Pizza My Heart

The first meal in your new apartment, the thank-you present to the friends who helped you move into that apartment. The expected entrée at your nephew’s birthday party, the safety net when your plans for a night out fall through.

Pizza is a staple in our food culture. Any way you slice it, the easily accessible and universally appealing dish is constantly reinvented, yet rooted in nostalgia.

For my family, every Friday night was pizza night. Whether my mom made it with the treasured dough recipe my nana passed down, or picked it up from the shop across town, the cheesy, saucy goodness capped off a busy week of work and school, and started the weekend off right.

We’re proud to live in an area — recently dubbed one of the best and most affordable pizza towns in the country by SmartAsset, no less — that offers so many opportunities to create new pizza traditions and memories.

Mozzarella, sausage, and mushrooms — sounds like the makings of a great pizza, right? Since this is our Pizza Issue, we asked local chefs to think outside the pie and turn these popular toppings into delicious dishes. And they did not disappoint!

VEGAN SAUSAGE-STUFFED MUSHROOMS

DIRECTIONS

Two dozen mushrooms, large enough to stuff (Chef’s Note: Cremini, White Button, or Baby Bella’s work great. We used Cremini) 2-3 tablespoons olive oil 6 oz vegan sausage (Chef’s Note: We used No Evil Food Sausage “The Stallion.”)

4 oz vegan mozzarella cheese, finely chopped (Chef’s Note: We used Miyoko’s Fresh VeganMozz.)

1-2 small onions, finely chopped 1-3 teaspoons of minced garlic, to taste 2-4 cups fresh spinach ¼ cup breadcrumbs 1-2 tablespoons Italian seasoning Salt and pepper, to taste

1. Preheat oven to 375ºF and lightly coat a baking sheet with non-stick spray or a homemade oil-based spray.

2. Wipe the mushrooms clean and remove the stems, setting them aside for later. Arrange the mushroom caps, top down, on the baking sheet and brush gently with olive oil. Bake until just slightly softened, about 10 minutes. Remove from the oven and set aside.

3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sauté the vegan sausage until it is separated and resembles cooked loose sausage, about 4 minutes. Set aside.

5. Slice the vegan mozzarella into small chunks.

Add it to the pan with the mushroom stems, onions, and garlic. Then, mix in the cooked sausage, breadcrumbs, and Italian seasoning.

Add salt and pepper, to taste.

6. Form 1 tablespoon of the sausage mix into a ball. Place it into a mushroom cap, pressing it firmly into the mushroom. It should be generously mounded. Repeat, filling all of the mushrooms.

7. Sprinkle lightly with breadcrumbs. Bake the stuffed mushrooms until the filling is lightly browned on top, about 12 minutes.

4. Finely chop the mushroom stems and onions. Add more oil to the pan if needed, and sauté the stems, onions, and garlic until they are soft, about 6 minutes. Add spinach and lightly sauté until slightly wilted. Remove the pan from heat.

MUSHROOM SAUSAGE RAGU OVER CREAMY MOZZARELLA POLENTA

DIRECTIONS

1 cup dried morel mushrooms 2 tablespoons olive oil 2 sweet Italian sausages ½ pound sliced mushrooms 2 thinly sliced shallots Salt and freshly ground pepper, to taste 1 tablespoon tomato paste 1 tablespoon unsalted butter Chopped parsley, for garnish 3 cups chicken stock ¾ cup yellow cornmeal 1 cup grated mozzarella cheese ½ cup grated Parmesan cheese ½ whipping cream

1.

Soak dried mushrooms in 1 cup hot water.

Allow to steep.

2. Heat oil in a sauté pan over medium heat.

Add sausage and lightly brown. Stir in sliced mushrooms and shallots. Season with salt and pepper, to taste.

3. Add tomato paste, and cook until the mushrooms are caramelized. Stir in the morel mushrooms and mushroom water, then reduce. Add butter and parsley, then set aside.

4. For the Creamy Mozzarella Polenta, bring chicken stock to a boil in large saucepan. Whisk in cornmeal, then reduce heat to medium. Simmer until polenta thickens, whisking often, about 15 minutes.

5. Add in mozzarella, Parmesan, and whipping cream. Whisk until the cheeses melt. Season with salt and pepper, to taste.

6. To serve, pour the Mushroom Sausage Ragu over the Creamy Mozzarella Polenta.

DIRECTIONS 1. Preheat oven to 300ºF. Cut a thin slice off the top of each tomato. Scoop out the pulp, and set aside.

2. Finely dice shallots, garlic, mozzarella, mushrooms, and parsley. Set aside.

3. Combine ground sausage meat and breadcrumbs.

Add this to the mixture, along with the eggs.

Season with salt and pepper, to taste.

4. Scoop the mixture into the tomatoes until they are filled to the top.

5. Bake the Tomatoes Farcies for 30 minutes, using a toothpick or bamboo skewer to check if it’s done.

WHEN CERTAIN VEGETABLES ARE IN SEASON, DIANOIA’S EATERY TRIES TO FEATURE TOPPINGS FROM LOCAL FARMS, SUCH AS CHURCHVIEW FARMS.

CRUST: “Ours is made in-house from Caputo ‘00’ pizza flour, water, olive oil, sugar, and salt,” says Dave Anoia, owner of DiAnoia’s Eatery.

SAUCE: “The sauce is made from La Valle tomatoes, which is a San Marzano-style,” Anoia continues.

CHEESE: “Our cheese is a 100-percent aged provolone from Wisconsin. We chose this for our pizza as it has less water content than some of the Italian cheeses, so this helps to keep the crust from getting soggy. MEATBALLS: “Our meatballs are made inhouse and will surly remind you of a Sunday dinner at your grandmother’s house,” Lunardi says. “We use a mixture of beef, pork, and veal that we source locally from Weiss Meat Provision in the Strip District. We add fresh garlic, Romano cheese, and other seasonings to make a soft meatball packed with flavor.”

Between menus boasting gluten-free flatbreads and a Vocelli’s delivery car around every corner, “pizza from the family-owned shop down the street” sometimes feels like a dying art.

Remember the perfect spot for a victory pizza after a baseball game, or at the end of a long day, red checkered tablecloths and all? It’s off the main drag in Carnegie, in an unassuming strip of stores across from the Dairy Queen, and it’s everything pizza should really stand for.

Father-and-son team Steve and Josh Booher opened Tomatoes II Pizzeria in 2012, after months of “pizza research” — spending their days trying out the Pittsburgh area’s pizza joints to get a lay of the land. “We ended up pretty much where we started,” Steve laughs. And even though that isn’t straight from Italy, it does feel like it. After working in the food industry for a few decades, he was ready to run a business independently, working alongside his son. Steve opened Mauramori Café in Lawrenceville, but wanted to put his efforts into something that would feel closer to home.

Steve’s mother, Ida, was raised by her father, a cook in the Italian army during World War I. “I don’t want to say they were in the middle of a giant battle and said, ‘OK, time out, we gotta eat,’” Steve says, “but whenever it was time to eat, they ate!” The experience and appreciation for food in the family runs deep.

Josh grew up cooking with his grandmother, and he attributes what he knows to her expertise on cooking from scratch and using the right seasonings. Their hand-tossed dough

recipe is a slight variation of hers, and the homemade sauce has a bit of a kick to it that Josh says is different from his grandmother’s. While their recipes remain a secret, one thing they’ll reveal is an ingredient that doesn’t appear in most sauces: honey.

They both enjoy the simplicity that comes with a good old-fashioned pie. “Pepperoni pizza was the same yesterday as it is today as it will be tomorrow,” Steve says. While pizza may not change, Carnegie may. He describes the Pittsburgh suburb as a blue-collar, hard-working community, and one that’s experiencing a positive resurgence. “As long as the community continues to grow, we grow with it, and we become a part of it,” he says. Steve does a lot of the deliveries because he likes the opportunities to get to know customers — even after being hit with a car while he was walking a delivery, leaving him in the hospital for a week and keeping him in recovery for five months.

Of course there are challenges that come with working for yourself (and working with your family), but the Boohers appreciate the ways they feel rewarded from customer interactions more than anything. “People saying it reminds them of home or what their grandmother did — that’s the best thing I could get out of this,” Josh says. “It’s not the money, it’s just being able to put that impression on somebody. I didn’t realize food touched so many people’s lives.”

A Tale of

TWO PIZZAS We explore the rich histories behind a pair of iconic pizza shops: Mineo’s Pizza House and Aiello’s Pizza.

Mineo’s Pizza House Founder of Mineo’s Pizza House, Giovanni “John” Mineo, immigrated to Pittsburgh from Sicily, Italy, in 1955.

“After meeting and marrying my Pittsburgh born-and-raised mother, whose family was also from Sicily, my father came over to live with her and her parents,” says Mineo’s son, Giovanni “John” Mineo Jr. “After settling in with them in Oakland, he first worked as a laborer in the railroad industry in Homestead.” Taking the trolley home from work every day, John Sr. would pass by the storefronts on Murray Avenue, the future location of his first pizza shop. “My father was always intrigued by Squirrel Hill and thought the area would be a perfect place for a pizzeria,” John Jr. continues.

While John Sr. worked in the bakery industry in Sicily, he had no formal training in pizza until he came to the United States. “He knew how to make dough and things like that, but he wasn’t fluent in making pizza at first,” says John Jr. “He actually had a friend who had a

restaurant and pizza shop in Chicago. So, he went there for a few months and learned the trade.” Soon after, John Sr. was ready to open up his own pizza shop, and did just that in the neighborhood he was enamored with, right on the vibrant Murray Avenue, in 1958.

For almost 60 years, the family-owned shop has stood the test of time and kept customers coming back because, as John Jr. attests, they haven’t changed a thing since 1958. “We make our own dough and sauce daily, and nothing comes pre-fabricated,” he says. “We do everything from scratch and we’ve been doing the same thing since 1958.” This past spring, Mineo’s was rated one of the top-26 pizza shops in the country, and No. 1 in Pennsylvania,

by Tasting Table, a prominent digital media food company. “When that went viral on social media, we were slammed that weekend,” John Jr. continues. “We had people coming in from all over the place, faces that we’ve never seen. We even had a family come in on their company jet from San Diego!”

Today, John Jr., along with his brother and co-owner Dominic, are keeping the family business thriving with the goal of passing it down to the next generation of Mineo family members. “My brother Dominic’s daughter is the bar manager; his son, J.D., works here; and my son, Giovanni ‘John’ III, works here as well,” John Jr. says. The honor of carrying on the family legacy has kept this famed Pittsburgh pizza establishment going for so long. “I take a lot of pride in making my product and pride in the family-owned business because my father took a lot of pride in it,” John Jr. continues. “He taught me from the ground up what to do, and I haven’t changed a thing in the 40 years that I’ve been working here. That says a lot about us, and our customers old and new really value that.”

Aiello’s Pizza Coming up on 40 years next April, Aiello’s Pizza has been a staple in Squirrel Hill since 1978. “My father, Giuseppe ‘Joe’ Aiello, was one of five children and he always dreamed of opening his own place after he came to America from Palermo, Sicily,” says current owner Michael Italo Aiello. Joe started his pizza career in Pittsburgh by working at a local pizza shop, but followed his dream to eventually open his own place on Murray Avenue. “Once he opened, this store was his life and passion,” Michael says. “He was here every day.”

Today, Michael and his sister, Cathy, run the store that their father loved and cherished for so many years. “I’ve been working here since I was 9 years old and I am 40 now,” jokes Michael. “Cathy started working here three years ago, and her husband, Travis, works here as well.” Travis covers the night shift, as the shop is open seven days a week until 2 a.m. Michael comes in at 5 a.m., just like his father did, to start making the fresh dough by hand.

“The dough is what separates us from everyone else because we don’t use a dough mixer,” Michael explains. “We make it all by hand in a bowl, and I still make it how my dad made it 40 years ago. It’s a very labor-intensive process, but it’s actually very therapeutic for me because it’s what we are known for.”

Along with the dough, the sauce is also made fresh daily from scratch. During the summertime, Michael incorporates produce grown in his own backyard garden. “I have about 300 tomato plants, and 100 green pepper and basil plants that cover over half an acre in my yard,” he says. These come in handy when making one of Aiello’s most popular pizzas, the Giuseppe Margherita, a white pizza with garlic, homegrown tomatoes, and fresh basil.

This holiday season, expect to see a new addition to Aiello’s Pizza shop: a 3,000-square-foot taproom bar. “We began work on it over a year and a half ago, and it’s almost near completion,” says Michael. “It was time for a change, and adding this to our space was perfect. This neighborhood and our customers deserve this.”

Carrying on his father’s dream and making his customers happy is something that Michael has thrived on since he began working here, and it’s truly the recipe for Aiello’s Pizza’s success. “Anyone can open a business, but keeping it afloat is the hard part,” he says. “I make everyone who walks through this door feel like family, just like my dad did, which is why they keep coming back. That and the pizza, of course!”

Shamanic Healing JASA JOHNSON SHARES WHAT IT’S LIKE TO BE A CHALICE FOR SPIRITUAL ENERGY

To describe a Shamanic healing session with Jasa Johnson feels like skipping a stone across a pond. I can touch lightly on what she did and where and how, but none of that fully captures the internal gyrations and fluctuations, sensations and temptations, and visions and realizations that rock the psyche like an emotional thunderstorm. The work is deep under the surface. I’m laying on a healing table and I know she’s singing, but I’m so engaged in other realms that I only vaguely hear it. The one thing I know is that I’m in the hands of a master healer.

“Words can never fully describe what happens in a Shamanic healing session,” Johnson says.

“One can only experience it.” Nonetheless, her verbal preview was pretty accurate.

Modern Day Shamanism “I do what I identify as Shamanic healing. I identify myself as a Shamanic healer,” she states at the beginning of our interview. “My goal in working with people is to empty myself and get me out of the way, and allow my body and being to become a chalice for spirit energy to come through and go into that person in whatever way is in their best and highest interest.”

Johnson exudes a deep humility. “I don’t have the capacity to heal anyone,” she says. “I work with lots of prayer. I work with the energy of Jesus Christ, Mother Mary, Mary Magdalene. But I also call in the person’s whole healing team — guides, angels, elders, wise ones, priests, and priestesses — whatever wants to come through and assist, I invite them into the room to literally lay their hands on the person.” Many clients, including myself, report the feeling of multiple hands on their body.

Johnson’s original training was with Michael Harner, creator of the Harner Method of Shamanic Healing. “For a while, I followed those specific modalities until I discovered some other energy was awakening in me. The more I paid attention to the voices that were coming through, the more powerful the work became.”

Who Goes for Shamanic Healing?

Johnson studied with Jean Houston, a leading expert on discovering our human potential, and often refers to her work. “Jean talks about people who are being birthed into this new age. We are what she identified as ‘Homo Noeticus.’” (Editor’s Note: Noetic science is the study of how consciousness affects the physical world.)

“We are the New People,” says Johnson. “We are refusing to hold onto the old ways because something new is waking up in us, and we can’t pretend that it’s not. It’s not just waking up in a few people, it’s waking up in the world. People are having psychic experiences, emotional breakdowns, relationship breakdowns.

Relationships with others, but also relationship with themselves and how they define themselves.” These kinds of crises bring people to her door.

“When I get people who come in who are physically, but mostly emotionally not well, the question is ‘Where are you out of integrity with what you believe?

Where are you needing to rebalance, reconfirm, and recalibrate your system so you can live in your body with greater ease?’”

Tribal Influences Johnson describes how and why we get out of balance.

“Jean Huston talks about a tribal belief system — things the whole tribe believes.

They will keep you safe, tell you things to do, the things to eat, how to act so you can be safe. That’s fine, as long as you never leave that tribal system. When you go out into the world and meet different tribes, they may not have the same belief system.

You need to learn how to navigate between those.”

Johnson emphasizes that uneasiness comes less from doing battle with another tribe over what is true, it occurs when you are not in harmony with what is true for you right now. During a session, she will often ask, “Is your life working? Are your relationships working? Do you feel good with who you are?” She will usually get a laundry list of all the things that are happening in the client’s external life.

“Then I’ll ask, ‘Are you happy?’ and they’ll look at me like a deer in the headlights because that’s such a strange thought form to go through them. ‘This is not about being happy, this is about getting mine.’

Well, what is mine? And if you don’t have a relationship with yourself, and everything is externally focused, at the end of your life you’re going to have a lot of stuff, but will you have you?”

Live and Love Your Story “I believe that humanity is a universal chorus and that every voice is supposed to be different. If you’re not living what your music is, the chorus cannot be complete,” Jasa says. “We are here to live our story — not anyone else’s. And to remember that we all have a divine purpose on the planet. Your job in coming here is to connect with and discover what your divine purpose is. The answer is not out there. It really is inside and you really do have to take the time and mine gold. It’s literally mining a vein of gold within yourself.”

Johnson adds, “My goal is to literally get people to fall in love with themselves. We are magnificent creations and people forget that.”

I’m walking down the boulevard near where I live. I’ve been walking for a while. Johnson worked on me earlier in the day, our second session. During the first, decades of cosmic debris was released. Today’s session was a soul retrieval.

I find my arms around myself, feeling what is missing and what is now there. I feel 40 pounds lighter, and the flesh of my torso feels like uncharted territory. I sit and watch the sunset, hugging myself, in deep appreciation for Johnson, the earth, the gifts of spirit, and my life.

hether you like artisanal toppings like Brussel sprouts and kale or prefer a classic cheese pie, a truly great pizza begins at the dough — and there’s no one in Pittsburgh who knows this better than Domenic Branduzzi, owner of Lawrenceville’s Piccolo Forno. Born in Tuscany and raised in Pittsburgh, Branduzzi has experienced many different kitchens over the years, drawing from each to create his own unique brand. For over a decade, Piccolo Forno has been providing delicious wood-fired pizzas to the hungry masses, serving as a symbol of Branduzzi’s culinary history.

From a family-owned pizzeria in Italy to his parent’s Strip District bakery, Branduzzi discovered early on that he’d continue the family tradition. “I really got to see first-hand the kind of cooking my grandmother did and passed on to my mom,” Branduzzi says. “And my mom had gone over [to Italy] to learn to cook and my dad was a baker, so there was always a strong kitchen influence in my life up until my parents opened their own little shop in the Strip.” (Fun fact: Branduzzi’s mom still works in the kitchen with him today!) Branduzzi spent his teenage years in the family shop, Il Piccolo Forno, learning to bake delicious Foccacia bread, Italian pastries, and more, and spent summers in Italy, where his uncle taught him all about “Tuscan-style” pizza dough — a process that involves a lot of yeast and much quicker rising times, producing a thinner, denser crust — and wood-fired pizza ovens.

Prior to opening Piccolo Forno in 2005, Branduzzi formally trained as a pizzaiolo under Roberto Caporuscio at Regina Margherita, where he learned all about traditional Neapolitan-style pizza. “The Neapolitans take a lot of pride in their pizza,” Branduzzi says. “They consider themselves to be the first to invent and make pizza in Italy, so they have really technical rules about the cheese, the sauce, the dough, the flour they use, all of that.” As opposed to the “crackery” crust, popular in his uncle’s pizzeria, Caporuscio taught Branduzzi a slower fermentation process, which results in a lighter crust.

By combining his decades of diverse culinary experience, Branduzzi has mastered what he calls “Piccolo-style” pizza. “There were a lot of influences from different people — my dad, my uncle, Roberto. I eventually created my own style of pizza and dough,” he says.

It starts with flour, water, salt, and fresh yeast, creating a dough that refrigerates for 24 hours before it’s stretched, floured, and shaped into the pizza’s foundation. “It gets nice and crispy, golden brown, and a good flavor, a little sour but not too much.” When cooked in the wood-fired oven, his pizzas take on a smoky, hearty flavor. Crisp yet still airy throughout, the perfect combination of Tuscan and Neapolitan styles. And no matter the toppings or the style, we can all agree that Piccolo Forno’s pizza is good to the last bite!
