In this year’s Cake Competition at The Wedding Show Summer Edition at Shopko Hall in Green Bay, WI, five carnival themed wedding cakes were custom decorated just for Julie and Joe Barker’s “after the wedding” reception at Bay Beach on August 11. With the idea of a Circus Barker in mind (their last name is Barker) they have invited their guests to “step right up” for a thrilling evening at a circus-themed reception. Everything will be designed for the “big-top” party including decorations, games, and even clown noses for guests. They are looking forward to having a fun, bright, and creative reception to share their excitement of their new life with everyone. All that they needed was an over-the-top cake as the final act!

The couple married in March of 2018 on a beach in the Bahamas and decided to enter this contest with the hopes of winning the wedding cake of their dreams. They were selected in June as the lucky couple and attended the show to pick the winning cake based on creativity, incorporation of their wedding theme, colors, and love story, and also a cake tasting. Tamara’s the Cake Guru located in Oshkosh, WI and Appleton, WI was chosen as the winner of the 2018 Wedding Show - Summer Edition Couple’s Choice award and will be replicating the cake for Julie and Joe’s wedding in August. Tamara’s the Cake Guru also received the People’s Choice award which was determined by votes from show attendees. Attendees voted for their favorite cake on a tablet kiosk set-up by the Wedding Cake Display. Monzu Bakery, Green Bay, WI, Chocolate Cow Bakery, Oconto, WI, The Cupcake Couture, Green Bay, WI, and ADAA Cakes, Lindenhurst, IL also competed in The Wedding Show - Summer Edition Cake Decorating Competition. The wedding show also featured a wedding trends display area, bridal makeovers courtesy of Paul Mitchell the school Green Bay, ideas from florists, photographers, DJs, reception halls, and a Bridal Gown Boutique Pop-Up Shop, and the Fox Hill’s Resort relaxing groom’s lounge. A Wonder-Fair Family Day On Monday, August 6, 2018, WBA members and their families from Frosted Memories, Molly’s Gluten Free Bakery, Hill Top Bakery, The Cupcake-A-Rhee, Simple Simon Bakery, Desserts by Deb, O&H Danish Bakery, Tamara’s the Cake Guru, Monzù Bakery, Clasen’s European Bakery, The Extra Special Touch Bakery, Sole Passion Baker, Valley Cooperative Association, and Bakery on Terrace enjoyed a wonder-fair day at the Wisconsin State Fair. WBA members went behind-the-scenes inside the Original Cream Puffs Dairy Bakery taking tours led by Co-Director, Brandon Grebe. The Wisconsin Bakers Association has been proudly producing cream puffs since 1924. After the tours, the groups headed over to
the Miller Lite Sports Bar & Grill for lunch. Thank you to all of the WBA Members that attended WBA Family Day this year! The Dairy Bakery at the Wisconsin State Fair began as a joint venture between Wisconsin State Fair Park and the Wisconsin Bakers Association to establish and operate a bakery using genuine Wisconsin dairy products in front of thousands of observers. Over the years, cream puffs have become the signature dessert of the fair. For the sixth straight year, more than one million people attended the Wisconsin State Fair. The official attendance was 1,037,982 with nearly 400,000 cream puffs consumed this year! This was the fair’s 167th year. BB

FVTC Culinary Students National Champions Students in Fox Valley Technical College’s Culinary Arts program took home top honors at the American Culinary Federation (ACF) National Convention and Show in New Orleans.

The college’s culinary team earned the right to attend the convention as a participating team by winning the ACF Central Region title in June. Other teams that vied for the national accolade included Orange Coast College, Alamance Community College, the Culinary Institute of New York at Monroe College, and the Joint Center of Excellence - U.S. Military. Each team was tasked with preparing a signature four-course menu. The event hosted more than 1,500 chefs exploring new ideas and flavors. Established in 1929, the ACF is the premiere professional chefs’ organization in North America with more than 17,500 members from over 150 chapters. BB
The team of Regina Hueckman, Morgan VandenLangenberg, Grace Claussen, Gage Dawiedczyk, and Kirk Reilly prepared a summer duck platter, pan-seared fluke with seasoned chorizo, and an entrée featuring lamb and tenderloin, braised potato, minted pea puree, and sautéed king oyster mushrooms. The occasion marked the first time in the show’s 23-year history that a culinary team from Wisconsin ever qualified for the prestigious showcase of cooking skills. Under the direction of instructors Richard Williams, RC Schroeder, and Julia Steinhiser, FVTC made further history by becoming the first team from the Badger State to win the event.

Wednesday, October 17, 2018 Registration & Entry Fees The early registration deadline for all of the competitions is Monday, September 17, 2018. The standard registration deadline is Monday, October 1, 2018. All entries must be registered in advance. Each entry includes two passes to the WGA Grocery Industry Trade Show on Wednesday, October 17, 2018. Space is limited! Entries are limited to one skill level per category per location. Skill Levels • Wisconsin’s Cake Decorating Championship is open to beginners/students (up to 3 years’ experience) and professionals (3+ years’ experience). • Competitors must represent an independent licensed bakery facility, grocery store, or be currently enrolled in a baking/pastry arts college program.
Categories • 2D Sheet Cakes Full sheet cakes iced in any type of icing EXCLUDING fondant. Real cake must be used for this category. 2D decorations may be fondant, butter cream, gum paste, royal icing, isomalt, or chocolate. Finished decorated cake should not be larger than 18" x 26" x 12". • 3D Shaped/Sculpted Cakes Cut-out, shaped, or sculpted cake, iced in any type of icing, fondant, or modeling chocolate. You must use real cake for this category. Up to 15% Rice Krispy or other edible ingredients are allowed. Finished decorated cake should not be larger than 24" x 24" x 24".
Rules • The theme for this year’s cake decorating championship is Halloween. • Cakes may be set up Wednesday, October 17, between 8:00 am and 10:00 am. Judging will begin promptly at 10:30 am. Any cakes delivered after 10:00 am will not be judged but placed for display purposes only. Competitors and assistants should pick-up name badges at registration desk prior to entering the trade show floor. • All work will be done in a professional manner. • Entries must be exclusive work of the entrant and may not have been entered in any other competition.

• No business identifying marks, advertisements, or photos will be allowed until the completion of the judging. After judging business cards may be placed by the cakes. Cakes must stay on display until the end of the trade show (4:00 pm). Cake pick-up is between 4:00 pm and 7:00 pm. Anything left will be disposed of. We are not responsible to return items to competitors! No exceptions. • All work must be done offsite. No decorating tools, equipment, cake, icing, base, stand, or materials will be provided by the competition, aside from table space for display. Cake must be already baked, assembled, decorated, and ready for viewing when participants arrive. Minimal adjustments, repair, and additions of embellishments will be permitted within the allotted set-up window. • Cakes are judged only on appearance. Points will be given for neatness, originality, creativity, colors, and degree of difficulty. • All flowers, if any, must be handmade. • Cakes must not infringe the copyright, trademark, privacy, publicity or other intellectual property rights of any person or entity. Cakes that violate this requirement will be disqualified from the competition. • The organizers have the right to use photographs taken of competitor’s displays. • A license and/or student ID number is required.
Judging • Entries in each skills division are judged separately. • Judging of the entries will be completed by a team of qualified judges selected by the Wisconsin Bakers Association. The judges’ decisions will be final. The judges will complete a score sheet for each entry. The WBA will provide copies of all professional judging scores to all entrants within 10 business days following the completion of WGA’s Grocery Industry Trade Show via your pre-registered e-mail address.
Awards • Cake decorating awards will be announced at the WBA Awards Ceremony on Wednesday, October 17th between 5:00-6:00 pm. • Awards may include: Grand Champion, Reserve Champion, Award of Excellence, Award of Distinction, Award of Achievement, and Honorable Mention. • Grocery top two awards and People’s Choice will be announced later that evening during the WGA’s Chairman’s Banquet.

Valley’s Annual Food Show Valley Cooperative Association held their annual food show on August 16th at Shopko Hall in Green Bay, WI. This year’s theme was “Waterfall of Savings” and the Wisconsin Bakers Association was honored to be in attendance. The event provides Valley’s customers with an opportunity to learn more about Valley, sample products, and meet suppliers. The food show was well attended and WBA’s Executive Director, Jessica Hoover, was thrilled to see many WBA members at the show.

Several new members joined WBA right at the show including The Dough Shoppe, The Little Bakery in Big Bend, and The Baker’s Table. After the food show, Mark Munroe did the Ice Bucket Challenge to help raise money to help end Alzheimer’s! Chris Abell from Johnston’s Bakery in Sheboygan had the privlege of dumping the ice cold water on Mark. A tailgate party with live music and a Green Bay Packers preseason football game followed the show. BB
