Welcome to the 2015-2016 Guide to Pure Catskills Products! When we first began this initiative in 2004, we started with a small group of farmers in the Catskills region. Now, we represent nearly 300 diverse farm and forest-based businesses, restaurants, local artisans, other nonprofit organizations and accommodations. gether, we decided to set out on our own and make our farm in Delancey. In 2013 we plowed our fields, got married, and made a baby. We grow certified organic vegetables, fruit, and cut flowers available at farmers’ markets, local stores and restaurants, and through our 30-week CSA. In a short time we’ve established a successful farm and business in large part because of the generosity of our neighbors. Borrowing equipment, trading work, and swapping stories with our neighbors has helped get us through these first years. We chose Delancey as our home because it is central to the burgeoning farm community in the Catskills. This community is made up of other Pure Catskills members and we’re working together to build our farms, our businesses, and this region. We love the Catskills—the lay of the land and its gritty spirit—and we’re proud to farm here. —Eleanor Blakeslee and Patrick Hennebery

of Environmental Protection (DEP) supports and maintains well-managed farms and forests as beneficial land uses in the watersheds that comprise the New York City Water Supply System, especially in the rural Catskills where farming and forestry represent traditional cultural livelihoods. For over two decades, DEP has funded the Watershed Agricultural Council (WAC) to administer and implement voluntary watershed programs that protect water quality in agricultural and forestry settings, promote economic viability of family farms and privately-owned forests, and conserve working landscapes through local leadership and public-private partnerships. DEP’s longstanding partnership with WAC is not only important for protecting the high quality source of water for over 9 million downstate residents (half the population of New York State), but it also ensures the continued availability of farm fresh food and finely crafted wood products to New York City consumers and others. When

downstate consumers purchase local products grown or made in the upstate watershed, this helps watershed farms and forestry businesses to remain economically viable, which in turn maintains the rural landscape that reliably supplies high quality drinking water. For these reasons and more, DEP is a proud member of the Pure Catskills Campaign— our locally sourced product is safe clean drinking water, the majority of which originates from the rural Catskills. could run a goat farm on 3 1/2 acres. We started milking a couple of goats in a small shed in the front yard for our own consumption. Soon the word got out and people started showing up in the driveway with empty mason jars. Neighbors started asking for cheese. Then we finally had that “ Ah hah? “ moment. Maybe other people like this stuff too? So our journey began. . . . We started cutting down trees, filling out paperwork and looking for more dairy goats. The process seemed to take forever, but in August of 2012 our very patient Milk Inspector gave us our license. We started selling at our Andes Farmers’ Market, and a few local stores. One day a farmer at the market recommended joining Pure Catskills. It was one of the best business decisions we’ve made. The Pure Catskills team went right to work by helping me with marketing, brand recognition and being a sounding board for many of my ideas. They introduced us to a great community of farmers and organizations that have helped our business succeed. They promote my products locally as well as regionally. With their help we now send milk and cheese in five counties and Manhattan, we are enlarging our facility and are looking forward to many more years in our partnership with Pure Catskills. —Cyndi Wright & Lester Bourke

I teach Herbal and Aromatherapy Classes and have a CSA share option available. I am committed to providing products that are natural and mostly organic. I don’t use ingredients like petroleum, preservatives, parabens, GMO’s, synthetic fragrances, or stabilizers in any of my products. The Earthly Remedies business started out of necessity and the product line has grown on an “as needed” basis—as in needed by friends, family and customers. Someone comes to me with an issue, or sensitivity or a product that they want me to make. I either already have something or I do some research to find them a natural alternative that will work just as well, or better than typical over the counter products and with less chances of nasty side effects. I’ve been really fortunate that the business has grown the way that it has over the past few years and it just shows me that people are tired of exposing their bodies to chemicals both internally and externally. I think people are looking for more natural remedies that they can use and give to their families without worry. You figure, herbal remedies have been around for thousands of years. They grow naturally in the wild and you can grow some of them yourself rather easily. Sure you have to exercise caution when using herbs, but in comparison to some chemical derived in a lab somewhere, they’re loads better. I love herbs! very important to have people realize the beauty our local wood possesses. There is a hand painted mural eight feet wide by sixteen feet tall of sixteen local trees. I am interested into having the gallery become a learning center for the unrealized wealth of trees that we live with here in the Catskills. Come and take a tour of the gallery and I think you will be glad you did. A true folk artist, if my work had to be labeled it would be contemporary rustic, as I polish everything to a baby butt smooth finish. I have a hand written diary of each journey I take on all of my compositions, and a copy of the diary is included in each sale. Our services are many, as we are able to take a log- saw it, dry it and make it into a piece of furniture for you. Several works are always in progress. is a place to enjoy wood in all aspects. Born September 27, 1954 in Catskill NY, and raised on a dairy farm in New Kingston till the age of 17, Gary Mead started Fruitful Furnishings in 1979 crafting custom furniture, furniture repairs and refinishing. The business grew in 1986 adding a dimension mill, then a 25,000 board foot dry kiln in 1999, and a sawmill in 2002. Ideas of furniture from curved and hollow logs, and funky grained defective wood always caught my eye. In 2007, out of a naturally curved log, the “Xylophone Table” was composed. For the next four years I worked on one-of-a-kind pieces in my spare time, while running the mill. After finishing each piece, they were wrapped up and put in storage until I had enough pieces to have a gallery. I opened the Gary Mead Gallery at the same location in September of 2011 with ten large furniture pieces, and after putting in over 2,500 hours of spare time into this dream of mine. The gallery itself is a work of art, as many local hardwoods and softwoods are in the make-up of the floor. I think it is

of my life in the Catskills, and proudly call it home. Pure Catskills gave me the thrilling opportunity to represent the Catskill agricultural community at Terra Madre, the Slow Food Conference in Italy. The global community of farmers I met there and the many projects I learned about at the conference inspired me to start our café, a chance for our farm to work with other local farms to create something more. Over the past seven years, we have developed the working relationships I sought with other Pure Catskill members for vegetables, fruits, cheeses, milk, and other ingredients that we incorporate into dishes with our grass-fed meats and poultry. The Bees Knees Café now has a life of its own, nestled right in the middle of the farm, in the original farmhouse. We have brought this former dairy farm land back to life, using managed intensive grazing, environmentally friendly methods, and having the animals improve the soils and pastures without use of a tractor. The landscape and the views-

cape are preserved, and the land is more productive than ever. Having a public space like the café allows us to share learning about the farm, the land, the animals and the farm methods with neighbors and visitors, as well as presenting the fiercely local farm fresh food. Our imaginative chef, Rob Handel, offers dishes of farmed and foraged ingredients that let the Catskills’ bounty sparkle. My husband John Harrison and I developed a mission statement when we started Heather Ridge Farm and part of it was to leave the land in better shape than we found it. Farm Winery and Distillery in 2011, it was with a goal of producing quality wines and spirits produced from local ag that our community would be proud of. The business has grown beyond our expectations. In 2014, we moved the majority of KyMar’s operations to a repurposed 20,000 square foot facility in Charlotteville. The move expanded our production capabilities, allowed us to open a tasting room, provide guided tours, and a comfortable environment to allow guests to sample and purchase KyMar and other locally produced agricultural products and beverages. We currently work with seven other local growers to supply the crops we use in our products, and we are proud to have grains for beverage production growing in Charlotte Valley again. We currently produce a Brandy maple infused liqueur, an unaged whiskey and an Eau De Vie and will be adding aged whiskey, brandy, Vodka and three different wines to our product mix this season. The response and community support we have received from our local fans and retailers has been amazing. We can honestly say without the help of the community who supported us when KyMar was just an idea, we wouldn’t be here. The contacts and exposure afforded by our relationship with Pure Catskills has been a significant contributor to KyMar’s growth. It is a wonderful gift to have a thriving community of growers, producers, artisans and customers brought together by Pure Catskills. From local Pure Catskills restaurants making classic cocktails and making cooking recipes with KyMar’s products, to expansion into stores in NYC that heard about us through Pure Catskills’ events, we continue to enjoy success enhanced by the strength of the Pure Catskills Brand and community. The Hub began in 2012 as a means of filling the farm’s weekly truck to NYC Greenmarkets by transporting neighboring farmers’ products to buyers seeking high-quality, source-identified farm products. The Hub has grown with support from the Watershed Agricultural Council, The Center for Agricultural Development & Entrepreneurship, and with funds awarded under the Local Food Promotion Program of the Agricultural Marketing Service, USDA. Today the Hub is evaluating the possibility of a second weekly truck to transport local products. The Hub promotes participating producer products; provides farmer-buyer matching and face-to-face NYC buyer tours; offers educational workshops specific to working with the Hub; coordinates no-cost consulting for producers planning to serve the Hub; and, of course, transports sold products to NYC. The Hub transports some of the most-sought-after fruits, vegetables, dairy products and meats from Catskills farmers and food entrepreneurs. It is no surprise that with smaller intensive and diverse farms comes richer soils, or that the Watershed Region’s clean waters contribute to a truly pure food system. Small farms are a necessary component of a healthy and vibrant regional economy. The Hub enables small farmers to access new markets and expand their farm and viability. along with their three children are honored to be caretakers of the historic property they call home. Maple Shade Farm once a premier dairy farm was settled in 1785 by the Frisbee family. For two locals, a 4-Her and a farm kid the opportunity to move home and renew our roots in the Catskills and agriculture has been an amazing adventure. The growth of tourism, farming, and local food has been timely. We opened Maple Shade Farm to the public in September 2008 hosting agricultural events, school tours, and weddings. An onsite market featured local products from our farm and neighboring farms. Seven years later we are proud to say we host several events each year, hundreds of school children, and showcase 35+ vendors at our markets. Berkshire Breeders since 1998 we raise the heritage breed hogs known for their meat quality and temperament on a beautiful Catskill Mountain hillside. We also raise chickens, turkeys and sell eggs. We grow pumpkins, squash and herbs and offer value-added products like small batch jams, jellies and baked goods. The farm is home to the Taste of the Catskills an annual food, beer and wine festival held on Columbus Day weekend showcasing all the wonderful artisans, products and foods produced in our area. We know how lucky we are to be doing what we love every day and blessed to be able to work alongside family, friends and other farmers. Pure Catskills members since opening we have been fortunate to grow along with the Pure Catskills brand. Resources, marketing and networking have been invaluable to our success and expanded offerings at the farm.
