Prior to the Meiji period, a custom had been observed in Japan to eat sweets on the day marking Kashou. Legend has it that the custom originated with the backdrop of an epidemic that had been going around in 848 during the Heian era. Emperor Ninmyo had renamed the period Kashou and performed a ritual with an offering of 16 pieces of beautiful sweets as he prayed for the good health of his people on the 16th day of June. While there seem to be various views on where this number 16 came

from, the 16th of June in the old lunar calendar seems to fall under a full moon, or the sixteenth day of a lunar month during the peak heat of summer. Perhaps the people at the time offered prayer on the night that was brightly lit by the moon when the world was believed to be linked with the other universe, offering delectable sweets to try to ward off evil that would come from the sixteen directions of the worlds. Confectionaries had been believed to soothe the violent souls of

beings from the other world. These types of festivals were conducted in all parts of Japan during those ancient periods when the curses of vengeful spirits had been believed to cause an illness or a disaster.

fter being dissatisfied with the ramen he had taken his family to eat, Mr. Hitoshi Hatanaka was driven to start his own restaurant. In March 1988, the first ever Ramen Santouka was opened in Asahikawa, Hokkaido, with a modest seating capacity of 9 seats and shio ramen on the menu. From the very beginning, Hatanaka wanted to make a ramen that could be enjoyed by all; with a simple soup that could be savored to the last drop and filled with satisfying charshu and superior quality ingredients. With a broth prepared from boiling pork bones, dried fish and other ingredients for nearly 17 hours, Santouka’s ramen is also served at a specific, optimal temperature. Hatanaka’s desire to delight food-conscious high school and college students and sought out an exquisite topping to accompany his famous ramen. He discovered the Iberian Pig breed. Being from there myself, there are a number of good reasons to visit this beautiful place. When it comes to natural sights, Kumamoto will leave you spoilt for choice! Mount Aso is a must visit for fans of natural sights; I highly recommend coming around May, when it is lush, brilliant green. I personally have gone around Mt. Aso often to enjoy the fresh produce of vegetables, fruits, beef and even the soft cream made there. The nearby town is quiet, yet bustling, with many artist who have opened fashionable and delightful cafes, galleries and restaurants! Aside from the national parks, the surrounding area is also host to many

water gushes out every minute from this spring

other activities such as paragliding (my favorite!), fruit pickings, and the famous Kurokawa hot springs! The Amakusa islands south of Kumamoto are also a beautiful sight to behold. I’d recommend the Dolphin watching tours there, which are always enjoyable. When you’re hungry, lots of affordable, fresh kaisen-don are available. We can’t talk about Kumamoto without of course, mentioning Kumamoto castle! Regarded as the symbol of Kumamoto city, the castle is a magnificent sight with impressive walls and elaborate structure. If you visit around late March to mid-April, you can see it against the backdrop of Sakura – which is incredible! There are countless other things to experience in Kumamoto – you have to come and see it for yourself!

Under the initiative by the Ministry of Economy, Trade, and Industry to conserve the heritage of traditional crafts, 218 items have been officially recognized and protected by law as the Traditional Crafts of Japan. The stringent qualifying criteria suggest that a huge significance is paid to the manufacturing process of each product. It must be made not only with primary materials and techniques that have been in continuous use for at least 100 years, but also by hand for each detail—such as the shape, design, and texture. The materials should be environmentally-friendly, 6

instead of synthetic. These items are not to be confused with artwork that has a main purpose that lies in aesthetics expression because they are frequently used in our daily lives. For example, the yoghurt pottery cup, made with clay from Mt. Shodai in Kumamoto, reflects the functional sturdiness of Shodaiyaki, a highly-revered pottery craft with more than 400 years of history. From the Tenpyo writing brush of Nara Prefecture to the metal-cast tea kettle from Iwate Prefecture, every designated item must be produced by an established local industry of that particular region. Encapsulating the essence of Japanese culture, these timeless traditional crafts continue to color our lives and many more generations to come.

[Cooking] 1. Boil approximately 2 litres of hotwater, with 1 ¼ (about 20g) tablespoons of salt added. Once boiling, add in the spaghetti. After boiling, cook the spaghetti on a frying pan on a low flame. Cook according to the package instructions; normally about 1 minute or less.

Tadasuke Tomita His passion for cooking is so great that he quit his job at a big company to study at a culinary school, and became an apprentice at an authentic high end Japanese restaurant. Currently, he is working with a product development department of a Japanese processed food maker, while managing a personal website introducing traditional Japanese home cooking recipes. As his other hobby is photography, all the photos on his website are his own works.

2. Cut off any hard tips from the mushrooms, and slice them into the desired portion size. Cut the bacon into strips of 1cm in width, and prepare the garlic by peeling off the skin and flattening each piece (such as using the flat side of a kitchen knife). The spring onion should also be finely chopped. 3. Put 2 tablespoons of olive oil, as well as the garlic into a frying set at low heat. Set for 3 – 4 minutes, letting the aroma of the garlic transfer to the oil. Remove the garlic once it begins to change in colour. Fry the bacon lightly, and gently saute the mushrooms. If desired, mix in 2 tablespoons of hot water. 4. Once the spaghetti has absorbed sufficient moisture, transfer it to a frying pan. Add 1 tablespoon of butter, and 1 tablespoon of shoyu, and mix it well with a pair of long chopsticks. Serve on a plate and garnish with spring onions and shredded nori.

Yakitori

Yakitori literally means “grilled bird”. Known to Singaporeans as the Japanese version of satay, its name is derived from the fact that while it is usually chicken, wild birds such as sparrows were also used to make the dish in the past. The simplicity of yakitori, bite-size pieces of meat (niku) on skewers (kushi) grilled over charcoal flames (sumibi), has given rise to a great number of variations. For example, in place of chicken, it is not uncommon to find skewered beef (gyuukushi) or pork (butakushi). There are also “vegetarian” versions of yakitori such as spring onion (negi), onion (tamanegi), mushroom (shiitake), deep-fried tofu (atsuage) and Japanese green pepper (shishitou). Furthermore, for people who want the best of both meat and vegetables, there are even interesting and surprisingly delicious combinations such as negima (alternating pieces of chicken and spring onion; also known as hasami), enokimaki (enoki mushrooms wrapped in pork slices) ikoma.pdf 1 5/17/2012 7:56:52 PM and asuparabekon (asparagus wrapped in bacon). Despite its unsophisticated appearance, making good yakitori demands a high level of skill and considerable amount of experience. There is a saying that goes “Kushiuchi sannen, yaki isshou”, which literally means that it takes three years to master the way of skewering (so that all the pieces of meat are grilled evenly) and a lifetime to perfect the art of grilling.
