A Family Affair by Sarah Teach Joe Donelan isn’t one to grab the mic and crow about his winemaking prowess. In fact, it’s hard to even get him to talk about himself. But catch him for a chat, and you’ll find the founding owner of Donelan Family Wines casts a calming spell over his conversations, honing in on the reasons we drink wine rather than on the minutiae of each beverage. This is not to say the long-time seasonal island resident hasn’t earned his grape stripes. Donelan’s California winery consistently produces wines that tip Roberrt Parker’s Wine Advocate scales into the 90s. (Hats off and jaws dropped to their 100-point 2009 Syrah.) How did this former paper executive reshape his ambitions into a successful boutique winery? The year was 1989. The place: Topper’s Restaurant on Nantucket. Donelan was sitting down to a nice dinner with his wife, Chris, when the sommelier drew near. It went something like this: Donelan: “Any suggestions for a pairing with the tuna tartare?” Sommelier: “How about this ‘87 Sauvignon Blanc?” Donelan pressed the sommelier, Michael Fahey, for details. And more details. And then more. Fahey remembers vividly this man who made it clear that he was an eager wine student. “There were a lot of people who liked Topper’s,” Fahey says, “but Joe was on a mission. He started coming in two or three times per week, probably to the chagrin of his wife. I imagine she was thinking, ‘Geez, Joe, Topper’s is good, but don’t you want to switch it up and go to the Galley once in a while?’” Fahey continued: “When I first met Joe, he told me, ‘I don’t play golf. I don’t belong to a country club. This is my hobby, my passion, and I have elected you my teacher.’” What began as a quiet curiosity blossomed into eight years of journeying into France, where Donelan would learn from Fahey and his world-class wine contacts. If there is such a thing as a wine bug, Donelan definitely caught it in France. Fahey’s tours to Europe were billed as educational trips, not relaxing vacations. This suited Donelan just fine. “Everyone on the tour was interested, of course,” says Fahey. “But Joe thoroughly submerged himself in the topic.” Donelan always carried fresh pads of paper that turned quickly into creased sheets

scrawled with notes. “Sometimes,” says Fahey with a chuckle, “we had to give him the ol’ elbow in the gut, like, ‘Come on Joe, we need to move on!’ He was just so driven to learn.” Fahey recalled, “When I met Joe, all he could really drink was California chardonnay. I weaned him off of that and onto French wine. This was partly because I love French wine, but also because even great rock and roll bands do best if they learn classical first. In France, you go to these amazing vineyards and see the beauty of passing winemaking down through the generations, perpetuating the family love. It can take a whole lifetime to understand a vineyard. You knock on a drab wooden door, but then enter a winery with a 530-year history of unbroken father-to-son winemaking. And that,” finishes Fahey with a flourish, “is where Joe learned about wine.” Call it obsession, passion, or both. Whatever it was that overtook Donelan in France, it paid off. Each time he’d return to the States after a trip to Europe, heard Donelan Sonoma County singing a siren song to him. Eventually, the music grew too loud to ignore. At the turn of the millennium, Donelan shed his corporate suit and Tripp, Joe, Joe Nielsen, Cushing took up the vine. Thanks to years of fervent study, success wasn’t that far ahead of him. With the help of a young winemaker, a 2003 vintage of Syrah garnered 100 points. After accolades arrived from influential critic Robert Parker, the wine world started to take notice of the little winery. Nantucket Wine Festival founder Denis Toner continued on page 13

Magical Kingdom of Vernal Ponds Marsha Egan

by Dr. Sarah Oktay, Director, University of Massachusetts Nantucket Field Station Spring is vernal pond season. All over the island, creatures who have adapted to the unusual conditions that are inherent in a vernal pond are hatching and going through a variety of stages as they progress to become the fairy shrimp, salamanders, frogs, dragonflies, mosquitoes, and other aquatic insects they were destined to become. Vernal ponds are temporary pools of water usually created by spring rains, melt-water from ice and snow, freshwater seeps, and groundwater. These ephemeral or fleeting ponds got their name from the Latin word for spring (“vernal”). Some vernal pools can be created by fall rains (autumnal”) and may even persist over the winter, although they normally dry completely by the middle or end of summer each year, or at least every few years. Typically they have no natural outlet or stream for water to drain into or out of the system; they are dependent on the vagaries of snow and rain. Because vernal ponds dry up, fish cannot survive in them, so the creatures that make them their home are safe from fish but they have to adapt to drying conditions and the loss of lifesustaining fluid. This blooming of creatures from the muddy or dry bottom always remind me of some magical place, and the creatures that live in them have a phoenix-like ability to survive, in some cases for years, before hatching. Vernal pool habitat is extremely important to a variety of wildlife species including some amphibians that breed exclusively in vernal pools, and other organisms such as fairy shrimp, which spend their entire life cycles confined to vernal pools. Massachusetts was one of the first states to formally recognize vernal ponds and develop regulations protecting them as special habitats of concern. This season, the Artists Association of Nantucket (AAN) gallery will host fourteen unique exhibitions at the Cecelia Joyce & Seward Johnson Gallery, located 19 Washington Street. Dimensional Perspectives–this year’s only exhibition that focuses on 3D elements–will open with a festive reception on Friday, May 16, 6–8 p.m. in the Cecelia Joyce & Seward Johnson Gallery. The exhibition, generously sponsored by Champoux Landscaping, will be on display through May 26. “At times artists enjoy a departure from their usual style, and while not a requirement, we are hoping many will go outside their norm and add some 3D components,” said AAN curator of exhibitions Robert Frazier. “It is not unusual for some of our artists to incorporate ‘outside objects’ into their work, normally referred to as mixed media, but we’re excited to showcase more than usual in this exhibition.” Also on display until May 26 is Tree/Cloud/Bird/Time, an installation by longstanding AAN artist member Ginger Andrews. The artist used objects of nature paired with the softness of woven silk, enhanced by theatrical lighting. Andrews, an ardent birder, supporter of the local arts and theater–who for many years provided all the lightening effects for the Theatre Workshop of Nantucket–has used her love of nature along with her lighting expertise to create an intriguing display suspended in mid-air. Andrews says, “My work in the theatre gave me an appreciation of the ability of light to direct attention and shape perception. The use of electronically controlled lighting in a non-theatrical setting allows me to add the dimensions of change and time to a sculptural arrangement of silk fabric and tree branches. I wanted something that would steal up on the viewer and catch their eye unexpectedly,” the artist said. “The piece can be viewed from any angle—up, down, or sideways—and picked up at any moment, although the full sequence takes just over half an hour. Falling in Love With Wine Fest by Jenny Benzie Advanced Sommelier + Certified Wine Educator, Proprietress of Épernay Wine & Spirits May has arrived, and everyone is revving up for the Nantucket Wine Festival (NWF). This is, by far, my favorite annual event on island. Not just because the entire weekend revolves around wine, but also because it is how I was initially introduced to Nantucket in all its splendor. This is my story about a place that I am glad to now call home. While working as the Wine Director at Café Boulud in Palm Beach, I met several servers who spent the summer season working on Nantucket. They told me about the NWF and suggested that I volunteer for it. I got in touch with NWF founder Denis Toner, found a place to stay, and off I went… thirty miles out to sea! I volunteered at NWF for four years before the opportunity finally arose for me to spend the whole summer on the island. Since then, I never looked back and have even brought a few more washashores to Nantucket along the way. My first year attending NWF was 2006. I made arrangements to volunteer at as many events as I could. There were so many to choose from! For starters, the Harbor Gala is a “must-attend” every year. I served as sommelier for the Great Wines in Grand Houses (GWGH) dinner at East Brick, a newly restored historic Main Street mansion. At that time, Mark Goldweitz owned the home. Little did any of us know that seven years later, Mark would become the new owner of NWF. That weekend, I attended the Grand Tasting, which was held in a tent at Jetties Beach. There I became friends with a sommelier from Fahey & Fromagerie, a fantastic wine and cheese company owned by Michael Fahey. Sunday morning's highlight was the Veuve Clicquot brunch. That evening, I attended a winemaker dinner at Topper's with Cellar Master Craig Hanna. There I met winemaker Alex Gambal, learned his story, and discovered his wines. After experiencing my very first NWF, I had so many good memories. I was impressed that the entire weekend went off without a hitch. watch the

The 2007 festival rolled around, and my wine-loving friend Rebecca came with me. We had traveled to Burgundy together the previous year, where we tasted with Alex Gambal and visited Denis Toner's home in Beaune. If you were at the 2007 festival, you may recall that the weather was cold and rainy. This was not something for which we Florida girls were prepared! On the evening of our GWGH dinner, it was one of those “Grey Lady” kind of days. But the hosts’ out-of-town residence still had a breathtaking view of the water. The chef was Patrick Ridge, who then served as the hosts’ private chef and now owns Island Kitchen. Assisting him was Tony Nastus, currently Chef de Cuisine at Le Languedoc. Sunday night, I attended Topper's winemaker dinner, which featured August Kesseler from Germany. After a one-year hiatus, I returned to NWF in 2009. This time, I brought with me two chef friends from Café Boulud in New York. I recall several highlights from the 2009 NWF. I was back in East Brick for the GWGH dinner. This time, the dinner was hosted by the home’s new owners, the Wackenhuts, who I knew from Florida. I met Skip Bennett and his team from Island Creek Oysters. (I’ve since been to visit Skip's oyster farm!) That year, I also worked at the Burgundy Roundtable, which featured Laurent Drouhin, whom I had met while working as a sommelier at Caneel Bay Resort on St. John. Sunday night, I enjoyed dinner at Topper's sans winemaker, but am glad to know that there is a Drappier Champagne dinner happening this year! After having volunteered for four years, I was asked to come work as a sommelier at the 2010 NWF. I did the Burgundy Symposium again, the Champagne Tête de Cuvée tasting at the beautiful new Great Harbor Yacht Club, and was back at East Brick (third time’s the charm!) for the GWGH continued on page 19

NWF: A Marathon for the Senses by Leah Mojer For those of you who, like me, suffer with aching anticipation for Nantucket’s many exciting events, then you know just how excruciating waiting for wine fest can be. New Bus Service for Fast Ferry Riders As a result of dramatic growth in fast ferry usage over the past few years the NRTA Advisory Board, in conjunction with the Board of Selectmen, recently approved a new, comprehensive Park & Ride bus system for this summer season. The service will operate from May 22 to mid-October 13, 2014 daily from 7 a.m. to 8 p.m. This is a pilot program and, if it is successful, the NRTA will continue to operate it in the future. Buses will run between the Park and Ride lot located at 2 Fairgrounds and both Hy-Line Cruises and Steamship Authority fast ferries. The connections will be timed to meet each arriving and departing fast ferry throughout the day until 8 p.m. Parking is free and is available overnight with free fares on the bus for boat users, thanks to financial contributions from ReMain Nantucket, Hy-Line Cruises, The Steamship Authority, Nantucket Island Resorts, Stop & Shop, The Nantucket Hotel, and Nantucket Bank. The goal of this program is to alleviate congestion and reduce the number of vehicles presently parking in town when their occupants use the fast ferry services. Although everyone using the fast ferries of both Hy-Line and the Steamship Authority will be encouraged to use this new service, one of the primary goals is to reduce the number of off-island commercial vehicles left overnight in town and to provide an easy overnight parking solution for islanders leaving the island. The Park and Ride Lot at 2 Fairgrounds Road is a convenient choice for overnight parking, and there is a large area available to park cars on this town owned site. Because it is bisected by many of the islands major roadways, the lot is perfectly situated as a park and ride and shuttle bus location. Natural Heritage & Endangered Species Program “Guidelines for the Certification of Vernal Pool Habitat” lists a description of the two types of species used along with physical criteria to distinguish a vernal pool. They are: “Obligate Species: vertebrate and invertebrate species that require vernal pools for all or a portion of their life cycle and are unable to successfully complete their life cycle without vernal pools. Facultative Species: vertebrate and invertebrate species that frequently use vernal pools for all or a portion of their life cycle, but are able to successfully complete their life cycle in other types of wetlands.” According to the Vernal Pool Association (an excellent resource for teachers found at www.vernalpool.org/vernal_1.htm ), in New England, the most easily recognizable obligate species are organisms such as fairy shrimp, mole salamanders, and the wood frog. We do not have mole salamanders here, but our trusty State Reptiles and Amphibians list (link below) lists Spotted Salamanders (Ambystoma maculatum) and Eastern Red-backed Salamander (Plethodon cinereus) as two species of salamanders that we do have roaming the vernal ponds of Nantucket. Currently, students at the Nantucket Field Station are conducting a survey on the various “morphs” or color varieties (red striped versus gray/black striped) that are exhibited by P. cinereus. Our primary obligate species on island and at least a runner-up in any “coolest creature” contest is the fairy shrimp. Our primary facultative species (and one of the best ways to find these well hidden ponds) is the spring peeper, our loudest harbinger of spring. If ever a creature was aptly named, the fairy shrimp [Eubranchipus vernalis and the less common E. intricatus] is it—from their upside down swimming behavior (common for all the species in the order Anostraca) and forked white tails to the delicate manner in which the females protect the encysted eggs in a brood pouch. These inch-long crustaceans, whose diaphanous bodies are tinted in varying shades of blue, orange, or yellow, are as ephemeral as their habitat. Arts & Crafts in Historic Nantucket The Nantucket Historical Association (NHA) is pleased to announce another exciting season of historic arts and crafts courses at the 1800 House. Inspired by Nantucket history, the NHA 1800 House program is dedicated to celebrating and reviving Nantucket’s rich tradition of historic decorative arts and crafts. Classes take place in the restored early nineteenth-century historic property at 4 Mill Street and are taught by artisans from Nantucket and around the world.

Upcoming 2014 classes highlight the arts of woodcarving, needlework, painting, scrimshaw, letterpress printing, ceramic transferware, shell work, and much more! world are off of my shoulders.” Today, the Donelans enjoy their home on serene West Miacomet Road as often as they can. “We’re sort of billed as the Nantucket Wine Festival’s ‘local’ winery,” he says. “Our whole family loves it here. It’s a great place to get family time. It’s so peaceful. The swimming, the beautiful beaches, the people. The sky and landscape. It’s all very, very therapeutic.” Cushing likens the family’s wines to Nantucket in their purity. “Nothing added, nothing taken away,” he recites. “We strive to make our wine as pure an expression of the fruit as possible. And with wine – just like Nantucket – every day is different. We’re dealing with Mother Nature here.” The entire Donelan family knows their way around Nantucket’s food and wine scene. Joe Donelan proudly reveals that all four of his children have worked in the restaurant business on the island. Cushing attributes the gentleness of his own wine learning curve to his parents’ European approach to raising kids. “There’s a big difference between Europe and the U.S.,” says Joe Donelan. “Most Americans weren’t brought up with wine, so their introduction to it comes through cheap brands like Yellowtail. Europeans serve wine with water at meals. For them, it’s a celebration of being alive, a chance to review the activities of the day. If you’re reflective, wine gives you an opportunity to be thankful for a lot of things. Wine should give you pleasure.” At the 2012 Nantucket Wine Festival, I confessed to Donelan’s then-winemaker Tyler Thomas that I didn’t know how to drink wine properly. Thomas smiled, handed me a glass of his pinot noir, and asked a simple question: “Does it give you pleasure to drink this?” It did. Wine really is that easy. Its creation may be complex and highly variable, but the end goal is always the same: to enhance our experience of life. And Joe Donelan of Donelan Family Wines is living, breathing, winemaking proof.

invited Donelan to participate in the prestigious event, and the Donelan brand grew an East Coast client base. To boot, the festival quickly became the Donelans’ favorite excuse for an annual family reunion. “It’s a homecoming for us,” says Cushing Donelan, the youngest Donelan son and the winery’s Director of Marketing. “What’s unique about the Nantucket festival is that our family members are pouring your wine.” Some wineries bank on flashy marketing to make a quick buck. Donelan Family Wines entrusts its handiwork into the loving arms of authenticity and dedication. Joe Donelan personally calls every new customer, and handwrites thank-you notes with each order, whether it’s for a case or a single bottle. “My dad is a romantic,” says the eldest Donelan son, Tripp, who serves as the winery’s Director of Sales. “He’s a big believer in personal touch and going out of his way for the customer. And despite his third grade handwriting,” adds Tripp with a grin, “He cranks those notes out and loves every minute of it.” The winery’s team is made complete by winemaker Joe Nielsen (or “Little Joe,” as Tripp has affectionately dubbed him). Nielsen took over the winemaking after Tyler Thomas’ 2013 departure. (Tyler Thomas fans, have no fear; he continues to consult at Donelan and has utmost confidence in Nielsen’s expertise.) Tripp says, “We’re a small brand family business with topnotch customer service. We’re the best winery you’ve never heard of!” As a winery owner, Joe Donelan has been all over the world, but reserves his highest regards for this tiny island. “Some people complain about the ferry. with Carissa Mondavi of Continuum and Boston chef David Bruce. The weather was perfect. The Grand Tasting spilled out of the tent and onto the lawn at the Nantucket Yacht Club. And I finally stayed on-island for my first summer experience.

The festival has experienced some great changes under the ownership of Mark Goldweitz and leadership of Nancy Bean. The fun, jovial concept of La Fête, which is similar to Burgundian celebration La Paulée, has been introduced. The number and diversity of NWF seminars has increased, and now includes top sommeliers from around the US. While I have participated as a sommelier for other eminent wine festivals, nothing pulls at my heart strings as much as NWF. Being on an island makes each event so much more intimate. Our interactions with winemakers are more personal. And the connections we make during the course of the weekend always bring us back to the Grey Lady. The relationships cultivated over this weekend are real and linger longer than the fog. that fall to the bottom of the pool. The eggs go into suspended animation when the pool dries out, sitting in the sediment for months or years, if necessary, until the pool fills up again. These eggs can even survive ingestion by animals! Once immersed in water, like magic “sea monkeys,” the creatures come to life, breed and die, all in as few as 15 days. While the fairy shrimp are around, they serve as an important food source for hungry waterfowl and other birds migrating north during the spring. And yes, the similarities to a “Sea Monkey” or brine shrimp are not accidental. Fairy shrimp (Anostraca) are invertebrates that include brine shrimp (genus Artemia (i.e., “Sea Monkeys,” boxtop not included). There are about 300 known fairy shrimp species. While a few fairy shrimp species live in salty environments (hence the name brine shrimp), the majority of fairy shrimp live in fresh water like our local friends. The fairy shrimp found in vernal ponds on Nantucket in areas like Squam Swamp are orange in color due to a combination of higher levels of hemoglobin created to accommodate and facilitate oxygen transport in water known for lower oxygen levels and carotenoids in the phytoplankton and microscopic detritus they eat. In the spring, oxygen levels are high and the water temperature is cold, but as temperatures increase and the water level drops (and decomposition increases) the oxygen levels drop. The race to complete all the stages in an organism’s life cycle before the pond dries up is also complicated by a delicate and highly orchestrated dance of larval emergence and development observed in many species of vernal-pond-loving insects, dragonflies, salamanders, frogs, and crustaceans. Each group’s appearance is carefully timed to include optimal egg laying, die off or sequestering in the mud, or haul up on land (or into the sky for the dragonflies and mosquitoes) before their primary nemesis comes along. The fairy shrimp are an excellent example of this as they come out very early in the sequence of larval development and are gone before too many other predators show up. ing die offs that have been attributed to an inability to escape a pond quickly enough in the tadpole stage before a pond dries up prematurely when surrounding trees are cut down that provide shade protection. On Nantucket, the Nantucket Land Council has traditionally been the advocate for documenting our vernal pools, and they offer excellent vernal pond field classes. Habitat destruction is the major threat to vernal ponds. Often, people mistake seasonally wet areas as unimportant and proceed to fill in or drain these critical habitats. Sometimes landowners believe that by making a vernal pond permanent (by digging it bigger and deeper) they are increasing the value of the area for wildlife. And diverting groundwater for other uses, whether in filling private ponds or by building culverts in areas not suited for them, can lower groundwater areas and permanently dry up these critical resources. Tree cutting and buffer removal takes away two very important defense mechanisms; the lack of shade causes premature desiccation and removal of the leaves means that they are unavailable to provide habitat, hiding spaces, and decaying organic matter to feed the creatures and bacteria in the pools. Vegetated buffer zones around vernal ponds keep silt out of the vernal pond. Excessive silt can fill in a pond and also suffocate the delicate salamander and frog eggs. Sadly, many ponds are filled in, or altered in some way long before they are documented or even known to exist. A vernal pond can be simply a low spot in the summer. It is estimated that in California, perhaps only 7% of the vernal ponds are still intact. Even of more concern are the lower diversity and incidences of mutation observed in many species of animals that live in these habitats. Amphibians are declining worldwide due in great part to their ability to absorb chemicals and moisture through their skin. Amphibians are indicator species for pollution and vectors that act as early warning systems. And the other creatures that live in vernal ponds are especially susceptible to land use changes and mismanagement and they deserve our protection.

Where You Get Quality & Quantity There’s a local joint on Easy Street where you can start your day with a bountiful breakfast that won’t break the bank, and it doesn’t matter if your day is starting at 7 am or at 7 pm! Easy Street Cantina serves breakfast from the time they open until 10 pm, so you can have breakfast for lunch and breakfast for dinner as well as having breakfast for breakfast. But breakfast is not all they serve: their m e n u includes an Pancakes array of hearty sandwiches, burgers, fajitas, tacos, burritos, salads and wraps, fresh seafood, and finger foods. Monday through Friday they offer All-You-Can-Eat Buffets with a different featured entree each day that will satisfy even the hungriest appetite for under $12! This is one place on Nantucket where you don’t have to choose between quality and quantity. From the street, Easy Street Cantina has the usual Nantucket look: low slung with gray shingles, but step inside the door and it’s fiesta time! Every wall is painted in a festive color and adorned with fun and whimsical south-of-the-border wall-hangings, sculpture, and there are even a couple of jaunty neon signs. Six different versions are served, each one under $7 —the simple Egg and Cheese Burrito is under $6 — and if you prefer a breakfast sandwich, the burritos can be made on a grilled roll or on a bagel instead of wrapped in a warm flour tortilla. The Monday Buffet featuring Prime Rib is a favorite and sometimes sells out. The Fish Fry Buffet beef is liberally seasoned with Bartholomew’s Secret Spice (a distinct blend of more than 17 different herbs and spices including garlic, onion, Nantucket sea salt, paprika, pepper, and turmeric but no msg) and slow roasted till the exterior is deliciously crusted while the middle stays succulent and pink. Slices are cut to order, and the buffet includes horseradish, lettuce, tomato, and rolls to make a sandwich. There is often an extra side like sauteed mushrooms and onion. 1 cup Pumpkin or Sunflower Seeds 2 cups Almonds 2 cups Unsweetened Shredded Coconut 1/2 cup Olive Oil 1/2 cup Peanut Butter 1/4 cup Honey 2 Tbsp. Ground Cinnamon 1 Orange, Juiced & Zested Dried Figs, Cherries or Raisins Preheat oven to 325 degrees. In a large roasting pan, mix oats, flaxseed, seeds, nuts and coconut. In a medium microwave-safe , mix oil, peanut butter, honey, cinnamon, Orange Juice & Zest. Heat in microwave on low heat until melted, about two minutes. Add liquid mixture to dry mixture; mix well. Bake 20-30 minutes until golden brown, tossing every few minutes; cool. Add dried fruit to mixture if desired. Enjoy Granola over Greek Yogurt with fresh seasonal fruit, or as I like to eat it, out of a mason jar I keep in my car’s cup holder! Makes about 11 cups

BLACK BEAN SALAD WITH GRILLED CHICKEN & BABY KALE WITH CREAMY AVOCADO DRESSING A few bites of this make-ahead salad and you will be ready for the Gala in no time. The flavors will improve over night so make sure to make enough for lunch the next day! 2 cans (16 oz each) Black Beans, rinsed and drained 1 Organic Chicken Breast, Grilled, cooled & chopped. 1/4 c Chopped Fresh Parsley, Cilantro or Mint, or all three 2 Tbsp minced Red Onion 1 handful Cherry Tomatoes, halved 1 C Corn Kernels Baby Kale Combine all ingredients & toss with Avocado Dressing. Can be made one day ahead. Mix in Baby Kale just before eating.

CREAMY AVOCADO DRESSING 1 Avocado 2 Tbsp Olive Oil 2 Fresh Lemon Juice 1 tsp Honey 1 tsp minced garlic Salt & Fresh Ground Pepper, To Taste Blend all ingredients in a blender. Season to taste.

If blending just be sure to peel beets & ginger, and strain through a sieve. Can be kept up to 24 hours, but better to drink right away. Now back to the wine! The parties have quieted, the day trippers have gone home, and the foodies are all detoxing, but you still have some fabulous wine leftover and inevitably, an appetite for a fine, yet easy dinner. The diet can wait, this is Wine Fest!

PAN SEARED STRIPER

WITH

RED WINE MISO BUTTER

Serves 4 4 6 oz. Skinned Striper Filets Salt and Freshly Ground Pepper Vegetable Oil 6 Cups packed Mixed Greens, Arugula or Spinach 1 1/2 C. Dry Red Wine 1 large Shallot, Minced 1 Stick (Gasp!) Cold Butter, Cubed 1 T White Miso Paste 1/4 teaspoon Soy Sauce In a skillet, boil wine and shallots over moderately high heat until reduced to 1/4 cup, 10 minutes. Reduce the heat to moderate. Gradually add the butter to the skillet and whisk constantly on and off the heat until the sauce is creamy. Remove from the heat and whisk in the miso and soy sauce; season with salt and pepper. Keep just warm. Heat a non-stick pan until very hot, Brush the cod fillets with oil and season with salt and pepper. Place in Pan and Sear until golden and flip once until just cooked, 4 to 5 minutes each side. In a large skillet, heat 1 teaspoon of the oil until shimmering. Add the lettuces and toss over high heat until barely wilted, about 30 seconds. Transfer the lettuces to plates and top with the fish. Briefly rewarm the sauce, whisking, over moderate heat. Spoon some of the sauce over the fish and serve.
