The pictured zoni dish is a soup of chicken dashi stock with simmered root vegetables, to which roasted mochi and fragrant mitsuba (cryptotaenia japonica) has been added.

し む

Zoni is the name of a soup containing mochi that is traditionally eaten in Japanese households on the first day of the New Year. Depending on the region, the ingredients can vary, and the soup may be a clear soup, soy sauce-based, or made with miso or white miso. But whatever the style, zoni is a combination of a soup containing several vegetables. Preparations for a New Year’s feast traditionally begin on December 31. Considering that the first day of the month had been called tsukitachi (rising

of the moon), a dark, moonless night was important for resetting everything, and eating zoni on the morning after that also meant that the body was being prepared to accept new things. Burying yourself in the diversity of a full year—despite being surrounded by an array of happenings, the people of ancient times must have focused their wisdom and consideration for their health into these tiny servings of zoni, praying that they could continue to live on.

Eating mochi, where the god of the New Year had been believed to dwell, first thing in the New Year, is an act that represents receiving their energy. For the Japanese, this god had no been doubt a manifestation of their ancestors.

Rieko Ido A graduate of Kokugakuin University, researcher of ancient Japanese customs and knowledge, conducting technical analysis on findings to apply them to modern lifestyles.Currently teaches at Tama Art University.

Beauty Secrets Found in a 400-year-old Sake Brewing Technique The power of sake nourishes body and skin, bringing out the natural beauty from within.

History The birth of a line of unique skincare products originating from sake

Located in Kanazawa, a city full of rich culture, Fukumitsuya has been making high quality sake for nearly 400 years. Premium sake rice from select farmers and pure “Hyakunensui” mineral water that travels underground for 100 years are key ingredients for Fukumitsuya’s artisan sake collections. Sake is a work of nature. Brewers have to be in tune with all of their senses to know the right condition of the rice’s fermentation process. This is why they take pride in working with their hands.

It is often said that the brewers have soft beautiful hands. There is something in sake that magically nourishes the skin. Geisha knew about this beauty secret for a long time. They would often apply sake on their hands and faces before putting on their makeup. Fukumitsuya saw a great possibility of sake in skincare products and started researching the key components that make skin so supple and radiant.

The secret was found in the rice fermentation process, which naturally produces an abundance of amino acids, minerals and vitamins. After many trials and errors it was able to formulate a groundbreaking solution: FRS (Fermented Rice Solution). FRS restores moisture and replenishes skin cells, making skin look fuller and healthier. Through the development of the alcohol-free FRS-01, the Amino Rice series was created, perfect for those with sensitive skin.

Lineups Natural moisturizer formulated with FRS-01 Amino Rice Series As winter approaches, people’s skin can feel dry and irritated. The Amino Rice series might be the perfect elixir for nourishing dry skin. This premium skincare line not only contains FRS but also other active agents for anti-aging. Just like its sake, its cosmetic products are all made from natural and safe ingredients.

Amino Rice Natural Activation Oil Beautiful skin has the right balance of oil and moisture. However, skin is constantly exposed to many damaging factors which can deprive the skin of its natural oils. Amino Rice Natural Activation Oil is a special anti-aging oil that hydrates and revitalizes deeper skin cells. Formulated with vitamins E and C, squalene and ceramide, it helps skin retain moisture and dramatically improves its radiance. Amino Rice Natural Moist Lotion: 120ml 5,600yen

Comment from the beauty journalist: Mayumi Kurata “For centuries sake has been used for drinking, cooking and amazingly even for skin treatments! This comes as a surprise to many foreigners who never knew about the infinite beauty benefits of sake. Today many people consider skincare products as ‘food for the skin’ and that skin products we feed our skin should be made from natural ingredients. Fukumituya has a long established reputation for being one of the highest quality sake brewers in Japan, so it should come as no surprise to hear that its skincare products are also high quality, safe and made from natural ingredients.”

Enjoy the Rarest and Finest Award Winning Kobe Beef at Kawamura Only the best of the best cattle qualify as Kobe beef. The surprising scarcity of it may even make you wonder, have I ever really tasted authentic Kobe beef?

Supreme calves carefully raised by dedicated farmers Just because a cow is born from a particular breed does not mean its meat will qualify as high quality Kobe beef. Only purebred Tajima-gyu cattle that pass strict criteria qualify as Kobe beef. From their feed to their environment, Tajima-gyu cattle are carefully raised according to a strict process. This accounts for the fi ne texture and quality exclusive to the Tajima-gyu cattle.

Beef carcass grading is determined by yield and meat quality scores *Yield score (A to C) This is classified into three grades depending on the amount or percentage of edible cuts that can be gained from a single head of cattle. *Meat quality score (1 to 5) This is the overall score based on the degree of marbling, firmness and texture, color, quality, and other factors.

Photographic standards have not been made for BMS grades Nos. 1 and 2. This is because no fat marbling is recognized in BMS No.1, and BMS No.2 does not satisfy BMS No.3 grade requirements.

Available only in 43 stores worldwide Due to the strict standards the beef has to meet in order to be labelled Kobe, only 3,948 cows qualified in 2012. Kobe beef is so scarce that even in Japan, only a handful of restaurants are serving it. In recent years, Kobe beef has started to be exported so people have more of a chance to savor its delicacy outside Japan. Nevertheless, there are only 43 certified stores in the world that serve Kobe beef. So make sure you do not miss the chance: tasting genuine Kobe beef is almost a once in a lifetime experience.

Only the chosen few among the Tajima-gyu cattle that pass strict criteria qualify as Kobe beef.

Kawamura is known for its insistence on using the best ingredients and serving only high quality Kobe beef carefully chosen by experienced chefs. Its possession of the best beef, complemented by skillful chefs, is what explains Kawamura's success in pampering celebrities, gourmands, and world-class chefs with Kobe beef's exquisite flavor. No wonder guests flock to Kawamura all the way from overseas. If you deem yourself a real gourmet food lover, be sure to pay a visit to Kawamura and enjoy the great experience it has to offer. The bronze statue is the symbol of certified stores serving authentic Kobe beef.

Behold the Outstanding ‘Grilling’ Technique at Kurumaya Vol.2

Grilling is one of the three principal cooking techniques that have come to define Japanese cuisine. At fine dining restaurant, Kurumaya, you will find a diverse menu reflective of the chefs’ exquisite grilling technique. When preparing Japanese cuisine, it is important to master the art of manipulating fire in order to bring out the flavors of each ingredient fully. At Kurumaya, the chefs selectively vary their grilling between traditional grilling, charcoal grilling and sautéing to best match each ingredient. Experience this luxury by having a meal at Kurumaya, which is located in the monumental Kabukicho of Shinjuku, next to the new 30-stories tall Hotel Gracery Shinjuku due to open in the Spring of 2015.

Charcoal grilling skill refined through the pursuit of the richest taste Kurumaya’s top notch charcoal grilling is the result of the restaurant’s devout chase for the best tasting Japanese cuisine. The chefs have especially put in a lot of time and effort to develop this skill, as charcoal grilling brings out certain textures and flavors in the ingredients that can only be attained through this particular practice. At Kurumaya you can enjoy crispy on the outside and juicy on the inside charcoal grilled yakitori (chicken skewers) and seasonal fish as well as aromatic dishes prepared using hobayaki, a type of grilling distinctive to Japan where bamboo leaf is used as a wrap; again, a technique that is cultivated through experience. By interchanging grilling styles, Kurumaya dishes are made to stimulate all the five senses.

The before and after of the handling of fire makes all the difference in quality Seiyo Kappo Kurumaya, Kurumaya’s Western cuisine on the B1 floor, carefully manages both the before and after of the handling of fire. For example, before grilling the meat, it is brought to room temperature before grilling to produce an evenly grilled delicious meat. In the case of sautéing, Kurumaya is mindful of using a certain thickness of frying pan in order to cook juicy meat without losing the delicious fat. By doing so, Kurumaya is able to meet a high standard, using impressive skills that best prepare each ingredient and in a way that continues to attract patrons. In this way, Kurumaya continues to incorporate advanced cooking techniques that can only be attained through a long pursuit of the best-tasting high quality dishes.

Gaudy, Flashy and Hilarious Robot Restaurant Located deep below Shinjuku’s wild Kabukicho district, Robot Restaurant offers a bizarre but enchanting entertainment show with gigantic robots and bikini-clad girls. Ranked number 16 on TripAdvisor’s Japan’s Top 30 Most Popular Tourist Destinations for 2014, it is surely the hottest place to enjoy the glamorous nightlife of Tokyo.

The Room Worth More Than Waiting For Step into the extravagantly glittering waiting room and be immediately carried away to a different world. While having a light meal or drink, feast your eyes on a musical performance by futuristic gladiator-costumed musicians. Of course this is only the prologue.

World Class Act After being led to the basement and taking a seat at the auditoriumlike hall, the show starts with a big ‘DON!’ with red- and white-wigged ladies drumming loudly on flashing Taiko drums, all of which reflect the Japanese matsuri or festive spirit.

Gigantic Finale With Giants Act by act, the show gains excitement, as high-tech electronics and enormous robots, including a shining neon tank, a snake robot and a huge fembot, take part in the performance. These join together with energetic dancers and a DJ under the flashing laser lights. By the final rave, you will surely be out of your seats exhilaratingly waving your glowstick! 1 KAITENZUSHI NEMUROHANAMARU Dining at a rotating sushi restaurant is a must do in Japan. You can find them everywhere in Tokyo and the great thing about them is that you don’t have to know the names of the fish - whatever looks good on the conveyor belt, just grab it and you won’t be disappointed! This place in KITTE building right outside of Tokyo Station offers very fresh fish and great service; they even give you real oshibori during lunch. If you’re not sure what to try, get my personal favorite item, the fresh scallop from Hokkaido.

gouk - “Wa” Designs That Knows No Borders Fashion brand gouk has been making waves in the industry for its eclectic “Wa”-centric (Japanese) designs. The lovechild of two creatives, gouk sprouted upon a simple realization and bud into a notable brand attracting artists such as the Wagakki band (who collaborated with gouk for their music video “Tengaku”) and the Japanese confectionary kameido (for a limited edition senbei or rice cracker). Today we sat down with Takeshi Kunitomo, the fashion designer behind it all. Takeshi Kunitomo Takeshi graduated from Bunka Fashion College in 1991 and started designing for KINCS (formerly known as S-inc) in 1993. He launched his first brand T.KUNITOMO, following with gouk in 2003.

I hope that people who love “ Japan will also come to love gouk

The meeting of a fashion designer and a textile designer who shared the same love for Japanese culture was all it took for gouk to take physical form. With one being Japanese (Takeshi) and the other British, Takeshi realized that the “Wa” the world sees is completely different from the “Wa” perceived by the Japanese: “When the world thinks of Japan they think of manga, cosplay and a mix of Chinese and Korean cultures.” With this realization, Takeshi was inspired to create a line that appeals to a universal audience.  Takeshi says his passion for Japanese culture and his concept of artistry can be traced back to his childhood when he used to collect Ko-Imari (an Edo-period porcelain featuring elegant blue-and-white designs). By incorporating traditional Japanese patterns and motifs into new styles, Takeshi produces a new type of “Wa” relatable even to a foreign audience: “I hope that people who love Japan will also come to love gouk.” Interweaving the “Wa” of the East and West, Takeshi creates designs which bring Japanese culture to the world.  Since its launch, gouk has attracted much attention for its edgy Japanese style that reflects the various dimensions of Japanese culture, ranging from contemporary Lolita to timeless kimono wear; everything from accessories to shoes is brushed with this distinctive “Wa” touch. This year, Takeshi started the Musubi Project, which sees a new “Wa” artist being invited to work with gouk every three months. Named after the word “to tie” or “musubi,” this project aims to tie one artist to another. The 4th Musubi Project is slated for launch on January 23, 2015.  Find gouk at their KINCS (gouk) flagship store, Laforet HARAJUKU and their newly re-opened Shinjuku Marui Annex branches in Tokyo.

WAttention’s Tokyo Navigator

Amber Liu Taiwan-born Amber is a big fan of Japanese lifestyle goods and stationery. Exploring new shops during Sanpo is her favorite thing to do in Tokyo.

Noun. Sanpo is the act of walking that aims to refresh oneself or simply satisfy one’s curiosity, sometimes without a particular destination in mind.

Kagurazaka is also known as “little Kyoto.” Unlike other modern shopping districts in Tokyo, it still retains the traditional atmosphere of the Edo period. The Kagurazaka Dori main street in between Kagurazaka and Iidabashi stations is a one-kilometer slope lined with shrines, temples, fashionable cafés and restaurants. If you explore into the back streets of Kagurazaka, you will find classical Japanese scenery composed by cobblestone alleyways, cats, geisha houses and high-end Japanese restaurants.

START

Stop 5: FUJIYA

Stop 1: la kagu

The reason why the FUJIYA Kagurazaka store is a mustvisit is the “Pekochan yaki” — the traditional Japanese red bean paste sweet made in the shape of FUJIYA’s mascot Peko-chan. You may see the chain sweet shop FUJIYA everywhere in Tokyo, but the Kagurazaka store is the only place that sells it. Peckochan yaki comes in 7 flavors. I personally love the cream cheese one.

Formerly a book warehouse, la kagu has been refurbished into a complex lifestyle store. Renowned Japanese architect Kengo Kuma kept the original structure and appearance of the warehouse to preserve harmony with the nostalgic streets of Kagurazaka. The inspiring complex is packed with bookstores, outfit shops, cafes, and groceries, all of which are managed by outstanding curators from each field.

Stop 4: Atamiyu Stairs The Atamiyu Stairs is a famous filming spot for the Japanese drama “Haikei Otosama.” Along the stonepaved stairs, you can find several cafes and restaurants refurbished from historical old houses. It is said that the teriyaki chicken shop “Tori Chaya” and the lovely public hot bath “Atamiyu” are must-visit locations. The atmospheric night scenery of Atamiyu Stairs when lit up is also highly recommended.

Stop 2: AKAGI CAFÉ Stop 3: Zenkokuji Temple Originally built in 1595, the Zenkokuji Temple is a historical spot over 400 years old. Based on the instruction of the first Shogun Tokugawa Ieyasu, the Buddhist temple offers a prayer for ensuring safety throughout the country. Zenkokuji Temple used to be the center of activities in Edo-period Kagurazaka. The gate guardian of Zenkokuji Temple is a pair of stone tigers, which is very rare because normally the gate guardian of Buddhist temples in Japan come in the shape of a lion or dog.

AKAGI CAFÉ is another spot where you can see how Japanese architect Kengo Kuma blends traditional and modern architecture. The quiet and cozy cafe is located right next to the AKAGI shrine; through the big window you can enjoy scenery of the shrine with a cup of coffee or tea. Traditional Japanese weddings are held here often. It definitely deserves to be seen because it is so photogenic.

Where The History of Japan s Fine Tableware Began Established in 1904, Noritake was the first company to succeed in making western-style tableware in Japan. Synonymous with supreme craftsmanship and elegant style, Noritake s fine tableware has been loved throughout the world as its beauty has continued to transcend over the ages.

Shikisai Rondo Collection Motifs such as cranes flapping in the sky, plum flowers blossoming in silence, and the vivid Kakitsubata (Rabbit-ear iris) which colors early summer, have been cherished by painters since ancient times. This fantastic collection is rimmed with midnight black and brilliant gold. Photo image: Plate 27cm Pair set [Cherry blossom & Autumn leaves]
