So we have decided to introduce it to you in all this breadth and, er, glory. Tea: A short Encyclopedia
IT‘S
NEVER TOO LATE TO BECOME A SPECIALIST.
ASSAM The world’s largest uninterrupted tea cultivation area is located in northeastern India.
AUTUMNAL Refers to teas harvested in autumn/fall in Assam and Darjeeling. Flowery fragrance.
BROKEN Refers to teas whose leaves have been shredded or crushed between rollers and therefore produce more yield than loose leaf teas.
CAMELLIA SINENSIS Botanical term for the (evergreen) tea shrub, which belongs to the genus Camellia. There are two varieties, to be more precise: Camellia sinensis = Chinese tea, and Camellia assamica = Assam tea (grown in Assam). The two shrubs differ in height, blossoming, fruit and leaf size.
CHINA Home of tea and tea culture, the world’s second-largest tea-producing nation; China produces predominantly green tea, but also black tea and semi-fermented Oolong.
DARJEELING Tea district in the Himalaya foothills of northern India (1000 – 2400 m altitude). Darjeelings are among the very best and priciest teas.
FERMENTATION Oxidation process in tea making during which the tannic acid content is reduced. This process step applies only to black teas and partially fermented Oolongs.
FIRST FLUSH The first harvest after the spring monsoon rains in northern India (March–May). Only the delicate light-green leaf tips are picked.
WHITE TEA Non-fermented tea. Only the leaf buds are picked; dried only in partial shade and not rolled or processed further, therefore an absolutely natural tea.
YELLOW TEA This tea is de-enzymed, i.e., its enzymes are disabled by applying dry heat in order to prevent fermentation during the 6 to 10 -hour storage. The procedure causes the leaves to turn yellowish.
GREEN TEA Non-fermented tea.
BLACK TEA Fermented tea whose leaves turn red during fermentation and then black during drying.
OLOONG Traditional Chinese tea varieyt, semi-fermented tea with an oxidation time between green and black tea.
THEINE Stimulant contained in teas, enhances one’s ability to concentrate and reflexes.
CLASSIFICATIONS OF BLACK TEA.
TIP Refers to the outermost tip of the leaf bud, used in very high-quality teas. The golden yellow bits you can spot in black teas.
ORANGE “Royal”, high-quality tea, named after the Royal House of the Netherlands, Orange/Oranje.
SOUCHONG Tea made from very large leaves growing in the lower section of the shrub. The most coarsely sorted black tea.
BP Broken Pekoe consists of crushed second and third leaves only (used solely for blends).
BOP Broken Orange Pekoe is a high-quality tea with buds and crushed leaves that make the brew more aromatic and give it a reddish hue.
TGBOP Tippy Golden Broken Orange Pekoe. A delicate Broken from Darjeeling and Assam with evenly sorted leaves.
FOP Flowery Orange Pekoe. This grade describes the majority of basic Indian loose leaf teas. Flowery refers to the tender and delicate parts of the blossoming leaves.
GFOP Golden Flowery Orange Pekoe refers to a high-quality tea made from the first leaves and the bud.
TGFOP Tippy Golden Flowery Orange Pekoe. The principal grade in Darjeeling and Assam, indicates a high content of fine tea leaves covered with light “fuzz” (also called “tea hair”) that remains even after fermentation and binds the caramelizing cell juice issuing when leaves are rolled.
FTGFOP1 Finest Tippy Golden Flowery Orange Pekoe I. Mainly Darjeeling, also Assam. Highest grade, evenly sorted, tippy.
SFTGFOP Special Finest Tippy Golden Flowery Orange Pekoe. The very best!
CTC Crushing, Tearing, Curling; the leaves are crushed/torn between rollers for better fermentation. CTC teas, very dark and high in yield, are used for instance as a tea base for chai.

LAPSANG SOUCHONG

A delicate medium smoked tea, long whole leaves, dried over resin-rich spruce, goes well with salty, spicy dishes, also cheese.
CHAÏ BIO (ORGANIC)
from India steep time 3–8 min. The longer – the stronger!
A classic Indian spiced tea, Assam black tea (CTC) with cinnamon, ginger, cardamom & black pepper. Is typically enjoyed with plenty of milk and sugar.
GRAND YUNNAN SUPÉRIEUR TGFOP
from China steep time 3–5 min.
A top quality tea with plenty of golden tips, full-bodied without being tangy, with finesse and rich in flavor, the mocha among teas.
FIVE O’CLOCK TEA
from Sri Lanka steep time 3–5 min.
A delicious blend of the finest teas from the “Ceylon”, strong brew, a great classic.
ENGLISH BREAKFAST BROKEN BIO

A traditional English blend of different organically produced broken black teas. Very strong, rich and dark brew, perfect with a dash of milk, goes well with toast and jam.

ASSAM GELAKEY TGBOP

This time-honored plantation located in the Sibsagar district produces tea that is beyond compare. Plenty of of golden tips. Rich in tannin, without any sharpness or bitterness, yet highly vigorous (very malty).
Can be enjoyed with milk too.
FLEURS D’ORANGER OOLONG

A semi-fermented tea with orange blossom, subtly scented with orange flavor. Relaxing.

Situated at 1025m, this family owned company is dedicated to the high art of roasting the finest quality coffee. Introduced to the world of coffee by their father at a young age, siblings Oscar and Sophia founded the roastery and coffee shop in January 2015 and have since filled the streets of Engelberg with the smell of fresh roasted coffee.
