A

rizona is known as a foodie’s paradise, so it’s no surprise that when the James Beard Foundation announced its 2022 Restaurant and Chef Awards semifinalists in advance of the returning James Beard Awards®, which will be presented by Capital One in June, there were a whopping 15 chefs, restaurants, and restaurateurs on the list from Arizona. The 2022 James Beard Awards—hosted this year by Top Chef finalist, author, actor and Food & Wine magazine Executive Producer Kwame Onwuachi—will be the first in two years after a hiatus amid covid-19. Considered to be among the nation’s most prestigious honors, the program recognizes exceptional talent in the culinary and food media industries, as well as a demonstrated commitment to racial and gender equity, community, sustainability, and a culture where all can thrive. “The theme, Gather for Good, is inspired by our celebration of excellence, community, and gathering together with food as our common ground,” says Dawn Padmore, vice president of awards, James Beard Foundation. “We will strive to continue sharing stories that comprise our collective community.” WhereTraveler Phoenix+Scottsdale recently had the chance to sit down with some of these esteemed chefs to learn more about their culinary journeys to the top of the industry in Arizona.

CHRISTOPHER GROSS Category: Outstanding Chef Restaurant: Christopher’s at Wrigley Mansion What is major culinary memory in your life? Honestly, there are too many! I think the friends that I have made along the way—and the many memories we have all made—are what stand out, especially having Michel Louis-Marie Richard and Jean-Louis Palladin in my life. The days spent cooking with Julia Child and Paul Bocuse also stand out. What inspired you to cook? Easy, I wanted money for a dirt bike. Ha! Once I got started, I really went for it. I left Phoenix at 19 to work in Los Angeles, and then eventually picked up and moved to London with no job prospects—and almost no money or a back-up plan. Thankfully, I got a gig with the goal to cook in Paris, which I did for two years. What dishes are “musts” on your menu? If enjoying the Classics Menu, then do not miss the ABC Foie Gras Terrine. If enjoying my Tasting Menu, you don’t have to choose as we are bringing you everything, and then some. What would readers be surprised to know about you? I don’t have a wait staff at the restaurant. Instead, our model is to have our actual chefs, as well as students of the restaurant business, lead our service themselves. I do it so each gets the experience of front-of-thehouse—which they will need when they open their own concepts—and so everyone may share in service fees, allowing all members of the team to be paid equally and handsomely, [which is] a rarity in the business today. 2501 E. Category: Outstanding Chef Restaurant: The Larder + The Delta, an institution for Southern cooking in the Southwest that tells stories through food. What is a major culinary memory in your life? I once had the opportunity to cook for Charlie Trotter and Thomas Keller back when I worked in Chicago. The meal itself had me insanely nervous, but after the meal, Trotter came back into the kitchen and asked if I made the scallops. I said, “Oui, Chef,” which means, “Yes, Chef,” and he shook my hand, telling me they were perfect. It blew my mind. How did you get your start in cooking? That's a long story, but the short version is that my football career came to an end, and I had my oldest, Justin. To be honest, sh*t got real and I got cooking, eventually entering into culinary school, and never looking back since! What dishes are “musts” on your menu? Do not miss the Cauliflower with pickled celery, smoked moody bleu, scallions, and Cutino's Hot Sauce; Hoppin John with Sea Island field peas, Carolina gold rice, holy trinity, and herbs; the Pig Ears; and then both my Hot Chicken and our Ethiopian Hot Chicken. What would readers be surprised to know about you? I have about 500 cookbooks!

DONALD HAWK Category: Emerging Chef Restaurant: Valentine, which offers an exploration of the historical food in this region and showcases the bounty of the Sonoran Desert. What inspired you to cook? Believe it or not, I used to skip school so that I could work in a pizza kitchen. I just loved it! When my parents found out about my passion and why I was skipping school—to cook—they were mad but ultimately so supportive of me taking the next steps as it relates to food. What dishes are “musts” on your menu? While it's hard to narrow it down, definitely try the Hiramasa Crudo with brown butter, raisin, and tomatillo vinaigrette. Then, do not miss our Elote Pasta with house-made tagliarini, Hassayampa asiago, crispy corn, and arbol. Finally, order the Smoked Two Wash Ranch Chicken with wheat berries, toasted greens, and herb yogurt. What would readers be surprised to know about you? Category: Emerging Chef Restaurant: Atria, which focuses on modern dishes with hyper-seasonal ingredients. What is a major culinary memory in your life? One of the most memorable would be being the very first female to serve as chef de cuisine at the iconic Zinc Bistro in Scottsdale. Earning that role made me want to push harder in the industry, and inspired me to bring Atria to life. Tell us about your journey so far... I found cooking at 15, working my way through high school before enrolling at the Scottsdale Culinary Institute. Upon graduating, I began working with [Chef Matt] Carter, first at Zinc Bistro and eventually at Fat Ox. Seeking a new challenge, I moved to Flagstaff to not only serve as chef of Atria, but as a partner in its ownership. What dishes are “musts” on your menu? Start with our Oysters and Charred Shrimp Tartare. Then, move on to our Linz Beef Tartare, Roasted Bone Marrow, and Ricotta Tortellini before enjoying the Sonoma Duck. LORI HASHIMOTO Category: Best Chef Restaurant: Hana Japanese Eatery, known as much for bringing in the freshest, safest fish from all over the globe every day as for its authentic Asian cuisine. What is a major culinary memory in your life? Opening Hana in 2007 certainly jumps out. We had all of seven tables come in that first night. I distinctly remember thinking, “Well, this isn’t going to go well.” I’ve never been so happy to be wrong! What inspired you to cook? My father was a vegetable farmer, and my grandma was always cooking. I loved to eat everything she made and he grew, so it was a natural progression. What dishes are “musts” on your menu? PHOENI CHARS LIVE

Rusty Spur Saloon first opened in 1951, serving up cold beer and live country music with Old West hospitality. Live country music is played daily in the afternoons and at nights. Dancing, eating, and drinking are all encouraged here.

This Phoenix nightclub is a go-to for live R&B, blues, jazz, funk, and more. It was originally built as a family house in 1944, then converted to a ballet studio in the ’60s before becoming a bar in 1981. After a few years, Chars officially hit the scene in 1985— and the rest is history. In 2022, under a new ownership and management team, Chars LIVE underwent a facelift and reopened to offer more daily music.

THE NASH

A rock and roll bar in the heart of Downtown Phoenix that offers classic and contemporary rock, this location has been playing live music on its unique stage since 2010. Behind the bar and the endless beer garden is the stage on which local rock bands perform on a nightly basis. The restaurant, which also has a large selection of local brews on tap, is also known for serving tasty small bites and pub-like entrées that go along perfectly with the rock music atmosphere.

This jazz lounge in Downtown Phoenix is named after local Phoenix musician Lewis Nash. It originally opened in 2012 as a nonprofit educational center, but has now grown into hosting large jazz performances. For those performances, The Nash transforms into a jazz lounge with live instrumental performances, and a choice of wines and craft beers. Tickets do need to be purchased in advance. 110 E. CB LIVE This extension of Copper Blues opened at Desert Ridge Marketplace in North Phoenix in 2018. Much like its Downtown Phoenix predecessor, there are several beers on tap, as well as a full-service restaurant. This location features a rock stage, a separate showroom for larger performances and comedy shows, a full covered patio, and yard games. CB Live caters to more music genres, including rock, country, electronic, and hip hop. There are dedicated events held on a weekly basis, as well as regular local performances on a nightly basis.

THE WOMACK A Central Phoenix bar and lounge that is inspired by the iconic cocktail spot of the 1960's, Chez Nous. This location has rotating live performances on the weekends featuring soul, folk, alternative, and several other soft music genres. An occasional DJ also stops by on some weekends to create a more upbeat party atmosphere to give the location a musical change of pace.
