It has become customary to eat sweets made with koshian in spring, when the red beans are passed through a sieve to achieve a fine texture as their skin becomes hard six months after harvest. In autumn, they are eaten whole, including the skin, to enjoy the flavor of the new crop.

An equinox occurs twice a year, once in spring and again in autumn. The ancient people of Japan believed that at those times when day and night became equal in duration, the world would be linked with the afterlife. People observed the spring equinox and the equinoctial day of autumn and held Buddhist rituals to honor the deceased for about a week on both occasions. Today, these rituals remain a part
of Japanese life. Offerings of sweets are made from cooked rice and glutinous rice, kneaded lightly and wrapped in sweet red bean paste, called anko. The offerings in spring are called botamochi, named after seasonal peony flowers, and in autumn they are known as ohagi, taking the name from the Japanese bush clover. The botamochi is made with koshian, or smooth anko red bean paste, and ohagi is made with whole-bean tsubuan paste. People eat this ohagi
together with the spirits of their ancestors and offer their thanks for the harvests of the season.

Kabuki is one of Japan’s most popular forms of traditional performing art. Written as 歌 舞 伎 , it literally means “The Art of Singing & Dancing”, what an appropriate name! Highly stylized and exaggerated, Kabuki started in 1603 and was traditionally performed entirely by men, with actors even playing female roles. Kabuki went through several periods such as the ‘Golden age’ of the Genroku Era and the Second World War, and was also banned on a few occasions before evolving into the art form we see today. Today, Kabuki is more vibrant than ever; bold actors give new spins to classic roles and writers create new sub-genres and modernizations on classics. It is these factors that have made wagyu beef an undeniably irresistible delicacy all over the world! But what makes a good slice of wagyu beef?!
Derived from the words ‘WA’ ( 和 ) and ‘GYU’ ( 牛 ), ‘wagyu’ is a term used to describe cattle bred in Japan or with specific Japanesecattle. With their meticulous and careful breeding, wagyu is world renowned for its intense marbling; the distribution of healthy fat; as well as its tenderness and flavor.
AGING Perfecting the flavor of wagyu meat! A process used to give meat extra tenderness as well as to enhance their flavor. Aging comes in 2 different types; ‘Dry’ and ‘Wet’ Aging. Dry-Aging involves hanging cuts of beef in open air under a controlled temperature. It is left to age over several weeks, then having the surface meat trimmed
off before being sold. This results in meat that, while more costly due to wastage, has extra tenderness and flavor. Wet-Aging is a newer technique that has cuts of beef vacuum sealed in plastic before being shipped to markets. It then ages during the transit, producing aged meat in a shorter period of time.
GRADING Knowing what makes a great piece of quality wagyu!
The quality of wagyu beef is graded from A1, to the best being A5, by various factors: The Yield Grade (the proportion of meat obtained with a cut), Marbling (the flecks and strips of fat in the meat), the firmness & texture, and the color, luster
and brightness of the meat & fat. Each of these factors are additionally individually rated, which determine the overall grade of the meat. A5-grade wagyu beef is amongst the most sought-after in the world!

Aging does several things for meat; it exposure the muscle to moisture, resulting in a more concentrated flavor of beef. It also activates the beef’s natural enzymes to break down the connective tissue, causing it to become tenderer. This is why such aged beef costs more – but also tastes great! Dry-Aging is a timely process that produces great results!
Wet-Aging has become the dominant aging method of meat over the past several years. Taking much less time to achieve and resulting in far less loss of meat, wet-aging is economical and efficient and more commonly found in steakhouses and markets.

Fried Eggplant & Capsicum with miso
Do you love Japanese food? Here are some popular home recipes that will never fail to delight family and friends.
[Cooking] 1. Start by removing the seeds from the peppers then slice into thin strips. Cut the eggplant into bite-sized pieces and soak in a bowl of water for about 5 minutes to clean away any dirt particles. Cut the sliced pork ribs into size that are easy to eat.
2. Before cooking, prepare the seasoning. Add the miso paste, sugar and mirin into a bowl, and mix them together.
With a full and hearty miso-flavour, this dish is best served with white rice. When paired together with pork ribs, this dish is a staple of most Japanese households!
3. Put some oil into a frying pan and heat it up under a medium flame. Begin by lightly cooking both sides of each piece of pork rib, and then adding the eggplant. Stir fry the eggplant, periodically to ensure that it is evenly cooked, and add the peppers once the eggplants’ surface begins to change in color.
