Festive Scandinavian cookies, though no-one seems to know their exact origins. K_\j\ jdXcc jg_\i\j f] Ylkk\i# Ô fli# gfn[\i\[ jl^Xi Xe[ elkj# [ljk\[ n`k_ more powdered sugar for good measure are a Christmas delight. Makes: 20-24 cookies, Preparation time: 20 minutes, Cooking time: 8-10 minutes

1 cup / 225g butter or vegan butter 1/2 cup / 60g confectioners sugar ) (&* Zlgj & *''^ Xcc gligfj\ Ô fli# sifted ¼ tsp salt 1 tsp vanilla essence 3/4 cup /100g pecan nuts or walnuts, Z_fgg\[ Ó e\ Extra confectioners sugar for dusting

Preheat oven to 400F / 200C / Gas mark 6 Cream the butter and sugar together k_fifl^_cp% 8[[ Ô fli# jXck# mXe`ccX Xe[ pecans, and mix well. Cover dough and chill for half an hour. Form dough into small balls (about 1 inch / 2.5cm diameter). If the dough seems too crumbly don’t be tempted to add water or the resulting cookies will be hard, just let the heat from your hands gradually bring it all together. Place 2 inches / 5cm apart on an ungreased baking sheet. Bake until set but NOT brown (8-10 minutes). Allow to cool for 3 minutes before removing from baking sheet, then roll in icing sugar. When completely cool, roll in the confectioners sugar again. They make lovely festive handmade gifts in pretty boxes.
