t Leonard’s Hospice in York is celebrating a very special year: not only is it their 35th anniversary year, it is also International Year of the Nurse and Midwife.
The World Health Assembly designated 2020 the first ever International Year of the Nurse and Midwife to mark 200 years since the birth of Florence Nightingale. Nurses play a vital role in providing health services, and are crucial to providing hospice care. 2020 also marks 35 years since the first In-patient was admitted to St Leonard’s Hospice, on 11th February 1985. As well as celebrating the milestone, the Hospice is looking at ways to ensure it can continue caring for people for the next 35 years. As such, the Hospice is appealing for people to sponsor a nurse by signing up for regular giving online. Nursing is at the heart of the care provided by St Leonard’s Hospice. Whether it’s using their expert knowledge of pain
management and symptom control, their experience in supporting family members in distress or simply by providing a hand to hold in the middle of the night, the Hospice nurses are there 24 hours a day, every day of the year. They provide vital care which is free of charge to the patient both at the Hospice and in patients’ homes. Val Noble is a Hospice@Home Nurse who has worked at the Hospice since the very beginning 35 years ago. She says: “There has been lots of change over the years as the Hospice reach has grown as we’ve got busier and more services, such as the Hospice@ Home team I work in, have been developed. It’s a privilege providing care in people’s homes. We care for the whole person, not just their physical symptoms. Hospice nurses provide support as soon as a life-limiting illness is diagnosed, supporting patients and their families at every stage. By setting up a regular donation, you can make a real difference to local people and ensure the Hospice can care for people for years to come.” Although St Leonard’s does get some public funding the majority of the running costs have to be raised from donations and fundraising by the local community. Regular Giving is a quick and easy way to support the Hospice, and allows the Hospice to not only plan but also grow its services. Even if we haven’t gone to great lengths to fill them with trinkets, awards, photographs and art works that offer visitors a preview of ourselves, a shrewd eye can learn plenty about an individual simply by scanning how their home has been designed.

HOW TO INTRODUCE INDUSTRIAL STYLE DECOR TO YOUR HOME

ndustrial decor style is all about being mature and rustic. The industrial style emphasizes the liberal use of distressed wooden elements and exposed steel that is more often than not complemented by exposed brickwork walls. However, depending upon your liking and personality, it can range from rugged vintage to modern rustic with cleaner lines with a few statement pieces. THE BOLD CHOICE FOR FURNITURE For the genuine industrial decor look, at least one wooden table is a must have whether it’s a dinning table or a coffee table. Industrial style furniture emphasizes heavily on exposed steel elements, sleek chrome or copper and raw or unfinished wood. A table can have steel legs with a distressed wooden top. IY enthusiasts are never quite satisfied with their homes, always looking for the next opportunity to modify or improve. But for those who have never made a foray into the DIY realm, it can be difficult to know which projects are most suitable for beginners, and what projects will render the most notable improvements, especially if you are preparing a house for sale. A LICK OF PAINT This aspect of DIY is so obvious that many people don’t even consider it DIY, but the difference between a professional paint job and a thoughtless paint job can be huge. MOVING HOME WITH YOUR CAT During all the last minute arrangements you have to make when moving house it is just possible that your cat’s welfare might not be top of your priority list.

etween signing contracts, organising removal firms and trying to keep everyday life ticking over in the meantime, it’s difficult to find time for the quieter family members.
But a little thought put in advance can save you - and your pet - lots of trauma when it comes to upping sticks and flitting to a new home.
Don’t feed your cat just before you leave the house. Take the cat out of his temporary confinement to let the movers finish the job. Then put the cat carrier securely in your car ready for the journey. Don’t let him travel in the removal van. Although there have been many stories of stowaways, it’s not a great idea for either the cat or the furniture. If you have moved locally it’s possible that your cat will return to his old hunting grounds and follow the trails back to the original house. If you think this is likely, tell the new occupants and ask them to call you if he turns up. Tell them not to feed him - no matter how fed up he looks! Once you have your cat ensconced in your new home - don’t let him or her outside for at a fortnight. Help him to feel secure by rubbing a soft cloth around his face, then spreading the scent around the house by rubbing the cloth on doorways and furniture. When you do let him venture out, open the door and let him choose to explore - don’t carry him. Don’t feed him before he goes: if he’s hungry he won’t stray far. Leave the door open so he can easily get back in when he’s ready. Chase any strange cats away - he’ll need lots of help to establish his territory in the new area. A water spray is the method recommended by animal sanctuaries. Moving house can be a stressful time for everybody. Follow these guidelines and you will help make sure it’s as easy as it can be for your feline friend.

A BRIEF HISTORY OF BATHROOMS
I
f you grew up in the immediate post-World War II years, then chances are you remember the outside lav. A cold and somewhat uninviting place, whether you had one at home, or simply knew someone that still hadn’t moved their toilet inside, considering how long it took for Britain to master the art of running water in the home it’s remarkable to think that only 70 years ago many of us were still dashing out the backdoor whenever we needed to relieve ourselves. The story of bathrooms is far more interesting than many would give credit for. Few would guess it was the privy council of Elizabeth I’s reign that invented the flush toilet, for example. On record, there’s no evidence the monarch used it herself, and it’s hard to blame her for being so neglectful, given that without the luxury of a running water supply these technological innovations defined the term ‘well before their time’. It was only in the mid-19th Century, with a cholera epidemic in London, that one Dr. John Snow began taking the first steps towards revolutionising how we washed, and where. Mapping the locations at which victims succumbed to the disease, he noticed that many were concentrated close to a public water pump at 37 Broad Street. Suggesting that the handle to power the sanitary kit should be removed, once this happened the epidemic stopped immediately. Somewhat inadvertently, he had managed to prove a correlation between human waste and disease, showing people that sanitation,

in particular excrement waste disposal, needed to be located far from drinking water sources. Thus the Metropolitan Water Act was introduced, in the hope of making ‘provision for securing the supply to the metropolis of pure and wholesome water’. The public pumps were replaced with pipes delivering water directly to the home. It didn’t take long for another revelation to materialise. Architects and homeowners of the day were somewhat confused as to how this new trend should be standardised. In the first days, weeks and months, pipes were being fitting into homes rather haphazardly, with fresh water sent into every bedroom to supply sinks that were now replacing old washstands. Flush toilets themselves were stuck anywhere large enough to house them, usually a closet, hence the ‘water closet’. Soon this practice proved to be far too expensive for most, and so rather than piping the supply to multiple parts of the house, experts realised it was far simpler, and cheaper, to concentrate on one, specifically designed room. Thus the bathroom was born, a corner of the home that would be spacious enough to boast both toilet and washing facilities like baths and sinks. At first these were lavish and highly decorated, largely due to the fact that early adopters were usually rich, but soon, with the advent of germ theory, they took on a more hospital-like look, with the focus being making them easy to clean and sanitise via tiles or porcelain; not a million miles from what we still have in our homes today.

So here we are, one of the last days in the south west of Bali. Cangue was our first taste of Bali and how it overwhelmed our senses. The genuine kindness of the people shone through and when you look past the poverty-stricken streets with the questionable eateries, it really was special.
N
ow it’s time for us to pull ourselves more than 10 meters away from a toilet and venture up north. Whilst the island is quite small, it still takes just under four hours to reach the other side by car. Bali seems to lack public transport and it certainly lacks any roads resembling the M1, but more roads likened to the green lanes of Yorkshire’s countryside. Now throw a bit of tarmac, a few mountains, the odd pothole and few macaque monkeys into the mix and you pretty much have the infrastructure of Bali’s transport system. We decided to go a bit off piste for the second part of our holiday and ventured into the world of Air B&B. Unlike the one bed grotty dives you may find elsewhere in the world, Bali really pulled out all the stops when it came to luxury villas. We decided to hire a 4-bed villa for the
week, part way up a mountain in its own grounds. Best of all, it was all ours. To add to this, unlike the culture you may find over here, they supplied us with three very helpful staff members. These being a chef, cooking us traditional, fresh Balinese meals at request, as well as doing all the cleaning. A gardener who didn’t speak a word of English but whose smile was infectious and then last but not least a security guard. The security guard was more to scare away the local monkeys and stray dogs rather than the local people, most of whom decided to wander up and keep the guard company. The host of the villa kindly organised us a personal driver for the week as in the tourist shy north, there don’t appear to be taxis or the better-known Go-Jek service which is Bali’s answer to Uber. Putu, his name, collected us from the hotel in the south and drove us the 3.5 hours to our villa in the north. The journey went from an over filled metropolis of shacks and buildings to a more desolate landscape of rice paddies and small communities, the most picturesque landscape I have ever seen might I add. Once you get out of the overpopulated south, the true, untouched natural beauty takes your breath away. Travelling up the winding roads we made a few stops to take in the view on numerous occasions. Whether it be a temple, sketchy platform over a mountain or just a local shop, your cultural senses where truly overwhelmed. Not knowing what to expect when we reached the north, we made a stop on top of a cold and wet mountain. It was here, my good friend Chris fell in love. But not as you may think. Chris found the popular Indonesian brand of tortilla crisps, happy-tos. They were a welcome taste of the food back home, so he decided to buy a week’s supply,

P&P Lifestyle just to keep him going when the food became a little scarce. Arriving at the villa, a stunning property nestled in the hills of the rainforest, it felt like true paradise. A little hard to believe this was ours exclusively for the week, we soon settled into the lazy, relaxed holiday we were hoping for. The chef, Ana, greeted us detailing when she will be working and what she will be cooking for us. It was a very welcome sight to see a bag of fresh produce. No expense was spared on making us feel welcome and comfortable. The most striking difference in comparison to the south was the sheer humidity with us being in touching distance of the nearest rainforest scorpion... yes, there are many. A refreshing towel and mix of fruit drinks already prepared was most enjoyable and set us off on the right foot for what was set to be an interesting week ahead. Putu, our trusty driver, arranged three mopeds for us to use at our convenience. Each arriving soon after we did, it wasn’t long before we were keen to get out and about exploring the area. Jamie took the more reserved approach and decided to acclimatise himself around the grounds first, a sensible idea. Chris, however, took the more brash approach and decided to follow me to the supermarket to stock up on supplies. But he soon became well acquainted with the tarmac and the wall of a pharmacy. Standing himself up and brushing off the road, it soon became apparent Chris had decided to take part of Bali home with him ...... ingrained in his leg. Now thanks to my profession, cleaning him up was at first thought, a walk in the park. Now imagine you have no supplies, in a non-English speaking area, not so easy after all. A quick stop at the pharmacy proved unhelpful leaving us with nothing but a confused shop worker more worried about her wall then my bleeding friend. She did kindly offer a shot of Vodka, to our amusement. We hobbled back to the villa where the full extent of the injures could be seen. A laceration to his leg which would heal nicely however the claim of Balinese territory in his knee required something a little stronger. A trip to the local Dr’s proved equally as unhelpful as the pharmacy. Feeling more like animals in a cage than a patient, we were stared at for some time in bemusement from the locals. The Dr, who spoke no English, was wearing shorts, flip flops and a shirt containing the remanence of his last 20 patients. Either that or he spilt his food. A peace offering of antibiotics helped seal the deal and we trotted off back to the villa for Chris to lick his wounds and feel sorry for himself. Now as it turns out, a prescription isn’t needed in the North of Bali meaning we could have had rich pickings of the local pharmacy. If only we’d bothered to have learnt the language. With this development, the scooters made a hasty return to their owner leaving us with our trusted driver Putu. Now thankfully the north of Bali is not a tourist hot spot. A scattering of rich Danish homeowners accounted for a small portion of the population here meaning we were mostly experiencing the true Bali. The villa had plenty of room, especially as it was meant for three couples and two children. The villa, owned by a man from Jakarta, was tastefully furnished with traditional Balinese items, giving it a very local feel. It seems however that when building Villa Lakshmi, they forgot some of the roof. The living area was designed as an “open living space” which in Bali, next to a rainforest with every creature
imaginable is not the most western idea in the book. This meant that the home comforts were limited, making the living space unlivable. No air conditioning made it unbearably uncomfortable, together with the local wildlife finding refuge inside made it a little less of a luxury stay as we had hoped. This meant that we confined ourselves to the bedrooms, which thankfully, had air conditioning. That was all but one, however. My bedroom was upstairs with a grand balcony overlooking the bay. From the pictures, it looked like paradise. In reality it was less so. Thanks to the proximity to the trees, the balcony was more like a war zone between insect and reptile. Hiding behind the sliding doors we were a little more protected. That was until the sun went down and the forest came alive. Thanks to the traditional straw roof, the rain on a night made for a constant aroma of damp mud. Somehow, I don’t think this will be the new Lynx fragrance for 2020. Not only did the smell seat itself in your nostril, giving anyone with the slightest respiratory condition hours of breathlessness, it also sent an open invite to the local Geckos. Now, I wasn’t expecting to share my bedroom on holiday, however, this was not to be the case. The lovingly named Trinidad and Tobago by my friend Jamie, must have felt lonely on an evening. Whilst they are mostly cute and harmless, scurrying away at the first sight of a human, it doesn’t stop them from having moments of courage throughout the night. Whilst most of us sleep during the hours of darkness, it would seem they do not share the same affinity for this act of rest. Instead they like to nestle in the straw roof during the day with their family of countless others. On a night they take pride on keeping me company whilst stuck to the unreachable places of my wall, greeting me every hour that passes with their infamous squeak. It was very much a love hate relationship. Aside from the uninvited creatures, the villa was quite pleasant. An infinity pool made it even more relaxing, giving us the opportunity to float around with stunning views for most of the day. The card game Camels in Qatar kept us company most nights leading to rivalry between us, some winning more than others. Unfortunately, in the North there is no such thing as a lie in. Bali is predominantly a Hindu country. The religion celebrates by holding regular festivals whereby the choice of entertainment results in a triangle and some gentle acoustics. This at 4am allows you to stay soundly asleep. In the north the religion is 50/50 between Hindu and Muslim which seems to create some animosity in the area. The Muslim religion must believe in a louder choice of entertainment by way of concert style speakers. This, resonating up the mountain at 4am does not allow you to sleep soundly meaning in Bali, 4am is the start to your day. This can be seen as helpful for us tourist types at the area of Lovina encompasses a hidden gem. If you manage to drag yourself out of bed, fight through the various animals and make your way to the beach you get to hire a boat and go dolphin watching. A must see. There is a stark contrast between the north and south. You get a true sense of the true Bali living with the locals. The North is an area of unspoilt natural beauty. From the temples to the hot springs, street markets to the fancy clubs and hotels, the reception you get is the same. One of genuine kindness and appreciation for visiting. MARCH 2020 | 19

Break to Bruges If you love chocolate, beer, canals and charm, the Belgian city of Bruges, just a train drive away on Eurostar, offers the perfect destination for a city break. It is regarded as the best preserved medieval city in northern Europe as is fondly known as the Venice of the North.
T
he historic city centre is surrounded by picturesque canals and enclosed within ancient city walls. Once inside, everything is close to hand. There is street after street of charming centuries-old houses, majestic gothic churches, plenty of chocolate shops and canal-side bars, cafes and restaurants. For most tourists, the best feature of Bruges is the winding cobbled streets that lead to the main tourist areas of Market Square, with its open air cafes, and Burg Square, home to the oldest gothic city hall in Belgium. The belfry on Market Square is one of Bruges’s most distinctive landmarks. Its bell tower dates back to the 13th century and is over 80m high. If you climb the 366 steps to the top you’ll be rewarded with panoramic views over the city’s skyline. The cobbled streets boast plenty of tempting chocolate shops, so don’t expect to stick to a healthy diet. The chocolatiers are highly skilled and their creations are nothing short of works of arts, so you can expect to pay quite a lot for the privilege of eating their creations. Once you’ve eaten all the chocolates you could want you can wash it down with a speciality beer from one of the beer boutiques. There are also two historic breweries offering tours where you can sample Straffe Handrick, Brugs Tarwebier and Brugse Tripel beers straight from the barrel. You can buy chocolates and beer much cheaper in the local

supermarkets, but that certainly spoils the shopping experience and the chocolate and beer won’t have the same handmade quality. The religious sites of Bruges are another big draw for tourists. The Basilica of the Holy Blood is a beautiful gothic church on Burg Square and houses a vial of blood that is believed to have come from Jesus. There is an ambient Romanesque-style chapel underneath the main church. The Church of Our Lady dates back to the Romanesque and gothic periods. The east end of the church is home to the tombs of Charles the Bold and his daughter, Mary of Burgundy. The church also has a small but lovely Michelangelo sculpture of the Virgin and Child. One of the main cultural highlights of Bruges is the City Museum of Fine Arts. The collection mainly focuses on works by painters who either lived or worked in Bruges and spans several centuries. There are plenty of arts and crafts shops scattered around the city, specialising in works by local artists and lacework. As Bruges is a perfectly compact city, getting around is easy on foot. If you want to sit back and enjoy the view you can hop on a boat for a tour of the city’s beautiful canals. Tours only cost a few euros and it is the best introduction to Bruges. Like Amsterdam, cycling is a popular way to get around the city and you can rent a bike from many locations. The best way to travel to Bruges is on the Eurostar service to Brussels’ Gare du Midi and then a connecting local train service to Bruges, in total taking just 3 hours 20 minutes from London.

LET’S TALK ABOUT...
SELF HELP FOR ANXIETY By Karen Hayward
O
ver the last few months, we have been looking at anxiety and, as promised, in this feature we are going to explore a few self-help techniques that you can use to reduce your anxiety and make your life more comfortable. These self-help techniques are simple to use, simple to incorporate into your daily routine and can potentially have a significant impact. They are all noninvasive and can be used alongside your existing therapies such as CBT and in conjunction with any prescribed medication.
with your head high – raising your chin and walking tall releases endorphins. Practice mindfulness – mindfulness is all over the place but for good reason. There are a wealth of apps, guided meditations or CDs online, all of which can help. If you feel the anxiety rising, focus your attention on something tangible; if you are standing, focus your attention on the soles of your feet, see if you can be aware of the firmness of the ground under your feet. If you are sitting, can you feel the seat you are sitting on? Is it firm or soft, warm or cold? Reach out and put your hand on a surface, is it warm, cold, smooth, textured. Slow your breathing whilst you’re focussing on something else.
Some years ago, I was diagnosed as asthmatic and during a particularly lengthy flare-up of the condition, which I was struggling to manage, my GP said to me ‘you need to control your asthma and not allow your asthma to control you’. This was very sound advice. As soon as I realised I could manage and take control of it, I was empowered. In some respects, anxiety is similar. Knowing that you can take control of it rather than allowing it to control you is very empowering.
Sleep and nutrition play a part too. How is your sleep hygiene? Are you staring at a screen late into the evening? Take a step away from social media, cut back on the junk food, make looking after you a priority. Not all these techniques will work for everyone so experiment and find what works best for you and remember that self-help can be challenging but can also be very successful. Remember to record how you are feeling each week out of 20 so that you can see the numbers coming down. It is also important to remember not to come off any prescribed medication without with the support of your GP.
Control your breathing – breath in for a count of 4, hold for 2 and out for 7. You can use any combination of numbers here really; the important thing is that the out breath is longer than the in breath. Slowing your breathing like this convinces the ‘fight, flight or freeze’ part of your brain that all is well. Reduce caffeine intake – caffeine is a stimulant so switching to decaf and stopping the energy drinks can help. Caffeine is also found in chocolate so if you can, cut back on that too.

Exercise – try to aim for 30 minutes, five times a week. If it is easier, break this down into 5 or 10-minute chunks. Put the kettle, put a tune on the radio and have a little dance whilst the kettle is boiling. This will also help to release the happy hormones into your blood stream too. Walking, yoga and meditation are highly beneficial too. None of these need be expensive – there are a wealth of options available online and if you have no internet access, many library’s offer CD/DVD rentals at low cost. Walk

The healthiest drink in town
Experts have proved that your health can benefit immensely from the concentrated sources of the antioxidant vitamins contained in fresh vegetable or fruit juice. These include vitamin A, which is converted by the body from beta carotene contained in red, yellow and orange vegetables, and vitamin C and E, which mop up free radicals, destructive molecules linked to heart disease and cancer.

ur bodies may depend on water for health and life, but if you are looking for a drink that can inject your body with concentrated nutrients, a cup of freshly juiced vegetables is the best around. If, like many people, you think that a savoury drink would be about as tasty as a sweet bag of potato crisps, you are wrong. Once you get over the initial strangeness, a savoury vegetable drink is delicious. What’s more, it is deliciously good for you. Freshly squeezed juices, whether at home or in a juice bar, also ensure that you receive the full nutrients packed within fresh, wholesome vegetables. Nutritionists advise that you should aim to consume a variety of raw foods in your daily diet. If you cook all of the vegetables you consume, you are probably destroying all the best nutrients. Juiced raw vegetables are high in assimilable vitamins, minerals and plant enzymes. Because juicing removes the fibre, the nutrients appear in a concentrated form, which is partly why they are so good for you. If you drank a juice containing the same quantity of vegetables that someone else eats, your body will receive an almost immediate boost from the juice compared to several hours for the person eating the vegetables. This is because juicing allows the nutrients to be easily absorbed in your blood stream instead of being broken down and absorbed slowly through your digestive tract. For those with digestive problems, juicing takes the strain out of the digestive system.
To obtain maximum benefits from vegetable nutrients, it is best to avoid shop-purchased juices, whether fresh or long-life. Unless they say otherwise, the processing involved in commercially prepared juices destroys much of the nutritional content as well as destroying the enzymes, which help your body break down the nutrients. If you see the words ‘added vitamins’ it usually means that the natural, and vastly superior, vitamins have been destroyed. Added vitamins and minerals will be of use to your body but they will not compare to the natural source. Some of the healthiest vegetables to juice, like green vegetables, can be an acquired taste. However, start off your introduction with the more easily tolerated varieties, including carrot, beetroot, parsnip, and red pepper, all of which have natural sugars to sweeten the drink. Because the fibre is removed through the process of juicing, you must ensure that your diet still contains large portions of whole fruits and vegetables. Jane Edmonds, registered dietician at BUPA South Bank Hospital, advises that you should aim to drink no more than two portions of your recommended daily five. Invest in a good quality juicer. As with any other food in your diet, opting for organic will ensure that you are not adding pesticides or other harmful ingredients to your super-healthy juice. If you cannot afford organic vegetables, make sure that you thoroughly wash the raw vegetables under cold running water. Any root vegetables should be scrubbed, but always leave the skin on as it contains many of the best nutrients. TIP: USE VEGETABLE JUICE AS YOU WOULD FRUIT JUICE IN A VARIETY OF COCKTAILS AND LONG DRINKS.

Sambuca: it’s hot stuff
The Italian favourite is an anise-flavoured liqueur, produced by the infusion of witch elder bush and liquorice, sweetened with sugar and enhanced with a secret combination of herbs and spices. White sambuca is the traditional and generally the more popular variety, having a mellower liquorice taste and lighter body than that of black sambuca. Sambuca only became really fashionable in the 1980s when it was given the unique serving suggestion of setting it alight with the three coffee beans. The sambuca was then put out - carefully snuffed out not blown to avoid burning alcohol being blown across the room - and the drink quickly downed. If you want to flame sambuca, use a thin sherry glass or shot glass, since these will give a smaller surface area. Usually sambuca lights better with a smaller surface area. In Italy when you are asked if you want coffee beans in your sambuca you are actually asked if you would like it com la mosca , which means “with the fly”. Sambuca gains its name from the elderberry’s Latin name, sambucus niger . This is a great plant with beautiful black berries in the autumn and winter. There are several ways to drink Sambuca. The boring way is to dilute it with water. This makes a pleasant long drink on the rocks. The traditional way is with the coffee beans. Set the shot on fire, put it out and drink it. This is the way described on the bottle and, supposedly, the “right” way.

f you’ve ever eaten at an authentic Italian restaurant, you may have seen customers ordering a liqueur which is brought to the table with flaming coffee beans floating in it. Usually three, as odd numbers signify good luck. This is sambuca, which, like most of the world’s more special drinks, is made from carefully guarded, centuries-old recipes consisting of complicated mixtures of herbs and spices.

Then there’s the cool way. Apparently you take the sambuca into your mouth, but don’t swallow. Wipe your lips so that none of the drink is on your lips. Then tilt your head back, open your mouth and have a friend light a match to ignite the sambuca in your mouth. Wait until you can feel it burning and then close you mouth. Shake it around and then swallow. This is supposed to be the way to impress your mates, though sounds rather risky and we reckon you should have a fire extinguisher or a bucket of water standing by. If you’d rather try this liqueur in your cookery, try this recipe.
INGREDIENTS 100ml olive oil 1 tablespoon fresh garlic, chopped 1 tablespoon fresh shallots, chopped 16 fresh large prawns (or more if you are very hungry) 75ml chardonnay or dry white wine 50ml sambuca quarter cup fresh tomato, diced 1 tablespoon fresh tarragon, finely chopped 2 teaspoons salt and pepper 110g butter 500g angel hair pasta, cooked Fresh tarragon leaves chives • Heat oil in saute pan, add garlic, shallots and prawns. Cook for 1 or 2 minutes. • Add wine and sambuca. Flambe. • Add tomatoes, tarragon, salt and pepper, and cook for 2 more minutes. • Add butter and reduce. • Place over individual servings of pasta. • Garnish with tarragon leaves and chives for four servings.

LOW-FAT LAMB BHUNA If you can’t resist a curry on a Friday but you’re trying to watch the calories, try this lower-fat version of the classic Indian dish. ‘Bhuna’ means ‘spices cooked in hot oil’. Don’t allow the mixture to boil while cooking, or the lamb will toughen. Serves 4.
INGREDIENTS splash of oil for frying 2 onions, finely chopped 400g lean lamb fillet, cut into small cubes 2 cloves of garlic, crushed 5cm piece of fresh root ginger, grated 1.5 tablespoons medium curry powder 2 teaspoons turmeric 4 tablespoons tomato puree 2 tablespoons tamarind paste salt and black pepper fresh coriander to garnish METHOD 1. Heat the oil in a non-stick pan and stir fry the onions until soft and nicely browned - this should take around 8 minutes. 2. Add the lamb cubes and brown on all sides. 3. Add the rest of the ingredients except the coriander and pour over 150ml water. 4. Stir to combine thoroughly, bring to a gentle simmer, cover and cook for 5 minutes. 5. Remove the lid and season to taste. Serve immediately with boiled white rice and garnish with the fresh coriander leaves for extra flavour.
LAMB MOUSSAKA Tired of lasagne at the weekends? Try this classic Greek moussaka recipe instead, made with lean minced lamb, delicious rich aubergines and a generous splash of wine! This recipe can be prepared in advance and chilled in the fridge before cooking - add an extra 15 minutes to the cooking time if you’re doing this. Serves 6. INGREDIENTS 150ml olive oil 1 large onion, finely chopped 3 garlic cloves, crushed 900g lean minced lamb 50ml white wine 400g can chopped tomatoes handful of fresh oregano leaves, chopped 3 large aubergines, stalks removed salt and black pepper For the topping: 75g butter 75g plain flour 600ml milk 50g parmesan, finely grated 2 medium eggs, beaten METHOD 1. Preheat the oven to 200C/Gas Mark 6 2. Heat 2tsp of the oil in a large frying pan and fry the onions and garlic until they just begin to brown. 3. Add the lamb, frying over a high heat for 4-5 minutes until sealed. 28 | PEOPLE & PLACES MAGAZINE
4. Add the wine, tomatoes and oregano. Stir well and simmer gently over a low heat for 30-40 minutes. 5. Cut the aubergines into 1/4inch slices lengthways. Add the slices to very hot oil and fry on each side until tender and lightly browned. You’ll have to fry them in batches. Remove, drain the excess oil on some kitchen paper, then layer on the base of a shallow oven proof dish. Season with a little salt and black pepper. 6. Next, make the topping: melt the butter in a pan over a medium heat. Add the flour and cook for 1 minute. Slowly pour and mix in the milk, stirring, and bring to the boil. Simmer gently for 10 minutes, stirring occasionally, then add the cheese and season to taste. Leave to cool slightly, then add the beaten egg. Mix thoroughly. 7. By now, the lamb mixture should be cooked. Spoon it over the aubergines in the baking dish, pour the topping over and bake in the oven until the top is golden and the cheese is bubbling. 8. Serve immediately with a fresh green salad.

LEMON TART This classic French dessert combines buttery smooth pastry with a zesty citrus filling; the perfect end to a summer dinner party. Use ready-made shortcrust pastry if you don’t have a food processor to make it from scratch. Serves 8-12.
EASY CHOCOLATE CHEESECAKE This impressive chocolate cheesecake is a sinch to make and no baking required! If you prefer your cheesecake a bit more chocolately, add a little more cocoa powder to the mix. Serves 6. INGREDIENTS 150g digestive biscuits 45g butter, melted 110g caster sugar 120ml whipping cream 150g dark chocolate, melted and cooled 2tbsp cocoa powder 200g cream cheese METHOD 1. Place the digestive biscuits in a freezer bag and crush with a rolling pin until fine. 2. In a large bowl, combine the crushed biscuits, melted butter and 1 tbsp of the caster sugar, reserving the rest. Mix together thoroughly and press tightly into an 18cm cake tin, then refrigerate. 3. Whip the cream until it forms soft peaks, then add the cooled melted chocolate. 4. Mix together the cocoa powder with a little water, then add to the cream and chocolate mix. 5. In another bowl, beat together the cream cheese and remaining 3 tbsp sugar. Fold in the cream and chocolate mix, combining thoroughly. 6. Spread the cheese mixture on top of the crushed biscuit base, then put in the freezer for one hour. 7. Remove from freezer, refrigerate for 30 minutes, then serve. 30 | PEOPLE & PLACES MAGAZINE
INGREDIENTS For the pastry: 75g/30z butter 4 tbsp icing sugar 125g/4.25oz plain flour For the filling: 3 eggs 200g/7oz caster sugar 1 tbsp lemon zest 4 tbsp lemon juice 3 tbsp plain flour 2 tbsp icing sugar to dust To garnish: Mint sprigs, sliced strawberries. METHOD: 1. Preheat oven to 180C/350F/Gas Mark 4 2. In a food processor, mix the butter, icing sugar and flour for 10 seconds to make the pastry. Pat the pastry evenly into a 23cm tart tin and bake for 12-15 minutes until golden. 3. While the pastry is in the oven, combine the eggs, caster sugar, lemon zest, juice and the flour and mix until smooth. 4. Remove pastry from the oven and pour the mixture over while the case is hot. Return to oven and bake for 15-20 minutes until firm. 5. Remove from the oven and let the tart cool completely. 6. Dust with icing sugar and garnish with strawberry slices or mint sprigs. Cut into slices and serve with creme fraiche or vanilla ice-cream.
