ell, the second edition of the year took rather longer to materialise than we imagined at the back end of last year! Still, we hope that with the vaccine rollout continuing at pace we are tentatively making our way out of the darkness. We have (hopefully - mustn’t take anything for granted these days) timed this edition to hit the shelves at the same time as some restrictions lift and we can start living our lives with more freedom. It seems appropriate then that we are covering going out to pubs again (hurrah!), visiting the spa, even (whisper it) the prospect of foreign travel! It being spring though, the biggest feature of this edition is the natural world. Our gardens section (from p30) is full to bursting with ideas on gardens to visit, tips on design and how to make the most of your little patch. We also take time to visit Hagbourne Copse (p18); it’s one of the best places around to find bluebells. Yes, spring has arrived!

STAR-STUDDED LINE UP FOR BATH FESTIVAL

The Bath Festival 2021 celebrates the best in music and books in a beautiful city, as it has done for more than 70 years. Come what may, this year’s festival will showcase Bath for a global audience, presenting events some of which will be filmed in some of the city’s most historic and glorious historic buildings, including the iconic 18th century Assembly Rooms, Bath Abbey, the Roman Baths and The Forum. These were built by previous generations to house large gatherings, so they are adaptable for

HOPE NATURE CENTRE RE-OPENS

H

ope Nature Centre in Southwick is set to re-open again after an extended closed period due to the COVID-19 restrictions. Staff have been working around the clock to create a wide range of improvements. Commercial Manager David Gillingham said “Although it’s been an incredibly tough period financially for Hope Nature Centre, we decided to use the time effectively, as there aren’t many periods in which we could have carried out such a wide range of work without disturbing visitors”.

FUNDRAISING FUN AT FFC

S

tudents at Fairfield Farm College have been busy fundraising for two fantastic causes. Despite COVID-19 restrictions, students were able to raise an amazing amount of money and had to think of imaginative and different ways to fundraise. Students and staff cycled, walked, and danced their way to Buckingham Palace in the ‘Bikeathon to Buckingham Palace Challenge’ for Comic Relief. All those involved managed to clock up enough miles to get to Buckingham Palace and back again, all without leaving the campus. This virtual challenge was arranged by the Fairfield Farm College Student Council, and it aimed to get everyone involved, including those who could not join in person. They managed to raise a fantastic £186 for a great cause.

Students have been working hard to sell special odd socks to raise money for the Swindon and Wiltshire Down Syndrome WorkFit employment programme. Dad emu Biscuit is keenly awaiting some new arrivals in time for the re-opening of Longleat on Monday 12 April...

iscuit the emu is hoping for a bumper Easter surprise as he sits on a clutch of giant emerald green eggs, which are due to hatch out any day at Longleat Safari Park.

If the eggs do hatch successfully, it will be a first for the Wiltshire wildlife attraction and keepers are remaining cautiously optimistic. Emus are unusual in the fact it is the father who sits on the nest and looks after the chicks when they hatch. As well as the eggs in Biscuit’s nest, they are also monitoring two additional eggs in an incubator and have reported one of the eggs is beginning to rock – a sure sign it is close to hatching. “The fact Biscuit is taking his parental responsibilities so seriously and is refusing to leave the nest is a good sign,” said Keeper Gemma Short. “We’re very much leaving him alone and letting him get on with things as naturally as possible so all we can do is to wait, watch and hope.” Emus are among the largest birds in the world, growing in excess of two

metres tall. They're found primarily in Australia, but also in New Guinea, Indonesia, Solomon Islands, and the Philippines and are part of the ratite family, along with rheas and ostriches.

Mating pairs stay together for up to five months, after which females lay large, emerald-green eggs in expansive ground nests. The males incubate the eggs for about seven weeks without drinking, feeding or leaving the nest.

Emu eggs, which are emerald green in colour, have to be incredibly

tough to survive in their native Australia. The emu chick will start by pecking a hole in the egg before expanding his body to break the hard, brittle shell. When the chicks are fully grown they can reach land speeds of up to 50 kilometres per hour making them one of the fastest land birds alongside their ostrich cousins. Chicks stay with dad for about four months, until they are able to eat on their own. Due to the ongoing restrictions with regard to avian flu, the emus are currently being kept inside. CORSHAM WALKING FESTIVAL

his year’s 7th Corsham Walking Festival will run from 11-13 June and will have 26 walks to choose from. Organisers very much hope all walkers will find something to enjoy. To cater for a wide range of walking enthusiasts and abilities the walks vary in distance and go from easy through moderate to challenging.

TROWBRIDGE MUSEUM RE-OPENS!

rowbridge Museum has been closed for redevelopment since July 2018, making way for the ‘Onwards and Upwards’ project, a fantastic renovation and expansion supported by The National Lottery Heritage Fund, Trowbridge Town Council, The Friends of Trowbridge museum and others. The new museum, which will open its doors on Saturday 22 May, will tell the story of Trowbridge through new displays featuring never before seen objects and interactive activities for all ages. At the heart of the redevelopment is the newly built Learning Hub, which will enable the Learning and Outreach team to develop their schools, lifelong learning, workshops and talks programmes.

The museum is also now the home of a brand new Research Library, hosting over 1700 books. The library focuses on the social history of Trowbridge and the development of the woollen cloth industry in the area, ensuring that Trowbridge’s and Wiltshire’s heritage is available to everyone. LIFE IN LOCKDOWN

L

acock Photography, for lack of a less generic metaphor, has had one roller-coaster ride of a year. Like so many businesses everywhere, we closed our doors and re-opened only to close them, we distanced and sanitised and finally, the silver lining of it all: we went online. When launching our online

photography club, we really didn’t have any expectations, thinking at the very least it was a way to the pass the time. How wrong we were! Over the last year, Lacock Photography’s small digital community has come to mean so much to us and has been a surprise source of creative inspiration during what could’ve been the greyest of times.

One such inspiring moment occurred when Neil Pallister, a photography club member, gave a truly fantastic online presentation on abstract photography, using his very own abstract images from summer holidays of days gone by. For me, Neil’s beautifully artistic travel shots blended memories and daydreams of past and future trips away and epitomised that feeling of longing that most of us have experienced during this pandemic. Neil’s presentation also reminded us of the potential power of


photography

abstract photography. During a time where we were all legally locked in the house, the possibility of creating a new world through abstract photography struck a chord with our online members. Many of them (myself included) busied themselves exploring their well-trodden homes, seeking out patterns, colours and shapes in familiar objects they wouldn’t usually have looked at twice. For a few weeks after Neil’s presentation, Lacock Photography’s inbox was alight with colourful abstract images and it made us to smile to

see a wave of positivity emanating from the online club.

One of the photography techniques that our students got excited about is something called ‘Intentional Camera Movement’ ("ICM"). If you haven’t heard of it before, the process behind ICM is to set your camera to a relatively long shutter speed and during the exposure, to literally move the camera around the scene. So many interesting ideas can be explored with ICM, you can create a sense of motion, achieve a painterly quality and a feeling of otherworldliness. The trick with it is to be patient, to experiment and to put in the time, something many

T

his pocket of woodland provides a breathing space for wildlife in west Swindon and a peaceful place where workers can take a lunchtime stroll. In April and May you can enjoy a stunning display of native bluebells. The copse was planted some time before 1766 and belonged to the Lydiard Park estate. Oak was harvested for the building industry and coppiced hazel was used for fencing. Coppiced trees produce new shoots and this is a traditional way of harvesting wood.

The team covers the coppice stools with twigs to protect them from the deer and rabbits, which nibble the new shoots and prevent the stumps from re-growing. In springtime, aside from the bluebells, the woodland floor lights up with wood anemones, primroses, a few early purple orchids and Goldilocks buttercups, which are indicators of ancient woodland.

In summer, more flowers decorate the southern path, including red campion, herb bennet, devil's-bit scabious and greater knapweed. They attract butterflies such as the purple hairstreak, peacock, brimstone, red admiral and comma.

Birds nest in the woodland. Blue tits, great tits, long-tailed tits and tree creepers can be seen flitting about in the trees, and in the winter you may see redwings hunting for berries and worms. Look out for great spotted woodpeckers and the occasional sparrow hawk. Rabbits, foxes, shrews and voles are present. The pond is fed by ditches, which help to drain the woodland. It attracts smooth newts, common frogs, mallard ducks and occasionally a grey heron.

opefully, with all fingers crossed, this month is going to go to plan and the easing of lockdown restrictions will continue to be rolled out. As I write, all cafés, hotels and restaurants that are fortunate enough to have outside space will be able to open again. Many have gone to great expense, varying from specially made pods, to sheds, glasshouses, gazebos and shepherds huts, right down to just a basic roof over a courtyard area to keep the rain off. Do try and support them when you are able to go out again, especially ones local to you. It is all about supporting local business, which in turn supports the local economy and keeps people in jobs. We have all learnt over the last year how important it is to look out for each other in the local area. We are all willing now I think to get our coats on and get outside to meet family and friends for a coffee and brunch, lunch or an afternoon cake and a cuppa. From April we have Ross on Wye asparagus available and we hope to have three months of supplying one

of our chefs’ favourite ingredients. Last year the poor asparagus growers had their season cut brutally short by you know what! Look out for it in your farm and village shops and garden centres. If you ask they will tell you where it is from. We may also have a call for wild garlic this year. Remember if you go out do forage responsibly and check whose land you are on to make sure you are not trespassing. There are many recipes available for using it in your cooking/soups online. You can use young nettle leaves for soup (add onion, carrot, leek and potatoes). They are very high in nutrients, vitamins and minerals and have been a natural remedy in many cultures for thousands of yours. They help to detoxify the body, regulate hormones, act as an anti-inflammatory and help with circulation and allergies. Maybe we should all be drinking nettle tea!

If you can also try to make the most of better weather to be on your allotments or in your garden preparing the ground and doing odd jobs. This year I have decided to keep it simple; I am only going to grow what is easy, quick, and that we enjoy eating. The main point of the allotment for me is to spend healthy time outdoors and to see the grandchildren enjoying their part in it, even though they always want to harvest everything as ‘baby veg’ rather than wait another a couple of weeks! OUTDOORS

As lockdown lifts hopefully we will all be able to enjoy BBQs and meals with friends again. With this in mind, FRAN STEVENS, aka The Food Wife offers up some great recipes that are perfect for serving up outdoors. As the weather gets warmer, substantial salads are great as a main meal. This Thai-inspired noodle and mince salad ticks the box. The dressing has the unmistakable saltiness from pungent fish sauce and the mince is fragrant with ginger, lemongrass and, if you can get them, lime leaves. Lime leaves come in pairs, so the four stipulated in the ingredients will actually look like eight leaves. These can be tricky to get hold of regularly. I buy a box from the frozen section of the Asian supermarket. Kept in the freezer these last a long time and are on hand for whenever a recipe calls for them.

Ingredients For the mince: 1 tbsp (coconut) oil 750g lean mince (turkey or pork both work well) 2 inches of ginger, peeled and grated 3 sticks of lemon grass, finely chopped 4 lime leaves, finely chopped 3 tbsp soy sauce (gluten-free if required) For the salad: 200g glass noodles, soaked until soft and then drained 1 carrot, peeled into ribbons 1/2 red pepper, cut into strips 2 spring onions, finely sliced Lettuce, shredded

For the dressing: 3 tbsp fish sauce 1 1/2 tbsp caster sugar 2 limes, juiced 2 tsp chilli flakes

Add the ginger and lemongrass and cook for a couple of minutes until fragrant. Add the lime leaves and soy sauce and stir through until the pan is dry again. Remove from the heat.

Method Melt the coconut oil in a frying pan over a medium high heat. Add the mince and fry until browned and dry (there should be no liquid left in the pan).

Combine the dressing ingredients together. In a large bowl, toss the noodles, salad ingredients and dressing together. Serve. THEWESTWILTSMAGAZINE 27

Roasted Peppers Chickpea & Carrot Burgers

Ingredients 2 tins of chickpeas, drained (reserve 1 tbsp of liquid) 2 medium/1 large carrot, grated 2 spring onions, finely sliced 2 heaped tsp ground cumin 1 heaped tsp smoked paprika ½ tsp dried oregano 1 tsp garlic powder Salt and Pepper Method Take half the chickpeas and use a potato masher to roughly crush them (some will remain practically whole, others will squish a little). This will give the texture in the burgers. With the other half of the chickpeas, along with the tablespoon of reserved liquid, blitz into a smooth paste. Now combine both types of chickpeas along with the grated carrot, sliced spring onions, spices, 28 THEWESTWILTSMAGAZINE

garlic (use two crushed cloves if you don’t have any powder) and a pinch each of salt and pepper. Taste a little of the mix to check the seasoning.

I quarter the peppers and would suggest this quantity would serve 2-4 people. They’ll keep a few days in the fridge too so perfect to make in advance. These are both vegan and gluten-free.

Ingredients 2 large bell peppers (any colour but green) 8 cherry tomatoes, halved 16 small basil leaves Place on a non-stick baking sheet (Garlic-infused) oil and cover before placing in the fridge Salt and pepper until needed (this will help them to firm up). Method Preheat your oven to 175°C fan. When ready to cook, spray or wipe a Prepare the peppers by slicing each little oil in the tops of them (I also put in half down the stalk. Carefully transfer the baking tray to the oven (make sure nothing falls off the peppers!) and roast for 45-55 minutes. They should be soft with a slight char at the edges. Delicious hot or cold.

I love a good veggie burger. Making your own is easy and these are made with ingredients you probably have in your store cupboard or fridge. Crushing half of the chickpeas provides texture, whilst blitzing the other half creates what you need to bind these together. These contain no flour, egg or dairy and so are suitable for a gluten-free, dairy-free or vegan diet.

Makes 4 These are such a joy to eat in the summer, they are great as part of a lunch with salads and also make an excellent filling for a sandwich (although don’t make it too far in advance as it can go soggy, and no-one likes a soggy sandwich).

Here she shares some tips: As a garden designer I used to find it frustrating that gardens were often the last ‘room’ that clients attended to. Thankfully things have changed, stuck in lockdown, unable to go on holiday, we finally appreciated how important our gardens are for our mental and physical health, as a result, the horticultural industry has never been busier.

he documentary “Kate Garraway: Finding Derek” aired on Tuesday 23 March (ITV) and highlighted the struggles TV presenter Kate has faced since her husband, Derek Draper, was admitted to hospital with Covid-19 in March 2020. Kate has openly spoken about the financial issues she faced being unable to access accounts in Derek’s name without a power of attorney. Kate Garraway’s heart-breaking story of her husband Derek’s year-long battle with Covid has been made more complicated by the lack of legal protection she and Derek had in place. Kate was unable to access funds to manage her husband’s care or refinance her mortgage. She didn’t even have the legal right to see his medical notes. Research by Solicitors for the Elderly (SFE), shows that 65% of us think our next-of-kin will make medical and care decisions for us if we are no longer able to. In reality, this isn’t the case unless a Lasting Power of Attorney (LPA) is in place. Whilst there’s been a rise in the number of enquiries made about LPAs during the pandemic, only 22% of people in the UK have one.

To avoid this difficult kind of legal situation it’s important to use a specialist lawyer who is experienced in this area of the law, and is trained to support people making these crucial and difficult decisions. o here we go again! By the time you read this the next raft of restrictions will (hopefully) have been lifted and we’ll be one step further along to getting back to some sort of normality, although what normal will be after the shenanigans of the last year or so remains to be seen! I have copied the next part directly from gov.uk to get it straight from the horse’s mouth, so to speak. It states: “Step 2, which will be no earlier than 12 April, will see the opening of non-essential retail; personal care premises such as hairdressers and nail salons; Hospitality venues will be allowed to serve people outdoors at Step 2 and there will be no need for customers to order a substantial meal with alcoholic drinks and no curfew, although customers must order, eat and drink while seated (‘table service’). Wider social contact rules will apply in all these settings to prevent indoor mixing between different households.” I am very much looking forward to getting my nails done, as you can imagine, and as for my hair! My hair has a slight ‘wave’ in it apparently, so when I decided I would grow it (as I couldn’t get it cut anyway), what I didn’t realise was because of said wave, my hair, as it got longer, wouldn’t grow downward in the customary way (I envisaged a sleek Greek god style look).
