In the days of old, when winter turned to spring, the weather turned mild and agreeable and when various flowers started to bloom, the Japanese would head out to the fields and hills with their bentos, and sometimes with tea and sweets. This was also done in the belief that those had departed from this world to the next, via the mountains and sky, would descend from the mountains during this period, and
it was a chance to meet and greet them. And so as time went by, this tradition of picnicking under fully-bloomed sakura trees, or having a cup of matcha or sencha outdoors became known as nodate. Savouring tea, enjoying conversation and sometimes reciting poetry on fine and fair spring days accompanied by a refreshing breeze. Such immersion of oneself in nature as green shoots of grass and flora
are sprouting is an elegant pastime unique to the Japanese who are keenly in tune with the changes of the seasons.
Rieko Ido A graduate of Kokugakuin University, researcher of ancient Japanese customs and knowledge, conducting technical analysis on findings to apply them to modern lifestyles. Currently teaches at Tama Art University.

Started in 1996 by the Japanese Association, the Singapore Japanese Speech Contest’s aim was to encourage cultural exchange. With the support of the government and private enterprises, the four winners of 2016 embarked on an unforgettable trip to Obihiro and Sapporo.

After touching down in Sapporo, the students transferred to Obihiro City and met with tourism officials to share their first impressions of the city before going live on a local radio show!
Enjoyed delicious butter-grilled potatoes, learned about new farming techniques and rode on a new-age tractor at a local farm.

Visited the beautiful Former Hokkaido Government Office in the morning before exploring Sapporo City. Other highlights included watching an exhilarating Banei horse race and a cookie decorating session at Ryugetsu Tokachi Sweetpia Garden.

Opened in 1966, the three halls within the theatre host kabuki and buyō performances, and organises its own mini sakura festival during spring. This Japanese tableware specialist works with more than 300 artists across Japan and sells an assortment of pieces that are both functional and beautiful. The store’s prime location next to Chidori-ga-fuchi City Park makes it a prime spot to shop and sit down for a snack during sakura season.
This 700-metre-long lush walkway is found along the moat on the west side of the Imperial Palace. Visitors can rent a boat (¥500 for 30 minutes) and paddle out into the waters where over 260 cherry blossom trees reach out with their heavy branches. The flowers are illuminated with LED lights after sunset so you can admire them from day to night.

This park stretches about 2 kilometres from Iidabashi Station to Yotsuya Station and is built on top of castle ruins dating back to the Edo era. Aside from admiring the flowers in full bloom, the view of the petals scattering onto the surface of the outer moat is also equally stunning. Those looking for a unique experience can take trains on the Sobu or Chuo Line as the view of sakura from the train windows is a memorable sight.

During spring, sakura trees blossom on both sides of the train tracks at Noto-Kashima station, creating a ‘Sakura Tunnel’ effect. More than 100 cherry blossom trees line the long stretch leading to the station, which is open 24 hours so visitors can admire the sight from the platform.

View the world’s largest naturally formed whirlpools from the safety of this ocean promenade. Located 45 metres above the sea, the walkway also has a rest station with four glass floors for visitors to observe the tidal whirlpools (Naruto no Uzushio, 鳴門の渦潮).

Made of mountain vines, these suspension bridges were one of the ways to move goods and people across the river of the Iya Valley. This is the largest of the three bridges which survive today, which provides visitors with a clear view of the gushing waters 14 metres below.

A symbol of Tokushima, the 290-metre high mountain offers a spectacular view of the city from its peak. During spring, you will be able to see cherry blossoms covering the mountain slopes. A popular hot spring resort not far from Beppu, this area is surrounded by a plethora of nature. The most prominent feature of the small town’s skyline is the twin-peaked Mt. Yufu. A four-hour trail from the historic Takeu Komagatake Shrine takes you along spectacular waterfalls, suspension bridges and breathtaking cliff s. The Jinja Waterfall has such a high drop that water falls in three different levels. The scenery is especially appealing in the autumn when leaves turn their colors.
The spring, full of minerals, was designated by the Japanese government as one of the top quality waters in the country. It is said that Takeda Shingen, a famous warlord in the 16th century, once solved water disputes by placing a triangle shaped stone in the center of the spring to divide the water into three channels. Hence its name Sanbuichi, or "one into three" in Japanese. Freshly picked vegetables and homemade soba noodles are sold in nearby shops.

Togakushi:
Home of Ninja and Mystery With its ninja legend, natural landscapes and close proximity to Tokyo, this is a trip worth making. Hidden on a highland surrounded by mountain ranges, the Togakushi area of Nagano is the legendary home of Togakure Ninja. Yes, those mysterious masters of espionage and stealth are said to have honed their ninja skills in the highlands of Togakushi since more than 800 years ago. Daisuke Nishina, who served the Genji clan, founded the school of Togakure-ryu in the 12 th century during the ongoing war between the Genji and Heishi (Taira) clans. This fighting style would later become the origin of ninjutsu’s diverse fighting styles. Generation after generation, a ninja’s role in assassinating and spying may have been replaced by modern weaponry and the Internet. Nevertheless, the sense of mystery remains in Togakushi, due to its ninja legends, historical shrines, and the rows upon rows of old cedar trees that seems to lead you into another world.
Togakushi Shrine
A place of peace and spirituality Togakushi Shrine consists of five shrines located at the base of Mt. Togakushi. According to Japanese mythology, the goddess of the sun, Amaterasu, grief ridden, hid herself in a cave, plunging the world into darkness. The other deities strived to lure her out, finally succeeding in flinging away the stone door which Zuijinmon Gate it landed to form Mt. Togakushi (literally,“the door of hiding”), thus returning the sun to our world. Whether or not the story is true, deities that appeared in the story are enshrined here and the mythology has added a bit of charm to Togakushi. Seeking peace and spirituality, we first visited Chusha (the middle shrine) to see the triplet cedar tree and the ceiling painting of a dragon. The former is the gift of Mother Nature, and the latter a masterpiece of human creativity. From Chusha to the entrance of Okusha (the upper shrine) is about 5 minutes by car or 20 minutes on foot. Okusha is a further Chusha: the ceiling painting of a dragon 2 kilometers uphill from the entrance. Passing the thatched-roof Zuijinmon Gate, we walked through countless cedar trees and a series of stone stairs to arrive at Okusha. A ninja-themed amusement park for both kids and adults If you are traveling with kids who have lots of energy to spend, check out this ninja theme park offering various hands-on attractions and ninja shows. It was no exception for us as we tried Togakushi soba at Yamaguchiya and learned the story behind it from Mr. Yamaguchi, the restaurant’s owner who is practicing to become a modern ninja himself. He told us that Togakushi soba originated as a portable food for monks practicing asceticism in the mountains of Togakushi. Since soba is easy to prepare and contains essential nutrients, it makes an ideal food for ninja as well!

Retro and romantic Arriving at Fukuoka Airport, you will be amazed by its vicinity to the city centre. A 6-minute metro ride got me to Hakata Station, and an hour later, I found myself standing on the antique platform of Mojiko Station, the northern tip of Kyushu’s railway network. The port city was prominent as an international trade hub until the early 20th century. Buildings were constructed one after another with the highest aesthetic standard at that time and many of them were preserved to form the modern Mojiko, a retro and romantic scenic town. Take a leisurely stroll along the streets and imagine
you were one of the esteemed patrons visiting Mojiko a century ago. Built in 1921, the Old Moji Mitsui Club once welcomed Albert Einstein and his wife. Now it is a small museum and restaurant serving Mojiko’s signature grilled curry to any guest. Apart from the many antique western style buildings around town, there is an exquisitely designed railway museum that deserves a visit even if you are not a big fan of trains. After exploring Mojiko, I headed back to Hakata and transferred onto an 800 series Shinkansen for Kumamoto. Though the 40-minute journey was too short to admire the astonishingly fast and beautiful bullet train, it left me plenty of time to discover the night life in Kumamoto.

The art of slow travel The plan for today was to take a series of slow (relative to Shinakansen) yet charismatic trains all the way down to Kagoshima. But before that I had to marvel at the strong presence of Kumamoto Castle, which is the symbol of Kumamoto and has stood firmly after a major earthquake struck the city in April 2016. Though the castle will not be open to the public any time soon, you can get a close-up view from Kato Shrine or a bird’s eye view from the free observatory of Kumamoto City Office.
then from Hitoyoshi to Kagoshima, it was show time for JR Kyushu’s sightseeing trains — Isaburo & Hayato no Kaze. The gracefully designed trains spiral and zig-zag through the mountains as if you are traveling on one of those Swiss mountain railways. It slows down at scenic viewing spots and makes extended stays at small stations that each have their own characteristics. A long journey, if measured by traveling time, but definitely a worthy one measured by memorable experiences.
Leaving from Kumamoto, I first made a stop at Hitoyoshi for its National Treasure — Aoi Aso Shrine. The thatch-roofed building was one of a kind, and the delicate engravings were more than beautiful. And
Of course, if you prefer to see more of the city of Kumamoto and Kagoshima, the Shinkansen bullet train will do its work in about 50 minutes and leave you plenty of time to weave your own tale of two cities. The night in Kagoshima was saved for its Kurobuta pork. A cup of Kagoshima Shochu to go with it? You bet.

Journey to the south Most people visiting Kagoshima, are likely to stay near the city and visit historical sites such as Senganen Garden and Ijinkan Residence. But since I am already in southern Kyushu, I was determined to go further southward. On the first leg of my journey I traveled from Kagoshima to Ibusuki on the limited express Ibusuki no Tamatebako. Riding on the specially designed sightseeing train was an enjoyment by itself, and the majestic view of Sakurajima volcano from the window made the trip even nicer. Before long, I arrived at Ibusuki and then took a

The recommended time to stay in the sand is 10 - 15 minutes. After getting recharged in this unconventional onsen bath, I continued my journey southward to Nishi-Oyama, the southernmost train station in Japan that is operated by JR. There is a yellow mailbox next to the platform. It is said that postcards and letters delivered from this mailbox to your important ones will bring them happiness. I believe that being able to travel is a blessing, so why not share it forward?

MUST DO Visit a sake museum – Found inside Echigo-Yuzawa Station, visitors can try up to 100 varieties of sake at Ponshukan (ぽんしゅ館越後湯沢店). There is even a sake onsen right next door so you can soak your worries away too. Make your own senbei – At Senbei Okoku (せんべい王国), you have the rare opportunity of roasting a huge 25cm wide rice cracker, and drawing on it with shōyu to make it your very own.
Try out snow activities – Known for its high snowfall, you will be spoiled for choice when picking a resort. Gala Yuzawa has 15 different runs with varying difficulty, while Naeba offers spa treatments and is also the host of the famous Fuji Rock Festival.
Terraced rice fields of Hoshi-toge – These overlapping paddies are also known as senmaida (千枚田), or “thousand-fold rice fields”. Selected as one of Japan’s 100 best rural spots, the appearance of the fields change with the growth of rice each season and is a sight to behold during sunset. Toki-no-mori Park – This park is dedicated to the toki (朱 鷺, Japanese Crested Ibis), which was once an integral part of Japan’s rural landscape. Here, you can learn more about the conservation efforts made by Takada Castle – Constructed Sado Island as well as admire in 1614 as the home base of the ibis in its natural habitat. Here are some tips on cooking Niigata rice without a rice cooker~
1.Wash the rice gently in circular motions and discard the water. Repeat thrice.
2.Soak the rice for at least 30 minutes.
4.Water used when cooking should be about 1.2 times the amount of rice.
5.Steam for 10 to 15 minutes on medium heat and remove from fire.
3.Drain the rice for 10 to 15 minutes.
6.Keep lid on and let rice sit for 10 to 15 minutes.
7.Use a rice paddle to fluff up the rice and serve!

Himono are savoury, sun-dried fish traditional dishes that have rich cultural roots. At Himonoya, you can taste a variety of himono such as Shima Hokke, Bansuke Saba, Kinmedai and Toro Aji. Shima Hokke, a type of mackeral, is fattier, meatier and juicier. After grilling, the skin becomes crispy but the meat stays moist; it has the strongest umami flavour out of all the fish.
They also offer top tier sakes such as the award-winning Nabeshima. It is best enjoyed cold, has a fruity aroma and a dry, slightly sweet body which is perfect for chilling with after a hot day. If you prefer course dinners, choose from their Ryoshi or Gokai courses. The number and types of dishes served vary with each course and they all come with free flow drinks including alcoholic options.
Bansuke Saba is a famous mackerel brand. The fish are marinated in their special sauce before being grilled to perfection. It is rare to find Kinmedai prepared himono-style — it is a premium fish with delicate meat, while Toro Aji, or fatty horse mackerel, is a smaller fish that has a rich taste and melts in your mouth.
