Mexican Snack Factory in Harlingen makes potato chips for export

By Kathy Olivarez Exchanging their red hats for blue hairnets, Winter Texan Red Hat Queens from all across the Rio Grande Valley took a tour recommended by one of their members. The tour was of the Mexican Snack Factory in Harlingen, where potato chips are made for export into Mexico. The plant was built in 2003, according to manager Deborah Ramirez, because Mexico does not have good potato growth due to climatic and soil conditions. With an increasing demand for more potato chips in Mexico, it was decided to establish a plant near the border and ship the chips into Mexico. In Mexico potatoes could only be shipped about 50 kilometers before processing or they would start deteriorating. Otherwise potatoes must be refrigerated to avoid deterioration. Ramirez handed out blue hairnets, which she said signified visitors. Then she led the ladies out to see the process, beginning with a large truck with a trailer load with round potatoes. Ramirez explained that round potatoes are used for making chips while oblong potatoes are

usually used for dinner meals where a baked potato is requested. While waiting for the trailer to be lifted on a platform and tilted to dump the potatoes in the first hopper for cleaning, Ramirez said first production in the spring

LJISD Presents Folklorico & Mariachi Concert La Joya ISD, the school district that pioneered mariachi and folklórico dance programs in the Rio Grande Valley over 30 years ago will host a concert featuring the district’s three high schools’ award-winning performing groups. The annual “3 Schools, 1 Voice” concert will feature a collaboration of folklórico and mariachi students from the district’s three high schools, La Joya High School, Juarez-Lincoln High School and Palmview High School. The mariachi music and folklóric dance performances will be held on Saturday, Nov. 12 at 2 p.m. and 7 p.m. and on Sunday, Nov. 13. at 2 p.m. at the Alejandro “Alex” H. From pg. 1 Pearsol, Texas start arriving. When that is completed potatoes start arriving from Missouri, then North Dakota, Indiana, and Dalhart, Texas are ready for processing. Potatoes are contracted six to eight months in advance to be sure there is a smooth flow of potatoes year-round. While the local potatoes may be relatively cheap to move, it costs about $10,000 to $12,000 in freight to bring potatoes from North Dakota or Indiana. As the ladies watched, the trailer was lifted high enough for its load of potatoes to start moving onto the conveyer belt that took them inside for their first cleaning. Ramirez said the potatoes were washed for 45 minutes to get all the dirt off them and to separate potatoes from any rocks are other debris that may have accidentally been loaded in the truck. After being washed, the potatoes are sliced in half and sent for inspection to remove potatoes that are too green and those with flaws. Those potatoes are thrown out. The others move along the conveyer belt to be rewashed and sliced into thin chips. Next comes a special wash that takes most of the starch out of the potato. Then the slices are sent to the fryers to be cooked for 20 minutes. The chips are fried in a form of palm oil, because they found the Mexican market liked the taste of this

The oil can be recycled for an additional usage in frying the chips but when it passes its prime it can be recycled to be used as an oil cover for roads when applying asphalt. It is not dumped into the sewer systems to clog up the drainage systems. The potatoes are then put through a seasoning applicator process. The chips being made that day were simple salted chips, but the factory makes two other kinds. One has a cheese mix on it and the other uses adoboda, a traditional Mexican spice that is a bit hot. Once the cooking process is completed, the warm, delicious-smelling chips are moved along an assembly line and dumped into large boxes lined with plastic that are machine-assembled at the other end of the line to catch the potato chips. Each carton holds 12 pounds of chips. The chips will be shipped to Xignus, a food processing plant in Monterrey in the giant packing boxes. All cases are shipped out to Mexico the same day they are processed. There are 30 pallets per load and two loaded trucks go out per day. In a month’s time they ship 180,000 kilos, or 396,000 pounds. Ramirez said the chips from Xignus are also found in limited quantities in the Valley now as more and more Mexican Nationals demand familiar brands. see SNACK FACTORY pg. 4

From pg. 1 The top parks for 2016 are: Llano Grande Park in Mercedes, named the Top Large RV Park in Texas; VIP RV Park in La Feria, Top Medium-sized RV Park; and Oleander Acres, Top Small-sized RV Park. In a special awards ceremony held at the Riverside Club in Mission Salome Welliver, president of the Rio Grande Valley Chapter of the Texas Recreational Vehicle Association RGV Chapter, gave out the awards. Welliver explained the selections were based on a lengthy application process where information must be submitted in many categories. Prior to the awards presentations, Sergio Munoz, state representative for an area from Palmview to Pharr that has many RV parks, welcomed those who attended. The first park honored was Llano Grande Park in Mercedes, named the Top Large RV Park in Texas. The manager, Karen Pike, was not present to accept the award. John and Ruth Dearinger accepted the award for VIP RV Park in La Feria as the Top Medium-sized Park. This couple and VIP RV Park have won this award three of the past four years. Ed Welliver, owner of Oleander Acres, accepted the awards for Top Small-sized RV Park. After the awards were presented, the

Winter Texan Times asked for more details about the selection process. Ruth Dearinger, of VIP Park, brought out her application notebook to show the categories. The first area was customer service and reviews. She had enclosed notes from residents saying what they like about the park and thanking the management for things it had done to help them. The second category was excellence in operations, which includes anything the management does to help its patrons. Dearinger included a map provided to help new residents locate services they might need. She also included information about the park’s First Responder program. There was also a list of city events and park contests that is given to residents when they arrive. The information also included an evaluation of employees who work in the park, “How Did I do?” Another section looked at community service. VIP collected box tops for education, and bottle caps and pop tops for the Ronald McDonald House. They held food drives for a local food pantry and some of the women got together to make and donate quilts to the local hospitals. The section on Park Growth included new improvements such as offering line dancing classes and planning special field trips. The Visual Appeal category dealt with upkeep of the park. From pg. 6 had demolished some old buildings and painted and landscaped other areas. After Dearinger was finished, Salome Welliver brought over the Oleander Acres application book. One of the areas she highlighted was landscaping. Oleander Acres is the first RV park in the state to have a butterfly garden. They also do a Monarch Rescue project, where they plant milkweed plants as habitat for the endangered Monarch butterflies. While it started out as a strip garden, it has expanded to almost half an acre planted with milkweed for the monarchs and other host plants for other butterfly species that migrate through the area. According to Welliver, the effort has paid off. Recently a very rare butterfly, an Eruto Heliconin, usually only found south of the Mexican border, was spotted in the Oleander Acres butterfly garden. Park residents have begun harvesting caterpillars and keeping them in a safe place to

Under Community Service, Welliver said several Oleander Acres residents volunteered their time for the McAllen Nature Center, helping with planting native habitat in the park. Some residents in the park raised funds and provided gifts for children in an orphanage in Mexico, while others knitted caps for the children’s department at local hospitals. Another group does volunteer work at Valley Haven, a home for children who have been removed from their homes. One of the innovative things the park has done is to add some tent sites. Welliver explained there is a group of campers with Adventure Tours who travel into Mexico on motorcycles who carry tents with them. Oleander Acres has added some tent sites to accommodate them on their travels to and from Mexico. The tents sit on a base of crushed gravel instead of lumpy uneven ground.

It will be followed by a balloon glow. At 8 p.m. Friday there will be a DJ Show, and DJ Shows in the afternoon on Saturday and Sunday. Tethered balloon rides end at 10 p.m. each day. On Saturday there will be special entertainment when LC Rocks Band takes

pg. 7 the stage at 9:30 p.m. On Sunday there will be a farewell banquet at 10:30 a.m. Special entertainment by Whiskey D at 7:30 p.m. The festival will close at midnight. Tickets may be purchased in advance at Dairy Queens and Little Caesar locations throughout the Valley for $13 for adults and $5 for children. At the box office tickets are $15 for adults or adult VIP $120. Tethered balloon rides are $20, while balloon flights are $300.

On Saturday the raptor show at 1 p.m. will be a larger demonstration where raptors fly and show their skills. It is also free. A large trade show will feature a vari-

State Parks and World Birding Center sites from around the Valley and state will have booths to let visitors know what birds and ecological treasures are available in their parks. Look for the Texas Master Naturalists to have a booth. A native plant sale is planned and there will be items such as jewelry and clothing for sale. Travel groups offering tours in Costa Rica, Guatemala, Ecuador and South Africa will be present to tell participants about the guided birding and ecological tours offered in those countries.

2nd Street Bistro offers variety of buffets and more The 2nd Street Bistro, located inside the Doubletree Hotel on 2nd Street in McAllen offers a wide variety of foods, ranging from themed buffets to specialty dishes. As a Southerner I grew up eating shrimp and grits but had never seen them on any menu in the Rio Grande Valley. I was delighted when I found them on the menu at the 2nd Street Bistro. Manager Fernando Rocha warned me they had a “Texas twist” to them but I ordered them anyway. When they arrived I found four jumbo shrimp stuffed with cream cheese and jalapenos, wrapped in bacon and grilled until the bacon was crispy. They were served on top of grits seasoned with butter and garlic. While a little different from those served in the south, they were absolutely delicious!

Buffet Variety

Wednesday through Sunday the Bistro features buffets. The Mexican buffet on Wednesday features cabrito that is so soft it falls off the bones. All the traditional foods, such as enchiladas, fajitas, guacamole and chips with their special seasoning, tacos, rice and beans are offered for $14.95. BREWS: Friday, there is a special Seafood Buffet that features shrimp tacos, blackened bass, fresh shrimp and other seafood delicacies for $15.95. The Bistro also offers holiday banquets on Thanksgiving, Christmas, New Year’s Day, Valentine’s Day and Mother’s Day. All noon buffets come with soup, salad and dessert bars. A breakfast bar is available each morning on weekdays.

Mid Valley Civic Theater presents ‘Lettice and Lovage’

The Mid Valley Civic Theater will present “Lettice and Lovage,” and comedy about an eccentric tour guide whose wild theatrics upset an uptight administrator. The play will be presented Nov. 1720 at the Tower Theater, 120 S. Kansas,

World Champion Shrimp Cook-off is Nov. 6

The 23rd annual World Champion Shrimp Cook-off will be held in Port Isabel on Sunday, Nov. 6 from 10 a.m. to 6 p.m. The annual festival is a favorite among locals and visitors alike. There will be shrimp to suit everyone’s taste from boiled, broiled, fried, baked and special shrimp dishes from which to make selections. The shrimp are prepared by amateurs and professional chefs from throughout the Rio Grande Valley. Participants are judged on appearance, aroma, and the taste of their specialties. Samples are available to attendees for a modest fee. “The Agency” will be providing live music for the event and there will original artwork, gifts and collectibles for sale during the event. Edinburg Scenic Wetlands offer a variety of opportunities By Kathy Olivarez The Edinburg Scenic Wetlands (ESW) and World Birding Center (WBC), located at 714 S. Raul Longoria Road, was the first of the WBC satellites to open in 2003. Since that time it has offered a great variety of opportunities for visitors to enjoy the center through guided tours, walking trails, educational lectures and other special events. ESW encompasses 40 acres of reclaimed farmland located next to the city’s effluent and floodwater ponds that create a water habitat that is attractive to many water fowl. There are 3.5 acres of native butterfly gardens that offers some of the most diverse habitat in the area. The water feature consists of two large wetland ponds, an irrigation canal and a dragonfly pool. The two-and-a-half mile walking trail consists of a boarded walk near the ponds, sidewalks and crushed granite paths through the butterfly gardens. ESW is heavily involved in education for school children and is headquarters for the wetlands program designed to supplement fifth grade science curriculum. There are also scouting programs and other special educational activities. Naturalist Monica Barrera said in February ESW hosts the RGV Coastal

Expo, a two-day event where over 1,000 children come each day to participate in nature activities such as fishing, kayaking and wildlife shows. The expo teaches children about area wildlife outdoor activities they can participate in and where to find the activity. It even offers some ideas for careers in wildlife the children might be interested in for the future. Different parks in the RGV participate by bringing booths with information about their parks. About 100 volunteers are needed to help with this special activity, and Winter Texans are especially welcome. ESW maintains a monthly bird sighting list for birders. In October, birders could have sighted some of the following species of birds: Black-bellied Whisting Duck, Northern Shoveler, Plain Chachalaca, Pied-billed Grebe, Great Blue Heron, Snowy Egret, Inca Dove, American Coot, Golden-fronted Woodpecker, White-eyed Vireo, and Northern Cardinal. In all there were 36 species of birds spotted. Guided bird walks are held Tuesdays from 8:30 a.m. to 10 a.m. Butterflies were even more abundant. In August, species sighted included the Pipevine and Giant Swallowtail, Large Orange and Orange Barred Sulphur, Giant and Gulf Fritillary, Border and Crimson patch, Coyote and Mournful Duskywing

and many more. A total of 51 different types of butterflies were sighted. There are also nature walks on Thursdays from 3 p.m. to 4:30 p.m. ESW maintains a Native Plant Trail where visitors and learn about many native plants and their uses to humans and wildlife. Plants such as the Velvet Lantana have markers in front of the plants telling their uses. For example, the Velvet Lantana bears black fruits favored for birds or a food source. It also states that pieces of the leaves or twigs have been used as a cure for deafness when inserted directly into the ear. The markers also tell where the plant grows best. In addition to the plant trail, ESW maintains a community garden designed to teach organic gardening skills to residents. Barrera said beds can be rented for personal use at $35 for one season and $50 for two season (spring and fall). Inside the visitor center, there is an ornithology guide from Cornell that has the sound of every bird in North America to help guests identify birds by their songs. The gift shop also sells bird and butterfly field guides, reference books and other items to help new birders and “butterflyers” get started. ESW has a full range of activities, beginning with a landscaping series held the

second Thursday of the month from 10 a.m. to 11:30 a.m., a weekly event. A “Campfire with a Naturalist” series is held on the third Thursday of month from November through February. Barrera said this program is geared toward adults, teaching outdoor survival where skills such as cooking over a fire or using a Dutch oven in a fire, or tying knots are taught. Friday Night with a Naturalist, a weekly event, starts at 6 p.m. It includes talks on variety of topics. Some of the topics coming up include migrating birds, ants, and beyond vegetable gardening. It is held in the visitor center. ESW’s Scenic Arts Festival & Migration Celebration will be held Nov. 19 from 1 p.m. to 4 p.m. This event focuses on nature-related art, painting, sculpting, art and music and skills, nature-related skills such a soap-making. ESW is a very active WBC site with many different activities. Check it out while visiting the Rio Grande Valley. The ESW visitor center is open Monday through Saturday from 8 a.m. to 5 p.m. The grounds are open from 7 a.m. to 5 p.m. weekdays and 7 a.m. to 6 p.m. on Saturdays. It is closed on Sundays. Admission is $3 for adults and $2 for children and seniors.

The tropical meal served consisted of jerk pork sliders, tropical fruit on kabobs, veggies and macadamia nut cookies. Bottled water and sodas were available. Butterflies statues appearing throughout downtown Mission

Winter Texan Times Report By Jose De Leon III The city of Mission is known as a travel destination for butterflies and butterfly lovers. Each year, approximately 300 different butterfly species arrive in South Texas during October through mid-November, which is the peak of butterfly season according to the National Butterfly Center. When Maxilou Link first moved to the city of Mission, she said all the butterflies in the area captivated her. “I got an overwhelming feeling of joy when I saw them,” she said. “I cannot ever remember not loving butterflies and being in a city surrounded by them was so special.” Because of the shared love for butterflies between Link and the city, the 93-year-old director of the Upper Valley Art League (UVAL) found the perfect way to share that feeling throughout the city. Earlier this past summer, the city and the UVAL teamed up to install a dozen butterfly statues throughout Mission’s downtown area. The butterflies, most of which stand at about five feet tall, were sculpted and molded by UVAL and the city bought and installed them. Mission City Manager Martin Garza said the butterfly statue installations are something the city would like to see more of. “We’ve already placed an order to

implement at least 20 more butterflies throughout the city within the next six months,” Garza said. “The city has seen a great response to it so far and since we’re known for our butterflies, these statues are a great way to promote our National Butterfly Center.” Located on the west side of Mission, the National Butterfly Center is a 100-acre park with outdoor butterfly gardens and trails featuring native plants that provide habitat for the wild butterflies in the RGV. From Oct. 29-Nov. 2, the center will host the 21st annual Texas Butterfly Festival, kicking off with a Community Day on Saturday, Oct. 29 that is free and open to the public. The National Butterfly Center was not associated with the installation of these statutes, according to Link. Link said she first approached city leaders about installing these statues seven years ago but it was only approved in 2014 after she discussed it with Mission Mayor Norberto “Beto” Salinas. The sculptures, which depict a different butterfly resting upon a leaf with its wings outstretched, were made with a fiberglass base, while the butterflies’ bodies are composed of steel and iron. Up to 10 different organizations—including Artists Unanimous, Mission Lions Club and the city fire department—hand-painted the butterflies. According to Link, the butterflies—

Red & Gold Chili Cook-off is Nov. 12

The 8th Annual Red & Gold Chili Cook-off to benefit the Ronald McDonald Houses of the Rio Grande Valley will be held Saturday, Nov. 12 from 11 a.m. to 6 p.m.at Mad Boar Harley-Davidson, 3515 W. Expressway, San Benito. There will be participants from all over the Rio Grande Valley and as far away as Corpus Christi and Laredo. The American Cancer Society’s Dining by Design will be held at Harlingen’s Casa de Amistad, 1204 Fair Park Blvd., on Thursday, Nov. 10. Tables will be set up for viewing from 11 a.m. to 4 p.m. A light lunch will be served by a local catering company. Tickets for the event are $25 per person. The event started in 2000 when a group of Harlingen women wanted to raised funds for the American Cancer Society. One year later, with the help of Harlingen merchants, the first event was held, raising $25,000 for the American Cancer Society. To date, over $500,000 has been raised and donated to the Rio Grande Valley Chapter of the American Cancer Society. Approximately 50 different people or teams design a tablescape with a variety of themes. Tables range from treehouses, Christmas, holiday themes, tailgate parties

and much more. Event publicist Mary Beth Simmons said last year one women had an Eastern themed table where she used a silk tent and everyone ate inside the tent. Her theme was “Bollywood Beats Cancer,” based on India’s version of Hollywood. Another group with an outstanding table last year had Hawaiian flower flown in for their tropical-themed table. “Very striking!” said Simmons. In addition to the viewing and snacks event in the afternoon, there is a formal evening dinner. However, the dinner is all sold out at this time. Make plans to attend the dinner next year.
