About Pure Catskills Pure Catskills is a regional, buy local campaign developed by the Watershed Agricultural Council to improve the economic viability of the local community, sustain the working landscapes of the Catskills and preserve water quality in the NYC watershed region. ABOUT THE WATERSHED AGRICULTURAL COUNCIL The Watershed Agricultural Council (WAC) works with farm and forest landowners in the New York City Watershed region to protect water quality on behalf of nine million New York residents. WAC uses Whole Farms Plans, Forest Management Plans and Conservation Easements to help farmers, forest professionals and private landholders address water pollution concerns on properties located in the Croton and Catskill/ Delaware Watersheds. The Watershed Agricultural Council’s mission is to promote the economic viability of agriculture and forestry, the protection of water quality, and the conservation of working landscapes through strong local leadership and sustainable public-private partnerships. A
leap of faith, perseverance and an ounce or two of stubbornness is what helped establish Black Willow Pond Farm in Cobleskill, NY a quaint town on the northern edge of the Catskills. Our farm is a small pasture based farm that focuses on growing livestock and poultry in season and as close to nature as possible. As a proud generational farmer, my commitment here on our farm is to develop a natural and sustainable system that allows my family and our customers an alternative to the foods that make the news in a negative way. My goal is for consumers to have more choices and knowledge in their food purchases, as well as provide an environment full of respect for the animals we raise. Our diversified farm focuses on intense pasture management. Our flock of grass-fed Kathadin hair sheep act as “pasture managers” as they lead the rotation for our grazing system, “mowing” down grasses in preparation for the pastured poultry. The meat chickens and turkeys follow, foraging the pastures and are supplemented with locally grown grains. A large flock of egg layers follow the meat poultry in their egg-mobile acting as our “clean-up crew” as they hunt for bugs and scratch manure, aiding in the fertilization of our lush pastures. Pasture raised pigs and meat rabbits are also grown on the farm and fit into the grazing system on a smaller basis. ovina Valley Farm began its journey in 2000 when I purchased a defunct dairy farm along the Glen Burnie creek in Delhi, NY. What started out as a part time beef and maple syrup hobby has morphed over the years into a 30 cow organic dairy, making value-added cheeses. Maple syrup and a variety of meats compliment the cheese that is sold in the on-site farm store. Bovina Valley Farm products can also be found in a variety of shops and restaurants locally, as well as in the NYC metro area. Being in proximity to NYC and having the farm lie in the watershed has helped the farm to succeed. An ever growing amount of visitors to the Catskills prioritize locally sourced, quality foods and their support gives Bovina Valley Farm a chance to succeed, while staying true to a small scale, diversified, humane and sustainable model of farming. The name Glenanore was chosen in memory of Michael’s Grandparents who once farmed in Glenanore, Waterford County, Ireland. Diverse mixes of heritage livestock share the pastures and pure spring water as they nurture and fertilize the soil. Irish Dexter Cattle are a small, heritage breed who
are easy to handle and walk lightly on the land. Saanen and Nubian dairy goats and Boer meat goats pick and choose as they browse, eating many types of plants the cows leave behind. The Kunekune pigs offer much to the small scale farm as they flourish on pasture without disturbing the soil, dispose of garden waste and love goat’s milk. The laying hens roam freely and are the hardest workers on the place. In addition to providing eggs they act as mini-tillers and diminish the flies and ticks. he story of Foxtail Community Farm began in 2004, when our family moved to Greeneville, NY to build a homestead and farm. We were drawn to the Catskills by its rugged beauty and unpretentious hardscrabble character. In 2006 we offered our first CSA vegetable shares. Ten years later, we are raising vegetables, fruit, eggs, chickens, turkeys, ducks, flowers, honeybees and spring garden seedlings. Everything is raised using sustainable practices. I
have been making beeswax candles in the Catskills since moving to the region from my native Minnesota nineteen years ago. My business, L’ouvriere Candle Studio, has been in operation since 2003 and is housed in the converted barn behind my home in the lovely Charlotte Valley NY, which runs through Delaware, Otsego and Schoharie Counties. My candles are 100% pure beeswax, a glorious material with which to work.The wax is dyed in small batches and then hand poured into molds, many of which are made in the studio from my original designs. Inspiration for new shapes and colors comes from the natural beauty that surrounds my home and studio as well as excursions to junk shops, antique stores and flea markets, all of which abound in the Catskills. Being a member of Pure Catskills has provided me the opportunity to network with other artisans and vendors in the area and to reap the benefits of its promotions via social media as well as the printed annual Guide. —Susan Riesen purecatskills.com

rom the beginning, it was always about food. We started Flaca Vaca Farm with four bred-back cow-calf pairs and now we’re up to 30 head. We are a grazing farm because we want to imitate the ways of nature. All-grass makes a world of difference in how cattle maintain good health and thrive. We rotate our cattle daily during the growing season not just because it’s good “management” but because it promotes health on the farm. The cattle know and they look forward to their moves. The land is activated and aerated, forage grazed to appropriate height, then given time to rest. The rest period allows a larger number of meadow species to emerge, and this in turn promotes habitat for our pollinators and wildlife. Variety, diversity, multiple experiences: these compose the ethic of the farm and runs through everything we do. That we are entrusted to grow other people’s food is great responsibility, an honor and most of all, an incredible joy. We know most of our customers by face and name, and most live within a few miles of our farm. Working with other farms is so inspiring. The camaraderie is great and sharing a common purpose creates a unique community. At the farm store, we get to share other farm’s products with customers which also means connecting them to those farms’ ethics. And, be it farmer or customer, all bring to food their own ideas and their own beliefs echoing the transformative, life-affirming power of food. Ultimately it’s all these hearts devoted to living and sharing in such a beautiful place that makes it all amazing.

he Catskill Brewery makes a variety of fresh ales and lagers from the finest natural ingredients. The brewery was founded with the goal of having a positive impact on the local economy by making great beer that would attract visitors from near and far to the place we love and call home—the Catskill Mountains of New York. Year round beers include a couple of delicious IPA’s - Floodwatch and Devil’s Path, a fantastic pilsner - Ball Lightning, Nightshine black lager (selected by The New Yorker as best draught beer in NYC for 2015), and Freak Tractor—a superb brettanomyces saison. The brewery backs up the regular styles with eclectic seasonals and barrel-aged offerings. We are a renewably powered facility. Every aspect of the design and construction utilized the greenest building technologies, from the porous paving system in the parking area to the green roof. Even waste, such as spent grain from the brewing process, is reused in an environmentally friendly way by local farmers to feed their livestock. The brewery has its own hop fields that will provide internal supply for the brewery and also help promote agricultural tourism in the area. The first hops from our fields will be harvested in fall 2016 to be featured in our critically acclaimed annual fresh-hopped beer- The Local. We are proud members of Pure Catskills and we welcome visitors to our tasting room and to tour the facilities.
