and a trend-maker around the world. Samsung, Hyundai, LG, SK Energy, Hanwha, Lotte are all large corporations that set the pace of the growth in an economy open to the world market. Interestingly, the first Free Trade Agreement Korea ever signed was the one executed with Chile in 2003. This FTA represented a major boost for the exports of a number of Chilean products, including wine.

UNA MIRADA A LOS CONSUMIDORES

El 81% de la población coreana vive en las principales zonas urbanas, particularmente el área de Seúl, la capital, que concentra alrededor del 50% de los habitantes. La segunda ciudad en importancia es Busán, con 5 millones de habitantes, donde se ubica el mayor puerto de Corea.

Las personas de 50 años y más constituyen un importante grupo de consumo, porque cuentan con más recursos y tienen la posibilidad de gastar más dinero en ellos mismos. En todo caso se registra a nivel general un creciente poder adquisitivo impulsado por el buen desempeño económico del país, el ingreso de la mujer al mundo laboral y la baja tasa de natalidad, factores que se traducen en un aumento del ingreso familiar y en un mayor gasto en productos asociados al lujo, ocio y recreación.

Otra tendencia en el consumo tiene que ver con la preocupación por la salud y verse bien. Por un lado, el segmento de mujeres jóvenes está tomando mucha importancia, pero también el acelerado envejecimiento de la población ha llevado a un incremento de la demanda de productos saludables y bienes de cuidado personal asociados a belleza y juventud. De este modo, las ventas de suplementos dietéticos, comida sana y productos orgánicos ha estado aumentando. Y en este sentido el vino no se ha visto afectado; todo lo contrario, ha encontrado parte de su mercado por el reconocimiento como bebida alcohólica 16 ▼ Vitis Magazine l marzo/abril 2014

increased demand for healthy products and consumer goods associated to beauty care and youth. Consequently, the sales of diet supplements, healthy food, and organic products are on the rise. In this sense, wine has not been spared. On the contrary, some of its market share corresponds to consumers who recognize it as a healthy alcoholic beverage, particularly female consumers.

Yet, demand for wine is still very shallow: Only 1% of alcoholic beverages in volume in 2012 (43% of the amount spent on alcohol corresponds to beer). One Vinexpo report states that annual per capita consumption of wine is a dismal 0.5 liter in Korea. In other words, the wine market is at the very early stages of development.

The largest consumers of wine are high-income urban residents, most of them young professionals between 30 and 40 years of age, as well as affluent consumers aged 50 to 60.

Koreans prefer red wine due to its highly publicized benefits for health. Over the first half of 2013, red varieties concentrated 72% of imports in value and 67% in volume.

However, local consumers appear to be increasingly more interested for whites and sparkling wines because of the pairing choices with their very spicy food. In particular,

Sin embargo, la demanda de vino es aún muy baja: en 2012 representó sólo el 1% de las ventas de bebidas alcohólicas en volumen (43% del gasto en alcohol corresponde a cerveza). Según un informe de Vinexpo, el consumo anual per cápita de los coreanos es de apenas 0,5 litros. En otras palabras, el mercado del vino está todavía en su fase inicial de desarrollo.

Los principales consumidores son residentes urbanos de altos ingresos, la mayoría de los cuales son profesionales jóvenes entre 30 y 40 años, y también personas entre 50 y 60 años con alto poder adquisitivo.

Los coreanos prefieren el vino tinto debido a los publicitados beneficios para la salud. Durante el primer semestre de 2013, las cepas tintas representaron el 72% de las importaciones en valor y el 67% en volumen. No obstante, están cada día más interesados en el vino blanco y en los espumosos, por el maridaje que se puede realizar con su comida muy condimentada. En particular, el vino espumoso ha mostrado el crecimiento más notable en los últimos años: en el primer semestre de 2013 concentró el 11,4% de las importaciones en valor, una cifra muy superior al 5,5% de 2008.

Las principales zonas de consumo de vino son los grandes centros urbanos (Seúl, Ulsan, Incheon, Busán), donde se concentran las cadenas de supermercados, tiendas de descuento, tiendas de conveniencia, restaurantes y, en general, los servicios de alimentos. Según fuentes del sector, más del 70% de las ventas se realiza en el off trade, en particular en los hipermercados. Los hoteles cinco estrellas y los restaurantes y bares de categoría son el canal de venta principal para los productos de alta gama.

No hay que olvidar, además, que para los coreanos la comodidad es un factor clave en la decisión de compra de productos y servicios.

sparklers have shown remarkable growth in the past few years. During the first half of 2013, sparklers concentrated 11.4% of imports in terms of value, with is consistently higher than the 5.5% posted in 2008.

The main areas of wine consumption are the large urban centers (Seoul, Ulsan, Incheon, and Busan), where all supermarket chains, discount outlets, convenience stores, restaurants and, in general, food services are located. Sector sources report that over 70% of sales take place in the off trade segment, particularly at hypermarkets. Upscale restaurants, bars, and 5-star hotels represent the main sales channel for high-end products.

It should be noted that convenience is a key factor in Koreans’ decision to buy goods and services. They have a hectic way of life (a common expression is ‘pali pali’, which means ‘fast, fast’) and devote many hours to work (Korea is the OECD country with the highest number of hours worked per person). This, added to the number of young professionals who live on their own and fondness for technology, explains the growing volume of online shopping.

CHILE AND ITS COMPETITORS Between 2001 and 2010, Korean imports of wine grew by 19.2% per year, on average. After reaching a record high of USD 167 million in 2008, they plunged to USD 112 million the following year due to the world financial crisis. Nevertheless, the country recovered swiftly and imports of wine have increased significantly since 2011. During the first half of 2013, imports amounted to USD 85.2 million, up 22% from same time the previous year, and 16.3 million liters (+28%).

CHILE Y LA COMPETENCIA

Entre los años 2001 y 2010, el crecimiento anual promedio de las importaciones coreanas de vino fue de 19,2%. Tras alcanzar un máximo en 2008 de US$ 167 millones, se redujeron drásticamente a $112 millones el año 2009 debido a la crisis financiera internacional. Sin embargo, el país se recuperó rápidamente y las compras de vino han mostrado un crecimiento importante desde 2011. Durante el primer semestre de 2013, las importaciones llegaron a US$ 85,2 millones, un 22% más que el mismo periodo del año anterior, y 16,3 millones de litros (+28%).

En los últimos años, los vinos franceses y chilenos han sido los que dominan el mercado. En 2013, Francia fue el principal proveedor en valor y Chile, en volumen. El éxito de los vinos chilenos se explica por la ventaja competitiva que les significó la exención de arancel a partir del año 2009 gracias al TLC, combinada con exitosas campañas de marketing que le permitieron posicionarse muy bien entre los coreanos, especialmente como proveedor de vinos de buena relación calidad/precio.

Sin embargo, esta ventaja ya no es tal. En julio de 2011 entró en vigencia el TLC de Corea con la Unión Europa y un año después el TLC con EEUU, situación que puso en igualdad de condiciones arancelarias a los vinos de Chile, Francia, Italia, España y EEUU, los cinco principales proveedores.

De todos modos, Chile sigue siendo una fuerte competencia para los otros países, en particular en el nivel de entrada y en los vinos tintos, que es donde se concentra la demanda por los productos nacionales. Un desafío en este sentido es posicionarse con más fuerza con blancos y espumosos.

Además, hay prestar atención al gran crecimiento experimentado por los vinos españoles, el que, según diversos informes, se debe a la búsqueda de los consumidores de vinos a bajos precios en un escenario de estancamiento de la economía. Una muestra: las exportaciones de vino español crecieron 40% entre enero y septiembre 2013 (US$ 10,2 millones), mientras que las de EEUU aumentaron 22,4% y las de Chile, 18,5% en el mismo período. En el caso de Chile, cerró el año incluso con un crecimiento un poco menor: 16,3% en valor (US$ 33,5 millones) y 13,8% en volumen (7,3 millones de litros).

Una barrera que impide un mayor crecimiento del mercado del vino en Corea es el alto costo de distribución y las fuertes tasas impositivas (10% de IVA, 30% de impuesto al licor y 10% de impuesto a la educación), que hacen que este producto prácticamente duplique su valor de importación en los supermercados. A modo de ejemplo, una botella importada en US$ 10 se vende entre US$ 19 y US$ 28 en los hipermercados, entre US$ 24 y US$ 31 en las tiendas de licores, y entre US$ 29 y US$ 63 en los restaurantes de hoteles de lujo.

Si bien Chile goza de una buena posición en este lejano mercado, la arremetida de los vinos españoles demuestra que los coreanos están dispuestos a probar vinos de distintos orígenes cuando los precios son atractivos. La tarea es no perder participación de mercado y seguir aumentando los precios, que aún están en promedio por debajo de Australia, Italia y EEUU. t 20 ▼ Vitis Magazine l marzo/abril 2014

dominated the Korean market. In 2013, France was the largest supplier in value and Chile the largest in volume.

The good results obtained by Chilean wines are explained by the competitive edge that resulted from the tariff exemption in effect since 2009 due to the FTA, plus successful marketing campaigns that positioned our products very well among Koreans, especially as good value for money suppliers.

However, others now enjoy the same advantage. FTAs between Korea and the European Union and the U.S. entered into force in 2011 and 2012, respectively, and put the wines from the 5 largest exporters –Chile, France, Italy, Spain and the U.S.– on equal terms tariff-wise.

In any case, Chile remains a strong competitor for the other countries, particularly at entry level and regarding red wines, the two segments that concentrate demand for our products. In this sense, a challenge would be reinforcing the positioning of white and sparkling wines.

In addition, the large growth experienced by Spanish wines warrants attention, since some reports claim such good performance originates in the fact that Spain focused on value wine consumers in a sluggish economy. The exports of wine from Spain soared by 40% between January and September 2013 (USD 10.2 million), while those from the U.S. rose by 22.4% and Chilean wines grew by 18.5% over the same period. On annual terms, Chile closed 2013 with a slightly smaller growth, i.e., 16.3% in value (USD 33.5 million) and 13.8% in volume (7.3 million liters).

A barrier to greater growth of the wine market in Korea is the high cost of distribution and the high local taxes (10% VAT, 30% tax on alcoholic beverages and 10% tax on education), which causes the price of sale at supermarkets to be almost twice as high as the import price. As an example, a bottle imported for USD 10.00 is sold between USD 19.00 and USD 28.00 at hypermarkets, between USD 24.00 and USD 31.00 at liquor stores, and between USD 29.00 and USD 63.00 at upscale hotel restaurants.

While Chile is well positioned in this far market, the advance by Spanish wines proves that Korean consumers are prepared to taste wines from different origins if prices are attractive. The task at hand is not to lose market share while continue to raise prices, which are still below the prices of Australia, Italy and the U.S. t

uando Rodrigo Barría

estudiaba agronomía en la Universidad de Talca, su hermano Claudio ya tenía canas y reconocimientos. Quizás por eso decidió ir por un camino distinto. “Sólo puede haber un famoso en la familia”, se ríe. Trabajó en una planta de congelados de berries por varios años, pero pasaba el tiempo y necesitaba titularse. Una vez colgado el cartón en la pared de su pieza, deambuló por varias pegas, como profesor de una escuela agrícola, contratista y administrador del Fundo Santa Inés en Sagrada Familia –Viña Inés Escobar–, donde estuvo dos años rodeado de viñas, perales, manzanos, kiwis, caballos y chanchos. Ahí le picó el bichito. En enero de 2001 se entrevistó con Aurelio Montes y se quedó en Viña Montes en una etapa crucial, decisiva y demandante, cuando iniciaban las plantaciones en las laderas de Finca de Apalta y adquirían el fundo El Arcángel de Marchigüe.

“VSP systems are doomed”

In order to prevent excess sunlight and droughts, this viticulturist invites us to rethink vineyard management and training systems. In fact, Viña Montes has successfully implemented a plan for the obtainment of healthier, more balanced grapes. A true viticultural revolution without recipes or dogmatic principles that is gaining more and more supporters every day.

When Rodrigo Barría was a student of agricultural engineering at Universidad de Talca, his brother Claudio had already grown some gray hair and earned a solid reputation. Maybe that is why he decided to walk in a different direction. “There is room for just one celebrity in the family”, he jokes. He worked at a frozen berries plant for several years, but the clock was ticking and pressing him to get his degree. With the diploma on the wall, he went through different jobs such as teacher at an agricultural school, contractor and administrator of the Santa Inés estate in Sagrada Familia –Viña Inés Escobar–, where he spent two years surrounded by grapevines, pear, apple and kiwi trees, horses and pigs. That is when his curiosity awakened. In January 2001 he had an interview with Aurelio Montes and joined Viña Montes at a crucial, decisive and very demanding moment: the

-Tanto en Inés Escobar como en Montes, nos asesoraba Eduardo Silva. Él es un muy buen profesor. Fue un gran guía.

Rodrigo es mateo como ninguno, de ésos que tienen libros de fisiología de la vid en el baño en lugar de revistas cochinas. No se queda de brazos cruzados. Siempre está estudiando y buscando nuevas soluciones vitícolas. “Es súper necesario estar estudiando todo el tiempo. Hoy hay muy buenos viticultores en Chile, pero echo de menos algo en las nuevas generaciones. Falta el espíritu de investigación, de intentar ser siempre mejores. Se quedan con lo que les dicen y no van por más, en una etapa de la viticultura chilena muy entretenida, cuando todavía está todo por hacer”, dice.

–¿Cómo es el nivel de nuestros viticultores respecto de la competencia?

–Tenemos un súper buen nivel, pero en Sudáfrica y Australia comenzaron antes con sus tecnologías, a tenerlas y utilizarlas. En Chile hay un grupo que investiga más, pero falta mucho. Hay otro grupo importante de viticultores que son buenos administradores, pero muy malos desarrolladores.

–¿Y comparado con Argentina?

–En Argentina hay de todo (sonríe). Tienen eventos traumáticos, como los granizos, pero en general la viticultura es más fácil. Tal vez por eso necesitan trabajar menos...

– So you did not have much time to adapt to the new job. What was it like to suddenly find yourself playing in the major leagues?

– Both at Inés Escobar and Montes we had the advice of Eduardo Silva. He is a really good teacher, a great mentor.

Rodrigo takes his job very seriously, so much so that he keeps books on grape physiology in the bathroom instead of adult magazines. You will never see him turning around doing nothing. He is always studying, looking for new viticultural solutions. “I need to be studying all the time. Today there are very good viticulturists in Chile, but there is something I miss in the new generations. They do not have a research-oriented spirit, the urge to be better and better each day. They content themselves with whatever they are told and don’t feel the need to go beyond, especially at such an interesting time for Chilean viticulture, when there is still so much to be done,” he says.

– How do our viticulturalists measure against the competition?

– We have a very good level, but in South Africa and Australia they started earlier with their technologies. In Chile we have a group that does a lot of research, but

– And compared to Argentina?

– (Smiling) In Argentina there is a bit of everything.

They have their share of traumatic events such as hail, but in general being a viticulturalist there is easier. Maybe that is why they need to work less…

LETTING LOOSE According to Mr Barría, the great leap forward in Chilean viticulture is a recent event. Starting in 1994, a number of problems related to solar radiation began to affect the vineyard: the fruit started to burn. Apparently, this phenomenon caused by global warming is here to stay

A SOLTAR LAS AMARRAS

De acuerdo con Rodrigo, la viticultura chilena experimentó un gran vuelco en los últimos años. A partir de 1994, comenzaron a producirse problemas por la fuerte irradiación solar. La fruta comenzó a quemarse. Este fenómeno, que al parecer llegó para quedarse debido al calentamiento global, obligó a los viticultores a cuestionar sus recetas.

La espaldera de libro, ésa de 1,20 metros y con pocos brotes por planta, ya no parecía ser el sistema de conducción adecuado para la nueva realidad chilena.

–Un racimo por brote es muy lindo, pero al mismo tiempo queda la fruta demasiado desprotegida –sostiene.

Implementaron en la viña mallas antigranizo y raschel –esta última confiere menos sombra, pero es más resistente–, aumentaron el vigor de las plantas y dejaron el follaje abierto por el lado del sol de la tarde.

Hicieron de todo para enfrentar las embestidas del sol. Después de dos años de evaluación, en los cuales lograron buenos resultados con la raschel al 35%, finalmente decidieron tomar un camino distinto, más natural y económico: dejar que el follaje hiciera el trabajo.

–Había que salir de las espalderas aplanadas y dejar el follaje algo más suelto –dice.

Viña Ventisquero ya había implementado este concepto en Peralillo, pero Rodrigo quiso llevarlo aún más lejos y aplicarlo a la producción de vinos de alta gama. Comenzaron con 5 hectáreas y hoy todos sus campos –excepto los viñedos de Syrah– tienen un sistema de conducción de canopia libre o semilibre, dejando, en este último caso, sólo un alambre en la base para apretar el follaje y permitir que pase la máquina de trocha angosta.

–Hoy prácticamente no usamos alambre. Hacemos una poda mínima, pero muy bien chapodada para impedir que los brotes caigan al suelo. Regulamos la carga con la poda. Dejamos chupones en los cordones de pitones y eso nos ayuda con el sombreamiento. Así llega luz, pero difusa. La hoja no se pone amarilla, como pasa con la espaldera, y evitamos los golpes de sol. La viña es como un seto –explica.

–¿Por qué con la Syrah continúan utilizando espaldera?

–La Syrah tiene los entrenudos más largos y tiende a tener menos hojas. Es menos erecto el brote, por lo tanto cuesta más. Hemos hecho los ensayos, pero la verdad es que aún no nos convence. Cuesta más llegar a una madurez óptima.

–¿Y qué otros sistemas de conducción podrían funcionar en Chile? Porque en las laderas de Apalta también utilizan un sistema sin alambre para las nuevas plantaciones de Mourvèdre y Grenache.

and has forced viticulturists to question established recipes. The 1.2 meter vertical positioning system with few shoots per plant we find in books seems to no longer adapt to the Chilean reality.

–Having one cluster per shoot is certainly a pretty thing, but it leaves the fruit unprotected– he says.

So at the winery they experimented with anti-hail and wind-breaking netting –the latter offers less shade but is more resistant–, increasing plant vigor, and some leafing on the evening sun side. They did everything in their hands to protect grapes from the scorching sun. After two years of good results with 35% wind-breaking netting, they finally decided to use a different, more economical and natural method: letting the leaves do the job.

– We just had to abandon tight vertical positioning and leave the canopy a bit looser, he says.

Viña Ventisquero had already implemented such a concept in Peralillo, but Rodrigo wanted to push it even harder and apply it to the production of high-end wines.

So they began with 5 hectares, and today all vineyards except Syrah have a free or semi-free canopy training system. In the latter case, only one catching wire is left at the base to tighten the leaves and allow the narrowgauge machine to pass.

– Today, we barely use any wires. We prune very lightly but concentrate on green shoots to prevent new shoots from falling to the ground. We regulate fruit load with pruning and leave suckers in spur cordons to help with shading. So the grapes receive dappled light. Leaves do not turn yellow as in VSP and we prevent sun strokes.

Grapevines are like shrubs – he explains.

– Why do you continue using VSP with Syrah?

– Syrah has longer inter-nodes and tends to produce fewer leaves. The shoot is less upright, so the entire thing is more difficult. We have actually tested it, but we are still not fully convinced. It is harder to achieve optimum ripening.

– And what other training systems could work in Chile? Because in the foothills of Apalta they also use a wireless system for new Mourvèdre and Grenache plantations.

– Mourvèdre, for instance, is intertwined around a pole and tied. Now, if I had to do it again, I would not use

the pole. I would head-train the vine and prune it during the green growth. Before, we had no idea that the plant would support itself. But that is part of our learning. The system works fairly well but cannot be mechanized. It is a

rramos. Ahora, si lo hiciera de nuevo, no utilizaría el poste. Haría un sistema de cabeza chapodada. Antes no sabíamos que la planta se iba a autosostener. Es parte del aprendizaje, claro. Este sistema funciona bastante bien, pero no se puede mecanizar. Es ideal para los viñedos de secano.

–¿Y cómo lograron aplicar estos cambios sin afectar el estilo de los vinos?

–Había que encontrar un equilibrio distinto. Al dejar más brotes por planta, el balance cambia. Tienes que encontrar un número de producción nuevo.

–¿Ha mejorado la calidad de las uvas?

–Ha mejorado la calidad en términos de estructura.

–¿Y se logra una mejor relación azúcar/acidez?

–La forma de obtener menos alcohol es dejar más carga, pero esto va en contra de la potencia. Lo que hacemos es cosechar más temprano. Antes esperábamos y esperábamos. Hoy logramos otra madurez y, con una enología más suave, estamos logrando mucho mejor fruta y haciendo vinos más equilibrados.

–Aunque los alcoholes probables no varíen significativamente, me imagino que sí logras una mayor acidez.

-Las uvas tienen mejor acidez. Un mejor balance en términos generales. No se degradan el color ni los aromas.

VITICULTURA DE LA ESCASEZ

–Y también está el factor de la falta de agua, especialmente en Marchigüe, lo que ha impedido el desarrollo de nuevos proyectos…

–Durante estos últimos años hemos hecho muchos ensayos hídricos en nuestros cuarteles, desde cero riego a un riego normal. Hoy hay sectores que no regamos y los resultados han sido muy buenos.

–Me imagino que la receta es regar más profundo para que las raíces puedan explorar en el suelo.

–-Exactamente. Si el suelo es más arenoso, aumentamos la frecuencia. Si es más arcilloso, y existe mayor retención de agua, lo podemos hacer mucho más espaciado. Al regar menos, logramos mejor concentración, pero también obtenemos menor producción. Esto lo puedes hacer con viñas para segmentos más altos. Pero, en general, en todos los cuarteles buscamos el máximo potencial. La idea es siempre ir escalando en puntajes de calidad. Si en un sector nos equivocamos con la variedad, simplemente la cambiamos. Hoy sabemos más. Hace 10 años no había experiencia.

–¿Y me imagino que también hay un impacto en la calidad?

–Con estos manejos hídricos, aumentamos el estrés. La uva se defiende y forma una piel más gruesa. Así conseguimos mejor color y fenoles.

–¿Y qué pasará con la tradicional espaldera en Chile?

–La espaldera va a la muerte.

–¿Así de tajante?

–Sí.

–Ahora quizás sea la hora de la canopia abierta, pero quién sabe lo que vendrá mañana…

–Claro que sí (se ríe). Nos faltan como 450 años de aprendizaje. t

– And how could you apply these changes without affecting the wine style?

- We had to look for a different type of balance. If you leave more shoots per plant the balance changes. You have to work your production numbers again.

– Has grape quality improved?

– The structure has improved.

– And do you have a better sugar-to-acidity rate?

– The way to obtain less alcohol is to leave more fruit, but that goes against power. What we do is harvest earlier on. We used to wait and wait and wait. But now we achieve a different type of ripeness and, thanks to a gentler winemaking treatment, we obtain much better fruit and the wines are more balanced.

– Even if probable alcohol does not vary significantly, I imagine you do achieve greater acidity.

– Grapes have better acidity. We get better overall balance. Color and aromas do not lose their intensity.

A VITICULTURE OF SCARCITY – And you also have the water shortage factor, especially in Marchigüe, which has discouraged the development of new projects…

– We have conducted a lot of water tests in our parcels in recent years, from zero to normal irrigation. Today, some lots are not irrigated and results are quite good.

– I imagine the recipe is to deep irrigate so that roots can explore into the soil.

– That’s exactly right. If the soil is sandier, we increase the frequency. If there is more clay and therefore more water retention, we irrigate less often. By providing less water, we achieve greater concentration, but also decrease production. This you can do in wineries for higher segments but in general, we try to achieve the greatest potential in all our lots. The idea is to move up the quality score ladder. If in a certain lot we plant the wrong variety, we simply change it. Today we definitely know more. 10 years ago we lacked the experience.

– And I imagine there is also an impact on quality?

– With this irrigation scheme we increase stress. The grape defends itself by thickening its skin. And we obtain better color and phenols.

– What will happen with traditional VSP in Chile?

– VSP systems are doomed.

– As simple as that?

– As simple as that.

– So maybe now is the time for open canopy, but who knows what tomorrow may bring…

– Of course (laughing). We still need another 450 years of learning. t

Desde el año 2006 en Viña Montes están trabajando con fuerza en proyectos de Investigación y Desarrollo en el área vitícola, orientados a obtener uvas de mayor calidad, con fuerte énfasis en la optimización del uso del agua y en cómo enfrentar de mejor manera la mayor irradiación solar a la que está expuesta la fruta.

LOS PROYECTOS DE MONTES

TERROIR. El primero de estos proyectos tuvo que ver con el estudio del terroir, para lo cual mapearon los fundos de Apalta y Marchigüe, identificando siete tipos de suelo. Primer paso para determinar cómo manejar mejor cada variedad en cada uno de los cuarteles.

USO DE AGUA. El segundo proyecto realizado en 2009 se enfocó en la optimización del uso del agua y para ello se hicieron tres estudios. El primero fue sobre el uso de cubiertas sobre hileras. Dejaron una zona testigo sin cubierta, otra con una malla cubresuelo de polipropileno de uso común en arándanos, otra con sanagel (un gel que retiene agua) y una cuarta con corteza de pino. Con esta última cubierta se logró un ahorro de agua del 19% en promedio. Esto significa que en una superficie de 10 hectáreas, se ahorraron 4.400 m3 de agua.

El segundo estudio estuvo relacionado con la densidad de plantación en un cuartel de Cabernet Sauvignon de Marchigüe. Como resultado, la plantación de baja densidad (3x1) requirió en promedio un 41% más de agua que la de alta densidad (1,5x1). El hecho que el tratamiento de alta densidad presente un menor consumo de agua que el de baja densidad, se debe a una mayor superficie foliar expuesta a la evapotranspiración, radiación y viento. La razón es que este último fue manejado con sistema de canopia abierta, manteniendo la producción por hectárea.

Por último, se instalaron bandejas de evapotranspiración a orillas de un tranque, las que se cubrieron con mallas de sombreamiento, unas sobre el borde de las bandejas y otras al ras. Con las primeras hubo un ahorro de agua de 33% y con las segundas de 62% en relación a las bandejas sin cubierta. Si se considera que en la temporada 2012-2013, hubo una pérdida de 205.000 m3 de agua por efecto de la evaporación en las 20,5 hectáreas de tranques, el uso de mallas permitiría evitar la pérdida de 127.100 m3 de agua.

one because there is a larger leaf area exposed to evapotranspiration, radiation and wind. The reason is that the low density treatment was managed in open canopy, maintaining the level of production per hectare.

Finally, a number of evaporation pans were installed next to a reservoir and covered with shading netting, some raised and others flush with the pan rim. The first and second groups recorded water savings of 33% and 62% respectively compared with uncovered pans. Considering that water losses due to evaporation reached a staggering 205,000 cubic meters during the 2012-2013 season in the 20.5 hectares of reservoirs, the use of protective netting may prevent the loss of 127,100 cubic meters of water.

RIEGO. El año 2011 se hicieron también varios ensayos de riego, sometiendo a las plantas a distintos niveles de irrigación, desde cero a un riego normal. Los resultaron demostraron que con menor suministro de agua se logra mayor contenido de fenoles, antocianos y taninos –y por tanto, mejor calidad de la uva (que se refleja en la degustación)–, pero también una menor producción. Gracias a estos ensayos, hoy en algunos sectores sencillamente no se riega.

IRRIGATION. In 2011, several irrigation tests were conducted, testing the plants at different levels of irrigation, from zero to normal. Results showed that less irrigation increases phenol, anthocyanin and tannin levels, thereby improving grape quality (confirmed through tasting) but reducing production. Thanks to these tests, some sectors are simply not irrigated or not.

MANEJO DE FOLLAJE. En 2013 se llevó a cabo un tercer proyecto relacionado con el manejo agronómico. La primera variable a estudiar fue la altura de canopia. Se trabajó con distintas alturas de brote: 60, 80 y 110 cm. En las hileras de canopia corta (80 cm), disminuyó en un 13% el consumo de agua, mientras que el grado alcohólico bajó a 13,9. Con menos agua y área foliar, el rendimiento se mantiene y se consigue un equilibrio mayor entre la madurez fenólica y la acumulación de azúcar.

CANOPY MANAGEMENT. A third project related to agricultural management was conducted in 2013. The first variable studied was canopy height. The study included several shoot lengths: 60, 80 and 110 cm. In low canopy rows (80 cm), water consumption went down 13% and alcohol dropped to 13.9. With less water and leaf area, yields are maintained and greater balance is achieved between phenolic ripeness and sugar accumulation.

También se evaluó el sistema de conducción, comparando una espaldera tradicional con una hilera con canopia abierta en un cuartel de Cabernet Sauvignon en Apalta. Los resultados han sido tan satisfactorios (ver cuadro de análisis de vino), que hoy todos sus campos –excepto los viñedos de Syrah– tienen un sistema de conducción de canopia libre o semilibre, es decir prácticamente no usan alambres, se hace con poda normal para controlar carga y sin desbrota en el cordón frutal.

Con esto se consiguen racimos semi sombreados, sin daño por sol y sin hojas parásitas por exceso de sombra, como ocurre en las espalderas tradicionales, desarrollando un sistema más eficiente y sano para la planta y fruta de alta calidad.

The training system was also evaluated, comparing traditional VSP with an open canopy row in a Cabernet Sauvignon lot in Apalta. Hoy sus vinos representan alrededor del 0,05% de las ventas chilenas en el exterior, pero su aporte a la construcción de una imagen más cercana y diversa de la vitivinicultura nacional ha sido inconmensurable.

im Marcus, el crítico de Wine Spectator, se despide uno a uno de los enólogos colchagüinos, luego de una concurrida y amena cata en la elegante bodega Clos Apalta. Detrás de una camioneta, rápidamente se cambia de ropa. Mucho más ligero, vistiendo unos relajados pantalones cortos y sandalias, parte rumbo al sur a reunirse con el Movimiento de Viñateros Independientes (MOVI), ante la mirada de preocupación de algunos representantes de Wines of Chile, quienes se preguntan dónde dormirá este hombre que, con la despótica escala de 100 puntos, puede levantar o dejar caer a los vinos chilenos.

Estas dos realidades, estos dos Chiles, como los desmembró el británico Neal Martin, ya han convivido durante cinco años, desde que un grupo de 12 pequeños productores, la mayoría de ellos enólogos, decidiera fundar su propio movimiento, alejándose lo más posible de lo que ellos llamaron una “industria cómoda, despersonalizada y tecnologizada”.

Esta declaración de principios, o derechamente de guerra, levantó una polvareda infernal que aún está lejos de disiparse.

No sólo molestó al establishment vitivinícola por gritar a los mil vientos una sentencia que muchos murmuraban o discutían en privado –los trapos sucios se lavan en casa, es una de nuestras máximas–, sino además sacudió a un sector monolítico y orgulloso de haber fundido, después de muchos años, las asociaciones de Vinos de Chile y Chilevid.

Si bien los outsiders siempre convocan la simpatía de las masas, al interior de la industria, como nos empeñamos en seguir nombrándola, sólo despertaron suspicacias. Los dirigentes de MOVI estaban en una encrucijada: se alineaban con Vinos de Chile o profundizaban en sus diferencias. “En un primer momento, es verdad, quisimos distinguirnos de la industria para poder darnos a conocer. Eso fue durante los dos primeros años. Muchos se molestaron porque no usábamos pantalones caqui y camisa celeste”, se ríe Felipe García, director de MOVI y propietario de García Schwaderer.

MOVI’s after-hour party After five years, Movimiento de Viñateros Independientes - MOVI (Chile’s Movement for Independent Vintners), the association of small producers that raised the flag of winemaking on a human scale is consolidating the model of associativity, both in commercial and communication terms.

Today, their wines account for 0.05% of Chilean sales abroad; yet, their contribution to building a closer and more diverse image for local winemaker has been immeasurable.

Kim Marcus, Wine Spectator critic, bids farewell to one of the winemakers from Colchagua after a lively and interesting wine tasting at Clos Apalta’s elegant winery.

He jumps into the back of a truck and swiftly changes clothes. In more comfortable attire –shorts and sandals– he takes off to meet with Movimiento de Viñateros Independientes (MOVI), leaving behind a few concerned representatives of Wines of Chile who are wondering where ‘the man of the despotic 100-point scale that can cause Chilean wines to thrive or die’ will spend the night.

These two realities, these two Chiles, as the British Neal Martin called them, have co-existed for 5 years, since a group of 12 small producers, most of them winemakers, decided to start their own movement, as far as possible from what they called a “slack, depersonalized, and technologized industry.”

This declaration of principles, or I should say war, caused so much turmoil that it still lasts. Not only did MOVI irritate the winemaking establishment when it dared to shout from the rooftops something many people would only mutter or discuss in private –you don’t air your dirty laundry in public, that’s one of our mottos–, but it also shook the monolithic, proud sector that so long ago merged Wines of Chile and Chilevid.

Although outsiders always win the sympathies of the masses, inside the industry as we insist on calling it, they only awakened suspicion. MOVI leaders were at a crossroads: Either they aligned with Wines of Chile or

Este movimiento, que levantó la bandera de los vinos a escala humana, supo reactualizar con éxito el mito de David y Goliath, probar que el camino de la asociatividad es posible e instalar el nombre de sus vinos en el imaginario de la crítica local e internacional. “Fuimos ingenuos con el discurso. Su impacto fue enorme. No pensamos que se generaría tanto ruido. Existió, y aún existe, un miedo injustificado de una industria tradicional, que generó una imagen de nosotros que no corresponde, como de activistas que andamos con spray rayando cubas. Nosotros no estamos contra la industria. Estamos construyendo sobre lo que ha hecho ella durante décadas. Simplemente nos paramos en los hombros de un gigante. Queremos trabajar con Wines of Chile. No tirarle piedras.

Nos interesa más Chile que nuestros vinos”, sostiene Sven Bruchfeld, enólogo y socio de Polkura.

Para Bruchfeld, ambas estructuras pueden convivir en forma paralela y potenciarse unas a otras. Sin embargo, el problema, según su visión, está radicado en los bandos medios de las viñas. “Puede que les interese el futuro de Chile como categoría, pero están más preocupados de los resultados a corto plazo”, afirma. Este apremio, esta presión por la venta, los hace mirar con sospecha cada vez que los Kim Marcus se cambian de ropa y arrancan con rumbo desconocido.

Pero después de un lustro desde su fundación, MOVI tiene un discurso más propositivo y conciliador. Esta imagen de los desordenados del curso, de revoltosos y contestatarios, dio paso a una asociación gremial con todas sus letras, con una consolidada estructura comercial y de marketing, que ya no se siente remando contra la corriente, sino como un estamento más que aporta a la diversidad de una industria que necesita con urgencia un nuevo impulso para posicionarse de mejor forma en los mercados internacionales.

“MOVI está abierto a trabajar con quien sea. Queremos contribuir a hacer crecer el comercio chileno. Obviamente muchos han hablado mal de nosotros con la esperanza de que su falsedad sería aceptada como un hecho, pero la verdad es que no hemos sido negativos. Lo único que hemos hecho ha sido ayudar. El problema es que algunos piensan que cuando nos esforzamos por ganarnos un espacio, se lo estamos robando a otros. Y eso no es verdad. Cualquiera diría que todavía creen en la teoría de la suma cero (es decir, que la botella que la viña A vende, es la botella que la viña B deja de vender). they widened divisions. “It’s true that at first we wanted to address the industry to get them to know us. That was the first two years. Many were mad because we would not be dressed khakis and a light blue shirt,” laughs Felipe García, director of MOVI and owner of García Schwaderer.

This movement that raised the flag of wine production on a human scale succeeded in updating the myth of David and Goliath, in proving that associativity is possible, and in fixing the name of their wines in the minds of local and international critics. “We were candid with our speech. It had enormous impact. We never thought we would raise havoc. There was and there still is unjustified fear from a traditional industry that generated an image of us that is not true, that portrays us like activists spraypainting barrels. We are not against the industry. We are building on the foundations they laid over decades.

We are simply standing on the shoulders of giants. We want to work with Wines of Chile. Not against it. We are more interested in Chile than in our wines,” claims Sven Bruchfeld, winemaker and partner at Polkura.

To Bruchfeld, both structures can co-exist and boost each other. However, the problem, according to him, lies on mid-level officials and managers at wineries. “Maybe they care about Chile’s future as a category, but they are more concerned about short-term results,” he sentences.

This urge, this pressure for selling, makes them mistrust every situation in which a Kim Marcus changes in the back of a truck and leaves to an unknown location.

Yet, after five years since its establishment, MOVI has a more forward and conciliating speech. This unruly, rebellious, and non-conformist image led to an association in the full sense of the word, with a consolidated commercial and marketing structure that no longer feels going against the flow but as a player that grants diversity to the industry that desperately needs new impetus to gain better positioning in world markets.

“MOVI is open to work with any and all. We want to

EL VALOR DE LA ASOCIATIVIDAD

Hoy MOVI cuenta con 18 socios y muy pronto se sumarán otros más.

Su cultura organizacional es bien simple. A diferencia de Wines of Chile, donde las viñas aportan e influyen proporcionalmente a su tamaño o número cajas exportadas, su espíritu es más bien cooperativista. Todos sus miembros tienen un voto y sus actividades se financian mediante las cuotas sociales. “Así hemos evangelizado a los líderes de opinión del mundo del vino, con muchísimo más esfuerzo que recursos”, dice Sven Bruchfeld.

Las actividades de promoción, tanto en Chile como en el extranjero, las realizan de mutuo acuerdo. Como los presupuestos son también “a escala humana”, se turnan para organizar las catas y giras promocionales.

“Contamos con un kit de degustación y cada socio es capaz de presentar los vinos del resto como si fueran los suyos”, explica el enólogo de Polkura. Así se han paseado por el mundo y llamado la atención de los gatekeepers, logrando puntajes tan relevantes como el de Trabún, elegido por el último informe de The Wine Advocate como el mejor vino chileno.

La participación o no en ferias, como también los esfuerzos comerciales, obedecen a decisiones individuales. Cada productor se rasca con sus propias uñas, independientemente de que muchos de ellos comparten importadores en algunos mercados, surtiendo los portafolios como si fueran una sola gran compañía. “A poco andar, MOVI se dio cuenta de que era acertado, de hecho que es un buen negocio, compartir un importador con otra viña chilena, sea miembro de MOVI o no. En vez de que las viñas compren por litro (lo que está lejos de ser su especialidad) para satisfacer la necesidad de un cliente, ¿por qué no encontrar una viña que se especialice en ese tipo de vino y trabajar juntas para hacer crecer la categoría de Chile en las listas de productos de los importadores, cada una con su propio nicho?”, dice Derek Mossman.

De acuerdo con Felipe García, la asociatividad es la clave para el futuro. “Es un proceso súper complejo compartir en un país que no está acostumbrado a hacerlo, sobre todo con recursos súper limitados, pero

We simply have to believe in a greater plurality within the trade. This idea that a select few “own the trade”, is being projected to visitors from outside with great aplomb all the time and it is asinine. It makes Chile look silly in front of the press”, explains Derek Mossman, a partner in Garage Wine Co.

THE VALUE OF ASSOCIATIVITY At present, MOVI has 18 members and a few more are about to join. Their organizational culture is rather simple.

Unlike Wines of Chile, where wineries contribute and their level of influence is directly proportional to their size or number of cases exported, MOVI has mostly a cooperative spirit. All members have the right to vote and activities are financed with member fees. “This is how we have evangelized the opinion leaders in the wine world, with more efforts than resources,” says Sven Bruchfeld.

Promotion activities, both in Chile and abroad, are set by agreement. Since our budget also has “a human scale,” they all take turns to organize tastings and promotional tours. “We have one tasting kit, and each member can present the wines of the other members as their own,” Polkura winemaker explains. This is how they have traveled the world, caught the attention of gatekeepers, and reaped recognitions as significant as the one reaped by Trabún, chosen Best Chilean wine in the last report by The Wine Advocate.

Participating at trade show or not, as well as commercial efforts, are decided individually. Each producer is left to its own devices, even if many of them

Courtney Kingston, propietaria de la viña que lleva su apellido, confiesa que su ingreso a MOVI el año pasado le ha cambiado la vida.

Antes se sentía un poco huérfana en el mundo vitivinícola. Ahora no sólo cuenta con una gran plataforma comunicacional para dar a conocer sus vinos, sino además comparte con sus pares las mismas inquietudes y desafíos, entrega y recibe asistencia comercial, datos de proveedores de insumos enológicos y un constante apoyo técnico y humano. “Ahora tenemos voz. Es otro mundo”, afirma Courtney.

Para MOVI el capital humano es su mayor fortaleza, es cierto, pero también puede convertirse en su talón de Aquiles. Para que el modelo funcione, sus miembros tienen que estar permanentemente motivados y dispuestos a relevar a sus voceros o viajeros frecuentes. Este compromiso por el trabajo asociativo es fundamental para la permanencia y proyección del movimiento. “Hemos logrado mucho más de lo que hubiéramos hecho individualmente. Pero todavía nos falta para ponernos los pantalones largos. De usar hot pants pasamos a las bermudas”, sonríe Sven Bruchfeld.

Dentro de esos logros, que han validado a MOVI como asociación gremial e interlocutor válido en el sector, sin duda están haberse sentado en la llamada Mesa Vitivinícola, donde el Servicio Agrícola y Ganadero (SAG) explora y coordina las futuras regulaciones del sector.

“MOVI ha logrado grandes cosas para las viñas más pequeñas, incluso un documento de exportación sin fecha de expiración, por lo tanto, la venta de un vino fino demorará lo que demore, así sea 2 o 3 años. Esto ha beneficiado a todos. En estos momentos MOVI está trabajando en lograr que se reconozcan varias cepas que antes no tenían cómo ser incluidas por el SAG. Así, las viñas que quieran trabajar con cepas menos comunes podrán hacerlo”, explica el socio de Garage Wine Co. Sven Bruchfeld agrega que la asociatividad es el único camino posible para poner en valor a los vinos chilenos en el exterior, pero para que estos proyectos sean rentables hay que tomar riesgos, jugársela por la innovación. “Ojalá existieran más MOVIs, más Vignadores de Carignan, más Chanchos Deslenguados… Ojalá algún grupo de enólogos levantara la bandera del Syrah… Ojalá se formara un club del Carmenère…

Ya no hay que convencer a nadie sobre la repercusión que pueden tener estos movimientos y la enorme contribución que pueden hacer a la imagen-país, mostrando un Chile más real, diverso y entretenido”, sostiene.

Courtney Kingston, owner of the namesake winery, admits that her life changed since she joined MOVI last year. She used to feel like an orphan in the wine world before. Now not only does she rely on a huge communication platform to promote her wines, but she also shares concerns and challenges with her peers, she receives commercial assistance, useful tips for wine input suppliers and ongoing technical and human support.

“Now we do have a voice. It’s a whole new world,” Courtney says.

The human capital is MOVI’s largest strengths, that much is true. But, it may well turn into its greatest weakness. For the model to work, members need to be permanently motivated and willing to take turns as spokespeople or in promotion trips. This commitment to associative work is essential for the continuity and projection of the movement. “We have achieved much more than what we would have managed on our own. But we’ve not come of age yet. We can go to parties but we can’t buy beer,” jokes Sven Bruchfeld.

One of the achievements that have validated MOVI as an industry association and a legitimate speaker of the sector is certainly having sat at the so-called Wine Panel, where the Agricultural and Livestock Agency (SAG) explores and coordinates the future regulations of this sector. “MOVI has achieved several things on behalf of all smaller wineries including a document of exportation with an unlimited expiry so one can take the 2-3 years necessary to sell a fine wine. This benefitted all. Today MOVI is pushing for the recognition of more varieties previously without mechanism to be included by the SAG. In this way wineries wishing to work with less mainstream varieties can do so”, the Garage Wine Co. partner explains.

Sven Bruchfeld adds that associativity is the only way to add value to Chilean wines abroad. However, for these projects to be profitable, risks have to be taken; you need to bet on innovation. “There should be more MOVIs, more Vignadores de Carignan, more Chanchos Deslenguados…

I wish a group of winemakers would raise the Syrah flag…

I wish somebody would start a Carmenère club… We no longer need to convince anybody of the implications of these movements and the huge contribution they can have to Chile’s image by showing a more real, more diverse, more attractive Chile!” he claims.

LOS MOVILIZADOS Cuando irrumpió MOVI con su contestataria declaración, sin duda fue una bocanada de aire fresco para una industria que permanecía algo dormida. Sin embargo, esa misma fuerza discursiva no se tradujo en el contenido de las botellas. Algunos periodistas pedían más riesgo e irreverencia en sus vinos. Pero, como explican sus socios, el objetivo del movimiento no es elaborar vinos naturales, ancestrales o extremos. Su propuesta es simplemente hacer vinos a escala humana, donde sus propietarios estén involucrados en toda la cadena de valor, desde la producción de uvas hasta la comercialización de sus etiquetas. Bajo este concepto, los vinos de MOVI representan toda la diversidad de orígenes y estilos chilenos a pequeña escala, presentándose al mundo a través de una puesta en escena suelta, entretenida y original, hoy dividida en tres categorías: The New Chile (vinos que provienen de las nuevas fronteras de la vitivinicultura chilena); Classic Reloaded (nuevas interpretaciones de vinos clásicos o tradicionales); Old is the New New (vinos que rescatan y proyectan nuestro valioso patrimonio de vides antiguas).

Peumayén 2010

Con viñedos plantados en 1998 en la zona de Panquehue, junto al río Aconcagua, estos productores de uva decidieron hacer su propio vino.

Un tinto jugoso y frugal, elaborado en forma absolutamente artesanal y sin presiones comerciales. No tienen enólogo. Las decisiones las toma la familia y están involucrados en todo el proceso. Si no venden el vino, se lo toman. Así de bonito.

Starry Night Syrah 2011

Se trata de un pequeño proyecto de la familia Atabales en el sector de María Pinto, en plena cordillera de la Costa en el valle del Maipo. Son apenas 8 hectáreas de Syrah y Pinot Noir rodeadas de bosque nativo. Con una vinificación artesanal, este Syrah sorprende por la ligereza, jugosidad y excentricidad de su fruta. Maduro, incluso licoroso, pero bien hecho.

Trabún 2011

THE NEW CHILE

El enólogo Sergio Avendaño nunca trabajó en una viña. Se dedicó a la batería y a administrar los manzanos del campo familiar en Requinoa.

Hasta que decidió plantar 1,6 hectáreas de Syrah y elaborar un vino que desde su primera cosecha nos asombró por su fuerza y honestidad. Notas de charcutería, fruta negra y mucha pimienta. Frescura, equilibrio y belleza. Trabún explora y logra atrapar esta cepa en su estado más puro.

Kingston Cariblanco Sauvignon Blanc 2012

Polkura G+I Syrah 2010

Proveniente de una de las zonas más frescas de Casablanca, este Sauvignon Blanc impresiona por su gran estatura y concentración de sabores. Con elocuentes notas cítricas y tropicales, y un lado herbal que aporta complejidad y refresca el conjunto, Cariblanco seduce con su imponente estructura y acidez. Es un vino maduro, pero extremadamente fresco y profundo, elaborado con parsimonia, naturalidad y precisión. “Embotellamos tarde y salimos tarde”, dice Courtney Kingston.

Proviene de una ladera con exposición sur en Marchigüe, donde el Syrah moldea su personalidad más fresca y extrovertida. Esta cosecha impresiona por su fuerza y complejidad aromática, fundiendo con mucha armonía sus notas de frutos negros, violetas y pimientas. Es un vino jugoso, estructurado, pero al mismo muy elegante. “Es lo mejor que he hecho en mi vida”, dice Sven Bruchfeld.

Lagar de Bezana Syrah 2011

Ubicado en el sector de Codegua, en el Alto Cachapoal, este proyecto de la familia Bezanilla destaca por la libertad de su equipo enológico para experimentar con distintos cepajes y estilos, profundizando en una propuesta cada vez fresca y alejada de los excesos de madera de sus inicios. En este Syrah se sienten los vientos que bajan de la cordillera, moldeando la personalidad de un vino con mucha concentración frutal y madurez, pero al mismo tiempo con una acidez punzante y redonda.

Tunquén Malbec 2011

Marcos Attilio y Ángela Mochi, este matrimonio de enólogos brasileros, se enamoró perdidamente de Casablanca. Allí han desarrollado durante los últimos años su pasión por la gastronomía y por un estilo de vinos delicados y punzantes. Desde El Mirador, salta este Malbec jugoso y especiado, goloso y profundamente rojo. Un vino fermentado sin apuros.

CLASSIC RELOADED Clos Andino Le Carmenère 2011

José Luis Martin-Bouquillard, quien trabajó en Veuve Clicquot, se unió a sus amigos Georges Blanck y Bertrand Couly para proyectar con sencillez, pero con toda la elegancia del know-how francés, la tipicidad de la fruta curicana. En este caso, un Carmenère que exhibe con mucha gracia su fruta roja, pero sin ocultar su fresco lado herbal. Un vino maduro, jugoso y profundo.

Rukumilla 2009

Angélica Grove y su marido Andrés Costa han convertido a Rukumilla en un proyecto familiar en el más amplio sentido de la palabra. Esta mezcla tinta, que proviene de unas pocas hectáreas en el sector de Lonquén, en el mismo corazón del Maipo, es un vino colaborativo y lo más cercano al concepto natural. Sabores de frutos rojos y tonos terrosos, cierta oxidación que aporta complejidad, en un conjunto que denota calidez y artesanía.

Liderado por el abogado suizo Mauro Von Siebenthal, este proyecto boutique de Panquehue –llamado medio en broma, medio en serio, como el Concha y Toro de MOVI por su gran producción relativa–, cautivó desde un comienzo a la prensa con la riqueza, concentración y textura de sus vinos. Con Toknar una vez más refuerza su reputación, logrando con una cepa como el Petit Verdot un vino grandilocuente.

Este emprendimiento del conde toscano Francesco Marone Cinzano en el secano maulino no deja de sorprender. Ahora lo hace con esta mezcla de Barbera de Cauquenes, Garnacha de Empedrado y Carignan de Melozal. Un vino minimalista, jugoso y frutal, sin un ápice de guarda en madera para preservar toda su tipicidad, frescura y potente acidez.

Este proyecto de la enóloga Adriana Cerda y sus hijos expresa con honestidad todo el carácter del secano maulino. Con algo más de 10 hectáreas en Loncomilla, donde se encuentran algunos de los viñedos más antiguos de Carignan, correspondientes a plantaciones de 1949, se produce este vino macizo y de sabores agrestes. Profundamente rústico y delicioso.

Gillmore Merlot 2008

La familia Gillmore es pionera en la producción de Carignan en Chile.

Esta cepa, que reescribió el futuro del secano maulino, comparte en Loncomilla con otras cepas que absorben el carácter de la tradición de los hombres de rulo. En este caso, con un Merlot firme y potente, con expresivas notas de frutos negros, especias y flores silvestres. Elaborado por el enólogo Andrés Sánchez, estamos ante un Merlot que se las trae.

Garage Lot 28 2010

Pilar Miranda, Derek Mossman y Álvaro Peña, dan vida a Garage Wine Co, un proyecto ‘terroirista’ y sin complejos, que busca expresar con fidelidad la fruta de sus lotes, sin artificios ni dobleces. Con bases en Maipo Alto y el secano del Maule, producen vinos sabrosos y honestos, como este Cabernet Franc de altura, con marcadas notas de moras, flores, hierbas, tierra húmeda y un tono mineral que aporta complejidad y emoción. Sin duda uno de los mejores Cabernet Franc chilenos.

Facundo 2011

Comparten su vida, el gusto por comer y beber bien, y la pasión por hacer vinos. Los enólogos Constanza Schwaderer y Felipe García debutaron en 2006 con Facundo, el primer vino de la familia. Esta mezcla tinta, cuya base es Carignan del Maule y Cabernet Sauvignon del Itata, más aportes de Cabernet Franc y Petit Verdot, representa su filosofía de elaborar vinos concentrados, pero al mismo tiempo vivaces y profundos, que invitan a descorcharlos junto a grandes recetas.

Aunque el Pajarete es una de las denominaciones chilenas más antiguas, su producción se mantuvo a nivel local, enclavada en el valle del Huasco. Sin embargo, este vino dulce en base a Moscatel resurge como el ave fénix a través de productores como Armidita. Con una vuelta más moderna, preservando los sabores frescos de sus frutos blancos y flores, este vino es un patrimonio y un muy buen final de fiesta.

MOVI MOVES When MOVI made an entrance with its rebellious statement, it was certainly a breath of fresh air in an industry that felt rather numb. However, that discursive strength failed to translate into a characteristic of wines. Some wine writers called for more daring and irreverent wines. Yet, as MOVI members would explain, the purpose of the movement is not to make natural, ancient or extreme wines. uando hablamos de fermentación, de inmediato pensamos en las levaduras haciendo su trabajo. Pero no cualquier levadura, sino alguna cepa Saccharomyces cerevisiae, pues es la que se ha usado tradicionalmente por sus buenas capacidades fermentativas y de implantación microbiológica.

Pero en enología siempre hay cosas por descubrir. Y hoy ya son varios los enólogos que están usando levaduras no Saccharomyces que están presentes de manera natural en la uva –y por tanto en las fases iniciales de la fermentación– y que, complementadas con Saccharomyces cerevisiae, permiten obtener vinos con una mayor complejidad e intensidad aromática, y un volumen en boca muy superior a lo que se puede lograr trabajando únicamente con las tradicionales S. cerevisiae.

LEVADURA TORULASPORA

Durante una fermentación espontánea con microflora indígena, las levaduras no Saccharomyces prevalecen en el mosto durante la fase prefermentativa y al comienzo de la fermentación alcohólica antes que las levaduras S. cerevisiae colonicen el medio y se complete la fermentación.

El desarrollo de ciertas levaduras no Saccharomyces durante una fermentación espontánea puede ser perjudicial para la calidad del vino (Brettanomyces bruxellensis, Zygosaccharomyces baili, etc.), mientras que el desarrollo de otras no Saccharomyces puede contribuir favorablemente al aroma del vino, de acuerdo con el género de la levadura, las especies y la cepa utilizada.

Con el fin de evaluar el potencial enológico de una de estas levaduras no Saccharomyces –en particular la especie Torulaspora delbrueckii–, la empresa Laffort estudió una colección de aproximadamente 30 cepas y realizó diversos experimentos en medios sintéticos similares al mosto. Bajo estas condiciones, el rendimiento de etanol de T. delbrueckii calculado al final de la FA fue equivalente al rendimiento de etanol de S. cerevisiae. Este resultado fue similar para todas las cepas T. delbrueckii ensayadas.

ALCOHOLIC FERMENTATION

NonSaccharomyces yeasts take center stage Among non-Saccharomyces yeasts, the species

Torulaspora delbrueckii has proven its good winemaking potential, as it produces less volatile acidity, wines of greater aromatic complexity and intensity and a much greater mouth roundness than could be achieved if only working with traditional S. cerevisiae.

When talking about fermentation, the first thing that comes to our minds is yeasts doing their job. But not just any yeast. We think of a particular strain of Saccharomyces cerevisiae, which has been traditionally used for its good fermentative and microbiological inoculation properties.

But the winemaking world is one of discovery. Today, many winemakers are using non-Saccharomyces yeasts that are naturally present in grapes –and therefore in the initial stages of fermentation– that complement Saccharomyces in the obtainment of wines of greater complexity and aromatic intensity, and much finer volume than those produced only with traditional S. cerevisiae.

TORULASPORA YEASTS During a spontaneous fermentation with native microflora, non-Saccharomyces yeasts remain in the must during the pre-fermentation phase and at the beginning of alcoholic fermentation before S. cerevisiae yeasts colonize the medium and fermentation is completed. The development of certain nonSaccharomyces yeasts during spontaneous fermentation may have a negative impact on wine quality (Brettanomyces bruxellensis, Zygosaccharomyces baili, etc.), while the development of other nonSaccharomyces yeasts may contribute favorably to the quality of wine aromas, depending on the yeast genus, the species and the strain used.

In an effort to assess the winemaking potential of one of these non-Saccharomyces yeasts –specifically Torulaspora delbrueckii–, the company Laffort conducted a study on approximately 30 yeast strains and performed a number of tests on synthetic mediums similar to must. Under these conditions, the ethanol yield of T. debrueckii calculated at the end of AF was equivalent to the ethanol yield of S. cerevisiae. Results were consistent for all T delbrueckii strains tested.

Los experimentos evidenciaron una significativa variabilidad fenotípica dentro esta especie, en particular en cuanto a sus capacidades fermentativas (fase de latencia, duración de la fermentación, producción máxima de etanol) y a la producción de acidez volátil (AV). Estos tres parámetros son cruciales con respecto al potencial de la cepa para la selección industrial, en particular, la fase de latencia, que debe ser tan corta como sea posible para garantizar la rápida iniciación de la fermentación. En condiciones de laboratorio, se encontró que las fases de latencia varían mucho de una cepa a otra: desde 20 hasta 150 horas a 24°C y de 50 a 160 horas a 17°C. La producción de etanol, en tanto, fluctuó entre 8% y 12% vol. a 17°C y entre 7% y 11% vol. a 24°C. Aunque este nivel de producción es inferior al de S. cerevisiae, es relevante para una levadura no-Saccharomyces.

Con respecto a la producción de AV y de glicerol, se evaluó en tres medios sintéticos con diferentes concentraciones de azúcar (120, 240 y 350 g/L) y se comparó con dos cepas S. cerevisiae. El promedio de producción de AV y glicerol fue similar entre T. delbrueckii y S. cerevisiae para medios con una concentración baja de azúcar (120 g/L), mientras en los medios con 240 g/L y 350 g/L, T. delbrueckii produjo concentraciones notablemente inferiores. Esta característica de T. delbrueckii es muy interesante, en particular en el caso de la producción de vino de alta concentración osmótica (vino de cosecha tardía).

Además de la menor producción de acidez volátil, los resultados mostraron que T. delbrueckii produce poco o nada de otros compuestos sensoriales indeseables, tales como sulfuro de hidrógeno y fenoles volátiles, lo que refleja la «limpieza» de sus fermentaciones. T. delbrueckii mostró gran variabilidad fenotípica para este criterio, con cepas que producen hasta 23 veces menos fenoles volátiles que la cepa de referencia POF- de S. cerevisiae, que es considerada como un bajo productor de fenoles volátiles. Es importante destacar que en términos de deterioro de caracteres, ninguna cepa T. delbrueckii produjo 4 etilfenol o 4 - ethylgaiacol.

of fermentation, maximum ethanol production) and the production of volatile acidity (VA). These three parameters are crucial in terms of the strain’s industrial potential, especially the latency phase, which needs to be as brief as possible to ensure quick fermentation onset. In laboratory conditions, researchers found that latency phases show great variability between strains: from 20 to 150 hours at 24 ºC and 50 to 160 hours at 17 ºC. For its part, ethanol production ranged between 8 and 12% vol. at 17 ºC and between 7 and 11% vol. at 24 ºC. Even though this level of production is below that of S. cerevisiae, it is significant for a non-Saccharomyces yeast.

With regard to VA and glycerol production, three synthetic mediums were assessed with different sugar concentrations (120, 240 and 359 g/l) and the result was compared against two S. cerevisiae yeasts. The average AV and glycerol production was similar between T. delbrueckii and S. cerevisiae for means with low sugar concentration (120 g/l) but in those means with 240 and 350 g/l T. delbrueckii produced significantly lower concentrations. This characteristic of T. delbrueckii is quite interesting, especially in the case of high osmotic concentration wines (late harvest wines).

Besides lower volatile acidity production, results showed that T. delbrueckii produces little or no other sensory undesirable compounds such as hydrogen sulfur and volatile phenols, thus proving that these are ‘clean’ fermentations. T. delbrueckii showed great phenotypic variability for this criterion, with strains producing up to 23 times fewer volatile phenols than the reference POF- strain of S. cerevisiae, considered a low producer

EL POTENCIAL DE LAS LEVADURAS MIXTAS

Como la producción máxima de etanol por la especie T. delbrueckii es inferior a la de S. cerevisiae (Torulaspora es incapaz de tolerar el alcohol por encima de 8-9º), las fermentaciones donde se inocula solamente T. delbrueckii son a menudo incompletas. Por lo tanto, para poder explotar el metabolismo específico de esta levadura, es esencial combinarla con una adecuada cepa de S. cerevisiae con el fin de garantizar fermentaciones completas y entregar un producto comercialmente viable.

Se han realizado varios análisis de vinos elaborados con estas levaduras mezcladas, ya sea por inoculación simultánea (introducción de los dos tipos de levadura al mismo tiempo) o por inoculación secuencial de las dos especies (la cepa de S. cerevisiae agregada 24-48 horas después del inicio de la actividad fermentativa por T. delbrueckii).

Laffort analizó dos vinos Sauvignon Blanc franceses, un Merlot rosé y un cosecha tardía obtenidos a partir de fermentaciones con inoculación simultánea, y en todos los casos las fermentaciones fueron completas, se registró presencia de T. delbrueckii hasta el final de la fermentación, y la acidez volátil se redujo entre un 15% y 45% en comparación con el control (fermentado solamente con S. cerevisiae) dependiendo del mosto de uva y la cepa T. delbrueckii utilizada. Durante las diferentes coinoculaciones, no hubo diferencias en la fase de latencia respecto al control con S. cerevisiae puro, y las duraciones de la fermentación también fueron similares.

THE POTENTIAL OF MIXED YEASTS As the maximum production of ethanol for the T. delbrueckii species is lower than that of S. cerevisiae (Torulaspora cannot tolerate alcohol beyond 8.9 ºC), fermentations where only T.delbrueckii is inoculated are frequently incomplete. Therefore, in order to obtain the best out of this yeast’s specific metabolism, it must be combined with a suitable strain of S. cerevisiae in order to ensure complete fermentations and deliver a commercially viable product.

A number of analyses have been conducted on wines produced with these combined yeasts, whether as simultaneous inoculation (introduction of both yeast types at the same time) or as sequential inoculation (S. cerevisiae added 24-48 hours after the onset of fermentation activity by T. delbrueckii).

Laffort examined two Sauvignon Blancs from France, one Merlot Rosé and one Late Harvest obtained from simultaneous inoculation. In all cases fermentation was complete and the presence of T. delbrueckii was confirmed until the end of fermentation. Volatile acidity dropped between 15 and 45% compared to the control sample (fermented only with S. cerevisiae) depending on the must and T. delbrueckii strain utilized. During the different co-inoculations, no differences were identified in the latency phase compared to the control sample with only S. cerevisiae. Fermentation durations were also similar.

In the case of Sauvignon Blanc from Sancerre, the aromatic potential of two T. delbrueckii strains was assessed using simultaneous inoculation with a S. cerevisiae strain. At the end of the AF, the main aromatic compounds of fermentation (esters) were analyzed. In a nutshell, the control wine with S. cerevisiae produced significant amounts of isoamyl acetate (banana) and phenylethyl acetate (rose). Simultaneous inoculation with one of the T. delbrueckii strains noticeably increased the production of ethyl decanoate and ethyl octanoate (floral esters) compared with the control sample. Torulaspora delbrueckii es una cepa morfológicamente muy similar a S. cerevisiae, con bajos requerimientos nutricionales y que se adapta a un gran rango de temperatura (16-26ºC).

La inoculación simultánea con una de las cepas T. delbrueckii produjo notorios aumentos en la producción de decanoato de etilo y octanoato de etilo (ésteres florales) en comparación con el control. Los cultivos mixtos con la segunda cepa T. delbrueckii, sin embargo, no generaron ningún aumento de la producción de los siete ésteres más relevantes.

Un segundo ensayo se realizó con un Sauvignon Blanc de Burdeos utilizando una cepa diferente de S. cerevisiae a la utilizada en el ensayo con el blanco de Sancerre y una inoculación simultánea de S. cerevisiae y T. delbrueckii. Los resultados de los análisis aromáticos mostraron un aumento en la producción de ésteres correspondientes a aromas de rosa, plátano, pera, piña, manzana y flores. También se observó una fuerte producción de los tioles volátiles varietales 3-mercaptohexanol (3MH) (pomelo) y acetato de 3-mercaptohexilo (A3MH) (brote de grosella negra, fruta de la pasión). Esto confirmó estudios anteriores que indicaban que ciertas cepas de T. delbrueckii tienen fuerte capacidad de liberación de tioles para 3MH, en contraste con su aptitud menor para liberar 4-metil-4-mercaptopentan-2-uno (4MMP) (boj, escoba). A su vez, demuestra que el estilo del vino puede ser fácilmente manipulado a través de la elección del inóculo.

Un tercer ensayo realizado en un Merlot rosé de Burdeos permitió comparar tres cepas de T. delbrueckii con inoculación simultánea frente a una cepa de S. cerevisiae. Los compuestos aromáticos mostraron perfiles diferentes: los ensayos con una de las cepas mixtas produjeron más feniletanol (rosa, floral), butirato de etilo (piñas, frutos rojos) y ligeramente más acetato de isoamilo (plátano) en comparación con la cepa de S. cerevisiae; la mezcla con una segunda cepa de T. delbrueckii también produjo más feniletanol, más acetato decanoato (floral), y un poco menos acetato de isoamilo (plátano), mientras que la mezcla con la tercera cepa produjo ésteres de fermentación en un nivel más bajo o igual a S. cerevisiae. Estos resultados confirman la variabilidad intraespecífica en relación con la producción de compuestos aromáticos de las distintas especies de T. delbrueckii. Cabe destacar que durante la degustación, los vinos hechos con la mezcla de los dos tipos de levadura mostraron un mayor volumen y longitud en boca.

A second test, this time on Sauvignon Blanc from Bordeaux, used a different S. cerevisiae strain from the one used with the Sancerre white and simultaneous S. cerevisiae and T. delbrueckii inoculation. Results of the aromatic tests conducted revealed an increase in the production of esters associated to rose, banana, pear, pineapple, apple and floral aromas. There was also a strong production of volatile thiols 3-mercaptohexanol (3MH) (grapefruit) and 3-mercaptohexyl acetate (A3MH) (blackcurrant sprout, passion fruit). This came as a confirmation of earlier studies that concluded that certain T. delbrueckii strains are strong releasers of thiols for 3MH, in contrast with their reduced capacity to release 4-methyl-4-mercaptopentan-2-one (4MMP) (boxwood, broom). It also proves that wine style can be easily manipulated by choosing the right inoculate.

A third test conducted on a Merlot Rosé from Bordeaux compared three strains of T. delbrueckii simultaneously inoculated with a strain of S. cerevisiae.

Aromatic compounds showed different profiles: tests with one of the mixed strains produced more phenyl ethanol (rose, flowers), ethyl butirate (pineapple, red fruits) and slightly more isoamyl acetate (banana) than with S. cerevisiae; the blend with the second T. delbrueckii strain also produced more phenyl ethanol, more decanoate acetate (floral) and a little less isoamyl acetate (banana); finally, the blend with the third strain produced lower or similar fermentation esters as S. cerevisiae. These results confirm the intra-specific variability concerning the production of aromatic

azúcar (358g/L y 22,2% de alcohol potencial), bajo condiciones de vinificación reales (fermentación en barricas nuevas), primero con una inoculación simultánea de T. delbrueckii y S. cerevisiae y luego una segunda fermentación con sólo S. cerevisiae. La producción de AV para el cultivo mixto fue significativamente menor que con el cultivo de S. cerevisiae (-18%). En un segundo ensayo realizado en un mosto con nivel alto de azúcar (370g/L y 23,4% vol. potencial), se observó una reducción en AV de 34% para el cultivo de levadura mezclada en comparación con el control de S. cerevisiae. En el análisis sensorial el vino resultante de la mezcla de cepas fue percibido como más aromáticamente intenso, con notas de frutas frescas y confitadas, pero también notas a madera más marcadas, lo que indica una mayor sinergia de las especies del inóculo mezclado con fermentación en barrica. Este vino fue considerado más complejo, siendo caracterizado por descriptores como cítricos, frutas y flores. A nivel gustativo, se percibió con un mayor volumen en boca y mayor intensidad en el paladar, más complejo y redondo.

INOCULACIÓN SECUENCIAL

También se realizó una evaluación de dos vinos Tempranillo de bodegas españolas fermentados con una mezcla de levaduras con inoculación secuencial, es decir, 24 horas después del arranque de la actividad fermentativa de T. delbrueckii, se sembró la especie S. cerevisiae. Se llevaron a cabo pruebas comparativas semi-industriales por triplicado entre inóculo puro, S. cerevisiae y la co-inoculación. La fermentación se desarrolló de manera similar a S. cerevisiae pura, presentando una

A fourth study was conducted on a Semillon must with high sugar content (358 g/l and 22.2% probable alcohol) under actual vinification conditions (fermentation in first-use barrels), first with simultaneous inoculation of T. delbrueckii and S. cerevisiae and then a second fermentation only with S. cerevisiae. VA production for the mixed culture was significantly lower than for the S. cerevisiae culture (-18%). A second test conducted on a must with higher sugar content (370 g/l and 23.4% probable alcohol) showed a reduction of 34% in VA for the mixed yeast culture compared with the S. cerevisiae control sample.

During the sensory analysis, the wine resulting from the strain mixture appeared as more aromatically intense, with notes of fresh and candied fruit but also with more evident wood notes. This is indicative of a greater synergy between the species in the inoculate mixed with barrel fermentation. The wine was considered more complex and was characterized with descriptors like citrus, fruit and flowers. At gustatory level, greater volume and intensity were perceived and the palate was felt as more complex and round.

Al parecer, este enólogo y Constanza, su mujer, colega y socia, se sienten tan cómodos en una bodega como en un laboratorio. De naturaleza inquieta y curiosa, no escatiman en realizar numerosos ensayos para llegar al vino que buscan. Es así como desde el año 2006 están trabajando con Laffort en investigaciones técnicas para producir el mejor Sauvignon Blanc. En 2012 probaron por primera vez Zymaflore Alpha, la levadura Torulaspora delbrueckii de Laffort, para complementar con S. cerevisiae.

“Buscábamos más compuestos tiolados y la ficha técnica de esta levadura hablaba de su mayor aporte en tioles. Logramos vinos más leves en nariz, pero con un efecto tremendo en boca, vinos más grandes, más golosos, súper potentes, y eso nos sedujo. Mandamos nuestros vinos a analizar a Francia y efectivamente resultaron con tres veces más tioles que cualquier Sauvignon Blanc de Chile, aunque la expresión aromática no es tan potente, como sí es el volumen en boca por los polisacáridos que produce esta levadura. Hicimos distintas pruebas y actualmente al 75% de los vinos de gota le hacemos estabulaciones cercanas a 5 días a 10°C y fermentamos primero con Zymaflore Alpha y luego con la Saccharomyces Zymaflore X5. Alpha es más cara que cualquier Saccharomyces, pero este mayor costo es menor frente a los beneficios que entrega”. n Apparently this winemaker and his colleague and partner wife, Constanza, feel as comfortable in a cellar as in a laboratory. Restless and curious, they spare no efforts to achieve the wine they want. Since 2006 they have been working with Laffort on technical research to produce the best Sauvignon Blanc. In 2012 they tried Zymaflore Alpha, Laffort’s Torulaspora delbrueckii yeast, for the first time to combine with S. cerevisiae.

“We were looking for more thiol-based compounds and the fact sheet for this yeast spoke mostly of its greater thiol contribution. We produced wines with a gentler nose but with a tremendous effect in the mouth, wines that are more expansive, more complex, super powerful and that really seduced us. We sent our wines for analysis in France and they actually had three times more thiols than any other Sauvignon Blanc in Chile. Although their aromas are not very expressive, their volume is indeed very expressive because of the amounts of polysaccharides the yeast produces. We conducted several tests and currently 75% of our free run wines undergo a 5-day must chilling process at 10 ºC and we ferment first with Zymaflore Alpha and then with Saccharomyces Zymaflore X5. Alpha is more expensive than any Saccharomyces, but this higher cost is indeed low compared to the benefits it provides.”

En Matetic, el enólogo Julio Bastías suele utilizar levaduras nativas, pero en el caso del Sauvignon Blanc ha optado por levaduras tecnológicas, ya que busca vinos con más boca, más grasa. Por ello desde hace un par de años, está usando la Torulaspora en Sauvignon y también en Syrah. “En el caso de los tintos aplicamos esta levadura durante la maceración en frío, mientras que en los blancos durante el estabulado, ya que al mantener las borras frías en suspensión, se logra un mosto rico en proteínas, lípidos y aromas. La Torulaspora actúa como un predigestor de la situación del mosto, entonces cuando se incorpora la Saccharomyces, esta levadura ya tiene la pega hecha. En los Sauvignon Blanc hemos conseguido una redondez en boca y una untuosidad que no se logra con levaduras nativas ni sólo Saccharomyces, mientras que en los Syrah tenemos el mismo efecto en boca, pero además se expresan unas notas aromáticas fermentativas, a plátano, chirimoya, que le dan una complejidad interesante”.

Y esto no termina aquí. Ya utilizaron estas dos levaduras en una inoculación secuencial en una pequeña cantidad de un vino base para espumoso y la idea es hacer este año un ensayo con Pinot Noir. n At Matetic, the winemaker Julio Bastías normally utilizes native yeasts, but in the case of Sauvignon Blanc he has opted for technological yeasts, as he looks to produce wines with a more powerful mouth, more creaminess. Accordingly, he has been using Torulaspora on Sauvignon and also on Syrah for a couple of years already. “In the case of reds we apply this yeast during the cold maceration, while in whites we do this during the must chilling process because when maintaining cold lees in suspension the result is a must rich in proteins, lipids and aromas. Torulaspora somehow ‘predigests’ the must, so when Saccharomyces is added, the job is halfway completed. In the case Sauvignon Blanc we have achieved great mouthfeel and creaminess you cannot obtain with native yeasts or just Saccharomyces, while in Syrah we have the same effect in the mouth, with some fermentative aromatic notes of banana and cherimoya that deliver an interesting complexity.”

And this is not the end. They already used these two yeasts in sequential inoculation in small amounts of a base wine for a sparkler, and the idea is to test this again this year on Pinot Noir.

SEQUENTIAL INOCULATION An assessment was also conducted on two Spanish

Tempranillo wines fermented with a mixture of sequentially inoculated yeasts, that is, S. cerevisiae was seeded 24 hours after the onset of T. delbrueckii fermentation activity. Three semi-industrial comparative tests were conducted between the inoculate alone, S. cerevisiae and co-inoculation. Fermentation took place in a similar way as S. cerevisiae alone, with slightly slower sugar consumption speed in the sequential coinoculation.

The PCR analysis at a density of 1050 showed the coexistence of both species half way through fermentation, although each one does its job at different times: T. delbrueckii at the beginning of fermentation and S. cerevisiae at the end of alcoholic fermentation, when the level of alcohol has become too high.

El análisis por PCR a densidad 1050 mostró la convivencia a mitad de la fermentación de las dos especies; sin embargo, cada cepa hace su trabajo en distintas etapas: T. delbrueckii al inicio de la fermentación y S. cerevisiae es la que termina la fermentación alcohólica, cuando el nivel de alcohol es demasiado alto.

Después de tres meses de finalizada la FA, los análisis mostraron una incidencia positiva en el incremento del potencial aromático, superiores al 20% en ambos vinos elaborados con la mezcla de cepas, pero más interesante fue el cambio en los perfiles de los aromas producidos, con 2 líneas muy marcadas y comunes: aumento de 3-mercaptohexan-1-ol (notas a pomelo) y aumento muy significativo del fenil-2-etanol (notas a rosas). En los vinos en degustación, se reconocieron estas notas florales y frescas, con una línea gustativa común de taninos menos rudos y astringentes.

EXPERIENCIA EN CHILE

El año 2011 llegó al mercado chileno Zymaflore Alpha, la cepa de Torulaspora delbrueckii de Laffort, que ha sido utilizada por varios enólogos en diferentes cepas tales como Sauvignon Blanc, Chardonnay, Gewürztraminer, Merlot, Pinot Noir, Malbec, Cabernet Sauvignon y Carmenère. Según Fernando Córdova, responsable técnico de Laffort, los resultados obtenidos han sido sorprendentes: los vinos co-inoculados con esta cepa presentan una mayor intensidad y complejidad de aromas y en boca un mayor nivel de volumen y graso. En la variedad Sauvignon Blanc se observó analíticamente una mayor cantidad de tioles, lo que permitió obtener vinos con mayor complejidad y retrogusto, disminuyendo el perfil pirazínico y empujando el perfil tiólico.

“Trabajar con Zymaflore Alpha ha sido una experiencia nueva para los enólogos y ha hecho que se ‘reencanten’ con la fermentación. Hay mucho que descubrir y manejar en los vinos considerando sólo la fermentación. Con un minucioso trabajo conjunto con los enólogos, definimos los itinerarios técnicos que permiten racionalmente dirigir la vinificación en un estilo definido: mayor potencia aromática, mayor concentración y suavidad tánica, perfil aromático frutal o especiado, etc. Elegimos la cepa S. cerevisiae que junto a Zymaflore Alpha permite empujar diferentes estilos. Así por ejemplo en Carmenère, RX60 + Z. Alpha, permite potenciar la frutosidad o en Syrah de clima frío, FX10 + Z. Alpha permite suavizar los taninos, entregando una suavidad de boca que realza al vino. El uso de esta levadura gana adeptos cada año y demuestra que la biotecnología, bien comprendida y manejada, permite una mayor expresión del potencial de cada una de las cepas y de los terroirs existentes”. t

After 3 months following the completion of AF, analyses showed a positive incidence in the increase of the aromatic potential over 20% in both wines made with the mixture of yeasts. More interesting was the change in the aromatic profiles, with two very evident and common lines: an increase of 3-mercaptohexan-1-ol (grapefruit) and a very significant increase of phenyl-2ethanol (roses). When tasted, the wines featured floral and fresh notes, with a common gustatory line of gentler, less astringent tannins.

THE CHILEAN EXPERIENCE Zymaflore Alpha, the Torulospora delbrueckii strain produced by Laffort debuted in Chile in 2011. The strain has been utilized by various winemakers on varieties like Sauvignon Blanc, Chardonnay, Gewürztraminer, Merlot, Pinot Noir, Malbec, Cabernet Sauvignon and Carmenère. According to Fernando Córdova, technical head of Laffort, the results obtained have been nothing less than surprising: the wines inoculated with this strain feature greater aromatic intensity and complexity and greater volume and creaminess in the mouth. The analysis of Sauvignon Blanc showed a larger amount of thiols, which results in wines of greater complexity and aftertaste, decreasing the pyrazinic profile and boosting thiols.

“Working with Zymaflore Alpha has been an all new experience for winemakers, who are now re-enchanted with fermentation. There is still a lot to discover and manage in the field of wine fermentation. VINOS DE CHILE CALIFICA NUEVO IMPUESTO AL VINO COMO REGRESIVO Y DISCRIMINADOR

Luego de conocerse mayores detalles de la reforma tributaria que impulsará el gobierno de Michele Bachelet, Vinos de Chile entregó su posición ante la propuesta de subir el impuesto al vino. El proyecto de ley establece una tasa de 18% a toda bebida que contenga alcohol, una tasa ad-valorem de 0,5% por cada grado de alcohol contenido y una sobretasa de 0,03 UTM por cada litro de alcohol contenido.

Según la entidad gremial, este impuesto –que califica de regresivo y discriminador– significaría que un vino de $1.400 el litro tendría una alza de 20% ($1.681), mientras que en un vino de $5.784, el aumento sería de 10%, llegando a $6.359. Es decir, se trata de un impuesto regresivo, pues “carga la mano de modo desproporcionado sobre los agricultores más pequeños y vulnerables, y aumenta los precios a los consumidores de vinos económicos”. Destaca además que el 80% del vino que se consume en Chile promedia los $1.400 el litro.

According to association, this tax –which they refer to as regressive and discriminating– would imply that a USD 3.00 wine would be subjected to a 20% rise (USD 3.60), while a USD 6.00 wine would be levied by a 10% rise to USD 6.60. In other words, this is a regressive tax that is disproportionally harsh o smaller and more vulnerable vintners and raises the prices for value wine consumers. Moreover, it should be noted that over 80% of the wine consumed in the local market is sold for around USD 3.00.

En 10 años la antigua Viña Morandé se transformó en una empresa multimarca que devino en Grupo Belén. Con una reestructuración inicial que involucró reducir costos, replantear el área comercial y crear una gerencia de marketing, la empresa empezó a gestar diferentes productos, entre marcas propias, soft brands y servicios de maquila, que le permitieron llegar a su meta: operar a full capacidad. / JORGE ENGLISH G.

n 2000, cuando Empresas Juan Yarur adquirió el control de la entonces Viña Morandé, se encontró con que la empresa tenía una capacidad de producción de 1,8 millones de cajas y una bodega en Pelequén de 12,5 millones de litros, pero sólo vendía 200 mil cajas, es decir, 1,8 millones de litros.

Conceptualmente, Morandé se posicionaba en una gama de vinos bastante alta, pero toda la estructura productiva correspondía más bien a la de una viña de volúmenes. En otras palabras, no cuadraba lo que la compañía poseía en términos de activos con lo que la marca representaba en ese momento.

Había un dilema enfrente, que presentaba la alternativa de deshacer la infraestructura existente o reinventarse. Vender la bodega era complejo, de modo que la empresa optó por el segundo camino, una vía que llevó a Morandé a convertirse en el actual Grupo Belén.

El giro comenzó realmente con la llegada de Matías Elton a la empresa en 2004. El profesional, que venía con la experiencia de siete años en la gerencia general de Viña San Pedro, asumió como director ejecutivo en Morandé contando con amplias facultades a fin de reestructurar la empresa y mejorar sus resultados.

El acento se puso en aumentar el volumen de producción, ampliar el portafolio de marcas, hacer más eficiente la producción y reducir los costos. En términos administrativos, esto último significó trabajar con menos gente pero con mayores índices de productividad, y en lo comercial, el cierre de las oficinas propias que Morandé sostenía en Brasil, Inglaterra, Irlanda y EEUU, porque resultaban caras de mantener y requerían una masa crítica importante que la compañía no tenía.

De hecho, hubo un análisis completo del área, que derivó en la conformación de una gerencia que se divide en los mercados de Norteamérica, Asia/Europa y Latinoamérica. Todo ello sobre la base de una fuerza de venta más liviana y con fuerte orientación hacia los resultados, dentro de una estrategia focalizada en la venta combinada de productos y en potenciar mercados de mayor margen.

The Promised Land of the Belén Group In a matter of 10 years, the ancient Viña Morandé became a multi-brand company that eventually grew into the Belén Group. Based on an initial restructuring plan that involved cutting costs, reorganizing the commercial division and creating a marketing department, the winery started developing new products, new brands, soft brands, and maquila aiming at one goal: Operating at full capacity.

When Empresas Juan Yarur acquired a controlling stake of the then called Viña Morandé in 2000, it found that the company owned a 12.5 million liter winery in Pelequén and could produce as many as 1.8 million cases, yet they were only selling some 200K cases, that is, 1.8 million liters.

In theory, Morandé was among the major premium wine producers, but the entire production structure corresponded to a high-volume operation. In other words, something was off between what the company owned in terms of assets and what the brand represented at that time.

It was a ‘between a rock and a hard place type of situation’: getting rid of the existing infrastructure or reinventing the whole thing. Selling the winery was not an easy thing, so the company opted for the second alternative, which would eventually take Morandé to become what today is known as the Belén Group.

Re-engineering truly started with the arrival of Matías Elton in 2004; a professional who had been Viña San Pedro’s general manager for seven years. Elton took over as CEO at Morandé and was widely empowered to restructure the company and spur results.

All efforts were focused on increasing the production volume, expanding the brand portfolio, increasing production efficiency, and cutting costs.

Administratively, this meant reducing the head count, but favoring a more efficient staff. Commercially, changes led to closing the offices Morandé had in Brazil, England, Ireland, and the U.S., because they were

Asimismo, se creó una gerencia de marketing, la cual tendría una importante injerencia en el futuro desarrollo de la viña, decisión muy vinculada a la generación de nuevas marcas, dirigidas a distintos segmentos de mercado.

Con estos fundamentos, comenzó la nueva etapa de la viña.

MARCAS ESTRATÉGICAS

El foco de la empresa es desarrollar marcas propias, llamadas “estratégicas”. De este modo, en su minuto se lanzaron los vinos Vistamar y, posteriormente, Mancura, que se sumaron a Morandé como marcas estratégicas, al igual que Zorzal, la bodega argentina donde el Grupo Belén tiene una opción de compra desde 2011.

Pero a medida que Vistamar y Mancura se desarrollaban, la empresa se encontró con que el esfuerzo realizado para que adquirieran vida propia se diluía por la fuerza de la marca Morandé. “Cualquier cosa que se hacía, se canalizaba como Viña Morandé. Eso le provocó un problema a lo que queríamos hacer con las marcas estratégicas”, cuenta Matías Elton.

Fue cuando se buscó generar un holding corporativo, que consolidara todas las marcas de la sociedad. Fue cuando nació, en 2012, el Grupo Belén. “Nos interesa ser conocidos como un grupo de marcas, cada una con su propio posicionamiento, personalidad, enología y soporte, y todas además igual de importantes”, explica el ejecutivo.

Sin embargo, para generar economías de escala y hacer más eficientes los procesos, todo el envasado se centraliza en una única línea de embotellado y un laboratorio se encarga de los análisis de todos los vinos y son sometidos al mismo control de calidad. La gerencia agrícola, asimismo, presta servicios a los enólogos de las diferentes marcas.

expensive and required a significant critical mass that the company did not have at that moment. In fact, an extensive analysis of the area was carried out and resulted in the creation of a department that consists of three different units: North America, Asia/Europe, and Latin America. The building block of this structure was a lighter sales force strongly focused on results and relying on a strategy oriented to product tying and to foster higher-profit margin markets.

They also created a marketing department that would have a major impact on the winery’s future development. This decision was intertwined to the development of new brands oriented to different market segments.

And that was the beginning of a new era for the winery.

STRATEGIC BRANDS The company is focused on developing proprietary brands called “strategic brands.” Accordingly, in due time they launched strategic brands Vistamar and later Mancura, along with Zorzal, the Argentine winery where the Belén Group has an option to buy since 2011.

However, as Vistamar and Mancura were being developed, the winery realized that efforts were watering down because the Morandé brand was simply too strong. “No matter what we would do, all was channeled as Viña Morandé. This was a deterrent for our plan with strategic brands,” Matías Elton recalls.

LAS SOFT BRANDS

Por otro lado, para aprovechar al máximo la capacidad productiva, la compañía ingresó al nicho de las soft brands, o marcas “tácticas”, para proveer a clientes que quieren ofrecer a su público etiquetas propias y que, por lo general, son grandes cadenas de supermercados. Esta línea de negocio se desarrolla bajo la razón social Fray León, y es en la actualidad una actividad bastante rentable –dice Elton–, a pesar de tratarse de productos más económicos. Solamente un ejecutivo maneja las soft brands en todo el mundo, concentrándose principalmente en Inglaterra, China, Rusia y Japón.

Siguiendo estos lineamientos, entre las marcas estratégicas y tácticas hoy la empresa vende en torno a 950 mil cajas anuales, 600 mil de las cuales corresponden a las marcas estratégicas. La argentina Zorzal suma a las ventas otras 32 mil cajas.

Aun así, como la capacidad de producción es mayor a este volumen, la empresa decidió ofrecer servicios de maquila. De hecho, hoy en las instalaciones de la compañía se embotellan vinos de terceros, lo que ha permitido operar a plena capacidad. “Hemos cumplido los objetivos de tener la planta a full y crecer hasta ser un player importante y ser una de las 14 viñas más grandes de Chile”, sostiene Matías Elton.

And so was the Belén Group established in 2012. “Our goal is to become known as a group of brands, each with a positioning, personality, winemaking, and support of its own, and each brand as important as the next,” the officer explains.

Nevertheless, to generate scale economies and to increase process efficiency, bottling is centralized in one single line and one lab conducts all wine analyses and quality control tests. Moreover, the agricultural department provides its services to the winemakers responsible for the various brands.

They also operate with one single distribution center. However, all brands have a winery of their own and sales at the different markets of destination are carried out by different distributors that work with each brand separately. Distributors are considered strategic partners, and they also disseminate the newsletters with news of the winery, the holding, the brands they work with and frequent invitation to visit Chile, among other events.

SOFT BRANDS On the other hand, to make the most of their production capacity, the winery penetrated the soft brand, or “tactical” brand, segment to supply customers who want to offer their own labels to their customers, mostly supermarket chains. This line of business

Una nueva unidad de negocios La creación del Grupo Belén significó plantear una estructura corporativa dividida en dos áreas: la vitivinícola propiamente tal, y una unidad de negocios dedicada al turismo.

La semilla de esta última unidad es el antiguo restorán House of Morandé, junto al cual se construyó una tienda donde se venden todos los productos del grupo, más merchandising y delicatessen. También se creó una bodega con capacidad para 40 mil litros, muy didáctica en su concepción para que los visitantes se involucren en el mundo del vino.

Pensado como un centro de enoturismo, pasó a llamarse House Casa del Vino. “Es el hogar de todo el Grupo Belén”, acota Matías Elton. Uno al que ya llegan más de 26 mil turistas cada año.

“This is the home of the Belén Group,” Matías Elton reckons. And the more than 26,000 visitors it receives every year are the proof of it.

developed under the Fray León company name is certainly a very profitable one –Elton comments–, even though they are value products. Only one sales executive is responsible for soft brands in all world markets, with a greater focus on England, China, Russia, and Japan.

As such, between strategic and soft brands, the company currently sells roughly 950K cases per year, where strategic account for 600K cases. In turn, Zorzal, the Argentine brand, contributes 32K cases to the corporate sales.

Still, since the winery has the capacity to produce a greater volume, the company decided to develop the maquila line of business. In fact, they currently bottled wines from third, which has allowed the Belén Group to operate at full capacity. “We have met our goals of having the plant operate at its full capacity and growing into a major player and one of the top 14 wineries in Chile,” Matías Elton claims.

Another big move has been to become landowners.

In 2004, they decided to buy their own land or to sign long-term lease agreements for vineyards already planted or to be planted in the future. As a result, the

company now manages an area under vine of 1,050 hectares, 650 of which it owns, from the Casablanca Valley to Pencahue in the Maule Valley.

Gracias a esta política, la empresa administra un total de 1.050 hectáreas, 650 de ellas de su propiedad, repartidas en la zona comprendida entre el valle de Casablanca y Pencahue, en el valle del Maule.

La uva producida en estos campos le permite contar con la fruta necesaria para elaborar sus vinos entry level, aunque sigue comprando fruta o vino en el mercado spot, una estrategia que le ayuda a manejar la volatilidad de los precios asegurándose un costo promedio. Gracias a dicha política, hoy la viña se autoabastece de la mitad de la materia prima para elaborar sus varietales, proporción que sube al 100% en el caso de los vinos de mayor gama.

Pero si hay algo que entusiasma a la administración del Grupo Belén, es el taller que la empresa puso a disposición de todos los enólogos del holding en House Casa del Vino (ver recuadro), para que experimenten y creen productos de alta gama con entera libertad. Así fue como se gestaron los vinos Tirazis y Despechado, un Syrah y un Pinot Noir, respectivamente “Nuestra intención es transformar los productos que salgan del taller en vinos de culto, para vender en nuestra tienda o en ciertos mercados muy específicos”, dice Elton. La meta es lanzar seis vinos distintos.

FOCO EN LA SUSTENTABILIDAD

Un acápite adicional de los cambios experimentados por la empresa es la introducción de políticas de sustentabilidad a nivel corporativo, con foco en un menor consumo de energía, buenas prácticas agrícolas y mejores políticas de recursos humanos.

El área está a cargo de un jefe de sustentabilidad, materia en la que se ha avanzado en la medición de las huellas de carbono e hídrica y en la aplicación de tecnologías de bajo consumo de energía, gracias a lo cual la empresa obtuvo el sello de eficiencia energética que otorga el Ministerio de Energía.

En los viñedos, por su parte, se aplican las normas BPA (Buenas Prácticas Agrícolas), que implican el uso de productos amigables con el medioambiente y la aplicación de dosis correctas de químicos para evitar residuos en las uvas; la mantención de vegetación entre hileras para prevenir la erosión; la conservación de la vegetación nativa de cada lugar; y el mínimo uso de maquinarias, entre otras cosas.

Con los colaboradores, la tarea se ha centrado en crear las condiciones que lleven a fidelizar a los trabajadores con la empresa.

Entre las acciones llevadas a cabo destaca el programa «Grupo Belén Emprende», el cual, a través de talleres, busca que sus colaboradores se conviertan en intraemprendedores, e impulsen nuevas ideas o mejoras, gatillándose procesos innovadores que agregan valor a la compañía.

Mediante la implementación de toda esta estrategia, Grupo Morandé es hoy una empresa rentable, que vendió el año pasado US$ 26 millones, 12% más que en 2012. t

Thanks to that approach, the winery presently produces 50% of the grapes it needs for its varietals and is self-sufficient in the grapes for higherend wines.

Yet, one of the most heartening projects for the Belén Group’s management is the workshop they organized for all their winemakers at House Casa del Vino (see box) for them to let their imagination run free to develop and try new premium wines. This is how Tirazis and Despechado, a Syrah and a Pinot Noir, respectively, were crafted.

“We are committed to taking the wines conceived in the workshop and turning them into cult wines that will be sold in our store or in very specific markets,” Elton explains. Our goal is to craft six of these wines.

FOCUS ON SUSTAINABILITY A separate chapter in the changes introduced by the company is the implementation of sustainability policies at corporate level, with a focus on lower energy consumption, implementation of good agricultural practices and best human resources policies.

This area is steered by a head of sustainability, a matter in which the company has made sound progress in measuring the carbon and water footprints, and implementing low energy consumption technologies, which helped the company obtain the energy efficiency certification granted by the Ministry of Energy.

Good agricultural practices are applied at the vineyards, which implies using environmentally friendly products and applying the right dosage of chemicals to prevent residues on the grapes; growing of inter-row vegetation to prevent erosion; preserving the native vegetation; and keeping the use of machinery to the minimum, among other efforts.

In terms of human resources, efforts are made to generate the conditions that encourage employee loyalty. Some of the HR initiatives worth mentioning are the “Grupo Belén Emprende” program, which consists of a series of workshops to foster creativeness and initiative among employees, so that they conceive and develop their own idea, improvements, and innovative processes that add value to the company.

All these efforts have led the holding to grow into a profitable operation with sales for USD 26 million in 2013, up 12% from the previous year. t

l año 2009 fue el punto de inflexión en las exportaciones de vinos de la Toscana.

Después de dos años consecutivos de caídas en sus envíos al exterior, en 2009 comenzó una notoria recuperación, que le ha permitido batir sus propios récords año a año. Se estima que el año pasado la región exportó poco más de € 740 millones, alcanzando un crecimiento de 46% entre 2009 y 2013.

Estos buenos resultados no son mera casualidad, sino el fruto de una estrategia de promoción implementada hace cuatro años por los sectores privado y público, que no sólo crearon una nueva imagen para la región, sino además un encuentro de negocios que cada vez congrega a mayor número de compradores y periodistas.

Este año, VITIS Magazine tuvo la oportunidad de participar en este encuentro de tres días denominado Buy Wine y realizado esta vez en Fortezza da Basso, Florencia, donde presentaron sus productos 260 bodegas de los 19 consorcios correspondientes al 95% de los productores de la región. Los asistentes sumaron 296 compradores, 100 periodistas de países extranjeros y 50 periodistas italianos. Esto es, un 40% de aumento respecto al año pasado.

La cifra confirma cómo el encuentro, iniciado en 2009 por Toscana Promozione, se está consolidando como un verdadero punto de referencia en el comercio internacional de los vinos de la Toscana.

Los compradores no sólo provienen de los mercados tradicionales, sino también de las áreas emergentes. Este año asistieron representantes de 33 países, con fuerte presencia de jugadores clave como EEUU, Canadá, Brasil, China, Corea del Sur y Japón.

Asimismo hubo una importante convocatoria de Europa entre los diferentes segmentos del mercado, con 101 compradores.

Aunque fue su cuarta edición, es la primera vez que Buy Wine y las anteprimas (o preestrenos) se realizan en un único evento. De este modo, los periodistas pudimos degustar las nuevas cosechas y los vinos que ya están en el mercado, y los compradores además agendar reuniones de negocios con las bodegas de su interés.

Un aspecto a tener en cuenta, eso sí, es que cada vez más productores de Chianti Classico, Nobile di Montepulciano y Brunello di Montalcino presentan muestras de barricas, siendo que el interés es probar los vinos ya embotellados, tal como nos comentó el

The results of this initiative have proven extremely positive.

2009 was the turning point for Tuscan wine exports. Following two years of plummeting figures, recovery took off in 2009 and since then, records have been broken on a yearly basis. So much that exports from Tuscany in 2013 stretch to a little over EUR 740 million and growth over the 2009-2013 period amounts to an impressive 46%.

This outstanding performance is not good fortune, but the result of a promotion strategy jointly implemented 4 years ago by the private and public sectors that built a new image for the region and conceived a 3-day international workshop that is becoming increasingly popular among buyers and wine writers.

VITIS Magazine had the opportunity to participate in Buy Wine, which this year was held in Fortezza da Basso, Florence and where the labels of 260 wineries from the 19 consortiums that gather 95% of the Tuscan producers were displayed. Among the participants were 296 buyers, 100 foreign and 50 local wine writers, which represents a 40% increase as compared to last year.

Such growth only confirms how the event conceived

by Toscana Promozione in 2009 is growing into a benchmark of the international trade in Tuscan wines.

Buyers come not only from traditional markets, but also from emerging ones. For example, this year, buyers from 33 countries participated in the event, including those from the major leagues like U.S., Canada, Brazil, China, Korea, and Japan. European markets were also present, with as many as 101 buyers.

Although this was its fourth year, this is the first time that Buy Wine and Anteprimas (previews) are part of a single event. Consequently, my fellow wine writers and I could taste the new vintages and the wines already available on the market, while buyers could also schedule business meetings with potential customer wineries.

I’d like to mention; however, that as Swiss wine writer Pierre Thomas pointed out, an increasing number of producers of Chianti Classico, Nobile di Montepulciano and Brunello di Montalcino presents barrel samples, whereas the public is interested in tasting already bottled wine. In addition, many of them have the potential to increase their production significantly (58% could step up production by 50%). Interestingly, 5,760 business meetings representing estimated sales for € 860,000 were held in the framework of Buy Wine 2013.

Thanks to this initiative and the individual efforts of each winery, Toscana currently accounts for 15% of Italian exports, and is ranked third after Veneto and Piedmont.

VISITING CONSORTIUMS Following the three days at Buy Wine, we went on a trip throughout Tuscany to visit four consortiums –Chianti Classico, Vino Nobile de Montepulciano, Brunello de Montalcino, and Vernaccia di San Gimignano–, during which we tasted dozens of wines and even attended the launching of the new vintages.

VISITANDO LOS CONSORCIOS

Después de estos tres días en Buy Wine, recorrimos la región de Toscana, visitando cuatro consorcios –Chianti Classico, Vino Nobile de Montepulciano, Brunello de Montalcino y Vernaccia di San Gimignano–, donde tuvimos la oportunidad de catar decenas de vinos y asistir al lanzamiento de las últimas cosechas.

El Consorzio di San Gimignano cuenta con uno de los vinos blancos más antiguos de Italia, de la variedad Vernaccia di San Gimignano.

Su meticuloso trabajo permitió lograr el reconocimiento de la Vernaccia di San Gimignano como Denominación de Origen Controlada y luego Garantizada (DOC 1963 y DOCG 1993). En un taller de cata guiado por Francesco Falcone, se comparó el vino Grüner Veltliner, cepa emblemática de Austria, con el Vernaccia di San Gimignano.

Según Falcone, Vernaccia es “un vino con un gran potencial que no ha sido explotado, al igual que muchos del centro de Italia”. In order to add value to the image of excellence, Consorzio Chianti Classico has advanced a new DOCG typology (the decree entered into force in January this year), to designate a superior category: the Gran Selezione wine. Reserve wines 2007 through 2011 vintages from all over the world are using this new typology. Representing roughly 10% of the production of Chianti Classico, Gran Selezione must be made, as a minimum, from 80% Sangiovese grapes exclusively owned by the winery and grown in their best vineyards under very strict rules. Wines can only be sold after 30 months of aging and 3 months in the bottle.

El encuentro entre las pastas italianas y los vinos chilenos no fue fortuito. Fue un milagro de la inmigración y del sincretismo cultural.

Cada forma, cada ingrediente, cada cepa, encontró un interlocutor perfecto, creando una verdadera opereta de sabores.

pueden preguntarse: ¿qué tiene que ver la forma de la pasta con el vino? La importancia está en la salsa, era que no, pero para los italianos el tipo de pasta y la salsa son indivisibles, una sola y homogénea propuesta culinaria, que, junto al vino adecuado, se complementan y potencian en nuestra boca.

La mejor manera de aprender sobre estas combinaciones es vivir un tiempo en Italia. Ahí internalizarán, casi por osmosis, las formas, aromas y sabores de su cocina y, de paso, harán suyas muchas costumbres que enriquecen el cuerpo y el espíritu.

La regla básica de la pasta es que mientras más anchos son los fideos, más enjundiosa debería ser la salsa. Sólo una gran superficie es capaz de soportar y atrapar una receta contundente. Por el contrario, mientras más fina es la pasta, como los spaghetti, la salsa debe ser más liviana y delicada. ¿Y el vino?

Eso ya lo sabemos bien: un plato generoso necesita un vino generoso.

Empecemos con un clásico: la salsa bolognese. Su origen está en la Emilia Romagna y la ciudad de Bologna. Sin embargo, cuando se ordena bolognese en un restaurante fuera de Italia, usualmente –por no decir casi siempre– es servida con spaghetti.

Rico, pero no. Debido a la estructura de la salsa, que reúne a fuego lento carne picada, tomates, ajo, cebolla, orégano, zanahoria, apio, albahaca y tomillo, requerimos una pasta más ancha y plana, como es el caso del tagliatelle, capaz de contener y soportar de mucho mejor forma toda la riqueza de sabores.

En el caso del vino, mientras más rico es el plato, percibimos en menor grado sus taninos. Así un gran vino se siente mucho más suave. Esta mezcla de carne y vegetales requiere un tinto de cuerpo medio y con rica acidez. No puedo imaginar un vino mejor que un Carmenère de Peumo (Cachapoal) o Marchigüe (Colchagua). Un vino con la suficiente acidez para contrarrestar el tomate y que se complementa a las mil maravillas con el orégano, albahaca y tomillo. Frutal, aterciopelado y jugoso.

Las pastas planas son la mejor elección para las salsas cremosas. El pappardelle, por ejemplo, funciona súper bien con salsas en base a carne u hongos silvestres como el porcini. Cuando la personalidad de los vinos es similar a la del plato, puede producirse un efecto de cancelación. Me explico: si nuestra salsa tiene

PASTA E VINO A thousand shapes for as many flavors The meeting and later romance of Italian pasta and Chilean wines was not pure chance. It was rather a miracle of immigration and cultural syncretism. Each shape, each ingredient, each variety found the perfect match for the perfect operetta of flavors.

Many of you must wonder: What has the shape of pasta to do with the wine anyway? The sauce is what matters, right? Uhm… wrong answer, at least for Italians. For them, the type of pasta and the sauce are inseparable: a single, homogenous culinary vision that, along with the right wine, complement and enhance each other in our mouth.

The best way to learn about these combinations is to live in Italy for a while. There you will absorb, almost by osmosis, the shapes, aromas, and flavors of Italian cuisine and, at the same time, you’ll be able to adopt many of their customs that enrich not only the body but the soul as well.

The rule of thumb of pasta is ‘the wider the noodle, the heartier the sauce’. Only a large surface is capable of withstand and hold a rich recipe. Conversely, the thinner the pasta, like in the case of spaghetti, the lighter and more delicate the sauce. What about wine? You must be wondering. That, we know well: A generous dish calls for a generous wine.

Let’s start with a classic: Bolognese sauce. This sauce originates in Emilia Romagna and the city of Bologna.

However, when you order Bolognese sauce in any restaurant outside Italy, it is usually –not to say almost always– served with spaghetti. Yummy, but not right.

Given the structure of the sauce –ground meat (beef or veal), tomato paste, garlic, onions, oregano, carrots, celery, basil, and thyme simmered to perfection– the type of pasta must be wider and flat, like tagliatelle, capable of better holding all that richness of flavors.

In the case of wine, the richer the dish, the less we perceive the tannins. Therefore, wine appears milder.

This mix of beef and vegetables calls for medium-bodied red with rich acidity. I can’t think of a better choice than a Carmenère from Peumo (Cachapoal) or Marchigüe (Colchagua). A wine sufficiently acidic to offset the tomato that complements wonderfully with oregano, basil, and thyme. Fruity, velvety and juicy.

Flat pasta is the best choice for creamy sauces.

Pappardelle, for instance, works wonderfully with meat- or porcini mushroom-based sauces. When the personality of wines is similar to that of the food, they can annul each other. In other words, if our sauce has

Mi elección es un Blanc de Noir con notas terrosas, pero con la suficiente estructura y personalidad para elevar los sabores del plato.

Identificar los aromas dominantes de las recetas y de los vinos tempranamente es clave a la hora de intentar un buen maridaje. Si cambiamos nuestro porcini por champiñones y reemplazamos el tomate por crema, nuestro pappardelle demanda un Chardonnay con paso por barrica y notas de frutos secos, incluso en un estilo oxidativo, como un representante de Itata o Malleco hecho a la antigua. Si prefieren tinto, en gustos aún se está escribiendo, pueden optar por un Pinot Noir de Casablanca, siempre que sea ligero y suave como un satín.

Otras pastas planas, como el fettuccine, funcionan a la perfección con otras salsas cremosas como la Alfredo, en honor al restaurador romano Alfredo di Lelio, preparada originalmente con queso Parmigiano-Reggiano (parmesano) y mantequilla (otras variaciones han incluido crema, huevos frescos y ajo). Para acompañar esta receta, echen ojo a la nueva generación de Pinot Grigio. Su fresco bouquet, que irradia manzanas verdes, peras, nectarines y cítricos, hace un perfecto contrapunto con los componentes más pesados de la salsa.

La familia de pastas en forma de cintas, como los linguine, requiere de salsas corpulentas. Mi predilecta es la puttanesca del tradicional estilo de Campania, basada en tomates, aceitunas negras, alcaparras, orégano y aceite de oliva. Mi instinto me dice que necesitamos de un tinto profundo y con acentos especiados para hacer un contrapunto con la acidez de las aceitunas y alcaparras. Los nuevos Syrah chilenos de clima frío tienen esa estructura vertical y esas expresivas notas especiadas. Otra refrescante propuesta pueden esos rústicos y sabrosos País de Maule, Itata y Bío-Bío.

En Lazio, por otro lado, la puttanesca se amplifica con las anchoas.

Su salinidad incrementa la percepción de los taninos del vino y éstos pueden generar sensaciones de aspereza o astringencia. La salinidad, además, acentúa el calor o el grado alcohólico de los vinos. Es por eso que mi respuesta para este plato es un Brut Nature o Extra Brut. El

My choice is a Blanc de Noir with earthy notes but with sufficient structure and character to uphold the flavors of the food.

A key to good food/wine pairing is to identify the dominant flavors in recipes and wine early enough.

Let’s say that we replace porcini by white mushrooms and instead of tomato we use thick cream, then our pappardelle needs a barrel-aged Chardonnay with dried fruit notes, an oxidative style like that of wines from Itata o Malleco made the old-fashioned way. If red is your choice –to each his own– you may want to try a Pinot Noir from Casablanca, as long as it is light ad smooth as velvet.

Other flat pasta, like fettuccine, go perfectly well with other creamy sauces like Alfredo, named after the Roman restauranteur Alfredo di Lelio, originally prepared with Parmigiano-Reggiano (parmesan cheese) and butter (other variations include cream, eggs and garlic). To accompany this recipe, do check out the new generation of Pinot Grigio. Its fresh bouquet, full of green apples, pears, nectarines, and citrus fruit, is the perfect match for the heavier components of the sauce.

The family of ribbon-cut pasta like linguine needs heartier sauces. My absolute favorite is Puttanesca sauce in the traditional Campania style, with tomatoes, black olives, capers, oregano, and olive oil. My instinct says that we need a deep red with a spicy character to counteract the acidity of olives and capers. The new cool-climate Chilean Syrahs have that vertical structure and those spicy notes. Another refreshing option may be

In Lazio, the flavor of Puttanesca sauce is amplified with anchovies. Its salty taste increases the perception of tannins in wine and they can even create the sensation of harshness or astringency. Moreover, the salty taste also increases the heat or alcoholic degree of wines.

That’s why I recommend a Brut Nature or Extra Brut sparkler to go with this dish. The dry character of these sparkling wines manages briny notes very well for a harmonious and bubbly pairing.

CYLINDRICAL FLAVORS Do you remember the Disney film “Lady and the Tramp”?

That epic romantic-gastronomic spaghetti kiss scene?

Well, that and a lot more can be done with long and thin pasta, but do remember: That type of pasta needs lighter sauces, that is, sauces with more delicate structure like alla napoletana sauce, prepared with tomatoes, olive oil, garlic, and basil. This sauce, an ode to simplicity, must be paired with young and juicy wines, like a Cinsault from Itata, with delicious raspberry and sour cherry notes.

SABORES CILÍNDRICOS

¿Se acuerdan de la producción de Disney “Lady and the Tramp”? ¿Aquella épica escena romántica-gastronómica, donde los perrunos protagonistas unen sus bocas con los extremos de un spaghetti? Bueno, con pastas largas y finas, eso y mucho más es posible, pero recuerden: ese tipo de pasta requiere de salsas más livianas, de estructuras más delicadas, como la tradicional alla napoletana, preparada con tomates, aceite de oliva, ajo y albahaca. Esta salsa, que endiosa la simpleza, requiere de tintos jóvenes y jugosos, como un Cinsault de Itata, con sus exquisitas notas de frambuesas y guindas ácidas.

Lo mismo sucede con la gran Carbonara. Sus mágicos ingredientes –panceta, huevos, queso parmesano, aceite de oliva, sal y pimienta– llenan nuestra boca con elegancia y nos dejan una cierta sensación de saciedad. Para esta salsa con spaguetti me inclino por algún mineral Sauvignon Blanc de San Antonio o Limarí, o bien por esos nuevos Chardonnay que no han visto ni verán la madera. Así creamos una armonía en cuanto a estructuras, pero al mismo tiempo refrescamos el plato con notas de guijarros y hierbas.

Simplemente con un mix de hierbas, como albahaca, cilantro, tomillo y menta, junto a un chorro de buen aceite de oliva y unas cabezas de ajo, podemos elaborar platos tan gloriosos como capellini erbe aromatiche. Estos cabellos de ángel van muy bien con los Sauvignon Blanc de la precordillera de Curicó, que tienen el suficiente peso para soportar el ajo y la personalidad para complementarse con los sabores herbales.

Perciatelli o bucatini, estas pastas en forma de tubo, tienen un peso extra y son ideales para acompañarlas con salsas de pescados y mariscos, atrapando en su interior todos los jugos de nuestras recetas. Agreguen un poco de pulpa de tomate a su pasta alle vongole y sentirán que están en el mismo límite del mar y la tierra. Más aún si acompañan el plato con un rosado seco en base a Malbec o Syrah. Si dejan abajo del bote al tomate, y privilegian sólo los sabores del mar, prefieran un fresco y seco Moscatel de Itata o, si son más emperifollados, un Blanc de Blanc de Casablanca.

DOLCE VITA

Cuando mencioné que las pastas más planas atrapan mejor las salsas cremosas, por favor no piensen que me olvidé de ingredientes como el salmón, vodka y crema fresca. ¿Cómo podría hacerlo, si los polacos producimos el mejor vodka del mundo? Pensemos en fettuccine, una pasta lo suficientemente ancha para soportar la suculencia de la salsa.

O un farfalle (corbata), ¿por qué no? Esta combinación llama a gritos un blanco mineral, cremoso y muy bien estructurado. Y la respuesta es una sola: un Chardonnay del Limarí.

Otra forma mágica que contiene muy bien este tipo de salsas cremosas son los fusilli (espiral). Estas pastas me gustan con la famosa salsa quattro fromaggi. El queso gorgonzola o roquefort va muy bien con vinos semi secos, especialmente en base a Riesling (y en Casablanca podemos encontrar un gran exponente). Mientras más intenso es el queso, más dulce debería ser el vino. La salsa quattro fromaggi también es una excelente compañera para espumosos elaborados bajo el método tradicional, con una larga guarda con sus lías. Esas notas de levadura y pan tostado del vino, sumadas a su estructura firme y cremosa, crean una preciosa y balanceada armonía.

in this sauce–bacon, eggs, parmesan cheese, olive oil, salt, and pepper– fill your mouth with elegance, leaving a feeling of fullness. My choice to pair spaghetti carbonara would be a mineral Sauvignon Blanc from San Antonio or Limarí, or one of those new Chardonnay totally alien to oak. That creates harmony in structures and refreshes the dish with grassy notes.

With as little as a mix of herbs like basil, cilantro, thyme, and mint, a dash of olive oil, and some cloves of garlic you can make a dish as glorious as capellini erbe aromatiche. This very thin pasta marries well to Sauvignon Blancs from the Andean foothills in Curicó that have the weight to withstand garlic and the personality to complement the herbal flavors.

Perciatelli or bucatini, the thick spaghetti-like pasta with a hole running through the center, have some extra weight and are ideal to be served with fish or seafoodbased sauces, as the juice of our recipes will run inside the pasta. Add a little tomato pulp to your pasta alle vongole and you will feel on the border of land and sea. No other wine goes better than a dry Malbec- or Syrah-based rosé. If no tomato is added and seafood is the king of the preparation, I suggest that you try a fresh and dry Muscat from Itata or a Blanc de Blanc from Casablanca if you’re in a fancier mood.

DOLCE VITA When I said that flat pasta holds creamy sauces better, please do not think that I overlooked ingredients like salmon, vodka, and fresh cream. How would I? After all, the best vodka in the world comes from Poland (like myself)! Let’s talk fettuccine now. This sufficiently wide pasta can hold a creamy sauce well. The same is true for farfalle (bow-tie pasta), why not? This combination cries out for a mineral, creamy, and well-structured white. And there’s only one answer for that: a Chardonnay from Limarí.

Another way to contain creamy sauces is to go for fusilli, as their corkscrew shape traps sauce in it. I love fusilli quattro fromaggi. Gorgonzola or Roquefort cheeses pair very well with semi-dry wines, especially if they are Riesling based (and Casablanca excels in this sense). The more intense the cheese, the sweeter the wine you serve with it. Quattro fromaggi sauce is also the perfect companion for sparkling wines produced following the traditional method, with lengthy aging with its lees. The yeast and toasted bread notes of the wine and its firm and creamy structure result in delicious and balanced harmony.

On the other hand, sweet wines marry to perfection with spicier or hot sauces, like the bad-tempered Arrabbiata in its most traditional or Roman form (tomatoes, red chili, garlic, and olive oil). The sweetness of the wine cubs the excessive spiciness of the dish by inducing salivation, which in turn causes a feeling of relief on the numb palate. Forget about tannic wines if

El dulzor del vino logra mantener a raya el excesivo picor del plato, mientras su acidez nos hará salivar, dándonos una sensación de alivio en nuestro adormecido paladar. Olvídense de los vinos tánicos con el picante. Sólo acentuarán su astringencia. Prefieran siempre vinos dulces o semi dulces, ojalá con bajo contenido alcohólico, en sus versiones tranquilas o burbujeantes.

Ah, casi se me olvida. Estas salsas con carácter también van muy bien con pastas cortas en forma de tubo, como penne, rigatoni y ziti (las preferidas para sopas o guisos). A mí me encantan con pesto, especialmente en su versión original de Génova, con albahaca, nueces, queso rallado, ajo, mucho ajo, y un gran chorro de aceite de oliva.

Para resaltar todos estos aromas es imprescindible encontrar un blanco mineral, quizás de origen volcánico, seco y de estructura oleosa, pero al mismo tiempo fresco y vibrante.

FIN DE FIESTA

Al principio dije que las salsas más generosas van mejor con pastas más anchas, pero siempre hay una excepción a la regla. Recetas ancestrales como la toscana fagioli, esa exuberante mezcla de pastas y porotos, con tomates, salvia, romero y peperoncino, me gustan con estos tubos diminutos como el ditalini. Este plato exige tintos jóvenes y vibrantes, con acideces altas, pero al mismo tiempo con taninos. Inmediatamente pienso en un Carignan del Maule, no demasiado corpulento ni con demasiada guarda, más bien joven y vivaz, que acaricie el plato con sus notas de ciruelas, guindas ácidas y flores silvestres.

Sí. Me pueden decir que no hay mejor combinación para las pastas que los vinos italianos. Tienen razón. Los maridajes regionales son insuperables. Pero si no prueban estas recetas con los vinos de los particulares terruños de Chile, estarán perdiéndose una gran experiencia sensorial y profundamente gourmet. Mi percepción, quizás por la expresiva colonia italiana presente en Chile, es que la cocina de la bota y los vinos chilenos simplemente se enamoraron a primera vista. Si no me creen, visiten el pueblo de Capitán Pastene. Todos los escépticos deberían ir con una botella de País y comer en sus poéticas trattorias.

Después de eso, no hay más que decir. ¡Pasta e basta! t

you’re having hot food. That will only stress astringency.

Better go for sweet or semi-sweet wines, ideally with low alcohol, in their still or bubbly versions.

Oh, I almost forgot. Spicy sauces also go very well with short, tube pasta like penne, rigatoni, ziti, cavatappi, and campanelle (the all time favorite for soups or stews).

I love them al pesto, particularly in the Genoa style, with basil, walnuts, grated cheese, garlic, lots of it, and a dash of olive oil. To underline those aromas you must find a mineral and dry white, perhaps one with a volcanic origin, somehow fatty, but at the same time fresh and vibrant.

AND TO FINISH At the beginning, I said that more generous sauces go better with wider pasta, but there’s always the exception to the rule. Ancient recipes like fagioli alla toscana, that exuberant mix of beans and pasta, tomatoes, sage and peperoncini, are perfect with ditalini, the tiny tube-shaped pasta. This dish calls for young and lively reds, with high acidity and tannins galore. I immediately think of a Carignan from Maule, round enough and sufficiently aged, but young and snappy, with notes of plum, sour cherry, and wild flowers.

True. You can tell me nothing goes better with Italian food than Italian wines. You‘re right. Regional pairings are unbeatable. But, if you overlook these recipes with the wines from Chile’s unique terroirs, you’ll be missing a great sensory and profoundly epicurean experience.

My perception, perhaps because of the expressive Italian community living in Chile, is that Italian food and Chilean wines simply fell in love at first sight. If you don’t believe me, visit the town called Capitán Pastene.

All the skeptics should go there with a bottle of País and eat at its quaint trattorias. Nothing else to add.

Vendimia, tiempo de festejar

Marzo y abril son los meses donde la vendimia no sólo se toma los campos, sino también las calles y plazas de muchas ciudades. En Santa Cruz, Curicó, Buin, Isla de Maipo, Casablanca, Talca, Pirque, todos celebraron… hasta en Toconao, en pleno desierto de Atacama, donde también las parras nos regalan su fruta y su vino. Mucha alegría, entretenidas competencias, música, variada gastronomía, folclore, artesanía y, por supuesto, vino, buen vino, fue el denominador común de las esperadas fiestas de la vendimia.

Harvest Season: time to celebrate!

In March and April, the harvest season not only rules the fields but also the streets and main squares in many cities. That much is true for Santa Cruz, Curicó, Buin, Isla de Maipo, Casablanca, Talca, Pirque they all celebrated….even Toconao, in open Atacama Desert, where the vines gift us with their grapes and their wine. Great joy, music, fun competitions and games, delicious food, folklore and crafts, and certainly wines were the common denominator of these long-awaited annual festivals.

Vinos de capa y espada Cloak-and-sword Wines

Johan Huizinga, uno de los más importantes historiadores de la Época Moderna, escribió una vez que “la historia es la forma espiritual en que una nación se rinde cuentas de su propio pasado”.

Quizás ésta sea la principal razón por la que celebro la reciente obra de mi colega Pablo Lacoste, historiador oriundo de Mendoza, quien durante toda una década se dedicó a investigar una gran cantidad de archivos y documentos relacionados con la historia de la vitivinicultura argentina, analizando diversas fuentes en ambos lados de los Andes y en varias bibliotecas de Europa, trabajo que redundó en la publicación de “Vinos de capa y espada”, una obra única en su tipo.

En 350 páginas y nueve capítulos, que van desde los orígenes de la vitivinicultura argentina en 1561 hasta los inicios del proceso modernizador iniciado por los inmigrantes franceses e italianos (1861), el autor va reconstruyendo los tres siglos que le tomó a Argentina, y a Mendoza en particular, convertirse en el principal polo vitivinícola de América.

De igual manera como ocurre con nuestro país, a través de la historia del vino transita una parte importante de la historia económica y política argentina. La cultura del vino ha ocupado un lugar de gran valoración simbólica, histórica y patrimonial.

No obstante, en Chile no existe nada parecido a esta obra. Hasta la fecha, nuestra historiografía vitivinícola no se ha movido en gran medida más allá de unos pocos ensayos académicos –algunos elaborados por el propio Lacoste, hace ya varios años avecindado en Chile– y un par de publicaciones, donde resalta la Historia del Vino en Chile de José del Pozo, trabajo que aborda parcialmente la historia de algunas viñas tradicionales durante los siglos XIX y XX. Llevar a cabo una obra como la que presentamos implicó además concitar el apoyo de diversos actores, tanto públicos como privados, los que hicieron posible su financiamiento, tales como el Fondo Vitivinícola Argentino y la Universidad de Santiago de Chile, casa de estudios donde el autor ejerce en la actualidad como académico e investigador.

Sinceramente espero que en un futuro no muy lejano, en Chile puedan acontecer cosas parecidas a ésta. Por lo pronto, la invitación es a conocer de buena fuente y notable pluma la historia colonial del vino en Argentina.

Johan Huizinga, one of the greatest historians of modern times once wrote “history is the spiritual way in which a country becomes accountable for its past.”

Perhaps this is why I applaud the recent work of my colleague, Pablo Lacoste, a historian from Mendoza, Argentina, who devoted a decade to do research in a large number of archives and documents related to the history of Argentine winegrowing, including various sources on both sides of the Andes and several libraries in Europe. The outcome of that research is the book called “Vinos de capa y espada” (Cloak-and sword wines), a one-of-a-kind publication.

Throughout 350 pages and 9 chapters, the author takes the reader from the origins of viticulture in 1561 in Argentina to the early days of modern winemaking undertaken by French and Italian immigrants (1861) and in so doing, he rebuilds the three centuries it took Argentina, notably Mendoza, to become America’s winemaking hub.

Just as it happens in our country, a major part of the Argentine economic and political history can be pinpointed in the history of wine. The culture of wine has gained great symbolic, historic and heritage appreciation.

Nevertheless, no publication of this kind exists in Chile. To date, our wine historiography has remained within the confines of a few academic essays –some written by the very Lacoste, who has been living in Chile for some time now– and a pair of publications, including Historia del Vino en Chile by José del Pozo, which partially covers the history of a selection of traditional wineries during the 19th and 20th centuries.

Writing a book like this one also commanded the support of various actors, both public and private, who made financing possible, like the Argentine Wine Fund and Universidad de Santiago de Chile, the university where the author currently works as a professor and researcher.

I sincerely hope that in the not-too distant future, a work of these characteristics will be written in Chile. For the time being, let us learn about the colonial history of wine in Argentina from a reliable source with a remarkable quill.
