Midwest Foodservice Expo takes place March 11-13 Are you ready for this year’s Midwest Foodservice Expo? Make sure to add this event to your calendar now! This year’s event takes place March 11-13, 2019 at the Wisconsin Center in downtown Milwaukee. The Wisconsin Bakers Association is proud to partner with the Wisconsin Restaurant Association once again, bringing an incredible line-up of bakery and decorating competitions and hands-on demonstrations!

For rules and information, please visit: https://wibakers.com/competitions All entries will be professionally judged at the 2019 Midwest Foodservice Expo. Admission to the Midwest Foodservice Expo is included with registration for each competitor. The early registration deadline for all of the competitions is Friday, February 15, 2019.

If you’ve attended Expo in the past and don’t think you will miss anything this year, think again! Not only is this event a great chance to network with your fellow WBA members and other industry contacts, but it’s a chance to take part in seminars, learn some new skills, and compete to be the best in the industry!

EDUCATIONAL SESSIONS The Price is Right: How to Count Costs and Set Prices Creating a profitable menu is both an art and a science. In this session on Monday, March 11th from 3:45-4:45 pm at the Midwest Foodservice Expo, you will learn how to calculate food costs, labor costs, and overhead relative to every ingredient and finished product in your bakery from Lacey Reichwald, Co-owner and Operations Manager of The SweetSpot Bakehouse. You’ll also learn how to use your intuition and marketing efforts to decide when it’s time to raise prices, reduce costs, or change your menu. You’ll get valuable guidance on: • Food costs, labor costs, and overhead expenses and the cost of doing business • Pricing your products accordingly, ensuring your costs are covered • Identifying any items you produce that aren’t’ “worth it” to maintain

WBA Member Spotlight Get to know Shane Griesbach, Breadsmith of Appleton Q. What’s your first memory of baking? A. Baking with my dad as a child

Q. What is your favorite thing to bake? A. I always loved baking pies and tortes. I just loved the endless flavor possibilities. I got into bread baking in college.

Q. What’s the best thing to happen since you began working in the industry? A. The best thing I’ve noticed since getting into this industry is the amazing people I have been able to meet!

Q. What do you find most challenging about baking? A. Honestly, the most challenging thing in this industry is simply finding and keeping quality help and finding personal time too. Q. What might (someone) be surprised to know about you? A. I once was hospitalized for pneumonia for 3 weeks in my mid 20’s.

Q. What do you like to do when you aren’t baking? A. I love spending time with friends and family. Playing and watching sports. Cooking and enjoying a nice cocktail. Q. How did you first get involved with the WBA? A. I met Jessica at a trade show. Q. What do you wish other people knew about the WBA? A. How much effort the WBA Board of Directors puts into it.

Paczki Preview Party at the Polish Center of Wisconsin The Wisconsin Bakers Association will host the first Paczki Preview Party at the Polish Center of Wisconsin located at 6941 S 68th St, Franklin, WI on Sunday, February 24, 2019. In celebration of Paczki Day (Fat Tuesday) which falls on March 5, 2019 this year, the Paczki Preview Party will offer the early opportunity for paczki lovers to taste two samples from each of the following WBA member bakeries: Cranky Al’s, Grebe’s Bakery, Le Rêve Patisserie and Café, Neat-O’s Bake Shoppe, and Sweet Perfections Bake Shoppe.

Sponsored by the Polish Center of Wisconsin and Dawn Foods, this event will not only showcase some of the best paczki but also feature live accordion music by local musician, Jimmy Locke, special guest appearances by Little Miss Polish Fest, and more. Will Your Bakery Be The Next Bakery Operation of the Year? The prestigious Bakery Operation of the Year award is presented annually to one outstanding WBA Member bakery operation at the WBA’s Awards & Appetizers Networking Evening held in conjuction with the Midwest Foodservice Expo. The purpose of the award is to highlight and recognize the accomplishments of WBA Member bakeries. The 2019 Bakery Operation of the Year Award is sponsored by Valley Bakers Cooperative Association. This year’s winner will receive a trophy to display prominently in their bakery.
