Your ultimate resource I’m really proud of how far we have come. The year 2020 happened and it was beyond awful. Global pandemic. Complete shutdowns of our industry. More than one hundred thousand of our team members unemployed. Billions of dollars in sales lost. And yet you are reading this article, which means you are still standing. At the Washington Hospitality Association, we have never stopped striving to make Washington the best place to do business. Our government affairs program engages in political battles daily to build a better business climate. We use our Education Foundation to train and support our workforce. We identify and offer the best cost-saving programs to better position your business for success. We provide breaking news and daily industry communications to translate government rules into easy-to-follow action items. Each one of these four pillars of our organization - advocacy, workforce, cost-saving programs and information – seeks to generate four times the value of your annual dues investment. We want it to be a no brainer to rejoin the association each year – especially in a global pandemic. The four pillars were created after member feedback surfaced years ago on social media. Why would anyone join our association? What are we promising? What value does our organization bring? I went to the bi-annual membership survey for answers – you all clearly told us what is important. The pillar wording has been fine-tuned 50 different times since then, but the core remains the same. You continue to tell us these pillars are what you value. And in the past year we have been better than ever at leveraging our resources at the national level to help your business here in Washington state. The Paycheck Protection Programs and Restaurant Revitalization Fund did not happen without your memberships with the National Restaurant Association and the American Hotel & Lodging Association. In the past some of you have questioned why we stay connected with our national counterparts. This is a year we think, “thank God we are.” I can’t wait to see what our partnerships at the national level will do in the year to come. The articles in this special Buyer’s Guide issue will continue to detail how your association is your greatest resource in this unprecedented time. 6 │ wahospitality.org
A couple of things I would ask you to take moving forward in the coming twelve months. 1. When I was coaching my son’s baseball team and someone slid hard or fell down, I encouraged the players to get up, dust off and keep playing. We need to do the same. Don’t dwell on the negatives of 2020. Get up, dust yourself off, learn your lesson and keep playing the game. 2. With the shutdowns of our industry, the odds were probably not with your business to survive this time. And yet it did – because you did. You adjusted, you changed, you redid your business model three times, you focused your team on the urgent and important, you focused on your customer value and you did what you had to survive. If you want to reach the next level of success, don’t simply stop because the calendar has turned or vaccinations are up. You have been shown the recipe for greatness, now use it. 3. Rebuild right. Hire with a career ladder in mind and with technology in mind. You have a chance to rebuild your business without the mistakes you made when you established it the first time. Take advantage of this moment to do so. 4. In the coming year, use every pillar of the association as a resource. Tell your territory manager you want a benefit review. 2021 Session ends with big wins and clear goals for next year By Alec Northrop
At the end of this year’s unique session, we were happy to have achieved a significant number of priorities our members identified for the team. Our members effectively advocated for priority bills and provided a strong voice of opposition for other bills proposed this session that would have harmed the industry. The level of support made a huge impact on the session’s outcome. In fact, support for the bill that advocated reopening Washington broke records for level of engagement and number of people signed in to support the bill. Below are some of the highlights from the 2021 session. Your Government Affairs team fought for a number of additional bills that helped the industry and you can find those on our website, wahospitality.org. DEFEATED
SETTING THE TONE SB 5114 – Safely Reopening Washington would have immediately reopened Washington businesses to 25% indoor capacity and transitioned future decision-making authority to the Legislature. While the bill did not pass out of committee, it broke the record for the amount of engagement, with more than 2,000 individuals registering a position and wishing to testify. Ultimately, the bill was used as a tool to deliver a strong message — that the public was ready to safely reopen, and we were able to resume indoor business activity.

WINS ESSB 5092 Tourism marketing
The operating budget contained our full request--$12 million– for tourism marketing, recovery and promotion. The funds will support statewide and local tourism efforts by the Washington Tourism Alliance, in unrestricted funding, so that an aggressive recovery and marketing program can be developed to promote travel aligned with the governor’s Safe Start program.
ESSB 5061 Concerning Unemployment Insurance
This was the very first bill the governor signed this legislative session, quickly moving through the DEFEATED legislative process to deliver $1.73 billion in unemployment insurance relief to businesses ahead of the first quarterly payment of 2021. The bill will also ensure unemployment insurance rate increases will be capped in future years.
ESHB 1332 Property Tax Deferral
This bill required counties to enter into payment plans with qualified businesses that had at least a 25% loss in revenue inDEFEATED 2020 for property tax payments and prevented counties from charging a required interest rate.

E2SSB 5272 Temporarily Waiving Liquor License Fees
This bill waives license fees for 19 license types including spirits, beer and wine restaurants and caterers, saving members an average of $2,000. The 12-month waiver period began in April 2021 and applies to renewals of licenses that expire during the 12-month waiver period.
E2SHB 1480 Extending Certain Liquor License Privileges
This Liquor and Cannabis Board agency request legislation extends several of the temporary DEFEATED allowances for liquor licenses that the board created during the pandemic like cocktails-to-go, curbside service, alcohol delivery and takeout, premixed cocktails, and cocktail kits to July 1, 2023.

SB 5371 – Sugary Beverage Tax This proposal would have added a $.0175-per-finishedfluid-ounce tax on sugary beverages (soda products, juices, etc.) This tax would have almost doubled the cost to purchase a five-gallon bag of soda concentrate and with the help of members, we defeated this bill. 2SHB 1076 – Allowing Qui Tam Actions on Behalf of the State This would have allowed third-party “relators” to bring a lawsuit against a business for any alleged labor violation, rather than utilize Labor & Industries — an entire state agency with an annual taxpayer-funded budget in the hundreds of millions. The bill failed to gain enough support and died in the Senate. SSB 5064 – Unemployment Insurance for Voluntary Quits This measure would have extended unemployment insurance benefits to individuals who voluntarily leave employment. The Washington Hospitality Association opposed the bill, and it failed to gain enough support to move forward. SHB 1474 – Penalties for Employer Violations of Unemployment Insurance This measure suggested that employers were purposefully withholding information from the Employment Security Department and assessed penalties, regardless of whether the employer knowingly failed to report. We opposed the bill and it ultimately failed to pass the legislature.

These bills gained significant support in the legislature but unfortunately failed to pass this year. HB 1359 – Reducing Liquor License Fees Temporarily House Bill 1359 concerns the reduction of liquor license fees. The bill would have reduced liquor license fees associated with spirits by 50% through December 2023. While this proposal was not included in the final budget, lawmakers have expressed interest in introducing it again next session which would still allow for plenty of time before the temporary license fee waivers expire.

HB 1299 – Providing B&O Tax Relief to the Hospitality Industry This bill reduced the B&O tax rate by 30% for restaurant, hotel and bowling businesses and would have resulted in a $42 million reduction to the general fund. Unfortunately, federal relief provided to the state included a requirement that federal funds not be used to reduce tax rates and the bill did not receive the support needed.

For our lodging members, we also have our monthly Lodging News. We know that things are happening at the local level that vary from place to place so we break news and information down to the county and city level. In Seattle, members get a weekly newsletter for all things local, and in Spokane, you can expect a newsletter when news breaks in Eastern Washington.

Why a Business Evaluation Should be a Part of Every Entrepreneur’s Financial Planning. By Oliver Kotelnikov Piggybanks are great. They are a reliable way to safely accumulate funds over time. On the flip side, the maturity value of the piggybank is not fully known, subject to inflation rather than compound interest, and the liquidity event will likely require power tools. Finally, it’s hard to imagine leaving to mystery the value of your child’s college fund until the first tuition check comes due or waiting until retirement to find out the exact value of the pension fund you’ve been paying into for years. Entrepreneurs often expend significant resources of time, energy and money to build a successful business. Yet most are steadily approaching retirement or preparing to transition to other ventures without ever taking the time to find out the value of what is frequently their biggest asset. Throughout their career, the average number of fair-market business evaluations a typical entrepreneur receives prior to deciding to exit is astoundingly...zero.

“It’s not what you don’t know…” This quote goes on to propose that it isn’t the lack of knowledge but making choices of significant consequence based on limited or inaccurate information that does the most damage. Business owners will routinely supplement an otherwise meticulously balanced and transparent investment portfolio with a rather large X factor--the expected proceeds from the eventual sale of their business. This placeholder value is often endowed with supreme confidence, but too often it represents an assumptive composite of inaccuracies based on incomplete, outdated, unverified and just plain false information. A ballpark approximation by a former accountant, a stated value of what a similar business sold for in the past, standard industry KPI-driven valuation models courtesy of Google, a cost approach to upgrades, and potential future earnings of the business are just a few of the metrics that can generate an inaccurate recommendation of value and set false expectations.
A comprehensive, professional opinion of fair-market value will accomplish the following objectives: 1. Establish a realistic price range of what a business will sell for in the current marketplace. 2. Outline the key factors positively and negatively impacting the present fair-market value of the business. 3. Provide the business owner the opportunity to evaluate the broker’s experience, market knowledge, professional skill set and ability to successfully sell the business for maximum value. 4. Define the scope of the project and determine compatibility between the parties to take the business to market and complete the sale. The broker should provide a business owner with an update of current market conditions and the commercial-lending environment, optimal time to go to market, and propose a timeline for completing the transaction from listing to sale. In a recent transaction, a client approached me about selling their business and requested a quick, ballpark figure for the value. I agreed on the condition that the client will also accept an approximate value for their retirement-oriented stock portfolio at vesting. The value of the average stock portfolio in this entrepreneur’s current zip code would be substituted for the value of their actual investments at liquidation and a check remitted for that amount. Phrased in such a way, the proposition sounded absurd. We proceeded to properly value the business, move to market and achieved a sale quickly. The unique economic climate of challenges and opportunities we find ourselves in today has rendered all generalities obsolete. If success is to be achieved, specifics matter. As a mergers-and-acquisitions professional, I believe it is our responsibility to adopt a market-based approach when valuing family-owned businesses and privately held companies, and provide my clients with the facts. Whether it is retirement, your children’s education, supporting charitable causes or general estate planning, your post-transactional goals have established, predetermined costs attached to them. How to change for the better
Restaurateurs and experts share important lessons from challenging times. By Alec Northrup The Washington Hospitality Association recently hosted a roundtable discussion that invited industry experts to share innovative solutions restaurants have come up with to weather the pandemic. Restaurateurs and consultants discussed the issues facing the industry and came away with a few main areas to focus on for success. The conversation kicked off with a familiar concern that has only been accentuated by the pandemic. Businesses in the hospitality industry have been searching for solutions to rising labor costs for years, and demand for innovation in that area has never been higher. Participants agreed that a successful business in today’s climate needs to optimize labor efficiency. Labor Efficiency Arnold Shain says in 2020, as restaurants were closing, he has been able to help new restaurants successfully open by maximizing labor efficiency. As the founder of a consulting service called Restaurant Group, Shain focuses on new technology that can help reduce labor costs and speed up life in the kitchen. One of the things he is keen on having his clients introduce is a ventless fryer that does not use oil. New equipment, in general, can help with efficiency and replacing old and inefficient equipment in the kitchen can save you money in the long run as the cost of labor goes up, and the outdated equipment deteriorates. In addition to innovating around technology, reducing your prep time can be achieved through innovation in the supply chain. Andy Cook is a restaurant solutions consultant for Harbor Foodservice who has seen a change in the relationship between restaurants and suppliers. Some farms have even started to create custom produce mixes for restaurants so they can cut down their prep time. Depending on the cost of your labor, paying a little extra for items like pre-diced vegetables could save you money. Embrace tech to build relationships There is no doubt technology can help businesses decrease costs, but Olga Sagan wanted to speak to the group about its ability to increase customer retention. Sagan, the founder of the popular Pike Place bakery, Piroshky
Piroshky, said she was like many restaurant owners who were afraid of technology; unwilling to look past their love for the craft of cuisine. But as Piroshky Piroshky expanded beyond Pike Place, Sagan found that it was also increasingly important to expand virtually, and she hired developers to build an online ordering system for her bakery. The important distinction between third-party delivery and your own online ordering platform is your connection with the customer, Sagan said. By taking the time to start its own system, Piroshky Piroshky can connect with its customers on a regular basis and promote new products via email. Establishing that level of communication directly between the consumer and the company becomes more important as more customers buy your product without ever stepping foot inside a brick-and-mortar location. Menu redesign The underlying theme of the conversation was flexibility and a willingness to adapt when your environment changes. Changing your menu to meet the needs of the consumer can be one of the hardest things to do, but it can make a world of difference. Adam Hegsted is the head chef and owner of Eat Good Group and runs a handful of restaurants scattered between Spokane and Coeur d’Alene. Last year, Hegsted had to close one of the restaurants that had previously been successful as a fine-dining establishment. While delivering $50 steak dinners may be nearly impossible, optimizing many other menus for delivery is not. Hegsted’s other restaurants continued to operate but changed their menu to feature more comfort food and simplified them to fit better with online or mobile ordering formats. Across the board, the participants agreed on that point — the customer is calling the shots, and restaurants need to listen and adapt. While Adam Hegsted focused on dishes that delivered well, Olga Sagan learned that her customers wanted more variety and started introducing a new item each month. Arnold Shain advised his clients to simplify their side dishes, and Andy Cook encouraged restaurateurs to consider speed scratch preparation. Hotels: The art of adaptation
How the industry is changing what it means to be hospitable By Alec Northrup
The pandemic needs no introduction. It is no secret that coronavirus has crippled the hospitality industry in the United States, and hotels in Washington are no exception. After the summer of 2020 where hoteliers like Chris Burdett told the American Hotel and Lodging Association that he saw a reduction in occupancy from 67% to 3% year-over-year in his Seattle Hampton, everyone is acutely aware of the situation as the summer of 2021 approaches. However, the industry is resilient, and no stranger to unexpected change. Some businesses made headlines with the creative ways they adapted; hotels in Las Vegas famously started offering a “Work from Vegas” package, enticing remote workers to fill vacancies in hotels impacted by the pandemic. Lodging proprietors from Washington state to Washington D.C. have made changes to their businesses that helped them make it through 2020, and some have made innovations that will outlive the pandemic. Here are a few of the key strategies successful hotels have used for the last year and a half. Being (extra) hospitable While this is not a new concept, and it seems a little redundant to mention the importance of hospitality, anticipating customer’s needs is the easiest way to create a memorable experience. Hotels have loosened some restrictions, encouraging travel by allowing pets to stay in hotels, or offering to reschedule or refund events in the event of a cancellation, but the best way to leave a good impression is simple — communicate effectively. Allison Handy, a senior vice-president at Prism Hotels & Resorts, which manages the Hyatt House in downtown Seattle, says empathy and flexibility are crucial. Noting that Prism focused on maintaining relationships with individuals or groups that had to cancel bookings, she said showing empathy for a guest’s situation makes them more likely to show empathy for theirs. Technology Hospitality is not alone on the list of industries that has experienced accelerated progress on an ongoing trend. Like other areas of life and culture, the shift toward automation, smart tech and even artificial intelligence became especially useful to hoteliers. Some of the most effective innovations reducing human contact included the adoption of digital keys, 52 │ wahospitality.org
mobile or remote check-in and streaming capabilities on TVs to eliminate the use of a remote. Some hotels even employed robot butlers that can drop off newspapers or deliver room service. While the robot-tech might be impractical at this point, digital keys and mobile check-in services present an opportunity for hotels to streamline basic interactions and cut costs. As long as people continue to use smart phones, the method doesn’t lose its value post-pandemic. Efficiency Much like the accelerated adoption of technology, efficient business practices were desirable long before the pandemic and will be long after its conclusion. However, some of the unique aspects of 2020 led hoteliers to adopt some uncommon practices. Chris Tudor, owner of Tudor Inns, LLC, has “learned to do more with less.” Management has taken on operational tasks like helping with the front desk, and housekeeping is cleaning rooms for stayover guests by request only. While these changes are inspired by current times, there is not much that prevents them from becoming permanent practices. Expanding customer base Another, possibly groundbreaking, change that hotels can make to adapt to the current environment lies with their customer base. Tourism drives occupancy for many hotels, so it only makes sense for those hotels to cater to a guest on vacation. With leisure travel taking a huge hit, and events like weddings and business conferences stymied, hotels have started to market to neighbors instead of newcomers. The steep increase in workers who can clock in wherever there is Wi-Fi has led to the rise of the staycation, leading some hotels to pursue guests they have never catered to before — single, working locals. The silver lining after a tough 2020 for hoteliers may be that the stars aligned just right to open the world’s mind to a weekday hotel stay. In 2020, possibly for the first time, young professionals had the incentive to stay in the hotel down the road for a few days to self-isolate from their roommate — and they could do so without taking time off work or leaving their cats behind. Your membership’s secret ingredient By Lisa Leinberger
When hospitality business owners talk about the value of their membership in the Washington Hospitality Association, some of them focus on the legislative advocacy which gives them a stronger voice in local and state issues that affect their bottom line. Some highlight the many cost-savings programs to which they have access. Others stress the benefit of having someone on their side that they can reach out to when they need something: that one-on-one relationship with their territory manager that is key to getting the most out of their membership. When you need something specific, such as training platforms, purveyor and professional service referrals, or when you have an industry-related question or challenge, you have a reliable resource to call. Territory Manager Tamorro Farrell recalls when a member was in a crunch. A member once called her, completely stressed out because in two hours, she had to terminate an employee under challenging circumstances.

“I need to know what I should say and what I shouldn’t say,” the member told her. Tamorro immediately reached out to an attorney in the Washington Hospitality Association’s Advisory Network. She then referenced the HERO manual and read the best practices for terminating an employee to the member and general manager, including the section that spelled out how to avoid a lawsuit. The member was starting to feel a lot better about the situation. Then, the attorney called the operator and offered specific advice. “By the time she got done talking to me and the attorney, she said she felt empowered to effectively, calmly and confidently deal with this situation,” Tamorro said. The association is the trusted primary source of information, filtering out the white noise and providing timely, relevant content. When rumors about what is coming next start swirling through the industry, members call their territory manager to get the facts. Robbin Stafford, territory manager of Southeast Washington, said our members are the backbone of our association and the reason we exist. “The larger the membership base we represent, the more power we have to negotiate on their behalf.” One of the many things Michele Schaub, territory manager in downtown Seattle, has done for her members is connect them to a network of peers. She introduced a member in an HR role who was new to hospitality to others in a similar capacity who eventually became her mentors and support group.

She said the membership team is persistent in reminding members to take advantage of their cost-saving programs. She said these programs are the privilege of having a membership. Cathy chimed in saying, “We demonstrate where they can find savings, such as the pop syrup tax—a 100% B&O tax credit on the sales tax restaurants pay to their distributor for soda syrup.” They all agree. There is a dynamic partnership between the members and the association. The most important part of the relationship is the trust that develops between members and their territory managers. “We introduce ourselves and earn trust quickly, and then prove time again that we’re reliable, we’re dependable, and of course we’re hospitable,” said Cathy. In these challenging and unprecedented times, your territory manager provides reliable and consistent support when you need updated reopening guidelines or resources like a grant through the U.S. Small Business Administration. Tamorro recalls instances when a member had an approved grant, but the Department of Commerce needed additional information to process their application. Finding solutions for pandemic problems By Alina Day
The Washington Hospitality Association has many different solutions to problems members experience every day. These solutions leverage the collective buying power of the association’s membership to give the same low pricing and good coverage to all members. One small business by itself can be taken advantage of or be given a higher standard rate on supplies or services. Together, the association can negotiate the lowest cost for every member, no matter the size of their business.
We spoke with our allied members about what supplies they had on hand, discounts they were offering and when they restocked. If they had high priority items in stock such as disposable masks, hand sanitizer or plexiglass barriers, we communicated this information out to the membership. We kept a live sourcing guide on our Coronavirus Guide site, updating it as soon as we received new information on availability.
Rate, cost savings and increased coverage are all important pieces of the puzzle. We also look at who powers these solutions and what their stake is in the hospitality industry. Their support of the industry as a whole and desire to see it succeed plays a critical role in who we select to be our program partners.
In September 2020, we launched our online Buyer’s Guide, the sister to this print Buyer’s Guide. It dynamically changed our sourcing guide from a static page into an interactive search. As allied members started stocking items they may not ordinarily have such as plexiglass or cleaning supplies, it was imperative members knew this unusual source was available to fill their needs.
Allied members, those who provide services or products to hospitality and wish to provide support to the industry, also play a key role. Although they may not be direct partners to the association, they wish to see hospitality and their customers and clients thrive.
Washington Hospitality Association partner Office Depot offers discounted items to members. During the pandemic, they had deeply discounted highly requested items available in bulk when most suppliers where completely out of stock. These discounts were exclusively for our membership.
Over the last year, our partners, allied members and staff have labored tirelessly to help members stay in business and survive the coronavirus pandemic. Here are some of the ways they helped:
Waived payment processing service fees Starting April 1, 2020, if a member was using our payment processing solution and not open for business to take payments, their service fees were automatically waived. When they were ready to come out of hibernation and start taking payments again, this process was automatic with no extra hassle, calls or service provider fixes necessary.
Provided deep discounts on supplies and worked with suppliers on supply chain shortages During the early days of the pandemic, supply chain shortages were a huge issue. Association members needed a sourcing guide and information. On May 20, 2020, we held a webinar with Randy Irvine from Harbor Foodservice, Scotty Getchell with US Foods and Kristine Bowen from Sysco on supply chain concerns. Topics included the cause of current shortages, gap expectations going forward, how to mitigate the shortages and opportunities within this environment.

Members told us contactless payment and POS systems that could support mobile/web ordering were essential to doing business during the pandemic. The association’s payment processing solution is powered by US Bank. Contactless POS Converge and talech waived monthly software fees and setup costs from April 1–September 30, 2020.

We also expanded our payment processing solutions to include a new white label program. We continue to guarantee a low locked-in processing rate for five years and we increased our POS selection that can connect to our processors. This put the freedom of choice back into the hands of members. Supported business insurance interruption lawsuits An unexpected result of the pandemic was insurance companies denying coronavirusrelated business income loss claims. On April 1, 2020, a law firm picked up this case on behalf of association member Ethan Stowell. In support of Ethan Stowell and members facing this issue all over the state, the Washington Hospitality Association joined this lawsuit on July 2, 2020. Later that year, two Washington state superior courts rejected the idea that carriers could deny coronavirus business income loss claims. This issue was later introduced as a bill in the Washington state senate as SB 5351 which unfortunately failed to pass due to strong opposition from the insurance industry. Washington Hospitality Association allied member Miller Nash Graham & Dunn and in particular Tristan Swanson, served as members’ go to resource for all business insurance issues such as carriers not paying out to members. Hospitality business insurance coverages The association has its own business insurance solution known as My Hospitality Insurance. Throughout this past year, we’ve performed policy audits, decreased policy amounts, found solutions for members and responded to all questions and concerns for members. The average member savings on annual premiums is 24%
with the same or increased coverage. Expanded APP manual to include coronavirus protocols On April 28, 2020, we expanded our Accident Prevention Program for participants in our RETRO, workers’ compensation program. New information was added to our manuals including: New required labor poster on the coronavirus for food establishments Health department best practices Distillery sanitizer options Anti-viral cleaning list from the Environmental Protection Agency Personal protective equipment exchange from the Federal Emergency Management Agency Cloth face coverings We increased our outreach to RETRO participants and HR professionals regarding education, retraining of staff and what they needed to do to stay in compliance with the new pandemic protocols. Added new delivery solution to offset third-party delivery costs With in-person dining out of the question for much of 2020, takeout, online ordering and delivery was crucial to survival. Third-party delivery helped fill that gap for many businesses but at a steep cost. In some places, third-party services were taking 30% from each receipt. In our industry where the margin is already razor-thin, this was an unnecessary burden for those who needed delivery assistance to survive. In late July of 2020, the association began partnership discussions with ShiftPixy. With this service, members could

move delivery in-house without paying any of those hefty insurance fees — that was all covered by ShiftPixy. They had a unique service that allowed businesses to retain control over their brand, the customer experience and food safety. The solution launched officially in October 2020 with a pilot program members could use to try this new product and reduce their risk. The pilot program gave: Free mobile and online ordering installation 30-days free delivery labor when five members in an area all used the service Added new technology HRMS solution allowing members to pivot with the unpredictable labor market In our state, the future was unclear and the ability to operate member businesses changed frequently. We hoped members would be able to re-open and in-person dining would resume but month to month, we didn’t know what would happen. This, along with the mandated closures, caused a never-before-seen shift in labor. When we brought ShiftPixy on as a partner, it wasn’t just about delivery. It was also about using technology to solve hospitality’s labor problem. We’ve heard from members time and again that employees deeply value the scheduling flexibility of hospitality. Pick up a shift here, trade with someone there. ShiftPixy allows employers to manage their employees’ schedules, adhere to all local, state and federal labor laws, and give employees the flexibility to apply for additional shifts. Unlike other Human Resource Management Systems (HRMS), ShiftPixy uses automation to autofill schedules and assign employees based on set parameters. A mobile app does all the onboarding and informs employees of upcoming shifts, reminds them when they’re scheduled and when open shifts are available. The technology does the heavy lifting and gets members back to running their businesses.

This solution saves time and money, while also continuing to give employees the flexibility they crave. This ability was crucial especially when an operator could be open at 25% capacity one week and 50% the next. Members needed the ability to up or downscale easily. Increased telemedicine coverage and added access to mental healthcare In August 2020, we added eight free mental health resources to our Healthcare Solutions and one low-cost telemedicine option through HealthiestYou. Our partners at UnitedHealth Group added a mobile app called Sanvello to their available services. It provided help and education for anxiety, stress and depression. Premium features were free to all hospitality workers through 2020. Furthermore, our partner, the Hospitality Industry Health Insurance Trust otherwise known as HIHIT, worked with Kaiser Permanente to allow employers to put their coverage on hold. This meant the policy could stay open to cover the administration staff that was left and be readily available to other team members when they returned. People still need to see doctors even during a pandemic. They still need prescription refills or consultations. Prepandemic, we already offered telemedicine options but since the pandemic those options expanded coverages and we added more choices. Telemedicine also filled a gap left by other insurance options. Employers could continue to offer this benefit to all employees, whether they were full-time, part-time or furloughed. Our Telemedicine options include: Teladoc Basic 24/7/365 access to doctors by phone, video or mobile app Short-term prescription refills Non-emergency ER or urgent care visits

Tests could be purchased for $107 per test for a minimum order of 20 tests. The tests allowed for at-home sample collection, and employees received results in 24-48 hours and could track the test in real-time. Members received 20% off their order with a special promotion code. On February 24, 2021, the pricing was lowered to $86 per test and expedited shipping was included, exclusively for members.

Waived fees on pretax-eligible expenses Alice, one of our partners for Healthcare Solutions and HR Solutions, also waived fees for members for as long as government actions impacted a business’s operations. If government actions impacted a business’s operations, which for us meant a year of relief, Alice waived all employer fees.
Alice automates pretax benefits to add money to employees’ paychecks when they spend on pretax-eligible expenses, such as out-of-pocket medical, child and adult care and community costs. Employees using Alice add an average of $583.06 to their paychecks – a free $0.25/hr. Employers also receive a substantial payroll tax reduction. Information network: Partners came to us as soon as they learned news about grants or funds GNSA, a HRMS and payroll partner for HR Solutions, was the first to let us know about the Small Business Administration Paycheck Protection Program. As soon as they received additional details about the program launching and how members could take advantage of it, they shared this information with us. This information was entirely unrelated to their partnership. Their only interest was in seeing our membership thrive. Members receive a 41% discount on payroll services and 20% off other modules when using GNSA. In addition, to payroll, they also have modules for time and attendance, scheduling, HRMS, leave and many more options. Access to loan assistance and tax relief Allied members worked on behalf of members throughout the past year, from advising to lobbying Congress of their own accord: Premier Capital Associates were available for consulting and advisory services for hotels. US Bank introduced a new credit card specifically for small businesses. This card had a 0% introductory APR on purchases and balance transfers for 20 billing cycles. US Bank also reduced pricing on two loans in 2020: Quick Loan and Cash Flow Manager. Chase McKenzie Management lobbied Congress for hospitality tax relief on March 16, 2020.

Adapting training and education from in-person to virtual By Alina Day Training is a necessity even during something as unforeseen as a pandemic. Over the past year, we’ve seen a dynamic shift in the way training has been offered. Pre-pandemic, the Washington Hospitality Association ran several inperson ServSafe Manager classes all over the state in any given month. Suddenly, we had to cancel all our classes and our registrants were left in a suspended state.
ServSafe introduced online proctoring for ServSafe Manager
Pre-pandemic, online proctoring was simply not allowed. Registrants could take the course online, but the exam had to be administered in-person by a proctor. The coronavirus changed all that. Starting in June 2020, ServSafe announced they were allowing online proctoring. This was a gamechanger for the association and its members. Employees could now get certified anywhere in the state whenever they needed to. It was introduced at a discounted rate of $134. The price included course, exam and online proctor and was available to members through July 31, 2020. After July 31, the price increased to $179. Through this new offering, we trained 113 industry workers in 2020. Employees were able to renew their certifications and stay competitive as hospitality reopened. In April 2021, we began hosting in-person classes once again. Although coronavirus restrictions limited class capacity, we resumed the same training experience employers have come to expect from us. With our in-person classes, our trainers conduct a four-hour review prior to the two-hour exam. This is unique to our classes and not

something that can be provided through the online course or proctoring. As Washington reopens, we are securing additional class locations and scheduling more classes around the state. Be sure to look at our e-newsletters and website for upcoming classes.
Hosted virtual education events for ProStart students
ProStart, a culinary and management training program for high school students, also experienced a shift. During “normal” times, education is conducted through in-person classes and field trips to various restaurants and businesses around the state. Fortunately, Washington Hospitality Association’s sponsor Sysco, stepped in to bring the field trip to them. Chef and culinary consultant at Sysco, Tselani Richmond, excitedly offered to do two videos for ProStart students. The first video focused on culinary/hospitality career pathways, culinary schools and why culinary is still important during the pandemic. The second was a tutorial video on how to make macarons. Together, the videos garnered over 120 views. ProStart educators enjoyed the videos so much they asked Chef Tse to be a guest speaker for their classes.
Access to free or discounted training
With the coronavirus came a sudden and urgent demand for pandemic-related training. The National Restaurant Association and American Hotel & Lodging Association (AHLA) created new free training to fill that gap: Coronavirus takeout, delivery and reopening. Restaurant Professional and Restaurant Supervisor learning suites in ServSuccess. American Hotel & Lodging Educational Institute: Supervisory Skill Builders, Hospitality Manager Leadership training series and Certified Hospitality Administrator training review. Protection from pandemic-related employment litigation.
The ServSafe Dining Commitment and AHLA’s Safe Stay In August 2020, ServSafe came out with the ServSafe Dining Commitment. This commitment was created to communicate to potential diners the steps restaurants were taking to protect them. Members who made the
commitment pledged to adhere to the National Restaurant Association’s Reopening Guidance and train staff on core food safety procedures and supplemental coronavirus precautions. Additionally, those who committed received: A digital marketing kit to promote their safety commitment. Their location added to ServSafe’s searchable database for the dining public. A coupon for 20% off ServSafe products. Access to ServSafe’s library of food safety posters. Similarly, the AHLA came out with Safe Stay in July 2020. The initiative focused on enhanced hotel cleaning practices, social interactions and workplace protocols to meet the new health and safety expectations of the pandemic. Safe Stay represents a united industry approach and is endorsed by all major U.S. hotel brands, hospitality associations in all 50 states and Canada, and thousands of hotel properties across the country committed to ensuring the health and safety of guests and employees while continuing to provide outstanding service. Additionally, those who committed received: Access to on-demand training called Coronavirus Precautions for Hotels for $5, which included health reporting, conflict de-escalation, disinfecting procedures and more. Ask the Expert: Now Open, Now What? By Rick Braa, CHAE
With the Governor of Washington opening the state 100%, how do I reset my business for operations going into the busiest time of year? After over a year of roller coaster closures, partial openings, hopeful moves forward in capacity and indoor dining, devastating moves backward and struggles of a world turned upside down, it’s time to prep to open available capacity to 100%. One of the most difficult riddles to solve is the timing of opening. Seasonal restaurant sales often double or triple non-season sales. This is just one of several issues facing the industry as it reopens. For the best beginning: Control the flow from all directions: reservations, door, third-party, operating hours. One of the lasting positives of the past dreadful year is the opportunity to control opening and closing hours as well as seating and third-party delivery orders. Restaurants traditionally opened and closed the same hours most days with increased hours on weekends. Many restaurants have unprofitable hours of the day. Since the world was disrupted over the last year, consumers have better training on checking hours of operation for businesses and accepting limitations on seating. Now is the time to drive sales per operating hour by optimizing opening/closing hours, reservations and third-party delivery platforms. Stay closed on unprofitable hours and open only when you are properly staffed, service can be flawlessly executed and profitably can be maximized. Compete on culture not wages. Higher wages are inevitable and to afford higher wages productivity and retention must increase. Paying the most can help but having a strong culture where the staff knows they are making a difference is more important than the highest wages. Tie your culture to a platform for impacting the community and your staff will thrive. Train, train, train—repeatedly. Increase pricing. During the pandemic consumers used third-party platforms to support their desire for tasty

restaurant food and beverage. Prices may have been the same for the items being sold but the premium of delivery charges added to the cost of a meal. Consumers were trained to pay more for restaurant quality product. Shortages in the supply chain are increasing cost of goods and services. Labor shortages and minimum wage increases are requiring higher wages. Take advantage of the consumer retraining and increase menu prices thoughtfully and carefully. The impact on margins is not one for one. For example, if prices are increased 10%, margins increase less what is directly paid on sales, e.g. credit card fees and percentage rent. Costs may increase 10%, netting 90% of the price increase. A base sales decline, however, will have higher variable costs as a percentage and likely have a cost reduction of a minimum of 40%. If sales were 1,000,000 per year, the new sales number would be 1,100,000 and if margins were 10% net prior to the increase, the new margin would be 190,000 or 17% based on a 10% increase in variable cost. If base sales decrease 10% as a result of a 10% price increase, the cost of that 100,000 sales loss is 60,000 by avoiding 40% variable cost. The net is 30,000 margin increase even though sales stay the same. If guest counts stay the same, that 90,000 margin increase stays in the business. While guest counts may decrease from higher prices, keep in mind your guests are glad you’re back and willing to pay for it. Reduce the size of your menu by 10%-20%. If you haven’t already, decrease your menu size and keep it tight, increased execution and productivity will reward you. While it has been a devastating and trying year, the beginning of the next chapter is here. Control and drive your business strategically, attract and keep the best people, train like crazy, take a price increase and keep your menu small and tight and your profits will put this trying year well behind you.
