Origin Collection Long before the written word, people discovered how to turn milk into the amazing food staple we know and love: cheese. There is no record of its first creation, so anthropologists and archaeologists have pieced together some possible origin stories. Between 8-10,000 years ago, domestication of animals began. According to the National Historic Cheesemaking Center, milk may have been stored in containers made from animal stomachs. Rennet, an enzyme found in the stomachs of ruminant animals, “would cause the milk to coagulate, separating into curds and whey.” A second theory would be the practice of salting milk for preservation - people salted meats, so this isn’t far fetched. Their third hypothesis is that fruits were added to milk, and the acid from the fruit juice curdled the milk. The first recorded account of cheesemaking appears on 4000 year old Egyptian tomb murals. By the time Homer wrote The Odyssey around 800 BCE, there were hundreds of types of cheese. Homer wrote that Cyclops Polyphemus would milk his animals and curdle half the milk to put into woven baskets. This is still done today on the Greek island of Lemnos for making Kalathaki, a white cheese similar to feta made from the milk of sheep and goats and brined in wicker baskets that give it a cool, imprinted design.

This is a fantastic choice when you want to tailor a classic Chanel Jacket with a matching skirt or dress. Fringe the hems or add some braided trim…or both! For another striking option, make a ¾ length jacket from Origin Weave to wear over a sleek dress sewn from Origin Milano. This sumptuous double knit has a lovely drape and soft hand. The rich black is dramatic enough for classic evening wear. Rounding out the first collection is Origin Reversible. We couldn’t help ourselves, and we had to pick up another one of these elegant double knits for this catalog. Tyros Milano has a gorgeous hand, lovely drape, and full body, making it ideal for whipping up any number of knit separates. We love it as easy pants to pair with the following print. We pre-ordered Tyros Blossom last fall and prayed it would arrive in time for the Spring catalog. The odds were in our favor. Tyros Blossom is super lightweight, 66” wide, and has incredible all-way stretch. Ruche it, stitch up a cowl-neck top, or both! You will love how soft it feels against the skin. If you want to whip up a knit tank or cami to wear under the floral print, treat yourself to Tyros Blanca. This 100% Modal knit is lightweight, soft to the touch, has all-way stretch, is breathable and moisture wicking, which is perfect for the hot days ahead. For many of us there is still a chill in the air, so we proffer Tyros Cozy, a heathered charcoal French terry sweater knit. Rogie says she constructed this FitNice System Master Top with scoop neck and Surena Jacket in under two hours and she loves wearing them together. We don’t have the exact contents for the terry knit, but the ticket from the mill says CVC, which is technical lingo for chief value cotton, indicating that this is most likely a poly cotton blend with over 50% cotton. You’ll love the heavier weight of this sweater knit when the nights turn chilly.

Tyros Collection Before we delve further, let’s get to know some popular types of cheese so you can impress any turophile. There are thousands of cheeses worldwide, and they are made from all types of animal milk processed in numerous ways, eaten fresh or aged for years, every deviation producing a unique smell, taste, texture, and price point. Fresh cheese is unaged, unripened, has no rind, and is white through and through, like feta, ricotta, mozzarella, mascarpone, cream cheese and cottage cheese. Soft cheese ripens in under 30 days. These stay soft and smooth when served at room temperature, but some can be baked for even more gooeyness. Sofe cheese include brie, camembert and chevre. Semi-Soft cheese is pressed into a mold in which it develops a little rind (an exterior that is slightly harder than the interior). The taste becomes a bit more developed, and the cheese may be dipped or stored in a brine. These include Havarti, provolone and Muenster. Once you get into semi-firm cheese, the flavor and texture really start to develop. You can grate, slice or chop these, like cheddar, Gouda and Gruyere. Hard cheese replaces moisture with calcium crystals during the aging process, producing an explosion of flavor in a tiny bite, such as Parmesan, Asiago, Pecorino, Manchego. Finally there is the blue-veined cheese, which combines a creamy center with the complex taste and smell of a hard cheese. This is accomplished by needling the cheese, creating holes into which mold can grow, causing the colored veins and lovely taste. Yep, mold. These delicacies include gorgonzola, stilton and Roquefort.

There is a trend right now of people sewing their own jeans or denim slacks. The retail prices are ridiculous for fashion jeans, and you can sew your own for under $20 with Tyros Wrangler. This stretch denim has a soft reverse which will feel so good against your skin. We will stock up on gold cordonnet thread for your classic jeans top-stitching. The next three fabrics came to us from the same supplier - they are all lightweight French terry knit fabrics. Tyros Grey Camo and Tyros Green Camo are stylish camouflage designs, while Tyros Charcoal is a heathered gray. These are all so soft and have wonderful drape. Mix and match them in Liesl’s Noord Sweatshirt or Sewing Workshop’s Picasso. Pairings Collection Ask any foodie and she will tell you that pairing cheese with wine, meats, and fruits, is as structured and rewarding as pairing wine with meats. Even pairing cheese with other foods will enrich the flavor profiles as the gastronomic delights awaken the taste buds. Originally, many pairings for wine and cheese were born regionally. French brie and Beaujolais have been a quaint couple for centuries, being from the same region in France. Similarly, Italian Asiago would be served along with it’s regional companion wines, Chianti or Brunello. In the modern, global economy, we have more range of motion regarding our pairings. So, how do you decide what to serve with your cheese? Serve strong flavors together, serve mild flavors together, serve sweet with sweet, etc. A fresh cheese, like feta, goes well with a light rosé and a Greek salad. Soft Camembert has a fermented and fruity taste which is divine when served with apples, pears, almonds and a light Merlot. A strong tasting Parmigiano-Reggiano (Italy’s protected Parmesan cheese) is the ideal choice to serve with Barolo or Chianti. Charcuterie boards have grown in popularity over the past several years, with endless versions showcased on Pinterest and Instagram. These artistic platters feature various cheese, fresh and dried fruits, nuts, crackers, and cured meats. Open a selection of wines and you can decide for yourself which flavors you like best together with your cheeses.

Sewing Workshop “Maison Top & Joggers”

There are many rare cheese produced today, and there are some fairly common cheese that are illegal in the USA. Have you had Pule? This Serbian cheese is made from 60% Balkan Donkey milk and 40% goat’s milk. There aren’t that many Balkan donkeys to milk, which drives the price per kilogram to $600. That price is still low compared to the $1000 per kg you’ll shell out for the moose cheese made at Älgens Hus (The Elk House) in Bjurholm, Sweden by Christer and Ulla Johansson and their three milk-producing moose. America’s Food and Drug Administration (FDA) regulates food imports, and has banned some types of cheese from entering our country. We totally get why they wanted to ban Casu Marzu from the Italian island of Sardinia. This sheep’s milk cheese reportedly tastes similar to a ripe gorgonzola, but the FDA nixed it due to the translucent maggots inside that help process the cheese (locals don’t eat it until the larvae die....but still....). However, the Brie and Roquefort we eat in the states is not the same as the true Brie de Meaux and Roquefort-Sur-Soulzon sold in the European Union. The FDA has banned these because the true Brie is not pasteurized and the true Roquefort is made from unpasteurized sheep’s milk plus a harmless strain of the E. coli bacteria (they have to get those blue veins into the cheese somehow, right?).

Recently a Chicago designer asked us to buy some of her excess fabrics. We loved this cotton blend textured sweater knit enough to feature in the catalog. Rare Intrigue has some really nice all-way stretch, plus a soft hand and subtle drape. It can be worn with the preceding cocoa knit, as well as the following Rare Cream ponte double knit. The French vanilla color is so rich and yummy, it really makes the cream in the sweater knit pop.

Identity Collection European countries are very particular when it comes to the cultural identities of their regions, and many countries have entities which oversee production of protected products. Outside of the Champagne region of France, bubbly wine can’t be labeled as Champagne - in Italy it is Prosecco, in the US it is Sparkling Wine methode Champenoise. Such is true for foods....to a point. Americans don’t buy into the regional naming rights, which lands domestic producers in litigious hot water. According to a PBS report in January, a US District Court in Virginia ruled that calling a cheese “Gruyere” indicates the type of cheese, not the region in which the cheese was made, and thus ruled against the French and Swiss cheese makers who brought suit after the federal Trademark Trials and Appeals Board denied an application for trademark protection. In 2014, a similar naming rights issue was in the news as Denmark filed for exclusive rights to Havarti. It’s not just the US, but Mexico got into a kerfuffle with Spain over the use of Manchego. Originally made from sheep’s milk in the La Mancha region of Spain, the Conquistadors brought the caseiculture (cheesemaking) tradition to Mexico. However, Mexican producers use cheaper cow’s milk which produces a lighter, more buttery flavor that pairs well with Mexican foods. Spain is not impressed. In the states we use a lot of Parmesan, but that’s the Americanized version of the traditional and protected Italian Parmigiano-Reggiano.

You’ve probably noticed that tie-dye, like camouflage, is very popular right now. In this collection we feature two richly colored double brushed ITY prints from Chaus (BCI), beginning with Identity Wine Swirl and ending with Identity Blue Swirl. Let’s look at all the positives: lightweight, super soft to the touch, upscale tie-dye design, great drape, great price, washable. OK, now you have to get some! Identity Burgundy is another of the lightweight French terry knits, and it’s ready to be worn with the

tie-dye. It is a darker hue, and just as rich. You might think you are seeing double because Identity Charcoal looks like the gray French terry we featured earlier, but it is actually a rayon double jersey knit from a high end apparel fabrics manufacturer. Choose this for a knit skirt or leggings, knit tops, wrap dress, and other apparel separates. Its heathered tones blend well with the gray in all the camo terry knits, including Identity Red Camo. It’s such a great neutral to have in your wardrobe.

Identity Sky brings comfort and ease to any knit garment you choose to stitch up. We love it for leggings and tops to go with our prints. A yard is more than enough to make a short sleeve top from Identity Flora. Tiny flowers in three shades of blue are tossed on a heathered gray lightweight rayon jersey knit. We recommend using the Design Plus bias stay tape to make your sewing easier at the neckline, shoulder seams, sleeve and waist hems to prevent the fabric from curling. Trust us, it’s one of those products you absolutely want in your sewing room. If you sew a jersey knit tank or cap sleeve top and need a little light weight something to put around your shoulders, whip up a quickie jacket from Identity Indigo, the denim blue version of our French terry knit. An LA Times article explains the addictive properties of cheese are caused by casein, a protein found in milk products, which converts to an opiate called casomorphin when digested, triggering the dopamine receptors. Don’t worry, though, it’s not as addictive as heroin or morphine, according to Dr. Neal Barnard in his book The Cheese Trap. As with all foods, there are pros and cons to eating cheese. All cheese contains protein and calcium, which is good. Mascarpone, the Italian dessert cheese found in cannolis, is high in calories and fat, low in protein and has 0 net carbs. On the flip side, cottage cheese is very low in calories/fat/carbs/protein, which is why you find it on many diet programs. Medical News Today reported that researchers found that “blood vessels of participants who consumed dairy cheese functioned better than the blood vessels of those who ate pretzels and soy cheese.” Other researchers reported that some cheese, while high in cholesterol and sodium which can hinder cardiovascular health, are a good source of glutathione, an antioxidant crucial to brain health and preventing age-related neurodegeneration. The moral of this information: all things in moderation. Life is a balance. Have a little cheese with a little wine, some fruits and veggies, and it’s all good. Grab some Gouda to nibble on while you pick out the fabrics from this catalog you want to sew this spring.
