ABOUT THE WATERSHED AGRICULTURAL COUNCIL The Watershed Agricultural Council (WAC) works with farm and forest landowners in the New York City Watershed region to protect water quality on behalf of nine million New York residents. WAC uses Whole Farms Plans, Forest Management Plans and Conservation Easements to help farmers, forest professionals and private landholders address water pollution concerns on properties located in the Croton and Catskill/ Delaware Watersheds. The Watershed Agricultural Council’s mission is to promote the economic viability of agriculture and forestry, the protection of water quality, and the conservation of working landscapes through strong local leadership and sustainable public-private partnerships. elcome to the 2019-2020 Guide to Pure Catskills Products, your one-stop source for where to eat, drink, shop, stay and play in the Catskills! The pages of this publication showcase over 300 farm and forest-based businesses, restaurants, local artisans, other nonprofit organizations, activities and accommodations located throughout Delaware, Greene, Schoharie, Sullivan, Otsego and Ulster Counties in New York State. I am often asked to describe this region, and with that to define “Pure Catskills.” My response is simple. To me, the Catskills are a woven patchwork of rolling farm and forestland bound together by pure flowing rivers and streams. I picture a community of hardworking, small family farms and business owners, one-lane roads, rural towns in the deep valleys, and local shops supporting their farming neighbors. I think of stopping at a roadside farmstand stocked with an abundance of highquality, farm fresh products being grown or raised there at the source. I visualize driving past fields of wildflowers in the spring, lush green pastures in the summer, towering corn fields in the fall, and endless snow in the winter. I picture a pristine, untouched playground for naturists, families, local residents and visitors alike. It is a lifestyle I have always admired, and one I’m extremely proud to support. As you flip through these pages, I am hoping to give you that same “Pure Catskills” visual. This year, we took the opportunity to showcase just some of the wonderful agritourism farms located throughout the region. I hope that when you picture the Catskills, you see the faces of Sunnycrest Orchards, Kelder’s Farm, Eternal Flame Farm Market, Middlefield Orchard, East Brook Community Farm, Beaverkill Trout Hatchery, East Durham Farms, Cold Spring Farm and all of our other members listed in the 2019-2020 Guide to Pure Catskills Products. Our small family farms and businesses have adapted to change, diversified their operations, and as a result, agritourism on farms is now a thriving business model in our region. With everything from U-Pick orchards and garden centers, to restaurants and breweries, the Catskills have something for everyone. Activities, on-farm experiences, farm education, you name it – we have it! If you live here or if you’re visiting, I ask that you support local farmstands, shops and businesses because it really makes a positive economic impact. Beaverkill Trout Hatchery
THE BEAVERKILL TROUT HATCHERY was spawned in 1963 by the late Fred D. Shaver, a dairy farmer and avid sportsmen. Fred was the caretaker of the Quill Gordon Fly Fishing Club and was asked to raise some trout to put back into the river to restock the rivers for the fishermen. After he started this very small operation, he soon saw opportunity and took an interest into making his operation larger and the business soon took off. The hatchery now sits on a 200-acre former dairy farm that is located in the heart of the Catskill Mountains. Nestled closely to the head waters of the Beaverkill River, you can see how the hatchery got its name. In 1965, Fred was partnered with his son the late Edwin D. Shaver and his grandson the late Gary D. Shaver. Gary’s wife the late Betty Shaver was very instrumental in operating and owning the hatchery with her daughter Sherry, upon the sudden death of Gary in 2009. The forefathers had worked diligently in laying the groundwork for the generations to follow. They had a vision. Owner/operator Sherry Shaver (4th generation) is quite proud in working with family members Frankie Shaver (4th generation), Gary Tyler Shaver (5th generation), Chris Shaver (5th generation), Ashlynne Ratner (5th generation), family friend Mike Logothety and cousin Rube Smith. Rounding out the team are office staff Terri Shaver Lockhart (3rd generation) and Carol Backman, family friend. These people allow
the hatchery to function smoothly on a day-to-day basis between office work and grounds work, maintenance of the ponds and fish, processing orders, and delivering the fish of course. These dedicated people help the every day operation of the hatchery go off without a hitch. Through our Pure Catskills membership, we have been able to reach a larger market and the guide allows people to easily access the products and services that we have to offer. Perhaps the oldest and largest private Trout Hatchery in New York State, primarily stocking live trout to customers in NY, PA, NJ and CT. Beaverkill trout can also be found at many restaurants. The hatchery raises Brook, Brown, Rainbow, Golden Rainbow and Tiger Trout, from our own broodstock. There are three sets of concrete raceways and 25 earthened ponds on the property in which the trout are raised. Some of our future plans are to build more ponds, expand our food fish operation and build a new office, roadside stand, and cleaning facility. The hatchery welcomes visitors as well as customers, for their Fish and Pay pond and roadside stand selling fresh and smoked trout which is open weekends April to Labor Day 8 AM to 5 PM. —Sherry Shaver

was created as a value-added idea to branch off of our 100-cow family dairy farm. We are located three miles outside of the town of Walton, NY in Delaware County on County Route 21. We have always had the desire to open a small old fashioned farm market on our farm, and offer people the option to truly see where their food comes from that we have in our market. We started by selling our fresh eggs and have kept expanding from there, raising our own meat chickens, turkeys, pork and beef. We also have our own on-farm creamery where we process the milk from our beautiful dairy cows and bottle fresh creamline milk (milk the way it used to be with cream on the top) and chocolate milk. A few years ago, we added making old fashioned ice cream which is made entirely on the farm from our cows’ milk. We also are now making fresh soft cheese in a variety of flavors. We are trying to continu-
ously add new products to our market based on our customers’ requests. Eating healthy is something that many of us embrace, and we do our best to provide healthy all-natural products for everyone to enjoy. In addition to our meats and dairy products, we also offer seasonal vegetables, baked goods, jams, homemade soaps and candles, local honey and maple syrup. We are open seven days a week, 365 days a year for the convenience of our customers. We also welcome wholesale customers. IN 2015, A SMALL COOPERATIVE GROUP purchased land in Walton, NY with the intention of building a peaceful, socially-engaged and resilient farm operation based in regenerative agriculture and ecological living. East Brook Community Farm is just that! We at East Brook mindfully manage and care for our diverse 90+ acres and are restoring the existing barns and farmhouse. Now entering our fifth growing season, we supply delicious vegetables from our two acre no-till garden, and eggs from our pastured hens through CSA, farmers’ markets and wholesale. The Community Supported Agriculture model encourages consumer-to-food relationships through transparency and participation. Our members understand how their food is grown through open communication with us, and through helping out on the farm. CSA membership encourages community through interaction with other members during CSA share pick-up, and the opportunity to participate in potlucks, work parties and educational workshops on the farm. Our CSA members aren’t the only visitors to the farm. We host many workshops, educational events, community workdays and farm-stays. Receiving visitors, teaching and community building are a natural part of our culture here. We have hosted hands-on workshops on a lacto-fermentation, garden bed building, and pasture health assessment
that attracted folks both locally and regionally. We also have work-stay opportunities that bring people from other countries. This year, we plan to boost the agritourism that we find so fruitful for ourselves and those who visit East Brook, with new educational opportunities and events. We will be offering at least five workshops this season including herbal plant walks, regenerative land design, gardening, and food preservation. There are so many ways that people can be a part of building wider community through interacting with our little community here at our farm. Integral to our success is our relationship with Pure Catskills. We also believe that “It’s all about connections!” We have become a part of the thriving agricultural network of our region by connecting with Pure Catskills. Our CSA members, customers and visitors know that we care about being part of improving the economic viability of our local community. East Brook Farm nourishes this community through regenerative farming and education. We’re so delighted to be a part of Delaware County’s healthy ecological and human community. EAST DURHAM FARMS is a four season roadside farm stand. We sell our own pasture-raised eggs, pork, chicken and seasonal produce. We also have our own bee apiary, small apple orchard, blueberry patch and cut your own flower gardens. We started in 2008 with a run down barn, overgrown fields and a dream. We started by saving our beautiful barn which now houses our farm store, and cleaning up the fields to grow produce, fruit trees and berry bushes. Taking back the land is an evolving process. We started with and continue to use cover cropping, and the application of compost and organic soil amendments to improve our soil. When you visit East Durham Farms you are able to see a working farm and are encouraged to stay a while and walk around. We have picnic tables for you to bring and enjoy your lunch. You and your family can enjoy walking around and seeing the farm animals and the beautiful views of the Northern Catskill Mountains. While walking around the farm you will see our Tamworth and Berkshire pigs raised in wooded pasture. Our egg laying chickens foraging on pasture and laying eggs in their very own chicken tractors. The cows are out grazing on open pasture and enjoying the fresh air. In season, you can view our Salatin style chicken huts which
house our meat birds. We move these huts daily onto fresh grass so the meat birds can forage on natural grasses and insects in addition to their regular diet. After July you will see our turkeys raised in these movable huts as well. We are farmers first and foremost. People wanting to see where their food is grown and where the animals they consume are raised is a developing interest. That is all on display when you visit our farm and we are happy to show you. Being a member of Pure Catskills has helped expose us to more people who come out and enjoy our farm and then return with other friends and family. The barn and our farm store are the center of our operation. You will find the products outlined above in addition to other locally sourced cheeses, jellies and jams and maple syrup. We carry Harney organic teas and juices for you to enjoy while visiting. Our family and friends all enjoy our unique farm experience and you should too. MIDDLEFIELD ORCHARD
MIDDLEFIELD ORCHARD
is a 128 acre U-Pick orchard and farm located within minutes of the Baseball Hall of Fame in Cooperstown, NY. Out of town visitors and members of our local communities have made Middlefield Orchard an agritourism destination. The orchard is open for picking starting the first week in July through the first Saturday in November from 9 AM to 5 PM, Monday through Saturday. In mid to late June, strawberries come into season followed by fresh raspberries and blueberries. There is nothing tastier than picking your own fresh ripe berries. During the apple harvest, starting in late August through October, 28 different apple varieties and multiple pumpkin varieties are available for your picking pleasure. We love to see the joy of children, youth and adults revel in nature by picking their own fruit. Free family fun activities include a hay ride, a corn maze, a hay fort and a cornstalk teepee.
Our country store carries our own farm’s produce, jams, jellies, preserves, applesauce, pickles, salsa and honey. Fresh cider and cider donuts are always an attraction. Our farm store is open throughout the U-pick season, and every Friday and Saturday during the month of November. Orders and requests outside of that timeframe can be scheduled for pick-up by calling (607) 547-8212. In addition to our fruit harvest, 35 acres are dedicated to producing and harvesting fresh vegetables. Fourteen plantings of sweet corn help us to sell locally grown sweet corn from mid-July through early October, weather permitting. Freshly picked broccoli, tomatoes, onions, shallots, squash, cucumbers, mixed greens, cauliflower, peppers, peas, beans, and many more vegetables are available throughout the season. Middlefield Orchard started in 2004 as a retirement project that kind of got out of hand. The more our customers requested, the more we planted and produced. We continue to invest heavily in developing our infrastructure in order to satisfy the requests of our customers. As a farm, we participate in the Cooperstown and Oneonta Farmers’ Markets every Saturday throughout the year. COLD SPRING FARM COLD SPRING FARM is a family-run vegetable, greenhouse and field crop farm nestled in the small hamlet of Lawyersville; owned and operated by the Prezorski family. Lenny started the farm in 1987 with one acre of vegetables, sold on a small wagon on the front lawn. Today, we farm 35 acres of vegetables, 50 acres of hay, 40 acres of field crops and an acre of strawberries. In 2009, we put up our first of three greenhouses and expanded into the flower business with annuals, perennials, vegetable transplants and herbs. We just love what we do, and our expansion is the result of wanting to grow more, try new things and build a healthy life for our children. Our greenhouses open at the end of April. It is an exciting time of year when spring has just begun, and we can open our doors with baskets and planters in full bloom. Whether you are someone that likes to start your own garden and watch it grow or you want instant gratification with lush plants already arranged, we make sure we have something for everyone. In June, it’s strawberry time! Picked fresh each morning, our strawberries are bursting with sweetness. By mid-July, our farm stand is open and fully stocked with freshly
picked vegetables. We pride ourselves on the quality of our produce. It is all hand-picked at the peak of flavor, washed and graded so that it is ready to eat. It makes our day when someone new stops in because they have heard how sweet the corn is or how good the tomatoes are. September is our favorite time on the farm. With many of the summer crops still producing, we start harvesting our fall crops. Pumpkins, squash and gourds. After all these years, we still love growing a crazy selection of fall ornamentals. sunnycrest ORCHARDs SUNNYCREST ORCHARDS is nestled at the north end of Schoharie County in the quaint mineral spa town of Sharon Springs, NY. This 75-acre farm has grown orchard fruit and field crops since the early 1800’s and continues to grow today with an acre of growing greenhouses, garden center and farm market open March to December. Tim Schilde and Laure Schmitt, a brother/ sister team, bought the family business from their parents in 2013 carrying on the legacy their parents had built since 1975. As the business grew, so did our focus on growing our crops. Our mission statement is to produce and grow products with personal and conscious care. In 2014, we launched our trademarked brand Sharon Springs Farm Girl Vinegar. Our all-natural, small batch artisanal apple cider vinegars are made here on the farm. It is available for tasting and sale year-round, and sold on our website. Being from a farming family, we have learned to waste nothing, and this begets our vinegar making story. Apples store well in a refrigerated unit, but by spring they dehydrate and are no longer marketable. We take these apples and grind them in our 90-year-old antique mill and repurpose them into juice.
The cider goes into bulk tanks where it ages up to two years. While aging, cider goes through the process of fermentation to vinegar, during this process it produces mother, the organic material that contains enzymes and minerals. When ready, it is bottled without removing the mother or filtering the product. We sell raw all-natural unfiltered vinegar as well as infusions. Our infusions are made with herbs and/or berries grown on the farm or locally sourced, thus adding flavor and beneficial elements. We also age vinegar in repurposed oak barrels previously used in local distilleries. Our favorite infused blends of honey and vinegar use raw, locally sourced honey. These drinking vinegars make a great daily tonic and also a refreshing drink when added to club soda or teas. Switchel is a drink made using vinegar and water and a Shrub is made by using vinegar and spirits. We are proud and honored to be members of Pure Catskills.
