The holidays are over, and a new year has started. With a new year comes hope for new habits and new things we want in our lives. We usually don’t make resolutions, because they are hardly ever kept, but we do make an effort to try new things or hope for a better year, a better us, and take the lessons from the previous year and apply them to the new one. We hope that you have started off

Eldorado Acres: Just like dinnertime at home One of today’s most overlooked, or maybe forgotten, moments that may not take place in as many homes as in the past is the family gatherings at mealtimes. Everybody in the home today is working or playing or so busy that they have kept restaurants – especially fast food – alive and thriving. And while the traditional “dinner’s ready” may not be heard as much as in recent years and/or

decades, it still has the potential to bring people together to share their stories or triumph and tragedy or just the happenings of the day. And when you have a cook like Phil Armando putting together the menu and meal, people tend to come flocking, even before dinner is ready. The most recent Thursday dinner at Eldorado Acres was a baked mostaccioli – penne pasta, a rich and flavor-driven meat sauce – which simmered for a day-and-a-half - and covered in a thick layer of cheese. Parmesan was also available to cheese it up a notch and some grilled See DINNER pg. 2

Ron Hoover hosts open house next week

Ron Hoover will host their 15th Annual Open House next week, Thursday, January 13 and Friday, January 14. The event will be held from 10 a.m. to 3 p.m. both days. The annual open house has become a popular event in the Rio Grande Valley, drawing in thousands of people each year. This year’s event is expected to be even bigger than previous years. One of the coolest things, says Dustin Hoover, is that this event is the largest RV/boat dealer open house in the nation. Previous events have seen as many as 10,000 people come through. garlic bread. The large portion of gobbling goodness cost only $7 and dessert, a variety of cakes and rolls was an additional $1. Phil isn’t just a resident who enjoys cooking. He and his wife Terry are from just outside Kansas City and Phil has a history inside and out of a kitchen, having not only owned a restaurant in the suburbs of Chicago – an Irish bar and grill named Mickey Finn’s, but also owning a campground in Missouri with a full commercial kitchen. Oh, and he’s Sicilian – so the Italian that he makes, which includes a lasagna coming up during the next few weeks, is definitely legit. “We try to have something different each week,” Phil said. “Sometimes things repeat but for the most part we try to mix it up a lot.” A few people had gathered inside the park’s activity hall a few minutes before the scheduled opening. About 40 people attended, mostly from the home park but others came sniffing around and were prepared with their own plates, forks and knives and set up “camp” before the meal was served. They prepared their drinks, sat at some of the tables and like in the traditional family setting, started conversations

with one another, enjoying the day and ready for the moment Phil said, “It’s dinnertime.” Later in the week, Phil was gonna pull out some frozen broth from the Christmas meal – which served about 100 people and included turkeys cooked three ways, hams and more – and make a turkey noodle soup along with some black-eyed peas, something that one won’t find across the Valley during other parks’ meals. “We do the dinners on Thursdays and lunch on Saturdays,” he said. “We started with breakfast, but it was slow, so we went to lunch. COVID has played it differently on how many want to come to other parks. But people enjoy it and still we get a few from elsewhere.” The crowd, and the conversations, grew. Laughter filled the building as people enjoyed what Sicilian Phil and his small crew of helpers had whipped up. It was just like dinnertime at home.

Volunteer opportunities at PVAS

If you want to spend some time with animals, and help an organization out by doing so, Palm Valley Animal Society has plenty of volunteer opportunities for you. Every second Saturday of the month, PVAS hosts a vaccination clinic for pets out in the community called Community Clinic. Veterinarians stop by the shelter to help provide vaccines to keep pets in the community happy and healthy. PVAS serves roughly 150 dogs and cats out in the Rio Grande Valley. The Community Clinic is one of the largest volunteer events hosted monthly and they are in urgent need of help and is usually held at the Laurie P. Andrews Center (2451 N. US Exp. 281, Edinburg). Volunteer duties

include assisting in the direction and flow of client traffic and parking; escorting pets into and out of the clinic; pet handling; checking in and checking out clients; assistance in coordination and flow of the event inside and outside of the clinic; and other duties. Clerical help is also needed. PVAS needs help in preparing for the Community Clinics held. They usually hold this volunteer opportunity a day or two in advance of the clinic. Those volunteering can expect to prepare client check-in packets, final touches to the clinic preparation, and more. Weekly, PVAS has a Foster Wellness Clinic at the Laurie P. Andrews Center. Shifts for this are available every Saturday. The

WINTER TEXAN TIMES

clinic is held to ensure that the pets out in foster care are happy and healthy along with receiving their needed vaccinations. Volunteer duties include checkin foster pets; assist foster staff in clinical tasks; vaccinate pets (under supervision and assistance); guide foster parents inside and out of the clinic; take pets in and out of the clinic; and discussing checkups with foster parents. Another opportunity is PVAS’s adoption events. They host adop-

tion events at area stores like Petco on a regular basis and could use help with several things. Volunteer duties include loading and unloading pets; setting up table and tabling materials; speaking to the public and PVAS; and distribution of flyers and materials. You can sign up to become a volunteer at https://mailchi.mp/ pvastx/volunteer-registration. If you have any questions, call PVAS at (956) 686-1141.

Workshop Wednesdays return to IMAS

The International Museum of Art & Science (IMAS) announces the return of Workshops Wednesdays presented by H-E-B Helping Here in the new year. The popular virtual program will come back for its third season January through October. Each month will feature a new virtual workshop on a different artist, art movement or medium. These workshops are great for beginner artists and anyone seeking a creative break. With the gene r o u s support of a grant f r o m H-E-B Helping Here, this program is free for all registrants. A limited number of supply kits are available for registration each month and are to be picked up the weekend prior to the live workshop. IMAS publishes supply lists ahead of the workshop to engage the broader community, encouraging them to tune in with their own art supplies, many of which can be found at a nearby H-E-B plus! or craft store. Local participants are eligible to enter the monthly giveaways by sharing their finished artworks with the museum. Workshop Wednesdays take place once a month on IMAS Facebook at 4 p.m. live. The series kicks off in 2022 with Surrealist Collage inspired by “Imagined Worlds: Exploring the Carlos Melguizo Collection” on Wednesday, January 19. Workshops continue monthly through October with Intro to Figure Drawing, Textile Art, Recycled Sculpture inspired by “Industrial Nature” exhibit, Still Life Drawing, Mixed Media Self-Portrait, Illuminated Sculpture,

Abstract Expressionism inspired by upcoming “Anne Marchand” exhibit, Alebrijes, and Pumpkin Pop Art. Workshop Wednesdays began as a virtual series in March 2020 after the museum closed its doors temporarily. Claudia Martinez Gray, IMAS Director of Education, expresses, “Back then I was designing the workshops on my dining room table with the supplies I had at home. N o w , with the g r a n t support, I am able think beyond the realm of my kitchen and connect w o r k shops to our current art exhibits or emerging artists. I am looking forward to the textile art workshop which is inspired by Mexican artist Pia Camil.” Thousands of children, teens and adults have tuned in live or at their leisure on the IMAS YouTube channel to explore new art mediums at home along with IMAS Educators. Now IMAS is kicking off its 30th episode with the 2022 season and is grateful for the support of H-E-B Helping Here to ensure the community has this creative outlet. Workshop Wednesday videos and registration information can be found at https://theimasonline.org/workshop-Wednesdays along with links to register for future workshops. The museum is located at the intersection of Bicentennial Way and Nolana Avenue at 1900 W. Nolana in McAllen, Texas. A Rio Grande Valley native Katherine Hoerth grew up amidst the dense South Texas Brush Country in McAllen. Just a toss of a cowboy hat from the border, this little corner in the deep south has inspired Katherine in her journey as a renowned poet. Katherine Hoerth is the author

of five poetry collections including Flare Stacks in Full Bloom (Texas Review Press, 2022, forthcoming) Borderland Mujeres (SFA University Press, 2021, forthcoming), Prairie Madness (North Dakota State University Press, 2021), and Goddess Wears Cowboy Boots (Lamar University Literary Press, 2014). She is the 2015 recipient of the Helen C. Smith Prize for the best book of poetry in Texas and the 2021 Poetry of the Plains Prize from North Dakota State University Press. Her work has been published in numerous literary magazines including Summerset Review, Valparaiso Review, and Southwestern American Literature. From the Cheap Seats Bringing that Bluegrass back

Bob Price had a lot of friends who played bluegrass music and he enjoyed listening to them. He wasn’t involved musically and didn’t play any instruments, but he wished he could take part. At the time, however, he could only listen, do some toe tapping and foot stomping to the rhythm of the beat – and just admire it. One morning he woke up and his perspective changed, literally overnight. “I looked in the mirror and said, ‘You never know until you try,’” he said. “So, I bought a cheap guitar, and someone showed me a few chords. Then I bought a banjo shortly after that and a guy showed me a few things and it took off.” And for 40 years, the now-Valley resident with a summer home in the Colorado mountains and a home near

Howling Trails Golf Course has been strumming and plucking away just like he did Monday at Bentsen Palm RV Park. Each Wednesday from 9-11 a.m. Price and a few other Bluegrass souls will comprise the stage band at Bentsen Palm, providing the background for anyone who wants to sing a bluegrass song, or anybody who wants to share their instrumental skills for those in attendance. Recently the jam consisted of songs such as “Long Black Train,” “When You Go Walking After Midnight, (not the Patsy Cline version),” “Ridin’ My Thumb Through Mexico,” “Black Mountain Rag,” and others. When the Winter Texan season kicked off this year, the park held only a variety jam on Fridays. Recently, however, after persistent searching and looking to bring bluegrass back,

activity director Marcie Swenson said she received a call from someone who, like her, wanted to bring the 1940s-style music back. “Ever since, we’ve had a pretty good turnout for it and I hear bluegrass is struggling in a lot of the parks,” said Swenson, who’s been activity director at the park for 12 years. “Maybe it’s the starting time that’s holding some people, but we have a talented group. “All these guys played in a band or as a hobby or part time. They’re very talented.” Joining Price on the stage band included Larry Peterson on the fiddle, Carol Bishop on the guitar, Gary Andis on the bass and Jean Luc Leroux, from East Caledonia, on the mandolin – a special instrument when it comes to bluegrass music. “Under the weather” on this day was the group leader was dobro player Mike Stadler. “The originator of bluegrass music, Bill Monroe, played the mandolin in the

‘30s but classic bluegrass was recognized when Earl Scruggs and Lester Flatt got together.” Flatt, who formed the Foggy Mountain Boys, had been a member of Monroe’s Bluegrass Band. Now, Swenson said, she’d like to see Bluegrass jams make their comeback. She clearly has the talent with the stage band, which has been playing together – in parts or as a whole – for the past six to eight years. Price, however, has been playing with Peterson, the fiddle player, for as many as 15 years. Price said they also do a jam at Lamplighter RV Park on Thursdays.

FAMOUS FOR THE FUN KNOWN FOR THE FOOD

One of my favorite moments when I go to Freddy’s Frozen Custard & Steakburgers is when I take my first bite of the burger patty that is by itself, a patty larger Affordable than the bun it hides Fresh Seafood, inside and a piece that Sandwiches, Salads, sticks out. and much more! It’s not just salted A Real Dining Over down, but sprinkled the Water Experience with their own concoction, Freddy’s Famous Steakburger & Family-Oriented Atmosphere Fry Seasoning. It’s a Full Service Bar mixture of salt, garlic, paprika and other spices that Live Entertainment brings out the patty’s flavor like no other patty I’ve Available for Large Parties or Private Events tasted other than what my mom would make when I was growing up. While many may know Freddy’s from its amazingly refreshing and creamy custards, their burgers are a gem to partake as well. The patties are thin, large, and cooked to perfection. On this occasion I visited the McAllen location, near the McAllen Convention Center. I wasn’t really in the mood for fries, but I really enjoy their beefy and not watered-down chili, so I ordered cheese curds – with chili and cheese on top. This was a Wednesdays from 4-7pm meal unto itself, and I was so in tune with my burger 10.99 plus tax and curds that I completely forgot to ask for some Buffet Includes Dessert jalapenos. It really didn’t need any though because the rush of flavors was immense... and I didn’t want to completely lose the taste from that first bite. The vanilla custard was topped with pineapple, Since 1964 strawberry, coconut, macadamia nuts, whipped cream and a cherry. Its mixture of creaminess and Try Our crunchiness was more than I could handle, a volcano of explosive flavors. Yeah, now I know why Famous Freddy’s is so famous for its custard. gions. For instance, the Census Bureau says Texas has four regions - the Northeast, the Midwest, the South and the West. Some other group also divided Texas into four regions but in a distinctly different way by looking at the natural geography of the areas - the Coastal Plains, the North Central Plains, the Great Plains and the Mountains and Basins. Even those divisions can be a little confusing. Probably the best division of the state was made by the Texas Historical Division when it was decided to divide the state into ten different trails. These trails were made primarily to encourage travelers to explore Texas - and there is a lot to explore on these ten different trails. Surely there is a trail for your major interest … why not explore the Brazos Trail, the Forest Trail, the Forts

Yes, Texas is BIG. But Texas isn’t the biggest anymore. Alaska is 2.5 % bigger than Texas. Oh well, Texans can still say our state is the second biggest and 2.5% bigger than Hawaii. Of course, that doesn’t really appeal to a Texan who generally likes to think that Texas is the biggest and the best in everything. Anyone not familiar with the vastness of Texas generally expects to see cowboys in their big Stetson hats and cowboy boots riding on their fine thorough bred horses all over our great state. Such is not the case. We have prairies and mountains; lowlands and dry lands; forests and plains. Texas is a very diverse state. Because Texas is so big, different entities have divided Texas into regions sometimes into cultural regions and sometimes into geographical re-

Trail, the Hill Country Trail, The Independence Trail or the Lakes Trail; or how about the Mountain Trail, the Pecos Area Trail, The Plains Trail and last - but certainly not least - the Texas Tropical Trail. If you are in the Rio Grande Valley as you read this, then you are in the Texas Tropical Trail Region. You are in luck. There is an organization going by that name that organizes a tour monthly of interesting, historical sites in the Texas Tropical Trail region. This region includes Laredo to Corpus and down to the Gulf of Mexico. That is a big area and there is lot of history and beauty in this region. The next venture planned by the Texas Tropical Trail will be in January when they explore McAllen visiting the IMAS museum and the historical de Palmas area (Main Street, between Pecan Business 83 area). If you are interested in learning more about this region, then start researching on your computer about our area or grab a small publication called the Rio Grande Valley Visitors Guide and generally available at the Texas Travel Information Center. This publication gives suggestions as to what to see and do in the Rio Grande Valley.

Sudoku puzzles are formatted as a 9x9 grid, broken down into nine 3x3 boxes. To solve a sudoku, the numbers 1 through 9 must fill each row, column and box. Each number can appear only once in each row, column and box. You can figure out the order in which the numbers will appear by using the numeric clues already provided in the boxes. The more numbers you name, the easier it gets to solve the puzzle!

From pg. 1

As in previous years, there will be several door prizes. One main prize will be given each day. Main priz-

es awarded will be winner’s choice of an ATV, a zero turn Bad Boy riding lawn mower, and a close trailer. Need to be present for the main prize, but there will be other prizes to win throughout the two days. All who register at the event will receive a free t-shirt, free food, free drinks, and free parking. Dustin Hoover invites everyone to come out and see the enormous selection of RVs, boats, golf carts, and more. On site there will be special sales including a flea market like sale on all the extras Ron Hoover has collected over the year. These items can include parts, hitches, and other items. All items will be sold at a bargain, cash and carry style. This is your chance to get “parts ridiculously cheap,” he said. This year’s event will feature two tents with over 50 vendors.

The vendors are participating by donating to the South Texas Juvenile Diabetes Association. There will also be two entertainment areas. One area will have people presenting different entertainment throughout the two days. Outside entertainment will include Dr. Zog. For some other fun, a free photo booth will be set up for some fun photos. Hot dogs will be served for lunch each day and drinks will be provided by Coca-Cola. Kona Ice will also be available. As with previous years, RGV Vipers will be on hand and there are plans to have someone there to provide free medical screenings. Dustin says, this is just one way to

show his appreciation to the Winter Texan community each year – with some fun, prizes, food and deals for everyone. This is also an opportunity to check their RV units that are in stock and see deals on 2020 inventory. Ron Hoover RV & Marine Center is located at 101 Expressway 83 in Donna (on the south side of the expressway). Parking will be available along North Ave. behind Ron Hoover. Golf cart shuttling will be provided both days.
