On the other hand, the fact that it is long and thin is meant to symbolize longevity and a sustained prosperity for the family.

In addition, the soba plant also embodies resilience and sturdiness as it survives even in cold climates and recovers quickly from damage by wind and rain with just a little sunlight, plus, it is known to be good for cleansing the blood and lowering blood pressure, hence it is said that eating soba helps to clean the body from the inside to welcome the new year.

soba flour to gather all the gold dust that had gathered within the year off the tatami mat, and this association between soba and wealth accumulation made toshikoshi soba popular.

There is another interesting saying that goldsmiths in the Edo era would, on the last day of the year, use a ball made from

Our 50th anniversary is an excellent occasion for us not only to commemorate our past heritage, but also to embrace diverse culture, and strengthen our friendly partnership towards the future. Experience winter in Singapore with Chef Hamamoto’s Hokkaido infused Kyoto-style hotpot. Using Hokkaido tara (たら, codfish), shirako (白子, milt), konbu (昆布, seaweed), and other vegetables like Maitake mushroom, leek and Japanese Mustard Spinach; the homely soupy dish evokes the feeling of staying warm and cosy during the cold season. It is a seasonal addition to Ki-sho’s omakase menu (from $300) that is not to be missed.

A true Edomae sushi chef, Chef Harada believes in helping his guests “explore Japan through traditional Japanese food”. This season, he will be introducing Hokkaido by serving one of the region’s premium seafood, Hokkai shima ebi (北海しまえび, Hokkaido striped shrimp). He strives to let his guests experience Hokkaido’s flavour through its naturally sweet and umami-rich flavour. It will be available as part of his course menus (starting from $100).

Second-generation Japanese celebrity chef, Kenjiro Hashida is an experienced sushi chef who wants customers to experience the “taste of Hokkaido“ at his restaurant. Apart from this season’s ingredients such as hotate (ホタテ, scallops) and kinki (キンキ, thornhead) you can also enjoy other kinds of fresh Hokkaido seafood such as Surf Clam and Botan Shrimp year-round as sushi or sashimi as part of Hashida Sushi’s omakase menu.

This Hokkaido hokke no hiraki’s (ほっけの開き, Half Dried Atka Mackerel) natural simple yet rich, distinct flavour is what inspired Chef Lau to add Grilled Atka Mackerel ($29.80) to this boutique restaurant’s menu. This rustic Hokkaido ingredient is cooked in the traditional way, by grilling, which gives the fish its crispy skin and tender meat. Chef Lau further highlights the fish’s flavour by serving it with simple, heartwarming bowls of warm rice and miso soup.

ONSEN & ME

Hokkaido

Clear your mind and refresh your soul at these private onsen facilities that deliver you into the healing embrace of Mother Nature. Soaking in an onsen (温泉) , or hot spring, has been a key part of Japanese culture since the days of the samurai. Known for its healing powers and skin-beautifying properties, going to onsen resorts to rest and recharge is a favourite holiday activity of the locals. With over 2,500 onsens of various mineral compositions to choose from, experiencing the soothing warmth and silky texture of a natural hot spring is a must try on any trip to Japan. However, dipping in a public onsen may be daunting for tourists who shy at the thought of sharing a bath with strangers. Rather than waking up extra early or staying up late to avoid the crowds at the baths, why not go for a room with your

Do not dip for more than 15 minutes in one go, get up from the water for around 3 minutes before dipping again.

Drink some water before and after to prevent dehydration.

Place a small towel on your head to prevent excessive heat loss in winter, do not place or wring this in the onsen.

UNOFFICIAL NATIONAL TREASURE Most people would be familiar with Doraemon—the blue cat from the future who can pull out nifty devices from his pouch—but not many would be aware that Doraemon was created in Takaoka City, by Fujiko F. Fujio. At the JR Takaoka Station you can send a postcard back home via the Doraemon Postbox before hopping on the adorable Doraemon Tram or take photos with the full cast at Doraemon Street nearby!

...AND THE ACTUAL NATIONAL TREASURE Doraemon may be considered a national treasure of sorts, but Takaoka already has that in the form of Zuiryuji Temple, a Zen Buddhist temple that was built in the 17th century to commemorate the second feudal lord of the Kaga clan, Maeda Toshinaga. A walk through this tranquil premise may bring you near a Zen state of mind. ACCESS: A 15-min. walk from the JR Takaoka Station South Exit TIP: Request for a volunteer tour guide to show you around town! BEST LOOKING BUDDHA This Giant Buddha statue competes with its counterparts in Kamakura and Nara for the title of “most handsome Buddha”. Unlike the other Giant Buddhas, this was built by donations from the townsfolk and handiwork of local coppersmiths.

Your prayers answered — free Wi-Fi is available at the Giant Buddha venue!

TOP PARK The sprawling Takaoka Castle Park is where the old castle grounds used to be. Even though only one section of the original stone wall is left, it still made it to Japan’s Top 100 Castles list. The surrounding moat makes the paths around the park scenic and popular for cherry blossom viewing. The park itself is also one of Japan’s top 100, and even has a free zoo inside!

HISTORICAL STREETS AND MUSEUMS To prevent Takaoka from falling into decline when it lost its status as a castle town in the early 17th century, Lord Maeda Toshinaga promoted industries such as bronze work and lacquerware. Kanayamachi,

which consists of several streets of latticed houses, was where the first metalworkers set up shop. Today, a mix of metalwork factories, cafés and souvenir shops occupy these historical houses.

See how Lord Toshinaga’s magnificent helmet was made at the Takaoka Casting Museum.

LOCAL FOOD AND CRAFT Toyama is famous for its fresh and varied seafood, having the widest bay facing the Sea of Japan. Here are some of the musttry and must-buy food and craft!

TOYAMA BLACK RAMEN Soy sauce gives the soup its characteristic black colour. Tastes lighter than it looks!

Iridescent abalone shell is polished to 0.1mm and used to decorate the lacquerware.

TOYAMA BLACK DORAYAKI Doraemon’s favourite snack is given a twist—the red bean and cream filling is flavoured à la soy sauce butter.

SHIROEBI (WHITE SHRIMP) Only available in Toyama, these little shrimp are tasty both raw and fried and can be eaten whole!

SAKE This sake is named after Toyama’s highest mountain range, Tateyama.

VOL.

In this day and age, it is rare for people to be conscientiously polite – especially outside an extremely courteous culture like Japan. A casual “bye” or “leaving” is usually shouted at the door and receives a similar, distracted reply – “I’m home” is used even less. Although the greetings are now treated in the same absentminded manner, the original intent is not forgotten. Especially in an office environment, seemingly casual concern for every colleague creates a pleasant atmosphere and serves as a gentle reminder that someone is leaving or has returned safely.

means ‘running around’ and it symbolises people running around everywhere to get ingredients. After your meal, we add polite prefix of go and respectful term of sama to show your appreciation and thanks to the person’s effort for the meal’s preparation.

Kotoyoro

Akeome is abbreviated from akemashite omedetō gozaimasu (polite way of ‘Happy New Year’). Literally, it means ‘greeting New Year is opening’. You say this interjection when you see people in the new year. In return, kotoyoro is a short form of kotoshimo yoroshiku onegaishimasu (“please treat me well this year as well as you did last year”) which literally shows your sincere feelings and appreciation for last year kindness/ partnership/friendship, etc. These terms describe Japanese politeness well with the short form being more slightly casual and light. KAWAII MONSTER CAFE: Beyond Kawaii From the moment you are swallowed by Mr. Ten Thousand Chopsticks, or Choppy, KAWAII MONSTER CAFE’s mascot character whose mouth functions as the entrance of this café, you know that you are entering a different world. One so vivid and crazy that it could only be possible in Japan, or to be more precise, only in Harajuku.

A monster within a monster

Harajuku, Tokyo’s hip and wacky youth fashion trendsetting area is like a giant toy box turned upside down with toys of all sorts of colors and shapes spread throughout the city. Not just the architecture, but also the people that walk the streets scream originality and abstractness, together making Harajuku a monster of a city, and a cute monster it is! But even in Harajuku, KAWAII MONSTER CAFE’s bizarreness manages to stand out as a monster within a monster. Newly opened in August 2015, this cafe confronts you with craziness as soon as you enter. After being swallowed by the mascot's mouth at the the entrance, you will be confronted a giant, cake-like carousel known as he sweets-go-round. While fairy-tale like animals galloping on this alone are enough to bring about a sense of awe, do realize that this is only the beginning.

the café. Their presence makes the concept feel real and organic, brings this world to life.

Too much kawaii on your plate

A grotesque yet charming world

As one of Tokyo’s most spacey cafés, KAWAII MONSTER CAFE boasts of four zones with different themes and interiors. From unicorn heads nursing baby milk bottles to a glowing jellyfish spreading its tentacles over a bar, these scenes go way beyond something one could refer to as just “cute” in the English language. Presenting an absurd yet somehow charming world, this cafe suggests that the Japanese concept of “kawaii” is more than it seems. “Monster girls” –gaudy girls dressed up so flashy you won’t even them see on Harajuku’s streets–are an essential part of this surreal world. They are not waitresses, more like inhabitants of

Dishes like the Colorful Rainbow Pasta and Colorful Poison Cake make the experience complete. Their appearance is more like the pallet of an abstract painter and rank among the most toxic looking foods you will ever see! Surprisingly, these dishes are quite yummy and do not taste like they contain as many food additives as you would think. Kawaii culture is one of Japan’s largest subcultures, but KAWAII MONSTER CAFE serves something way beyond your expectations directly on your plate. A visit to this new Harajuku landmark will blow your mind and have you rethink the definition of “kawaii”. At least KAWAII MONSTER CAFE suggests that if translated simply as “cute”, the true essence of this culture could be lost in translation. Find out other fascinating aspects of subculture in this special “Let’s Talk Subculture” series online at www.wattention.com.
