Reflecting on 2018 and Looking Ahead to 2019 Hello WBA Members and Industry Partners!

bakeries and schools from around the state of Wisconsin and upper Illinois participated in baking and cake decorating competitions hosted by WBA in partnership with the Wisconsin Restaurant Association at the 2018 Midwest Foodservice Expo in downtown Milwaukee, WI.

This past year has been incredible! 2018 certainly had some ups and downs as WBA has gone through some major transitions in a short period of time and there have been quite a lot of adjustments. However, there have also been a lot of accomplishments that we are quite proud of! Here are just a few of the highlights: • One of the very first goals that the WBA Board of Directors had set out to accomplish in 2018 was crafting a Mission and Vision for the organization. With support from Valley Cooperative Association, we were able to accomplish that goal. • In January, we redesigned and launched a brand new website.

• Two $1,000.00 scholarships were awarded individually to Kathleen Dunn, recipient of the 2018 Hiller Scholarship and Ashley Borchardt, the 2018 WBA Scholarship recipient. • WBA held three Bakers Forums – Winter at Fox Valley Technical College, Spring at Waukesha County Technical College,

• A record combined total of 80 beginners and professionals representing 37

Each of the forums was well-attended by our members and industry partners! • WBA members and their families from Frosted Memories, Molly’s Gluten Free Bakery, Hill Top Bakery, The CupcakeA-Rhee, Simple Simon Bakery, Desserts by Deb, O&H Danish Bakery, Tamara’s the Cake Guru, Monzù Bakery, Clasen’s European Bakery, The Extra Special Touch Bakery, Sole Passion Baker, Valley Cooperative Association, and Bakery on Terrace enjoyed a wonderfair day at the Wisconsin State Fair. WBA members went behind-the-scenes inside the Original Cream Puffs Dairy Bakery taking tours led by Co-Director, Brandon Grebe. • The inaugural meeting of the WBA Foundation was held in September. Thanks to the assistance of Valley Cooperative Association, we were able to file the necessary paperwork to receive official 501©3 status! school students how to decorate cupcakes at the first ProStart Career & Industry Expo in November. Thank you Cook Specialty Co. Inc. and BakeMark for donating the supplies!

• Governor Walker proclaimed September 14th as Bakery Day throughout the State of Wisconsin! • In October, we partnered with the Wisconsin Grocer’s Association and introduced a new cake competition – Wisconsin’s Cake Decorating Championship! Thirty-one cakes were entered in 2-D sheet cake and 3-D shaped/ sculpted categories featuring a Halloween theme.

• In December, WBA sponsored MATC’s annual Gingerbread House Competition by providing scholarship awards, medals, and bringing in professional judges from our industry. • We recently announced that we are officially working together with Lifestyle Health Plans to provide our members with an optional health care plan for your business!

• Baking & Pastry Arts students and instructors from MATC Milwaukee and Madison College showed 300 high

Uncle Mike’s Bake Shoppe’s Sea Salt Caramel Pecan Kringle named the 2018 Coolest Thing Made in Wisconsin! After more than 175,000 votes were cast, Wisconsin Manufacturers & Commerce and Johnson Financial Group announced Uncle Mike’s Bake Shoppe (De Pere) and its Sea Salt Caramel Pecan Kringle as the Coolest Thing Made in Wisconsin. The winner was unveiled at the State of Wisconsin Business & Industry Luncheon on Tuesday in Madison. The third annual contest featured nearly 160 nominees that competed in a popular vote in early September to get into the Top 16.

The Wisconsin-made products that made the Top 16 were placed into a tournament-style bracket known as “Manufacturing Madness.” Head to head matchups took place until four finalists were determined. The Top 4 competed once again in a popular vote, and the Sea Salt Caramel Pecan Kringle came out on top. Nominees for the Coolest Thing Made in Wisconsin covered a wide range of products.

Fall Bakers Forum Recap Thank you to Marc and Sue Anderson for hosting WBA’s Fall Bakers Forum at Linda’s Bakery in November and to our allied partners Valley Cooperative Association, Lesaffre Yeast Corporation, Cook Specialty Co. Inc., Lawrence Foods, and DecoPac for helping make this event a success! Attendees at the forum took a “behind the scenes” tour of the bakery. Following the tour, Paul Tentis from DecoPac talked about the online ordering system that Linda’s Bakery uses. Next up, Don Hando shared some of the latest trends in the industry and commodities. The talented decorating team at Linda’s Bakery demonstrated how to make unicorn horns out of Fantasia Fondant and everyone got to take home fondant samples. Jill Backhus from Lawrence Foods shared fudge, fillings, and seasonal cake trends.

The forum ended with a group discussion of the topic of Waste Reduction from repurposing products to recycling to “green” initiatives. Tony Nieto from Neato’s Bake Shoppe shared his success with coming up with a formulation for Scrappy Brownies and Jimmy Johnson from Blue Boy’s Bakery shared his version of a Cinnamon Smear.

Marc and Sue prepared a delicious lunch (calzones – yum!) sponsored by Valley Cooperative Association. During lunch, members participated in an equipment swap & door prizes provided by Valley Cooperative Association, Lesaffre Yeast Corporation, Cook Specialty Co. Inc., and samples from Lawrence Foods were awarded.

Even though the weather was a little crummy, it was a great day of learning and sharing! BB

Afterwards, Chad Mulcahy from Lesaffre Yeast Corporation gave a presentation on how to clean up your labels and Samantha Kristiansen from Cook Specialty Co. Inc. led a Q&A on some of their most popular products including edible glitter dust.

IDDBA Seeks Decorators To Compete In 24th Annual Cake Decorating Challenge The International Dairy Deli Bakery Association’s (IDDBA) 24th annual Cake Decorating Challenge is approaching and we’re excited for this year’s talented creations. The event will take place during IDDBA 19 in Orlando, FL, June 2-4. Contestants compete in a three-day event where they craft and decorate a variety of specialty cakes ranging in size, theme, and shape. This challenge is open to supermarket decorators and contestants will be chosen based on the quality of their portfolio submitted. They will receive an all-expense

paid trip to Orlando for the competition. The deadline for the portfolio and entry form to be received by the IDDBA is Friday, February 14, 2019. This is a can’t-miss event to gain recognition and experience in the industry.
