Linz Collection In upper Austria lies the Gothic city of Linz. Straddling the Danube, this major metropolitan center is becoming known for modern art and advances in technology while retaining a strong hold on its sense of history and tradition. One such tradition is the Linzertorte. The oldest recipes date back over 300 years. This über popular Christmas dessert is made from an almond short-crust pastry filled with fresh red current jam, a characteristic lattice pastry pattern across the top, and toasted almonds along the rim. In the 17th century only the rich could afford the almonds and spices that go into the torte, so it was quite a status symbol. But in the 1820s a Franconian pastry chef named Johann Konrad Vogel started to mass produce the cakes and brought the price down so these desserts could be enjoyed by regular bakery shop patrons at Christmas. In the states we often see Linzer sablés, which are the cookie version - a sandwich style cookie with jam filling and a hole cut out of the top pastry so the jam shows through. The oldest bakery in Linz, k.u.k. Hofbäckerei has been serving strictly red currents in their torts for five generations because these little berries grow everywhere in the region like weeds. Although the Linzertorte is showcased at all the bakeries in Linz, only Leo Jindrak III can boast baking 95,000 per year to be sent out worldwide as gifts, bearing the official coat of arms of Linz.
Every great dessert requires the best ingredients, so too does every outstanding wardrobe. We begin with a large collection of red, white and black that can mix and match in many ways to extend a few key apparel pieces into several ensembles. Linz Couture wool blend bouclé combines thick red, white, black and charcoal yarns woven together with a soupçon of silver shimmer for good measure. You can line this loosely woven textile to construct a hip length jacket, or leave it unlined to make something more like a long cardigan to toss on over a turtleneck. Add a dash of plaid to your winter wardrobe - and we have two excellent choices for you. Linz Tradition (#03) and Linz Festive (#05) are stretch cotton shirtings that can be sewn into fitted blouses and shells, or sewn as a bodice for a holiday party dress. Both have red, black and white but #05 also has a pinch of yellow for flavor. Linz Reversible is the first of two double-faced double-knits in this catalog. Its heavier weight is figure flattering, and it also sews up beautifully as a cardigan, elastic waist pants, mock turtleneck, and sheath dress. Choose your favorite side to use as the focus, or use both in a piece work pattern.

We could not swatch them all for inclusion in the catalog, but we did swatch the red and we are happy to send swatches of the other two to any member who requests these (at no charge). Linz Red Coating (#10A) and Linz Black Coating (#10C) are outstanding meltons, ready to be sewn into winter outerwear. Line these with Kasha, our flannel backed satin coat lining. Linz Check Coating (#10B) red and black buffalo check woven wool coating is the same weight as the solids. While traveling in Montreal in October we saw a ton of fashions with this type of check. Mix these three in a color blocked coat and get ready for rave reviews!

Dessert menus and bakeries overflow with decadant chocolate options, so we decided to give you a few choice cocoa morsels as well. Let’s start with Gugel Ripples, a knit that is as light as chocolate mousse. Quickly whip up a shell to wear under a jacket, or fashion a boat neck blouse as a topping to a knee-length skirt. The aforementioned skirt would be beautiful in our Gugel Espresso. This dark brown polyester crepe suiting is an absolutely scrumptious choice for slacks, jackets, dresses, skirts - an all purpose fabric for sure. Plus, it is wrinkle resistant, making it ideal if you travel.

Gugel Collection There are numerous ways to spell our next dessert, but it tastes just as good no matter how you spell it. Gugelhupf (also Kugelhupf, Gugelhupf, and, in France, kouglof, kougelhof, or kougelhopf) is a single rise yeast cake made in a decorative funnel pan, similar to a Bundt pan, and often has rum soaked raisins or currents inside and almonds or powdered sugar decorating the outside. It has a strong connection to both Austria and Alsace, the Austrians preferring their KugelHopf a little sweeter and the French preferring their Gugelhupf drier like a brioche. The earliest known recipe for “hat cake” is in Marx Rumpolt’s cookbook published in 1581 (Gugle Huph translates to hat cake). One origin story has Christmas roots. It is said the Three Kings stopped in Alsace on their way home from Bethlehem. The Alsacians were so thrilled by the visit they baked a special cake in the shape of a turban to honor their guests. Another story is that in 1643 Viennese bakers fought back invading Turks from Austrian borders. To celebrate their victory, the bakers created cakes to look like the defeated sultan’s turban. The next several fabrics get us very excited. Kranse Herringbone is a wool and polyester blend suiting in black, brushed gold and a slight shimmer to perk things up. The soft face and delicious make this an ideal choice for a sheath dress, a long vest, or go for the traditional jacket and skirt combo. Pair your herringbone with Kranse Platinum silk dupioni. We call it Platinum because it is from our stock collection and that is the manufacturer name, but the black weft and golden warp give this shot silk an iridescent antique gold appearance. Construct a dress or blouse from the dupioni to wear under the herringbone jacket or wear with a scarf or wrap from our next fabric.

Kranse Collection Let’s travel to Denmark and Norway for a taste of our next treat, the Kransekake - literally wreath cake. Imagine baking 18 thin ring shaped cookies, each one a little smaller than the last, and then stacking them from largest to smallest using icing as the glue. Yep, that’s the Kransekake. The rings are gluten free, made like a firm meringue from powdered sugar, ground almonds and egg whites, and then piped into the well of a special pan featuring three wells for three different size rings. This cake is baked to celebrate weddings (perhaps you have heard of the Viking Wedding Cake?) as well as at Christmas, when it can be decorated like a winter scene. The towering shape, when decorated with white icing and powdered sugar, looks like a snow covered mountain. When decorated with green icing and powdered sugar it looks like a snow covered fir tree. The proper way to serve this is to separate the rings and cut the larger rings into smaller bits.

Stollen Collection
Let’s liven things up a little with this cheerful coral collection. From our stock collection of rayon challis solids we pulled this coral and dubbed it Stollen Challis. Lightweight with a fluid drape, make a shell to wear under Stollen Sensation, a shimmering polyester semi-sheer blouse-weight combining black, coral and ice. You’ll look sensational in a top or scarf at your next party.
We asked Bea in our Customer Service department for her favorite Christmas dessert from her native Germany. She told us that Stollen is the most popular item. It is the true fruit cake - the moist and flavorful freshly baked cake that made it a popular holiday dessert, not like the dry rubbish mass produced months in advance in the states. The best place to buy Stollen is Dresden in upper Saxony during the Striezelmarkt at Christmas time. The first Stollen was created in 1329 in Naumburg as a Christmas offering for the Bishop - it was a plain bread made in the form of a child wrapped in a blanket to honor the nativity. The Stollen was mentioned in an official Dresden document in 1474. Originally the ingredients were just flour, oats and water because Advent was a time of fasting, and bakers were not allowed to use butter or other “live” ingredients. The cake was tasteless and hard. During the Reformation, the fasting restrictions of Advent were abolished in Protestant regions, and liquor soaked fruit, butter and marzipan were added to the recipe. To make this at home, let the dough rise once on its own, and then knead the nuts and the booze-soaked fruit into it. Mixing the fruit in after the first rise helps prevent it from becoming too dense. Then shape it, give it a second rise, and bake.

Stollen Mosaic will make a nice adornment to a winter ensemble. Tiny coral and white tile-like geometric shapes brighten up the black ground of this woven polyester, washable blouse weight print fabric. If you like this coral wool suiting, we implore you to order quickly. Stollen Suiting is in very limited quantity, but it was too perfect a match not to offer. Tailor a knee-length skirt and a vest from the solid wool gabardine to wear with a blouse of any of our prints. Stollen Garden is what we call a SofTouch print - it feels similar to a peachskin but it doesn’t have that suede finish. The tiny blooms in coral, mustard, tandoori, teal, white are accented by green and gold leaves on a black base. Since this is a mid-wight woven polyester you can sew it into a blouse, tunic, skirt, fluid slacks and loose dress.

Pitka Collection If you read our Early Spring 2016 catalog, you might remember reading about Vasilopita, the bread eaten by Greeks on the New Year’s Day Feast of St. Basil that has a hidden coin. Well, it turns out that many of the Orthodox countries in the Balkan states dine on a similar bread at Christmas - Pitka. We found the traditions in Bulgaria to be the strongest, and the decorations to be marvelously elaborate. Pitka started out in a similar fashion to Stollen, being a no frills single rise bread made from flour, water and oil with a little salt and honey. During Advent, sodena pitka - or soda bread - is made because it has no “live” ingredients. But once Christmas Day comes, koledna pitka is made with yeast, butter and eggs for a fluffier rise. The highlight are the decorations on top. Made from cut and shaped dough, decorations can be religious or family symbols or designs of wheat and money for a prosperous year. Hiding the silver coin inside the bake is still a popular tradition and is said to bring health and wealth to the lucky recipient of that slice of pitka.

Buñuelos Collection In Latin American countries, buñuelos have been described as fritters, popovers and doughnuts. One thing is for sure, in Cuba these tempting treats are extremely popular at Christmas. It is thought that the history of this pastry goes centuries back to Asia and Europe, when Arabian people began to settle in the Iberian peninsula. They brought with them a doughnut style dessert that became a staple in Spain and Portugal. The Spanish explorers and travelers in turn brought these treats with them to the Americas. When eaten during the Christmas season, the buñuelos are said to bring
good luck. In Cuba the Buñuelos are made with ground yuca and malanga, two roots similar to yams and taro respectively. These are peeled, cut, boiled until soft and then mashed until they form a dough. Anise, lemon and leavening agents are added to form a sticky dough. This in turn gets rolled out into ropes and shaped like a figure 8, or the infinity symbol, and deep fried until golden brown. Served warm with a drizzle of anise syrup or sometimes a cinnamon-sugar syrup, buñuelos make a yummy breakfast on Christmas. p. 29

Sufgan Collection Travel with us now to Israel for the celebration of Hanukkah. In 139 BCE the Greeks had invaded Jerusalem and the Maccabees were holding their ground in the Holy Temple. There was only enough oil to light the menorah - the candelabra - for one night, but miracle of miracles the oil lasted 8 nights. The Greeks were defeated and the Holy Temple was rededicated. So, in honor of the holy oil, Jews eat a lot of fried foods at this time of year. Traditionally latkes - fried potato pancakes - have been the centuries old standard. But in the 20th century a new treat gave rise in Israel becoming the gold standard for celebrations, sufganiyot - the jelly filled doughnut. This is the same type of jelly doughnut you find in Europe, like Berliners in Germany or Paczkis in Poland, not like the kind you find in the states. The earliest known recipe of a jelly doughnut was the Gefüllte Krapfen published in 1485 in a cookbook called Kuchenmeisterei (Mastery of the Kitchen). Jam was sandwiched between two rounds of yeast bread dough and then deep fried in lard. According to German sources, in 1756 a man from Berlin was turned down for Prussian army service as unfit to fight, but retained as a field
baker for a regimen. Since there were no ovens on the battlefield, he fried doughnuts over an open fire and the men called these treats Berliners after the baker’s home. This later became the name for all German jelly filled doughnuts. In the late 1920s, the Israeli labor federation in British-mandated Palestine wanted to create more work for their men during the slow season after all the big Jewish Holidays in early autumn had ended. Every household could make latkes, but jelly doughnuts were much harder to master. This put men to work as bakers and transporters, and was good for the labor force. They called these sufganiyot. Two stories have emerged as to the name. Jews in North Africa had been eating small fried doughnuts for centuries to commemorate Hanukkah, and these treats were called sfenj. But, ask an Israeli and you will probably hear that sof means end and gan means garden, referring to when Adam and Eve were evicted from the Garden of Eden. Sufganiyot is the plural for these treats, and it’s the biggest holiday seller.
