Doyo days occur four times a year and refers to the 18 days before a season changes. In springtime, people are believed susceptible to colds during the doyo period, with liver functions weakening and unbalanced conditions in both mind and body, based on the belief that the God of the earth gains power

and takes as he pleases from the pleasant weather. People used to believe that the deity stayed near the kitchen stove, and that it would be angered by unnecessary flashes of sharp objects and prompt body chills and ill health. So the wisdom of the people of days

past teaches us not to become careless before the coming of summer, regardless of how warm the weather may be, and to keep the body warm and to replenish it with fluids. Rieko Ido A graduate of Kokugakuin University, researcher of ancient Japanese customs and knowledge, conducting technical analysis on findings to apply them to modern lifestyles.Currently teaches at Tama Art University.

02 Get a slice of Japanese knife

Kamata Hakensha When we visited the main Kamata shop on Kappabashi Street, the fourth generation Mr. Kamata was busy at the storefront’s whetstone doing what the family has been specializing in since 1923 — polishing the cutting edge of a Japanese knife to perfection. That handmade touch is what sets Japanese knives apart from the runof-the-mill mass-produced knives. The shop also sells 800 different shapes and sizes of Japanese knives. Those featuring Damascus steel, a patterned steel made of alternating layers of cobalt steel and nickel, are especially popular with foreign customers for its intricate design. Name-engraving services are available for free as well. Feel free to ask Mr. Kamata for knife-sharpening tips and maintenance advice at the shop.

The MORE THAN PROJECT Experience

Mount Fuji, sushi, samurai and geisha – that, and perhaps men in suits, are what typically comes to mind when one mentions Japan. But even these men in suits at the Japanese government want to shake up this stereotypical image and flaunt the country’s hidden allures: local traditional crafts and delicacies, fashion and cutting-edge technology. Hence the part of a new project aptly named MORE THAN PROJECT last year which allows you to experience ‘Wa’ even outside of Japan. From Arita to Paris Arita Porcelain Lab Paris Washoku (Japanese cuisine) was added as an Intangible Cultural Heritage by UNESCO in 2013. A major part of the experience is the exquisite Japanese porcelain tableware on which the cuisine is presented. The small town of Arita in Saga Prefecture is a pioneer in porcelain making in Japan. The first Arita porcelain was exported to European royalty in the 17th century through the Dutch East India Company. Each piece of Arita porcelain is created and painted individually by hand to create a rich and deep radiance. The traditional method of firing at a high temperature of 1300 degrees Celsius for 3 days results in a thin, delicate yet durable finish. Now, Arita Porcelain Lab - the modern brand name of Yazaemon Kiln, which has a history stretching back 200 years - is reacquainting Europe with the beauty of Arita porcelain through special events such as sake and sushi tasting events at the Arita Porcelain Lab in Paris.

Way Above Par BIRDY hand-polished bar tools Cars and alcohol aren’t usually a good mix, but this cocktail shaker is a different story. BIRDY is a sleek, hand-polished, stainless steel cocktail shaker made by Toyota subcontractor, Yokoyama Kogyo, in Aichi Prefecture - not far from the main Toyota car factory. This venture started off with the third generation Yokoyama attempting to use the factory’s technology to make a polished metal sake cup to diversify the business. This eventually evolved into a cocktail shaker sourced from Tsubame in Niigata Prefecture, which is a region famous for its utensils industry. The name BIRDY derives from the golf term where a birdie is above par. According to Yokoyama, the smoother inside surface of the shaker translates directly to the taste, and holds the flavor and aroma of the ingredients much longer. BIRDY was launched in November 2013 with their signature cocktail shaker and mixing tin and is now available in Germany, Greece, Australia, Singapore, China and Taiwan. ‘Wa’ for ‘Wallpaper’ Tokyo Matsuya Another UNESCO Intangible Cultural Heritage asset is Japan’s handmade washi (Japanese paper). There are many types of washi - Edo Karakami is handcrafted washi paper for interior use such as for Fusuma sliding doors. It has been handmade by artisans in downtown Tokyo since the Edo era. The paper can also be applied to a wide range of places such as walls, ceilings as well as interior and display items. Tokyo Matsuya will be developing and selling their hand-made Edo Karakami patterned paper for interiors to overseas markets. They are hoping to team up with wholesalers selling interior materials and retailers in Europe, and plan to sell products in a madeto-order style using samples and catalogs, offering more vibrant patterns and personalized designs of Japanese washi paper. ‘Wa’ wallpaper, anyone?

What’s round and cool? Defrosted sushi balls! Mishima Foods Soon, you may be able to enjoy Kyoto’s signature temari sushi (sushi shaped like a ball) fresh out of the freezer. Osaka Prefecture-based Mishima Foods, which received the Minister of Agriculture, Forestry and Fisheries Award in 2008, has developed a way to freeze sushi using electromagnetic freezing that will not compromise the original freshness and flavor of the food. Mishima Foods will team up with creative director Kai Hikiji, who spent most of his teenage years in San Diego, to present and promote temari sushi to global consumers. Singapore is the first target market for this, and in the first quarter of the year, these temari sushi will be available at major food courts and restaurants in the city with the help of the Japan Association of Overseas Promotion for Food & Restaurants (JAOF).

It is also this project’s goal to bring out the valuable yet unnoticed treasures of Japan out into the world, especially the numerous small and medium enterprises that are quietly dedicating themselves to perfecting their skills. On top of what has already been mentioned there are other projects, such as a project that transforms the centuries-old Japanese tenugui cloth into scarves that compliment any outfit (www.kamawanu. co.jp). There is another project that uses yarn spinning techniques from the Bishu Region in Aichi Prefecture and the southern areas of Gifu Prefecture to make consumer 30

While there are various ways to travel between Mie and Wakayama prefecture in Western Japan, such as by plane or Shinkansen connections, a local train ride on the Kisei Main Line offers stunning vistas of the Pacific Ocean unlike any other. Most of the line - which starts from Kameyama station (亀山駅) in Mie and ends at Wakayama City station (和歌山市駅) hugs the rugged Kii coastline and is named after the old provincial names for Wakayama (Kii) and Mie (Ise). Along some stretches it’s almost as if you are running along the beach, and you can nearly taste the emerald ocean from the breeze blowing through the train window. When not trailing the coastline and curving capes, the line runs through rustic fields with mountain ranges lining the background. And for a slice of local life, one can window-watch people going about their daily lives in their houses and apartments, working at the fields or walking along the streets.

Now, why would any heterosexual woman be interested in two men in love or making love? Understandably the idea would make the general public somewhat squirmish.

In a nutshell: Otome Road is to the Fujoshi what Akihabara is to the Otaku. It’s the Yin to the Yang of Otaku culture (though some may argue that Otaku also includes those of the fairer sex).

But you’ll find that most of the Fujoshi paying pilgrimage at “Otome Road” – a nickname for a 200 meter-odd stretch of road in East Ikebukuro – are just regular romantics who love manga.

First things first, fujo…what?

Why girls love Boys’ Love

If that didn’t make any sense to you, fret not. The term Fujoshi isn’t as wellknown as Otaku, which has elbowed its way into the Oxford dictionary to refer to a person obsessed with a certain (sub) culture, often to the detriment of their social skills.

One unique feature about BL is that it is written and drawn by women, for women. This BL circle is often referred to as “dojinshi” and BL started off as fan fiction of shonen manga, or young boys’ comics, which quite simply either focuses on a sport, or students who are also warriors in a fantasy world.

So why should you care about this breed of beings, the Fujoshi? Because this is a global trend that taps into and reflects the psyche of nearly half of the world’s population. What is Fujoshi?

Female characters hardly appear and the boys are always portrayed as either training, competing or fighting their nemesis.

protagonist’s hatred actually stems from a forbidden love for his nemesis – which is quite a deep hypothesis, psychologically speaking! The BL genre, with its endless spinoffs of mainstream titles playing out alternative scenarios - from the male characters going on an onsen trip to just showing them on a regular day out – fulfils the fantasy of female fans. Men adopting a submissive position There’s also a deeper sociological driver for the existence of BL which gives it a global appeal. BL gives women the chance to see men in a submissive state, being the one to say ‘no!’ or be pleasured, instead of the normal manga when men are the one taking the lead and proving their manhood – even if in real life, they may not do so. And in a male-dominated world – and society like Japan – this twist will give most ladies some pleasure. Nothing rotten about that, is there?

Fujoshi speak up To voice actresses, Kokoro Kanae and Yui Taya who are both in their twenties, BL is just another genre of manga to be enjoyed, with nothing to feel ashamed of. I have male friends who read it too and they aren t gay, said Kanae. As for

Taya, she says, It offers a world of fantasy and escapism for me. Kanae adds that the all-male cast is a treat for the eyes , with two men in the spotlight instead of just one. In fact, the world of BL is keeping them so busy that they have no time for romance in real life!

Otome Road Map Why is Ikebukuro the mecca for Fujoshi? On weekends and even on weekdays, young girls carrying bags covered with anime character badges or even grown women in kawaii costumes can be seen flocking excitedly to a 200m stretch of shops to the west of Sunshine City in East Ikebukuro. This is Otome Road, the mecca for Fujoshi. Here, many Fujoshi come hunting for the latest Boys’ Love manga and paraphernalia, spend the day curled up with their favourite comics at a girls’-only manga café or indulge in a fantasy world at a butler cafe. This evolution can be traced to 2000 when Animate reopened after renovations with an emphasis on catering to the Fujoshi fan base, prompting K-Books to do the same. Toshima-ku, which is the ward in which Ikebukuro belongs to, actively promotes the existence of Otome Road and has even produced a walking map of it.

Ramen Ordering Tips

Ramen(ラーメン)is one of the most versatile dishes in Japanese food. In fact, if you are having it at a decent ramen shop in Japan and you know the right words, you can customize almost every aspect of your meal, including the size of the portion, taste, texture of the noodles and toppings. Let s start with ryo(量; size). If you want a smaller or larger than average portion, use the words komori(小盛り)or oomori(大盛 り)respectively. If even an oomori fails to satisfy, try the tokumori(特盛り; extra-large) ! Alternatively, if you have finished your noodles but still have plenty of soup left and want more noodles to go with it, ask for a kaedama(替え 玉; extra noodles). An interesting way to make a ramen meal more filling is to complement it with a bowl of rice to give what is known as ramen-rice(ラーメンライス). This has become so popular that quite a number of ramen shops even offer the rice for free, calling it service rice( service , or sabisu サービス, means free of charge ). Some people place the noodles on the rice before eating both together, while others finish the noodles first, then proceed to eat the remaining soup and toppings with the rice. There are even people who dump the rice into the soup before gobbling it all up!

Next comes the taste, or aji(味). This relates to amount of oil in the bowl, if you prefer a lighter taste, ask for sukuname(少なめ), but if you like your soup to be extremely rich flavor, request for oome(多め). For some types of ramen, you maybe able to choose the spicy level, such as gekikara(激辛; super spicy) version for a greater kick! But at the end of the day, what is ramen without the men(麺; noodles)? There are usually at least three basic textures to choose from, namely futsuu(普通; normal), yawarakame(柔らかめ; soft)and katame(かため; hard). Some shops make even finer distinctions such as cho-yawarakame(超やわらかめ; very soft)and cho-katame(超かため; very hard). Besides the texture, you see the thickness of the noodles. Thick noodles are known as futomen(太麺) while thin ones hosomen(細麺). Ramen usually come with some toppings by default, such ajitama(味玉; soft-boiled flavored eggs), nori (のり; dried laver seaweed), wakame(わかめ; seaweed), moyashi(もやし; beansprouts), menma(メンマ; pickled bamboo shoots), koon(コーン; corn)and negi(ねぎ; spring onions). If there are certain toppings that you do not want, you can say [topping] nuki de onegaishimasu. Conversely, to request for a particular type of topping, say [topping] o irete kudasai.

Here is a sample conversation that may come in useful when you get to Japan:

To customise your ramen when you make your order, a simple sentence structure worth remembering is “[size/taste/noodle] wa [option] de onegaishimasu”, where “... de onegaishimasu” is a polite way to make a request. The below is an example of a conversation between a customer and a waiter.

Sumimasen. Shoyu ramen o kudasai. Ryo wa oomori, aji wa usukuchi de onegaishimasu. Sorekara, menma nuki de onegaishimasu.

Customer:

(“Excuse me. Please give me a bowl of soy sauce ramen. Please make it a large portion and light in taste. Therefore, please do not add pickled bamboo shoots.”) Waiter:

Men wa ikaga nasaimasu ka?

(“How would you like the noodles?”) Customer:

Katame de onegaishimasu.

(“Please give me ‘hard’ noodles.”) Waiter: Hai, kashikomarimashita. Shosho omachi kudasai.

Slice and cut 3-4 pieces of carrots in 5cm x 3cm sizes.

Trim and cut the head of the train and 3 rectangles for the train carriages.

Using a small paring knife, cut small squares of 0.5cm x 0.5cm for the windows.

Slice the fish sausages. This is for the train’s wheels.

Arrange and pack rice into your bento box, you can line the bottom with some lettuce leaves. Spread some bonito flakes on the bottom near the lettuce.

Assemble the parts of the train together to complete your train bento box. If you have cute food or bento picks (ones with train designs on them are great!), you can also add them to your bento.
