e have a Passion for Seafood at Sardis Safeway! Our mission is to provide high quality, fresh and frozen seafood to our customers at affordable prices. We will educate them about their choices, the value of a sustainable seafood industry and the best preparation method so they can truly enjoy their purchase. Our Seafood counter has over 45 varieties of premium seafood available for you to try. Recently we have added a number of new items! Our Fresh, never frozen large scallops have a firm, glistening white flesh with a clean, sweet flavor, best of all, they taste like the ocean. Rich in Omega-3 fatty acids and relatively low in calories, they are an incredibly healthy source of protein. A simple trick with scallops, coat in Chinese five spice and sauté in butter, deglaze the pan with some white wine for an easy sauce. Flip the scallops clockwise so the first scallops cooks as long as the last. Alaskan king crab - Coming from Dutch Harbor, Alaska, this crab is minimally processed using fresh (not salt) water to preserve the spectacular flavor of meat. These red king crab legs are the Cadillac of crabs; they have a sweet flavour and succulent snow white flesh with red highlights. One of the best eating experiences you will have.
fatty acids, it is highly prized for an intensely rich, buttery flavor, hence the nickname “butterfish” – and for its surprisingly delicate texture; it melts in your mouth. This fish has large, delicate flakes and lends itself to a number of cooking methods…The high oil content of black cod makes it forgiving — it is a difficult fish to overcook. Our Ahi Tuna has a deep red colour and firm texture with a medium-mild flavour, it offers great culinary versatility. Coat your fillet with sesame seeds, salt and pepper, and sear in a hot pan. The searing gives a nice contrast of textures with each bite; savory cooked edges and tender throughout. Be very careful not to overcook or it will become tough and rubbery. The tuna we offer is sustainably caught by artisanal fisherman in the Philippines; it is individually tagged when caught. The specific tuna ID Number is the basis for a unique traceability and catch documentation system that allows for the tracking of every single tuna, from smallscale fishing vessels to the final consumer. We recently introduced a new line of smoked salmon from master craftsman Mick Farup. For over 40 years, he has been producing some of the West Coasts most sought after salmon delicacies. Crafted in a state-of-theart facility in Delta BC, Mick has developed recipes exclusively for Safeway. Beginning
There are many reasons to love black cod — it is sustainably fished, full of healthy omega-3 16 To advertise call 604-217-6613 or e-mail whatsonsardis@gmail.com • SARDIS Nov / Dec 2016.indd 16

with hand-picked salmon - all natural wood smoke and no preservatives – our smoked salmon delivers spectacular flavor on their own – or added to your favourite recipes. Try it in pasta or salad or take some with you for a mid-hike snack! Careful, once you start eating, you might not be able to stop. Goose Point Pre Shucked Oysters! Using a high pressure water to break the abductor mussel and pre-shuck they oyster, these fresher under pressure oysters are the best. They are specially selected from beds and raft cultured stock for high meat quality with uniform shape and size. Individually banded, the oyster retains all its natural moisture, texture and flavor. All you have to do is remove the band to open the oyster. An easy way to enjoy the cucumber and melon notes in these oysters. In a hurry? Try cooking your fish in our steamer bag. The seafood steamer is based on a French cooking technique called "en papillote"; seafood cooks perfectly and emerges succulent and saturated with flavor. As they cook, the steam causes the bag to puff up and when you cut into it, you are rewarded with a cloud of aromatic steam – the perfect way to bring a little drama to the dinner table. Traditionally, folding up the parchment takes a bit of practice, but it is so easy with our new steamer bags. Ask for our new marinades or a butter puck to ramp up the flavor. Sandi, the Seafood Operator at Sardis Safeway has a real passion for seafood and wants to share that knowledge with her customers. Come check out her WOW displays, ask questions, and be inspired!
