Bob Badura inducted into WBA Bakers Hall of Fame

WBA’s Board of Directors inducted Bob Badura from Bob and Bonnie’s Donuts in Fond du Lac, WI into the 2018 WBA Bakers Hall of Fame on March 12, 2018, at the WBA’s annual awards night. The event was held at the Wisconsin Center in downtown Milwaukee in conjunction with the Midwest Foodservice Expo. Bob & Bonnie

were unable to attend the awards night. Instead, WBA’s Executive Director, Jessica Hoover made a special visit to meet with Bob and Bonnie to present the esteemed award on behalf of the association. “I am humbled, honored, and grateful for this nomination,” said Badura.

Badura graduated from UWO in 1968 with a Bachelor of Science in Sociology and Anthropology. He married his wife, Bonnie, in 1967. They have 3 daughters and 5 grandchildren. He was a social worker for 10 1/2 years in Fond du lac, Wisconsin before buying a Donutland franchise in 1978 which started an adventure of a lifetime!

The support and input from WBA was extremely helpful to him throughout the years and he especially enjoyed meeting other bakers and business people throughout the state at WBA events. Each year the WBA Board of Directors inducts honorees into the WBA Bakers Hall of Fame. The first inductees to the Hall of Fame were honored in 2000. Through the Hall of Fame, the WBA seeks to honor individuals each year whose service and contributions to the baking industry and to the WBA have proven over time to leave a lasting impact by induction into the WBA Bakers Hall of Fame. Nominees must be past or present members of the Wisconsin Bakers Association and must have given outstanding service to the WBA and the baking industry over the years. BB TREM HotCakes by Tara

The retail donut shop transitioned to a wholesale donut and cake shop in 1994. After 35 years in the industry, he retired in 2014. He served on the Valley Bakers Board and was awarded the Community Spirit Award from the Fond du Lac Association of Commerce. He also received the ARC employer of the Year award and was very active in the Fond du Lac community. One of the things he has become well known for was employing people with disabilities. His greatest successes were having a very special group of people put out a production

More than 80 Percent of Gen Z and Millennials Are Willing to Try Adventurous Donut Flavors

Dawn Foods, a global manufacturer and ingredients supplier to bakeries around the world, today released findings from its inaugural Donut Day survey[i] that found the majority of Gen Z (those aged 18-21) and Millennial (those aged 22-34) consumers (82 percent) are interested in trying unique and adventurous donut flavors, such as pickleflavored donuts, sriracha and s’mores. For nearly 100 years, Dawn has partnered with bakers around the world to help them think outside the box and deliver original tastes and flavors to their customers. These bakers produce the world’s best donuts every day – including innovative new mashups such as grilled cheese donuts as well as beloved favorites like chocolate glaze and everything in-between.

Additional survey findings include the following: • Donuts are still a popular treat: More than a third of consumers (37 percent) eat donuts at least once a month • Classic flavors remain strong: More than 50 percent prefer classic donut dough flavors such as chocolate (22%), plain (16%) and old fashioned (13%) • Younger audiences are most likely to branch out: 82 percent of Millennials and Generation Z consumers are interested in trying new and unique donut flavors • Parents prefer tipsy donuts: Those most interested in trying alcohol-inspired donuts were parents (21%) • Men are more spicy than the ladies: 7 percent of men said they would try a spicy donut (habanero or sriracha), while only 5 percent of women would

2018 WBA Scholarship Awarded to Ashley Borchardt

The Wisconsin Bakers Association (WBA) is pleased to announce this year’s WBA Scholarship recipient. The 2018 WBA Scholarship was presented to Ashley Borchardt, from Sun Prairie, WI at the Midwest Foodservice Expo on March 12, 2018. Borchardt recently graduated from Madison College this spring with a technical diploma and is working as a baking assistant at both Beans ‘n Cream Coffeehouse and Barriques.

“I believe that Ashley will make the most of her schooling and become a successful part of the food community here in Madison, WI,” said Borchardt’s husband, Kevin. This $1,000 scholarship has been awarded annually since 1984 to Wisconsin students in the baking profession. More than $27,000 in scholarship money has been awarded to students through the WBA Scholarship. Scholarship applications are accepted throughout the year and more than one scholarship may be awarded per year.

“Thank you for choosing me for the WBA scholarship. I appreciate it so much and it will be a huge help to me,” Borchardt said. This year, WBA received 6 WBA Scholarship applications. Two WBA Members from the Education Committee interviewed the finalists for this year’s scholarship. Tony Nieto of Neato’s Bake Shoppe in Baraboo, WI and Ken Heil of Sweet Perfections Bake Shoppe in Waukesha, WI selected Borchardt as this year’s winner.

The field of applicants has continued to grow over the years. The WBA’s goal for the future is to continue to spread the word about this award to baking and pastry arts programs at Wisconsin’s Technical Colleges. Cake Decorating Competition The Wedding Show – Summer Edition – Cake Decorating Competition A unique event and spotlight feature at The Wedding Show – Summer Edition 2018! A real couple from the Northeast Wisconsin region will be chosen to judge and ultimately pick their actual wedding cake during The Wedding Show – Summer Edition Cake Decorating Competition! Compete in a one-of-a-kind cake decorating competition where your creativity and skills will create the love story of a real life couple. The Couple Couples getting married in 2019 or 2020 within the Northeast Wisconsin region will enter via social media for the chance to say “yes” to their cake at The Wedding Show –

Summer Edition. The couple will be selected on Monday, June 4, 2018. The Competition The winning couple will provide their wedding theme, date of their wedding, and love story which will be given to decorators one month before the 2018 Summer Wedding Show. Decorators will then have one month to design and create a cake, fitting the couple’s theme and love story for judging at The Wedding Show – Summer Edition on Sunday, July 22, 2018. Cake decorators will be responsible for bringing their cake between 7:00am to 9:00 am on Sunday, July 22 to be displayed throughout show hours. Cake decorators must also have a sample for the bride and groom to taste at 2:00pm during the taste portion




of the judging by the bride & groom. Samples should not be given to any other attendees of the show unless the decorator is also participating in the show as a vendor in which case samples may be handed out to other attendees only within their designated vendor booth. At approximately 2:30pm the winners of both the Couple’s Choice & People’s Choice will be announced. At this time, business cards may be placed by the decorated cake, but no other advertising is allowed. A $50 fee to participate in the competition is due for those not participating as a vendor in the 2018 Summer Edition of The Wedding Show. If you are a vendor at the show, your competition fee will be waived. Contact Jessica Uecker if you are interested in being a vendor at the show.

Couple’s Choice One decorator will be chosen by the couple as the Couple’s Choice Winner. The couple will select the winner based on creativity, adherence to their wedding theme, taste of the cake sample, and incorporation of their love story. The Couple’s Choice winner will be responsible for recreation of the cake for the couple’s wedding in 2019 or 2020. The decorator will be responsible for creating this cake at no charge in exchange for the following prize package valued at over $1,100: • Announced Couple’s Choice Winner on Resch Center Facebook Page (over 55,000 followers) • $300 Cash ($100 from Couple & $200 from PMI Entertainment Group) • The following for the 2019 Wedding Show – Summer Edition • Complimentary 10’x10’ booth • In-Studio opportunity • 2018 Couple’s Choice Winner Full Page Directory Ad • 2018 Couple’s Choice Award People’s Choice One decorator will be chosen by attendees as the People’s Choice Winner. The Retail Bakers of America (RBA) is very excited about the response that inaugural National Bakery Day received last year, and they are getting ready to celebrate National Bakery Day 2018! National Bakery Day was born from the love of the retail bakery. It offers a day for bakers to celebrate their craft, hard work and senses of humor. This year, National Bakery Day will be celebrated on Friday, September 14, RBA has planned an exciting national event that is open to all local bakeries across the United States and made it easy for you and your team to join in all the fun. To help get the word out early in your community and join this national movement to show why local bakeries are a such a vital part of our communities, RBA has created a free Marketing Kit for its members. Neato-O's became involved with the WBA when we received a

message encouraging us to enter the Creative Cake Competition at the Midwest Food Service Expo which included WBA membership. It was an amazing experience! Having been a new business at the time, it allowed us to make connections with other bakery owners, vendor partners, and WBA staff. This enabled us to share our stories, listen to others, ask and answer questions, and gain a sense of community! In the years that have followed, we have become more involved and we look forward to all WBA events!
