The cornerstone of the initial phase of the new Vogel Medical Campus will be a comprehensive cancer center in partnership with Rutgers Cancer Institute of New Jersey, the state’s only National Cancer Institute-Designated Comprehensive Cancer Center.

The Balancing Act

WELCOME to the latest edition of Fiscal Fitness.

2022 is finally behind us as we enter the New Year with hopes of a fresh start. The markets have been unkind to many with all three of the major averages suffering their worst year since 20081. Making it even more difficult was that both stocks and bonds sold off in unison, leaving investors with no place to hide. While the new year will bring its own set of challenges, having a well-balanced plan can help you stay on track and focus on the bigger picture.

FOCUS ON WHAT YOU CAN CONTROL

Dollar cost averaging (DCA) is a method of investing a fixed dollar amount of securities, at regularly scheduled intervals, over a period of time. Putting your investments on auto pilot is not only convenient, but it may also help take the emotion out of investing or trying to time the market.

Plan for the unexpected, again. Have you established a large enough emergency reserve? With interest rates at the highest levels we have seen in years, high-yielding savings accounts and Certificates of Deposit (CDs) are worth looking at.

THE GOOD

Nearing retirement? It’s an opportunity to save more aggressively and make up for lost time. The proposed regulations also increased the catch- up contributions for those aged 60-63 effective in 2025.

LATER AGE FOR REQUIRED MINIMUM DISTRIBUTIONS (RMD). Effective in 2023, the beginning date for RMDs increases to age 73 from 72 (if you turned 72 in 2022, you are subject to the old rule), good news for those looking to postpone distributions. Secure 2.0 has also reduced the RMD penalty tax for failure to take an RMD. Did you even know there was a tax?

529 PLAN ROLLOVERS TO ROTH IRAS. Effective for 2024, you have the ability to roll up to $35,000 from a 529 qualified tuition program tax-free to a Roth IRA for the same beneficiary, provided the 529 accounts have been held for at least 15 years. Annually, the rollover amounts would be subject to Roth IRA contribution limits2. The rules are tricky and you need to work closely with your tax advisor.

ROTH CONTRIBUTIONS are now allowed for SIMPLE and SEP IRAs. Employer contributions and employee elective deferrals (if permitted) can now be designated as Roth. Good news for small business owners and self-employed individuals.

The recent passing of the Secure Act 2.0 has ushered in many changes for retirement plans and IRAs with increased limits on contributions to 401(k)s and IRAs. Great news for those age 50 and older who can save a combined $30,000 a year in their 401(k), between the new limit of $22,500 and additional $7,500 “catch- up” contribution. For IRAs, the combined amount is $7,500.

It’s Time To Reset And Recharge

It’s an occupational hazard. We magazine editors tend to imagine that we know just what you need. Why Everyone Needs a Plastic Surgeon

Did you know that every year 6 million lacerations and over 4 million dog bites are seen in the ER? Regardless of your family’s lifestyle, dog bites, falls, and cuts are part of life.

If you or someone in your family gets a cut or bitten, the first instinct should be to go to the Urgent Care Center or hospital emergency room to rule out any other major injuries. However, when it comes to fixing a cut, you may want to consider calling a plastic surgeon rather than an ER doctor.

Emergency room and urgent care providers are usually comfortable and skilled when it comes to repairing basic lacerations, but there are important reasons to call a plastic surgeon:

scarring especially in patients with darker skin colors. Plastic surgeons can select specific sutures for an optimal outcome.

Relaxed tension tissue lines (RTTL). Wounds heal better or worse based on the direction of the cut. RTTL is a body map of favorable directions for better healing. Plastic surgeons understand that and may be able to adjust the direction of the laceration to better align with RTTL, which are not always obvious.

Restoring original anatomy

Plastic surgeons usually have significantly more detailed knowledge of anatomy. Many primary care providers are not comfortable repairing deep structures. Plastic surgeons are able to simultaneously repair not only skin, but also muscles, tendons, nerves, blood vessels and other deep structures, restoring them closer to their original anatomy.

Post operative scar management. The management of a cut starts with its repair, and it takes up to 12 months for a scar to mature. Plastic surgeons use advanced scar management techniques and protocols designed to further reduce scarring and scar tissue, such as lasers, freezing, microneedling, silicone, embryonic and other high-tech products, PRP, and many advanced creams.

Use of surgical magnification

Plastic surgeons usually use surgical loupes, which are magnifying microscopes attached to glasses, allowing for more gentle tissue handling and more precise repair for overall better results.

Use of advanced suturing techniques and materials. Using proper sutures are critical for the final outcome. Plastic surgeons are skilled in advanced suturing techniques. Each type of suture has a specific characteristic and absorption schedule. Some sutures create more

Have a plastic surgeon’s number in your phone. You may be unpleasantly surprised to find out in a time of need that many local hospitals do not offer emergency plastic surgery services or plastic surgeons may not be available. Locate the number for a local trauma-experienced plastic surgeon and save it to your phone. You can then call and have the provider meet you at one of the local facilities.

Dog: Pepper, 3-year-old half goldendoodle, half schnauzer

Owners: Jess and Bill Christie, Little Silver Hoping to add to their growing family, Jessica and Bill decided that a four-legged friend would be the perfect fit. They searched far and wide for the ideal pooch and found Pepper through a friend’s recommendation. “We feel like she chose us!” says Jessica.

“Her personality is all golden retriever,” Jessica says. “Pepper is the yin to our yang—we are type A personalities in the house, and Pepper’s No. 1 goal is relaxing and living her best life.” In fact, Jessica jokes that Pepper sleeps about 23 hours a day. “Pepper lacks all pep!” Besides getting plenty of rest and relaxation, Pepper gets all the toys and treats she wants (including Puppachinos from all the coffee shops). She also goes to her favorite places in Monmouth County, such as Sea Bright Beach, Sickles Park and Yappy Hour in Asbury. “She has literally been the perfect addition to our family,” says Jessica.

The Pine Brook School student invented the Buddy Finder app, which helps parents connect their kids with others who have similar interests in an effort to build new friendships. Boddu is now a finalist in Byju Future School’s Silicon Valley Challenge. Now, in a justpublished book titled Springsteen: Liberty Hall, Germaine has assembled 95 of the photographs she took during that four-day Houston gig. The volume also includes her written recollections, writing by longtime E Street Band bassist Garry Tallent and an introduction by Springsteen.

able around them. Backstage, they were very serious and extremely professional about their music. There were no groupies, no drugs. They were very focused on their performance, and they were going to give it their all every time they went out there. And so backstage was pretty quiet—but onstage it was explosive.

What do you see when you look at those old photos?

How at ease they are. They’re not posing; they’re just hanging out. Once you’ve been around for a while, they get comfortable with the fact that you have a camera in your hand and become less aware of it. Also, I wasn’t afraid to get up close and personal. A lot of photographers stand back and don’t get so close. But I was shooting with a wide-angle lens for many of these; to get the image you have to get really close.

Few people knew of Bruce Springsteen in March 1974, when he crossed paths with Nicki Germaine. Just off two little-noticed early albums, Springsteen and his band did a series of shows at Houston’s Liberty Hall. Germaine was an assistant to one of Houston’s leading commercial photographers. In her off hours, she took freelance shots for Rolling Stone and Texas Monthly, plus occasional photos of the acts that played Liberty Hall. Through mutual friends, she heard from a promoter for Springsteen, who invited her to photograph the band. It wasn’t a paid job, just a photographer

The daughter of an Air Force officer, Germaine spent much of her childhood abroad, including four years in Iran. She took up photography as a University of Texas student. “It was a passion I didn’t know I had until I started,” she recalls. Her early career was spent balancing parenthood (she has one daughter) with commercial photography and teaching; later she switched to real estate, using her photographer’s eye to capture beauty in the properties she handled. Now retired, she recently decided she was finally ready to revisit those days in Liberty Hall.

Why was this the right time for your photos to see the light of day?

For the first time in my life, I had the time and means to do it right.

What do you remember about the time you spent with Springsteen and his band?

It felt like I was photographing friends. Once I’d been there a couple of nights, I just felt comfort-

What are some of your favorites?

My favorite is the one of [late E Street Band saxophonist] Clarence Clemons sitting with the saxophone in his lap. I don’t often say this about my own work, but I love everything about it. There’s another of Bruce with his eyes closed at the mic. It’s a very quiet photograph—a thoughtful moment, not some wild performance shot where he’s jumping up and down onstage. That says a lot about the mood at that time, which was serious, quiet. It was a time when the feeling was: “Are we going to make it?” I don’t think I fully realized that at the time. I didn’t know CBS Records was talking about dropping Bruce from the label. What does this add to our historical appreciation of Springsteen?

There’s something special about this period when he was just starting out. That version of the band was short-lived—it wasn’t even called the E Street Band then—and two of the original members left shortly afterward.

It’s clear that Springsteen himself was on board with this project.

I was able to speak to Bruce as I was first considering it, and I told him I didn’t want to do anything without his blessing. He thanked me for that and said, “What can I do to help?” I knew that with Bruce’s blessing and cooperation, the chances of making this a success were far greater. And the timing turned out well, because we were able to get the book published ahead of his tour this year. What do you hope people get from the book?

It’s going to mean different things to different people. A lot of people have very personal feelings about Bruce and his music.

Monmouth Medical Center (MMC), an RWJBarnabas Health (RWJBH) facility, has officially purchased the former Fort Monmouth property in Tinton Falls from the Fort Monmouth Economic Revitalization Authority (FMERA).

The property, located at Corregidor Road and Pearl Harbor Avenue, will be the home of the Vogel Medical Campus at Tinton Falls. Construction of the state-of-the-art medical campus will begin this year and was made possible by a historic $50 million gift to MMC from local philanthropists Sheldon and the late Anne Vogel.

The Vogel Medical Campus at Tinton Falls will bring worldclass care to an easily accessible location where patients can receive health care services in one place—creating a seamless and exceptional experience. The outpatient center will feature comprehensive same-day surgery, advanced diagnostic imaging and on-site specialty physician offices. The cornerstone of the outpatient center is a comprehensive cancer center in partnership with Rutgers Cancer Institute of New Jersey, the state’s only National Cancer Institute-designated Comprehensive Cancer Center. All of these services will be provided in a park-like setting designed to promote a healing environment by embracing the natural landscape with green vistas and outdoor seating and walking areas.

“We are excited to take ownership of the property and begin the process of constructing a truly incredible facility,” says Eric Carney, President and CEO of MMC and Monmouth Medical Center Southern Campus. “The Vogel Medical Campus will enable us to further our mission to deliver truly outstanding care to our community. As an expansion of the MMC campuses in Long Branch and Lakewood, the Vogel Medical Campus is located within the communities we currently serve and will be designed to meet the unique needs of our diverse and growing community now and in the future.”

The development of the Vogel Medical Campus is part of MMC’s mission to create an integrated outpatient network that helps patients maintain wellness and meet their evolving care

needs. It is also supported by RWJBH’s expansive primary and specialty care provider network throughout the region. Recent advancements include:

• MMC and its Unterberg Children’s Hospital expanded access to pediatric care and wellness programs through the Anne Vogel Family Care and Wellness Center at the Monmouth Mall in Eatontown. The center also provides access to the outstanding offerings of Children’s Specialized Hospital, also an RWJBH facility.

• MMC partnered with Monmouth University on the Linda Grunin Simulation Lab and Learning Center in West Long Branch, which is providing high-tech, hands-on learning experiences for medical residents, students and staff.

“The Vogel Medical Campus is another example of meeting the healthcare needs of our region in an effective, flexible and sustainable way,” says Bill Arnold, Executive Vice President and President of the Southern Region, RWJBH, and President and CEO of Robert Wood Johnson University Hospital. “Our integrated network of inpatient and outpatient facilities, along with our outstanding providers, is ensuring high-quality care now and for generations to come.”

Monmouth Medical Center is the only hospital in the region to receive an “A” Hospital Safety Score by the Leapfrog Group for 16 consecutive rating periods. MMC was also named a top teaching hospital by the Leapfrog Group in 2021 and was named to the 2022 Newsweek list of “World’s Best Hospitals”.

As part of the outpatient center development at the Vogel Medical Campus, plans for transforming the site also include the option for a new acute care hospital, should there be a future need. This hospital would be an expansion of the care already provided at Monmouth Medical Center and would operate in conjunction with the Long Branch campus.

ELEVATING CANCER CARE

A Long Branch man discovers treatment at Monmouth Medical Center goes beyond cuttingedge technology—a pleasant staff helps heal too.

You can’t get by on a good reputation alone, especially in healthcare, where good bedside manner and patient comfort is almost as important to treatment itself.

That’s exactly what 64-year-old Jeff Prusan discovered in 2018 when he began treatment for what doctors originally believed was tonsilitis. Prescribed antibiotics didn’t work, and the Long Branch resident said symptoms worsened.

“My throat felt like it was closing up, and I was having trouble breathing,” Prusan recalls. “My friend even suggested I might have throat cancer, which was concerning because I had lost my wife years earlier to ovarian cancer.”

He then sought care at a large reputable hospital, where a biopsy on his tonsils confirmed Prusan developed tonsil cancer. He immediately started treatment and responded well to a three-month chemotherapy plan, but Prusan didn’t continue with additional treatment—and by July 2019, a cancerous mass formed on his right tonsil.

“That hospital provided standard care, but there was a lot of red tape,” says Prusan. “I wasn’t happy there, so I went to Monmouth Medical Center.”

In October 2019, Prusan met with Mitchell Weiss, M.D., Chair of the Radiation Oncology Department at MMC, and soon started 6½ weeks of concurrent radiation and chemotherapy to treat his right tonsil and lymph nodes in his neck.

“The treatment went well,” Dr. Weiss says. “We used advanced technology to treat him, including TomoTherapy.” Before

delivering radiation, the TomoTherapy unit (a form of image-guided radiation therapy, or IGRT) allows radiation oncologists to take advanced imaging immediately before treatment to “make sure we are targeting the right areas and minimizing any long-term effects,” Dr. Weiss adds.

By the end of January 2020, doctors told Prusan there was no evidence of cancer in his body.

“Monmouth Medical Center got me in quickly, and doctors assured me that tonsil cancer is highly curable,” he says. “And everyone made the process so easy: I went in once a week (chemo was once a week, radiation was daily), I had an iPad or a book, complimentary food and snacks and even a few laughs. The level of care at Monmouth Medical Center is so good. So many people check in on you, from doctors to nurses and nurse practitioners. You never feel alone.

“Dr. Weiss made me feel comfortable from the start,” Prusan adds. “Cancer is not a joke—there’s a lot to worry about. But to go to a place that makes treatment easy for you, what else can you ask for?”

Dr. Weiss credits the department’s multidisciplinary team for the first-rate care, including nurses, patient navigators, nutritionists and radiation therapists, as well as the medical oncologists with whom they work.

“Radiation therapists see patients whenever they come in and form close relationships with them,” he says. “They really make people comfortable. Everyone at Monmouth Medical Center treats patients like they’re family.”

Overall, HIIT routines help decrease fat, build muscle and improve body composition, and they don’t need to be an hour long to be effective. The American College of Sports Medicine’s (ACSM) official recommendation is a more doable 30 minutes of moderate-to-intense activity five times a week. What’s next: “There are a million different ways to do a HIIT workout, but the takeaway is that you need to change intensities and modalities so that your body can do as much work with as few breaks as possible,” says Ronnie Lubischer, owner of Lubischer’s Burn & Blast in West Long Branch. Variety is what keeps things interesting and pushes people out of their comfort zone. How-to at home: Eight rounds of 12 dead-lift pull-downs and 20 reps of bicep curls are a great way to combine HIIT with weightlifting. “Try to do HIIT in the morning when your glucose levels are low so as to burn more fat,” says Lubischer.

TECH WORKOUTS.

Technology and fitness have collided over the past decade, especially since the pandemic began and brick-and-mortar gyms either closed or imposed limits on users. In fact, wearable technology was the No. 1 fitness trend of 2022, according to the ACSM. With the touch of a button, you can track your steps, your progress, your form, your heart rate and sometimes even your sleep patterns. “These apps are comprehensive and are never going to hinder you; in fact, they help you reach your goals,” Lubischer says. His clients use wearables in conjunction with his training sessions to “keep them accountable after the workout, since they’re checking in with their workout dashboard and food log.” These devices can help you optimize your workout in real time and live a healthier lifestyle. A recent study out of Brigham Young University found that simply wearing a fitness tracker—even if you don’t pay attention to it—may increase your time spent walking.

What’s next: In addition to wearables and apps, experts are projecting 2023 as a big year for AIbased fitness training programs. This means workout aficionados can expect bespoke workouts with moves and intensity levels specific to your body and your needs, resulting in highly personalized regimens and top-notch results. “For all of these apps, the takeaway is optimal,” Lubischer says.

How-to at home: There are hundreds of apps you can download right to your phone, including FitBit Charge 5, one of Lubischer’s favorites, that’ll help push you to your personal best. FitnessAI is at the forefront of artificial intelligence workouts; its algorithm adjusts your level of difficulty and your rest intervals based on each workout you track. It also has messaging in the app to keep you accountable, much as a personal trainer would “IRL.”

TOTAL-BODY RESISTANCE EXERCISE (TRX).

This is suspension training that improves strength and tightens muscles using just your body weight and gravity—no weights or kettlebells required. All you need is the adjustable straps (the original TRX straps were invented by a Navy SEAL), which amplify standard moves such as planks, pushups, squats, crunches and chest presses.

“TRX allows you to use your body weight for the movements and resistance so you can make easy progressions by adjusting your body in position to the anchor,” says Matt Wright, chief growth officer at The Fort Athletic Club in Oceanport. You’ll probably want to work with a trainer at least at first to perfect your form and limit the risk of injury, but once you’re well equipped with the basics, this regimen works for people of almost any age: Wright says he’s trained both 6-year-olds and 90-year-olds in TRX!

What’s next: Some studios offer TRX-specific classes, but many gyms have the straps so that members can utilize them as they please. “It’s a weight-bearing activity, so it can help increase bone density and overall strength,” says Wright. How-to at home: Alternatively, you can purchase a set of TRX straps for between $100 and $200 online and do this exercise at home.

EXERCISE “SNACKING.”

This may be the best life hack for those of us who are busy and can’t always commit to a lengthy workout. The idea is that rather than one long session, you get some movement in via “bite-sized” bursts throughout the day, in whatever way feels comfortable to you. “Exercise is cumulative,” says Lubischer. “As long as you get to your 30 minutes in the day, it doesn’t matter how you break that up.” Bonus: Shortbut-sweet workouts will make you feel accomplished, which can in turn improve your mood and mental health.

What’s next: Expect to see more online programs and challenges offering five-, 10- and 15-minute workout snippets you can pepper into your daily routine (Peloton is famous for this). Low-intensity moves such as walking the dog or climbing the stairs count too, so you can feel productive knowing you’re doing even just a little something to get your body moving. “There’s a benefit to consuming workouts in different ways so you don’t get bored and do the same thing too often,” Wright adds. How-to at home: The point of exercise snacking is that it doesn’t need to be formal and planned out. But if you prefer it to be, in between Zoom calls or the chauffeuring of kids, aim to take three 10-minute breaks each day, with three sets of 10 exercises during each.

“This gives you a little bit of everything,” says Wright.

YOGA.

Something new? Of course not. But this ancient practice is breathing new life into workouts in ’23. It combines breathing techniques, physical movements and meditation to challenge both the mind and the body. Yoga improves strength, balance and flexibility, and it has cardio and circulatory health benefits as well.

What’s next: Yoga will continue to play into today’s huge focus on mental health and wellness by offering more mixed-level classes where people of all experience levels feel welcomed, says Matt Wright, chief growth officer at The Fort Athletic Club in Oceanport. He adds that breathwork and meditation are becoming central in yoga classes too, and the additional element of heat (such as in hot yoga) is growing popular for other types of workouts such as sculpt or toning.

How-to at home: Before taking a class, Wright recommends checking out videos online to learn the basics such as downward dog, warrior poses and child’s pose. “Some people don’t want to try yoga because it’s unfamiliar,” says Wright. “But the more practice you have, the better and more confident you’ll get.”

QUINOA SOUP

Yields 4-6 servings

INGREDIENTS:

FOR THE SOUP:

n 2 Tbs. extra-virgin olive oil

n 3 shallots, diced

n 4 carrots, shredded

n 1 rib celery, diced

n 1 tsp. kosher salt

n 1 tsp. freshly ground black pepper

n 4 cloves garlic, minced

n 6 cups chicken or vegetable stock

n 1 15-ounce can chickpeas, drained and rinsed

n 1 cup quinoa, rinsed

n 1 14.5-ounce can finely chopped tomatoes, preferably Mutti

n 1 tsp. dried basil

n 2 tsp. dried thyme

n ½ teaspoon red pepper flakes

n 3 cups baby spinach

n ½ cup Cashew Cream (see below)

n ¼ cup grated Parmigiano Reggiano, for serving

FOR THE CASHEW CREAM:

n 1cup raw cashews

n 2 tbsp. extra-virgin olive oil

n 2 tbsp. freshly squeezed lemon juice

n 1 clove garlic

n ½ tsp. sea salt

DIRECTIONS:

Heat the oil in a large stockpot or Dutch oven over medium-high. Add the shallots, carrots and celery. Season with ½ teaspoon of the salt and ½ teaspoon of the pepper. Sauté, stirring occasionally, until soft, 5 to 7 minutes. Add the garlic and sauté for 1 minute.

Add the stock, chickpeas, quinoa, tomatoes and spices. Stir to combine. Season with the remaining ½ teaspoon salt and the remaining ½ teaspoon pepper. Bring to a boil, then reduce the heat to a simmer. Partially cover the pot and cook for 25 minutes. Stir in the spinach and cashew cream. Allow the spinach to wilt. Divide among bowls and top with the grated cheese.

For the cashew cream, place the cashews and ½ cup water in a small bowl. Let sit in a warm area for at least 8 hours. Drain. With a high-speed blender, blend the cashews, oil, lemon juice, garlic and salt until smooth. Store the cashew cream in an airtight container in the refrigerator for up to 1 week.

n 1 Tbs. extra-virgin olive oil, plus more for drizzling

n 1 shallot, diced

n 6 cups chicken stock

n ½ cup stoneground yellow

cornmeal

n 1 cup grated Parmigiano

Reggiano

n 8 oz. baby spinach leaves

n 2 cups shredded rotisserie

chicken

n ½ tsp. coarsely ground black pepper

DIRECTIONS:

Heat 1 tablespoon oil in a large stockpot over medium heat. Add the shallot and garlic. Sauté for 3 minutes until tender.

Add the stock to the pot and bring it to a simmer. Add the cornmeal to the stock in a thin stream, whisking constantly. Simmer over medium heat, stirring occasionally, until the soup is slightly thickened, about 10 minutes.

Whisk in the cheese and simmer for 1 additional minute. Stir in the spinach and chicken.

Simmer until the spinach is wilted and the chicken is heated through, 3 to 5 minutes. Season the soup with salt and pepper. Ladle into bowls and drizzle with olive oil.

Spinach is loaded with nutrients and antioxidants. Eating spinach regularly may help prevent chronic diseases such as heart disease, cancer, type 2 diabetes and obesity.”

HARISSA-SPICED MOROCCAN CAULIFLOWER AND ALMOND SOUP

Yields 2 servings

INGREDIENTS:

n 2 Tbs. extra-virgin olive oil

n 1 small yellow onion, finely

diced

n ½ tsp. ground cinnamon

n ½ tsp. ground cumin

n ½ tsp. ground coriander

n 1 Tbs. harissa paste

n 1 large head cauliflower, cut into small florets

n 1½ cups vegetable or chicken stock

n 1¼ cups almond flakes, toasted

n ¼ cup half-and-half

n 1 small baguette, cut into ¾-inch cubes and toasted

n freshly ground black pepper to taste

DIRECTIONS:

Heat the oil in a large stockpot over medium heat. Add the onion and sauté until very soft, 5 to 7 minutes. Add the cinnamon, cumin, coriander and harissa paste and cook, stirring constantly, for 2 minutes. Add the cauliflower florets, stock, and 1 cup of the toasted almond flakes. Cover and cook until the cauliflower is tender, about 20 minutes.

Puree the soup with an immersion blender until smooth. (If you don’t have an immersion blender, you can let the soup cool, then puree the solids in a food processor fitted with the metal blade and return them to the pot). Reheat the soup in the stockpot. Add the half-and-half and mix thoroughly.

To serve, ladle the warm soup into bowls and top with the remaining toasted almonds and the toasted bread cubes. Season with pepper as needed.

Serve the ribs over mashed potatoes or creamy polenta and top with gravy.

The Practical Prune

This vitamin-rich dried fruit is much more than just a way to keep things moving.

Prunes are dried plums. The dark-purplish fruit—sweet, chewy, squishy and stickytextured—is usually made from Prunus domestica. That’s the European plum, the fruit of a flowering deciduous tree that grows not only in Europe, but also in the Americas (especially California), the Middle East and the Far East. No beauty, the prune is widely hailed simply for one purpose: helping to keep us regular. But such typecasting does the wrinkly little thing an injustice, selling short its culinary versatility and its manifold nutritious boons.

While all prunes start out as plums, not all plums are candidates for prunehood. Generally, plums sold to be eaten as plums are “clingstone” fruits, with hard-to-remove pits, while plums with a pruny destiny are “freestone”—the pit can be taken out easily. In 2001 some prune marketers won permission from the U.S. Food and Drug Administration to call what they were selling “dried plums” instead of prunes to avoid what they thought were negative connotations of the latter label. Fortunately, many of these prune prudes have since recovered their prune pride.

POWER UP:

When it comes to assisting your body’s blood clotting and bone building, vitamin K is a powerhouse. And guess what food is a veritable K-mart! A 100-gram (3.5-ounce) serving of uncooked prunes meets 57 percent of your daily need for K—as well as 16 percent each of your riboflavin, alias vitamin B2 (which can help the body absorb nutrients and prevent damage to cells caused by free radicals), B6 (good for the brain, nerves and immune system) and potassium (an aid to maintaining normal fluid levels in cells). At 115 calories for a serving of five prunes, this fruit can be a healthy snack alternative.

And what about prunes’ claim to fame? Five London researchers, not content simply to ask their grandmothers, reviewed previous trials to assess the fruit’s vaunted prowess as a laxative. Results published in 2014 in Alimentary Pharmacology & Therapeutics charted groups of participants, with and without a constipation complaint, as they ate 100 grams of prunes a day for three weeks. “Number twos” became more frequent for the constipated group and easier for both groups. The reasons? Probably both prunes’ high fiber content and their generous quantity of sorbitol, which can

help stimulate the gastrocolic reflex, a signal to the colon to go into action.

Prunes do have potential downsides. Eating too many can trigger gas and/or diarrhea. Also, the Mayo Clinic warns that if you’re taking monoamine oxidase inhibitors (MAOIs) for depression, eating foods like prunes that are high in the amino acid tyramine can result in excessive tyramine levels in the body—and a possible blood-pressure spike.

BUY/STORE/SERVE

Almost every grocery store and many fruit markets sell prunes; you’ll find them among other dried fruits, often in jars or plastic packages. The U.S. Department of Agriculture says dried fruits such as prunes can retain their quality stored in a pantry for up to six months. “After opening,” it adds, “you may wish to store them tightly sealed in the refrigerator to preserve the quality for up to six additional months or freeze them for one month.”

You can pop a prune into your mouth and be happy about it—it’s a healthy snack with natural sweetness. Or use prunes in a salad, a wholegrain muffin or a bowl of cereal. Mix them with spiced red cabbage or a quinoa stew. As an hors d’oeuvre, try prunes stuffed with chicken-liver mousse. Search out online recipes for main courses such as braised pork with prunes or roast pheasant with leeks and prunes. Go international with Belgian rabbit in prune sauce or prune-filled Middle Eastern pilaf. Or make a memorable dessert using prunes in a chocolate cake, or fashioning a prune-and-almond scone or a prune-andchocolate-torte.

Finally, of course, there’s prune juice. Try it in the morning when you need to help things along— or when you simply want a distinctive-tasting breakfast-beverage change-up pitch.

Both brothers graduated from The University of Pennsylvania School of Dental Medicine and completed residencies at Monmouth Medical Center. A Winter Wonder

When the weather outside is frightful, this island-inspired sip provides a much-needed taste of a tropical paradise.

JACK FROST COCKTAIL

Yields: 2 servings

INGREDIENTS

n ½ cup coconut rum

n ¾ cup pineapple juice

n ½ cup blue curacao

n ½ cup cream of coconut

n 3 to 4 cups ice

n edible glitter, optional n 1 Tbs. coconut cream, for serving

n coconut flakes, for serving

DIRECTIONS

Add ingredients to blender with 3-4 cups of ice as well as glitter, if using. Blend until you have a slushy consistency, adding more ice if needed. Dip rim of glass in coconut cream, then dip rim in coconut flakes. Allow to dry. Pour blended drink into your prepared glass.

Worth The Wait

After many delays, Charlie’s of Lincroft gives foodies the feast they’ve craved.

Upon first glance, Charlie’s of Lincroft may appear to be an inn from a bygone era. Indeed it pays tribute to buildings of old, but make no mistake: everything about the restaurant is brand new.

First, a little history lesson: Charlie’s does occupy the former site of the Lincroft Inn, which after some 300 years was razed before construction on the eatery began around 2019. Setbacks, including the pandemic, delayed the project’s completion until last year, when the upscale, 260-seat dining establishment opened. Its design reminded me of old stagecoach stations, and builders even included old beams and other elements in the new architecture.

The exterior and two large dining rooms inside are marvels, which a good friend and I absorbed last month, our first time at Charlie’s since it debuted in 2022—but believe me, I wanted to try it sooner.

They say good things come to those who wait, and that sentiment was immediately confirmed when we tried a pair of appetizers. Selecting from an expansive list of hot and cold starters was a challenge— it’s tough to choose from items such as soups, market-price oysters, St. Louis-style ribs and a seafood tower—but our choices really hit the spot. Monmouth County restaurants excel at preparing seafood, and Charlie’s grilled octopus is an excellent example. The large arm is massaged so it remains oh-so-tender when cooked and is paired with a delightful miso butter and lemongrass ginger sauce. Just as good is the tuna tartare, a heaping portion of delectable raw fish, chopped, topped with chips and surrounded by a mouthwatering wasabi soy aioli and miso vinaigrette.

We were already satisfied after two top-notch apps, but the meal got even better. I quickly snapped a bunch of photos when my entree, a massive pork chop, arrived. If it looked great, it tasted even better. Cooked a perfect medium-rare, the meat was so juicy, tender and tasty that it didn’t need the accompanying mustard and braised cabbage for extra flavor (though they definitely added a kick). My conclusion: Charlie’s pork chop is one of the best in Monmouth.

The halibut, evidently, is in the same league—it’s a generously sized filet that’s perfectly crusted on the outside and buttery and flaky on the inside. My friend allowed me a couple of forkfuls of her fish dish, including the colorful bok choy leaves and playful beach mushrooms. If you’re looking for a lighter plate (compared with other offerings such as four different cuts of steak, pizzas and pastas) that’s packed with flavor, the lunch or dinner portion of halibut is a sure-fire order.

We saved room for dessert, as a meal at Charlie’s isn’t complete without a sweet treat. A shared order of sugary doughnuts—essentially warm, fluffy doughnut holes—came out with three types of sauces: raspberry, salted caramel and Nutella. My favorite was the tart raspberry, which I sprinkled on top and also injected into each of my doughy morsels. My companion’s go-to was the salted caramel sauce, a perfect lead-in to our second dessert, sticky toffee pudding. The warm cake was doused with a gooey maple toffee sauce and covered with pecans. It’s complete sugary bliss when you take a spoonful of the toffee treat and some vanilla ice cream. Let’s just say we put our weight-loss resolutions on hold for the day.

Charlie’s has a sister restaurant in Bay Head that also serves new American cuisine. The first location has been around for several years, so it’s likely that you may have dined there. But no two eateries are alike: With a different menu (and a knockout pork chop), Charlie’s of Lincroft is its own must for all Monmouth foodies.
