Celebrating “In the Art of the Sea” The Artists Association of Nantucket (AAN) is celebrating island life in a timely exhibition entitled In the Art of the Sea, opening with a reception on Friday June 12, from 6 to 8 pm in the Cecelia Joyce & Seward Johnson Gallery, 19 Washington St. The exhibition will be on display until June 29. “In the Art of the Sea is an art exhibition that celebrates our unique island perspective, both marine and maritime. The visual possibilities encompass imagery of our history, scenes of the wharves and harbor, boats from dories to regatta ships, marine mammals to shore birds, beachscapes to cloudscapes—any art with a bit of salt in its works,” said Robert Frazier, curator of exhibitions. “We are looking forward to seeing what our artist members have for this themed-show,” AAN executive director Cecil Barron Jensen. “It will be a good chance for them to have fun with a rich Nantucket story and the island’s fascinating past with the sea.” An added gallery feature during this exhibition will be the 4th Annual Plein Air Nantucket Festival held mid-way through the In the Art of the Sea exhibit, from June 18-21. This special adjunct of the gallery exhibition will showcase artists painting along the shores and harbor, from Steps Beach to Great Point. Upon completion, the new works created during The Plein Air Festival will be on disply in the gallery. The Solo Show Spotlight Artist during In the Art of the Sea is Meredith Hanson, who will discuss her work in oils during our Spotlight Artist Talk on Saturday, June 13 at 10 am in the gallery, 19 Washington Street. In the Art of the Sea will be on display from through June 29 at the Cecelia Joyce & Seward Johnson Gallery, 19 Washington Street. The gallery is open Monday–Saturday, 10 am to 5 pm and Sunday 11 am to 4 pm.

Education ends and begins in the spring. The high school had its graduation in the auditorium; the parents and well-wishers watched as the students moved their tassels from one side to the other and then it was done for them. They went home to parties and presents, firm handshakes and Instagram posts that faded into a gentle Sunday at the beach and then another day of work. Another education begins on the job. The Honor Society will find itself on registers, behind counters, and manning the back of the Santos trash truck as the summer starts. As real as any other apprenticeship, the young would learn the ways of the lawnmower and the cash register. More importantly, the privileges of youth dropped away to the duties of the adult. You were an equal to the other dishwashers, responsible for all that everyone else was responsible for. You came to work just like everyone else, left with everyone else, and drew a paycheck like everyone else. If you skipped out on work, everyone else had to pull your weight. Your mother couldn’t wipe it away with a note. As Nantucket has become more of an International Resort, our tolerance for high school workers seems to have slipped. They arrive too late in the season, leave too soon, and don’t present the appearance that an International Resort demands. Our clientele demands top shelf service, whether it be on the Westmoor Tennis Courts or on the strip. Further, the perceived demands of the elite colleges make internships and special projects more desirable. Our sons don’t learn to maintain the lawnmowers, they build orphanages in Guatemala. Harvard’s admissions office prefers Central America to Middle America. And they may be right. The world changes while we look backwards into the gauzy beloved past. I am sure that rebuilding a Tibetan village is more valuable than shotgunning Miller Lites and watching “Monty Python and the Holy Grail” on VHS in the lifeguard station. My summer education generally encompassed holding boredom at bay with a mop and a book. I have had more than my share of menial jobs. I was a lifeguard and a prison guard, I was a bouncer and a bartender, I painted houses (poorly) and made plastic coffee stirrers. I had a dozen other jobs as well, all of which have disappeared continued on page 10

Over the past few weeks, a deceased Risso’s Dolphin has been seen off Madaket, as its sad corpse is returned to the shoreline by incoming waves. At
least three people have emailed or texted me to ask about this creature, so I thought it would be a timely subject for this week’s column. In an Inquirer & Mirror article on bicycling, Max Wagner wrote on June 13, 1896, “The miracle that the bipede has wrought all over the civilized world has probably been nowhere more pronounced than on this beloved sand heap of ours, that the world generally knows as the island of Nantucket.” The first bicycles arrived on Nantucket in the 1880s and were so heavy few people wanted to ride them. Wagner noted they, “must have weighed seventy or eighty pounds, and would probably shy its rider into the gutter as quickly as would a bucking bronco.” Gradually the bicycles got lighter and by the early 1890s four Nantucket men purchased the lighter weight Eagle and started the island’s love affair with bicycles. Wagner was one of them and wrote, “After a little practice the four of us could go down Federal Street abreast, though we had to drop back into single file to turn around. This maneuver we used to repeat many times, and the whole town turned out to watch us.” Within a week 12 more Nantucketers had purchased bicycles and the new riders formed a bicycle club called Weeweeders. Soon the newspapers ran weekly items naming those who were taking up “the wheel.” In 1891 an editorial urged visitors to bring their bicycles to Nantucket. By 1896 there were six bicycle clubs, with the Weeweeder Cycle Club being the largest. Beginning in 1893, the Weeweeders hosted autumn bicycle races at The Fairgrounds and at the County Fair. In 1894 the club offered a parade and race at the roller skating rink on Thanksgiving, which the Inquirer & Mirror described by saying, “Each of the wheels was trimmed with bright colors, and the effect was very charming. The parade was very well done and brought forth applause.” When the bicycles races concluded, Barrett’s Orchestra began to play and the crowd danced until 1 a.m. continued on page 14

When it comes to drinking wines, there are few times when it is deemed appropriate to mix it with something else. Forget about that splash of orange juice you add to Champagne for Sunday Brunch. Why would you ever mix Coca-Cola with an expensive Bordeaux? And no, Rosé wine is NOT made by adding grenadine to Pinot Grigio. Enter Sangria. Here is a wine beverage where you can safely mix your wine with other items and make yourself a delicious and refreshing cocktail. This drink originated as a staple beverage in Spain and Portugal. The name comes from the Spanish word for “bloodletting,” which is in reference to its dark red color when made with red wine. The base components consist of wine, chopped fruit, a sweetener, and a small amount of added brandy. Makes sense: the Spaniards produce such a large quantity of Spanish Brandy that this drink would ensure a demand for their product. No matter what your recipe, however, wine is the dominant ingredient and what all other ingredients revolve around. Your ingredients in Sangria can vary greatly. The type of fruits you choose to include, the different kinds of spirits that may be added in addition to or in place of Brandy, what type of sweeteners are used and whether or not there is some sort of carbonation in the mix are all part of the plan. There is a science behind your Sangria recipe. Recipes vary as to which fruits you choose to use and methods of ‘preparing’ said fruit. Certain fruits will enhance the flavor of the drink with their own juices, while others offer subtle enhancements but are a tasty treat when they soak up all the alcohol. Oranges, lemons, and limes (if used) are typically sliced to create rounds versus being quartered like you would for the garnish of a cocktail. Make sure to wash your fruit before using it. Be careful, however, that you do not scrub away

like t-shirts into the Take It or Leave It. Of all of the jobs, the one that comes back to me the most was Golf Caddy. Golf is going the way of the glaciers. Almost two hundred golf courses closed last year and the number of rounds played is half what it was twenty years ago. The great marketers are chanting “Time for Nine” but nobody has picked up the song. Out here, in the great golden heart of the plutocracy, golf remains popular with a municipal course charging more than a hundred dollars for a round. The rest of America yawns. Golf has become to expensive for most people to countenance. Although bargains can be found, it remains a sport with five hundred dollar clubs, twenty dollar golf balls, and really ugly pants. Further, technology has not made the sport all that easier. A morning lesson can make a klutz a skier, and two days can give him some fun. Golf requires a lifetime of patience and pain; golf balls will still be lost at an amazing rate. After years of hitting practice balls and playing several rounds a week, you can play around with the same ball you started with. Finally, and most importantly, a round of golf requires five hours before you get to the bar. America doesn’t have the time. If you don’t have to work on the weekend, you probably want to see the kids for a few minutes. I caddied in an older America, when men could leave their houses at six in the morning and return at six in the evening after a day playing golf, bridge, and “shut the box.” Then they could come back on Sunday and do it again. In that America, I caddied for men who sold vacuum cleaners, used cars, and life insurance. They drank beer, ate burgers, and brought their wives to Bushwood on Friday nights. To them, caddying was a moral decision. You chose to walk the course because that was exercise, after a fashion. Golf carts were for the old and sick who “needed” it. Some of the men hired a caddy because they wanted a servant on the course, but most saw us not quite as sons, but as nephews. We wound up being the audience for their sport; our youth enforced civility and the rules. The golfers were always conscious of us and of their roles. They showed us way things were done. We were the future of the game: they knew this. Most of them had carried bags on the same course back in the familiar past. I remember the best of them for their grace and good humor in the face of a frustrating game. They smiled often and tipped well. At its worst, I spent four frustrating hours with a mean tempered jerk who tipped less than a dollar. I learned the invaluable lesson that your work doesn’t often get appreciated by others, that keeping your mouth shut will prevent problems, and that all things eventually come to the eighteenth hole. At its best, I spent four hours paired up with an older man who was not my father, but whom I could admire. So much of what I know about being a good man comes from watching putts fall in, either to win or to lose. My summer education may have been far better if I had been in Andes digging wells than it was walking eighteen holes with two golf bags on my shoulders. My education was not about privilege and giving back, rather it was about drudgery, arcane rules, and finding lost golf balls in the stream. But my adult career has had far more of the frustrations of the golf course than the pure achievement of fresh running water to a dehydrated village. I have had far too many bosses who would throw their clubs, too many days trudging in the high grass, and far too few who greeted each round as a gift. It may not have been the best education, but, at the end, I got tipped.

Money, power, lust and blood converge in Nantucket Sawbuck, anovel from island-based writer Steven Axelrod. Instant millionaire Preston Lomax is the kind of guy who cheats on his wife with her own sisters, gleefully stiffs his business associates, impregnates then abandons his housemaids, and threatens to sue the town of Nantucket into bankruptcy. But when Lomax turns up dead—viciously murdered in his own bed inside his Eel Point McMansion—you may find yourself feeling a tiny bit sorry for the old chap. Whether you thoroughly loathe Lomax or think he is a misunderstood commerce mastermind, you share one thing with other readers: everyone badly wants Nantucket's Chief of Police Henry Kennis to figure out what happened. Running the gamut from fight scenes to love scenes, Nantucket Sawbuck will be a hit with any reader who appreciates a classic Hollywood arc. And for Nantucketers, the story literally hits home. Axelrod nods at the garishness that often accompanies newly acquired wealth, and the way Nantucket assesses those that exude it. (The author describes antagonist Preston Lomax's gaudily made-up widow like so: "A lot of thought had gone into her presentation, but no taste.") There is also some light shed on painful truths about island life, including the isolation of winter, the stress of a feast or famine market, and the fact that Nantucket's summer months do not tolerate relaxation by working locals. Nantucket Sawbuck, a first-person narrative from the perspective of the fictional Chief Kennis, launched Axelrod's series of Henry Kennis Mysteries, all of which will be set on Nantucket. The second installment, Nantucket FiveSpot, was released last January. Kennis is not just a washashore (someone who lives on the island but was not born here), but a West Coast import to boot. An increase in mishaps caused town voters to create a law in 1894 that fined bicycle riders twenty dollars if they didn’t have a bicycle bell when they were riding faster than ten miles an hour, riding at night or on the sidewalk. In 1895 Weeweeder member Eugene Burgess opened a bicycle shop on Federal Street and built a quarter mile racetrack on Orange Street near the current Marine Home Center. Opened on the eve of a three-day centennial celebrating the town’s name change from Sherburne to Nantucket, Burgess named his sporting center Centennial Park. Soon island cyclists were competing against each other there and travelling to race off island.

could be attributed to the sharp increase in bicycle sales. The newspaper ran other articles about inventions designed to make bicycles useable on railroad tracks, a “trolley bicycle” that connected to wires overhead and hung suspended over the street, a “bicycle boat” powered by three cyclists and an adventurous California man who outfitted his bicycle with a mast and sail. Road tarring and improvements made cycling easier, and by 1900 the town had created paths for cyclists in Surfside, ‘Sconset, and Cliff Road. In 1918 voters narrowly defeated a controversial ban on automobiles and soon cars, horses, and bicycles shared Nantucket’s narrow streets. Yet people still enjoyed their bicycles, and bike races continued to be a highlight of island life into the new century. The newspaper noted a renewed interest in bicycling beginning in the late 1930s and lawmakers debated requiring cyclists to register and install headlights. The manufacture and sale of bicycles was banned by the US government during World War II and when they were once again available in 1945 the island experienced another bicycle boom. In 1957, Nantucket’s representative to the state Legislature, Robert F. Mooney, submitted a bill asking the Massachusetts Public Works Department to build a bike path on Nantucket, noting the island had more the 4,100 registered bicycles. If the bill was approved, it would create the country’s first statefunded bicycle path. As the Senate Ways and Means Committee debated the idea, Dr. Paul Dudley White, President Dwight Eisenhower’s cardiologist, wrote Mooney a letter saying that, if his bill was passed, he would like to participate in the first bicycle ride on the new Nantucket path. The following year in August Dr. White and State Representative Mooney were joined by 25 bicyclists as they made the inaugural run on the Milestone Road bike path, which ended shortly before Nobadeer Road at that point. At the dedication ceremony Dr. White, an avid cyclist, said he hoped Nantucket would set an example for the rest of the country and that soon there would be a network of bicycle paths similar to the country’s system of highways. There is a national organization that has had some success in making Dr. White’s vision a reality. On Nantucket, 57 years after opening the Milestone bike path, there are now 12 other bike paths, covering a combined total of 30 miles. “The NHA is thrilled to welcome Emily Donaldson to the Whaling Museum for this special evening lecture,” says Marjan Shirzad, NHA Director of Visitor Experience. “Emily’s experiences in the Marquesas, as well as her in-depth research of the islands’ history and people, is a perfect complement to our Essex-related programming this year. We can’t wait to hear
tales of her latest travels and discoveries!” Emily Donaldson has been working in and studying the Marquesas Islands for the last fourteen years. Her love of the islands began with an undergraduate field project in archaeology, a biennial program she now helps to direct. Donaldson has written several articles on Marquesan communities and their relationship to the past, in addition to publishing a phrasebook on the Marquesan language. Her professional experience includes work as an archaeologist and as a landscape historian, and she holds degrees in anthropology from Harvard University (Bachelor of Arts) and the University of Chicago (Master of Arts). She writes a blog called Marquesan Now, and is currently finishing her doctorate at McGill University. She spent 2013 living in the Marquesas and conducting fieldwork research for her dissertation, which explores the relationship between Marquesan livelihoods, heritage, and sustainability. The Marquesas Islands are a group of volcanic islands in French Polynesia in the southern Pacific Ocean. The Marquesas Islands group is one of the most remote in the world, lying over 800 miles northeast of Tahiti and 3,000 miles away from the west coast of Mexico, the nearest continental land mass. The population of the Marquesas Islands was 9,264 at the August 2012 census. Admission to this lecture is free for current NHA members and $10 per person for the general public. While it is not as important to have these soak before hand, as you might do so with the other fruits, a squeeze of fresh lemon juice on any type of berries will make their flavors bright and vibrant. If you are using a lighter style red wine, such as Sangiovese or Tempranillo, as your base, you can pair red berries like strawberries and raspberries with the wine. A heartier style red wine like Malbec or Syrah pairs well with darker berries such as blueberries or blackberries. Note that using cranberries to make Sangria is not recommended as they are tart and lack the fruitiness/sweetness that other fruits have to offer. If you do want to experiment with them, you will need to add a sufficient amount of sweetener, which could be a simple syrup, honey, or agave nectar, in order to balance the tart component. If you prefer to use white wine instead of red, then your drink would be called “Sangria Blanca.” Some recipes will call for a white wine to be used along with a heartier red wine in order to soften the drink. You should always use a wine that is palatable enough that you would drink it on its own. There also must be enough structure in the wine for it to hold its part in this Sangria symphony of flavors. Whatever method of preparation and ingredients you prefer, it is recommended that you refrigerate your final creation for at least three hours before serving. This gives the Sangria time to properly integrate all of its parts together. And to top it all off, frozen red and green grapes are a perfect garnish when serving. This alleviates the need to add ice that would dilute your potent libation. One of the many benefits of making (and drinking) Sangria is that you get to experiment with whatever fruits are local and in season. This enables you to have a fresh batch of sangria available all year long, not just in the summer months. the essential oils trapped in the flesh and peel of the fruit that helps to define their flavors. If you are concerned about the rind of these fruits adding too much bitterness to your concoction, then you can hand squeeze the juice into the mix, making sure to capture some of the skins’ oils, and not add the whole fruit. While the aforementioned are considered citrus fruits, oranges (or grapefruits) will add more sweetness to your blend where lemons and especially limes will add more acidity. This is important to know in order to create the right balance of flavors in your Sangria. Different varieties of pears and apples can be used as a layer of fruit that adds to the background of your beverage. They will become the sponge of the fruit cocktail mixture as they soak up all the other liquids. Stone fruits, such as peaches or nectarines, will add fresh, distinctively fruity components that counterbalance the acidity of the citrus fruits. These types of fruits are cored or pitted, then diced into small, bite size cubes. There are also variations as to how you “prepare” the fruit after it has been cut. You can make what is labeled as a “fruit salad ceviche.” You do this by taking the cut fruit, squeezing the juice from half of an orange over it, and letting it macerate or soak for about thirty minutes. This allows the sugars and citric acid (tart and fruity) in the orange to react with the malic acid (sour and tingly) found in the other fruits. Another variation is to the soak the stone fruits overnight in brandy or some other liqueur of choice, such as the orange flavored Cointreau or elderflower inspired St. Germain. A simple method is just to add the fruit at the same time you mix all the other ingredients together. If you choose to add berries to your blend, there are a handful of ways to vary this component of the Sangria. Nantucket Sawbuck, he is a hero whose flaws are slight. Presumably, more of his humanity will be bared as the series progresses. We don't know much about Kennis' background except that he has two kids with his materialistic ex-wife, and he left his job in Los Angeles on terms that were not stellar. It seems he has been jaded by a previous life and is now striving to remake himself. We respect Kennis' sound conscience and his desire to press an issue until its resolution. Though not immune to the temptations dangled by his powerful position, Kennis is ultimately the kind of policeman we would want solving a crime that occurred in our own backyard. all of the chief's thoughts and reactions flow out of him so naturally, you get the feeling that Axelrod sees Kennis as some version of himself, or vice versa. With dense verbal illustrations, reading this book is like watching a movie. You can feel the brush of a character's bed sheet on your leg; you almost squint at the morning sunshine reflecting in a character's kitchen. The dialogue is interesting while maintaining functionality and conversational authenticity. Axelrod is not verbose, but he poetically packs meaning into few words like pungent little sardines into a can, generously dappled with similes that pull you into the world he has crafted, where emotions are served raw. Like other island-based stories that are filled with real local names and places, Nantucket Sawbuck gives you a curious consciousness of your own presence on the island. You exist here, inside your own version of this island, alongside another rendering of Nantucket that an author has created. Every time you experience a book or movie or play set here, you plunk yet another new Nantucket into the pile in your head. What makes one adaptation of Nantucket more real than another? It's fun to think about, and a treat you only get when enjoying a story set on Nantucket. This book paints an especially rich depiction of the island from the working person's perspective. In creating this version of Nantucket—some of which exists inside an unfinished home—Axelrod has gleaned invaluable insight through his day job as a house painter. "The most literary ideas come out of real life, the desire to distill and express my actual experiences." As Axelrod signs his book with paint-splattered hands, he says, "Painting and writing are an excellent match. Repetitive physical labor frees the mind, and I often end a day of disc-sanding or sash painting with just the idea I need for the next morning's work. I write from about 5 to 7:30 a.m. Partly that's because the integument between dreaming and reality is thinnest when you first wake up, before all the mundane stressful demands of the day begin." At 306 pages, it is surprising that Nantucket Sawbuck is such a fast read. We end it with an epilogue that beckons Kennis out on another case: this time, someone is threatening to bomb the annual Boston Pops concert on Jetties Beach! As Chief Kennis picks up the pieces of our first adventure with him, Axelrod prepares to whisk us away again. If you're up for a Nantucket-based novel with some substance, grab an Axelrod. Featured Restaurant: Breeze Bar + Café
Blown away by The Breeze It struck us last fall as we walked down Easton Street during a November evening out. The Nantucket (as in Hotel & Resort) looks like a castle. We must admit that we were not the ones who noticed the resemblance, like most adults today we were distracted by work and by life: it was the 10-year-old in our party who exclaimed “We’re having dinner in a castle!” There’s nothing like the magical sense of a child to make you stop and look. There it was: sweeping decks, magestic entrance with an attendant at the top of the tall stairs (no armor or spear, though), and even a turret. We were having dinner in a castle. We hold onto that sense of magic every time we enter The Nantucket, and shared it with our companions during our dinner last week at The Breeze, the cozy café and bar just beyond the “Great Hall” — okay, at some point the castle imagery breaks down, and we must admit that The Nantucket is actually an elegant hotel with all the modern amenities of a toprated resort. The Breeze Bar & Café, aptly named for the island’s refreshing sea breezes, occupies the back deck of The Nantucket Hotel & Resort. There is a cozy, chic indoor bar and lounge where dinner can be served, but we prefer the engaging island vacation ambiance of the spacious deck with wicker seating, wood tables and placemats, strands of tiny lights draped above, and a breeze, unless the weather necessitates they drop the clear sides for shelter. Discreet heaters near the ceiling provide warmth during cool evenings. Stylish firepits surrounded by comfy chairs and loveseats are strategically placed in and near the dining room for after-dinner relaxation (and s’mores!). This is the ideal spot for cocktails and conversation. Staff at The Breeze, from the managers to the bussers are warm, efficient, and genuinely pleased to serve. To care for their guests dining with children as well as their guests dining without little ones, The Breeze has both a respectable Kids Menu and a Kids’ Deck Program. Children can dine with their families and, when they are finished Lobster Risotto
eating, they can join the Kids’ Deck staff for supervised play another in area of The Nantucket while their parents linger in the dining Chicken Carnitas Cake room for some “grownup time.” This program is free for children age 3 to 12 and held from 5:30 to 7 pm. Newly at the helm of The Breeze this season is Executive Chef Josh Schoen. With six years of cooking professionally, three of them on “that other island,” Schoen has the kitchen at The Breeze well under control and has already made improvements. His combination of youthful enthusiam and solid technique, is energizing the menu and the staff. Chef Schoen describes his cooking by saying “I cook how I eat: very Mediterranean,” a style that complements summer on Nantucket. At our recent meal, we were impressed by his beautifully composed dishes and thoughtful preparations that hinge on very fresh ingredients and an attention to detail. We put ourselves in the hands of the chef for this meal, and Schoen chose for us to begin with his Oysters on the Half-Shell (see cover photo). In a deliciously fresh marriage of ocean and garden, he nestles the Pleasant Bay Oysters in a pool of rose vinegar with hints of ginger. The raw oysters are topped with peashoots and matchsticks of raw carrot and radish. We commented on the appealing light notes of rose with the briny shellfish, and the chef simply replied “I got turned on to the floral flavors early on.” (Suggested pairing: Enza Prosecco from Italy) Next we sampled Chef Schoen’s Roasted Beet Salad, with mixed greens so fresh they could have been picked to order tossed in a basil vinaigrette. Roasted Chicken Breast
neath we discovered paper-thin slices of golden beet. Cubes of roasted red beet are artistically placed alongside in a bright pistachio crema. Chef roasted the beets in this salad with spices typically used for pickling, which imparted whispers of deep flavor, and left the twang of vinegar to the dressing. (Suggested pairing: ACK Cosmo) Last summer at The Breeze, our favorite dish was the Lobster Risotto. This season, Chef Schoen’s version of the dish is even better! He clearly has mastered the secrets of making a perfect risotto. It’s creamy and full of flavor, studded with plump and juicy English peas. The lobster meat is sweet and tender, and there’s plenty of it, but there are also whole shrimp and whole mussels folded into this risotto, which begs the question: Is this risotto with seafood or is it seafood risotto? No matter: whatever you call it, it’s superb! We like that the risotto is served as an appetizer rather than an entree; we could later regret devouring a larger portion of this rich and delicious dish. (Suggested pairing: La Porte “Le Petit Duc� Sauvignon Blanc –France) As much as we enjoyed the risotto, it was the Chicken Carnitas Cake that we ranked as our favorite appetizer. Prepared from braised chicken thighs, the cakes were delightfully crunchy outside and surprisingly moist inside. meat topped with a dark and delicious pan juice reThe duction. chicken is served a satiny on smoooth parsley pistou potato puree that is a taste of comfortfood heaven with the rich gravy and is even better eaten with a forkful of chicken and a dip of the pea emulsion that is Grilled Salmon served in swashes around the plate. (Suggested pairing: Sonoma Cutrer Chardonnay – Russian River CA) At a time when grass fed beef is de rigueur the Seared Center-Cut Filet that Chef Schoen serves stands out. Even when cooked closer to medium than to rare, the filet is tender as butter and has a robust and beefy flavor. This is exactly what you want when you order beef! Every detail is right on this plate (indeed, on every plate that was brought to our table): the goat cheese scalloped potatoes with their tender layers and browned and bubbly top...the tender-crisp roasted carrots, baby zucchini, fennel, and peas served on a vibrant sundried tomato pesto... and the thick veal demi drizzled overtop. (Suggested pairing: Jack Barrett Cabernet Sauvignon - Paso Robles CA) Grilled Salmon often shows up on island menus, but never like Chef Schoen does it! He presents his salmon on a bed of creamy arborio rice with wild mushrooms that is set in a pool of smoked onion broth. Even before we took our first bites, the tantalizing, smoky aroma tickled our noses. There is just enough smoke to be appealing, not so much that it overwhelms the fish. We asked for spoons so that we could finish every drop of the intoxicating entree. (Suggested pairing: Hartley-Ostini “Hitching Postâ€? Pinot Noir – Santa Barbara CA) Desserts change at the whim of the chef. If he’s offering his Blood Orange Panna Cotta, then that is how you want to end your meal here. The panna cotta is set over a gelee that is the essence of blackberries, surrounded by crunchy banana chips, and draped with deliciously juicy strips of champagne mango. that same day.” With those two early customers, Nantucket Coffee Roasters was officially launched. Wes has loved coffee from an early age: “When I was 12, I lived in Randolf Mass and used to ride my bike to my job as a caddy. There was a little store across from the golf course where I used to stop and get a cup of coffee cause I thought it was cool. I contined as a coffee drinker.” His introduction to Nantucket Island also came at an early age. In the summer of 1964, his father, a pastry chef, brought the family to Nantucket where he had a job working at the Gordon Folger for the summer. They returned in ‘73, when his father took a job working for Walter Beineke: “my family did all the baking for all the Beineke properties, so I have a strong bakery background.” After his time on Nantucket, Van Cott moved to Maine, working in bakeries while studying Fine Art. “I even set up some bakeries there,” he remembered. He was lured back to Nantucket in the early 1980s, when his friend Theo needed a breakfast cook at the India House. “I worked with All Kovalencik and did breakfast there for a couple of summers.” His real dream was to run his own business. While at the India House, Wes helped the owner of the inn with a wallpapering project, then with some painting, and that was the start of a painting company he owned on the island for seven years. “I really didn’t care for it—it was grueling—but I had a young family, and it was a living.” He started dreaming again of a different business... “I knew how difficult it was to create a business on Nantucket. There are just not a lot of locations or opportunities. I needed to come up with something that did not need a huge structure. I had a friend who roasted coffee for Green Mountain, so I started researching. I had another friend here on the island who was making pasta out of a building on Teasdale Circle, and when that building became available, I rented the space, and I’ve been there ever since.” Six years later, in 2000, Wes heard through the grapevine of a space grandfathered for food that was about to become available in the center of town. He jumped on the opportunity and opened The Bean. “It was an instant success, but we hit our limits in terms of what we could do. With my food background, I felt there was a part of me unfulfilled. I wanted to do more.” Again through word-of-mouth, Wes heard last year that Nantucket Gourmet on India Street would be closing. “When I heard about this space, I spoke to the owner, and it was all set in motion pretty quickly. Three months after I signed the lease, the phone rang and it was Stop-and-Shop corporate, calling to ask if I’d like to open in their new store. Here we are: open now in two new locations...My head is still spinning, but I’ve had a lot of great help.” Now that he has the kitchen facilities he was dreaming of, Wes is experimenting with various food offerings to add to the range of coffees and teas that has made The Bean so popular. “Our intention is to have a selection of salads and sandwiches, breakfast sandwiches, plus some baked goods... the menu and the space will evolve naturally with what our customers desire...we want the space to feel good and comfy—for our customers to feel at home... Eventually, we’d like to do some coffee education and tastings.” According to Wes, the key to an excellent cup of coffee is good water and high quality coffee, both available on Nantucket thanks to Nature and to Wes.

Van Cott works with a socially committed raw bean importer who has a long relationship with growers, and Wes has traveled through Central America on origin trips. “Coffee is an agricultural product, so it can change every year. Right now I’m really liking Geisha, an Ethiopean cultivar that was transplanted to Panama and adopted by Columbian growers.” With help from his island roaster, Leo Keating, Wes chooses coffees the complement each other for their special blends. “All our coffees are standalone single origin...we blend them to satisfy customers looking for something safe.” To the extensive offerings of coffee beans roasted daily on-island by Van Cott’s roaster, Leo Keating, and coffees and teas prepared to order, Wes has added to The Bean’s selection a Cold Brew Iced Coffee, a “smooth, soft, delicious cup” that takes 20 hours to brew. He sells his Cold Brew on tap and in 32-ounce growlers: bring the growler back for a discount on the refill. And if you time your visit right, you might get to try some Nantucket Coffee Roasters superb cask conditioned “Boozy Beans.” For this, they “age” green coffee beans in casks that previously held Triple Eight’s Notch Whiskey or Hurricane Rum before roasting them for a coffee with incredible natural flavors. It’s clear that Wes Van Cott loves what he does for a living: his dream come true. “It's really brought me into my community; I've made a lot of friends. It's given me a great sense of home—a sense of belonging. Doing this really gives me a deep connection to the place I love.” When asked if he plans to open any coffee shops off-island, Wes didn’t even have to think: “No. I have been approached. But it would take me away from home. I'm not about conquering the world...I like my quiet little specialty shop on Nantucket—it’s better than what the world has to offer. My first encounter with the Nantucket Stranding team was in the attempted rescue of an 8.5 foot long Risso’s dolphin on a 4th of July weekend several years ago. The entire Nantucket Marine Mammal Stranding team came out to try and rescue this creature, and Edie Ray and Deb Miller spoke to the crowd on the beach and the newspaper while coordinating the rescue attempt. Joe Aguiar and I spend many hours trying to keep the Risso’s dolphin cool by wringing out wet towels above its back. The beautiful creature (see the accompanying photo) reminded me of Queequeg from Melville’s Moby Dick with its Maori-like scarring.
We had dug a long trench in the beach with room for its flippers for the eight foot long 800 pound female to rest. Because marine mammals are used to being buoyed up and having a lower effective weight in salt water, their internal organs cannot handle being on dry land and the gravitation pull will start to destroy the internal organs, causing it to die. Eventually the decision was made that this animal was not going to make it, and veterinarians from the MSPCA came to euthanize the animal. Many strong men and women in the beach crowd were needed to hoist the poor creature into the back of Health Department Chief Richard Ray’s new truck. During the necropsy, which I will never forget since it occurred in the back of that same truck in the MSPCA parking lot, we found that the female was pregnant, and that she also suffered from a huge long green tumor. The baby was folded in half inside the mother. It was heartbreaking. I first noticed the dolphin was a female during the transport to the MSPCA as I closely followed the truck carrying the creature so that an unsuspecting tourist would not have to see the tail end of a deceased dolphin. As we were driving through the streets of Nantucket and making the turn by the Quaker burial ground I realized in horror that it looked like a baby was crowning! Fortunately, we made the short distance without that happening—if I cut off a few people that day, I apologize, I had a good reason. Risso's dolphins, Grampus griseus (G. Cuvier, 1812), aka Grampus, are rather large cetaceans with rounded heads, similar in shape to pilot whales. They have a characteristic crease in their melons (the organ in the front of the head used for echolocation) visible from the forehead to the mouth. They are in the Class Mammalia, Order, Cetacea, Suborder, Odontoceti, Family Delphinidae (dolphins) and Genus Grampus. The Risso’s dolphin has been given a great genus and species name which is very descriptive. “Grampus” is a word applied to killer whales and other large, dolphin-like creatures since the 1590s, from the earlier graundepose (1520s), altered (by influence of grand) from Middle English graspeys (late 13c.), from Anglo-French grampais, from Old French graspois, craspois " for whale, (salted) whale meat; blubber; seal," from Medieval Latin craspicis, literally "great fish" or "fat fish," from Latin crassus "thick" + piscis "fish" and “griseus “ is a Medieval Latin word for gray. So big fat gray whale it is! Cetaceans have an even more interesting etymology. “Cetus” is a Latin word most commonly translated as the word for "whale" although its original meaning, "large sea animal," was more general. It comes from the Ancient Greek (k tos), meaning "whale" or "any huge fish or sea monster." As mammals, cetaceans have characteristics that are common to all mammals: they are warm-blooded, breathe in air through their lungs, bear their young alive and suckle them on their own milk, and have hair, although very little of it. I was pretty enchanted and a little surprised to find out that newborn dolphins have little whiskers when they are borne that quickly fall off. The American Cetacean Society is an excellent place to start when you are looking for information on dolphins and whales. They are long-lived animals

that live an estimated twenty years minimum and possibly up to twice that long. One of the most enigmatic cetaceans, this little-known dolphin has an unusual appearance. Unlike many other dolphins, Risso’s dolphin lacks a beak, and the bulbous head rises almost vertically from the upper jaw and blunt snout. They have distinctive body markings and they have only 7 or fewer pairs of teeth in the front of the lower jaw, and typically none in the upper jaw. The body is robust and powerful, and tapers towards a relatively narrow tail, and a distinct crease runs along the top of the melon. The sickle-shaped dorsal fin is somewhat short for the body length, and the flippers are long and pointed. Risso's dolphins also have a white anchor-shaped patch, similar to pilot whales, on their ventral/chest area (from throat to stomach). When a Risso's dolphin is young, it is slate-gray to black with no scarring. As they age, they lighten in color and acquire white scars all over their body. These scars are assumed to be from the teeth of other Risso's dolphins (called rake marks), acquired while playing or fooling around, and from the squid that they eat, which have sharp hooks on their tentacles. Eventually, the Risso's dolphin can be almost completely white, although they may have a slaty gray or black upperside, tinged with blue or purple, and a whiter underside, with darker flippers and tail. ,The amount of scarring dictates how white they appear. The sexes are similar in appearance, although the dorsal fin may be taller and more erect on the male. They range in size from 2.6-4 meters (8.5-13 feet) and weigh 300-500 kg (660-1100 pounds). This striking coloration along with the absence of a beak make the Risso's dolphin easy to identify. Risso's specialize in eating squid, but may consume some fish as well. They eat primarily at night as their prey species migrate toward the surface to feed. Squid eggs have been washing up in Sconset by the thousands. Where there are eggs, there are squid, so that helps to explain why we sometimes see Risso’s dolphins. While the size of their squid prey is unknown, squid beaks from species that grow up to 12 feet in length have been found in the stomachs of stranded Risso's dolphins! Risso’s dolphins are gregarious and travel together in pods of 3-30 adults. They can often be found with schools of other dolphins, like bottlenose dolphins ,which has led to hybrids between the two species (dolphins are sexualized animals, I’ll restrain myself from inserting an obvious joke). Due to its offshore habits, relatively little is known about the biology of Risso’s dolphin. The reproduction of Risso’s dolphin is poorly understood. However, due to its almost cosmopolitan distribution, it is likely that breeding and calving occurs year-round, although it at least peaks between December and April off South Africa. A single calf is born after a gestation period of some 13 to 14 months, and it remains with the female and continues to feed on energy-rich milk for several months. The seasonal movements of this species are equally unclear, but it appears as though some populations in more stable environments stay in the same place all year, while others show northern movements during summer and southern movements during winter. While at the water’s surface, Risso’s dolphin displays an impressive variety of acrobatic acts, including high speed jumps out off the water, known as breaching, violent tail slapping, and bobbing the head. These antics are most likely a form of communication and play. Risso’s dolphins, like many other ceteceans, also produce a number of sounds, including characteristic signature whistles, and many of these vocalizations are important for detecting prey through echolocation. The species’ range appears to be limited by water temperature, with this dolphin most abundant in waters between 15 and 20 degrees Celsius, and rarely occurring in waters below 10 degrees Celsius. According to the New England Aquarium’s web site there have been a two mass strandings of four individual Risso’s Dolphins since 1973 . Locally, we see the white sided dolphin, the common dolphin, pilot whales, Risso's dolphins, striped dolphins, pygmy sperm whales, and harbor porpoises. There are many factors suspected to cause or induce strandings, from acoustic damage from naval testing to confusion from pollutant poisoning to simple ailments that affect toothed whales the same as other mammals like infections and tumors. Our narrow harbor and creeks also make it very difficult for dolphins to escape if they come into Nantucket Harbor greedily chasing some food; the long skinny stretch of the harbor and incursion of multiple cuspate spits causes some species to ping pong back and forth trying to find the exit and a tide that works for their escape. There are no dolphin gas stations to pull over and ask for directions.
