WAC uses Whole Farms Plans, Forest Management Plans and Conservation Easements to help farmers, forest professionals and private landholders address water pollution concerns on properties located in the Croton and Catskill/ Delaware Watersheds. elcome to the 2018-2019 Guide to Pure Catskills Products, your one-stop source for where to eat, drink, shop, stay and play in the Catskills! The pages of this magazine showcase over 290 farm and forest-based businesses, restaurants, local artisans, other non-profit organizations and accommodations located throughout Delaware, Greene, Schoharie, Sullivan, Otsego and Ulster Counties in New York State. The businesses in the Catskill Region have grown tremendously in the fourteen years since we developed the Pure Catskills branding campaign. What started as a small farm brochure has become a soughtafter magazine that highlights not only farm and forest products, but many other thriving businesses including local craft beverage makers and growers in this region. This year, we are proud to share the stories of Union Grove Distillery, Tay Tea, West Kill Brewing LLC, Java Love Coffee Roasting Co., Awestruck Ciders, Westwind Orchard, Muddy River Hops, Blue Sky Farm & Winery and Catskill Distilling Company. The craft beverage industry is expanding and making a name for itself all over the world, especially here in the Catskills where you can taste the passion, hard work and devotion of our members in every sip. Whether it’s hops, wine, cider, coffee, tea, beer or spirits, these establishments are making a positive economic impact on our local towns and draw residents and tourists alike to our rolling hills and valleys. AWESTRUCK CIDERS in Sidney, NY is devoted to crafting complex, delicious hard ciders by blending freshpressed New York State apples with natural herbs, spices and ingenuity. Co-founders Casey Vitti and Patti Wilcox, spent years as vagabond globe-trotters before Awestruck was even a spark of an idea. This sparked our mission to create a product that would captivate people, stop them in their tracks and show them a glimpse of fun and discovery. With each and every cider we make we aim to do just that. At Awestruck we strive for innovation and creativity in crafting our ciders. Our three flagships are each unique, yet approachable: Hibiscus Ginger is rose-colored, fizzy and subtly complex; Lavender Hops blends fresh lavender and juicy hops, at once deeply aromatic and refreshing; and Dry Apple + Oak is a wonderful example of the beauty of fermentation—woody, fruity and deeply evocative of early autumn in upstate New York. was conceived by the opportunity of the new Farm Distillery act in New York State (NYS) back in 2010. We were one of the pioneers to jump at the opportunity to create spirits using only grains from NYS Farmers. We saw it as an exciting new industry and we were correct! THOSE OF US who make a living doing what we love are truly blessed. My life was transformed in 2003 when I embarked on the path of tea and founded TAY TEA. I was living and working full time in NYC, but dreamed of the green stillness of the Catskills and knew one day I would settle here. MUDDY RIVER HOPS CO. is a family-owned hop farm located on the banks of the beautiful Susquehanna River in Unadilla, NY. Always a place of gathering and an icon for its natural charm, the land was enjoyed by the family, but owned by a friendly neighbor. A piece of the land was once a productive farm as well, but had lain fallow for many years. Then in 2012, this long-sought property was acquired by the family. Later that year, sitting around a campfire, an epic family brainstorm would result in a new venture into small-scale hop farming and the burgeoning local craft brewing industry, using this cherished land. We would commit to preserving the beauty, history, and ecological function of the property and its surroundings, yet return a part to its historical roots in agriculture. The time was right, and we knew our skills and common interests would align to make a good team. As our hop farm (or hop yard, in its authentic term) has matured, we’ve endured the hard work and the steep

learning curve required from first-time farmers. Yet the connections we have made with our brewers, the community, and the continued camaraderie from our friends and family in helping our business grow have already proven their worth. Not to mention, our membership in Pure Catskills has connected us to a thriving agricultural base unlike any other agricultural organization in NY. In 2018, we will open Muddy River Farm Brewery, situated adjacent to our hop farm and overlooking our natural amphitheater by river. Our tasting room will offer samples of our beer as well as pints by the glass. One of the great tenets of a NY-licensed farm brewery is the commitment to using brewing ingredients grown in the state. Of course, we will use our home-grown hops, but will also take advantage of the growing malting industry in NY. UNION GROVE DISTILLERY is a family run distillery that opened in February 2016. We produce the award winning Vly Creek Vodka made from NY apples and wheat, vodka made from pure Tree Juice Maple Syrup, and the wildly popular Catskill Mountain Maple Spirit. All maple syrup used is produced six miles from the distillery. Our Maple Spirit is made in a rum style “but don’t call it rum” and aged six months in a used bourbon barrel. With encouragement and support from our wives, Penny Mulder a fulltime nurse and Jeanine Pascarella a full time mom to Max and Amelia, we decided to change careers from construction, spray foam and cellulose insulation to distilling. Although this is our first foray into the world of distilling, we both have experience making beer, wine and hard cider as a home hobby. Our passion for enjoying fine Bourbons and whiskies led us to make career changes and switch to this fulfilling career making fine spirits. We had never distilled before until we fired up our GENIO distillation equipment for the first time at the distillery. While our vodka and the very popular Catskill Mountain Maple

Spirit are the main products coming out of Union Grove right now, we are hard at work distilling batches of rye whiskey that will go into barrels and age for 12 to 14 months. When you stop by the distillery you might catch us running the GENIO Still, of which we are also the USA reps for, or bottling some product. Depending on the time of day you might even catch us behind the bar right beside our wives mixing up some great craft cocktails. When the weekend rolls around you can catch Lissa and Monte, or perhaps guest bartenders Jeanine, Penny or Victor behind the bar mixing up some great drinks and engaging in great conversations with our guests. If you would like a tour then all you have to do is ask. We are usually hard at work in the production room and will gladly give you a personal tour and show you how the process works. Hudson River Valley, Westwind Orchard inhabits a historic apple orchard in the shadow of the Catskill Mountains. The orchard was first planted in the 1930’s by Chester Khon who tended and farmed the property for over 40 years before it was purchased by the Schoonmaker family of Accord, who were 12th generation farmers. Westwind has been the name of the orchard since its inception and when we purchased the property in 2002, we kept the name as a way to honor what came before us and steward our vision. In 2005, we began restoring the orchards by clearing brush, reviving older trees, taking out dead ones, and planting new ones all in anticipation of one day having an organic orchard and farm. After much labor and a lot of love, Westwind Orchard became a Certified Organic farm in 2008. Today, Westwind Orchard makes a number of artisan products including: maple syrup, jams, vinegars, applesauce and honey. We also raise chickens for eggs, craft our own cider and make our own pizza in a woodfired Neapolitan oven. We have mostly dessert apples on the property and have been grafting cider apples since 2010. We are just about to plant 1,000 more apple trees. Westwind currently produces three unfiltered, dry and bubbly ciders: Goldrush, a single vari-

ety cider that is sharp and citric, Classic, a blend of 8 different apple varieties, and Raspberry Cider, an apple cider finished fermenting with raspberries. This year we will add a few more varieties to the growing list. Everything we do at the farm is as close to the source as possible. We keep our own yeast-based pizza starter at the farm, use honey from our bees to sweeten the dough and make fresh mozzarella daily using grass-fed Narragansett curd. We pay attention to the small details of making the pizza and this allows us to let the farm’s amazingly fresh produce shine through on each pie. The proximity to the harvest, the true meaning of the word “fresh,” makes our pizza truly unique. We change our pizza menu weekly, guided directly by what the farm is harvesting and what is locally foraged. We’re not afraid to try ingredients that some might consider an afterthought garnish as the star of a pie, think mustard seed flowers (from a cover crop we plant between rotations), apple blossoms (before they turn into fruit), or the humble potato-brined, roasted, and crisped before being crumbled alongside locally produced Margie cheese and fresh sage. “Ortolana” in Italian literally means “of the field” we try to embody that mentality on all of our pies and our philosophy in general. —Fabio Chizzola & Laura Ferrara

WHEN I MOVED from Wisconsin to Boston, the first person I met in my first class at Suffolk University was Michael Barcone. We became fast friends and he eagerly invited me to visit his family home in the Catskill Mountains. I couldn’t get over how that “fairy land” of the Hudson River School paintings was real and I fell in love. Three years later, in my last year of college, while Mike was teaching History at a high school in Boston, my dad died from the cancer with which he had been diagnosed only eight months before. The energy of Boston was not the place for me to comfort my loss. Mike’s dad encouraged us to move here, to a home of our own—to do… something, to make… something. He certainly had us inspired but for what? While I was packing boxes and day-dreaming about mountain hikes, picnics in old pasture fields, and wildflowers; Mike and his dad were talking each other into bigger and bolder ideas. Just as we moved the first carload of boxes into the barn on the family land, Mike’s dad died suddenly. The strength I was just beginning to believe would return to me was snatched away. I was numb and poor Mike was powering through the necessary motions to keep everyone together while in agonizing disbelief. One is warned never to make life-altering decisions in times of extreme joy or grief. Our move to the Catskills, our engagement and marriage, our home and our decision to open a brewery here were all

decided on in the most painful year of our lives and we regret nothing—except maybe that one Airedale puppy. It took us four years to brew our first beer at West Kill Brewing. Those years were filled with a thousand questions that each had a hundred potential answers. Nothing was easy, nothing went smoothly, and it felt like nothing worked. Every move we made was haunted by our desperate wish to have a dad there to tell us what to do next or at the very least to tell us to keep going. No one actually stopped us however, and a few people even said that what we were doing was “kinda neat” so we let ourselves thrive off of that overwhelming enthusiasm. Here we are. The brewery has been producing beer for one amazing year. Sometimes I take a moment, while Mike and I are serving beer on a Friday night in the West Kill Taproom, to wonder if people finally see us as the stable, business-owning husband and wife—expecting their first baby—or if we are still just those foolishly self-confident kids of that “new generation.” Our inspiration to make wonderful beers that capture our love of the Catskills has never left us and only gets bigger every day. How can I explain to everyone that each beer is created to not only be a great tasting beer, but also to cheers the daily struggle of work and life that we all facesometimes alone and hopefully together? Nothing feels as good as a hard days work and a West Kill beer to celebrate. —Colleen Kortendick
