ABOUT THE WATERSHED AGRICULTURAL COUNCIL The Watershed Agricultural Council (WAC) works with farm and forest landowners in the New York City Watershed region to protect water quality on behalf of nine million New York residents. The WAC uses Whole Farms Plans, Forest Management Plans and Conservation Easements to help farmers, forest professionals and private landholders address water pollution concerns on properties located in the Croton and Catskill/ Delaware Watersheds. The Watershed Agricultural Council’s mission is to promote the economic viability of agriculture and forestry, the protection of water quality, and the conservation of working landscapes through strong local leadership and sustainable public-private partnerships. One of the greatest strengths of this region is the diversity of products being grown, produced and raised by our local farm and food producers. ABBAS ACRES ABBA’S ACRES is a year round family farm where the

Betsinger family work together to create products, tend to animals, sell at markets, and so much more. The beginning of the year is actually our quietest time. Our work load consists of daily chores, winter market, weekend craft venues, and lots of planning. Soaps, goat’s milk fudge, jams and hickory syrup are made regularly to keep stocked up. Garden seeds, baby chicks and baby goats are just on the horizon so final preparations are being made. Maple trees are tapped for maple syrup season. Spring brings life abundantly here on the farm. Our seedlings are started awaiting warmer weather. Baby chicks have started filling up the brooders. Most of our time is split between our Nigerian Dwarf goats who are starting to birth—usually having two to four kids each—and boiling sap to make maple syrup. We have roughly two months to make a year’s worth of maple syrup. Between goat births and syrup making, there are many long days and late nights for all of us. Before we know it, summer is upon us. The barn is busting at the seams with baby goats galore! The moms are ready to

be milked—time for more soap and goat’s milk fudge making! At this point much of the plant life has come into bloom and our honey bees are wide awake and busy making honey. That means we can start stocking up on honey for the markets. Summer is our busiest time on and off the farm. We are rotating all of our animals around the pasture daily, continuing to raise our poultry (ducks, meat chickens, laying chickens and turkeys), milking our whole herd of Nigerian Dwarf goats twice a day, trying to keep the garden weeded and picked for markets, keeping all of our products in stock, and selling at several weekly farmers’ markets. Finally, fall brings a much needed slow down season. Our farmers’ markets wind down as produce dries up in the garden and our weekends consist of craft venues—offering our products to those looking for local, handmade items for the holidays. The animals are brought into their winter housing as the frost puts an end to the growth in the pastures. Before we know it, another year has gone by and we start planning again. —Matthew and Jerri Betsinger

BRAMLEY MOUNTAIN FARM THE BURNS FAMILY

has been farming in Bovina since 1802. For six generations, dairy farming was our way of life. Upon retiring from dairying in 2000, Jack Burns (sixth generation), began to raise Belted Galloway beef cattle. Jack selected Belties because they are naturally polled, small and docile, and can brave the harsh Delaware County winters. But most importantly, Belted Galloways produce exceptionally lean, flavorful and high-quality meat. Today, three generations help to run the farm. Ken and Colleen Heavey (seventh generation), who became involved with the farm in 2005, operate Bramley Mountain Farm with Jack. The eighth generation, Jack Stanton, developed an interest in farming and now assists with the daily operation of the farm. Working together, we keep two Bovina farms active in agriculture. Our Belties eat grass during the pasture season and are fed home-grown dry or fermented hay during the winter months. Steers scheduled for harvest are finished with whole corn or upon request finished with only grass. Our Beltie herd consists of 50 brood cows, 3 bulls and 70 young stock. We also sell breeding stock and have selected our herd sires for superior genetics.

We harvest approximately 22 steers yearly, which we sell by the side or individual cuts from our farm stores, located at 257 E. Bramley Mountain Road and 88 Maple Avenue, Bovina Center. Our Bramley Mountain store is open Saturday mornings, May through October, but customers can call or stop at either location at any time. Additionally, we are always happy to give farm tours, giving customers an inside look at how we raise our beloved Belties. We also provide beef to local stores and restaurants. We are pleased to offer our customers flavorful, tender beef at an affordable price. The success of our farm is owed, in part, to Pure Catskills, who has been a valuable resource. By connecting customers to our farm and improving the economic viability of the area, Pure Catskills continues to advocate for local agricultural products and farming families. We are inspired by the generations of our family that worked so hard to make a living from the land. BROOKSIDE MAPLE AND FARM

is a third generation family owned-and-operated, diversified farm located in DeLancey, NY. We’ve been committed to our community roots and hometown values of dairy farming since 1902 and our family has maintained a tradition of dedicated syrup making and raising our own beef since the 1990’s. Brothers, Matthew and Micah, revived the syrup business, building the first phase of the current sap house in 2008. They proudly represent the third generation of maple sugar makers. They continue to build and expand, and currently have about 3,000 taps. They are utilizing vacuum systems and reverse osmosis technology to increase their efficiency, without sacrificing quality or flavor. The brothers continue to work towards a goal to produce 1,000 gallons of syrup a year. More taps are being added on neighboring properties this season to get closer to that goal. Hereford and Hereford crossbred cows now graze on the old family dairy farm. We started with two bred cows in 2010 and the herd has grown to more than 40 cows, calves and steers. The cattle are grass-fed and finished. Carolyn has had sheep at Brookside Farm since 1997. The current flock of Romney sheep produces a seasonal lamb crop and wool that is processed into yarn, dryer balls and other products.

Chickens and heritage breed turkeys are raised on pasture during the summer as well. Beef is available for custom processing for the freezer by the whole, half or quarter. USDA processed beef and lamb cuts are also available at the farm or at the seasonal farmers’ markets in Delhi, Walton and Andes. The Scobie Family at Brookside Maple and Farm appreciates the opportunities provided by our Pure Catskills membership. Nectar Hills Farm is certified biodynamic and the farm produce a multiple array of products, from meat to vegetables, medicinal herbs, dye plants, baked goods, apple cider vinegar, Fuego cider, apples, berries, fermented hot sauce, sauerkrauts, pesto, hummus, honey, medicinal teas and fiber goods, that include wool, sheepskins, goat skins and cow hides. Dave grew up in a small farm in Connecticut, He is a musician and has done deep spiritual studies in Maha Kundalini Yoga, Chinese Qui Gong, Martial Arts and Anthroposophy. Sonia grew up in Madrid, Spain were she studied fashion design then moved to New York in 1990 to study Kathak dance and multiple movement techniques. She also became a self-taught artist. We had a vision of protecting our piece of Mother Earth for future generations, and we believe that the food you eat and the clothes you wear are key in countering the indus-

trial, corporate, toxic agricultural and destructive capitalist/consumerism models. More inspired than ever about our jobs and the farm, we are planning to refine and channel all the diversity we have created into a more sustainable, creative model that would include the local and global community to interact and participate in the life of the farm. We are planning on developing a program for eco/health tourism, opening our doors to teachers and healers to share and teach their knowledge. Another big focus for the farm is to become a center for creative exploration and sustainable craft practices and for that the cultivation of indigo, the green leaves that made blue colors, would be a project for 2020. We would like you to question your individual choices and reduce your reliance on chemicals and disposable consumption, by encouraging a cultural shift back to the traditions and principles of a more natural, sustainable, mindful way of life. THE ROGERS RANCH was established by the husband

and wife team of Brian and Rachelle Rogers. We are a small apiary and honey producer located in the Western Catskill Mountains in Hamden, NY. We started our beekeeping adventure in 2015 planning for it to be a small hobby, but after a few short years, we have grown and are now able to share our sweet success with you. With 10–20 beehives, our weekend and evenings are busy, consisting of weekly hive inspections, swarm management, colony health, mite management, honey extractions, bottling, labeling and markets. We take great pride in the gentle care and handling of our honeybees and the harvesting of the honey. The extraction process is quite simple. The capped frames of honey are removed from the hive, leaving more than enough honey for the bees to over-winter. The wax caps are cut and removed from the comb and the frame is spun to extract the honey. Once extracted, the honey is simply strained and put directly into bottles. Our honey is never heated or filtered. We offer three seasonal raw honeys: Spring, Summer and Fall. Spring honey is light and sweet, with floral and fruity undertones, made from the nectar of white clover, dandelion, apple and other spring blossoms. Summer is darker than spring honey and less floral. This honey is sweeter and made from the nectar of summer wildflowers such as clover, echinacea, milkweed, trefoil and loosestrife. Fall honey

THE ROGERS RANCH is dark, rich and more full-bodied, made from the nectar of goldenrod, Japanese knotweed, and other fall blooms. We began offering creamed honey in 2019. Creamed honey contains a large number of small crystals, which prevents the formation of larger crystals that can occur in unprocessed raw honey. This makes it easy to spread on toast or on cheese and crackers (our favorite way to eat it). We also offer a limited amount of cut comb honey throughout the season (if we can catch the nectar flow just right). Beekeeping has also left us with an abundance of 100% natural beeswax, which we make available to our customers in the form of candles (tealights, votives and tapers), lotion bars, and lip balms. THE RSK FARM came into operation in 1987 as a dairy

farm. We operated the dairy farm until the year 2000. In 1998, we started growing heirloom fingerling potatoes with Catskill Family Farms to supplement the farms income. In 2002, we purchased the property where we are presently located. Today, we grow a variety of summer and fall vegetables which are sold at our farmstand which is open from mid-July to the end of November and to restaurants in the Hudson Valley. We also attend a farmers’ market in Kingston, NY. We have been a member of Pure Catskills for a number of years. snowdance Farm SNOWDANCE FARM

i was established in 2002 when we moved our two young children to the Catskill Mountains and began farming. It was a way to heal and work together as a family after the events of September 11. At that time our property was not a working farm, so we started from scratch. We had both the challenge of learning how to farm as well as the opportunity to try new farming techniques. We decided to raise livestock and start small. That first summer, we successfully raised 150 chickens on pasture. We fed our family, shared with friends and launched our farm business. Our business strategy was to cater to the restaurant and retail outlets which valued a quality product. Our first sales calls in New York City were a success. Word spread and we were approached by chefs who asked us to raise chickens for their restaurants. Before long, we were raising thousands of chickens on our farm! The chickens are raised in Salatin style tents with movable electric fence. The tents are move daily, and the fence weekly. The pastures are rotated to allow for recovery of the soil. Along the way, we have been blessed with a variety of neighbors’ kids who have worked

on our farm while we were waiting for our own children to grow! Our family farm soon grew to include Tamworth pigs, Icelandic sheep and other poultry. These additional animals serve not only to increase our value to our customers, but also serve to expand and improve our pastures. We experimented with Angus cows on our farm, but they proved to be too large for our limited infrastructure. We still offer beef to our customers, but only in partnership with another local farm which does a much better job of raising cows to our standard. We have also learned from other farmers about growing chickens indoors, which allows us to offer a variety of poultry products year-round. All of our animals are treated humanely, and the animals which enter into the food chain have never received antibiotics, added hormones or any medications. Today, we continue to grow our poultry business and have expanded to include other family farms who share our values, production methods, and the goal of selling exceptional poultry and meat products. ­­—Marc and Susan Jaffe
