About Pure Catskills Pure Catskills is a regional, buy local campaign developed by the Watershed Agricultural Council to improve the economic viability of the local community, sustain the working landscapes of the Catskills and preserve water quality in the NYC Watershed region. ABOUT THE WATERSHED AGRICULTURAL COUNCIL The Watershed Agricultural Council (WAC) works with farm and forest landowners in the New York City Watershed region to protect water quality on behalf of nine million New York residents. The WAC uses Whole Farms Plans, Forest Management Plans and Conservation Easements to help farmers, forest professionals and private landholders address water pollution concerns on properties located in the Croton and Catskill/ Delaware Watersheds. The Watershed Agricultural Council’s mission is to promote the economic viability of agriculture and forestry, the protection of water quality, and the conservation of working landscapes through strong local leadership and sustainable public-private partnerships. elcome to the 2021-2022 Guide to Pure Catskills Products, your one-stop source for where to eat, drink, shop, stay and play in the Catskills! The pages of this publication showcase over 300 farm and forest-based businesses, restaurants, local artisans, other nonprofit organizations, activities and accommodations located throughout Delaware, Greene, Otsego, Schoharie, Sullivan and Ulster Counties in New York State. I don’t know that I am able to adequately describe the collective of our local heroes that these 72 pages represent. This issue of the Guide means a bit more after the year we just had and the road to recovery that we are now facing due to the COVID-19 pandemic. What we have lived through and witnessed here in the Catskills has been unprecedented. A new wave of homeowners, business growth and expansion, farming and local food purchasing becoming the standard, and a community of unwavering strength. This year we have featured just some of those stories including Albano Farms’ new farmstand, where you can purchase not only their meat products, but other local farmers’ products as well. Diehl Homestead Farm, a sixth generation farm that is now offering raw milk along with many other products. The story of JJF Farm LLC, a Watershed Agricultural Council pilot farm that has been a member since the beginning of Pure Catskills and has diversified to not just offer Angus beef, but also pork and chicken. Covered Bridge Farm Market, a vegetable operation that has grown to become a fall fun destination location. Rosehaven Alpacas, where you can purchase locally sourced and grown fiber products and watch alpacas roam. Weinland Farms whose cows grace our cover, and Angus beef can be found at local farmers’ markets. And lastly, Johnk Farm where a young farming couple have found their niche raising pigs and more. I can say with absolute certainty that I have never been more proud of the work we do. I am so thankful to our farmers, growers and providers who have keep food on our tables, small essential businesses that make our region, our growing Pure Catskills community, and I am especially grateful for this beautiful place we get to live, work, breathe and be. ALBANO FARMS G

IN 1938, OUR GRANDFATHER, Silverio Albano,

moved from Ponsa, Italy to the Bronx, NY to live with his aunt where he worked construction. He married Rose Scotti and they had two kids, Frank Sr. and Joe Albano. As the kids got older, he decided he wanted to raise his children in the country. They moved to upstate NY, and on January 1, 1960 he purchased a farm in Grand Gorge. It was a 145 acre farm with a total of 57 animals. Frank Sr. and Joe worked the farm with their father, Silverio, until about 1985 when his grandchild, Frank Jr. started helping around the farm. In 1997, Marc, another grandchild, graduated high school and decided he wanted to be a part of the family farm. In 1998, the Albano boys looked to expand and purchased a farm in Stamford, NY. Joe Albano retired in 2015 from the farm, and Frank Sr. passed away in 2015 leaving Frank Jr. and Mark to run the family business. Today, the farm still resides in Stamford where they have 2,000 acres of crop land,

a total of 850 cows, 70 goats and sheep, and 40 pigs. The family always raised their own meat. In 2019, the great-grandson, Chris, decided to start selling meat on the family farm. Being a part of Pure Catskills has helped our business by advertising and has helped us gain customers that will be customers for life. We started selling meat and other items in 2019, and Pure Catskills helped us get our name out to consumers and really helped us start moving product. With us being a part of Pure Catskills it helped new customers be confident that our product would be quality and fresh as we promised. We are always happy to give our customers tours and take the time to describe how there food is made and where it comes from. —Frank Albano Jr.

COVERED BRIDGE FARM MARKET (CBFM) is

a family owned and operated seasonal roadside farmstand located near the Susquehanna River in Unadilla, NY. What originally began as selling just a few dozen ears of corn in 1976 by Dave and Cathy Johnson, has transformed into the ‘go to’ place for sweet corn and vegetables and is now owned and operated by Derek and Erin Johnson, and Luke and Janette Johnson. The four of us graduated from Cornell University with degrees in animal (dairy) science because our first passion lies in the dairy industry and the Holstein cow! Yearround we tend to our 300 dairy cows, milking 125 of them three times a day! We grow a majority of the feed they consume, and also produce hay for other local farms. And when we have time we enjoy showing and watching our children (Braeden, Xander, Logan, Bailey and Sadie) show cattle at local, state, and national levels! Joleanna Holsteins has seen success year after year! In 2014, we bought CBFM from our parents who put a lot of love and hard work into growing this business. Though we had young children at the time, we knew that being a part of our community

in this way was something we wanted to continue. While we really enjoy working with our hands and working out in the fields, we absolutely love getting to provide the community with wholesome fresh produce, educating the consumer on where their food comes from, and just interacting with everyone who truly appreciates the work we do! We currently grow about 35 acres of sweet corn, ten acres of pumpkins, and five acres of vegetables. Most of the varieties we grow have been favorites for many years but we try to add in a few new varieties and even new veggies each year. Over the last few years we’ve added products from other locals including milk, cheese, beef, pork, breads, pies and apple cider. In addition to all of this, we continued to host many school groups every fall, and we began hosting Unadilla Rotary’s Annual Autumn Fest. Pure Catskills has really been a benefit to our farm especially this past year through the pandemic. THE DIEHL HOMESTEAD FARM is a multi-generational family farm nestled in the beautiful hills of Callicoon, NY. The first Diehls settled down on the homestead in 1842. The youngest family members, found at the farm today, are sixth generation, with three generations working the farm. Adam manages the operation and is helped by many family and friends to get all of the work done. His parents Alice and Pete help customers in the store. Adam’s daughters Michaella, Karlee and Ashley and niece Shelby help him with all of the farm work. Each farm day includes milking and caring for a small heard of Holsteins Cows. Throughout the farms’ history we have always milked cows. This is a tradition we fight to hold onto in an economy that does not financially reward dairy farming. Recently, Diehl Homestead Farm obtained a license to sell raw milk directly to customers. Now, customers can bring us their own containers or they can purchase a container from us and we can

bottle fresh milk for you while you wait. Another high demand item at the farm are our fresh brown eggs. There are over 500 lovingly cared for chickens laying eggs. Eggs are gathered each morning and are soon gone due to their popularity. The farm offers an annual Maple Open House in March. This much loved event is free to the public to attend, watch and learn how real maple syrup is made. The Diehl Family enjoys sharing the age old tradition of sugaring with everyone. It is a great event for family and children. Pancakes with fresh syrup are served all afternoon. Adam’s wife, Annette makes sure that maple cotton candy is enjoyed by all. The Diehl Homestead Farm welcomes visitors each and every day, from sunup to sundown. Customers come from near and far to shop a variety of maple products, raw honey, eggs, organic chicken and raw cow’s milk. Miller is an old name in Bovina, with the first Miller, David, arriving around 1815 from the Scottish Borders. Millers owned, resided and/or leased on Miller Avenue from 1832 to 1973. Mil ler Avenue is a 1 1/2 mile town road connecting Bramley and Lee Hollow to County Route 6 and the Bovina Center hamlet. In 1832, William Miller, the brother of David, took a lease on a section of land, approx. 144 acres from Edward P. Livingston. His rent included 20 bushels of wheat, two fowls and one day riding (basically a day of labor on the Livingston estate). In 1859, Miller purchased the property from Livingston’s heir, Louisa Livingston for $575. In April of 1862, the property ownership fell to William’s sons, William Junior and Berry Shaw Miller. The property descended through to Berry Shaw Miller’s grandson, Mural 0. Miller, who was a second cousin of Anna Bell Barnhart LaFever. In 1973, it was sold out of the Miller family until 1999 when it was purchased by Duane LaFever, a third great-grandson of William Miller and grandson of Anna Bell Barnhart LaFever. Duane and his wife Karen, along with their two sons, Cody and Cullen, continue an ancestral family tradition by producing maple

syrup on the 104 acre property. Remnants of the original sugar house foundation can still be seen today, as well as the barn, and rock foundation of what was an old home. Daffodils still come up in the spring around the foundation stones. From the 2450 taps on the property, Maplewood Farm & Orchard produces 100% pure maple syrup, maple candies and smooth as silk maple cream, as well as many other delicious products such as peppered maple mustard, maple apple pumpkin spread, candied nuts, granola, lollipops, cotton candy, oatmeal and buttermilk pancake mixes. Karen hand-makes these products in her certified Confectionery Kitchen and Gift Shoppe in Delhi. In joint production with maple products, the LaFevers also tend an apple orchard. There are 25 varieties to pick including Macintosh, Macon, Honeycrisp and Wellington, just to name a few. The sugar house, pumpkin and apple orchard U-Pick are open weekends 10AM–4PM from September 18th–October 12th 2021. Maple Weekends are on hold due to Covid. Appointments are available for visits and purchasing of maple products.

THE JJF FARM STARTED as a dairy farm in 1964.

In 2005, we decided to switch to beef. We are located on Route 23C between the Hunter and Windham ski slopes. Seeing the potential for direct marketing, we decided to start our own farm store to sell products produced on our farm. We decided to go with Angus cattle. They are known for their ease of calving, fast finishing, and marbling. Over the years we have figured out just the right process to get beef that is high-quality and consistent. There are many challenges along the way to that perfect steak, but is well worth it. We opened our store in 2009, and grew slowly adding cattle and acreage. Today, we have over 200 head of cattle and market everything through our store. Our beef is pasture-raised,

grain-finished, hormone and antibiotic free. We have since added pork and chicken. You can see our chickens out in the chicken tractor all summer long, grassing on grass and bugs. All of our meats are cryovac and frozen. We have been Pure Catskills members since the beginning and take great pride in being a member. We have certainly benefited from more business and we are constantly recommending other members for products we don’t carry. People like to come and see the animals, especially the cows with calves. Our guard donkey Wilbur is also a big attraction and if you are lucky, you can get to hear him bray. Our hours are from 9 AM–5 PM, Thursday through Monday. —John & Beth Verhoeven

an adventure into farming solely in 2013 with a few pigs and a couple dairy cows. We quickly realized we needed a niche, and got into the Berkshire breed of pigs due to their excellent meat quality. In 2015, we purchased our property in the northern Catskills. Originally, we planned to start a micro-dairy, but Becky was diagnosed with Ankylosing Spondylitis and it changed our goal. The farm has undergone several transformations to get to the point it is at today. Part of owning a farm is figuring out what does and doesn’t work. Currently we have a growing beef herd, a breeding herd of Berkshire sows, and a registered herd of Pygmy goats, and make all of our own hay. Currently we market 48 market hogs and eight steers a year, and those numbers continue to grow. We focus on high-quality animals fed right. Our cattle are rotationally-grazed and fed a mixed diet of pasture, hay, and grain. The Berkshire pork are fed a grain-based diet grown on local farms. The ani-

mals are marketed through direct sales as well as 2020’s addition of a self-serve farmstand. The farm is located at 4037 State Route 81 in Greenville. The farmstand is open daily dawn to dusk. Currently we are not offering walk-up tours, but tours can be scheduled by contacting Becky at becky@johnkfamilyfarm.com. We continue to focus on improving genetics and the land which is our single biggest asset that must be left better than we found it for future generations. We want a successful business that our young daughter Lorraine, who has a love of animals, can eventually become a part of. The future is looking great for us. We have grown the farm to a sustainable level over the past few years. This has allowed us to now focus on efficiency, safety and sustainability to support the farm for future generations. Pure Catskills has allowed us to reach a much larger area. We have been able to connect with other local business so visitors can experience everything the Catskills have to offer. ROSEHAVEN ALPACAS IS LOCATED on a 40

acre farm in Callicoon, NY, in the foothills of the Catskills. We overlook the golf course of the Villa Roma Resort. Located less than two hours from NYC and 15 minutes from Bethel Woods Center for the Arts, the original site of the 1969 Woodstock Music Festival in Bethel, NY. Our Rosehaven Fiber Mill is situated at the gates of Bethel Woods. We started the alpaca business in 2003, in Warwick, NY with Rob’s father. We moved them to the Callicoon farm in 2007. Two alpacas started our herd. We quickly added five more. By 2019, we had over 120 alpacas. We now have about 65 and have one of the Premier Gray Herdsires on the east coast. 23 banners including four Judges Choice Awards. We raise championship and blue ribbon alpacas, with great temperament. We also have pet and fiber boys and girls for sale. They make a great addition to small farms! We train all our alpacas to halter and lead. Great for 4H kids, or kids in general. We got into the business because we fell in love with the alpacas as a stunning, charming ani-

mal. And we have continued to fall in love with alpacas because of their versatile fiber and the possibilities they have as an ecological and sustainable resource. About five years ago we started a fiber mill for fiber enthusiasts that is in Bethel, NY. We make roving, batts, needle felting, popcorn yarn and rug yarn. We knit items for sale at our events, as well as Bethel Woods events and are very happy to be part of the Union Square Green Market in NYC. Love bringing the sustainable fiber world to the middle of NYC! We also include a line of peruvian made luxury apparel. We carry socks, gloves, sweaters. Jackets, rugs, yarn, stuffed animals, wall hangings and felted artwork. We hire knitters and felters in the Catskills. This spring we will re-open to tours of the farm and walking alpacas. Always a fun outing in the sun of the Sullivan Catskills. We are expecting at least 15 babies this spring and summer. Perhaps you will have time to see us at the farm, or at a Bethel Woods event or the middle of NYC at the Union Square Greenmarket. We start our events in the fall. THE WEINMANN FAMILY HAS been farming

in the South Kortright and Hobart area since 1966. We started in the dairy industry producing milk in South Kortright with only 100 acres and 26 cows. After two years, we moved to Hobart where we continued to produce milk on Clove Road as Hilltop Farms and then on Township Road as Weinland Farms. We even did a short stint selling eggs with 18,000 chickens! Our farm grew to 1,000 acres of land and 300 Holsteins of which 140 were milking. This was the perfect occupation and setting to have a family and raise our four children in. However, once our children grew up and left for college and then marriage and their own jobs and families, we sold our dairy cattle. This was in 2003 after 38 years of dairy farming. This left a void on our farm and all of our acres of land. We needed to have animals in our pastures and to use our cropland and barns so we transitioned to a beef farm. Beef was much less labor intensive than dairy cattle and much easier than milking cows every morning and night!

We started with a herd of Herefords and then transitioned to black and red Angus. As more people became interested in the home-raised beef, our customer base and herd size increased. We raise our animals on grass and finish them off without the use of antibiotics or hormones. Grass-fed are also available upon request. This all-natural beef is available by the quarter, half and whole animal or individual piece out of our home on Town Brook Road in Hobart. We have also offered our beef at numerous farmers’ markets and currently sell at other local establishments in the area. We are proud of the tender and flavorful beef that we offer at reasonable prices. Pure Catskills has helped to promote our product and grow our customer base. When folks come to the house or call, I often hear that they heard about us through the Pure Catskills Guide! They feel more confident knowing the source of their beef products and we are glad to serve them. We have met many wonderful people through Pure Catskills and selling our beef which is very beneficial to our farm, land and our family. —Allan & Linda Weinmann
