ur November edition is always one of my favourite to put together. It seems appropriately late in the year to start talking about Christmas and this always puts people in a good mood. After the last 20 or so months we really could do with the celebration too! There are three main features that I’ll draw your attention to this month, the first is Christmas events (p15). We tell you more about some of the light switch ons, markets, fairs and pantomimes that are coming our way over the next few weeks.

6

Next up is Festive Feasts (p23), from butchers to sweet shops and even a farm shop vending machine, you will be spoilt for choice when it comes to sourcing fantastic Christmas fare this year. And finally on to shopping! Our Christmas shopping guide (p51) is packed full of local businesses with great gift ideas - it’s been a hugely difficult time for everyone associated with retail so please buy local this Christmas if you can.

23

All that, in fact, and much more besides including Christmas over at Longleat (p48). Enjoy! Lisa Rockliffe, Editor Follow us on Twitter... @westwiltsmag Read online... westwiltsmag.co.uk

ONE-POT WONDERS This month FRAN STEVENS, aka The Food Wife, is making some delicious warming comfort food that’s super easy and quick to put together.

INSTANT POT LAMB & BUTTER BEAN TAPAS Serves 3-4 as a tapas This is a real gem. I made this in the Instant Pot and the results were outstanding. Literally five minutes of work, and about half an hour letting the Instant Pot do its thing and I had the most melt-in-the-mouth, rich lamb stew, beautifully sweet from the peppers and complimented so well with the plump butter beans.

You could, of course, do this in the oven, in which case you would need to add a good couple of hours on to the cooking time (instead, fry off the ingredients and put in an oven-proof, lidded dish, and transfer to the oven at 150°C/130°C fan for 2-3 hours). We’ll definitely be revisiting this invention!

Ingredients 1 tbsp olive oil 1 onion, halved and sliced 2 cloves garlic 2 roasted peppers from a jar, cut into strips 300g lamb fillet, cut into 2-inch chunks 1 heaped tsp paprika 1 tbsp tomato purée 1 tin butter beans 1 tbsp chopped parsley

the tomato purée and butter beans (including their water).

Method Set the instant pot to sauté mode and add the oil, onion, garlic and peppers and stir for 2-3 minutes.

Remove the lid, season to taste and switch back onto sauté mode for 5-10 minutes, stirring frequently, to allow the rich sauce to reduce.

Add the lamb and paprika and stir for a further minute before adding

Add the chopped parsley and stir through before serving.

Put the lid on and ensure it is switched to sealing. Place manually on high pressure for 15 minutes and allow to depress naturally. If you don’t have an instant pot, use a casserole to fry off the ingredients (bar the beans) before putting in the oven. Add the butter beans 10 minutes before the end of cooking.

Method Soften the onion in the oil for five minutes on a medium heat.

Chickpea & Preserved BLACK BEAN & Lemon Tagine SWEET POTATO STEW Serves 6

I’ve called this a tagine, but I’ve just made it in a normal pan on the hob. If you wanted to make this in a proper tagine in the oven then you can of course, it’ll just take a lot longer! At step four you would transfer it to your tagine and cook at 150°C/ 130°C fan for 1½ to 2 hours. Ingredients 2 tbsp oil 1 onion, large dice 2 heaped tsp ras al hanout 2 cloves of garlic, finely chopped 1 pepper, large dice 2 pieces of cassia bark/cinnamon sticks 2 tins of chopped tomatoes 2 tins of chickpeas 10 prunes, quartered 2-3 preserved lemons, finely chopped Salt and pepper 36 THEWESTWILTSMAGAZINE

I found a recipe for a black bean and sweet potato stew online, it sounded good, but I’ve made some tweaks to make it even more delicious. The great thing is that this recipe is perfect for batch cooking and freezing for a nutritious meal when you can’t be bothered to cook. It’s also cheap to make and contains lots of ingredients you’ve probably already got in your store cupboard.

Add the garlic and spice mix and cook out for 30 seconds, then add the cubed sweet potato and tomato purée and cook for a further 30 seconds, stirring. Add the passata and vegetable stock, along with the drained black beans. Add a generous pinch of salt and pepper. Place the lid on the casserole, and simmer for 30-60 minutes, or until the sweet potato is tender.

Check the seasoning and add more as necessary. Stir in the chopped frozen spinach, until dispersed It’s a gluten-free and vegan recipe and through the sauce. Finish by stirring is perfect served with nutty brown rice through the chopped coriander. and a salad. • thefoodwife.co.uk

If you want a super quick and easy meal then this is perfect. Ready in half an hour but bursting with flavour, this Moroccan-inspired stew can be flung together from a few store cupboard ingredients.

I always wanted to have my own business to provide people with good quality food at a very reasonable price whilst ethically supporting independent business and small suppliers. It is a Mediterranean based catering/ takeaway! I was born and raised on the Greek island of Kos and our country house is full of lemon trees, and this is how the Roasted Lemon was born! We love lemons! What is your background in cooking/hospitality? I have always loved food. As a child I used to follow my father and help him pick fruit and vegetables. I remember in winter we would go and pick olives and make our own olive oil and on our breaks my mother used to make meatballs, bread, feta and we'd sit under the olive trees eating our lunch. I loved those moments. For me cooking is flavours, flavours are memories and memories are special moments with family and friends. I have over 21 years’ experience in hospitality, working as front of house in very good restaurants in Greece before my passion for cooking drove me to study culinary arts and pastry! And here I am. What does Roasted Lemon offer? We offer catering for special events like birthdays, corporate buffets, wedding receptions and wakes. I am busy with private dining, and I work as a personal chef for some families in and around Bath. We also 42 THEWESTWILTSMAGAZINE

Roasted Lemon offer beautiful Mediterranean dishes for events with up to 60 guests

"For me cooking is flavours, flavours are memories and memories are special moments with family and friends." offer family meals and pre-ordered bespoke menus. During summer you will find our bicycle in Firs Field park in Combe Down selling Greek pies (spanakopita, feta pie, chicken pie) and traditional Greek puddings like baklava, bougatsa, galaktoboureko and more. What type of food features on your menus? My menus are based on the food of the Mediterranean and use great local ingredients wherever possible. I love shopping, I buy our meat from my S&L Banable Butchers at Moorland Road in Bath and my vegetables from Superstokes on the same road. I want to support small local shops that have great products. What size parties can you cater for? I can cater from small groups up to 60 people.

Do you also offer takeaway and deliveries? If so, tell us more! Yes! We run a daily menu with the classic dishes like pita gyros with pork or chicken and for our vegan friends with homemade revithokeftedes (falafels). DAYKIN ESTATES

Wiltshire's newest estate agent is behind a great Christmas inititative, 'Heart of Christmas' that will help bring festive cheer!

D

aykin Estates was established earlier this year with the sole purpose of providing a personalised approach to the sales and lettings industry. A family run business with over 20 years' combined experience they have the knowledge and understanding of the full sales and letting cycle to help ensure anyone who deals with them get a top notch experience. As the company looks forward to its first Christmas the team is beginning a new tradition that sees them give back to the community. Their new ‘Heart of Christmas’ inititative is about helping people who need some extra Christmas cheer this year. Marketing Manager Ria Cummins says, "If the pandemic has taught us anything it’s to be kind and think of others around us. So many have struggled over the last 18 months, some have lost loved ones, their jobs and even their homes. We know it’s not possible to help everyone but the 'Heart of Christmas' appeal helps highlight those most deserving of our help." All you have to do to get involved is nominate someone who you think is deserving of a special Chrsitmas surprise. Email your nominations to xmas@daykinestates.co.uk. Alternatively, you can also get in touch if you are a local business who'd like to play your part in planning the surprises! Ria continues, "The heartfelt emails we have received already has shown us the struggles so many have had to endure and the kindness so many

GARDEN JOBS

Here are some of the top jobs to be getting on with in the garden this month... Clear leaves from paths, lawns and ponds

1. Clear fallen leaves This isn’t just to keep the garden tidy, wet leaves can be slippery on paths, and leave your lawns soggy and brown. It’s also especially important to clear leaves from ponds to ensure water is healthy for fish and other wildlife. Leaves can be gathered up to make leafmould. 2. Raise containers up onto feet to prevent waterlogging In wet weather, raise pots up off the ground on ‘feet’ or similar to keep the bottom of the pot out of the water and prevent compost freezing. 3. Plant tulip bulbs for a spring display Tulips are amongst the most popular of bulbs, valued for their brilliant flower colours and shapes. Plant in autumn for a show of spring flowers. Choose from a large range to suit the situation. 4. Prune roses to prevent wind-rock Shrub and bush roses can grow very tall by autumn; cut back stems by between a third and half their height. This will stop the plants swaying in the wind and becoming loose in the soil. 66 THEWESTWILTSMAGAZINE

5. Plant out winter bedding Combining it with evergreens ensures good colour and interest throughout autumn and beyond, and by limiting your colour palette (purple, white and green is a good mix) it looks a bit more contemporary. 6. Cover brassicas with netting if pigeons are a problem. Pigeons peck at leaves, tearing them, often just leaving the stalks and larger leaf veins behind. To avoid accidentally trapping or injuring birds and other animals, always ensure netting is kept taut, and check regularly for holes Plant tulips in November for a great display next spring

7. Insulate tender plants from frost When it is not practical to lift or move tender plants, the best way to protect them from the winter cold and wet is to wrap them up. Get this done when the first frost warnings of the autumn come, usually around now. Bubblewrap works well. 8. Lift and store dahlias, cannas and tuberous bedding begonias Alternatively, in milder areas with good drainage, you can protect the tubers with an extra thick mulch – (there is a risk your plants will succumb to long periods of cold/wet though.) 9. Tidy up stakes and other supports as late flowering herbaceous plants die down for winter. Leave attractive seedheads in situ where possible as they look attractive covered in frost and provide overwintering spots for insects like ladybirds. 10. Feed the birds In winter provide foodstuffs with a high fat content to help keep birds warm. Feed regularly too so they won’t waste vital energy visiting your garden when there is no food.

TOP TIPS FOR MAKING A WILL

part from the usual considerations to have when making a Will, such as choosing trustworthy Executors, Trustees and guardians, ensuring you have replacement Executors and Trustees, it is important to also be aware of the less common factors. Top tips for making a Will: 1. Select who is drafting your Will carefully It’s always better that a professional drafts your Will. That way you will be advised to your individual circumstances, whilst ensuring the Will is executed (signed) in the required format. If it is not it can be deemed invalid and consequently, if there is no prior Will to turn to, your estate will fall under the intestacy rules (and may not reach your intended individuals).

GRANDMA’S FUNDRAISING PARACHUTE JUMP

A

Bromham-based Grandma has jumped 14,000 feet from a plane to raise nearly £900 to support Julia’s House children’s hospice.

The charity cares for Helen Plummer’s granddaughter Ellie Humphries, who was diagnosed with a brain tumour when she was just six months old.

After several operations, the four-yearold’s tumour is now stable and her family hopes she will start mainstream school next year. Helen said, “It’s been a really difficult time and the care Julia’s House has provided throughout has been incredible – all the nurses and carers are so lovely. And it’s not just Ellie they support, but her brother, mum and dad too.”

Helen Plummer makes her Big Jump for Julia’s House.

“I wanted to do something to give back to Julia’s House, so I decided to take part in their Big Jump event at Netheravon Airfield” said Helen. “Ellie made me do it really – I’m terrified of heights, so I wouldn’t have done it if it hadn’t been for her.” Nicky Clack, Fundraising Assistant for Julia’s House, said, “Helen was incredibly brave to conquer her fear of heights to complete the Big Jump skydive for Julia’s House. The funds she’s raised will help us to keep caring for more local families like theirs. We can’t thank her enough.” You can donate to Helen’s Big Jump Skydive challenge at www.justgiving.com/ fundraising/Helen-Plummer6 Find out more about Julia’s House, and their fundraising events, on their website. • juliashouse.org/together-we-care

3 BATH PLAYERS PICKED FOR ENGLAND Bath Rugby have three forwards selected in Englands EPS squad for the upcoming Autumn Nations Series.

T

hree Bath Rugby players will compete for England honours in the Autumn Nations Series despite a torrid start to the 2021/22 season which has seen them lose each of their first four games. Charlie Ewels, Will Stuart and Sam Underhill have all been named in Eddie Jones’ 34-player squad and will travel to Jersey on Monday 25 October for a five-day training camp before returning to England ahead of their trio of home fixtures against Tonga, Australia and South Africa. Anthony Watson was originally selected in the squad but has since been ruled out due to a ruptured ACL. Taulupe Faletau has also been selected in Wales’ squad. Bath captain Ewels has 23 caps to his name while Stuart and Underhill have represented their country 12 and 24 times respectively. “This is a young but very good, talented squad who have all earned their places. It is one of the most competitive squads I have ever picked,” said Jones. “There are a number of disappointed players who haven’t been selected, but they know what they need to do and no door is closed to any player. “We’re looking forward to three tough Test matches. Tonga always play a strong, physical game and Australia and South Africa have had extended periods together and will be a good challenge for us.

ROLY POLY, GAMMON & SPINACH

I

may have mentioned this before, I’m not sure, although I have revealed most things about myself over the past 12 years so probably, but with my memory not being what it used to it’s difficult to be 100% positive! I like a bit of cooking. I used to be a chef and still like to get involved on a regular basis with any kind of cooking that takes my fancy and obviously with successive lockdowns that interest went into overdrive.

of well cooked chicken nuggets, chips and baked beans mind you. The nadir of my experience with my children came when it was the older one’s 8th birthday party. She, knowing I bake every day near enough, said something along the lines of, “Daddy I think I’d rather have a Jurassic World dinosaur cake from the shop rather than you make me one”. Bless her she didn’t know how wounded I was. She didn’t see me slink upstairs and have a quiet weep in a darkened room!!!

In the last year or so I have tackled sourdough (didn’t everybody?!), bread and cakes of all descriptions and from all corners, authentic

It’s about this time of year I call on some of my friends to let me know what foodie type treats they would like for Christmas. If I say so

“It’s about this time of year I call on some of my f riends to let me know what foodie type treats they would like for Christmas. If I say so myself I make a mean Christmas pudding” curries from all over the world, traditional British classics got a look in as well, all kinds of tastes and flavours have been tried in our household. It was a lovely experience actually, helping me through some tough times during the last 18 months or so. My wife has enjoyed it too, both of us sometimes a little too much, especially where cake is involved. When she cooks and I become the sous chef and do her prep for her apparently my mis-en-place is a thing of beauty!! I think the kids are still more enamoured with a plate 82 THEWESTWILTSMAGAZINE

myself I make a mean Christmas pudding and even did a vegan one this year which I think went pretty well. It’s quite a pressure though as obviously you won’t know whether it’s actually any good or not until they serve it on ‘The Day’, by which time it’s all a little too late if it’s not up to scratch! I thought I’d get ahead of the game and buy all the ingredients before I knew how much I would need. All well and good until I realised my 2 pint pudding basins are actually 1 pint so ended up getting twice as much of everything. Cue an interesting

few days seeking out recipes that could help rid me of five surplus boxes of suet!!! I decided to make some jam roly-polys. I’d never actually made a jam roly-poly before but how hard could it be right, suet pastry, spread with jam, roll it up and bake it. Well let’s just say they were more poly than roly, they were quite flat once baked and some of the jam had leaked out. Again you don’t know how much until you serve it and apparently quite a bit had escaped… it did at least use up the suet so all’s well that ends well. Cooking for and feeding people is, I think, a really basic, integral part of being a human being, I love doing it and I can only hope the results are enjoyed as much when they are eaten as when they are being created.
