Community is the root from which the Pure Catskills initiative started and continues to grow from. Our membership, as shown throughout this Guide, has reached 350 for the first time since we launched in 2004. Pure Catskills has always been a trusted resource for Catskills residents and visitors alike, but more than that, we continue to be a trusted space for businesses (old and new) to be a part of something bigger and to market their work, products and story. It is also a testament to our farmers that grow and produce high-quality food, and to the consumers who value knowing where their food comes from.

Ancestral Family Tradition
Miller is an old name in Bovina, with the first Miller, David, arriving around 1815 from the Scottish Borders. Millers owned, resided and/or leased on Miller Avenue from 1832 to 1973. Miller Avenue is a 1 1/2 mile town road connecting Bramley and Lee Hollow to County Route 6 and the Bovina Center hamlet.
In 1832, William Miller, the brother of David, took a lease on a section of land, approx. 144 acres from Edward P. Livingston. His rent included 20 bushels of wheat, two fowls and one day riding (basically a day of labor on the Livingston estate). In 1859, Miller purchased the property from Livingston’s heir, Louisa Livingston for $575. In April of 1862, the property ownership fell to William’s sons, William Junior and Berry Shaw Miller. The property descended through to Berry Shaw Miller’s grandson, Mural 0. Miller, who was a second cousin of Anna Bell Barnhart LaFever. In 1973, it was sold out of the Miller family until 1999 when it was purchased by Duane LaFever, a third great-grandson of William Miller and grandson of Anna Bell Barnhart LaFever.
Duane and his wife Karen, along with their two sons, Cody and Cullen, continue an ancestral family tradition by producing maple syrup on the 104 acre property. Remnants of
the original sugar house foundation can still be seen today, as well as the barn and rock foundation of what was an old home. Daffodils still come up in the spring around the foundation stones.
From the 2450 taps on the property, Maplewood Farm & Orchard produces 100% pure maple syrup, maple candies and smooth as silk maple cream, as well as many other delicious products such as peppered maple mustard, maple apple pumpkin spread, candied nuts, granola, lollipops, cotton candy, oatmeal and buttermilk pancake mixes. Karen hand-makes these products in her certified Confectionery Kitchen and Gift Shoppe in Delhi. In joint production with maple products, the LaFevers also tend an apple orchard. We have over 500 apple trees. There are 25 varieties to pick including Macintosh, Macon, Honeycrisp and Wellington, just to name a few. The sugar house, pumpkin and U-Pick apple orchard are open weekends 10AM–4PM from September 16th–October 9th 2023. Maple Weekends are the last two weekends in March 2024, 9AM–3PM. Family Farm Day, Sat. August 26th, 2023 10AM–4PM. Appointments are available for visits and purchasing of maple products.

The Kaatskeller was opened in 2017 by Jon Westergreen and Chris Tierney along with the help of a few great partners. Our vision was to offer locally inspired wood fired pizzas, salads, sides and cocktails, to be enjoyed in the outdoors under twinkling lights with the glamour of the bygone resort era and the current Catskills vibe.
Located on Main Street in Livingston Manor, the main building is set back on the property which is very unusual for a main street property and adds to the special ambience.
The menu direction is simple, but stands out with the use of high-quality, fresh ingredients. Many of the ingredients are sourced locally from Pure Catskills members farms and wild foraged. Such as ramps used in our housemade pesto blended with local kale, or Hemlock pine used for an infusion to make our Negronis.
The Kaatskeller is open year-round with indoor bar and dining when weather does not permit outdoor dining. We also offer the venue for private events.

Afterbeing mesmerized by llamas at a nearby farm, I became certain that llamas would be a part of my life. Full of personality: tall with long necks, soft, flowing fiber, large, full, soulful eyes and perfectly shaped banana ears that let you know you’ve got their attention. What’s not to love?
After doing my homework, gathering supplies and prepping the space, I acquired two friendly males. They were beautiful lawn ornaments, curious companions, and easy keepers. Then just like that, two quickly became four, the more the merrier! After some time passed, it seemed to be both logical and adventurous to add alpacas to the group: five charming fiber boys! Cute, compact, fuzzy and inquisitive, my hobby farm was underway.
The fiber from both llamas and alpacas is hypoallergenic, soft, warm and strong. Llamas and alpacas are shorn once a year, and I have their fiber processed at a nearby mill to be used for knitting, needle felting, wet felting and weaving. Some of my Pure Catskills products include felted paintings, ornaments, wet felted soap, all natural drier balls, alpaca 'poo fertilizer, nesting balls for your backyard birds, yarn, rug yarn, roving and raw fiber.
I also have a selection of Fairtrade alpaca products imported from Peru. Fairtrade ensures fair trade terms for farmers and buyers, protects workers’ rights and provides a framework for producers to build thriving farms and organizations. You will find alpaca socks, gloves, scarves, hats, head bands, keychains, pens, stuffed animals and cozy throws.

Maggie owns the building that houses the cafe. This grand old edifice dominates Main Street. Maggie contributes to the community by faithfully sending treats to all the cast and crew of all the high school productions, and all the luminaries who perform at the two impressive theaters in town, and
all the high school athletic competitions. She also sees to it that those less fortunate will always have a decent meal, a cup of coffee, or a doughnut, because it is her pleasure to serve. There are chefs who simply want to cook, but have less impulse to insure the happiness and comfort of their diners. Maggie is not that sort. Her chief impulse is to create happiness. Her skillets and ovens are her canvases. Her perfectly presented meals are her art.
