egún una investigación de International Wine and Spirit Research ( IWSR) dada a conocer en Vinexpo Bordeaux, el consumo mundial de vino crecería 3,7% entre 2014 y 2018, llegando a 2.732 millones de cajas, equivalentes a 32.780 millones de botellas. Esta es una buena cifra, ya que implica un mayor dinamismo al registrado entre 2009 y 2013, cuando la demanda se incrementó 2,7%, llegando a 31.700 millones de botellas. Es decir, dentro de cuatro años, se consumirán en el mundo mil millones de botellas de vino más que ahora.

De acuerdo al estudio, EEUU seguirá liderando el consumo mundial, con un importante crecimiento de 11,3% y 378 millones de cajas. Lo escoltarán tres consumidores tradicionales como son Francia, Italia y Alemania, aunque los dos primeros verán caídas de 2,8% y 5,1%, respectivamente, y el país germano, un discreto incremento de 1,1%.

China seguirá siendo un importante impulsor de la demanda de vino, aun cuando deja atrás el impresionante aumento de los años anteriores (69,3% entre 2009 y 2013), para crecer 24,8% al 2018, llegando a 181 millones de cajas y ubicándose como el quinto mercado del mundo.

La torta se agranda. ¿Cómo lo aprovechará nuestro país? El nuevo presidente de Vinos de Chile dice en una entrevista en este medio que están analizando en qué mercados se van a focalizar los (escasos) recursos de que dispone Chile para promoción, aunque obviamente EEUU, Brasil, Canadá, Asia y algunos países de Europa serán prioridad. “Es importante considerar la inversión en aquellos países que produzcan ventas, pero también en aquellos lugares que generen sinergias y crecimiento de nuestra imagen”, señala.

Desde esta tribuna, algunas cifras que pueden aportar a la discusión: la lógica indica que se deberían centrar las acciones en aquellos mercados donde se prevé se destaparán más botellas que antes.

ccording to a report released by International Wine and Spirit Research (IWSR) at Vinexpo Bordeaux, world wine consumption is expected to grow by 3.7% between 2014 and 2018 to 2.732 billion cases or 32.78 billion bottles. This is good news, since it implies that the market will be more dynamic than it was between 2009 and 2013, when demand increased by 2.7% to 31.7 billion bottles. In other words, a billion more bottles will be consumed in four years from now.

The study also reveals that the U.S. will continue to lead world consumption, since it will grow by 11.3% or 378 million cases, followed by traditional consumers like France, Italy, and Germany, even though in the two former markets consumption will decline by 2.8% and 5.1%, respectively, and Germany will grow discretely by 1.1%.

China will continue to be a major driver of demand, yet, consumption in the Asian country is not expected to soar as in the past few years (69.3% between 2009 and 2013), but to increase by 24.8% by 2018, to 181 million cases, which would put it in fifth place among world wine consumers.

There’s more cake for everyone. How will our country capitalize on that? In a recent interview with our editor, the new chairman of Wines of Chile said that the association is assessing which markets will (the limited) promotion resources be targeted to, although certainly the U.S., Brazil, Canada, Asia and some European countries will be a priority. “It is important that investments are made in countries that generate sales, but also on those with which synergies are developed and where our image can grow stronger.”

From this vantage point, some figures could provide a very significant input to the discussions: Common sense tells us that actions should be focused on the markets where the most bottles will be uncorked.

esde que tengo uso de razón, y probablemente mucho antes que eso, se escucha, a veces majaderamente, que los vinos del Nuevo Mundo, y en particular los chilenos, tienen un escaso potencial de guarda. Los productores franceses han convertido esta sentencia en una proclama. Cierro los ojos y oigo: “sólo los grandes terroir, es decir, los franceses, tienen la virtud de producir vinos que evolucionan con naturalidad y belleza, que van develando distintas capas aromáticas, que vale su precio esperarlos para que muestren lo mejor de sí mismos”.

“He probado algunos vinos antiguos europeos, como un Collioure de 1914. Estaba horrible. No le quedaba nada de mediterráneo. Pero, por otro lado, también he tenido la oportunidad de descorchar algunos Sauternes y Porto post segunda guerra. Ahí es otra historia. Estaban buenísimos, ricos, con notas de frutos secos, de bosque, de aromas terciarios”, afirma el enólogo francés Benoit Fitte, responsable de los vinos de Viña Requingua.

For as long as I can remember, and probably even before that, I have been hearing the same old phrase that New World wines, especially Chilean wines, have a limited aging potential. And French producers have used and abused this belief as if it were a proclamation of truth. I just close my eyes and there goes the same blah blah again: VITIS Magazine MAYO I JUNIO 2015 I 5

Inmediatamente se me vienen a la cabeza las cosechas antiguas de Don Melchor de Concha y Toro, Casa Real Reserva Especial de Santa Rita, y Cabo de Hornos de San Pedro, que entonces nacía en un pequeño islote rodeado de ese verde e inmenso océano de Molina. O, para ir aún más lejos, viajando siempre hacia el pasado, aún saboreo algunas soberbias botellas de Antiguas Reservas de Cousiño Macul, particularmente de los años 70 y 80; un Carignan de Lomas de Cauquenes y del Centro Experimental del año 69 –qué cosecha más controvertida–; y un Cabernet Sauvignon de Santa Carolina de finales de los 60, seguramente del Maipo más urbano, que sobrevivió a los terremotos y las remodelaciones, y que se hallaba como un obelisco. Paradísimo.

En esos tiempos, la viticultura y enología eran muy distintas. Las uvas se cosechaban en marzo, cuando sus taninos aún latían, con alcoholes probables muy bajos, que apenas se encumbraban por sobre los 12°, y acideces que regalaban vida, mucha vida. El mercado interno, que entonces bebía –no sé si mejor, pero sí mucho más– estaba acostumbrado a esos taninos algo raspabuches, que no se deshacían en la boca como terrones de azúcar en la sartén de Rolland. Eran vinos más recios. El concepto ready to drink aún no aparecía en los manuales de enología.

Sin embargo, los emblemas chilenos modernos –llamados o mal llamados íconos–, tienen otra lógica, otra intención, otra razón de ser, que va mucho más allá de un concepto enológico, entrecruzándose y haciéndose uno con la estrategia comercial de las viñas. Esos vinos, especialmente a partir del nuevo milenio, cuando tímidamente los enólogos comenzaron a rehuir del sol y cosechar uvas más frescas, emocionan por su elegancia y profundidad de sabores.

“Viñedo Chadwick 2005 me ha sorprendido ya un par de veces cuando lo he probado.Aunque si hablamos de potencial de guarda, 10 años es aún poco. Mis vinos más antiguos tienen 11 años y para evaluarlos necesitaríamos otros 10 años. Sí creo que Don Max 2013 y Seña 2013 vienen con un excelente potencial de guarda, al igual que The Blend 2012 y toda la nueva producción de Syrah, Pinot Noir y Chardonnay de Aconcagua Costa. Son vinos que estoy seguro van a mostrar una linda evolución”, opina Francisco Baettig, director técnico de Viña Errázuriz.

Para Arnaud Hereu, enólogo jefe de Viña Odjfell, su experiencia con vinos antiguos chilenos no ha sido muy buena. El tema es la falta de una cultura de país vitivinícola. No existe la tradición de guardar vinos o, cuando se hace, se dejan en lugares inadecuados y expuestos a los 8 meses de calor que sufrimos durante el año. Así los vinos no aguantan. Terminan maltratados. Sin embargo, eso no quiere decir que no tengan un gran potencial de guarda. “El primer vino que hicimos es Aliara 2001. Tiene un poco de brettanomyces, pero está súper bien parado por su gran acidez”, sostiene el enólogo.

“only the great terroirs, the French, that is, are capable of producing wines that evolve with natural charm and beauty, wines that reveal layer after layer of fine aromas, wines that are worth waiting for so that they express themselves at their best.”

“I have tried some old European wines, like a Collioure 1914, which was simply horrible. No traces of its mediterranean origin.

But, on the other hand, I have also had the chance to uncork some post-WW2 Sauternes and Port. That is a totally different story.

They were very good and tasty, with notes of dried fruit, forest, and tertiary aromas,” says the French winemaker Benoit Fitte of Viña Requingua.

I immediately recall the old vintages of Don Melchor from Concha y Toro, Casa Real Reserva Especial from Santa Rita and Cabo de Hornos from San Pedro, which at the time was produced in what was then a small island in the green immensity of Molina. Or, further still into the past, I still remember some splendid bottles of Antiguas Reservas from Cousiño Macul, particularly from the 70s and 80s, a 1969 Carignan from Lomas de Cauquenes and the Experimental Center –what a controversial vintage 1969 was–, and a Cabernet Sauvignon from Santa Carolina from the late 1960s, maybe grown in what today is a succession of urban development lands, that survived earthquakes and renovations.

In those days, viticulture and enology were very different than today. Grapes were harvested in March, with tannins still very present, very low probable alcohol barely above 12°, and lively acidity.

The domestic market, which by then drank much more than today, was well used to those coarse tannins. The wines were well-structured, and the ‘ready-to-drink” concept was nowhere in sight yet.

However, modern Chilean emblems –often called icons for good or bad– respond to a different logic and raison d’être that go far beyond the mere enological concept, blending completely with the commercial strategy of their wineries. These wines, especially those produced after the new millennium when winemakers slowly began hiding from the sun to harvest fresher grapes, are a masterpiece of elegance and flavor depth.

“Viñedo Chadwick 2005 has impressed me a couple of times.

But if we want to be serious about aging potential, 10 years is still a short period. My oldest wines are 11 years old, but before evaluating them I think we need at least 10 more years.Yes, I believe both Don Max 2013 and Seña 2013 have an excellent potential, just like The Blend 2012 and the entire new production of Syrah, Pinot Noir and Chardonnay from Aconcagua Costa. I am convinced these wines will have a beautiful evolution,” says Francisco Baettig, technical director of Viña Errázuriz.

For Arnaud Hereu, chief winemaker of Viña Odjfell, his experience with older wines has not been precisely memorable.The problem here is the absence of a ‘wine country’ culture.We lack the tradition of storing wine, and when we do we store them in the wrong places, exposing them to the 8 months of heat we have every year. No wine can withstand such ill-treatment. But that has nothing to do with their aging potential.“Our first wine was Aliara 2001. It has some brettanomyces, but it is in excellent condition thanks to its great acidity,” he adds.

FROM THE BEGINNING In order for wines to evolve even further and unveil new and better attributes, they must be managed differently, from the vineyard up.

According to Gabriel Mustakis, chief winemaker of Cousiño Macul, making long-lived wines requires a number of conditions, such as a suitable terroir and old vines that have perfectly adapted to the ecosystem.

DESDE EL COMIENZO

Para que los vinos puedan seguir desarrollándose con el tiempo, y reflejar nuevos y quizás mejores atributos, deben tener un manejo distinto, que parte desde el mismo viñedo. Según Gabriel Mustakis, enólogo jefe de Viña Cousiño Macul, para hacer vinos longevos se requieren ciertas condiciones, como contar con un terroir adecuado y viñas antiguas que estén en perfecta armonía con su ecosistema.

“Lo principal es tomar la decisión de hacer este tipo de vinos. Debe haber cierta intencionalidad. Por ejemplo, en Lota y Finis Terrae partimos trabajando desde la misma viña, cosechando uvas con pHs más bajos para que perduren en el tiempo. No tienen una carga tánica tan marcada, pero sí mucha concentración de fruta. Tienen un buen armado que nos permite que el vino evolucione bien en los 14 a 16 meses que pasa en barrica y después en botella”, sostiene.

En la misma línea opina Francisco Baettig. Para el enólogo hay tres aspectos fundamentales: intensidad colorante (antocianos), acidez (pH bajo) y cierta estructura tánica. “Creo que la sobremadurez va totalmente en contra del potencial de guarda de un vino. Creo que a Chile le sobra luz y sol, por lo tanto los manejos vitícolas son clave. Hay que evitar la exposición de la fruta y el estrés hídrico de la planta. Hay que cosechar un poco más temprano. En la bodega hay que evitar la sobre extracción y cuidar el vino, sin moverlo innecesariamente”, explica.

El mayor desafío, y quizás el más complejo, es cosechar uvas con una buena acidez. Sólo en los lugares adecuados, y con un buen manejo del viñedo, puede lograrse un buen punto de encuentro entre la madurez tecnológica (grados Brix) y la fenólica, sin que se degraden excesivamente los ácidos naturales de la fruta.

“Es muy importante que la acidez sea natural. Con la acidez corregida los vinos se endurecen mucho y no hay una mejora con la guarda. En Requingua todos los grandes vinos los trabajamos con acidez natural. Si hay que cosechar antes, lo hacemos. Lo que para algunos es un riesgo, para nosotros es sólo sentido común”, dice Benoit Fitte.

Para Arnaud Hereu, el gran problema se produjo a principios de los 90, cuando se instaló la moda de cosechar muy tarde en otoño, cuando los enólogos buscaban casi con desesperación una pepa crocante, emulando a Scrat, el personaje de la cinta “La era del hielo” que persigue obsesivamente una inalcanzable bellota. “Esos vinos con pHs altos y baja acidez se cansan rápidamente. Hoy no se pueden catar. Los vinos que estamos haciendo en la actualidad estarán mucho mejores en 20 años más que los vinos que se hicieron hace 20 años”, asegura.

EL CABERNET ES EL PATRÓN

Sin duda hay cepas más apropiadas que otras para elaborar vinos más longevos. El sentido común nos dice que las cepas con estructuras tánicas y acideces más firmes, tienen las mejores posibilidades de envejecer con dignidad. Pero tampoco se trata de hacer vinos súper concentrados. El mejor ejemplo son los emblemáticos Pinot Noir de la Borgoña, una cepa delicada pero con huesos firmes, cuyas botellas antiguas se subastan a precio de oro en Christie’s. Pareciera que también hay otras variables que entran en la ecuación, como la importancia del terroir y de la tradición vitivinícola.

“Los vinos con más aptitud para envejecer que he probado son los grandes Pinot Noir de Borgoña. En blancos, sin duda, los vinos dulces como Sauternes, siempre y cuando se hagan 8 I VITIS Magazine MAYO I JUNIO 2015

“What we need here is the decision to make this type of wines, an intention, as it were. For example, at Lota and Finis Terrae we started from the vineyard itself, harvesting grapes of lower pH to ensure the wine would last longer. They do not have that heavy tannic load, but they do have a lot of fruit.Their structure is perfectly capable of evolving satisfactorily during the 14 to 16 months they spend in the barrel and then in the bottle,” he points out.

Francisco Baettig shares this feeling. In his opinion, there are three key aspects: Color intensity (anthocyanins), acidity (low pH) and a certain tannic structure. “I believe over-ripeness goes totally against a wine’s aging potential. Chile has so much light and sun that good vineyard management is key. Exposing the grapes to the sun and water stress is something to be avoided. Harvesting dates must be moved forward, and in the cellar we need to stay away from overextracting the wine and stirring it unnecessarily,” he explains.

The greatest and probably the most complex challenge is to harvest grapes at the right point of acidity. Only if they grow in the right place and with the appropriate viticultural management can grapes achieve the desired balance between technological (degrees Brix) and phenolic ripeness without excessively degrading the natural acids of the fruit.

“Acidity has to occur naturally. Correcting acidity will only cause the wine to stiffen up and this cannot be corrected with aging. In Requingua, all the wines we produce retain their natural acidity. If we feel we need to harvest earlier we just go ahead and do it.What for some appears to be a risk, for us is just common sense,” adds Benoit Fitte.

For Arnaud Hereu, the big problem came around in the early 1990s, when everybody started to harvest late in the fall.

Back then, winemakers were desperately seeking a crunchy seed, much like Scrat, the squirrel in the flick “The Ice Age” that desperately tries to get hold of an elusive acorn. “These wines with high pH and low acidity tire out quickly. Today you cannot even taste them. But the wines we are making now will be much better 20 years from now than the wines made 20 years ago,” he assures.

con uvas botritizadas. Los elaborados con uvas deshidratadas, como la mayoría de los Late Harvest chilenos, no evolucionan bien y tienden a desarrollar aromas de hidrocarburos. En Chile me quedo definitivamente con el Cabernet Sauvignon por su estructura tánica y acidez”, opina Fitte.

Gabriel Mustakis coincide plenamente con el enólogo de Viña Requingua. “Con el Cabernet tenemos más historia y los vinos han demostrado con creces su gran potencial de guarda. Pero a mí también me ha sorprendido el Merlot que entra en la mezcla de Lota. Evoluciona súper bien cuando sus viñas están bien integradas a la tierra. No es una cepa tan ligera, como muchos piensan. Tiene una buena estructura, aunque el patrón es el Cabernet”, sostiene.

Arnaud Hereu no tiene mucha experiencia con vinos antiguos en base a Cabernet Sauvignon, pero sí está muy contento con la gran evolución que ha tenido su Carignan de Tres Esquinas, en el secano interior maulino. Aunque cierta literatura señala que se trata de una cepa oxidativa, la experiencia del enólogo ha sido muy distinta. La calidad excepcional de la cosecha 2005 le permitió embotellar Odjfell, el primer ícono 100% Carignan, y todo indica que la cosecha 2012 irá por un camino similar o quizás aún mejor. “Lo que pasa es que en este caso no estamos hablando sólo de Carignan, sino de un terroir específico. Eso, definitivamente, cambia las cosas”, señala.

Para Francisco Baettig todas las variedades tienen potencial de guarda, siempre y cuando provengan de un buen viñedo y terroir, y se vinifiquen adecuadamente. “Una cepa compleja en términos de potencial de guarda es el Carmenère, ya que su acidez es menor y su pH un poco alto. Probablemente para que alcance su mayor potencial de guarda y evolución, hay que cosecharlo un poquito antes de lo que hemos venido haciendo y, sobre todo, debe provenir de viñas viejas, con una menor carga de pirazina”, explica.

PRESIÓN COMERCIAL

Pese a las buenas experiencias con vinos que desafían el tiempo, muchas veces las necesidades comerciales empujan estos vinos al mercado antes de tiempo. Descorchar uno de esos vinos, con sólo 2 ó 3 años de guarda, nos hace sentir que estamos cometiendo un infanticidio. Pero ésa es la realidad.

Muchos de los vinos llamados íconos se venden demasiado jóvenes, prácticamente imberbes, cuando recién comienzan a insinuar sus mejores atributos.

“Bueno, es un tema comercial. Eso lo hacen hasta los franceses con sus Premier Cru. Las viñas prefieren que sea el consumidor el que guarde el vino para no pagar el capital inmovilizado. En Chile, además, la legislación es muy básica. No existe una

Without doubt, other varieties are better suited to make longlasting wines. Common sense tells us that those varieties with firmer tannins and acidity stand a better chance to age gracefully. But at the same time it is not a question of selling hyper-concentrated wines.The best example is the emblematic Pinot Noir from Burgundy. The bottles of this delicate yet firm wine sell incredibly well at Christie’s auctions. And there are also other factors in this equation, such as the terroir and the winemaking tradition.

“Of all the wines I have tasted, the ones with the best aging potential are the great Pinot Noirs from Burgundy. In whites, without question sweet wines like Sauternes, provided they are made from botrytized grapes. The ones made from sun-dried raisins, like most Chilean Late Harvests, do not evolve well and tend to produce fuel-like aromas. From Chile, I would definitely pick up Cabernet Sauvignon for its tannic structure and acidity,” says Benoit Fitte.

Gabriel Mustakis agrees completely. “We have a longer history with Cabernet, and these wines have already proved their worth as good aging material. But I have also had pleasant surprises with the Merlot used in the Lota blend. It evolves remarkably well when its grapevines are well integrated with the land. And it is not as light as many people think. It has a good structure, although the real king is Cabernet,” he affirms.

Arnaud Hereu does not have much experience with old Cabernet Sauvignon-based wines, but he is quite happy about the way his Carignan from Tres Esquinas, a vineyard in the Maule dry-farmed lands, is evolving. Although some of the literature points out that this is an oxidative variety, his experience as a winemaker says something different.The exceptional quality of the 2005 vintage allowed him to bottle Odjfell, the first 100% Carignan icon, and all evidence points to the fact that 2012 will follow a similar, if not better, course. “What happens is that in this case we are not just talking about Carignan, but about a specific terroir. And that changes everything,” he points out.

For Francisco Baettig, all varieties have a certain aging potential, provided they are sourced from a good vineyard and terroir and are vinified properly. “A variety that poses certain complexities in terms of its aging potential is Carmenère, as its acidity is lower and its pH a bit high. So maybe if we want to extend its aging and evolution potential we will have to harvest it a bit earlier than we have thus far, and ensure it is sourced from older vines with lower pyrazinic load,” he explains.

THE PRESSURE TO SELL Despite the number of good experiences with wines that defy time, often times there is a commercial decision to release these wines ahead of time. Uncorking one of these wines that has been aging just 2 or 3 years is like a premature birth. But that is the way it is. Many of the so-called icon wines are sold while they are still too young, at a time when they are barely starting to show their best attributes.

“Well, this is a commercial issue. Even the French do that with their Premiers Crus. Wineries prefer consumers to store and age their wines in order to avoid paying for stagnant stocks. Also, the Chilean legislation is very primitive. No appe

apelación de vinos “íconos” que regule esto (habría idealmente que usar otro nombre, en todo caso). Tampoco en los vinos Reserva. En Rioja existen los Crianza, Reserva y Gran Reserva, donde eso está normado. Aquí, cualquiera puede llevar el calificativo Reserva”, explica Francisco Baettig.

“Los Bordeaux en primeur son imbebibles. Son como mascar una tabla. Los resultados en catas comparativas entre grandes vinos chilenos y franceses o italianos, como las ha hecho Errázuriz, son más que evidentes. Los vinos chilenos se muestran bien y muchas veces mejor. No se puede comparar un gran vino francés con un chileno de estantería. Tienen que estar en igualdad de condiciones. Que los franceses gasten plata y compren los grandes vinos de Chile. Se van a dar cuenta que no hay una gran diferencia en términos de evolución”, dice Benoit Fitte.

“El prejuicio es muy grande. El Nuevo Mundo es distinto, pero cuando haces un vino 100% enfocado a la calidad las cosas cambian. No pueden decir que esos vinos están por debajo de los suyos. Incluso tenemos vinos que evolucionan mucho mejor. Simplemente se quedan sin argumentos”, agrega el enólogo de Cousiño Macul.

Uno de los casos que mejor refleja esta realidad fue protagonizado por la Viña Aresti. El año pasado relanzaron Family Collection 2001, un Cabernet Sauvignon curicano que se había vendido hace ya más de una década. Sin embargo, esas 300 cajas que guardó el fundador de la viña para su consumo personal, hoy no sólo demuestran el tremendo potencial de guarda de este vino, sino además la acertada movida comercial de volver a ofrecerlo a los consumidores, generando mucho ruido, pero también muchas nueces.

Arnaud Hereu dice que todo depende de la línea y el concepto enológico detrás de los vinos. “Para Odjfell y Aliara pienso en la guarda. No los hago para que los consumidores se los tomen en 10 años más, pero sí para que tengan un buena evolución.

Estos vinos perfectamente se pueden guardar 25 años, como los buenos franceses. Lamentablemente estamos obligados a hacer vinos que se vendan lo más rápido posible. A veces pruebo Odjfell 2005 y me pregunto por qué no lo estamos vendiendo ahora.

La parte comercial nos come. Simplemente no podemos. La viña no tiene la capacidad para guardar cosechas enteras”, explica.

In Rioja, for example, the Crianza, Reserva and Gran Reserva appellations provide a solid regulatory framework. But here any wine can bear the name Reserva,” Mr Baettig explains.

“Bordeaux en primeur wines are simply undrinkable. It is like chewing on wood. The results of comparative tastings between great Chilean and French or Italian wines –like the ones Errázuriz has been conducting– are there to prove it. Chilean wines stand up to the test and sometimes perform even better than their Old World contenders. One cannot compare a fine French wine with a regular shelf Chilean wine. They must be on an equal footing. So let the French spend their money and buy the great Chilean wines. Then they will realize there is not much difference in terms of evolution,” Mr Fitte points out.

“There is a great deal of bigotry. The New World is certainly different, but when you make a wine that is totally focused on quality things change. They cannot say these wines are in any way inferior to theirs. We even have some wines that evolve much better. And then they run out of arguments,” Mr Mustaki adds.

One of the cases that best reflects this is Viña Aresti. Last year they re-launched Family Collection 2001, a Cabernet Sauvignon from Curicó that was sold more than a decade ago.

However, these 300 cases the founder of the winery had put away for personal consumption not only prove the wine’s enormous potential, but also the clever commercial move of offering it again with resounding success.

Arnaud Hereu explains that it all depends on the line and winemaking concept utilized. “For Odjfell and Aliara, aging is important. I do not make these wines for consumers to drink in 10 or more years, but for them to evolve well.These wines may perfectly be stored for 25 years, just like good French wines.

Unfortunately, we have to make wines that sell as quickly as possible. Sometimes I get to try Odjfell and simply wonder why we are not selling it now. We are tied up by commercial decisions. So we simply can’t. The winery does not have a capacity to store entire vintages,” he explains.

And this became especially true after the 2010 earthquake, which signified losing most of the 2007 vintage. Even though this is not the current vintage, it has helped them understand the evolution of this wine and make the sale and marketing process more interesting and, hopefully, more convincing.

For Mr Mustakis, it is essential to work with clearly defined objectives. “At premium levels we want to make wines that are more consistent. For example, today we offer Lota, a type of wine that spends some time in the bottle before hitting the stores. We actually take the time to wait for them. So in the final analysis, there is always the pressure to sell, but in the end it all depends on the winery’s philosophy. In this case, the wine rules,” he concludes.

YOUTH, DIVINE TREASURY In Francisco Baettig’s opinion, Chile is too small to focus on great volumes. “It has the potential to produce some extraordinary wines, and I do not mean only icon or very expensive wines, but some excellent and more affordable Pinot Noirs, Chardonnays, Syrahs, Cabernets or Carignans. Chile possesses

Lo que sí hacen en Odjfell es guardar ciertas cajas para realizar catas verticales con periodistas y compradores. Aunque no sea la cosecha vigente en el mercado, les sirve para mostrar cómo se puede proyectar ese mismo vino en unos años, haciendo el ejercicio comercial y de marketing mucho más lúdico, atractivo y, tal vez, más convincente.

Para Gabriel Mustakis es importante definir muy bien los objetivos que se persiguen con el vino. “En los niveles altos nos interesa hacer vinos que sean consistentes. Por ejemplo, hoy en el mercado tenemos Lota 2008. A estos vinos les damos tiempo en botella antes de venderlos. ¡Los esperamos!

Siempre está la presión comercial, es verdad, pero todo depende de la filosofía de la viña. En este caso, el vino es el que manda”, sostiene.

JUVENTUD, DIVINO TESORO

Según el análisis de Francisco Baettig, Chile es muy pequeño como para enfocarse en vinos de volumen. “Tiene un potencial para producir vinos extraordinarios, y no me refiero sólo a los íconos o vinos tremendamente caros, sino a excelentes Pinot, Chardonnay, Syrah, Cabernet o Carignan de un rango de precios menor, más alcanzable. Chile tiene una diversidad increíble que por fin comenzamos a explotar. El potencial es infinito”, señala.

Pero antes de eso tenemos desafíos estructurales importantes que resolver. Baettig explica que Chile salió a exportar a principios de los 90 vinos que cumplían las célebres 3 B (buenos, bonitos y baratos). Después, cuando quiso mostrar todo su potencial, no fue subiendo gradual y consistentemente en términos cualitativos y de precios, sino saltó inmediatamente al segmento de los “íconos”.

“Supusimos que el consumidor de supermercado que compra una botella por US$ 10 iba a saltar a un vino de US$ 70 de la noche a la mañana. Obviamente eso no pasó.

Son consumidores absolutamente distintos. Por otro lado, cuando quisimos venderle al consumidor de valor y lujo, nos dimos cuenta que no era fácil pelear en esa liga porque no teníamos una historia larga con esos vinos y no había seguridad respecto de su potencial de guarda, de su continuidad como producto, de su terroir. Los verdaderos íconos se construyen en el tiempo. Nosotros no construimos una escalera. No le dimos la oportunidad al consumidor ‘normal’ de ir subiendo en calidad y moviéndose en esta escalera.

Afortunadamente siento que estamos empezando a corregir esta situación”, explica el enólogo.

Para Cecilia Torres, quien tiene una romántica historia de más de 25 años con el Cabernet Sauvignon Casa Real y el terroir de Alto Jahuel, hay que mirar las cosas con perspectiva, a largo plazo y ciertamente con mucha paciencia. “Las cosas no son blanco o negro. Como en todas partes, los franceses tienen vinos muy buenos, algunos extraordinarios, y otros no tan buenos. La diferencia es que ellos tienen una historia de 150 años haciendo este tipo de vinos. Nosotros llevamos 20 o 30 años, como es el caso de Casa Real. Chile aún es muy joven, pero estamos haciendo historia”, señala. V 14I VITIS Magazine MAYO I JUNIO 2015

an incredible diversity that we have finally begun to exploit. The potential is simply endless,” he adds.

But before, we need to solve some important structural challenges. Mr Baettig explains that in the early 1990s Chile began exporting good, nice and affordable wines. Then came a time when we could not wait to show the country’s full potential, and immediately jumped into the ‘icon’ segment, without a consistent transition in quality and price.

“We simply assumed that a consumer who buys their wine at the store for USD 10 would immediately switch to USD 70.That, of course, did not happen. These are totally different consumers.

On the other hand, when we tried to sell to luxury consumers, we realized playing in the major leagues was not at all easy, as we did not have a long tradition with these wines and there was no certainty about their aging potential, their continuity as a product and their terroir.

True icons are made through time.We failed to build a stairway to give ‘regular’ consumers the chance to go up step by step.

Fortunately, I feel we have begun to learn from that mistake,” he says.

For Cecilia Torres, who has flirted with Cabernet Sauvignon Casa Real and the Alto Jahuel terroir for more than 25 years, we need to take a different perspective, focusing on the long term and doing things slowly and with patience. “This is not a black or white thing. As could well be expected, the French have some extraordinary wines, others that are very good and others still that are not so good. The difference is that they have been making this type of wine for the last 150 years. We have been around for just 20 or 30 years, as is the case of Casa Real.

Chile is still very young, but we are definitely making history,” she sentences. V

30 años, experto y fanático de puros y habanos, y amigo del vocalista de Beastie Boys, el norteamericano James Suckling viaja durante 8 meses al año, cata alrededor de 7 mil vinos y en cada país deja sus máximas: “Es un gran momento, hay muchos vinos buenos que no son caros. Creo que no hay otro lugar donde se encuentren tantos vinos de calidad entre US$ 10 y US$ 20. Eso es bueno. Por otro lado, Chile ya probó que puede hacer también vinos caros. Ahora faltan los de precio medio: pensar en los de US$ 30 a US$ 50”, afirma el escritor después de haber catado 500 vinos en su reciente visita organizada por Wines of Chile, siempre con su copa hecha a su medida y que pasea en su propia maleta de Ferragamo por los cinco continentes.

Luego de haber catalogado a los vinos chilenos como “jam juice”, enjuiciando la sobremadurez y falta de identidad de la oferta chilena, hoy su percepción ha cambiado, descubriendo vinos mucho más interesantes y con sentido de origen. Sin duda este último viaje será difícil de olvidar para Suckling, pues Derek Mossman, propietario de Garage Wine Co, quebró su copa durante la presentación de MOVI, sin querer queriendo, sin medir las consecuencias, sin esperar la publicación de sus puntajes.

I believe no other country has so many high quality wines to offer between US$ 10 and US$20. That’s a good thing. On the other hand, Chile has by now proven that it can produce high-end wines. After labeling Chilean wine as ‘jam juice’; criticizing over-ripeness and the lack of identity in Chile’s wine selection, his perception has now changed, having discovered vastly more interesting wines with a sense of origin. For Suckling, this last trip will prove hard to forget, since Derek Mossman, owner of Garage Wine Co, without meaning but deliberately broke his tailored glass during the MOVI presentation, without weighing the consequences and with no regard for the scores the critic might give.

SANTA CAROLINA CELEBRA 140 AÑOS CON NUEVO ÍMPETU

iña Santa Carolina, que este 2015 cumple 140 años, está viviendo una reconversión que le da un profundo sentido a su slogan Herencia Viva, rescatando sus orígenes, pero por sobre todo su historia. Sólo un dato: durante una visita a su campo de Totihue, Alto Cachapoal, estuvimos en un viñedo de 103 años, que fue movido en su totalidad desde Colchagua, una tarea titánica que nos permitió ver la diversidad y riqueza del viñedo chileno prefiloxérico.

Justamente desde hace cinco años en Santa Carolina están rescatando material vegetal de sus viñedos viejos. Hoy en su plantel madre tienen 70 selecciones provenientes de distintas denominaciones, desde Aconcagua hasta Cauquenes, a las que se les está haciendo un seguimiento vitícola y se están microvinificando. Se espera contar con resultados definitivos el próximo año. La idea a futuro es replicar este bloque en otro lugar, con otro clima, para tener mayor evidencia científica y enológica.

En relación a los vinos, no sólo están trabajando en el proyecto Luis Pereira, que se centra en el rescate de viejos viñedos y de viejas técnicas de vinificación y que está dando vinos muy singulares. Además, pudimos probar una muestra de Romano, un vino que no se comercializa, pero que sin duda habrá que incorporar al portafolio, un verdadero jugo que demuestra que esta viña está para innovar y arriesgar. Y no podemos dejar de mencionar Piedras Pizarras, un Cabernet Sauvignon proveniente de un sector de rocas y piedra pizarra del campo de Totihue, que no sólo le da el nombre al vino, sino también un carácter único, sobresaliente…. 140 años con la energía y el ímpetu de la juventud.

SANTA CAROLINA CELEBRATES 140 YEARS WITH RENEWED STRENGTH iña Santa Carolina, which is celebrating its 140th anniversary in 2015, is currently undergoing a reconversion process that adds a profound meaning to its Chilean Heritage slogan, rescuing its origins, but above all, its history. Just consider the following: During our last trip to their estate in Totihue, Alto Cachapoal, we visited a 103year old vineyard that they literally transplanted from Colchagua, a colossal undertaking that revealed to us the diversity and wealth of Chile’s pre-phylloxera vineyards.

For the last five years, Santa Carolina has been rescuing vegetal material from its old vineyards.

Today, its parent facility has 70 selections from various appellations, stretching from Aconcagua to Cauquenes, that undergo viticultural follow-up and micro-vinification. Final results are expected by the coming year. Future plans include replicating this lot at another location and with a different climate in order to gather a larger body of scientific and enological evidence.

In relation to the wines themselves, they are working on the Luis Pereira project, which focuses on the recovery of old vineyards and vinification techniques, and is yielding very unique wines.

We also had the chance to try a sample of Romano, a wine that isn’t marketed but will undoubtedly make it to their portfolio; a bottling that proves that this is a winery that dares to innovate and take risks. And we cannot fail to mention Piedras Pizarras, a Cabernet Sauvignon from rock and slate soil in Totihue that not only gives the wine its name but a unique, excelling character…

Among them, three Chileans: Álvaro Espinoza from Emiliana; Ignacio Recabarren from Concha y Toro; and Marcelo Retamal from Viña De Martino. France had the best performance with 16 winemakers from a number of regions. Among the chosen ones are some professionals that have previously offered their expertise to local wineries like Alberto Antonini, Paul Hobbs, Attilio Pagli, Michel Rolland.

The Spanish El Celler de Can Roca, sporting three Michelin stars and chosen the world’s best restaurant of 2013 by British magazine Restaurant, has added Santa Digna Estelado Rosé sparkling wine by Miguel Torres to its exclusive wine selection. Josep, the sommelier and one of three Roca brothers who run the restaurant, simply couldn’t resist the charm of Chile’s first sparkler made with País grapes.

Fueron seis propuestas enológicas, hechas a mano, a la antigua, que regalan voluptuosidad, especias dulces gracias al aporte de barricas americanas, más un carácter muy jugoso y amable que, en palabras de su autor, se sostiene en la búsqueda de “fruta fresca, al borde del vegetal, y taninos vibrantes”.

Entre otras cosas, Fitte reivindica el parrón como sistema de conducción para proteger los componentes aromáticos y la vivacidad de las uvas, apuesta por el futuro del Petit Verdot y declara su amor por los suelos trumaos de la precordillera curicana y maulina, especialmente para la producción de Chardonnay.

Los vinos presentados fueron un Chardonnay fermentado en barricas, proveniente de los suelos trumaos de Arken, ubicado a 14 kilómetros del lago Colbún (Maule); un jugoso Merlot de Sagrada Familia (Curicó); un Carmenère de Huaquén (Maule); un fresco y sabroso Cabernet Sauvignon de Lolol, nacido en antiguos parronales (Colchagua); una interesante mezcla de Petit Verdot y Cabernet Sauvignon de Sagrada Familia (Curicó); y una profunda mezcla de Syrah y Cabernet Sauvignon también de Sagrada Familia.

iña Requingua and winemaker Benoit Fitte have just presented the 2013 vintage of its Toro de Piedra line. This line consists of six oenological old-school, hand-crafted proposals that bring voluptuousness and sweet spices—from American oak barrels—plus an outstandingly juicy and pleasant character, which in its author’s very own words, keeps on seeking “fresh fruit, grassy notes, and vibrant tannins.”

Among other things, Fitte revives overhead training as the best system to protect the aromatic components and liveliness of the grapes.

He believes in a brilliant future for Petit Verdot and declares his deep love for trumao or volcanic soils at the Andean foothills of Curicó and Maule, particularly for the production of Chardonnay.

The wines presented were a barrel fermented Chardonnay from the trumao soils of Arken, located 14 km from Lake Colbún (Maule); a juicy Merlot from Sagrada Familia (Curicó); a Carmenère from Huaquén (Maule); a fresh and savory Cabernet Sauvignon from Lolol, sourced from ancient vines in Colchagua; an interesting blend of Petit Verdot and Cabernet Sauvignon from Sagrada Familia (Curicó) and another profound Syrah and Cabernet Sauvignon blend, also from Sagrada Familia.

nmediatamente después del anuncio de su nombramiento como nuevo presidente de Vinos de Chile para el período 2015-2017, Mario Pablo Silva afirmó que uno de los principales desafíos de su gestión será definir una nueva estrategia para que Chile se convierta en el principal productor de vinos premium, sustentables y diversos del Nuevo Mundo, tal como planteaba el Plan 2020. Explicó que, producto de que el escenario económico mundial retrasó las metas planteadas en este plan, será necesario revisarlo, manteniendo los elementos que han dado buenos resultados y corrigiendo aquellos que no.

A nivel de números, esta hoja de ruta diseñada en 2010 planteaba que en diez años Chile debería alcanzar exportaciones por US$ 3.000 millones al año con un precio promedio de US$ 37 por caja. Pero estamos muy lejos de eso. El año pasado, los envíos de vino llegaron a US$ 1.846 millones, de los cuales US$ 1.515 millones correspondieron a vino embotellado con un precio promedio de sólo US$ 30,6 por caja.

El también gerente general de Casa Silva aseguró que el mencionado plan “nos sirvió para posicionar a Chile por primera vez como el primer país exportador del nuevo mundo, lo que es fundamental”. En este sentido, postuló que hay que ir más directamente a los mercados donde los vinos chilenos quieren posicionarse con fuerza. Y agregó que de esa forma “no se diseminarán tantos recursos.

Así, podrán focalizarse en algunos mercados y producir un efecto paraguas”.

En conversación con Vitis Magazine, profundiza en éste y otros temas.

Partamos por una evaluación de los vinos chilenos y su posicionamiento en el mercado internacional. ¿Cuál es tu visión al respecto? Si tuvieras que hacer un análisis FODA, ¿cuál sería?

Mi visión es que los vinos chilenos han ido ganando prestigio en calidad, que los entendidos (periodistas, compradores, las personas del trade en general) hoy evalúan la calidad de nuestros vinos positivamente. Tenemos una excelente relación precio-calidad; sin embargo, tenemos que reforzar la llegada a los consumidores para que ellos tengan en su mente la ecuación “vino chileno=calidad=prestigio”, y que no sólo nos elijan por el precio. En este sentido, la imagen país es fundamental y necesitamos invertir mucho en ella.

When discussing the representativeness of the Wines of Chile association, the newly appointed chair affirms, “the industry draws from everybody’s richness and contribution, from diversity, from the painstaking efforts and unique style of the smallest players, and from the vision, ongoing market penetration, and innovation of the largest wineries.” This is the key, he says, to ensure that the “Chilean Wine” brand will gain strength and presence abroad.

Immediately following the announcement of his appointment as the new Chairman of Wines of Chile for the 2015-2017 term, Mario Pablo Silva said that one of the core challenges of his tenure would be to define a new strategy aimed to turn Chile into a large producer of sustainable, diverse, premium-quality wines from the New World, as stated in the 2020 Plan. He also explained that the world economic slowdown had delayed the goals originally set in that plan, which would need to be revised to keep the elements that had proven successful and discard those that hadn’t.

In terms of numbers, the roadmap designed in 2010 proposed the objective that in 10 years time Chile’s annual exports should reach USD 3.0 billion with an average price of USD 37.00 per case. Yet, we are far from that goal. Last year, shipments amounted to USD 1.846 billion, with bottle wine accounting only for USD 1.515 billion, and the average price was USD 30.6 per case.

condiciones climáticas privilegiadas, diversidad de terroirs, una gran relación precio-calidad, estamos posicionados como socios comerciales confiables y en una gran cantidad de mercados, pero también tenemos debilidades. La casi nula imagen país es una de nuestras principales falencias hoy; el hecho de que tengamos la imagen de brindar vinos buenos y baratos, el bajo financiamiento para campañas genéricas y nuestra compleja posición geográfica.

Pero también tenemos una gran cantidad de oportunidades: hoy tenemos consumidores que buscan productos sustentables, que valoran la diferenciación y atributos únicos en los vinos. Son consumidores inteligentes que buscan una buena relación precio-calidad, con una imagen país donde el vino puede ser actor principal, donde el vino y la belleza de la geografía de nuestro país caminan por el mismo sendero, con importantes mercados potenciales como Asia, entre otras oportunidades que debemos aprovechar hoy como industria.

Todo esto se desarrolla bajo un contexto de amenazas que hay que saber sortear, como la gran competencia y el despertar de los países del viejo mundo hacia estilos de vinos más del nuevo mundo; también el incremento del volumen de vino producido mundialmente, los constantes cambios del tipo de cambio y los problemas para arancelarios que siempre surgen.

Y en el mercado local hay un escenario similar. El año pasado, y por primera vez desde el 2009, hubo un crecimiento en el consumo nacional de vinos, con un importante incremento en el consumo de vinos premium. Esto es muy relevante, ya que a pesar de que el consumo per cápita bajó las últimas décadas, llegando a cerca de 13 litros, el consumo de vino fino ha subido. Los chilenos hoy bebemos más vino fino.

Tomando esto en cuenta, tenemos hoy grandes oportunidades, como por ejemplo reforzar el mensaje de que el vino tomado con moderación, es beneficioso para la salud.

La gente hoy busca vivir más sano y tanto el vino como los espumantes poseen atributos saludables que los diferencian positivamente de los otros alcoholes.

Con este análisis como base, ¿cuáles son los principales objetivos que te has planteado para estos dos años como presidente de Vinos de Chile, tanto en el plano internacional como nacional?

En el plano nacional llevar adelante la campaña ‘Nos Gusta el Vino’ para aumentar el consumo en forma responsable y

The Chair, who is also the general manager of Casa Silva, said that the plan “helped us position Chile, for the very first time, as the largest exporter from the New World, which is a major development.” In the same line, Silva expressed that efforts should be focused on working mostly in the countries where Chile wishes to have a strong positioning. Thus, he said “resources will be targeted to specific markets and generate an umbrella effect.”

This and a number of other subjects were addressed during an interview with Vitis Magazine.

Let’s begin with an evaluation of Chilean wines and their positioning in world markets. What is your vision in this regard? If you had to run a SWOT analysis, which one would you pick?

My vision is that Chilean wines have earned prestige due to their quality and that experts (wine writers, buyers, wine industry stakeholders in general) positively evaluate the quality of our wines. We have an outstanding price-quality ratio; however, we must strengthen our image in the mind of our consumers so that they associate “Chilean wine to quality and prestige,” and price stops being the only determinant of consumers’ purchase.

In this sense, the country image is key and we need to invest heavily in it.

We have enormous strengths: We are a clean country, with privileged climate conditions, diversity of terroirs, an excellent price-quality ratio, and we are positioned as dependable business partners in a great many markets. Nevertheless, we do have weaknesses.The almost non-existent country image is one of our greatest shortcomings at present; the value wine producer image, the limited financing for generic promotional campaigns, and our complex geographic location are but some of our weaknesses.

Still, there is a number of opportunities ahead of us: Our consumers presently seek sustainable products and value differentiation and the unique attributes in wine.They are intelligent consumers that are after good value-for-money, and are attracted by a country image where wine is the main player, and where wine and the scenic beauty of our geography walk hand in hand. Large potential markets like Asia are all major opportunities we must tap as an industry.

All this happens in a context of threats that we need to know how to overcome, like fierce competition and the rising of Old World countries as producers of wines that emulate the style of New World ones.There’s also the increasing volume of wine produced around the world, the ongoing exchange rate fluctuations and the ever-present tariff issues.

The local market faces a similar scenario. Last year, for the first time since 2009, consumption of wines increased in the domestic market and consumption of premium labels surged as well.This is a very important step forward because even if in the past few decades consumption per capita declined to 13 liters, the consumption of fine wines has increased. At present, Chilean consumers drink more fine wines.

With this in mind, we have great opportunities ahead, like strengthening the message that moderate consumption of wine is good for your health. People are now more healthy life-oriented and both wine and sparkling wine have healthy attributes based on which they can be positively differentiated from other alcoholic drinks.

Building on this analysis, which are the main objectives you aim to fulfill during your tenure as Chairman of Wines of Chile, both locally and internationally?

At national level, the objective is to successfully implement the marketing campaign “Nos Gusta el Vino” (We Like Wine) to in-

Seguir estando presentes en el plano gremial y regulatorio también es uno de nuestros focos, con el objetivo de mostrar nuestros puntos de vista en forma clara y con bases sólidas.

En el plano internacional necesitamos reorientar las actividades desarrolladas en los diferentes países para llegar en forma más directa a los consumidores, sin dejar de lado las actividades con líderes de opinión y trade. Tenemos como misión el fortalecimiento de nuestra imagen, de la marca Wines of Chile, lo que traerá como resultado mejores precios y más oportunidades para la industria del vino chileno en el exterior.

Creo que también tenemos que avanzar en la promoción de nuestros vinos unido a lo maravilloso de nuestra geografía, promover los rincones espectaculares de Chile, mostrando todos los atributos sustentables y naturales que existen en nuestro país. Para esto es fundamental contar con más recursos para la promoción. Los vinos chilenos deben dar el salto y comenzar a ser considerados como productos de la mejor relación precio-calidad, pero no sólo en los segmentos de bajo precio como lo son hoy, sino en los segmentos más altos. ¿Cuál es la imagen que, a tu juicio, Chile debería tener en el exterior?

Chile debe ser considerado como un país productor de vinos de alta calidad, respetuoso con la naturaleza y sustentable, donde la industria está inserta en un escenario fascinante. Un país explorable y por descubrir.

Pensando en la promoción internacional, ¿en qué mercados se van a focalizar los recursos?

Es un tema que estamos analizando, pero es obvio pensar que Estados Unidos, Brasil, Canadá, Asia y algunos países de Europa son prioridad. Es importante considerar la inversión en aquellos países que produzcan ventas, pero también en aquellos lugares que generen sinergias y crecimiento de nuestra imagen. Es un análisis profundo que estamos realizando. ¿Qué acciones concretas piensan llevar a cabo?

Esto será parte del plan 2025 que estamos comenzando a desarrollar; queremos antes de fin de año tener los resultados y detalles.

De acuerdo a la experiencia adquirida, ¿qué cosas habría que cambiar y cuáles profundizar?

Creemos hay que darle mayor importancia a los consumidores. Necesitamos dar a conocer nuestra industria y país de manera más encantadora, unida a nuestra pureza, a nuestras bellezas, a nuestra gastronomía y turismo en torno al vino.

Que los líderes de opinión que nos visitan conozcan en profundidad nuestras raíces, nuestra gente, nuestros paisajes. Hacerlos vivir la experiencia del campo chileno, la diversidad de nuestros vinos y nuestra geografía con relajo y cariño. Tenemos que llegar al corazón de la gente y hacernos inolvidables.

As an association, I’d like to advance the vision that the wine industry must be sustainable over time in the full scope of the word, that is, at the vineyard, in the winery, and regarding the relationship we have with the community and our employees.We would also like to foster the production of quality wines, and continue to pursue our R&D projects, which are quintessential for our future as an advanced industry. Another goal is to strengthen our presence in the sector and at regulatory level to show our points of view in a clear and sound manner.

At international level, we must redirect the activities carried out in the different countries to reach consumers more directly but without neglecting our focus on opinion leaders and wine business players. Our mission is to strengthen our image and the Wines of Chile brand, which will lead to higher prices and more opportunities for the Chilean wine industry abroad.

I also think that we need to double our promotional efforts and show our wines and our wonderful geography together, to promote Chile’s spectacular landscapes, and to boast the sustainable and natural attributes our country enjoys. To do so, we absolutely need to allocate more resources to promotion. Chilean wines must leap forward and start to be considered as products that offer an unparalleled price-quality ratio, not only in the lowprice segment but also in the highest price one.

In your opinion, which image should Chile have around the world?

Chile must be seen as a producer of premium quality, sustainable, environmentally friendly wines sourced from a country of breathtaking natural beauty. A must-see destination that offers thousands of places to be discovered.

Thinking about international promotion, which markets will resources be targeted to?

Mencionaste tu objetivo de continuar a nivel local con la campaña Nos gusta el vino. ¿Cómo evalúas sus resultados hasta ahora?

En forma muy positiva. Es muy importante que en la industria nos hayamos puesto de acuerdo para llevar una campaña de este tipo adelante, donde se apunta a los jóvenes, a un segmento de entre 20 y 40 años que siente que el vino es algo difícil de entender. Lo sienten lejano; si bien se sienten orgullosos, no se atreven a vivir el vino como parte de su cultura. Queremos acercar el vino a la gente. Comenzamos con la campaña a fines de octubre del año pasado durante 2 meses; el segundo semestre de este año continuaremos con ella. Estamos trabajando en el diseño para 2015 con algunas modificaciones para lograr resultados aún mejores. ¿Qué otras acciones tienen contempladas en el mercado local, además de las fiestas del vino en Santiago y regiones?

Estamos justamente en el proceso de decisión de las actividades a realizar en el marco de la campaña 2015. Estamos trabajando fuertemente y ya estamos en la recta final de estas definiciones. ¿Cómo piensas enfrentar el problema de limitación de presupuesto de la asociación?

Hay que desarrollar campañas inteligentes que focalicen los recursos que aportan las viñas, para desarrollar actividades que generen el mayor impacto posible. Además de esto, le solicitaremos a las viñas en forma particular, que hagan mención en sus actividades y promoción a la campaña ‘Nos Gusta el Vino’, además de incluir también a todos los actores de la industria: proveedores, restaurantes, tiendas especializadas, supermercados, escuelas de gastronomía, sommeliers, periodistas, etc. Queremos que todos tomen la campaña como suya y puedan ayudar a promocionar el vino como nuestro producto nacional emblema.

La industria necesita, sin duda, un mayor apoyo del Estado en materia de promoción. ¿Cómo ves este apoyo a futuro? ¿Qué requiere concretamente Vinos de Chile del Estado?

Lo veo fundamental. El vino chileno es un producto que llega a 1.800 millones de personas en forma directa en todo el mundo, con la palabra Chile sobre sus etiquetas. Qué mejor vehículo para un Gobierno que quiere promocionar el país, hacerlo a través del vino.

Hemos estado coordinando actividades en pos de una industria diversa y lo continuaremos haciendo. Nos estamos sentando a conversar con distintos actores para recibir sus impresiones e ideas y así poder plasmarlas dentro de la estrategia al 2025.

U.S., Brazil, Canada, Asia and some European countries. It is important that investments be made in countries that generate sales, but also on those with which synergies are developed and where our image can grow stronger. We are conducting a very thorough analysis.

What concrete action will you take?

Actions will be part of the 2025 plan we are beginning to develop, which we expect will be completed by the end of the year.

Based on experience, which things would need to be changed and which would need further development?

We believe greater importance should be attached to consumers.

We need to make our industry and country known in a more appealing way, to promote them jointly with our natural beauty, our gastronomy, and wine tourism.We need to take action in luring opinion leaders so that they feel the interest to learn about our roots, our people, and our landscapes.We need to have them live the experience of Chile’s countryside, the diversity of our wines, and our geography in a leisurely and loving way.We need to reach people’s hearts.We need be an unforgettable experience.

You mentioned earlier that you intend to pursue the ‘We Like Wine’ campaign. How would you evaluate its performance to date?

Very positively. Building consensus in the industry to carry out a campaign of this kind is no minor accomplishment because it targets young consumers between 20 and 40 years of age who feel that wine is hard to understand.They feel it distant; and although they are proud about it, they do not dare to live wine as part of their culture. Our goal is to bring wine and people closer. We launched the 2-month campaign last year in late October and we’ll resume it during the second half of 2015.We are working on the design for the 2015 promotion, including some adjustments to enhance its results.

Aside from wine festivals in Santiago and in regions, which other actions have you planned for the local market?

We are precisely defining which activities we will put together as part of the 2015 promotional campaign. We are working very hard and we should wrap it all up very soon.

What’s your plan to deal with the association’s restricted budget?

We must implement campaigns that wisely use the resources contributed by the member wineries to carry out activities capable of causing the broadest possible impact. In addition, we will expressly request wineries to mention the ‘We Like Wine’ campaign during their own marketing activities.This is also true for all other industry players, including suppliers, restaurants, wine stores, supermarkets, cooking academies, sommeliers, wine writers, etc.We want them all to feel that it’s their own campaign so that everybody helps promote wine as Chile’s flagship product.

It is undeniable that the industry needs greater support from the government to further promotion. How do you see this support in the future? What does Wines of Chile specifically need from the government?

This is a matter of utmost importance. Chilean wine is a product that directly reaches 1.8 billion people around the world and the word Chile is featured on every label. There isn’t a better means than wine for a government to promote the country.

We sincerely believe that we need more resources for promotion.

Sinceramente creemos que necesitamos mayores recursos para promoción; el Gobierno debería apoyarnos con mayor cantidad de recursos directos para promocionar nuestro país en mercados clave. Hoy en día invertimos la mitad que nuestros vecinos y un tercio de lo que invierten los países que venden más vino a nivel mundial.

A nivel gremial,Vinos de Chile ha sido criticada por el hecho de estar manejada por unas pocas viñas, que velan por sus propios intereses y, por lo tanto, muchas viñas no se sienten representadas. ¿De qué manera respondes a esta crítica?

Eso no es así y aquí tenemos un tema de comunicación que debemos mejorar. En Vinos de Chile somos más de 80 viñas, de todos los tamaños y a nivel nacional. El trabajo lo realizamos en forma responsable y dándole exactamente la misma importancia a todas.

Siempre las puertas estarán abiertas para todas las viñas.

Creo que la industria se nutre de la riqueza y aporte de todos; de la diversidad, del trabajo hecho a mano, del estilo propio de las viñas más pequeñas, como también de la visión, apertura permanente de mercados e innovación de las viñas más grandes. La industria la hemos hecho todos y justamente nuestra riqueza está en la diversidad. Esto es clave para que la marca ‘Vino Chileno’ sea más potente y ganemos mayor espacio en el exterior.

Son varias las viñas que se han retirado de la asociación por encontrar que el gasto (o la inversión) que significa pertenecer a ella no tiene los retornos esperados. ¿Qué les dirías?

Desde el nacimiento de Vinos de Chile en 2007 hasta fines del año pasado, el número de viñas asociadas ha subido.

Existen ciclos y períodos positivos de la industria donde más viñas están dispuestas a participar porque hay más recursos disponibles para lo gremial y la promoción internacional. Pero cuando los ciclos son negativos, como pasó durante los últimos años con la baja del dólar, aumento del costo de la energía y de la mano de obra, entre otros ítems, es natural que algunas viñas dispongan de menos recursos para lo gremial o la promoción genérica.

La asociación de Vinos de Chile hoy cuenta con 81 asociados que representan el 85% del total del negocio del vino chileno a nivel nacional como en el exterior.Además, a través de Wines of Chile, la asociación realiza programas a nivel internacional donde se permite participar a viñas que no son asociadas, y de hecho, varias participan en programas puntuales.

La asociación cumple un rol fundamental en la defensa de nuestros intereses gremiales como industria del vino chileno; en la defensa de medidas arancelarias, en los cambios de legislaciones a nivel de mercados internacionales y en defender nuestra posición en los tratados de libre comercio. También es vital en la capacitación de los trabajadores de la industria, brindando competencias laborales, investigación y desarrollo a través de los Consorcios. Vinos de Chile entrega además una serie de información y asesoría a sus asociados que muchas veces de manera individual no podrían obtener, lo que favorece mucho a las viñas nuevas o las pequeñas que no tienen una estructura tan organizada.

The government should provide a larger share of direct resources to promote our country in key markets.We currently invest half the money our neighbors allocate to promotion and one third of what the countries selling the most wine all over the world invest.

At industry level, Wines of Chile has received criticism because it is managed by a handful of wineries that put their own interests first, therefore, many wineries do not feel properly represented. What do you have to say about that?

That is not accurate and that is a communication issue we need to address. Wines of Chile consists of over 80 member wineries of all sizes and from all along the country. We do our work responsibly and we give the same care and attention to every member winery.

My doors will always be open to all wineries. I believe that the industry draws from everybody’s richness and contribution, from diversity, from the painstaking efforts and unique style of the smallest players, and from the vision, ongoing market penetration, and innovation of the largest wineries.We have all helped build this industry and diversity is precisely where our wealth originates. This is the key to ensure that the “Chilean Wine” brand will gain strength and presence abroad.

Several wineries left the association because they felt that the membership fees (investment made) didn’t yield the expected return. What would you tell those wineries?

The number of members has increased between 2007, when Wines of Chile was established, and late last year. There are positive cycles and periods in the industry when wineries are willing to participate because there are more resources available for industry activities and international promotion. But, in periods of slowdown, like the past few years, with a declining exchange rate, higher energy and labor costs, among other variables, it is certainly understandable that some wineries cannot afford industry activities or generic promotion.

Como ya expliqué, para mí la diversidad es clave y todos los proyectos son válidos, no importando su tamaño. De hecho, existen viñas que pertenecen a nuestra asociación y que encabezan una serie de proyectos pequeños. Hemos estado coordinando actividades en pos de una industria diversa en este primer mes y lo continuaremos haciendo. Nos estamos sentando a conversar con cada uno de ellos para recibir sus impresiones e ideas y así poder plasmarlas dentro de la estrategia al 2025. ¿Tu elección, siendo gerente de una viña de tamaño mediano, debería leerse como una señal de cambio y apertura?

Yo agradezco sinceramente a las viñas que confiaron en mí, ya que fue una elección unánime. La directiva anterior realizó una gran labor en muchos ámbitos, sin embargo cuando uno asume un desafío como éste, es natural que imprima una cierta forma de hacer las cosas, un sello.

Este nuevo directorio está formado por personas de mente abierta y modernizadora, que representan a viñas de todos los tamaños. Como vicepresidente está Alfonso Undurraga, de Viña Koyle, como tesorero Andrés Izquierdo de Viña Errázuriz y se integraron Luis Felipe Edwards hijo y María Luz Marín de Viña Casa Marín. A los anteriores se suman Thomas Domeyko, Andrés Lavados, Aurelio Montes, René Araneda y Cirilo Elton. Todos con la misión de velar por nuestra industria y dispuestos a trabajar por ella. ¿Cómo te gustaría que se recordara tu paso como presidente de Vinos de Chile?

Eso lo dirá el tiempo. Creo que como una persona que quería mucho a la industria, que le dedicó tiempo y cariño, que trabajó por la unión en pos de un beneficio para todos, y que logró comenzar un cambio de percepción en los consumidores a nivel local e internacional. Que logró potenciar una imagen del vino chileno unida a la sustentabilidad, a la calidad y a la belleza de nuestra tierra. Me gustaría que la industria fuese un pilar fundamental de la imagen de nuestro país. V

At present,Wines of Chile has 81 member wineries that account for 85% of Chile’s total wine business, both locally and abroad.The international trade department of the association puts together programs that allow non-member wineries to participate. In fact, several of those wineries are part of some specific programs.

The association plays a key role in defending the interests of our industry regarding tariff-related measures, changes to international legislation and our participation in free trade agreements. It also plays an important role in training workers, building capacity, and fostering R&D through consortia.

Moreover, Wines of Chile provides a series of information and advisory services to its members, which would be very difficult for them to procure individually.These services are very useful to new or small wineries that rely on a smaller structure.

Another criticism is the little inclination to accept small-scale, alternative, or collective projects that are ultimately helping to build a more diverse and daring image for Chile. As the chair, how will you ensure that Wines of Chile will represent such diversity?

Like I said earlier, to me diversity is the key and all projects are good, regardless of their size. In fact, some member wineries lead the way in a series of small-scale projects. We are coordinating activities to support diversity as an industry from the very beginning, which we will continue to do. We are already talking with each of them to see what they have to say, hear their ideas, and integrate them into the 2025 strategy.

Your appointment as chair, given the manager of a medium-size winery, should be seen as a sign of change and openness, shouldn’t it?

I deeply thankful to the wineries that trusted in me because it was a unanimous decision. The previous board did a wonderful job on many fronts, but it is only to be expected that the incoming board will bring in its own personal way of doing things.

This new board consists of six open-minded and forwardthinking individuals who represent wineries of all sizes. Alfonso Undurraga from Viña Koyle is the vice-chairman, Andrés Izquierdo Fromm Viña Errázuriz is the treasurer, and Luis Felipe Edwards Jr. and María Luz Marín from Viña Casa Marín are the new regular directors. The other members are Thomas Domeyko, Andrés Lavados, Aurelio Montes, René Araneda, and Cirilo Elton. Our mission is to watch over and work for our industry.

How would you like to be remembered as the chair of Wines of Chile?

Time will tell. But, I think I’d like to be seen as a person who loved the wine industry, who put a lot of time and effort on it, who worked for the benefit of everyone and who managed to get the ball rolling to change consumer perception in the local and foreign markets. Someone who successfully advanced an image where wine is associated to sustainability, quality, and the natural beauty of our land. I’d like to see that the wine industry is the cornerstones of our image as a country. V

l tema de los residuos de fitosanitarios en la uva y su traspaso al vino es una materia de alto interés para las viñas, especialmente para aquellas que exportan a países donde los estándares son cada vez más exigentes.

Si bien las empresas proveedoras cuentan con información sobre las curvas de degradación de sus productos, algunas veces estos datos provienen de estudios realizados en otros países y no necesariamente se pueden extrapolar a la realidad chilena.

Para establecer las carencias específicas, es fundamental determinar la importancia relativa de los distintos factores que estarían influyendo en la tasa de disipación de los agroquímicos. En el caso de la uva vinífera, hasta la fecha se han aclarado diferentes mitos que existían en relación a la disipación de los plaguicidas y el efecto que tienen distintas variables como la variedad de uva, el tamaño de la baya, el tipo de formulación para un mismo ingrediente activo, las propiedades físico-químicas de los plaguicidas (Kow, hidrólisis, etc.), la aplicación mezclando diferentes ingredientes activos, y la “localidad o valle” donde se encuentra el viñedo.

A través de diferentes proyectos financiados por fondos públicos y de empresas, el laboratorio analítico SIDAL está estudiando la disipación de los plaguicidas en uva vinífera y el nivel de traspaso al vino. Con estos resultados se podrá disponer de períodos de carencia más reales y ajustados para cada plaguicida y valle, y así poder producir fruta y vino que aseguren mínimo o “cero” residuos.

USE OF PESTICIDES ON VINIFERA GRAPES AND THEIR TRANSFER INTO WINE

Moving into ground zero Through a number of projects financed with public funds and corporate donations, the analytical laboratory SIDAL is studying the dissipation of pesticides in vinifera grapes and the amount transferred to wine. Once the results are in, pre-harvest intervals will be more realistic and better adjusted to each pesticide and valley, thus enabling the production of fruit and wine with minimum or even zero residues.

Pesticide residues on grapes and their subsequent transfer to wine is a matter of great interest for wineries, especially those that export to countries where standards are becoming increasingly strict.

Although suppliers have an exact knowledge of their products’ degradation curves, sometimes the data are sourced from studies conducted abroad and therefore may not be fully applicable to the Chilean vineyard.

Los estudios realizados hasta ahora han permitido determinar que la temperatura, radiación solar y la humedad estarían influyendo en la tasa de disipación de los plaguicidas.

The studies conducted thus far demonstrate that temperature, solar radiation, and humidity are all factors that affect pesticide dissipation rates.

“A través de proyectos realizados con empresas y a un proyecto Fondecyt, se ha podido determinar que no existen diferencias en la disipación de los plaguicidas al evaluar diferentes variedades o cepas y distintos tipos de formulaciones.

Sin embargo, el efecto localidad o valle ha mostrado ser de gran importancia, en especial los factores como temperatura, radiación y humedad”, explican Marcelo Kogan y Claudio Alister, director general y director de investigación, respectivamente, de la Estación Experimental y Laboratorio Analítico SIDAL, empresa que está ejecutando diferentes proyectos de investigación relacionados con residuos de plaguicidas en suelos, aguas y productos agrícolas. Concretamente, a través de un proyecto licitado por el Consorcio I+D Vinos de Chile, están estudiando la dinámica de la disipación de los plaguicidas en uva vinífera y el nivel de traspaso al vino, para así precisar las carencias específicas para el rubro vitivinícola.

Before establishing specific pre-harvest intervals (PHI), it is crucial to determine the relative importance of the factors thought to influence agrochemical dissipation rates. In the case of vinifera grapes, a number of deeply rooted misconceptions have been clarified regarding pesticide dissipation rates and the effect of different variables such as grape variety, berry size, the different formulations for the same active ingredient, the physical and chemical properties of pesticides (Kow, hydrolysis, etc.), the application of the product by mixing different active ingredients, and the location or valley where the vineyard is situated.

“Thanks to a number of projects funded by private companies and a Fondecyt project, we have concluded that none of the differences in pesticide dissipation rates can be attributed to differences in the cultivars utilized or to changes in the chemical formulation. a persistencia de un plaguicida es un proceso resultante de la combinación de diferentes factores, que por sí solos y en interacción entre ellos determinan la pérdida diaria (tasa de disipación) de cada plaguicida. La aplicación de los agroquímicos es uno de los factores que normalmente produce cierta variabilidad, como así también la exposición de los racimos y el diámetro de la baya. Las interacciones que se establecen hacen que sea totalmente imposible considerar un valor absoluto de carencia (por ejemplo 40 días) que refleje las diferentes realidades y que sea aplicable para los viticultores en las distintas zonas del país, señalan los investigadores.

Sostienen que para que las carencias puedan fijarse de una forma más realista, considerando la variabilidad natural y la incorporada por el hombre, se requiere mayor rigurosidad científica para la elaboración de las curvas de disipación. Uno de los factores de mayor trascendencia dice relación con poder determinar la variabilidad que acompaña a cada curva. Para ello las curvas se deberían planificar y desarrollar contemplando por lo menos cinco puntos y en cada uno de ellos, tres repeticiones (no se debe confundir entre tres repeticiones con analizar una misma muestra tres veces, a partir de una muestra compuesta). Por otro lado una curva que no se inicia desde el punto cero, o sea que carezca del primer punto (depósito inicial), no puede tener validez, aseguran.

Al contar con las tres repeticiones para cada uno de los cinco puntos, es posible cuantificar estadísticamente la variabilidad y así contar con una curva de disipación que presente un rango de validez (Figura1) y que permita al viticultor considerar un período de carencia mayor o menor, dependiendo de las

humidity,” explain Marcelo Kogan and Claudio Alister, Chief Director and Research Director respectively of SIDAL, an experimental station and analytical laboratory that is presently developing several projects related to pesticide residues in the soil, water and agricultural products. In particular, a project tendered by the I+D Vinos de Chile consortium is studying the dynamics of pesticide dissipation in vinifera grapes and its transfer to wine, in an effort to define specific PHIs for the wine sector.

SCIENTIFIC RIGOR

Pesticide persistence results from the combination of multiple factors, which by themselves and in combination with others determine the daily loss or dissipation rate of each pesticide.The application of agrochemicals usually accounts for some of the variability, much like cluster exposure and berry diameter.The researchers point out that the interactions between these factors make it absolutely impossible to establish an absolute PHI value (for instance, 40 days) that is an accurate reflection of the various conditions and that vineyard managers can apply in any one of the wine regions of our country.

They claim that in order to arrive at PHIs that are more realistic –considering both natural and human-induced variability– it is essential to be more rigorous when developing dissipation curves. One of the most important factors has to do with the ability to determine variability for each curve. Curves should be planned and developed with at least five points, with three repetitions for each point (do not confuse these three repetitions with analyzing the same sample three times, based on a mixed sample). Also, a curve that does not start at point zero, i.e. a curve that lacks the first point (initial deposit), cannot be taken as valid, they affirm.

Having three repetitions for each one of the five points allows variability to be quantified statistically, thus producing a dissipation curve with a certain range of validity (Figure 1) that allows viticulturists to consider longer or shorter PHIs depending on local conditions, the time of application and the final destination of the grapes (white or red wine, etc.).

It is important to ensure the results used to construct the dissipation curve (residues in the fruit) are supplemented with important data such as detection threshold, quantification limit, percentage of recovery, values of the control samples, and other analytical information that will contribute to a better interpretation of the values obtained. “Fruit analyses used to construct dissipation curves should never by determined through multi-residue analysis, but through specific analyses for each analyte that consider the matrix effect (fruit),” they point out.

SPECIFIC PRE-HARVEST INTERVALS FOR VINIFERA GRAPES

As mentioned earlier, the studies conducted thus far have demonstrated that the “location or valley” effect is important, especially with regard to temperature, radiation, and humidity, all of which have an impact on pesticide dissipation rates in vinifera grapes.

It follows that the same pesticide will dissipate differently depending on the location where it is applied. In fact, some of the results already obtained by the Fondecyt project have proved that the residues of some pesticides dissipate quicker in the area of San Clemente than in Casablanca, Los Ángeles being an intermediate zone. For this reason, developing curves for the different wine valleys

CARENCIAS ESPECIFICAS PARA UVA VINÍFERA

C

omo mencionamos, los estudios realizados hasta ahora han permitido determinar que el efecto “localidad o valle” es de gran importancia, en especial los factores como temperatura, radiación y humedad, que influyen en la tasa de disipación de los plaguicidas en uva vinífera.

De lo anterior se desprende que un mismo plaguicida presentará una disipación diferente dependiendo del lugar en que éste sea aplicado. De hecho, algunos resultados obtenidos a la fecha en el proyecto Fondecyt han mostrado que los residuos de algunos plaguicidas se disiparon más rápido en la zona de San Clemente y más lento en la zona de Casablanca, y en la zona de Los Ángeles en un grado intermedio. Por ello, enfatizan los investigadores, es imprescindible disponer de curvas para los diferentes valles vitivinícolas, considerando incluso que también dentro de ellos podrían existir ciertas diferencias de acuerdo a condiciones muy locales.

Si a eso sumamos el conocimiento del traspaso de cada uno de los plaguicidas, se podrá disponer de períodos de carencia más reales y ajustados para cada plaguicida y valle, y así poder producir fruta y vino que aseguren mínimo o “cero” residuos.

Algunos resultados se pueden apreciar en el Cuadro 1, donde se presentan los valores de vida media (TD50) y residuo a los 49 días después de la aplicación de algunos plaguicidas en dos variedades de uva vinífera.

TRASPASO DE PLAGUICIDAS AL VINO

D

urante los años 2011 y 2012, SIDAL realizó diversos estudios para determinar el nivel de traspaso y el efecto de los principales procesos enológicos en la persistencia de residuos de diferentes plaguicidas. Los trabajos se realizaron con uva tinta (Pinot Noir) y blanca (Sauvignon Blanc), las que fueron sometidas a una aplicación de plaguicidas 72 horas antes de la cosecha.

En resumen, lo que se pudo constatar fue que Lambda-cihalotrina (formulada como emulsión concentrada) fue el único plaguicida de los estudiados, que no traspasó desde la uva al vino, lo que se explicaría principalmente por su alta solubilidad en compuestos orgánicos (Log Kow = 6,91), de modo que sus residuos quedaron en el orujo y en el escobajo, en el caso de la vinificación de la uva tinta, y en el prensado en el caso de la vinificación de la uva blanca.

Los otros plaguicidas estudiados traspasaron en mayor o menor grado al vino, tanto en blanco como en tinto.

PESTICIDE TRANSFER TO WINE

During the years 2011 and 2012, SIDAL conducted multiple studies to ascertain the level of transfer and the effect of the main enological processes on the persistence of residues from different pesticides. The projects utilized red (Pinot Noir) and white (Sauvignon Blanc) grapes, which received a pesticide application 72 hours prior to harvest.

The realization was that Lambda-cyhalothrin (formulated as a concentrated emulsion) was the only pesticide of the set studied that did not transfer from the grapes into the wine. This is mainly explained by its high solubility in organic compounds (Log Kow = 6.91). Its residues remained in the skins and the stalks in the case of red grapes, and in the pressing in the case of white grapes.The VITIS Magazine MAYO I JUNIO 2015 I 29

Además, se hizo una segunda medición a los 10 meses de guarda a temperatura de laboratorio (22±2°C) y en oscuridad.

Se pudo apreciar la pérdida de residuos en este período, siendo los productos hidrofílicos, Imidacloprid y Acetamiprid, los que sufrieron la mayor pérdida con la guarda. “La matriz vino es una mezcla hidro-alcohólica y se podía esperar hidrólisis de algunos plaguicidas”, explican Marcelo Kogan y Claudio Alister.

Los procesos de vinificación que más afectaron la pérdida de los residuos fueron la eliminación a través del orujo, las fermentaciones alcohólica y maloláctica en el caso del vino tinto, y el prensado (eliminación a través de la pomasa), fermentación alcohólica y, en algunos plaguicidas, la clarificación con bentonita, en el caso del vino blanco.

Estos resultados son una base desde la cual se debe seguir investigando y aprendiendo. El proyecto del Consorcio Vinos de Chile, que va en su segundo año de un total de cuatro, aportará información respecto a los principales factores asociados a la disipación de los 17 principales plaguicidas que se utilizan en la producción de uva vinífera, y de los factores críticos respecto a la pérdida o concentración de residuos de plaguicidas en el proceso industrial de elaboración de vinos. De este modo, las viñas podrán contar con curvas de degradación mucho más fidedignas de cada uno de estos productos. V

The loss of residues during this period was fairly obvious, hydrophilic products –Imidacloprid and Acetamiprid– being the greatest losers as aging progressed. “The wine matrix is a mixture of water and alcohol, so we may well expect hydrolysis of some pesticides,” Marcelo Kogan and Claudio Alister explain.

The vinification processes with the greatest effect on residue loss were elimination through the skins, alcoholic and malolactic fermentations in red wines, and pressing (elimination through the pomace), alcoholic fermentation and, in some cases, clarification with bentonite in white wines.

These results constitute a base for further research and studies.

Already in its second year of a total of four, the project from the Vinos de Chile consortium will provide answers regarding the main factors associated to the dissipation of the 17 pesticides used on vinifera grapes, as well as the critical factors surrounding the loss or concentration of pesticide residues during the industrial process of making wine. Once concluded, it will provide wineries with a much more reliable set of degradation curves for each pesticide they use. V

HICIERON NOTICIA Through the Grapevine IN SITU WINES LANZA QV 2013, UN BUEN EXPONENTE DE ACONCAGUA Inspirado en la palabra francesa cuvée, In Situ Wines lanzó QV, una mezcla bordelesa que se convierte en su vino tope de gama y que en su cosecha 2013 está compuesta por 40% de Petit Verdot, 30% de Cabernet Sauvignon, 20% de Cabernet Franc y 10% de Malbec ($24.000). Tal como su nombre lo indica, la filosofía de In Situ es ofrecer sólo vinos del valle de Aconcagua, que reflejen el carácter único de este lugar dominado por el cerro Paidahuén, donde las parras conviven con ancestrales petroglifos y coquetean con el río.

Con una producción limitada de sólo 150 cajas, QV 2013 es un vino complejo, pero fácil de beber, con agradables notas a mentol y suaves taninos. “QV es una buena expresión del terroir de Alto Aconcagua, ya que presenta una gran concentración y estructura, con taninos bien redondeados por la madurez”, señala el enólogo jefe y gerente general Horacio Vicente.

Los vinos In Situ son producidos por Viña San Esteban, empresa familiar ubicada cerca de Los Andes, en el sector alto del valle de Aconcagua. Con una producción anual de 300 mil cajas y más de 15 años de presencia en el mercado internacional, desde ahora también tiene distribución en Chile a través de Santiago Wine Club.

IN SITU WINES LAUNCHES QV 2013, A WORTHY REPRESENTATIVE OF ACONCAGUA Inspired in the French Word cuvée, In Situ Wines has launched QV, a Bordeaux blend that has become their top-of-the-line wine, of which its 2013 vintage consists of 40% Petit Verdot, 30% Cabernet Sauvignon, 20% Cabernet Franc and 20% Malbec (USD 40). As the name implies, In Situ’s philosophy vows to offer wines exclusively from the Aconcagua valley that capture the unique character of that location dominated by Paidahuén hill, where vines coexist with ancient petroglyphs and flirt with the river shore.

With a limited production of only 150 cases, QV 2013 is a complex yet easy-to-drink wine, with pleasant mint notes and soft tannins. “QV is a great expression of Alto Aconcagua’s terroir, as it offers great concentration and structure, with well-rounded tannins prompted by ripeness,” asserts Horacio Vicente, chief winemaker and general manager.

In Situ wines are produced by Viña San Esteban, a family business located near the Andes, in the high region of the Aconcagua valley. With a yearly production of 3,000 cases and over 15 years of presence in international markets, the winery now has local distribution through the Santiago Wine Club.

sólo 12 kilómetros del mar en el Valle de Leyda, vigilando la desembocadura del río Maipo, se desparraman los viñedos de Amaral, esta filial del grupo MontGras que se ha especializado en Sauvignon Blanc, la gran estrella blanca chilena, produciendo 15 mil cajas al año bajo la dirección enológica de Jaime de la Cerda.

Hoy la viña profundiza aún más su relación con la cepa, con el lanzamiento de dos vinos de edición muy limitada: Block 7 y Block 34, ambos cosecha 2014. Mientras Block 7, proveniente de una antigua formación aluvial, demuestra su firmeza y voluptuosidad de sabores, Block 34 denota un carácter más austero, pero mucho vértigo y frescura en boca, proyectando toda la mineralidad de sus suelos con componentes calcáreos.

Estas dos propuestas hablan de brisa marina, de diversidad de suelos y exposiciones, de capas aromáticas y complejidad de sabores, de investigación y trabajo vitícola, de la vocación de Amaral por consolidarse como un gran referente del Sauvignon Blanc chileno.

ust 12 km from the ocean in the Leyda valley, overlooking the mouth of Maipo river, Amaral’s vineyards spread long and wide.This MontGras subsidiary specializes in Sauvignon Blanc -the great white Chilean star- producing 15,000 cases a year under Jaime de la Cerda’s winemaking direction.

Today the winery expands its relationship with this variety, launching two highly limited edition wines: Block 7 and Block 34, both of them 2014 vintage.While Block 7, from an ancient alluvial formation, boasts a firm and voluptuous mouthfeel, Block 34 denotes a slightly more austere character yet lots of punch and freshness on the palate, showcasing the intense minerality of its lime-rich soils.

Both these wines speak of sea breeze, soil diversity and sun exposure, aromatic layers and flavor complexity, viticultural work and research, and Amaral’s drive to grow into a benchmark of Chile’s Sauvignon Blanc.

a Compañía Chilena de Fósforos remató en la Bolsa de Comercio de Santiago 9.196.259.231 acciones de Viña San Pedro Tarapacá equivalentes a cerca de un 23% de la propiedad de la empresa. La operación sumó $45.981.296.155 equivalentes a unos US$ 74 millones, informó la compañía en un hecho esencial enviado a la Superintendencia de Valores y Seguros. El directorio de la compañía decidió retener 2.794.549.759 acciones, las que representan cerca del 7% de la propiedad.

Pocas semanas antes de esta venta, ICR Clasificadora de Riesgo había mejorado la clasificación de la viña, modificando desde Categoría A+ hasta Categoría AA-, la solvencia y línea de bonos.

Asimismo, la empresa alista un plan de inversión por US$ 35 millones para los próximos doce meses, de los cuales US$ 25 millones estarán destinados a la mejora de las actuales instalaciones de la planta de Molina y a una nueva línea de embotellado que le permitirá casi duplicar la capacidad actual de envasado. Este año, además, tienen contemplado replantar unas 170 hectáreas, el doble de lo que venían haciendo históricamente.

ompañía Chilena de Fósforos traded 9.196259231 billion shares of Viña San Pedro Tarapacá in the Santiago Stock Exchange, which is equivalent to nearly 23% of the company’s equity interest. The transaction amounted to CLP 45.981296155 billion, equivalent to some USD 74 million, as specified in the material fact reported to the Insurance and Securities Supervisor. The board of directors decided to keep 2.794549759 billion shares, which represents a 7% interest.

A few weeks before this transaction, the risk rating firm ICR Clasificadora de Riesgo raised the rating of the winery’s creditworthiness and bond issue from A+ to AA-.

Furthermore, the company has developed a USD 35 million investment plan for the next 12 months, USD 25 million of which are allocated to upgrading the existing Molina facilities and to implement a new bottling line that will increase its current bottling capacity twofold. In addition, the company has plans to replant some 170 hectares, twice as many as in the past.

Three celebrity sommeliers joined me on a tour through Chilean valleys and an increasingly livelier, innovative, and thrilling country. “This has been the best wine tour of my life!” said one of our guests in response to that awkward question we feel compelled to ask after leading somebody on a tour.

Junto a tres estrellas de la sommelería de Reino Unido, Estados Unidos y Brasil, atravesamos el Parque Forestal cuando ya desfallecía la tarde y las hojas anaranjadas de los árboles brillaban con las primeras luces de Santiago. Con nuestros desempolvados trajes de domingo, nos dirigimos al restaurante Mulato, en el patrimonial barrio Lastarria, para celebrar el primer encuentro de este viaje iniciático por diferentes valles chilenos.

Para esta primera noche preparamos un menú de degustación de cinco platos y diez vinos. La idea no sólo era mostrar una cocina chilena de alto nivel y de mercado, sino además contrastar las personalidades de una misma cepa provenientes de dos distintos orígenes. Así desfilaron los espumantes Titillum de Undurraga (Leyda) y Fervor de Casa Silva (Colchagua Costa); los Chardonnay Quebrada Seca 2011 de De Martino (Limarí) y Gran Reserva 2009 de Calyptra (Alto Cachapoal); los Malbec Lomas del Valle 2013 de Loma Larga (Casablanca) y

La cocina de Cristián Correa sorprendió a nuestros invitados por su calidad y carácter, especialmente sus Erizos con huevo pochado y Congrio con polvo de cochayuyo, pero sobre todo el nivel de los vinos y versatilidad para armonizar con distintas propuestas gastronómicas. “Estos son los mejores espumantes chilenos que he probado”, dijo de entrada el primer master sommelier polaco Adam Pawlowski, quien maneja la carta de vinos del restaurante del hotel boutique británico Northcote. A pesar de su recorrido por el mundo del vino, no había degustado una selección tan consistente y que hablara tan fuerte y claro de sus disímiles orígenes.

“A mí me fascina el Syrah chileno. Quiero más en Brasil”, agregó la sommelier Gabriela Monteleone, responsable de los vinos del D.O.M. de San Pablo, el cuarto mejor restaurante del mundo según la publicación británica Restaurant. Mientras tanto Thomas Campbell, el head sommelier del restaurante Atrium Dumbo de Brooklyn, no salía de su asombro al probar dos Malbec tan distintos a los que pueblan las estanterías norteamericanas y que tienen una gran oportunidad en el aún inexplotado mercado on trade. Todo eso conversábamos mientras caminábamos de vuelta al hotel en Bellavista. La cena había sido un éxito y, pese a conocernos hace menos de 24 horas, no pudo tener un mejor epílogo: con exaltación de la amistad e incipientes cantos gregorianos.

Partimos muy temprano rumbo al sur. En las hermosas instalaciones de Echeverría nos esperaban los representantes de las viñas de la Ruta del Vino Valle de Curicó. El día estaba frío y comenzamos a entrar en calor degustando bayas y mostos, que se procesaban en una bodega en pleno funcionamiento. Luego pasamos a una estación donde descorchamos la nueva generación de espumantes del valle, muchos de ellos elaborados bajo el método tradicional y con una inigualable relación precio/calidad. night-lights. Dressed in our best, we treaded towards Mulato restaurant at the heart of the Lastarria heritage neighborhood in this, our first stop of this initiatory journey throughout different Chilean valleys.

For this first evening, we had prepared a 5-course/10 wine tasting menu. Our goal was not only to feature high-level and market cuisine, but also to compare the personalities of the same variety but sourced from different origins. And so the parade began with sparklers Titillum by Undurraga (Leyda) and Fervor by Casa Silva (Colchagua Costa); then came Chardonnays Quebrada Seca 2011 by De Martino (Limarí) and Gran Reserva 2009 by Calyptra (Alto Cachapoal) and Malbecs Lomas del Valle 2013 by Loma Larga (Casablanca) and Roca Madre 2014 by Tabalí (Limarí); and then Cabernet Francs Limited Edition 2013 by Pérez Cruz (Maipo Alto) and Franco 2011 by Maquis (Colchagua); and finally Syrahs Aconcagua Costa 2013 by Errázuriz (Aconcagua) and Folly 2011 by Montes (Colchagua).

Our guests were awed at Chef Cristián Correa’s creations of superior quality and punch –particularly his Poached egg with sea urchins and Conger eel with powdered cochayuyo seaweed– but most of all at the high level of the wines and their versatility to pair to perfection with a number of dishes. “These are the best sparkling wines I’ve ever tasted,” was the opening remark of the first Polish master sommelier Adam Pawlowski, who is responsible for the wine list offered at the restaurant of Northcote, a British boutique hotel.

Despite his extensive career, he had never tasted such a consistent selection of outspoken wines from such different origins.

“I love Chilean Syrah. I’d like to see more of it in Brazil,” added sommelier Gabriela Monteleone, from D.O.M. in São Paulo, the fourth best restaurant in the world according to Restaurant, a British magazine. All this time,Thomas Campbell, head sommelier at Brooklyn restaurant Atrium Dumbo, seemed mesmerized with two Malbecs so dramatically different from those sold in the U.S. and with such a huge potential in an on-trade market yet to be tapped.That was basically our talk as we strolled back to the hotel in the Bellavista neighborhood. Dinner had been a screaming success and even though we had met only 24 hours before, the finale was simply the best:The exaltation of friendship and rudimentary Gregorian chants.

We headed out at the break of the day. Representatives from the member wineries of the Curicó Valley Wine Route were expecting us at Echeverría’s beautiful winery. It was a cold day but

Muchas veces cuando los grandes líderes de opinión visitan Chile, Curicó queda en el limbo, como si hubiera un tren subterráneo entre Colchagua y Maule. Como revista pensamos que es un valle pionero, fundamental en la historia de la vitivinicultura chilena y que hoy se reinventa para mostrar nuevamente la mejor de sus caras. Y no nos equivocamos. Los sommeliers destacaron la fruta franca y dulce de sus vinos, pero por sobre todo una rica acidez natural que se acrecienta a medida que nos acercamos a la costa o trepamos por la montaña.

Nos detuvimos a almorzar en el restaurante de Miguel Torres, la viña catalana que eligió a Curicó para comenzar a elaborar sus vinos chilenos, cambiando para siempre nuestra vitivinicultura con la introducción de nuevas tecnologías a finales de los setenta. Junto a su enólogo Fernando Almeda, hicimos un recorrido por los valles chilenos a través de su línea Cordillera, desde su Sauvignon Blanc del Elqui hasta su Carignan del Maule. Fueron en total siete vinos acompañados por sus respectivas propuestas gastronómicas, donde brillaron el Carpaccio de salmón ahumado, servido con brunoise de papayas y aire de cítricos (Chardonnay 2013 de Limarí) y el Filete de res en costra de pimienta negra, servido con milcaos rellenos de tomates secos en salsa de Cordillera Carmenère (Carmenère 2009 de Curicó).

Y finalizamos el día en el espectacular quincho de Via Wines, ubicado en el fundo Las Chilcas, en San Rafael, degustando los vinos de su propuesta más atrevida y chascona: Oveja Negra.

Junto a su enólogo Edgar Carter, descorchamos sus originales mezclas, mientras el sol comenzaba a esconderse, tiñendo de nostálgicos tonos rojizos sus viñedos que se desparraman bajo la atenta mirada del volcán Descabezado. Ensamblajes como Sauvignon Blanc y Carmenère causaron una grata sorpresa, pero sus vinos en base a Cabernet Franc y Carignan sin duda fueron las estrellas de la noche. Estos vinos, si bien tienen una súper relación precio/calidad, destacaron por su gran potencial gastronómico. Adam Pawlowski fue súper claro: “Son vinos para comer y eso se disfruta y agradece”. Alrededor de la gran chimenea de la casa de huéspedes, en una noche silente y oscura, los sommeliers se fueron a la cama con una sonrisa tinta dibujada en la cara.

Nuevamente salimos muy temprano rumbo al Maule más profundo, a la zona de Sauzal, donde nos esperaba nuestro guía canadiense y socio de Garage Wine Co. Derek Mossman.

En este pueblo en medio de la nada, equidistante de Cauquenes y San Javier, golpeado por los terremotos y por el bajo precio de sus uvas centenarias, comenzamos un viaje hacia el pasado, hacia las primeras parras introducidas en Chile, hacia la tradición del secano interior.

Visitamos la pequeña bodega El Viejo Almacén de Sauzal, donde el viticultor Renán Cancino hace a mano sus Carignan, Garnacha y País. Sus uvas estaban en pleno proceso de fermentación y se escuchaba el sublime murmullo de las levaduras. Fue un instante mágico. Sólo interrumpido por la es

It often happens that when opinion leaders visit Chile, Curicó remains in limbo, as if visitors traveled in an underground train from Colchagua to Maule. VITIS Magazine considers Curicó as a pioneer among wine valleys, a cornerstone of Chile’s winemaking tradition that is currently reinventing itself to shine in its best light.

And we were right on with this destination. Our guests praised the outspoken and sweet fruit and were delighted with that rich natural acidity that feels more vividly as we move closer to the ocean or higher up the mountains.

For lunch, we stopped at Viña Miguel Torres, the Catalonian winery that chose the Curicó valley to make its Chilean wines and changed our winemaking for good by introducing new technologies back in the late 1970s.Their winemaker, Fernando Almeda, took us on a food/wine pairing adventure throughout Chilean valleys that allowed us to taste their Cordillera line, which spans from a Sauvignon Blanc from the Elqui valley to a Carignan from Maule. All in all, we tasted seven wines and their respective food pairings, including a delicious Smoked salmon carpaccio served with brunoise of mountain papaya and citrus fruit foam (Chardonnay 2013 from Limarí) and Beef filet in a black pepper crust, served with milcao potato patties filled with dried tomatoes and topped with Cordillera Carmenère sauce (Carmenère 2009 from Curicó).

Our last stop of the day was Via Wines’ spectacular BBQ area in Las Chilcas estate, in San Rafael, where we tasted their most daring and informal line of wines: Oveja Negra. With the Descabezado volcano as a backdrop, winemaker Edgar Carter treated us to their quite unusual blends as the sun was setting, painting the vines in nostalgic tones of red. Blends like Sauvignon Blanc/Carmenère came as a nice surprise; however, their Cabernet Franc- and Carignan-based wines were definitely the stars of the evening. Even though they offer great value for money, these wines stood out mostly due to their amazing gastronomic potential. Adam Pawlowski couldn’t put it any simpler: “These are wines to eat, which is a most welcome treat.”The night was dark and quiet as we sat by the fire in the guest house. Eventually, our sommeliers went to bed with a red wine smile on their face.

Luego visitamos el campo de un productor en las afueras del pueblo. Allí nos esperaba Nibaldo y su señora Otelia. Siempre a caballo, con su chupalla bien puesta y la mirada perdida entre sus cabezas que suben y bajan por los agrestes lomajes, Nibaldo nos enseñó los secretos de la vitivinicultura de secano. El paisaje es sobrecogedor y sólo estando ahí se logra comprender la saga de la vitis vinífera. Gabriela, pese a haber estado muchas otras veces en Chile, nunca había visitado el secano maulino y quedó sorprendida por el carácter de sus vinos y de su gente. En la casa de los anfitriones, Otelia ofreció unas cañas de su célebre aguardiente y las últimas gotas de su País 2014, que Nibaldo guarda como un tesoro en su vieja tinaja. “Es uno de los vinos chilenos más interesantes que he probado”, afirma Thomas, conmovido por la honestidad y calidez de los anfitriones.

Seguimos nuestro viaje a Melozal, precisamente al fundo Santa Elena de Pablo Morandé. Rodeado de estos hermosos viñedos, donde el enólogo tiene un verdadero campo de experimentación con distintos cepajes e injertos, nos esperaban las botellas de Vigno – Vignadores de Carignan. A la sombra de un bosque de pataguas, por cuyas ramas trepan y se abrazan añosas parras, nos tenían preparado un verdadero festín campestre: empanadas fritas de queso, arrollados, sopaipillas, caldos enjundiosos y conejos a la cacerola. Mientras Andrés Sánchez, el presidente de la agrupación, explicaba la filosofía detrás de los vinos y su comunión con la tradición del secano maulino, aguardaban las ya 16 etiquetas de Carignan.

Los vinos se fueron mostrando uno a uno, cada uno con su propio estilo y personalidad. Algunos de ellos son Carignan puros, francos y transparentes, otros ensamblan los humores del Mourvèdre, Grenache, Syrah o Cinsault. A los sommeliers no sólo les asombró el concepto detrás de los vinos, el rescate de esta cepa despreciada durante décadas, sino la tremenda calidad y consistencia de sus propuestas. Es tanto el entusiasmo que Adam no duda en decir que los vinos son impresionantes y desde aquel mismo día se convertirá en embajador del Carignan maulino en el mundo.

Finalizamos el día en La Reserva de Caliboro, donde nos esperaban César Opazo y Augusto Reyes. El paisaje de Caliboro es inspirador. Sus sinuosos suelos lucían amarillos y sedientos, mientras mágicamente irrumpían los manchones verdes de sus viñedos. En su bodega de adobe, tan antigua como la tradición del secano, probamos una selección de los vinos de Garage Wine Co. Another early start. This time, heading deeper into the Maule valley to an area called Sauzal, where the Canadian partner of Garage Wine Co., Derek Mossman, was expecting us.This town in the middle of nowhere, halfway between Cauquenes and San Javier, hard-hit by earthquakes and the low price of its centennial grapes was the starting point of a journey to the past, towards the earliest vines introduced in Chile and the interior dry-farming tradition.

We visited a small called El Viejo Almacén de Sauzal, where viticulturist Renán Cancino makes Carignan, Garnacha and País wines with his own hands. Fermentation was in full swing and we could hear the faint gurgling of yeasts. It was a magical moment only interrupted by the sudden wail of the fire station siren signaling noon.

We then visited the vineyard of a producer in the outskirts of the town. Nibaldo and Otelia, his wife, were expecting us. Always astride his horse, a hat on his head and gazing into the vines that spread throughout the hills, Nibaldo showed us the secrets of dry farming.

The landscape is absolutely stunning and only once you are there you can begin to understand the kind of saga vitis vinífera has gone through. Even though Gabriela had been in Chile several times, she had never been to Maule’s dry-farmed areas, and she was amazed by the character of its wines and people. Once at our hosts’ place, Otelia offered us a glass of her famous grape spirit and the last drops of her País 2014, which Nibaldo keeps as a veritable treasure in an old clay vat. “This is one of the most interesting Chilean wines I’ve ever tasted,” said Thomas, who looked clearly moved by the candor and friendliness of our hosts.

We resumed our trip and headed towards Pablo Morandé’s Santa Elena estate in Melozal. The wines made by Vigno – Vignadores de Carignan awaited us in a landscape of splendid vineyards where the winemaker has a true experimentation station with a number of varieties and grafts. Sitting in the shade of a forest of native patagua trees where vine branches grow tangled up, we were greeted with a delightful countryside feast: Fried cheese empanadas, pork meat rolls, sopaipillas (deep fried pita), hearty broths, and stewed rabbit.While Andrés Sánchez, the association chair, explained to us the philosophy behind their wines and their communion with the Maulean dry-farming tradition, 16 labels of Carignan were already sitting on the table.

One by one, the wines boasted their own style and personality.

Some were outspoken, transparent Carignan varietals, while others were blends that featured the attributes of Mourvèdre, Grenache, Syrah or Cinsault. Our sommeliers were not only intrigued by the notion behind these wines and the efforts made to rescue this grape

de Garage Wine hasta el muy voluptuoso representante de Caliboro. Mientras nos vigila el mismísimo conde Francesco Marone Cinzano, omnipresente en un retrato que cuelga de una de las resquebrajadas paredes, los vinos se muestran extremadamente bien con sus notas de flores silvestres y guindas ácidas.

En una noche muy estrellada, junto a una excelente asado de cordero, disfrutamos de una gran vertical de Erasmo, desde la cosecha 2004 hasta la presente. Esta mezcla bordelesa, pero de origen rústico y campechano, demostró todo su poder y noble capacidad de envejecimiento. Mi favorita es la cosecha 2006 y mi opinión es compartida por el resto. Cada vez que pruebo este vino, va enseñando nuevas capas gustativas y complejidades, haciéndose más cómplice de su origen.

Fue tal el entusiasmo que César sacó su guitarra y comenzó a pasearse por el repertorio popular latinoamericano. Sus canciones alegraron la noche, intercaladas por las carrasposas versiones de Pearl Jam y Radiohead de Thomas.

Luego de un desayuno de campo, donde sobresalió una vez más el terroir de Caliboro, emprendimos el regreso hacia el norte. Nuestra próxima parada: Viña Aresti, ubicada en el brumoso subvalle de Molina. Los vinos de esta bodega curicana eran más bien conocidos por su marca Espíritu de Chile, pero fue grande la sorpresa al encontrar un nuevo espíritu que ya logra trasuntar en los vinos. En el campo Bellavista, en una quebrada con vegetación nativa, donde cae una graciosa vertiente, descorchamos un vino que representa esta nueva etapa: Only, un espumante joven y chispeante.

Pero las sorpresas no terminaron. En la cava de su bodega subterránea, el enólogo Jon Usabiaga lideró una degustación con las novedades de Aresti, donde destacaron su ya reconocido Trisquel Sauvignon Blanc 2014 de Leyda, pero además un tremendo Merlot 2014, plantado a 1.255 metros de altura, en plena precordillera curicana; Familiy Collection Cabernet Sauvignon 2010-2011 y una primicia: un ícono cosecha 2011, que regala mucha identidad, estructura y alegría.

Seguimos más al norte y llegamos al restaurante de Casa Silva. Allí nos esperaba Thomas Wilkins, quien ya comenzaba a despedirse de la viña para emigrar a Viu Manent, y el enólogo Mario Geisse, un querido y respetado conocido de Gabriela por todo su aporte al desarrollo de los espumantes en Brasil.

variety despised for so many decades, but also by the impressive quality and consistency of the different bottlings. They were so thrilled that Adam immediately called them remarkable wines and proclaimed himself as the world ambassador of Maule’s Carignan.

Our last visit of the day was La Reserva de Caliboro, where our hosts were César Opazo and Augusto Reyes.The landscape at Caliboro is breathtaking. The winding soils looked yellowish and thirsty, decorated with the bright spots of the vineyards. In their adobe winery, as ancient as the dry farming tradition, we tasted the wines produced by Garage Wine Co. It is very interesting to see how the different terroirs showcase and impose their own style, from the juicy Carignan from Sauzal to the full-bodied representative of Caliboro. Under the gaze of the very Count Francesco Marone Cinzano who watches everything that happens in the room from his portray hanging from a crumbling wall, the wines performed magnificently, proudly showing their notes of wild flowers and sour cherries.

In a starry night and while indulging in a delicious roasted lamb, we had the pleasure to enjoy a superb vertical tasting of Erasmo wines, from the 2004 vintage to the latest one. This Bordeaux blend with a very rustic and grass-roots style boasted all its power and noble aging potential. My favorite is the 2006 vintage, an opinion which my travel companions shared. Every time I taste this wine, I discover new flavor layers and complexities that clearly speak of its origin. The mood was so festive that César pulled out his guitar and started playing tunes from all over Latin America and was soon joined by Thomas, whose husky rendition of Pearl Jam and Radiohead provided the perfect ending to a lively evening.

Following a hearty country-style breakfast, where once again the magnificent terroir of Caliboro was the undisputed star, we headed back north towards our next stop: Viña Aresti, located in the hazy sub-valley of Molina in Curicó.The winery was mostly known for its classic Espíritu de Chile brand, but we were greatly and pleasantly surprised to discover a new spirit that has begun to imbue its wines. Upon arriving at the Bellavista estate, we made our way to a ravine adorned by native vegetation and the graceful flow of an artesian well. There we uncorked “Only”, a young and lively sparkler that symbolizes the spirit of this new era.

But surprises were far from being over. In the winery’s underground cellar, the winemaker Jon Usabiaga conducted a tasting of Aresti’s latest releases, among them the acclaimed Trisquel Sau-

En un almuerzo muy conversado y entretenido, degustamos los vinos en pareja, contrastando la tipicidad de sus diferentes orígenes: Sauvignon Blanc y Pinot Noir de Lago Ranco y Paredones; Syrah de Paredones y Lolol; y el broche de oro: Microterroir de Los Lingues Carmenère.

Esta experiencia ayudó a mostrar la versatilidad y vocación innovadora de la viña, pero además dejó con la boca abierta a más de alguno. “Es el mejor Sauvignon Blanc chileno que he probado. Tiene un carácter y tipicidad únicos”, dijo Adam, refiriéndose al representante de Lago Ranco, cuya cosecha 2013 crece en complejidad, pero sin perder un ápice su vivacidad y frescura.

Terminamos la jornada en el fundo El Roble de Apalta de Viña Ventisquero. Allí aguardaba su triunvirato de enólogos en pleno, compuesto por Felipe Tosso, Sergio Hormazábal y Alejandro Galaz. Fue una velada mágica. A varios cientos de metros de altura, luego de subir a duras penas por escarpadas huellas –una de las camionetas quedó en el camino-, disfrutamos del atardecer y de un programa de ensueño. El sol se ponía por los faldeos al poniente, pintando las espalderas de amarillos, naranjos y rosas. Allí saltó el corcho de su primer espumante, una delicia que disfrutamos con un festín de ostras.

El chef Patricio Cáceres, más conocido como Motemei, sacó de su sombrero un menú que dejó a muchos boquiabiertos, combinando rarezas como carnes rojas y erizos, propuestas disruptivas y sabrosas, pero que iban estupendamente bien con los vinos, especialmente con los exponentes del Huasco.

Fue una velada intensa y entretenida, que terminó con sus vinos íconos Pangea y Enclave. Sí, definitivamente,Ventisquero tiró la casa por la ventana.

Esa noche, después de dar un sinfín de vueltas, tan perdidos como somnolientos, llegamos a las 3:30 de la madrugada a nuestro lugar de alojamiento: el hotel de la Viña Vik.

vignon Blanc 2014 from Leyda and an incredible Merlot 2014 planted at 1,255 meters on Curicó’s Andean foothills, Family Collection Cabernet Sauvignon 2010-2011 and an absolute first: A 2011 icon brimming with identity, structure and joy.

Continuing our journey to the north, we landed on the restaurant of Casa Silva.There we were greeted by Thomas Wilkins, who had begun to pack his things to migrate to Viña Viu Manent, and the winemaker Mario Geisse, a dear and respected acquaintance of Gabriela for his enormous contribution to the development of sparkling wines in Brazil. During a lively luncheon, we tasted the wines in pairs, contrasting the typicity of their various origins: Sauvignon Blanc and Pinot Noir from Lago Ranco and Paredones; Syrah from Paredones and Lolol; and the cherry on top: Microterroir de Los Lingues Carmenère.

This experience not only proved the winery’s versatility and innovative spirit, but it also left some of us dumbstruck. “This is the best Chilean Sauvignon Blanc I have ever tried. Its personality and typicity are simply unique,” said Adam in reference to the Lago Ranco wine, whose 2013 vintage is growing in complexity without losing a bit of its vivaciousness and freshness.

We ended the day at Viña Ventisquero’s El Roble de Apalta estate, where we were awaited by the winery’s winemaking triumvirate composed of Felipe Tosso, Sergio Hormazábal and Alejandro Galaz. It was a magical evening, spent at several hundred meters high. After barely managing to climb the steep trail –one of our trucks could not stand the effort and simply broke down– we enjoyed the wonderful sunset and a sensational program.The sun slowly went down the western slopes, tinting the vineyard rows with yellow, orange and pink hues.There the cork of the first sparkler flew over our heads, releasing a true delicacy we enjoyed together with a feast of oysters.

Chef Patricio Cáceres, also called Motemi, dished out a jawdropping menu that combined such rarities as red meat with sea urchins in a disruptive yet flavorful combination that worked wonders with the wines served, especially those from Huasco. It was indeed an intense and entertaining evening that ended with the winery’s icons Pangea and Enclave. Yes, definitely Ventisquero spared no effort to please its guests.

That night, after riding through what seemed to be an endless succession of turns, we finally made it to our accommodation at 3:30 am:The hotel of Viña Vik.

El día comenzó algo más tarde que lo habitual. Cuesta dejar esas habitaciones ideadas por algunos de los más grandes diseñadores del mundo. El contraste entre esta posmoderna viña y la precariedad de Sauzal, sin duda simbolizan las diferentes caras de la vitivinicultura chilena. Una ancestral, que libra día a día una verdadera lucha de sobrevivencia, y otra moderna y elegante, donde los límites parecen no existir. El diseño de los distintos cuarteles, que se encaraman en las montañas, buscando distintas exposiciones, distintos drenajes, distintos corredores de viento, dan vida a un vino, a una marca, a un ensamblaje que sorprendió a los sommeliers por su profundidad y fineza.

En una cata liderada por su enólogo Cristián Vallejo, al interior de su imponente y sustentable bodega, catamos los componentes de Vik y cada uno de nosotros tuvo la oportunidad de ensayar diferentes mezclas. En esa instancia Adam demostró que como enólogo es un gran master sommelier.

Terminamos el programa con un almuerzo con Cristián, Gonzague de Lambert y Patrick Valette, acompañados del verdadero Vik, cosecha 2011, sin duda uno de los vinos favoritos del sommelier polaco.

El viaje continuó a Valparaíso, siguiendo el camino de la fruta y sus interminable fila de camiones. Llegamos al restaurante Espíritu Santo, encaramado en el cerro del mismo nombre, donde estaban los representantes de MOVI con sus vinos y una gran cena porteña. En una larga y bien conversada mesa, fuimos catando los vinos seleccionados. Ya son 24 socios. ¡Cómo ha crecido MOVI! Los vinos se mostraron bien y reflejaron con soltura sus distintos orígenes y estilos. De hecho tres de sus vinos fueron elegidos por los sommeliers como los favoritos en su clase.

Después de escuchar algunas notas de la noche porteña, en un bar de viejas y renovadas proclamas, cambiamos los vinos por espirituosos y nos fuimos a descansar. A esas alturas ya estábamos absolutamente inmovilizados.

The day started slightly later than usual. It is not easy to leave these rooms conceived by some of the world’s greatest designers.

Without a doubt, the contrast between this post-modern winery and the rawness of Sauzal symbolizes the different faces of Chilean winemaking. On one side there is an ancestral face that fights for its survival and, on the other, a modern and elegant visage where limits do not seem to exist. The design of the different lots that cling to the hillsides trying to find new exposures, new drainage and new wind passages give life to a wine blend and brand that surprised sommeliers with its depth and purity.

During a tasting led by the winemaker Cristián Vallejo inside the winery’s imposing and sustainable construction, we sampled the components of Vik and each one of us had the chance to try out different blends. Here, Adam proved that, as a winemaker, he is a great sommelier. We ended the program with lunch in the company of Cristián, Gonzague de Lambert and Patrick Valette sipping on Vik 2011, without question one of the Polish sommelier’s favorite wines.

The journey then took us to Valparaíso along the so-called “fruit road” and its endless lines of trucks. We arrived at Espíritu Santo, a restaurant perched on the homonymous hill, where MOVI representatives were awaiting us with a great display of their wines and a superb dinner.We sat at a long table and began tasting the wines selected. MOVI has grown tremendously, with 24 members in all.The wines opened up well and revealed their different origins and styles with ease. In fact, the sommeliers chose three of these wines as their favorite in their class.

After listening to some tunes at a bar of great tradition, we swapped wine for spirits and then decided to retire for the evening.Truth be said, we were totally worn out.

We started the day at Viña Indómita, where we tasted some of the great wines grown in Casablanca:A selection of Sauvignon Blanc, Pinot Noir, Merlot and Syrah produced by Indómita, Cono Sur, Casablanca, Veramonte and El Cuadro. Gabriela was particularly appreciative of this tasting. She had tried many Casablanca wines before, but never with so much time and detail to really understand the behavior of the grapevines in the different climates of the valley. Even though Sauvignon Blanc remains the most consistent variety in terms of quality –an already established category worldwide–, this time the reds

con tanto foco y tiempo para poder entender el comportamiento de sus cepajes en las distintas zonas agroclimáticas. Aunque el Sauvignon Blanc sigue siendo la cepa más consistente en términos cualitativos –una categoría ya en todos los rincones del mundo–, fueron los tintos los que sorprendieron por su carácter especiado y profundamente fresco.

El almuerzo nos esperaba en House Casa del Vino con un menú especialmente diseñado para maridar con la más innovadora de sus propuestas. Estos vinos hechos a mano, donde los enólogos del grupo tienen la libertad de elegir sus cepajes, orígenes y estilos –incluso el nombre del vino y el diseño de su etiqueta–, supieron mostrar ese otro Chile, el espíritu de este viaje, una imagen que ya no es tan difusa, sino ya comienza a proyectar sus notas, estructura y bouquet.

Con la enóloga Daniela Salinas, la responsable de vigilar los huevos de concreto de los enólogos y de Despechado –el Pinot Noir favorito de Gabriela–, fuimos recorriendo un menú de maridajes, donde pudimos apreciar los siete vinos de House Casa del Vino –Creole, Despechado, Aterciopelado, Bestiario, Gran Petit, Tirazis y Malmau–, que armonizaron con platos como Molleja grillada con crema de erizos y un finísimo Salmón demi-cuit con algas salteadas y limón confitado.

Ya debíamos dejar Casablanca para volver a Santiago.

Apenas teníamos tiempo para cambiarnos e ir a la cena de despedida al restaurante Peumayén. Allí nos reunimos con Cecilia Torres, Felipe Tosso, Pilar Miranda y Derek Mossman. La idea fue degustar distintas cosechas de los grandes tintos del Maipo Alto, entre ellos Pura Fe de Antiyal, Hussonet de Haras de Pirque, Lota de Cousiño Macul, Barón de Aristos y Casa Real de Santa Rita. Esta cata tuvo un alto impacto y demostró una vez más la estatura de esta emblemática denominación chilena. “Se me llegaron a parar los pelos”, exclamó Thomas al degustar la mezcla de Aristos, mientras Gabriela y Adam no podían creer la fineza y suavidad de la cosecha 2002 del Cabernet Sauvignon de Santa Rita.

Luego hubo una cena donde armonizamos las propuestas de este restaurante de comida ancestral, como su increíble panera que rescata y pone en valor recetas aymara, rapa nui, mapuche y chilota, con tremendos e innovadores vinos como Viejas Tinajas Moscatel 2014 de De Martino, Quino Pinot Noir 2012 de William Fèvre, Tara Red Wine 2013 de Ventisquero y The Blend 2012 de Errázuriz. Pero en al final del menú estaba la mayor de las sorpresas: un filete de caballo que todos miraron con cierto recelo, especialmente el sommelier norteamericano. Los comensales tenían que elegir el tinto para acompañarlo y el maridaje fue tan excéntrico como sublime. Un carne rústica, despreciada, con un vino que representa el emblema de la elegancia.

Lunch was ready at House Casa del Vino, with a menu designed to match the winery’s most innovative proposals. These hand-made wines where winemakers enjoy the freedom to select the varieties, origins and style –even the name of the wine and the label design– were true reflections of the less commercial side of Chile, of the spirit of this journey and of an image that is no longer blurry but has begun to show distinctive notes, structure and bouquet.

Winemaker Daniela Salinas, who is responsible for watching over the winemakers’ concrete eggs and Despechado –Gabriela’s favority Pinot Noir–, guided us through a pairing menu for the seven wines of House Casa del Vino –Creole, Despechado, Aterciopelado, Bestiario, Gran Petit, Tirazis and Malmau–, which were served with dishes like grilled sweetbreads with creamed sea urchins and a lovely demi-cuit salmon with sautéed seaweeds and candied lemon.

And soon we found ourselves on our way back to Santiago.

We barely had time to change to attend the farewell dinner at restaurant Peumayén. There we were met by Cecilia Torres, Felipe Tosso, Pilar Miranda and Derek Mossman.The idea was to sample a variety of vintages of great reds from Maipo Alto like Pura fe from Antiyal, Hussonet from Haras de Pirque, Lota from Cousiño Macul, Barón from Aristos and Casa Real from Santa Rita. The tasting had an enormous impact and demonstrated once again the impressive stature of this emblematic Chilean appellation. “They made my hairs stand on end,” said Thomas when he tried the blend from Aristos, while Gabriela and Adam could not believe the finesse and velvety sensations of Santa Rita’s Cabernet Sauvignon 2002.

Then we all shared dinner and paired the proposals of this restaurant of ancestral preparations, such as the incredible bread basket that combines Aymara, Rapa Nui, Mapuche and Chiloé recipes, with some incredible and innovative wines like Viejas Tinajas Moscatel 2014 from De Martino, Quino Pinot Noir 2012 from William Fèvre, Tara Red Wine 2013 from Ventisquero and The Blend 2012 from Errázuriz. But at the end of the menu was the greatest surprise of all: A fillet of horse that caused some mistrust in all of us, especially the American sommelier. Guests had to choose the red to go with it, and the pairing was as eccentric as it was sublime. A rustic and despised cut of meat with a wine that represents the culmination of elegance.

El enólogo Adolfo Hurtado fue el primero en hacer conocida la maceración carbónica en Chile. Buscaba mejor color, intensidad frutal y suavidad de taninos en sus emblemáticos Pinot Noir.

Aunque atraviesa por su momento más estelar, esta técnica ya tiene sus detractores. Es cierto. Produce vinos de colores brillantes y gran intensidad frutal, pero también ciertas consecuencias negativas difíciles de obviar.

ardó, pero llegó. La maceración carbónica es una técnica de vinificación muy difundida durante los últimos años. Ya casi ostenta el rótulo de moda. Recuerdo que el primero en importarla –al menos en hacerla conocida por estos lares– fue el gerenteenólogo de Cono Sur Adolfo Hurtado, quien buscaba nuevas alturas cualitativas con sus emblemáticos Pinot Noir, específicamente mejor color, intensidad frutal y suavidad de taninos.

A diferencia de la fermentación alcohólica, en que las levaduras aprovechan la ruptura de las uvas para transformar los azúcares del mosto en CO2 y alcohol, en la maceración carbónica –también llamada fermentación carbónica– todo sucede al interior de las bayas. Al mantener los granos enteros, en un ambiente anaeróbico, las células de las uvas comienzan a respirar los azúcares y convertirlos en etanol.

Este proceso generalmente se realiza en tanques abiertos, a temperaturas reguladas y con adición de gas carbónico. El objetivo es que el proceso sea lento y delicado, evitando al máximo la ruptura de los granos para inhibir las fermentaciones alcohólicas. Aún así, la fermentación suele quedar incompleta y hay que prensar los orujos y terminar el proceso añadiendo levaduras, como una vinificación tradicional.

Esta técnica es muy usada en algunos rincones de Europa para la producción de vinos jóvenes y frutosos, sin largas crianzas en barrica. En España, en especial en Jumilla, Bierzo y Toro, llaman a estos vinos “cosecheros” o “tintos del año”. En el sur de Borgoña, el primer jueves de noviembre, se desata la fiesta,

CARBONIC MACERATION

Why yes.

Although it is enjoying its moment of stardom, this technique also has its naysayers. True, it produces wines of bright colors and great aromatic intensity, but also some negative effects that are hard to neglect.

A bit tardy, but it finally arrived. Carbonic maceration is a vinification technique that has gained tremendous popularity in recent years. So much so that it has almost become a fashion. The first person to import it –or at least make it known in this region of the world– was Cono Sur’s manager-winemaker Adolfo Hurtado, who was looking for new quality levels for his emblematic Pinot Noir. More specifically, he sought to achieve greater color and fruit intensity, as well as smoother tannins.

cuando anuncian que “le Beaujolais nouveau est arrivé”. Estos vinos, elaborados a partir de la cepa Gamay, se han convertido en los niños-símbolo de la maceración carbónica, ensamblando factores enológicos y de marketing.

En Chile, especialmente en las zonas de secano, también se acostumbra a realizar una suerte de maceración carbónica con uvas tradicionales como la País. Las fermentaciones con racimos enteros posibilitan el fenómeno de respiración celular, pero al zarandear la fruta o producto de los golpes del destino, las pieles se rompen y crean las condiciones para el inicio de una fermentación alcohólica espontánea.

Hoy son muchos los enólogos que incorporan la maceración carbónica para la producción de sus Pinot Noir o de algunas cepas rústicas. En términos generales, obtienen vinos con niveles más bajos de densidad, extracto seco y acidez, pues se produce una degradación del ácido málico. Pero la mayor incidencia ocurre a nivel de aromas primarios. A veces son tan intensos que recuerdan a chicle de frutilla o bombón inglés. Estos aromas derivan de los ácidos fumárico, siquímico y aspártico, así como también de la presencia de algunos compuestos fenólicos volátiles.

Sin embargo, esta técnica ya tiene no pocos detractores. La principal crítica es que tiende a uniformar el espectro aromático. Los vinos con maceración carbónica generan aromas comunes, quizás difíciles de definir, pero muy identificables para las narices más prevenidas o entrenadas. Para algunos, se produce una pérdida de identidad. Para otros, es una opción válida si se utiliza en su justa medida.

POR QUÉ NO

Claudio Barría ha sido un férreo defensor de la cultura de secano y de sus vinos. Fue el primer enólogo en embotellar un País orgánico cuando lideraba el equipo enológico de la Cooperativa Lomas de Cauquenes en la década del 90. Luego se enfocó en lo que él llama el Itata Profundo, en desarrollar proyectos, en rescatar y promover las centenarias cepas de Moscatel y Cinsault.

Hoy, de vuelta en la cooperativa, continúa profundizando su relación con los vinos de rulo, tal vez con el alma dividida, pero 48 I VITIS Magazine MAYO I JUNIO 2015

Unlike alcoholic fermentation, where yeasts take advantage of ruptured skins to enter the grapes and transform the sugars contained in the must into CO2 and alcohol, in carbonic maceration –also called carbonic fermentation– the whole process takes place inside the grapes. By keeping the berries whole in an anaerobic environment, grape cells begin to metabolize sugar and transform it into ethanol.

The process is generally conducted in open-top tanks at controlled temperature and with added carbon dioxide. The idea is to make it slow and delicate, avoiding skin rupturing as much as possible to inhibit alcoholic maceration. However, fermentation is often incomplete and the process needs further pressing of the skins and the addition of yeasts, as in traditional vinification.

This technique is very popular in certain regions of Europe for the production of young and fruity wines without much barrel aging. In Spain, particularly in Jumilla, Bierzo and Toro, these wines are called “cosecheros” or “reds of the year”. In southern Burgundy, festivities begin on the first Thursday of November, when the arrival of the new Beaujolais is announced. These wines are made from Gamay grapes and have become a symbol of carbonic maceration, as they bring together enological and marketing factors.

In Chile, a sort of carbonic maceration is conducted with traditional grapes like País, especially in dry-farmed areas. Fermenting whole clusters allows cell respiration, but skins inevitably break during sieving, creating the conditions for spontaneous alcoholic fermentation.

Today, many winemakers have incorporated carbonic maceration into the production of Pinot Noir or other more rustic varieties. In general, the wines obtained are less dense, dry and acidic, as the process degrades malic acid. But the most evident signs are perceived in primary aromas. Sometimes, these aromas are so strong that they feel like strawberry chewing gum or toffee. They are produced by fumaric, shikimic and aspartic acid, and also by the presence of certain volatile phenolic compounds.

But this technique has also been battered for a while. The main criticism is that it tends to make the aromatic spectrum mainstream.

Wines made with carbonic maceration release aromas that are too common and probably hard to define, though very easily identifiable for the trained nose. For some, there is a loss of identity. For others, this is a valid option if utilized wisely.

WHY NOT

Claudio Barría has been a strong advocate of the dry-farming culture and its wines. He was the first to bottle an organic País wine during his days leading the winemaking team at the Lomas de Cauquenes cooperative back in the 1990s. Then he focused on what he calls the “Deep Itata Valley”, developing projects, recovering and promoting the centennial varieties Muscatel and Cinsault.

Today he is back at the cooperative and continues deepening his relationship with the wines from the dry lands. Only this time his ideas are crystal clear: “I use traditional fermentation for making organic País, that is, with native yeasts and no nutrition.What matters

Está de acuerdo en sólo un aspecto. Si no hay maltrato de la uva y se realiza correctamente el proceso de maceración carbónica, los vinos pueden resultar más suaves al paladar. De hecho, como enólogo de La Fortuna, vinificó un Pinot Noir

But he agrees with one aspect. If grapes are treated delicately and carbonic maceration is conducted properly, the resulting wines can feel smoother to the palate. In fact, when working as a winemaker for La Fortuna, he applied carbonic maceration to approximately 15% of the grapes used for his Pinot Noir with one specific goal: to compensate for the lack of terroir expression.

Barría no está de acuerdo con esta técnica por un tema de principios y jamás la aplicaría para sus vinos de Cauquenes e Itata. Recuerda un viaje a Borgoña, donde pudo constatar que sus principales referentes no hacen maceración carbónica. “La hacen en el sur, en Beaujolais, para realzar su poca fruta y consistencia. Son todos vinos de consumo rápido. Los grandes, en cambio, no hacen, porque caerían en la ordinariez. Le pregunté a uno de los gurúes de la Côte de Nuis si hacía carbónica y me miró como si lo estuviera insultando”, se ríe.

POR QUE SÍ

Uno de los vinos más interesantes que he probado últimamente es Creole, perteneciente a esta loca familia llamada House Casa del Vino. Ricardo Baettig, el responsable de este tinto, tuvo la más absoluta libertad para parir su creatura. Eligió el origen, la composición, el nombre y diseño de su etiqueta, y por supuesto, la técnica de vinificación: maceración carbónica.

Para el enólogo, los vinos con maceración carbónica tienen un aroma muy claro, bien frutal y un poco terroso.“¡A mí me encanta!”, exclama. Sin embargo, eso no quiere decir que vaya a utilizar esta técnica para todos sus vinos. El objetivo es resaltar los aromas de Creole –esa poderosa fusión de guindas ácidas y flores silvestres–, pero por sobre todo aplacar los rústicos taninos del País.

Si bien cumplió con su objetivo de evitar las sobreextracciones, sostiene que los taninos no resultan tan dóciles como expresa la teoría de la maceración carbónica. “Son un poco secantes, pero no duros. Tienen un perfil distinto, que tiende a suavizarse con el tiempo. Después de 10 meses de guarda los taninos se polimerizan y se sienten distintos. Mr Barría’s disagreement with this technique is a matter of principles and he would never use it for his wines from Cauquenes and Itata. He remembers a trip to Burgundy where he realized the region’s big wines never use carbonic maceration. “They do this in the south, in Beaujolais, to make up for the lack of fruitiness and consistency. These are quick turnover wines but the great wines never go through it, or else they would lose their appeal. I once asked a guru from Côte de Nuits if they ever used carbonic maceration and he frowned at me as if this was some sort of insult,” he laughs.

WHY YES

One of the most interesting wines I have tried lately is Creole, from that crazy family called House Casa del Vino. Ricardo Baettig, the winemaker responsible for this wine, enjoyed the greatest of freedoms to create this wine at his will. He chose the origin, the composition, the name and label design, and, of course, the vinification technique: Carbonic maceration.

For Mr Baettig, wines with carbonic maceration have a distinctive, very fruity and not-so-earthy aroma. “I just love it!” he exclaims. But of course this does not mean he will use this technique for all his wines.The purpose is to highlight the aromas of Creole –that potent fusion of sour cherries and wild flowers– while curbing the rustic tannins of País.

And although he met his goal of avoiding over-extraction, he admits tannins are not well-tamed, as carbonic maceration theory suggests. “They are a bit dry, but not harsh at all. They have a different profile that tends to smooth out with time. After 10 months aging, tannins polymerize and begin to feel different. But with traditional fermentation, green tannins will remain green forever.You may

Baettig también ha utilizado esta técnica para la producción de Pinot Noir de la línea Reserva de Morandé, pero en forma muy acotada. El enólogo sentía que a los vinos les faltaba un poco de fruta y a partir del año pasado comenzó a realizar maceraciones carbónicas con el 15- 20% de su fruta. El resultado ha sido positivo: los vinos han ganado en intensidad, pero sin traicionar sus aromas varietales.

“La maceración carbónica se nota en los vinos y los cambia completamente. En una degustación de Vigno con James Suckling fue un tema de discusión. Los Carignan que tenían algún porcentaje de maceración carbónica se salen un poco del marco. Tienen otro perfil aromático.Y esos vinos no fueron precisamente los que más le gustaron al crítico norteamericano”, relata.

De acuerdo al enólogo, el caso del Pinot Noir es distinto, pues la cepa y los aromas que se desarrollan con la carbónica son más afines, más comunes, como esa nota terrosa. Por lo tanto, al aplicar esta técnica, el vino no se aleja tanto de los aromas primarios de su fruta.

“Como todas las cosas en la vida, nada es 100% efectivo.Todo tiene que usarse en su justa medida. Como no se trata de botar todas las barricas y comenzar a vinificar en fudres –las barricas también tienen su lógica–, la maceración carbónica es una herramienta útil para cumplir ciertos fines específicos”, explica. Mr Baetting has used this technique for making the Pinot Noir included in the Reserva de Morandé line, although in a very discreet way. He had the feeling that these wines lacked in fruitiness and last year he began conducting carbonic maceration on 15-20% of the grapes, with positive results: Wines have gained in intensity without betraying their varietal aromas.

“Carbonic maceration is evident and changes wines completely.

At a tasting of Vigno with James Suckling, this was actually a matter of discussion. Those Carignans with some carbonic maceration in them escape the traditional pattern and acquire a different aromatic profile. And I can assure you they were not precisely of his liking,” he adds.

According to him, Pinot Noir is a different story because the aromas that come out with carbonic maceration are more in line with this variety, like the earthy notes. Therefore, when applying this technique the wine does not spin off the primary aromas of its grapes.

“As everything else in life, nothing is 100% effective. Everything has to be used in its right measure. Since this is not a case of throwing away the barrels and conducting vinification exclusively in large casks –there is a logic behind barrels– carbonic maceration is useful to achieve certain specific goals,” he concludes. HH aciendo honor a su nombre, la línea de vinos Oveja Negra nació hace más de una década para proponer opciones innovadoras dentro de VIA Wines, la viña creada en 1998 por Simon Farr, fundador de Bibendum, y la familia Coderch. Comenzó ofreciendo vinos del nivel reserva y lanzando mezclas nada de tradicionales como Cabernet Franc/ Carmenère y Sauvignon Blanc/Carmenère. Si bien se sigue innovando en este segmento –lanzaron a fines de 2014 un reserva Malbec/Petit Verdot–, son los vinos de más alta gama, como el Lost Barrel basado en Carignan, los que han puesto a Oveja Negra y al valle del Maule en el mapa vitivinícola mundial, sostiene su gerente general Santiago Cilley. “Ha habido un aumento sustancial en la calidad de los vinos a partir del trabajo enológico liderado por Edgard Carter y el trabajo sistemático realizado en nuestros viñedos a lo largo de los años”, señala.

And today, it takes one step further: to provide its customers with a distinctive brand experience that goes well beyond savoring wines.

Honoring its name, the Oveja Negra (“Black Sheep”) line of wines was established over a decade ago in order to bring forward the innovative alternatives proposed by VIA Wines, the winery founded

by Bibendum and the Coderch family in 1998. It started by offering fine reserve wines and launching unconventional blends like Cabernet Franc/Carmenère and Sauvignon Blanc/Carmenère. Even though innovation does not wane in this area—the end of 2014 saw the introduction of a Malbec/Petit Verdot reserve blend— their top-of-the-line wines, like the Carignan-based Lost Barrel, are the products responsible for placing Oveja Negra and the Maule Valley on the global winemaking map, says general manager Santiago Cilley. “There has been a substantial increase in the quality of our wine, stemming from the oenological efforts led by Edgard Carter, and the systematic work performed in our vineyards over the years,” the officer explained.

Lo cierto es que Oveja Negra es hoy una marca en sí misma, que ha cortado los lazos maternos y está pavimentando un camino propio. Si bien sus hermanas Chilcas y Chilensis siguen su huella, es Oveja la que ha logrado un posicionamiento mucho más definido. Cada una de las tres marcas –diferenciadas en su momento con el objetivo de dar respuesta a las inquietudes de los distintos segmentos de consumidores– tiene su propio estilo y personalidad: mientras Oveja Negra es la innovadora, la propuesta de Chilcas es elaborar vinos elegantes y complejos que sean complementos ideales de la gastronomía, en tanto la filosofía de Chilensis apunta a elaborar vinos que reflejen fielmente la tipicidad de cada variedad y que se caractericen por ser afrutados y fáciles de tomar.

Consecuente con esta política, cada marca tiene un enólogo a cargo, precios y canales de distribución diferentes, y estrategias de abastecimiento y comunicación distintas, pero que se enmarcan dentro de una estrategia global de la compañía. ¿Cómo ha sido la evolución de la marca Oveja Negra desde el punto de vista del marketing y posicionamiento?

Oveja Negra es todavía una marca joven y su posicionamiento en estos años no ha cambiado. Creemos que esa consistencia en el tiempo hace que finalmente los consumidores reconozcan en Oveja una marca cercana, confiable, innovadora y diferente, atributos que desde que nació han sido los pilares de su posicionamiento.

Desde el punto de vista del marketing sí ha habido algunos cambios que han ido acorde a la evolución de la marca en los mercados. Por ejemplo, hemos hecho cambios de packaging en todas nuestras líneas, lo que ha sido un gran acierto al generar un look en concordancia con lo que transmite el concepto Oveja Negra. También hemos ido cambiando el estilo de comunicación con nuestros consumidores por una más cercana y directa y siempre estamos buscando innovar en las plataformas de comunicación.

Truth is, Oveja Negra has become a brand in itself that has severed the umbilical cord to pave a path of its own. While its sister brands Chilcas and Chilensis follow its steps, Oveja has undoubtedly achieved more refined market positioning. Each of these three brands—distinct in their objective of meeting the requirements of various consumer segments— has its own style and character: Oveja Negra is the innovative line, while Chilcas’ approach is to produce elegant, sophisticated wines to complement gastronomy and Chilensis’ philosophy focuses on the fruity, easy to drink wines that reflect each variety’s representative character.

In keeping with this policy, each brand has a its own chief winemaker, different prices, distribution channels, and communication and supply strategies, yet they are all part of the company’s global strategy.

From a marketing and positioning standpoint, what has the evolution of Oveja Negra brand been like?

Oveja Negra remains today a young brand, and its positioning hasn’t changed in recent years. We believe that such consistency over time prompts consumers to recognize Oveja as a trustworthy, innovative, and distinct brand that is close to its customers, and these attributes are the pillars of its positioning since the day of its birth.

From a marketing perspective; however, some adjustments have been made to match the evolution of the brand in the various markets. For instance, we have made packaging changes in each of our lines that have been a great success in terms of creating a new look that is consistent with what the Oveja Negra concept embodies. We have also adapted the style of communication with our customers to ensure a more direct and personal approach. In addition, we always seek ways to innovate in our communication platforms.

What are some of the advertising messages and formats you are favoring?

The message we send through our campaigns and publications today aims at three main topics: Product, Belonging and Globalization, depending on which communication platform we use.

¿Cuáles son los mensajes y formatos de publicidad que utilizan actualmente?

Hoy en día los mensajes que estamos usando en nuestras campañas y publicaciones apuntan a tres principales temas: Producto, Pertenencia y Globalización, que dependen de la plataforma de comunicación que usemos.

Los mensajes de producto están orientados a educar a nuestros consumidores, explicar cada uno de nuestros vinos y el porqué de las mezclas poco comunes dentro de nuestro portafolio. Hoy esto toma especial relevancia ya que cada vez más los consumidores quieren probar cosas distintas.

El mensaje de pertenencia está enfocado a generar una identidad “oveja negra”, que nuestros consumidores se identifiquen con nuestra marca a través de un tono y estilo propio de la marca, resaltando la forma diferente que tienen los oveja negra de hacer las cosas, apalancado en el slogan “Atrévete a ser tú mismo”.

Finalmente el concepto de globalización apunta a que “oveja negra” es un concepto global que se entiende en todo el mundo y queremos que nuestros consumidores nos reconozcan como una marca global, ya que estamos en los principales mercados del mundo, y que se sientan con esa actitud cosmopolita de un oveja negra.

Nuestro medio troncal de comunicación hoy son las redes sociales, lo que nos permite tener una comunicación inmediata con nuestros consumidores y clientes con un gran alcance.

Además hacemos activaciones de marca y algunas publicaciones en medios especializados. ¿Cuáles han sido los principales desafíos para marketear esta marca?

Un gran desafío ha sido cómo llegar al segmento de los consumidores más tradicionales, quienes consideran que los vinos de buena calidad son 100% de una sola cepa. Para este segmento desarrollamos nuestra línea Single Vineyard, con vinos monovarietales como Cabernet Sauvignon, Carmenère, Carignan y Syrah.

Messages concerning products aim at informing our customers, describing our wines, and explaining why our portfolio offers such unconventional blends.That is of special relevance today, as consumers increasingly seek to try different products.

Messages related to belonging intend to build a “black sheep” identity, so that our consumers identify themselves with our brand through its tone and style, highlighting the different ways in which black sheep does things, and leveraging on the slogan “Dare to be yourself.”

Finally, the concept of globalization emphasizes that “oveja negra” (black sheep) is a universally understood notion, and we want our consumers to recognize us as a global brand—since we are present in the main markets worldwide— and to feel the cosmopolitan attitude of the black sheep.

Our communication backbones are the social networks, which ensure far-reaching, immediate communication with our customers and consumers. We also engage in brand activation and put forward some publications in specialized media.

What have been the main challenges faced in marketing this brand?

A great challenge has been reaching out to the more traditional consumer segment, which considers that high quality wines are synonymous with single-variety wines. Targeting this segment, we developed our Single Vineyard line, which consists of monovarietals like Cabernet Sauvignon, Carmenère, Carignan, and Syrah.

Another challenge has been to prove that wine from non-traditional varieties, or their unconventional blends, can also attain high-quality levels. In that regard, we have significantly increased both our presence in leading international competitions and dissemination of the awards we have obtained.

It’s a cherished and well-known brand among consumers. They see it as an innovative, different, and accessible brand that speaks to them at a personal level, without that typical serious and uptight language so prevalent in the industry. Our most loyal followers also praise the efforts we make in terms of sustainability.

Which are your plans to enhance brand positioning?

We believe that the right approach to cause an increasing number of consumers to recognize and choose our brand has to do with consistency in all areas: to offer products that maintain consistency throughout the years; to ensure that our communication strategy conveys a clear, differentiating message that is consistent over time; and to be able to offer distinct products for our consumers to identify themselves with.

Another fundamental aspect is to deliver a differentiating brand experience that goes well beyond enjoying a glass of wine; an experience that arouses feelings and emotions that connect them to our brand in a profound way and truly makes them feel what it is to be a black sheep.

The idea of trivia is to provide place data that go with the lifestyle of a black sheep.

¿De qué manera piensan ir mejorando su posicionamiento?

Creemos que la forma adecuada para que cada día más consumidores nos reconozcan y nos prefieran, pasa por un tema de consistencia en todo ámbito: tener productos que mantengan una consistencia a lo largo de los años, que nuestra comunicación tenga un mensaje claro y diferenciador pero consistente en el tiempo y que podamos ser capaces de ofrecer a nuestros consumidores productos diferentes con los cuales se identifiquen.

Otro aspecto fundamental es poder brindar a nuestros consumidores una experiencia de marca diferenciadora que va más allá de disfrutar nuestros vinos, poder entregarles una experiencia que genere sentimientos y emociones que lo conecten con nuestra marca de un modo profundo y vivan lo que es ser un Oveja Negra. ¿Qué acciones de marketing tienen contemplado para el corto, mediano y largo plazo?

Este año comenzaremos a realizar campañas globales. Estamos desarrollando campañas en los principales mercados como Holanda, Estados Unidos y Chile. Por ejemplo, estamos llevando a los consumidores a los principales festivales de música de aquellos mercados, con la idea de entregarles una experiencia de marca que va más allá de nuestros vinos.

El objetivo es que estas campañas se hagan año a año en los principales mercados con temáticas distintas.

Además durante todo el año tendremos diferentes campañas en nuestras redes sociales que estarán apoyando a los grandes eventos que tengamos, como promociones globales, lanzamientos de productos y otros. Para este año también tendremos novedades en nuestro portafolio de productos, el cual a partir de julio contará con un nuevo integrante. Será una producción limitada de una mezcla inspirada en cepas del Ródano elaborada con uva de parras antiguas del valle del Maule. V

What marketing campaigns are you planning to launch in the short, medium, and long term?

We launched global campaigns this year. We’re carrying out marketing campaigns in primary markets such as Holland, the United States, and Chile. For example, we are organizing mainstream music festival in those markets, which are intended to offer our consumers a brand experience that breaks beyond wine. Our goal is to carry out these campaigns every year in our in major markets, always with a different theme each year.

In addition, we’ll have different campaigns on social media to promote the events that we host, launching of new products and worldwide promotions.This year we’ll also update our product portfolio, which will feature a new member, starting July. n el marco del programa de gestión territorial para zonas rezagadas, se constituyó la denominada Mesa del Vino, instancia público-privada donde participan las instituciones y servicios públicos relacionados con esta actividad económica en la zona de Cauquenes-Empedrado.

Presidida por el enólogo Felipe Zúñiga, esta instancia de trabajo donde participan instituciones como Indap, Sag, Prodesal, Sernatur e Inia, entre otras, inició diversas gestiones para obtener la denominación de origen del vino País.

Además se ha planteado tres objetivos primordiales para este año: la nivelación de la tecnología y la calidad de los vinos producidos y envasados localmente a través de un plan de asistencia técnica enológica; la reposición de bodegas de quienes vinifican y su posterior dotación de equipamiento; y promoción y publicidad del territorio de manera tal que se fomente el turismo de la zona y las opciones de comercialización de sus vinos.

an V, a winery owned by the Donoso Group (D Goup) whose production was sold exclusively in foreign markets until now will focus on the domestic market starting in 2015.

Under the slogan “Enjoy a trip to the origins with San V,” the brand showcases a wide portfolio of wines that represent the true character of the Maule valley.The grapes are sourced from the San Vicente Estate, located 11 km east of Talca. Established in 1971, the winery’s original area under vine consisted of 45 hectares of Cabernet Sauvignon and Merlot. At present, however, they own 200 hectares of the original varieties, plus Carmenère, Chardonnay, Malbec, Pinot Noir, and Syrah. he land management program for underdeveloped areas paved the way for creation of the Wine Board, a public-private partnership of wine-related institutions and agencies of the Cauquenes-Empedrado area.

Chaired by winemaker Felipe Zúñiga, this board that gathers institutions like Indap, SAG, Prodesal, Sernatur, and Inia, among others, took the first steps to obtain the País AOC. In addition, the wine board has set three major objectives for this year: To standardize the technology and quality of the wines produced and bottled locally through a technical winemaking consulting plan; refurbishing of and acquisition of equipment for member wineries; and promotion and marketing of the area, so as to foster tourism and sales of their wines.

on el lanzamiento de la Primera Guía del Docente con enfoque en formación de competencias, Vinos de Chile inició un programa pionero para capacitar a profesores de 13 liceos técnico-agrícolas de las regiones de O’Higgins y del Maule, y que busca entregarle a los alumnos las competencias laborales exactas que requiere la industria del vino. Esta guía se entregará a todos los docentes de los liceos participantes en el plan y también estará disponible en la plataforma on line del programa Capital Humano de Vinos de Chile: emtp-vinos.interfases.cl Con esta alianza, la industria del vino espera asegurarles a esos alumnos un futuro puesto de trabajo más especializado y, por lo tanto, mejor remunerado.

“Hay muchas funciones dentro de las viñas que no las hacen los agrónomos o enólogos, y para las cuales las viñas no encuentran hoy personas capacitadas o deben capacitarlas por su cuenta”, señaló Mario Pablo Silva, presidente de Vinos de Chile.

El programa es asesorado por el holandés Leonard Mertens, consultor en gestión en productividad de la Organización Internacional del Trabajo, para quien esta iniciativa, que en una primera etapa beneficiará a mil alumnos que egresarían en 2018, “es pionera en Chile y un aporte concreto en materia de trabajo juvenil en condiciones dignas”.

The program relies on the advisory services of Leonard Mertens, a Dutch consultant from ILO, specialized in productivity management who has expressed that this initiative “is a pioneering approach in Chile and an active contribution to youth work with dignity.” During its first stage, 1,000 students of the class 2018 will benefit from this program.

Aunque tiene alma de actor secundario, el arroz nos permite contar maravillosas historias culinarias y ensayar los más graneados maridajes.

Es un producto milenario, versátil y profundamente integrador.

na gran ventaja del arroz es su amplia gama de aplicaciones en la cocina, incluidas sus numerosas encarnaciones, como los italianos carnaroli o vialone nano, el indio basmati o el japonés akitakomachi. El arroz siempre brinda una generosa bienvenida a los condimentos, proteínas, sabores y aromas. Para mí, es el más laureado de los actores secundarios y por eso está presente en tantas cocinas del mundo.

Parece que la variedad de arroces es infinita. Los hay de distintas formas, texturas y colores (blancos, rojos, verdes, marrones y negros). Su tierra natal es Asia y su historia comprende más de 10 mil años. Todas las cocinas asiáticas, pese a sus grandes diferencias, tienen el arroz como denominador común. Cambian las variedades, cambian los métodos de preparación. Por ejemplo, en el norte de Tailandia, los granos se cocinan al vapor en una cesta de bambú que se recubre con un paño fino, resultando un arroz glutinoso. En el Oriente Lejano, en cambio, el arroz debe pasar por “una prueba de tenedor”, separando grano por grano durante su preparación.

La expansión del arroz no tiene límites. En América del Sur juega un importante papel en Perú y Brasil gracias a la influencia de los inmigrantes de China y Japón. En el caso de América del Norte, cuenta el mito que fue introducido por el mismísimo Thomas Jefferson, inspirado por el clima de la llanura del río Po y sus similares condiciones con algunas regiones de su país. En Europa, por otra parte, su indiscutida capital es Italia. Existen tres versiones que tratan de explicar cómo llegó el arroz a la península. La primera de ellas dice que fueron los romanos los primeros en conocer este producto. Otra afirma que los árabes lo introdujeron en Sicilia durante el primer milenio. Sin embargo, existe la posibilidad de que el arroz haya llegado a Venecia a través de los míticos comerciantes de tesoros culinarios asiáticos.

ne of the greatest advantages of rice is its wide range of culinary uses, including its numerous varieties, such as Italy’s carnaroli or vialone nano, India’s basmati or Japan’s akitakomachi. Rice always provides a warm welcome to condiments, protein, flavors, and aromas. To me, it’s one of the most praiseworthy of supporting actors; hence it plays a role many of the world’s cuisines.

Rice varieties seem to be infinite. It can be found in different shapes, textures, and colors (white, red, green, brown, and black). Its homeland is Asia, and its history stretches over more than 10,000 years. All Asian culinary traditions have, in spite of their differences, rice as a common denominator. Varieties change, and the same is true for preparation methods. For instance, in northern Thailand, rice grains are steamed in a bamboo basket covered with a fine cloth to produce their traditional sticky rice. In the Far East; however, rice must undergo “a fork test” to separate each grain while cooking.

SOLO EL CIELO ES EL LIMITE

ada plato construido en base de arroz tiene su propia dimensión, objetivo y alguna historia que contar. No hay un estilo de vino para una paella o una cepa única para disfrutar del sushi. Por eso no podemos hablar sobre “maridajes de vinos con arroz”. Pero lo que podemos hacer es una reflexión sobre sus aromas, sobre cómo influyen en los platos y cómo los métodos de cocción enfatizan los pesos de los platos.Todos estos factores influyen decididamente en el vino que elegiremos.

Podemos encontrar una multiplicidad de recetas en base de arroz, desde antipastos hasta postres, desde platos sutiles como mariposas –como un risotto de zapallo–, hasta titanes de sabores intensos, como el arroz frito tailandés. Prueben, por ejemplo, el risotto de zapallo con un Chardonnay. En este caso el terroir no juega un papel tan relevante, pero sí el método de vinificación. Inmediatamente pienso en un Chardonnay fermentado en barrica, hecho a la antigua, donde el peso y cremosidad del vino, sumado a sus elocuentes notas de caramelo, se funden a la perfección con la textura y dulzor del zapallo.

En la mayoría de los casos, es la proteína la que marca la elección del vino. Un risotto de champiñones, con su cuerpo mediano y notas de tierra, pide un Pinot Noir del sur del Chile o de la costa del Limarí o San Antonio. Su fruta fresca, con notas de guinda y sotobosque, sumado a su cuerpo liviano, con taninos bien suaves y envolventes, amarran los sabores silvestres de los champiñones y crean un conjunto armónico, donde el cielo se encuentra con la tierra.

Naturalmente en la mayoría de los casos las proteínas predominan sobre el arroz. El mejor ejemplo es este emblema turco: un pato relleno con arroz, frutos secos, naranjas, pasas y mil y una especias. Este plato sólo estará cómodo con un vino con el suficiente cuerpo para contrarrestar el peso de la carne de pato y las especias. Pienso en un Cabernet Sauvignon de gran estatura, estilizado y versátil, como un buen representante de Aconcagua. Esta receta, llena de aromas, texturas y sabores, también puede convivir con un Riesling, pero de aquellos poderosos, que emulen a los grandes acorazados alemanes.

In Europe, incidentally, the unchallenged capital of rice is Italy. Three different versions of the story attempt to explain its arrival in the peninsula.

The first of them says the Romans were the earliest to become acquainted with the product. A second version affirms that the Arabs introduced it to Sicily during the first millennium. Yet, it may well have been that rice made its way to Venice through the mythical merchants of Asian culinary treasures.

THE SKY IS THE LIMIT

E

very rice-based dish has its own dimension, objective, and a tale to tell. There’s no style of wine specific to paella, nor there is a unique variety to marry with sushi. That is why we cannot really talk about “rice and wine pairings”. What we can do; however, is to ponder about its aromas, the impact they have on a dish, and how the methods of preparation emphasize their weight. All these factors combined will help us decide which wine to choose.

We will find a multiplicity of rice-based recipes, from antipasti to desserts, from dishes subtle as butterflies—like squash risotto— to intensely flavored titans, like Thai fried rice. Try, for instance, squash risotto paired with Chardonnay. Terroir doesn’t play such a relevant role in this case, but vinification does. What immediately comes to mind is an old-fashioned, barrel-fermented Chardonnay where the weight and creaminess of the wine and its eloquent caramel notes blend perfectly with the texture and sweetness of squash.

In most cases, protein is what defines the choice of wine. A mushroom risotto, with its medium body and earthy notes, calls for a Pinot Noir from the Chilean south, or the coastal areas of Limari or San Antonio. Its fresh fruit, notes of cherry and undergrowth, light body and very soft, mouth-coating tannins embrace the mushrooms’

La proteína de la carne es tan determinante que incluso puede señalarnos inequívocamente una cepa. Si preparamos un pilaf con cordero, para mí es casi natural la elección de un Syrah. Me emociona cómo el Syrah interpreta los distintos terroir, desde la costa calcárea del Limarí hasta las gravas del Maipo precordillerano. Sin embargo, con este plato busco uno más abundante, con fruta madura y notas de especias. Me inclino ante un clásico representante de Apalta, cuya estructura y elocuentes notas de especias se complemente mágicamente con los sabores de la canela y el cardamomo del exótico pilaf.

Otro plato con carne y arroz que me gusta muchísimo es el dolma, conocido en los Balcanes, Turquía, el Cáucaso, incluso en mi país Polonia. Esta hoja de parra o repollo, rellena con arroz y carne de cordero, vacuno o cerdo (o una mezcla de ellas) nos regala notas más suaves que el mencionado pilaf. Es un plato que nos acaricia el paladar, pero con mucho carácter, pues incorpora algunos condimentos como comino, estragón, orégano y menta. Un Malbec de Casablanca ofrece a esta receta una acidez impresionante y notas dulces de frambuesas, ciruelas y guindas. Otra alternativa es un Carignan maulino, de estilo más ligero, que haga un alegre contrapunto gracias a la intensidad de su fruta.

RELACIONES COMPLICADAS

or otro lado, hay platos que por su complejidad nos empujan fuera de nuestra zona de confort y nos invitan a experimentar con varios estilos de vinos. Un ejemplo maravilloso que ilustra este fenómeno es la paella, donde el arroz muchas veces está acompañado por mariscos, carne, chorizos y verduras. Esta clá

Naturally, protein prevails over rice in most cases. The prime example is this Turkish emblem: duck stuffed with rice, dried fruit, orange, raisins, and a thousand and one spices. This dish will only find its equal in a medium-bodied wine that will counteract the weight of the duck and the spices. My choice would be a versatile and stylized Cabernet Sauvignon of great stature, like a good Aconcagua representative. This recipe, full of aromas, textures, and flavors, can also stand on an equal footing with a Riesling, but a powerful one that pays homage to the mighty German battleships.

Meat protein is such a determinant factor that it may unequivocally point out a specific variety. When cooking lamb pilaf, to me, choosing a Syrah is a no-brainer. I’m thrilled by how Syrah interprets different terroirs, from the chalky soil of the Limari coastal areas, to the gravel at the foothills of the Maipo valley. However, with this dish I seek something heartier, with ripe fruit and spicy notes. I lean towards a classic Apalta bottling, whose structure and eloquent spicy notes complement magically with the cinnamon and cardamom flavors of the exotic pilaf.

Another meat and rice dish I enjoy greatly is dolma, famous in the Balkans, Turkey, the Caucasus, and even in my native country, Poland. These grape or cabbage leaves, stuffed with rice and lamb, beef or pork meat (or a combination of them) bear the gift of milder notes than those of pilaf. It’s a dish that caresses the palate yet offers lots of character, as it incorporates some condiments like cumin, tarragon, oregano, and peppermint. A Malbec from Casablanca adds impressive acidity and sweet raspberry, plum and cherry notes to this recipe. Another alternative would be a Carignan from Maule, with a lighter style that balances joyfully thanks to the intensity of its fruit.

sica preparación nos invita a jugar con los colores: vino blanco para quienes tienen una barrera sicológica y no pueden reunir frutos del mar con tintos; un tinto para los más osados y aventureros; y un rosado para los conciliadores.

Sin embargo, la paella es eminentemente mediterránea, por lo tanto anda muy bien con mezclas blancas de Roussanne y Marsanne, o bien, un Viognier con un carácter bien silvestre. Si optamos por un tinto, no hay que darle muchas vueltas. Existe una amplia gama de vinos rústicos chilenos, como País o Cinsault, que protagonizarían un verdadero espectáculo en nuestras bocas.

Otras preparaciones nos ponen en graves aprietos, especialmente cuando viajamos a los países del este. Pienso en una receta de la cocina judía como esas bolitas fritas de arroz y nueces, muchas veces servidas como aperitivo con una salsa de tomates. Para estos sabores complejos, muchas veces lejanos para nuestros cómodos paladares, propongo un espumante seco en base a Chardonnay. La acidez de los espumantes corta muy bien la sensación grasa de las frituras y sus notas de guarda, como mantequilla, pan tostado o frutos secos, van estupendamente bien con las nueces.

Por otra parte, un vino con burbujas marida muy bien con esos desentrañables sabores umami. Su marcada acidez no sólo corta la grasa como un cuchillo, sino armoniza muy bien con las notas saladas. Un frito cantonés o un peruano arroz chaufa, junto a un espumante con crianza, gordo pero muy fresco, complementa los sabores umami del plato, sobre todo cuando se intensifican con salsa de soya.

n the other hand, there are dishes that, given their sophistication, send us out of our comfort zone and invite us to experiment with various wine styles. A wonderful example that proves this phenomenon is the paella, where rice often finds itself accompanied by seafood, meats, pork sausage, and vegetables.This classic concoction invites the cook to play with colors: white wine for those whose psychological barrier will not allow them to mix seafood with red wines; red for the bolder, more adventurous kind, and Rosé for the conciliators.

Nonetheless, paella is a prominently Mediterranean dish, thus it pairs splendidly with white blends of Roussanne and Marsanne, or a Viognier with a wild character. If we opt for reds, there’s no need to take many turns. There’s an ample selection of rustic Chilean wines like País or Cinsault that would present a true spectacle in our mouth.

Other recipes can leave us in dire straits, especially when travelling to eastern countries. I think of a recipe from Jewish cuisine, such as those small fried rice and walnut balls, very often served with a tomato sauce as an appetizer. For these complex flavors, quite often new to our accustomed palates, I propose a dry Chardonnay-based sparkling wine.The acidity of sparklers keenly cuts through the fatty sensations of fried foods, and its barrel-aging notes such as butter, toasted bread, and dried fruit marry well with the walnuts.

A bubbly also pairs very well with those unforgiving umami flavors. Its pronounced acidity not only cuts through fat like a knife, but it blends superbly with salty notes. Cantonese fried rice or Peruvian chow fan rice marry well with a thick but very fresh, aged sparkling wine that complements the umami flavors of the dish, especially when intensified by soy sauce.

Speaking of difficulties, the popular sushi and rolls should top the list. We can find successful combinations with sake, tea, and even beer, but wine seldom prompts love at first sight.Wine mustn’t overbear the dish; perhaps a light-bodied bottling, like a very dry Blanc de Blancs o Muscat would be the answer. Also, a dry and light Rosé, with or without bubbles, may lead to a spectacular pairing.

Put simply, some concoctions or ingredients are very difficult to pair with wine. One of them is spinach. Spanakorizo, the Greek dish consisting of spinach, long-grain rice, dill, cumin, red wine vinegar and sometimes even hard-boiled egg and feta cheese, can pose a true challenge. It’s a very acidic, salty recipe, with that complex metallic aftertaste from spinach and egg. It surely is a dish to pair with a very light, dry white wine with excelling aromas and a marine touch. I’d put my money on a Pinot Grigio from Casablanca.

Hablando de dificultades, los populares sushis y rolls deberían encabezar la lista. Podemos encontrar muy exitosas relaciones con sake, té, incluso cerveza, pero con vino pocas veces es un amor a primera vista. Tiene que ser un vino que no cubra el plato, de cuerpo liviano, como un muy seco espumante Blanc de Blancs o Muscat. También un seco y liviano vino rosado, con o sin burbujas, pueden protagonizar un sensacional maridaje.

Simplemente hay preparaciones o ingredientes muy difíciles de conectar con el vino. Uno de ellos es la espinaca. El plato griego spanakorizo, que contiene espinaca, arroz de grano largo, eneldo, comino, vinagre de vino tinto, incluso a veces huevo duro y queso feta, representa un verdadero reto a la teoría. Es una receta muy ácida, salada y con ese complicado toque metálico en el retrogusto que nos deja la espinaca y el huevo. Seguramente es un plato para un vino blanco, de cuerpo muy liviano, seco pero al mismo tiempo aromático, y con algún toque marino. Yo lo buscaría en Casablanca y mi elección sería Pinot Grigio.

PARA ENDULZAR LA VIDA

E

n Polonia todos los niños saben que nada reconforta más el corazón que el arroz con leche, servido con un dulce mousse de manzana con canela y azúcar de vainilla. Esta receta llegó a nuestra cocina de Europa Central, donde se cruzaron todos los caminos, todas las guerras y, obviamente, varias tradiciones culinarias. Arroz con leche comen en el mundo árabe, en los países asiáticos, en Europa y en toda América.

Este postre de arroz tiene varias versiones, con distintas frutas y especias, pero generalmente la canela juega un papel preponderante. Es un plato que pide a gritos un vino dulce. Entre los chilenos buscaría un cosecha tardía elaborado a partir de cepas aromáticas, como Riesling, Gewürztraminer o Moscatel. Estas variedades, más que dulzor, incorporan un abundante bouquet para armonizar con las notas de canela.

Una rica alternativa para postres también es un vino espumante, en este caso más bien dulce, con sus notas cremosas de vainilla y frutos secos. Mi postre favorito para un espumante doux es la receta judía ashourah, consistente en una base de arroz con pasas, almendras, canela y azúcar. Como dice el dicho, representa “el cielo en la boca” y sin duda es el mejor final de fiesta para un producto que nutre, integra las cocinas del mundo y alegra los corazones. V

n Poland, every child knows that nothing warms the heart like rice pudding, served with sweet apple mousse with cinnamon and vanilla sugar. This is a traditional recipe from Central Europe, the cradle of western civilization and where all wars and certainly culinary traditions crossed paths. Rice pudding is enjoyed in the Arab world, in Asian countries, in Europe and the across the Americas.

This rice dessert has many versions, with varying fruits and spices, but cinnamon usually plays the leading role. It’s a dish that cries out loud for a sweet wine. Among Chileans, I would look for late harvest made from aromatic varieties such as Riesling, Gewürztraminer or Muscat. More than sweetness, these varieties add rich aromas that harmonize with cinnamon notes.

A delicious alternative to match desserts is a sparkling wine, a sweeter one in this case, with creamy notes of vanilla and dried fruits. My favorite dessert for sweet sparkling wines is the Jewish recipe of ashourah or Noah’s Pudding, made of a mixture of rice, raisins, almonds, cinnamon, and sugar. As the saying goes, it is “heaven in the mouth” and, without a doubt, the best closing to a party—a nutritious product that merges culinary traditions and gladdens the heart. V

xiste bastante consenso entre los historiadores y académicos respecto al origen simultáneo de la vitivinicultura en Chile y en Perú. Se sostiene que en torno al año 1548, las primeras vides que llegaron al Virreinato del Perú habrían sido plantadas en la ciudad de El Cuzco, y en las emergentes ciudades de La Serena y Santiago, en la frontera sur del imperio. Durante los primeros siglos, el mayor desarrollo de la vitivinicultura peruana estuvo en la provincia de Arequipa, primer centro abastecedor agrícola de los centros poblados de El Cuzco y Potosí.

El libro que presentamos, “Vinos, aguardientes y mercado: auge y declive de la economía del vino en los valle de Arequipa (1770-1853)” del historiador peruano Carlos Buller, analiza la evolución de esta vitivinicultura inicial, más tarde desplazada por el valle de Ica, conforme el centro de poder pasó desde El Cuzco a la naciente ciudad de Lima, en el siglo XVIII. Compuesto por nueve capítulos, el texto refleja un gran trabajo de fuentes historiográficas de valiosa acuciosidad, tales como testamentos, archivos parroquiales y documentos coloniales contemporáneos a los hechos relatados. Además se apoya en una cantidad importante de información estadística, lo que resulta fundamental a la hora de establecer una verdad histórica.

Los dos primeros capítulos están enfocados al origen de la vitivinicultura y al contexto histórico y geográfico de la provincia de Arequipa, mientras los capítulos siguientes presentan los indicadores económicos desde la fundación de la ciudad hasta 1853, así como el colapso de la economía del vino en los inicios de la vida republicana del Perú, desplazada por la producción de las naciones del Cono Sur. Otro de los puntos interesantes que queda de manifiesto a través de la investigación del profesor Buller, dice relación con el inicio tardío de la producción de aguardientes en el Perú, denominados más tarde en Ica como “piscos”. Este hecho refrendaría no sólo la hipótesis de un origen cuasi-simultáneo en ambos lados del “Despoblado de Atacama”, sino además el argumento que sostiene que la producción de dicho producto se habría originado en el lado sur del imperio, y más tarde habría sido replicado en el valle de Ica, cuyos registros datan de finales del siglo XVII e inicios del XIX, vale decir, cien años después que en el actual Chile.

here is broad consensus among historians and academics concerning the simultaneous origin of winegrowing in Chile and Peru. It is claimed that by 1548 the first vines to arrive at the Viceroyalty of Peru would have been planted in the city of Cuzco, and in the emerging cities of La Serena and Santiago, at the southern border of the empire. During its early centuries, Peruvian winemaking saw its largest development in the province of Arequipa, the first of agricultural point of supply within the population centers of Cuzco and Potosí.

The book “Vinos, aguardientes y mercado: auge y declive de la economía del vino en los valles de Arequipa (1770-1853)” (‘Wines, wine spirits, and market: Boom and decline of the wine economy in the Arequipa valleys’) by Peruvian historian Carlos Buller analyzes the evolution of this initial step in winemaking, which eventually moved to the Ica valley, as the center of power shifted from Cuzco to the rising city of Lima, in the 18th century.

Comprised of nine chapters, this work embodies a study of historical sources of valuable accuracy such as testaments, parish archives, and colonial documents contemporary to the narrative. It also relies on a substantial amount of statistical data, a key feature when establishing historical facts.The first two chapters address the origin of winemaking and the historical and geographical context of the Arequipa province. The following chapters present economical indicators from the foundation of the city until 1853, as well as the economic collapse of wine in the early days of republican life in Peru, an economy disrupted by the creation of nations in the Southern Cone.

Another interesting point brought forth by Professor Buller’s study concerns the delayed beginnings of the production of wine spirits in Peru, subsequently renamed “piscos” in the Ica valley.This fact does not only endorse the hypothesis of a quasi-simultaneous birth (of “Pisco”) on both sides of the Atacama Outback, but also supports the argument maintaining that production of the said product saw its origins at the south end of the empire, to be subsequently replicated in the Ica valley, whose records date back from the end of the 17th to the early 19th century, which is to say, a hundred years after its Chilean counterpart.
