Celebrating 20 years of Pure Catskills, welcome to the 2024-2025 Guide to Pure Catskills Products! When the Watershed Agricultural Council (WAC) first began this initiative in 2004, we started with a printed brochure of a small number of farms and businesses in Delaware County. Now, the pages of this publication showcase over 330 farm and forestbased businesses, restaurants, local artisans, other non-profit organizations, activities and accommodations located throughout Delaware, Greene, Otsego, Schoharie, Sullivan and Ulster Counties in New York State.
YEARS
Since 2004, Pure Catskills has played a vital role in creating marketing opportunities for our members by showcasing local products being grown, raised and produced in the Catskills, and connecting consumers directly to the source. Our goal is the same today as it was when this initiative began, to support the economic viability of members, preserve our way of life, create and become a trusted and necessary brand for all things local, and foster expansion of products coming from the Catskills region.
This year we are proud to highlight six small, diversified farms that have been long-standing Pure Catskills members. Gladstone Farms in Andes, NY is a beef farm that has added a farmstand and pick-your-own pumpkins. Horak Farm in Livingston Manor, NY is an organic heirloom vegetable farm that also offers berries, flowers and much more. Hurd’s Family Farm in Mondena, NY is an apple orchard and fun for the whole family. Second Chance Farm in Delhi, NY is a farm focusing on poultry, goats and pigs. And lastly, Weinert’s Elk Creek Farm in Schenevus, NY a beef and CBD farm operation. These featured members, along with all our members listed throughout the Guide, represent the continued evolution of farming in the Catskills and why Pure Catskills is proud to reach the 20-year milestone. Supporting farms and forest businesses, protecting water quality, and preserving the pristine environment of the NYC Watershed region is our way of life. Ancestral Family Tradition
is an old name in Bovina, with the first Miller, David, arriving around 1815 from the Scottish Borders. Millers owned, resided and/or leased on Miller Avenue from 1832 to 1973. Miller Avenue is a 1 1/2 mile town road connecting Bramley and Lee Hollow to County Route 6 and the Bovina Center hamlet.
In 1832, William Miller, the brother of David, took a lease on a section of land, approx. 144 acres from Edward P. Livingston. His rent included 20 bushels of wheat, two fowls and one day riding (basically a day of labor on the Livingston estate). In 1859, Miller purchased the property from Livingston’s heir, Louisa Livingston for $575. In April of 1862, the property ownership fell to William’s sons, William Junior and Berry Shaw Miller. The property descended through to Berry Shaw Miller’s grandson, Mural 0. Miller, who was a second cousin of Anna Bell Barnhart LaFever. In 1973, it was sold out of the Miller family until 1999 when it was purchased by Duane LaFever, a third great-grandson of William Miller and grandson of Anna Bell Barnhart LaFever.
Duane and his wife Karen, along with their two sons, Cody and Cullen, continue an ancestral family tradition by producing maple syrup on the 104 acre property. Remnants of the original sugar house foundation can still be seen today, as well as the barn and rock foundation of what was an old home. Daffodils still come up in the spring around the foundation stones.
From the 2450 taps on the property, Maplewood Farm & Orchard produces 100% pure maple syrup, maple candies and smooth as silk maple cream, as well as many other delicious products such as peppered maple mustard, maple apple pumpkin spread, candied nuts, granola, lollipops, cotton candy, oatmeal and buttermilk pancake mixes. Karen hand-makes these products in her certified Confectionery Kitchen and Gift Shoppe in Delhi. In joint production with maple products, the LaFevers also tend an apple orchard. They have over 500 apple trees with over 25 varieties including Mac, Macoun, Honeycrisp, Gala, Sweet 16, Liberty and Wellington to name a few. At their Fall Festival weekends, children and young at heart can enjoy many activities such as pumpkin and apple picking, hiking, gold and gem mining, roping, pony driving and riding, tractor & horse drawn wagon rides, goat petting & many photo opps. Fall Festival weekends at the sugar house, the pumpkin and U-Pick apple orchard are open, 10 AM-4 PM from September 21st –October 13th, 2024. Legend has it that in 1906 Rudolph Horak came to the Catskills looking for blue stone for NYC’s sidewalks. Realizing that the area would make a great summer escape from the NYC heat for his large family, he bought the land known to the family as “the Farm.” Operated cooperatively by his eight children and their progeny during the summers, they had dairy cows and horses, an orchard, hayfields, and many acres of woodland. It is said that a prize bull was bought at Madison Square Garden and Rudolph’s sons Ralph, Joe and Harold walked that bull from NYC to Livingston Manor, NY using the ferry in Kingston, NY and staying overnight in barns along the way.

Joe Horak, Rudolph’s grandchild, spent summers on the farm in his youth, developing a love for the land that would last a lifetime. Joe bought the Farm from the family in the 1980s. Joe had been in Livingston Manor practicing law since 1963 and raising his family alongside cousin “Doc” Fried’s family, a local physician. Joe and his wife Linda started extensive building improvements shortly after finalizing their purchase, and Joe moved his sizeable beef herd to the Farm.
Since Joe’s passing in 2013, Linda and Heidi concentrate their agricultural efforts on small bale hay, berries, garlic, fruit, and foraged items. They maintain a small farmstand in-season at the corner of J. Young Road and Stump Pond Road, on the top of Shandelee, and also sell to local chefs. The garden and woodlands provide organic heirloom vegetables and wild varieties of many things Catskills including ramps, berries, and mushrooms. Flexibility and creativity are the formula for this small operation, giving rise to local demand for edible flowers, garlic scapes, and unusual fruit woods for culinary smoking.
Heidi likes to say, “The land, the land, the LAND!” as a reminder that stewardship of their 500 acres is the primary focus. The Horaks recognize that large contiguous tracts of lightly farmed land support wildlife, preserve clean water, and store carbon. Their challenges are common to many small farms, lack of good help, flexibility in the face of climate change, and generational transitions.
Horak Farm is private. However friends, neighbors and customers are often invited to look at their extensive flower and vegetable gardens, hay fields, classic old red barn and spring fed ponds. They welcome requests for a visit. But beware; if you are accommodated—they might put you to work!

Horton Hill Farm raises pastured pork, chicken, turkey, free-range eggs, and raw honey. Our pork consists of heritage breed pigs. These types of animals are well suited to being raised on pasture and fresh air. They produce flavorful meats. We run our breeding program to continually improve our meat quality. Our pigs are born and raised here at the farm. Our Cornish cross chickens are brooded until feathered out and then raised on pasture in a system that moves them onto fresh grass daily. The flock of multicolored laying hens roam the farm foraging and produce some of the brightest yolks you will ever see. We raise turkeys for the Thanksgiving holiday. There is nothing better than putting a tasty pasture-raised bird on your family’s dinner table. Bee Pees Honey is our brand of raw honey. All our feeds are custom made locally by the Stamford Farmers’ Cooperative in Stamford, NY.

Our farm was a formerly operating dairy farm that we transitioned to raising poultry, goats, and pigs. We said ‘Yes!’ to the opportunity to move back to the family farm to continue the proud tradition of farming in Delaware County, NY. Our goal was to produce high-quality meat and eggs for our family, friends, and community.
First came the chickens. We bought our first six hens when our kids were young, and as we shared our extra eggs with friends and family, we realized how much we loved producing quality food that we felt good feeding our family. We expanded our flock, and got into the egg business, selling eggs off the farm to neighbors and in local stores.

Raising Freedom Ranger meat chickens came next. They are slower growing and lean, have dark meat and are so juicy. Raising meat birds in the summer months for our BBQs became a delicious must along the way.
As the dairy was winding down, we added Boer goats to offer an alternative meat option to our increasingly diverse community. Goat is a popular and common meat choice in the rest of the world. Goat meat is leaner and contains less cholesterol and fat than both lamb and beef. It can be mild and tender, or raised up for a stronger flavor preferred in some cultures.
Raising goats has been many things to us— rewarding, frustrating, hilarious, and heartbreaking. They’ve taught us the value of a good fence and a sense of humor. They are inquisitive, curious, and easily led into making bad decisions that get them into trouble. They have saved us much work around the farm by being efficient hedge row mowers and all-around weed eaters. We love to watch the goat kids develop their individual personalities and jump and play in the pasture with their mommas in the spring!
As our own family has grown with the farm, our grandchildren come to help us do chores including collecting eggs, and feeding the chickens, goats, and pigs. This family time brings us close together, and it is not something we would trade for anything. Saying ‘Yes!’ to farming is one of the most rewarding choices we have made for our family.
