SUPER CHRISTMASSY
N
ot everyone wants to be that person who transforms the outside of their home into Blackpool Illuminations for two months every year. Especially in such economic times, it is hardly the most sensible of ideas. Everyone does, however, need a boost, and each year Christmas provides the perfect excuse to be full of joy. Regardless of budget, there are plenty of ways to bring Christmas into your homes this year. FESTIVE FOLIAGE AND HOMEMADE DECORATIONS Bearing in mind what we have just mentioned about the economic state of the UK, it is useful to find ways to decorate your home without breaking that budget. Festive foliage is a great starting point for this. Pine cones, ivy and bits of fern can all easily be gathered at this time of year and they really create a great Christmas environment. You can also be a bit creative yourself and stray away from these ageold traditions with other plants and greenery. Christmas is all about getting the family together. One great way of making this happen early in the festive season is to gather together to make some homemade decorations. You can use card, glue, glitter, feathers, flowers, anything really. This will truly open the door of your home to the Christmas spirit. MAKE THE LIVING ROOM COSY Nothing beats sitting around a warm fire with the family at Christmas, watching the same films you watch every year. These movies have now simply become ingrained within our Christmas experience. What would Christmas be without Home Alone ? To encourage this family time, it is imperative that you are able to create a great environment in your lounge.

If you have a fireplace, then use some of the above tips to make it nice and Christmassy. Put down a heavy rug and have blankets and pillows at the ready. Candles and mood lighting can also add to the ambience, with one option being fairy lights. Get lots of good snacks in and settle down for many evenings of relaxation. MAKE EATING AN EVENT Another great way to get the family together is at mealtimes. Many of us look forward to our Christmas dinner more than anything else, but meals throughout the whole holiday can be an event, too. In the same way that you made your living room nice and Christmassy, you can also brighten your dining room up with some choice lighting and tasteful decorations. Having a centrepiece is always a great place to start, so why not bring the candelabras out early. Crackers may be going a step too far, but taking some time to make mealtimes an event will truly help to create a great atmosphere. No-one will be expecting turkey every night, but designing a fun weekly menu may help to get the kids involved too. DECORATE THE DOOR Even if you don’t want to push the national grid to its limits, having a nice wreath and a few other decorations on your front and back doors can provide a nice welcome into the festive environment that awaits you. By following some of these simple steps, you can have your house primed and ready for the Christmas period. The environment will put everyone in a positive mood too, and you could even design some initiatives to keep family feuding at bay.

WOMEN IN BUSINESS Interiors at Nine to Eleven in Malton day the diary was already booked for the forthcoming weeks! The business had hit the ground running and the businesses success began. Sarah continued to develop the business over the next few years, expanding the workforce and the services that the company could offer, positioning the business into the national market. Sarah forged relationships with clients that are regular clients still today and secured high profile contracts all over the country, including project managing the refurbishment of a Castle! In 2011, Sarah expanded the business further and launched Interiors at Nine to Eleven, situated a few doors away from the original Stitches showroom and created the luxury Interior Design showroom and lifestyle store that we know today. The extra space showcases a stunning retail showroom giving a visual platform for customers, whilst offering lifestyle gifts and accessories.

arah Clark, Company Director and Interior Designer with over 25 years’ experience of producing exciting and bespoke designs and managing large scale projects, as well as running the showroom and design studio in the awardwinning town of Malton. Sarah is passionate about interiors and loves experimenting with design. She encourages clients to be bold, brave and live life in colour! ocus Fireplaces know that gathering around a hearth for warmth and a sense of belonging is perhaps hard wired into our genes, a feeling inherited from our days as cavepeople. We may not need to ward off sabre-toothed tigers any more, but we all still feel safe and cosy around a fireplace. Little wonder that more often than not, even in the modern world, the focal point of any living room is a fireplace of some kind. FIVE OF OUR FAVOURITE FESTIVE FILM SCENES
S
o dinner has been devoured, and everyone is settled for the evening. All you need now is something seasonal to watch. In the hope of helping, we’ve handpicked a quintet of quintessential Christmas movie moments, which are guaranteed to deliver the necessary goods. MIRACLE ON 34TH STREET (1947) Few flicks are quite so treasured by audiences. A tale of an old man put on trial for claiming to be Santa Claus, and the little girl who believed in this potential basket-case. To avoid spoiling the plot, let’s just say even the most scientific and cynical viewers are bound to have a few doubts in the moments before the closing credits of this classic begin to roll. Like a short, sharp dose of youth to the bloodstream. IT’S A WONDERFUL LIFE (1946) With financial worries hanging heavily on his shoulders, timeless family-man George (James Stewart) witnesses a modern miracle as his friends and acquaintances get together to help save his home, and his holidays. It’s probably the most obvious choice we could possibly have made, but when celluloid is this good, who’s going to argue?

GREMLINS (1984) Have you ever seen such a seasonal scene? Billy Peltzer (Zach Galligan) sits in his clapped-out VW Beetle, or Bug as they call them stateside, which won’t start, the snow is falling heavily outside, Christmas music blasts out on the radio and we’ve just been treated to a series of establishing shots showing small town America in full-on holiday mode. Enough to make grown men feel fuzzy inside. A CHRISTMAS STORY (1983) We watch the build up to December 25th from the eyes of one very excited boy, but whilst the day begins well when it finally arrives, the whole family shed tears before supper, until one final moment of genuine moral propaganda, in which it becomes clear that what you eat, where you are and what presents you get doesn’t matter; it’s who you’re with that really counts. HOME ALONE (1991) As if being left alone over Christmas wasn’t bad enough, Kevin McCallister (Macaulay Culkin) is also terrified of a crazy old man who wears a big coat and shovels snow suspiciously. And who wouldn’t be. That is until the guy turns out to be a genuinely lovely pensioner who regrets mistakes he made with his own family. Cue tear-jerking moment in a church where the two finally talk and a choir sings Silent Night.

BUDDING PHOTOGRAPHER AND FITNESS FANATIC RAISES MONEY FOR MARIE CURIE
K
eith Laverick, a Chartered Building Surveyor from York, is carving out a second career in professional photography in aid of charity.
Keith, who’s had a lifelong passion for photography, joined Marie Curie as a registered volunteer three years ago after taking part in the charity’s Swimathon – the world’s biggest annual fundraising swim. Keith explained: “I’ve known about the charity for as long as I can remember. I’d heard about the pioneering Polish scientist who founded the organisation and latterly was aware of explorer, Ranulph Fiennes’, support during his epic adventures and record-breaking explorations. When I was asked to become the charity’s volunteer photographer I was delighted – it gives me great pleasure to help others less fortunate than myself and it brings home to me what is important in life - giving, caring and sharing.” Over the last three years, Keith has attended various events to capture the essence of the charity, showcasing staff and volunteer fundraising follies and helping to raise awareness of the work of the nurses across the region. The Breighton wing walk, a Last Night of the Proms event and the Great Daffodil Appeal launched by Yorkshire’s own Kay Mellor, are just a few of the momentous occasions that he’s caught on camera. Keith commented: “The highlight of my work so far with Marie Curie has been promoting the Swan Song Project. It was a great privilege to be invited to a session at the Bradford Hospice with musician and songwriter, Ben Slack, and Alan Livett, who is living with motor neurone disease. Ben was helping Alan to write and record a piece of music to his own words that can be shared with family and friends. Witnessing the production of what is effectively a soundtrack of Alan’s life was incredibly powerful and poignant – a humbling but uplifting experience. Alan has such an amazing sense of humour in the face of adversity that he had us all in hysterics – he’s a true inspiration.” 18 | PEOPLE & PLACES MAGAZINE
As well as juggling his full-time job, burgeoning photography business and volunteering role for Marie Curie, Keith also does photoshoots and family portraits in exchange for charitable donations – Photography for Life for charities including Alan Livett & Ben Slack Marie Curie, Cancer Research UK and MacMillan Cancer Support. So far, he has raised over £4,500.00. He has three weddings already booked for next year. Keith concluded: “Volunteering for Marie Curie has inspired me to conquer Monte Cervino – the 4,478m mountain bordering Italy and Switzerland. I’ve always been passionate about climbing but I now want to seize the moment and savour every minute of being healthy. What a gift! SPEND CHRISTMAS DAY OUT OF THE HOUSE Especially with teenagers, spending the whole day cooped-up at home can be too much. Why not find a great pub or restaurant where you can spend at least part of the day, in order to get some muchneeded space? You could also plan to meet friends and family there.
As the kids begin to get a little bit older, however, the magic can slowly start to disappear. This can be hugely disappointing for both children and parents alike. There are ways to keep the magic alive, however.
SKI TRIP A ski trip is the perfect treat at Christmas, if you can find some good snow. Although it can be expensive, if it comes at the cost of other presents, it will certainly be affordable. The benefit of a ski trip over a summer sun holiday is that there is always something for everyone to be doing. It can be energetic, for those testosteroneriddled teenagers, or relaxed and laid-back for their parents. There is nothing better than having a nice cold beer and some great food halfway up a piste.
ACCEPT CHRISTMAS HAS CHANGED The first and most important step is to simply accept that Christmas has changed, and that if it is still going to be magical, it needs to be different. All families will go through that one transition year, where Christmas just isn’t the same anymore, but after that, it is time for a change. ALTERNATIVE CHRISTMAS OPTIONS Although there are some wonderful aspects of a traditional Christmas, there is nothing wrong with changing it a little, from time to time. If the magic of Christmas has started to fade, it is worth looking at some alternative ideas. WINTER SUN One option could be to replace gift-giving with a family holiday. The costs will be similar and, when children get to a certain age, they will be more excited about a two-week break in the sun, than new clothes and computer games. This will also give parents a chance to get away for a much-needed holiday. If you still want to be with the rest of your family, you could plan a large group vacation. This will also reduce the costs, with shared accommodation and transport etc. being much cheaper.
KEEP EVERYBODY HAPPY Fundamentally, all of these above options revolve around the same premise, which is to keep everybody happy. This can be increasingly complicated as children get older. It is also difficult if there is a big age-gap between the children. The best way to ensure that everyone is happy is to discuss it with the family and then seek a compromise. These things rarely run 100% smoothly, but if you work together, you are sure to get the best results. Most importantly, though, don’t forget your own enjoyment in a bid to please the children.

hristmas can be a very stressful time, even for the most laid back of us. We put ourselves under tremendous pressure to have a media-inspired ‘perfect’ Christmas; to buy the ‘perfect’ presents, to decorate the tree so ‘perfectly’ that it would be good enough to grace the cover of a glossy magazine, to cook the ‘perfect’ meal – to have the most perfect ‘day’ where everyone is happy, relaxed and smiling. Oh, the pressure!! The reality for many of us adults is that Christmas ends up being very hard work! Unless you are somewhere between the ages of 3 and 10, Christmas can be a challenge. Here are some top tips to help keep the stress to a minimum. Accept that ‘Good Enough’ is okay. Divide tasks into priority lists and focus on those things that are the most important. Psychologist Kim Moran suggests dividing your To Do list into Must Do, Could Do and Should Do. Focus on the Must Do list and let everything on the other lists go. No-one will know all the little extra touches you didn’t get around to doing.
Shake things up a little – just because you have always done things a certain way and it’s a tradition, don’t be afraid to do things differently. We always used to have a nice breakfast after the present giving, now I meet up with friends and we take our dogs for a lovely walk instead. It starts the day with a completely feel. Obviously, this wouldn’t work for everyone, but you get the idea. Think of others – Christmas can be a very sad and lonely time for a lot of people and there are many people that simply cannot cope with or afford Christmas. Why not buy a couple of extra bits in the shopping and donate them to your local food bank? You could really make a difference to someone in need. And spare a thought for people who are on their own. Perhaps check in on a neighbour and make sure they are okay – a chat over a mince pie could really make their day. In the grand scheme of things, does it matter if our plates don’t match or the potatoes didn’t crisp up? No. What is more important is that we are there, present and enjoying the time we have with our friends and family.
Delegate – ask people to help. You don’t have to do everything yourself and by getting the rest of the family involved, you will be strengthening that team spirit.

Compromise – it’s your Christmas too and if the thought of sitting up until midnight the night before, peel a tonne of sprouts leaves you feel low, don’t do it. Buy pre-prepared and take some of the pressure off. The Christmas Day meal is my favourite meal of the year to cook and I spend ages planning for it, but I still buy the red cabbage from M&S! INGREDIENTS 1lb cold cooked turkey, cut into small cubes 250g mayonnaise 1 tsp paprika 150g cranberries, dried or fresh 3 spring onions, chopped 1/2 cucumber, peeled and cut into small cubes salt and black pepper to taste
METHOD 1. Combine all the ingredients in a large bowl and mix well. 2. Add seasoning to taste 3. Place in the fridge and chill for an hour before serving 4. Serve on a bed of little gem lettuce leaves

estled in the centre of town in Easingwold on marketplace you will find The Commercial which is run by Owen Bower. On entering you immediately feel the warm welcoming atmosphere accompanied by the delicious aroma of fresh food being prepared in the kitchen for hungry patrons. As I sat sipping my pint of cask bitter, I found myself reminiscing and thinking how rare it is to find a traditional pub steeped in history that has managed to not lose any of its charm. Owen emerged from the kitchen and walked over to my table and sat down. Owen now 20 told me he had been involved in the pub trade since the age of 13. He became the youngest UK tenant at the age of 18 when he passed up the chance to go to university and bought the tenancy. I asked Owen what the first they did when they took over the tenancy and he answered “We took a long hard look at everything from the bar to the food being served and put in place a complete product change along with a new menu which has been very successful. We now stock over 40 gins and some good quality wines. All our food is cooked to order and we only use fresh locally sourced ingredients wherever possible”. I asked Owen what made the Commercial stand out from the other pubs and restaurants in the town, he looked at me and with a smile said “ Well that’s easy to answer, I believe in offering a premium experience that doesn’t break the bank, we have customers that travel regularly from York and other towns time and time again. We have also noticed that more and more of our returning customers are using the Commercial for special events such as weddings, birthdays and christenings to name but a few”. He went on to say “This is a family friendly venue and we have people popping in just for a sit down and a coffee. We are currently working on the beer garden for next year so that families are able to relax and of course keep the kids entertained, I will also be fitting it with a big screen tv”. HOT MULLED WINE INGREDIENTS 2 oranges 2 bottles red wine 1 bottle white wine 5cm piece fresh root ginger ½ teaspoon ground cloves 3 cinnamon sticks 5 tablespoons demerara sugar
METHOD 1. Use a sharp knife or vegetable peeler to remove the zest from the oranges in strips leaving the pith behind. Then, juice the oranges and place in a heavy saucepan. 2. Pour the red and white wine into the saucepan with the orange juice. Place the orange zest, ginger, cinnamon sticks, cloves and sugar into the saucepan with the wine mixture and stir until the sugar is dissolved. 3. Cover and heat over a medium/high heat until heated through, be careful not to bring to the boil, reduce the heat to medium/low and heat for an hour to bring all the flavours together. Adjust the sweetness to taste by adding more sugar if required. Strain the mixture in a sieve and serve.
WHISKY SOUR INGREDIENTS Crushed ice 50ml bourbon 1 tbsp fresh lemon juice 6tbsp fresh orange juice ½ tbsp sugar syrup 2 slices of orange

METHOD 1. Using a small paintbrush (or your finger) brush some honey around the rim of two tumblers. 2. Fill each glass with crushed ice and orange slices Put the bourbon into a cocktail shaker with the lemon juice, orange juice and sugar syrup. Shake and strain into each glass , and serve with a lime slice on the side.

HOW TO GET THAT
CHRISTMAS DINNER JUST RIGHT
R
arely is more pressure applied to a cooking performance than at Christmas - unless you happen to be a contestant on Masterchef, that is. Fundamentally, it is not the most complex of culinary tasks, but with such high expectations, it is worth taking measures to ensure you get it just right. GET THE BEST EQUIPMENT Like with most things in life, the quality of the tools you use will impact on the quality of the finished result. Although this may involve a relatively large investment, it will make cooking throughout the year a more pleasurable experience, too. A highquality and decent-sized roasting tin is a must and, on top of this, it is worth having a quality peeler, carving knife, gravy separators and turkey basters. Not only will quality equipment help to ensure that the quality of the food is of a high standard, but it will also remove some of the stress. When you have a cupboard full of parsnips and potatoes, for example, the last thing you want is a poor quality peeler. It can also be crucial to ensure that you have enough tin foil and baking paper far in advance, as these often run out as Christmas approaches. PREPARE EARLY Rather than frantically rushing around the supermarket at the last minute, it is worth writing your Christmas menu, along with a list of ingredients, long in advance. This will ensure that you don’t forget, or miss out, any vital ingredients. You can also choose a starter, or desserts, that you can prepare in advance. This will reduce stress on the day. It also means that, if you are creating something slightly experimental for the first time, you can make mistakes and it’s not the end of the world.
It is also worth giving your kitchen a thorough clean before the culinary madness begins. Everyone works better in a clean and organised space. If you start with a clean slate, there is less chance of everything becoming completely disorganised before the end of the festive period. ORDER YOUR TURKEY EARLY Turkey is eaten more because of tradition, than as a genuine preference. It is not the best meat, and thus it is even more important to ensure that you get a quality bird. As anyone who has left it too late before knows, there isn’t an endless supply of quality turkeys. You don’t want to be frantically running around at the last minute, only to get your hands on a tiny bird. There are many websites where you can order a quality turkey well in advance. GET SOME SUPPORT Although your partner or children may not be the most gifted in the kitchen, it is often the simple things that become time consuming. Don’t feel like Christmas dinner has to be a solo mission. No-one will begrudge you requesting a little support. This can make you feel more at ease too. Turn some music on, have a little glass of wine - not too many - and allow the dinner to take care of itself. After all, by this stage, with all of the preparation you have put in, you should be all set to produce a masterpiece. One last bit of advice is to remember that no-one ever complains about having too much food at Christmas. Make a feast, and if it’s not all eaten up on the day, it will be sure to disappear rapidly over the next couple of days. Remember - if it’s all too much, you could just opt for a pizza.

ROAST BEEF FILLET WITH RICH WINE SAUCE
CASHEW NUT ROAST
Serves 6 The sauce makes all the difference to this roast beef dish - ideal for a New Year dinner party or family meal, as the recipe doubles well for a larger number of people. Delicious served with dauphinoise potatoes and green vegetables.
INGREDIENTS 350g shallots, halved lengthwise and peeled 1 1/2 tbsps olive oil Salt and freshly ground black pepper to taste 750ml beef stock 175ml port wine 1 1/2 tsps tomato puree 1 (1kg) whole beef fillet, trimmed 1 tsp dried thyme 3 rashers streaky bacon, diced 40g butter, divided 1 tbsp plain flour 4 sprigs watercress, for garnish
METHOD 1. Preheat oven to 190â °C. 2. In a 23cm pie dish, toss shallots with olive oil to coat. Season with salt and pepper. Roast until shallots are deep brown and very tender, stirring occasionally, about 30 minutes. 3. In a large saucepan, combine beef stock and port. Bring to the boil. Cook for about half an hour over a high heat until reduced by half. Whisk in tomato puree. Set aside. 4. Sprinkle beef with thyme, salt and pepper. In a large roasting tin, saute bacon over medium heat on the hob until golden. Transfer bacon to kitchen roll. Add beef to tin; brown on all sides over a medium-high heat, about 7 minutes. 5. Put the tin in the oven. Roast the beef for about 25 minutes for medium rare, five minutes longer for well-done. Transfer beef to a plate and cover loosely with foil. 6. Place tin over high heat on hob. Add stock mixture, and bring to the boil; stir to scrape up any browned bits. Transfer stock mixture to a medium saucepan, and bring to simmer. Mix 20g butter and flour in small bowl to form smooth paste; whisk into stock mixture, and simmer until sauce thickens. Whisk in remaining butter. Stir in roasted shallots and reserved bacon. 7. Season with salt and pepper. 8. Cut beef into 1cm thick slices and place on a warm serving dish. Spoon some sauce over, and serve with vegetables of your choice.

Serves 4 Try this delicious vegetarian main course for the festive season as a variation on a traditional nut roast. This calls for wholemeal breadcrumbs, but white works just as well.
INGREDIENTS 50g butter 1 onion, finely chopped 1 tsp dried thyme 1 tsp wholemeal flour 275ml water 300g cashew nuts, finely chopped 50g wholemeal breadcrumbs 500g puff pastry 100g carrots, grated 100g courgettes, grated
METHOD 1. Preheat the oven to 200C/Gas Mark 6 2. In a large non stick pan, melt the butter over a medium heat. 3. Add the onion and fry for around 5 minutes, until soft but not browned. 4. Add the thyme, flour and water. Stir until thickened, then remove from the heat. 5. Add the cashews, breadcrumbs and season to taste with salt and pepper, then allow to cool. 6. Roll out the pastry to a rectangle approximately 40 x 25 cm. 7. Place half the nut mixture in the centre of the rectangle, then place the carrots and courgettes on top. Top with the remaining nut mixture. 8. Brush the edges of the pastry with water, then fold over the filling, sealing at the edges. 9. Place on a baking tray and transfer to the oven. Cook for 45 minutes and serve immediately with seasonal vegetables.

COCKTAILS WITH A COFFEE BUZZ

spresso shots get you through a tough day at work, and now they are becoming a popular way to start off an evening out or finish a meal with a buzz. Like a Red Bull and vodka, an espresso martini combines a shot of alcohol and caffeine. It would be stupid if you drunk them all night if you value your sleep, but they certainly are a great to start off the night on a high note. An espresso martini, sometimes called an espressotini, comes in various mixes. The only consistent ingredients are espresso and vodka. Despite the association with martinis, this cocktail never uses gin, which is too bitter to mix with already bitter espresso. Poor versions of the espresso martini use regular filtered coffee and even instant coffee, but the real thing should always use genuine cooled espresso shots. If you’re making one at home, make a double espresso and allow it to cool down before chilling and adding it to your cocktail shaker. Using ice to cool down your espresso will just give you watered down espresso, although you can put an ice cube in the glass when serving. The vodka in an espresso martini, always one single shot, is almost always of the flavoured variety. The most popular option is using vanilla vodka and adding a coffee liqueur such as Kahlua. To the base of espresso and vodka, some people like to add a splash of Grand Marnier, while other recipes prefer Tia Maria, Amaretto or Crème de Cacao. Even chocolate liqueurs can be added if you prefer the taste of a mochaccino to a regular espresso. Pick your favourite liqueur and if you think it will go with your espresso martini then give it a try. Whatever you choose, make sure you only use a splash because the main purpose of this additional liqueur is to add a just hint of flavour. You don’t want to overpower the primary flavours. If you like your coffee a little creamier like a cappuccino, you have the option of creating an Italian-style Irish coffee using the same espresso and vodka base. Shake two shots of espresso with one shot of vodka and two teaspoons of caster sugar. Carefully pour over a layer of Amarula Cream. Whatever recipe you choose, like James Bond’s martini, it should always be shaken, not stirred. Though be sure to leave out the olive. The one thing that almost all espresso martini recipes agree on is the garnish. Three espresso beans will top your drink off properly. The rules for garnishes say that odd amounts are lucky so go with one, three or five beans. Serve simply in a martini glass, which you can rim with a mixture of sugar and cocoa powder.
