Alas, the rainy season has come to Japan. Wanting to convey tsuyu (梅雨, rainy season) through my paintings, I immediately thought of how rain beautifies flora, adding a special melancholic depth to it. I gathered all the different kinds of green pigments I had collected over the years and laid the canvas with a deep liquid green base. Visualising a rainforest, I painted the image I had in my mind, with a couple of fern motifs to add to the lushness of it all. Satisfied with the result, I took a step back thinking that I had managed to capture the essence of the damp weather. Yet, something still seemed to be lacking. Determined to find out what that missing piece was, I grabbed my umbrella and headed to my favourite Ueno Park for some inspiration. As I walked through the park, 4

heavy droplets fell from the now green boughs of the cherry trees. It was at this moment that I heard a cheerful croak nearby, almost as if something was rejoicing in the rain. Following the sound, I finally came face to face with a little frog. I thought to myself — ah, how nice it must be to be a frog in the rain! Pulling out my ink and brush, I sketched it right there and then. It stood still for me, as if understanding my intentions, and hopped away just as I was done. I had found the missing element to my painting! Even in the midst of the rain, the frog still breaks into song. A testament to the beauty and joys of rain, this little creature represented the celebration of the season despite its gloomy skies.

Ramen Revolution 16 Presented by
One of Japan’s most iconic food items, ramen has become an influential global food trend. But do you know how it began? Ramen researcher Ishiyama Hayato takes us through the past, present and future with his noodle-y know-how.

❹ Hakata Ippudo moved from opening stores in the Asian region to their first store in New York in 2008, which placed first on American review site YELP. There is no doubt that Hakata Ippudo is behind the recent ramen boom in New York. Over in Italy, Ryukishin, an Osaka restaurant specializing in Shio ramen, opened a booth at Expo Milano. This is worthy of attention as opening a store on such a global stage proves the ramen industry’s dedication and enthusiasm to introduce the “oriental flavour” to the world.

Ramen gained more popularity throughout Japan at the beginning of the Showa Period (1926-1989), especially in Hokkaido and Kyushu, but it was only after World War II that there was a ramen boom. Since rice was scarce after the war, many noodle shops took the opportunity to serve ramen instead due to cheap flour supplies. ❺ The popularity of ramen has surged in the Asian countries such as China, Singapore and other developing nations over the recent years. In these areas, ramen is sometimes called Japanese lamian to differentiate it from Chinese lamian. While the local noodle dish might cost around 300 yen (S$4), the price of the Japanese ramen is at least three times more. Japanese ramen shops are used to be located in premium locations such as shopping malls and busy shopping districts. For the locals, Japanese ramen used to be a dish to eat with family and loved ones on a special occasion. However, more ramen has become more affordable and accessible in the recent years.

Just like Tokyo, foreign customers tend to like heavy and bold flavours in comparison to a simple and plain local ramen dish, which is why the rich flavour of Tonkotsu is the top-selling flavor in other countries. Hence, huge chain ramen brands like Aijsen Ramen, Hakata Ippudo and Butao, even Menya Musashi, a pioneer of seafood-base ramen, offer tonkotsu ramen to their overseas customers.

Sharing the news ❷ Ramen’s popularity exploded internationally thanks to the introduction of the internet. Social media, digital news and websites, made it easy for people to look up information previously constrained to paper and TV medium. Up-to-date information, new opens, secret menus and must-see shops at travel destinations are now easily accessible anytime and anywhere. With over 30,000 ramen shops nationwide and each store offering a plethora of unique menus and services, the internet is the perfect platform for both shop owners and customers to share the latest information. As people shift from computers to smartphones and tablets, information is literally at their fingertips.
We launched the first and only largescale ramen event in Singapore at Resorts World Sentosa, with special guests who flew down specially from Japan. Besides slurping ramen from different stores, visitors could also participate in the usual voting while watching exciting stage performances and entertaining programmes.

❸ Because ramen is considered a staple food to Japanese, it came as a big surprise when a ramen shop was listed in the Tokyo Michelin Guide 2015. Ramen was categorized as a fast food or a type of Chinese food for a long time, but is now recognized as a gourmet food and listed in one of the most prestigious food guides in the world.
Future ❻ Washoku ( Japanese cuisine) is listed on UNESCO's Intangible Cultural Heritage list, an asset Japanese people are proud of. And out of numerous Washoku dishes, ramen is always a popular choice for many. Ramen has created its own food culture and is now on the path to becoming a global food choice. Someday, people might be able to enjoy ramen with local flavours all over the world.
In 1994, Kumamoto Prefecture’s Ajisen Ramen initiated the globalisation of ramen culture by opening their first international store in Taiwan, followed by stores in Beijing and Hong Kong. Following in their footsteps, other brands such as Hakata Ippudo and Menya Musashi also opened their stores in Hong Kong. Ajisen Ramen now owns about 700 international stores. Against the 500 stores that Japan’s largest chain ramen brand has, it is evident that ramen has great global potential.
across all 47 prefectures in Japan. Nowadays he visits ramen shops at the rate of 2 per day for research and reviews. Apart from writing ramen reviews for magazines, Mr. Ishiyama is also the author of a series of ramen books and is a regular cast member of several TV shows. His ramen career also involves developing new types of instant noodles and providing business consultation for the ramen industry. To date, he has interviewed more than 1,500 ramen shops. In this issue of WAttention, we talk with Mr. Ishiyama and introduce you to the world of ramen, including its history, styles, and some of the hottest ramen shops in Japan. WAttention Singapore |

Enjoy every delicious drop of soup from this Hokkaido ramen specialist; its milky, delicate base is carefully simmered for 20 hours and seasoned with just the right amount of salt. This is also the base used to create its one-of-a-kind Tantanmen — mixed with rich sesame paste and a dash of chili oil, the moderately spicy soup is invigorating and pairs wonderfully with its eggy noodles.

WHAT IS RAMEN?
After Japan opened the door to the world in mid-19th century, Chinese noodles flew into Japan and widely spread with local modifications. Now it is known as “Japan’s national food” with nearly 5.3 billion* (only accounting instant noodles) consumed last year. There are different type of noodles, such as straight, curled (or chijire), egg-flavored (tamago) with the size of thick, medium and thin. Different kinds of broth

East Tok Journey along the Sumida River
Located in the heart of East Tokyo, the Sumida River leads to Tokyo Bay, flowing through several of the metropolis’ iconic spots including Asakusa, Ryogoku and Tsukiji. The river was once the most important trans-shipment centre of goods during the Edo period (1603 – 1867); during this time, Ieyasu Tokugawa, the leader of the first shogunate, moved the nation’s capital to present day Tokyo and established a system of waterways. 18
| WAttention Singapore
The river also played a significant role in the lives of Edo residents. Besides boating, which was a popular activity then, the people would specially gather at the river banks to enjoy the cool evening breeze and escape the heat during summer. To commemorate the victims of a severe famine in 1733, it also became the main backdrop for the biggest and most notable fireworks display in Japan.
yo
The locals found every way to celebrate the river, whether it was enjoying the cherry blossoms in spring, witnessing spectacular fireworks during summer, or admiring the moon in autumn. In fact, numerous well-loved folktales and ukiyo-e (浮世絵, woodblock prints that depicted everyday life in Edo) paintings, as well as kabuki (歌舞 伎, Japanese classical theater) and traditional dances were inspired by this very river.
Thanks to constant upgrading and renewal efforts, Sumida River’s waterside provides you with some of the most unforgettable experiences, many of which cannot be found anywhere else in Tokyo. Get on board and follow us from Asakusa to Odaiba as we sail along the Sumida River exploring its rich history and the many locations that have prospered from it!

Chanko Kirishima Dine like a Sumo wrestler!
Edo NOREN
Exit (JR Chuo-Sobu Line)
To really immerse yourself in the culture of sumo wrestling, tuck into some Chanko Nabe (ちゃんこ鍋 , a form of Japanese stew), the dish commonly eaten by real wrestlers as part of a weight-gain diet. Its name is said to have derived from a combination of the words tochan, an endearing name a student would call his master, and ko, which is the Japanese word for child. Get a taste of this nutrition-packed dish at Chanko Kirishima, founded by the former sumo ozeki (second-highest ranking) Kirishima. Their signature tonkotsu (豚骨, pork) broth, is inspired by the owner’s Kyushu roots.
Although meat from four-legged animals was traditionally avoided as it symbolizes defeat for a wrestler whose hands cannot touch the ground during a match, this practice no longer stands today. Sip on an exquisite cup of sake as you tuck into their extensive course meal including sashimi and vegetables. The interior of the shop is also decorated with Kirishima’s memorabilia from his career, including awards and tournament photos. If you’re lucky, you might even meet him in person during sumo season!

Among the many buildings at Toshugu, this five-storey pagoda is one to look out for. Donated by a feudal lord in the 17th century, it stands 36 metres tall, with each level representing an element. There are no floors inside, only a single pillar suspended from the fourth floor to 10 centimetres off the ground — a design made to minimise damage from earthquakes. Located at the front of the main entrance gate, this treasure is recognised as one of the best pagodas of Japan.

Central Tokyo is an amazing world on its own, but what about its surrounding areas? If you hop on the JR Chuo Line, you can be in West Tokyo in a matter of minutes. Here, you can experience another side to Tokyo — exciting yet laidback. We explore two of the most popular neighbourhoods, Nakano and Koenji, which used to be a favourite for people from the Edo period too. In fact, Shōgun Tokugawa Tsunayoshi and his father Tokugawa Iemitsu were known to love spending time in Koenji. Follow us as we tour the two areas from day to night!
Tetsugakudo-koen The park of philosophy Unlike the usual ones you find in Japan, this park was constructed by a philosopher who wanted to engage the people’s minds so as to deepen their understanding of the universe. You enter through the “Gate of Common Sense” and exit via the “Gate of the Irrational”, symbolizing a return to the arbitrariness of daily life. Between these two gates lie several other similarly named points. For example, a fork in the path is named the “Junction of Doubt”, so bring along a brochure from the park’s office to help you navigate. The life of the park’s creator, Enryo Inoue, is an intriguing story; A Doctor of Philosophy and founder of Toyo University, he was also a researcher of yōkai (妖怪, supernatural monsters, spirits and demons in Japanese folklore) and mysteries. Dedicating most of his life to understanding the supernatural, he spent most of his earnings constructing the park. To get there, simply hop on bus 41 or 11 from Nakano Station, which will arrive at the park in 10 minutes. Address: 1-34-28 Matsugaoka, Nakano-ku Opening hours: Vary according to seasons. The Tokugawa Shōgun Family and Nakano If you chance upon dog sculptures near Nakano Station, don’t be surprised! These iconic memorials are dedicated to Tokugawa Tsunayoshi, the fifth shōgun of the Edo period, who was also known as the “dog shōgun”. Born in the Year of the Dog, he is said to have loved animals, especially dogs, and is famous for passing laws to protect them by banning their killing. These statues now stand to mark the existence of five big public inuyashiki (犬屋敷 , dog kennels) built in Edo to house abandoned dogs. The kennels reportedly occupied 93 hectares and house up to 100,000 dogs. 28

JŪJŌ GINZA – EXPERIENCE TOKYO LIKE A TRUE LOCAL Jujo Ginza Shopping Street 十条銀座商店街
Want to go where native Tokyoites go? Forget the major shopping districts of Shinjuku or Shibuya and head to the suburbs instead. Just 15 minutes away from the city centre is a quiet neighbourhood called Jūjō that provides the perfect escape from the hustle and bustle of downtown Tokyo. Hop on the JR Saikyo line from Shinjuku station and get off three stations later. Located in Kita ward, the area is famous for its shotengai (商店街, shopping street) called Jūjō Ginza. Take the north exit and you will find yourself right at its entrance. Here, you can catch a glimpse of the lives of the locals: see where they eat, drink and shop! The entire district is a sheltered arcade, so you can visit it rain or shine. Jūjō Ginza dates way back to the end of the Taisho era almost 100 years ago. This is where you can find all sorts of businesses coexisting; from food carts to clothing stores, hair salons, gyms, florists and even a club! You can even get your daily groceries here at much cheaper

prices. A melting pot of all cultures, one can also savour a variety of cuisines like conveyor belt sushi, Indian curry, and even Malaysian Bak Kut Teh. On weekends, visitors from everywhere flock to Jūjō Ginza. Most of the shops tend to close at night, but that is the time when the local izakayas and bars come to life.

One of my favourite places to go is Miyahara, a shop selling a range of cooked meats like chashu (チャーシュー, stewed pork belly), yakitori (焼鳥 , grilled chicken meat), kaarage (唐揚げ, fried boneless chicken) and more. You can purchase a single yakitori skewer at 60 yen. These affordable treats are prepared on spot and are hard to resist!

For those who are sick of the crowds of Shinjuku, how about a trip down to Jūjō Ginza for a change? You’ll love it, I promise.

As of 2017, there are an estimated 32,000 ramen stores in Japan. Tokyo tops the list of prefectures with the most ramen stores, coming in at 3,296. Hokkaido follows with 1,999 stores and Fukuoka comes in third with 1,507 stores.

However, based on population density, Yamagata finishes first with 67.41 stores per 100,000 people, while Nara comes in last with 12.97 stores per 100,000 people. The name behind Nissin’s popular line of UFO Yakisoba has a deeper meaning than most know: U stands for umai (う まい,delicious), F for futoi (太い, fat) and O for ōkii (大きい, big).

Close to ART
21st Century Museum of Contemporary Art, Kanazawa Duration: 15 mins
An artful look into the city of Kanazawa Close to ART takes you on virtual tours of the numerous art museums found across the country — view the evocative works on display up close while learning about the town where the museum is located! In the beautiful opening sequence, the audience is offered glimpses of the city of Kanazawa, home to well-preserved chaya districts (茶屋街 ), before being shown a bird’s eye view of the 21st Century Museum of Contemporary Art. Shaped like a circle, the aesthetically pleasing building has four entrances/exits on opposing sides to remove all sense of beginning and end to promote freedom of movement. Throughout the program, there was vivid narration paired with strong videography which enabled me to fully appreciate both the exterior and interior of the museum alongside the art pieces. Frames were skillfully sped up or slowed down to capture the motions and emotions expressed by its visitors, which had me feeling fully immersed in the contents.

Many prominent exhibits were introduced, including ‘Colour activity house’ by Olafur Eliasson. Consisting of three free-standing, curved glass walls in an open space, visitors are left to navigate a constantly changing colour field where the walls overlap; these types of interactive art pieces are amongst my favourites! I especially enjoyed the last section where we were shown the tedious process behind a piece called ‘Cross, sarasa design, maki-e’, whereby gold powder is carefully applied to Japanese lacquer using a kebo brush. The use of modern art as a bridge to the past and rich culture of the city is something I personally find gratifying. Another aspect I liked was the program’s use of quirky, artsy music in the background that matched well with its overall theme. Broken down into several segments, all the information provided was easy to digest, and one of the most striking phrases I remembered clearly from the narration was: “The people of Kanazawa are flexible in their conceptions of tradition”, which succinctly reflects the 400-year-old city’s welcoming attitude towards new ideas. Catch this series to uncover the enchanting ties which connect a city to its arts scene!
Japan’s Top Inventions Conveyor Belt Sushi Duration: 15 mins
Sushi makes the world go round… and round and round Japan’s Top Inventions brings you behind the scenes into how some of the most frequently used items or technologies in the world came to life. Ever wondered how the popular conveyor belt sushi came to be? Starting with one man’s dream to innovate and do the impossible, the seemingly daunting idea eventually came to fruition after 10 years of experimenting. Even if you’ve never given much thought to it before, the short but insanely interesting program will capture your full attention just like it did mine. Using a combination of re-enactments, scenes shot on the premises of actual conveyor belt sushi stores and interviews with the creator’s son, the compelling storytelling had me glued to the screen the entire time. After I was done with the episode, I found myself wanting to see more from the same series. For those of you who have always been curious about the science and efforts behind a product’s creation, this is a show that you cannot afford to miss. 38
