Certification of Japanese Food and Ingredient Supporter Stores Overseas Our mission is promoting safe and delicious Japanese food products and alcoholic beverages to every corner of the world. We are looking for partners who can help us do that.

Each person is an ambassador introducing Japanese food and ingredients to the world. The Certification System of Japanese Food and Ingredient Supporter Stores Overseas is a new program recognized by the Japanese Ministry of Agriculture, Forestry and Fisheries (MAFF) in 2016. This is a system to certify restaurants and retail stores around the world as “Japanese Food Supporters” which actively use food products or alcoholic beverages made in Japan, and work to promote their appeal to a broad range of people.

For many foreign tourists, animation remains a key motivation behind visits to Japan. In fact, anime and manga are set to take on larger roles in promoting travel across Japan under a new initiative jointly backed by stakeholders such as Kadokawa Corp., JTB Corp., Narita International Airport Corp. and Japan Airlines Co., — the “Anime Tourism 88-Stop Pilgrimage” was created by surveying fans worldwide over the period of a year. HOW TO RAISE A BORING GIRLFRIEND 冴えない彼女の育てかた

This interesting tale about five students developing a computer game began as a light novel series that received both a manga and anime adaptation. The main protagonist Tomoya Aki, an otaku who enjoys watching anime, teams up with three of his friends to produce a visual novel computer game starring the beautiful but otherwise ordinary Megumi Kato. Memorable locations which serve as inspiration include Akihabara Station and Kyu-Furukawa Gardens in Tokyo.

This animation is based on the highly acclaimed volleyball manga of the same name by Haruichi Furudate. Serialised in Shueisha’s Weekly Shōnen Jump, the plot follows protagonist Shōyō Hinata, who gains a sudden love of the team sport. Together with his teammates, he overcomes many obstacles including his short stature to climb to the top. Set in Miyagi Prefecture, Sendai Station and Sendai City Gymnasium are two of the places featured in the series.

This 2015 animated youth drama film produced by A-1 Pictures centres around Jun Naruse, who loves to talk. She loses her ability to speak after a certain incident that causes her family to fall apart. This leads to a story driven by emotional, youthful characters who are unable to say what they feel and highlighted by multiple poignant moments. Some memorable scenes in the film include Daiji-ji Temple in Yokoze Town (大慈寺、横瀬町) and the Bokusui Waterfall within Hitsujiyama Park, Chichibu City (羊山公園牧水の滝、秩父市). 8

Another enchanting production from the brilliant Makoto Shinkai, this film consists of three sections — “Cherry Blossom”, “Cosmonaut” and “5 Centimeters per Second”. Revolving around a boy named Takaki Tōno, the story follows his move from Tokyo to Kagoshima, and his unfulfilled love for his elementary school classmate Akari. Fans will recognise Iwafune Station and Mt. Iwafune in Tochigi as backdrops of key scenes in the movie.

This anime series produced by MAPPA follows Japanese figure skater Yūri Katsuki, who suffers defeat in the Grand Prix Final and returns to his hometown to rethink his career. When a video of him re-enacting his idol Viktor Nikiforov’s skating routine goes viral, Viktor flies to Kyushu and declares himself Yūri’s new coach! The breathtaking choreography was done by Kenji Miyamoto, a two-time Japanese national champion, while location inspirations include Karatsu Castle, where Viktor famously takes a selfie in the anime! I want everyone to get hyped up and join us in dancing as many of our dance moves are easy to follow. Q: What are some of your goals and dreams as a group for the future? We do not get to go abroad much so we want to perform and make ourselves known overseas more often! Q: Please share with us some of your upcoming music projects (e.g. plans for a new single/album)! Our new single “Itsuka dekiru kara kyou dekiru” is the theme song of the movie “Asahinagu”. We are also looking forward to holding our very first concert at Tokyo Dome in November! Q: Do you read manga/watch anime? If yes, please share some of your favourite series and tell us why you like them! I really love anime and manga and I am recently addicted to Code Geass. The anime is about robots and the battle scenes are very well developed. The plot also talks about school life, and I like the heart-warming stories which can be found in school life anime. The movie is about a group of girls who work with all their might in Naginata ( 薙刀), an ancient Japanese martial art. When people think of anime and Tokyo, the first place they think of is Akihabara. But there is so much more to Tokyo’s anime landscape than that dazzling stretch of street. The mecha mecca, Gundam fans will make their pilgrimage to Odaiba to see the giant model of the (then) RX-78 Gundam. However, tucked away in Ikebukuro are stores like Yamada; that has an entire floor dedicated to Gundams, Labi and Yodobashi that are filled with kits and other anime merchandise. Ikebukuro is also home to the infamous Otome Road where hardcore female anime fans can find doujinshi, games, manga and more that cater to their fujoshi (腐女子) needs. In summer, tokusatsu (特撮) fans can even check out a number of themed stage shows and festivals such as the Ultraheroes’ Ulfes. At

such events, you can meet, shake hands and take photos with your favourite heroes, all for a small price. Around Tokyo, you can occasionally find seasonal anime cafes, such as Animate Cafe or Q Pot Cafe. These serve up themed dishes and drinks with exclusive takeaways that are available to diners. They are always crowded so reservations are usually required before hand. Last but not least, is Nakano Broadway. The mall is a meandering maze filled with over 20 stores belonging to mammoth anime and manga brand Mandarake. Each of the stores sell different types of merchandise ̶ authentic animation cells from series such as Neon Genesis Evangelion, anime scripts, second hand toys, limited edition figurines, retro toys and more.

Thought to bring good luck, the owl has been a community symbol in Ikebukuro since WWII. Hence, one can expect numerous sightings of owl-themed designs throughout the streets. Considered to be Ikebukuro’ s central location for decades, the west exit has deep roots in the district ’s history and culture. With the establishment of a rail line in 1914 (present-day Tobu Tojo Line), Ikebukuro became a hub for educational institutions, starting with Rikkyo University. History of Sake

From fairy tales to real-life pubs The method of using koji malt to ferment sake

is a technique that has been around since the 8 th century, but it has been discovered that even before that, sake played an important role in ceremonies involving the worship of gods. The most well-known of these is an ancient ceremony called Ninamesai, which is still carried out today. In November every year, thanksgiving for the year’s harvest and prayers for another bountiful year ahead are marked by making sake from newly harvested rice. Sake is lined up together with treasures from the mountain and sea as a precious offering to the gods. At the end of the ceremony, sake which has been prepared is shared amongst the people as a form of communion with the gods. It is thought that this ritual is the origin of sake banquets. Within Japanese folklore, there is a story of an eightheaded monster serpent which retreated after becoming drunk with sake, and there have also been records that in the 3rd century, people drank sake to grieve their loss. In this manner, Japanese culture is closely entwined with sake, and the alcoholic drink is consumed in accordance with seasonal rites. During the Heian Era (794-1185), there was a division in the palace that specialised in sake making, and it was common for monks within temples to brew sake. However, because sake brewing has remained the domain of a special privileged class since the past, it is not something made by common folks in their homes. The high quality sake similar to that found today evolved in the early Edo era (17th century), when Japanese sake brewing techniques were refined. During the early 18 th century, izakayas (pubs) where sake could be enjoyed with food were born. This was a service meant to cater to the working population that came from the surrounding regions, which resulted in an imbalanced ratio of males to females in Edo, such that eating out and enjoying sake became the norm. Scenes of men sitting elbow-to-elbow in a simple and cramped shop, picking on simmered vegetables and tofu while occasionally pouring sake into a small cup and sipping on it are not so different from 21st century salarymen in Tokyo today. Indeed, sake is deeply rooted in the hearts of Japanese people since the past to the present.

Matsuo Taisha Shrine The term “omiki” refers to sake offered to the gods, indicating the deep relationship running between shrines and Japanese sake. In the past, the Hata clan had a wide influence in the country and many shrines dedicated to them. In particular, Matsuo Taisha Shrine is famous for highlighting the clan’s excellent sake brewing techniques within Fushimi Town, an area renowned for its sake. As such, sake barrels from all over the country can be found within its premises. 30

Japanese sake, or seishu, can be said to be a fermented brew from rice, koji (rice malt) and water. The type of rice used is different from what we consume, and varies according to brewery and region. While the ingredients are simple, the quality of the rice and water have a large impact on the resulting sake. In general, water that is rich Ancient sake brewing tanks

Brewing sake is a three-step process called sandan-jikomi that starts with rice processing, koji malt-making and yeast startermaking. Other procedures include low-temperature fermentation as well as pressing and bottling. The whole process involves the labour and cooperation of all the sake craftsmen in the brewery, and the leader of the group is called the toji. On top of overseeing all manual steps engaged in the process, he has to take into account the humidity of the sake brewery and outdoor temperature when controlling the process. Japanese sake brewing in local breweries is done only during the winter season from November to March as most of them are unable to absorb the huge cost of running facilities, unlike major sake manufacturers. This process is called kanzukuri, or winter manufacturing. Making use of the cold during winter to counter the heat that is produced during the fermentation process, less resources are used to manage the overall temperature. Futsushu is a term referring to ordinary or table sake. These sake do not fit into the eight premium categories. Under futsushu classification, manufacturers are not allowed to use more than 50% of alcohol or food addictives, such as sweeteners.

Held from 28 to 30 July, the inaugural Ramen Revolution took place at Resorts World Sentosa. Visitors enjoyed piping hot ramen at the venue, which is an impressive tourist attraction on its own. Besides Japanese, many locals participated in the talk show and eating competition co-hosted by special guest Giant Shirota on the main stage, firing up the entire event venue!

The very first ramen event in Singapore saw a venue packed full of visitors throughout all three days. Long queues were spotted at all ramen booths — amongst those in line were locals who were slurping ramen while waiting too. Young and old, families, couples and groups of friends were seen enthusiastically eating ramen!

Legendary food fighter Mr. Giant Shirota made his way to Singapore from Japan specially for the event! Besides the talk show with local food fighters, he also took part in the competitive eating battle. The audience were extremely hyped up during Mr. Shirota’s performance, which was a rare sight to behold.

Editor’s Note: Oh my otaku! In this issue, we dived into the world of Japan’s fascinating subcultures and took a closer look at topics spotlighted within the industry. Although the term subculture covers a broad range, we’ve looked up some interesting phrases and words used in the world of anime and manga to share…

T h e o rigi n o f o t aku:「オタク」の由来 The term “otaku” was created in the 1970s and was used to refer to someone was passionate about popular culture. Throughout the years, the true meaning for the word has never been definite; ongoing media and cultural trends have shaped the term’s perception over time. The rise of the otaku began with Osamu Tezuka. Also known as the godfather of anime in Japan, he created classics such as Astro Boy that drew wide fanbases. Disenfranchisement fueled by the economic bubble burst in the late 1980s furthered the growth of anime. As the manga and anime industries grew, the fandom searched for ways to connect. Conventions saw a boom and more college clubs formed, and the word otaku was popularized by a writer who used it to describe convention-goers. In 1988 to 1989, media coverage surrounding a convicted murderer highlighted his participation in fanzines and conventions, giving the term otaku a dark connotation. Even as the case faded from the limelight, the stigma continues to plague the word otaku. Today, after years of evolution, the term has come to refer to “not just fans, but connoisseurs, critics and authors themselves.” This blurring of the distinction between producer and consumer is yet another characteristic of the otaku.

Sake... spotlighting

K

anpai! – the Japanese equivalent for “Cheers!” – marks the start of any evening dining event in Japan. Whilst you’ll come across a variety of alcoholic drinks ranging from beer to cocktails, there’s a fair amount of sake too. Sake, or nihonshu, is Japan’s national alcoholic drink. Known as rice wine in English, the production process closely resembles beer. Rice is fermented by the addition of koji, a kind of yeast made from rice. After about a month, the mixture

is filtered to produce sake, which generally has an alcohol content of 15 to 17 percent. Sake is often served with a flourish, and can come hot, cold or at room temperature. As a sign of generosity, sake cups are placed on a saucer and overfilled so that both vessels are full. More than just a casual drink with dinner, sake plays an important part in Japanese culture. It is considered a sacred drink in Shinto, a widespread Japanese religion, and a spiced version known as o-toso is drunk at New Year to ward off illnesses.

Introducing Kitakata sake...

K

itakata is a small town surrounded by mountains and rice fields in the Aizu region of Fukushima Prefecture. It boasts eleven sake breweries that are easily identifiable by large balls of cedar hanging outside. Known as sugidama or sakabayashi, these mark the production of new sake. When the green needles turn brown, it is said that the sake has aged enough to be ready for drinking. The natural geography of the region lends itself to sake production. The cold climate allows for a slower fermentation process and rice has

plenty of growing space. Crucially, though, the nearby Mount Iide provides an abundance of water. Moreover, it’s soft water, which slows the fermentation process, yielding a sweeter taste. Fukushima Prefecture has become one of the most acclaimed sake-producing regions in Japan, winning the greatest number of gold awards at the prestigious Annual Japan Sake Awards for five consecutive years. They claimed an astounding 22 gold awards for the brewing year 2016, thirteen of which are from Aizu, with five of those in Kitakata!

A changing industry: sake’s resurgence

T

he achievements of Fukushima sake should be appreciated within the context of the entire industry. National sake consumption reached a peak in 1973. However, breweries had largely sacrificed quality for quantity to meet this demand. At the same time, imports of foreign beverages were becoming cheaper, and their exotic image made them an increasingly popular choice. As a result, sake consumption declined to just a third of the 1973 level. But over the past couple of decades, the industry has seen a resurgence. Young

brewers are taking over family businesses and many have even taken on the role of the master sake brewer, thereby gaining more control over the production process and taste. The creative younger generation are striving to target new consumers, introducing fruity and sparkling sake to attract females and the younger crowd. For one Aizu brewer, he envisions the entire region becoming a hub of sake tourism. And with ambitious goals like these, it might not be long before many more visitors are raising glasses and shouting “kanpai” in Kitakata.
