Shiretoko Ice Walk

Designed so that the entire Sea of Okhotsk can be seen by diners, the scenic restaurant serves up seasonal seafood rice bowls.

The Shiretoko Peninsula is the southernmost region of the northern hemisphere to see ryūhyō (流氷 , drifting sea ice). Under good conditions, you can join “ice walk tours” while dressed in dry suits.

This 18-kilometre-long road stretches straight into the horizon, and because of the height difference, it looks as though it is leading to “heaven”. From end September to early October, catch an unparalleled view of the sun setting in the middle of the road.

Abashiri Prison Museum Constructed in the 1980s, the prison was modernised in 1984 and later converted into a museum which showcases the prison cells as its main attraction, as well as the punishment chamber among other facilities. オホーツク流氷館

Okhotsk Ryūhyō Museum Showcasing a large-scale projection mapping in Hokkaido, the museum also displays actual drift ice and introduces how it forms. Check out their marine creatures exhibits and the spectacular view from their observation deck too!

Kushiro City Red-crowned Crane Natural Park Revered by the Ainu people as “god of the marsh”, Japanese Cranes were once thought to be extinct until 1962. The park houses a specialised breeding facility with some of the world’s foremost artificial incubation equipment.

Lake Kussharo One of the best places to catch the natural phenomena of unkai (雲海 , sea of clouds), this is also the largest lake formed in a volcanic crater in all of Japan.

Marimo Exhibition & Observation Center Accessible only by watercraft, the centre is where you can observe marimo (マリモ, algae balls) and learn about their unique biology. There is also an enormous aquarium that replicates the bottom of Lake Akan.

Mikuni Pass Observatory At an altitude of 1,139 metres, this is the highest mountain pass in Hokkaido. From its observatory, visitors can feast their eyes on a grand forest of trees which include fir, spruce and white birch. 池田ワイン城

Ikeda Wine Castle Set on a hillside overlooking the town, this “castle” is where Tokachi wine is aged and sold. Learn more about the cultivation of grapes and wine-making processes in the basement and taste some before leaving!

Held to celebrate grape harvests and the start of wine-making, this merry event features all-you-can-eat Tokachi beef, hamburger steak and chan-chan yaki, as well as allyou-can-drink red, white and rose wines made locally.

With a history of over a century, this confectionery is a speciality of Ikeda Town and made from wheat flour, eggs and banana essence.

Nicknamed “Spectacle Bridge”, the reflection of the 130-metrelong concrete arch bridge on the water surface during warmer months resemble round eyeglasses. During winter however, the bridge is surrounded by a white field of snow that mirrors the azure sky.

Iwanai Senkyou Gorge Extending along the Iwanai River, this gorge is found at the foot of the Hidaka mountain range. The annual Iwanai Gorge Autumn Festival is held here in October, when visitors are treated to spectacular views of fall foliage.

Shichiku Garden 幸福駅(恋人の聖地)

Kōfuku Station A closed railway station on the now defunct Hiroo Line, the spot remains popular because of its name, which means “happiness” in Japanese. Climb aboard one of the old train cabins for a trip back in time.

Created by the sprightly “Flower-blooming Grandma” Akiyo Shichiku when she was 63 years old, this field of flowers changes colour with the seasons. Visitors pay to enter but can pick as many blooms as they like to create a custom bouquet.

Tenma Kaido Highway Stretching 139 kilometres from Obihiro City to Tokachi, construction of the highway took 27 years and was carefully integrated with the natural environment. Enjoy the superb view of the Hidaka Range as you drive along this route.

A Basic Guide to Landscape Photography Launched in February this year, the Canon EOS M50 is lightweight, user-friendly, and has dynamic range. As the Hokkaido region featured in this issue is known for its breathtaking scenery, this article will cover some basic tips to help you get started on your photo journey!

Bring the right equipment

The importance of lighting

The best timings for taking photos are usually just after sunrise or just before sunset. During these moments, the light that falls on the subject of the photo is less harsh, thus making the colours pop. You will end up with a picture having better contrast and appearing more vibrant.

As a mirrorless camera, the Canon EOS M50 is the perfect tool for capturing landscape images that are filled with refined details and rich colours. Other useful equipment you can bring along include wide-angle lens and a tripod stand.

Composition matters Find a wide backdrop

A vast open field is the best! Keep a moderate ratio of sky to showcase the landscape’s unique features. Shoot as wide an angle as possible while maintaining the balance of the photo. The Vari-angle LCD monitor feature in the Canon EOS M50 will come in handy when shooting at difficult angles.

Stick to the Rule of Thirds, which is the placement of the subject within the intersection of the grid lines. This helps to guide the viewer’s gaze to the focus of the photo. You can also use diagonals by creating points of interest or emphasise the distance between objects in the foreground and background to add depth.

For urban landscapes or architecture

Capturing straight lines is key. Sometimes, standing below the structure and using a wide-angle lens to point upwards might lead to unwanted distortion. Therefore, it is alright to take a few steps back to get a wider shot.

Grab lunch at Kushiro Washo Market, a traditional market famous for its Katte Don ( 勝手丼, rice topped with what you like). You can choose the toppings from fishmongers and specialist fish-roe stalls. Upon transferring to Obihiro, you will find Ryugetsu Sweetpia Garden, the headquarters of Hokkaido’s most popular sweets maker. Savour the distinct taste of Hokkaido with its famous tree cake made from ingredients of the region!

After you are done shopping at Outlet Mall Mitsui or RERA, have some lunch before heading to Noboribetsu.

TOKACHI – HEARTWARMING GOURMET AT EVERY TURN Famous for being the region that has the most “Hokkaido-like” flavour, Tokachi is known for its unique nature attractions, good food and great hot springs. Here is where you will truly get a taste of local activities and experiences! The first to make it on our list of recommendations is the Bitou Farm tour. It was an eye-opening experience to see how they made use of nature’s elements to grow potatoes. After spending a day outdoors, the owners kindly prepared samples of fried potatoes for us. Seared with butter, the locally produced potatoes were an irresistible snack which warmed our tummies . If you’re looking for something unique to watch, head to Obihiro Racecourse. This is no run-off-the-mill horse race as it involves majestic horses competing in a battle of strength and speed; the jockeys stand on metal sleighs that weigh up to a whopping 450 kilograms! This style of fireside cooking originated from Hokkaido, where fishermen would grill their fresh catch using coal kept in a wooden box. The food was prepared on an oar from the boat and then handed out . Rokkatei (六花亭 ) and Ryugestu (柳月) will delight those with a sweet tooth. These stores boast a wide variety of sweet treats that will satisfy your cravings . Last but not least, a trip to Hokkaido is not complete without tucking into their soul food―a piping hot bowl of Soup Curry. Unlike the regular Japanese curry, Soup Curry is less thick and more broth-like. Expect to find a generous amount of chunky vegetables like carrots, lotus root and broccoli in this flavourful dish. This volume, we cover all Singaporeans’ top Japan travel destination–Hokkaido! Once the island inhabited by the Ainu Tribe, the region used to be called “Ezo”, meaning “Land of the Ainu”. As the indigenous people of Hokkaido and Russia, this isolated group had their own language, religion and customs.

An ci e n t Ai n u Ri t ua l: IYO M AN T E Known for being a hunting tribe, the Ainu people had many fascinating ceremonies and rituals. One such example was Iyomante (イヨマンテ), in which a brown bear cub is raised for two years and then sacrificed. Literally meaning “to send something or someone off”, this elaborate ceremony takes about a month for preparation. The bear cub is first captured in a hibernation den during winter, and then raised alongside with the tribe as part of the family. Sake and dango are prepared and offered on the day of the ritual, together with prayers to the deities. As the women gather around it and dance, the bear is eventually shot with arrows by the men of the village. Although the bear was not considered part of the sacrifice, the people believed that they were freeing the spirit of the gods trapped in the bear into the divine world. After the bear’s death, villagers mounted the bear’s skull on a spear for worship and drink its blood.

Our powered up second edition was held at Resorts World Sentosa from 27 to 29 July this year. A total of 16 ramen and non-ramen stalls joined us this round, dishing out limited-edition items during the three-day affair. Long queues were spotted at the booths, with some products even selling out before the event ended. Let’s hear from some participants on their most memorable moments!

JUNK STORY We’re thrilled to have won first place! It was somewhat a surprise as we thought that our Extreme Black Ramen was not immediately aesthetically-pleasing, but I guess that was what made the crowd curious and ended up having the biggest impression. Come celebrate our 6th anniversary with us this year at our various outlets!

It was moving to see customers return to our store even on the same day, and we were especially happy to see families come down with their children to enjoy our ramen. We look forward to opening a store in Singapore in the near future and hope to bring our exclusive ingredients from the original store in Japan down too.

I came down to Ramen Re volution last year, so this is my second tim e here at the event. I lo ve eating nood les, and the Truffle Ra men from KA NSHOKU RAMEN did no t disappoint.

As a huge ramen fan, I feel that MENYA SAKURA has one of the best Tonkotsu Shōyu Ramen in Singapor e. I have seen them at the event last year and was very happy to see them again this time. Their Truffle Chas hu Don was out of this world too.

Initially, we were a little unsure if locals would come to like the taste of Jiro Ramen, but we are glad that they supported us to the point where we won third place! We just opened in February and want to continue to create new flavours for the locals to keep them coming back.

We tried the Ebi Mazes oba as we were curious to find out a seafood version of ramen. We will definitely go back to EBI-TORI ME NZO to eat their Ebi Tsukemen aga in!

The juices from KAGOME are perfect for the health conscious who are looking for something wholesome and tasty at the same time. Their generous tasting samples helped me to decide which flavour I liked. I’ll make it a point to purchase the next time I see it!

CHAO CHAO GYOZA We were really surprised to see many Japanese visitors and are thankful for the good reviews. Special shout-out to those who were willing to wait despite the long queues! Look out for our kiosk concept store in Osaka soon.

Despite the language barrier, we had a lot of fun! As our first time in Singapore, we introduced our ramen to the locals. Next time, we want to bring our cha-han (チャーハン, Japanese-style fried rice) here too!

The Cheese Ramen I had from KANSHOKU RAMEN was really tasty and the spice level was just nice. I expected grated parmesan but was pleasantly surprised by the creamy broth.

The whole event just felt like a big ramen family gathering! It was great to see other ramen stores passionately cooking a dish we all love. Hope to see everyone again next year!

It was a thoroughly enjo yable experience slurping up Tan tanmen from SANTOUKA in the hea t! I loved how there were also inst ant noodles available for take -home, ice cold drinks, and desser ts.

We had a great crowd at the event and are very happy with the response! We sold out in the afternoon of the third day; since we were launching a series of new flavours, we feel really confident about the sales from now on.
