PICKING THE BEST
You can buy oysters any time of year: Refrigerated transportation and a little oyster wisdom have obsoleted the “only in months have an ‘r’” myth. Just look for oysters that are completely closed, and make sure they’re no more than a week old. You can ask to see the harvest tag, a legal requirement for selling shellfish, which will tell you the date they were harvested on. They should be sold refrigerated, but not in any water other than what they came in. A clean shell is a good sign, as it indicates that the farmer took care with the oyster. Fish Sauce Mignonette
Amp up the savory side of your oysters with a mignonette inspired by the Vietnamese fish sauce nuoc cham. Mince one small shallot and stir together with two tablespoons of fresh lime juice, two tablespoons of rice vinegar, and a half-tablespoon of fish sauce. Serve with a dozen fresh-shucked oysters.
HOW TO SHUCK
For first-time shuckers, look for a medium-size, tumbled oyster, like the Chelsea Gem, Shigoku, or Blue Pool. Most importantly, use an oyster shucking knife: Do not try to improvise.

With a glove or kitchen towel over your nondominant hand, hold the oyster with the flat side up and the narrower end toward you.
Slip the tip of the oyster knife into the narrowest part, then gently wiggle it in a little bit (but do not force it). Twist the knife as if you were turning a doorknob, until you feel a little pop—it’s open!
Run the knife parallel and up against the inside of the flat top to cut the oyster muscle from it, then sweep the knife below the oyster to cut the connection there. Serve or slurp.

Baked Oysters
Oysters rarely come in cozy, comfort food form, but under a blanket of breadcrumbs and cheese, they turn from cool and crisp to a bivalve hug. INGREDIENTS 12 medium oysters 6 tablespoons butter, divided 3 cloves garlic, minced ½ cup panko breadcrumbs ¼ cup grated Parmesan cheese 1 teaspoon paprika 1 lemon, zested and in wedges (use two different lemons for zest and wedges if you’re looking for presentation points) 2 tablespoons freshly chopped parsley METHOD Heat oven to 425°F. Melt four tablespoons butter in a pan over medium heat. Add the garlic and stir lightly for two minutes, then mix in the breadcrumbs for another minute, stirring until brown. Move them to a bowl and let them cool for a minute. Set up a sheet pan by taking a large piece of foil (about 50 percent bigger than the pan) and crinkling it into a ball, then lightly flattening it out on the pan. The ridges and creases will hold your oysters upright. Shuck the oysters, taking care to keep as much of their liquor inside. (You can do this over a bowl and pour it back on later if need be.) Place each one on the pan, molding the foil as needed to hold them upright. Stir together the breadcrumbs, lemon zest, cheese, and paprika. Cut the remaining two tablespoons butter into 12 pieces, placing one on each oyster and topping with a bit of the breadcrumb mixture (about one tablespoon each). Bake for eight to ten minutes. The oysters should be bubbling and the top golden-brown. Sprinkle with parsley and serve with the lemon wedges.

BIG GIVING The donations from Windermere’s North Idaho offices have now topped seven figures. BY HALE Y SHAP LE Y

BY THE END OF 2018, WINDERMERE COEUR
d’Alene Realty had raised $969,559—and 10 cents, to be precise—for the Windermere Foundation in support of their mission to give back to the communities Windermere serves. By the end of 2019, they’d passed the $1 million mark in giving since adopting the Windermere Foundation’s goals in 1996. And they’re showing no signs of slowing down. “One of our core philosophies is to give back to our community, and being part of the Windermere Foundation is a great way of doing it,” says Richard Jurvelin, the Foundation representative. The North Idaho group—which has offices in Coeur d’Alene, Hayden, and Post Falls—raises funds a variety of ways. Every time a Windermere agent sells a home, a portion of the commission goes to the nonprofit Windermere Foundation, and about a quarter of Windermere Coeur d’Alene’s budget comes from those agent transactions. They also receive donations from community members and regularly get a grant from the local Kiwanis Club.
The lion’s share of the donations, though— more than 50 percent—comes through three annual fundraisers. The largest is a fundraiser they do for their Boots and Socks program, organized annually by Windermere Coeur d’Alene Realty to provide kids in need with warm footwear. In 2019, they received—and fulfilled—more than 750 requests. The office also works with Bras on Dudes, a local charitable group that raises money through a fashion show and live auction. They give the proceeds to the Windermere Foundation to help local cancer patients. The third major fundraiser is a holiday festival for all the agents, complete with a raffle that brought in more than $5,000 this past year. Jurvelin says that although he’s the official Foundation representative, everyone in the offices is involved. Each of the three locations has three reps who meet every other month to discuss the donation requests they receive. Once they vet those, they bring the requests to the rest of the
company. That way, everyone is invested and has a say in the causes being supported. “We get our company involved with it, and everyone votes,” Jurvelin says. “We don’t give money out until we get a confirmation from everyone.” Over the past three years, Windermere Coeur D’Alene Realty has handed out 32 grants. Some of the recipients include Safe Passage, an organization that assists victims of domestic and sexual violence; Family Promise of North Idaho, which aims to shelter, feed, and provide solutions to families dealing with homelessness; and Panhandle Health Agency’s Nurse-Family Partnership, a program that pairs first-time moms with a registered nurse who offers guidance and support from pregnancy through a child’s second birthday.

WNING A HOME on the water can be a great investment in your personal health and happiness—and it’s a sound financial investment, too, according to Windermere Chief Economist Matthew Gardner. “There’s a saying when it comes to housing that ‘we aren’t making any more land,’ and this is true; but what is equally true is that we aren’t making any more waterfront property,” Gardner says. There’s a limited amount of shoreline property, but there are always people looking to buy or rent on the water. The demand will always be there, meaning your home will retain excellent resale value—though Gardner advises these properties can take longer to sell. “Clearly there is a significant premium associated with waterfront real estate and this does translate into longer market time, but price growth in 2019 for waterfront homes was almost double that of non-waterfront homes.”
