Nochi no hina Matsuri 後の雛

Hina-matsuri, which falls on 3 March every year, is a traditional event on the calendar. On this day, a set of ornamental dolls is displayed in families with daughters to wish for the health and wellbeing of young girls. In the past, people also celebrated “nochinohina-matsuri” on 9 September, exactly six month after 3 March. The day is also known as “choyo-no-sekku,” or “kiku-no-sekku” because people use chrysanthemum, a symbol of longevity, to decorate the house, wishing for a long life. On this day, people take the dolls out of

the storage to prevent them from getting moldy and eaten by bugs. In other words, it is a maintenance day for the dolls. After bathing in the gentle sunlight and the dry air of autumn, the dolls are like new again. You may even catch a smile on their faces. Since long ago, Japanese have been taking the utmost care of the dolls as if there were spirits living in them. To convey the message that autumn is here to the dolls, people would decorate the house with chrysanthemum and burn incense for a week. The event is an opportunity to not only

“nurture the mind and body through taking care of things” but also to pray for longevity and health. This tradition, however, is disappearing. It is difficult to find families that put out dolls in autumn today. After celebrating “nochinohina-matsuri,” the dolls are wrapped in new papers, along with insect repellent incense and put away until the next spring.

Food and onsen (温泉 , hot spring) – These two pleasures are best enjoyed in Japan’s third largest island. Boasting quality cuisine and onsen, Kyushu is as enticing as other popular regions such as Kanto (Tokyo) and Kansai (Kyoto). Kyushu (九州) was so named as it was historically divided into nine provinces. The entire island consists of seven prefectures – Fukuoka, Saga, Nagasaki, Oita, Kumamoto, Miyazaki and Kagoshima. Located near Korea and China, the region served as a confluence point where East met West in terms of commerce, culture and culinary delights. In the 1500s, Japan had limited foreign influences, with Christianity arriving in the country only in 1549. Only the Portugese and Dutch were allowed to trade in Nagasaki. Due to early interactions with foreigners, the region is renowned for its unique food culture. Blessed with spectacular mountains, the island has the highest number of onsen in Japan. Hakata Amaou Strawberries

Known as the jewel of all fruits, Amaou strawberries are famed for its large and well-formed shape. Thriving in Fukuoka’s pleasant climate, the luscious and sweet strawberries are exported regionally and used creatively in many desserts.

Spicy Mentaiko

Fukuoka produces incredibly fresh karashi mentaiko, (辛子 明太子, spicy marinated cod roe) which is frequently used to complement rice, pasta and even as seasonings in snacks. Packaged mentaiko products like mentaiko mayonnaise are good souvenirs.

Yatai Fukuoka’s food institution, Yatai refer to open-air food stands much like Singapore’s pasar malam. Nowadays, both tourists and locals gather in the big Yatai areas of Nakasu (中洲), Tenjin (天神) and Nagahama (長浜) to soak in the cheery atmosphere while slurping ramen and interacting with the owners.

A gateway to Kyushu’s vibrant food culture, modern Fukuoka comprises of former castle town Fukuoka and port city Hakata. Start your epicurean quest with Hakata ramen — the king of tonkotsu (豚骨, pork bone) ramen in popular Ikkousha or Ippudo chains, and continue with gyoza, yakitori and more local delights!

Motsunabe

Similar to our local steamboat, motsunabe is a high-protein, low-calorie hot pot with beef or pork’s internal organs boiled in miso or soya sauce based soup. The pairing of chewy innards with crisp vegetables is perfect with rice and alcohol!

Harazuru Onsen Fukuoka’s largest onsen region, Harazuru is well-known for the beautifying qualities of its slightly alkaline and sulphuric hot spring water. Most onsen face Chikugo River which hosts cormorant fishing in summer.

Surrounded by Genkai Sea and Ariake Sea, Saga is famed for its seasonal seafood. Other than food, Saga is known for its intricate pottery and Yoshinogari Historical Park, a spacious moat-circled village from 300BC. Every year during Saga International Balloon Fiesta, the skies are decorated by kaleidoscopic hot air balloons.

This sweet treat is one of the representative food items from the region. It originated from Portugal but was brought into Japan through its trading routes. The signature taste is achieved through the use of sanontō (三温糖), a type of sugar which is heated three times to produce its deep caramel-brown colour.

Saga Beef Highly ranked in wagyu competitions, the famous beef is processed from superior cattle raised by skilled farmers. The stringent process results in glossy marbled meat that melts in your mouth regardless of how it is cooked. Enjoy it as a steak or shabu-shabu.

This is a historic dessert made of mashed Japanese red beans and kanten (寒天, a gelatin-like substance made from seaweed). Some stories say that amongst the food supplies sent to the soldiers fighting in the Japanese-Sino War, this agar-like sweet was one of the food which did not lose its flavour even after a long period of time.

Yobuko Squid A specialty of the port town, fresh squid caught here are best enjoyed as ikizukuri (生き作り) and ikezukumi (活け造り), or live squid sashimi. The almost transparent and succulent flesh is a true delicacy. Other squid dishes include squid dumplings, rice and even burgers.

Takeo Onsen This historical onsen, with its symbolic red-coated Romon (two-storied gate), has welcomed numerous visitors over the centuries. Its luminous hot spring water nourishes the skin and is believed to relieve fatigue.

Environmental Art Park This privately owned forest streches over an area of 18 hectares and is blessed with an abundance of rich soil and diverse nature. The area serves to promote harmonious living between humans and nature, with the 887-metre-tall slope of Mt. Sarei (作礼山) acting as a canvas for “art” formed by rocks, trees and plants. Jigokumushi (Hell steamed cuisine) This healthy cuisine is cooked by Beppu’s abundance of hot steam and water. Experience this time-honoured method and cook your meals at Jigokumushi Kobo Steam Cooking Center (地獄蒸し工房鉄輪). Mouth-watering ‘hell steamed’ pudding, buns and dumplings are ideal snacks after an onsen bath.

The undisputed onsen capital of Japan, Oita has the highest number and types of onsen. Its dynamic landscape is adorned with the Kuju mountains, Yabakei gorge and Kunisaki Peninsula with its Usuki’s stone Buddha statues. Enriched with a wealth of natural ingredients, the prefecture offers exotic seafood like fugu (ふぐ, puffer fish) to delicately fried chicken.

Boasting the second-largest number of hot springs in the world, the prefecture is also home to a unique onsen experience — mud baths! Known for its beautifying effects, the open-air baths are popular amongst both males and females.

Yaseuma is an addictive traditional snack that features chewy noodles made using special local flour and covered with velvety kinako (黄粉 / きなこ, roasted soy powder) and sugar.

Tenkai-no-yu

Beppu Cold Noodles Nothing beats the heat better than a bowl of chilled noodles, Beppu-style. Usually homemade, the dough is made using buckwheat flour and the refreshing dish is commonly topped with cold seasoned beef, boiled egg and kimchi.

Located along the coastline, the open-air baths boast a breathtaking view of the surrounding landscape as well as the sea. Soak in waters known for its healing properties, which can relieve aching joints and aid in poor digestion.

Yoshino Torimeshi This humble onigiri (おにぎり, rice ball) was originally prepared by housewives using simple ingredients like chicken and burdock. This appetising snack evokes nostalgia for the countryside and home-cooked meals.

Kumamoto is perhaps most recognised for its adorable mascot, Kumamon and Kumamoto castle, which is now undergoing post-earthquake repairs. While great food can be found all around Kumamoto city, do allocate time to discover the rest of the prefecture, especially the quaint onsen towns and the majestic Mt. Aso.

Kurokawa Onsen

Basashi Adventurous food-lovers have to try basashi, (馬刺し, raw horse meat). Because of its pink colour, horse meat itself is sometimes referred to as sakura niku (桜肉). Kumamoto’s signature meat is usually enjoyed with grated ginger, garlic and soy sauce. Horse oil is also simultaneously extracted from parts of the horse such as the mane for use in cosmetics.

Chosen Ame (Korean candy)

Taipinen A celebratory dish with roots in Fujian China, this healthy but tasty vermicelli soup is in fact an original Kumamoto creation. It is cooked in chicken stock and garnished with an assortment of toppings like meat and vegetables.

Mt. Aso Located at the centre of the Aso-Kuju National Park, the mountain has an outer rim of 128 kilometres. It has several active volcanic peaks including Mt. Nakadake. The crater is often closed off because of poisonous sulphuric gases, but visitors can enjoy the magnificent scenery found at the foot of the mountain.

Soft and chewy candies made from glutinous rice, syrup and sugar, Chosen Ame is eagerly consumed by children and adults alike. Originally named 長生飴 , it was eaten by troops who were sent to Korea and was renamed 朝鮮飴 as it shares the same pronunciation.

A charming river runs through this well-preserved town that is free of hotel chains and gaudy advertisements. Visitors staying in the ryokans (旅館 , traditional Japanese inn) can purchase a onsen tegata (温泉手形, onsen wooden passport) which grants them to access different outdoor baths.

Nagasaki played a prominent role in Japan’s international exchanges and foreign influences can be observed in places like Dejima, Japan’s sole trading spot for many years. Unzen Onsen

The epitome of Nagasaki’s fine dining, this Chinese banquet style cuisine includes western elements too. The round table feast showcases elegantly plated dishes like braised pork, fish and vegetables before ending with desserts. The dishes vary from store to store so you can expect something new everywhere you go.

Enveloped by billowing steam from geysers, Unzen Onsen is located on the volcanic grounds of Japan’s oldest national park. Locals enjoy immersing in the acidic and sulphurous hot spring water that possesses healing qualities.

Satsuma Imo In 1614, Kagoshima began exporting sweet potatoes to other parts of Japan and since then, they have been labelled as satsuma imo. Arrive at Oita Airport and transfer to Yufuin, a popular hot spring resort renowned for its picturesque scenery and artsy vibe. Stroll around town and explore the beautiful cafes before lunch at Shokusaiya Goemon (食彩や 五衛門). Relax and enjoy the wonderful ambience of the restaurant and its beautifully plated set meals! After lunch, take in the view of spectacular hot springs at the Hells of Beppu, such as the umi jigoku (海地獄 , sea hell) and chi no ike (血の池地獄 , Blood Pond Hell). Your last stop of the day is your lovely hotel!

Start your second day in Kyushu with a good breakfast before taking a ride to Kokonoe ‘Yume’ Grand Suspension Bridge (九重夢大吊 橋). This is the highest bridge for pedestrians in Japan. Here, you can see Shindonotaki Falls (震動の滝) and admire the rich autumn foliage of Kyusuikei Gorge (九酔渓).

After lunch, spend the afternoon doing some retail therapy at Canal City Hakata (キャナルシティ博多), a large shopping and entertainment complex. It houses 250 shops and features a canal running through the building. Head to the fifth floor if you get hungry, as there is a dedicated ramen area with eight specialty stores. Enjoy a well-deserved buffet dinner before retiring for the night.

Finish up your hearty lunch before proceeding to Kusasenri-ga-Hama (草千里ヶ 浜 ). The vast grassland is spread out at the foot of the grand Mt. Aso (阿蘇山), and you can even try horse riding. End the day with dinner in the comfort of your hotel.

This photogenic narrow alley is located within the Usuki Samurai District and runs along old temples and residences built in Edo Period-style architecture. The 200-metre pathway runs parallel to the Haccho Oji Shopping Street (八町大路) which is lined with stores selling crafts, local specialties and sundries.

One of Japan’s most active volcanoes, it is often used as the symbol of Kagoshima. Interesting spots in the area include the Kurokami Buried Gate, where you can see remains of the Kurokami Shinto shrine, as well as the Yunohira Observatory, from which you can admire the dramatic view of Sakurajima’s South Peak and Kinko Bay.

Found on the southeast of the Satsuma Peninsula, Ibusuki is home to around 800 hot springs, including famous sand baths. Bathers dressed in yukata robes are buried in hot sand which is heated by natural steam from below ground. After 10 to 20 minutes, you can wash off the sand and enter regular hot spring baths.

Fukuoka’s local dialect, otherwise known as Hakata-ben, is said to be one of the cutest sounding dialects in Japan. A key way to identify it is through their use of the word “ttai” or “tai”. This suffix is usually added to the end of sentences and used in almost the same way as “yo” of standard Japanese to indicate to the listener that this is new information.

mountains are coloured in vibrant reds and yellows. Grounds resemble carpets of yellow maple leaves and silvery shimmering salmon swim up the river to lay their eggs. Make your way to Tohoku during its most bountiful time, the harvest season!


Apple Kingdom Mount Iwaki, also known as “Tsugaru Fuji”, is found in Aomori, Honshu’s northernmost prefecture. Autumn is the best season to enjoy a variety of colours at Oirase Mountain Stream and Lake Towada, as well as the lush red apples growing in abundance at the foot of the mountain. Japanese apples are famous for being quite large and are exceptionally tasty and crunchy. The cultivation of apples in Aomori began at the start of the Meiji Restoration by unemployed samurai. In 1875, the region, which had not been used for apple cultivation before, received three apple saplings from the West. Samurai who had lost their social status exchanged their katana (single-edged swords) with pairs of shears and refined the technique of sentei (pruning). Hence, Aomori became Japan's best area for producing apples. The fruits survive harsh climate conditions such as heavy snow and drastic temperature differences between day and night offer a unique harmony between sweet and sour, giving them an especially rich flavour. Hirosaki, the pioneer city for apple production, features about 50 shops which

On the map, you can also find your way to a special baking event to watch a giant apple pie with a threemetre diameter being made. Along with the production of apple juice and cider, this fruit plays an essential part in Aomori’s culture.

Best Autumn Fruits to Enjoy Sample some of Tohoku’s best autumn fruits by taking a train that travels through a forest of autumn colours! Get off at Furukawa Station on the Tōhoku Shinkansen and transfer to the Rikū-East Line. This runs through Naruko, a hot spring village with more than 1,000 years of history. Naruko has a cluster of five hot springs—Naruko, East Naruko, Nakayamadaira, Kawatabi and Onikobe— and is home to Naruko Gorge, the Tohoku region’s most scenic of gorges. From NarukoOnsen Station, the train travels along the Araogawa River before climbing up a gentle slope toward Naruko Gorge, where colourful foliage decorates rocky cliffs in autumn. Shinjō is the last station on the Rikū-East Line. After foliage viewing, why not take the shinkansen to Yamagata Prefecture for a feast of seasonal fruits? Known as “the Fruits Kingdom,” Yamagata is the number one producer of cherries and pears in Japan. Apples, grapes and many other juicy fruits are also grown here. Tourists can visit orchards and pick grapes (early September to late October) and pears (October) and even try their hand at making dried persimmons. Risshaku-ji The temple, also called Yama-dera, consists of 30 big and small halls. A moss-covered stone staircase starts from the foot of the mountain and goes all the way up to the majestic halls and temples on rough, stony cliffs. The heavenly landscape, coupled with red leaves, looks just like a painting on a Japanese wooden screen. During autumn, locals are busy preserving food for the long, harsh winter ahead and visitors are welcome to have a taste during this culinary tradition. Tsuruoka City’s Yura, the biggest fishing port in Yamagata Prefecture, has developed many ways to preserve its great salmon catches. One of these methods is covering the fish in distillers’ grains and miso paste. Besides eating it raw and with sushi, you can also grill it with salt, marinate it in soy sauce or boil it in sweet Japanese sauce.

Japanese sandfish is also a common winter treat. The fish, also referred to as “God fish” on the Oga Peninsula, swims to Akita Prefecture for spawning in December. Salt-preserved Japanese sandfish is an important source of protein during winter. People in Akita grill it with salt, cook it in a hot pot and eat it with seaweed paper. This is a definite must-try when you visit Tohoku!

Niigata’s Murakami City has enjoyed fame for its salmon cuisine since the Edo period (16031867). It is customary to hang salt-preserved salmon from the eaves of houses in early December. Gusts of cold winter wind dry off the moisture in the salted salmon, giving it a rich, sophisticated texture. The sight of thousands of salmon hanging from traditional Japanese houses in winter is as fascinating as it can get! When going to a Japanese supermarket, you may be surprised by the many different types of rice on sale. “Japonica rice” is wellknown for its stickiness and sweetness. The Tohoku region has long been a popular riceproducing area and is famous for its delicious, high-quality varieties. Production of this unique rice is possible due to weather conditions. During winter, Tohoku’s prefectures are covered by tremendous snowfalls, and the ones along the coast (Niigata, Akita and Yamagata) are exposed to the harsh climatic conditions of the sea. When spring approaches, snowmelt water flows into the big rivers and irrigates the large, open paddy fields. Due to the foehn

phenomenon, in which dry wind blows down the mountains, the mid-day temperature is very high, but cools down substantially in the evening. The combination of these factors makes Tohoku ideal for rice production. Since a long time ago, the Shonai Plain in Sakata has been a primary storage area for rice. The Sankyo Soko warehouse built there in 1893 is still in use today. As harvest season draws near in October, golden rice ears rustle in the wind and Japan’s most representative scenery spreads throughout the region. To round up your autumn trip to Tohoku, catch a glimpse of the charming views from the local train or shinkansen.

For many Japanese, the region offers another special activity to look forward to — the tasting of “new rice”. In rice-producing areas, you can find diverse cuisine using these rounded grains of white gold. Akita is famous for kiritanpo, a dish in which freshly cooked rice is smashed, pressed around a skewer made of Akita cedar and grilled. It is a traditional meal served with a hotpot, which includes chicken and vegetables. Kiritanpo is sold throughout the year in local restaurants and souvenir shops but is especially enjoyable to eat during harvest season.

“Sankyo Soko” warehouse (Sakata, Yamagata Prefecture) is a two-hour ride from Niigata Station (JR Jōetsu Shinkansen) to Sakata Station (JR Uetsu Line). From there it is a short five-minute ride by car.

Rice Paddy Art The villagers of Aomori’s Inakadate village turn rice paddies into canvas and paint rice shoots into different colours every year. In 2017, they used seven colours and 13 strains of rice as well as various art and measuring techniques to create an impeccable, highly detailed design. Although other cities try to imitate their effort, Inakadate’s rice paddy art remains the best in quality and the finest in design.

hile the kanji which makes up Kumamoto (熊 本) literally translates to Bear Base, the only bear you’re likely to encounter is their mascot Kumamon. Aside from the cute character, there’s plenty to discover in the area, including local gourmet treats. Located on the island of Kyushu in southwest Japan, Kumamoto Prefecture is home to the largest active volcano in Japan,

Mount Aso, and is mainly an agricultural region. The area boasts the greatest output of tomatoes and watermelons in Japan, and claims second place for eggplants. The region’s capital goes by the same name and is renowned for its beautiful castle. Sadly, much of the city suffered damage after a strong earthquake in April 2016. The castle is currently under reconstruction but still looks stunning when lit up at night.

great way to get to know Kumamoto is eating what the locals eat. Aside from the unique delicacy of basashi (馬 刺し, horse sashimi), a popular dish originating from the region is karashi renkon (辛子蓮根). It is made by stuffing lotus root with a mustard-miso paste and deep-frying it in a batter of wheat, broad bean flour, eggs and sometimes turmeric. Legend has it that the flavorful dish was created for the sickly lord Tadatoshi Hosokawa, who ruled Kumamoto in the early 17th century; he initially refused to eat

or the adventurous, there is even a store which offers hands-on experiences. The eye-catching dish is surprisingly simple to make, although third-generation owner Masaru Murakami kindly prepares the paste and batter in advance. He has also taken karashi renkon production to a new level by designing an automatic fryer. Launch your lotus root into the moat of oil and it’ll be gently guided along until it pops out six minutes later. No food adventure would be truly complete without ending on a sweet note. lotus root as a form of medicine but was eventually won over by the taste and texture of karashi renkon. According to another tale, the shape of the sliced lotus root with its nine holes resembled the family crest of the Hosokawa clan and commoners were forbidden from eating it until the collapse of the feudal system in 1869. Crunchy and fiery, karashi renkon is now traditionally eaten as an otsumami (おつまみ), a small dish consumed with alcohol. But be warned – take small bites unless you enjoy a sharp shock to your nose from the mustard.

Red bean paste and sweet potato are wrapped in batter and steamed to get chewy yet soft, sweet morsels. It’s highly recommended that you pay Kumamoto an “ikinari” or “all-of-a-sudden” visit too. Although you may wish to do a little planning beforehand, as it will take some time – or several stomachs – to explore all of Kumamoto’s diverse and unique cuisine.
