A LETTER From the EDITOR

Welcome to the 2023 edition of Cayman Good Taste, the magazine that celebrates the many flavours of the Cayman Islands. For the second year running, we’re bringing you the restaurant edition, shining a spotlight on our Island’s most delectable menus.

In the past year, we’ve welcomed many tasty arrivals to Cayman’s restaurant scene. The plant-based population rejoiced when The Edgy Vedge moved into Camana Bay, diversifying options for vegans and meat eaters alike. George Town embraced several new spots in the form of San Si Wu Noodle co., a tasty noodle and dumpling eatery, and U’NIQUE Restaurant, serving locally-sourced seafood on the waterfront. Along Seven Mile Beach, Taco Cantina returned to our shores offering traditional tacos and tequila. Mykonos, a new Greek restaurant, has been promised for 2023, bringing Mediterranean cuisine and an on-site bakery to Seven Mile. A little further East, Fresca, a healthy dining spot has its sights set on delighting customers in Savannah. And for lovers of meals on wheels, two new food trucks, Murph’s Kitchen and Boobies Food Truck, arrived on-Island. All these newcomers certainly help cement Cayman as the Caribbean's culinary capital.

As you ponder these tasty pages, find out more about the non-profit organisation, Beacon Farms, and how it is working to cultivate a better agricultural understanding in Cayman and, whilst doing so, helping vulnerable Caymanians in recovery from addiction.

Thirteen years ago, Italian owners Cristiano and Walter established Agua Restaurant and Lounge with the intention of creating a fresh and vibrant dining experience that avoided conventional Italian restaurant stereotypes. After relocating to Camana Bay's breezy waterfront in 2018 and undergoing a menu refresh, this longtime popular seafood restaurant continues to soar in popularity and innovation!

The space is stylish and airy, featuring lots of natural wood accents and coloured glass, creating a nautical theme that nicely complements the seafood-rich, Italian Peruvian inspired menu. Longtime fans of Agua talk of their delicious ceviche and their Tuna Tartare with its passionfruit sauce. Must-have dishes include their namesake Agua Tuna and the delectable 10oz Skirt Steak with its incredible chimichurri sauce.

The wine list, with an extensive choice of Old and New World options, perfectly

complements the menu and patrons can even enjoy their meal in Agua's intimate wine room. Cocktails from Agua's award winning mixologists, enjoyed in their plush bar area, include the freshest and finest local ingredients.

The combination of a unique Italian Peruvian menu, a casually elegant setting and attentive service has cemented Agua as one of the leading players in the Island's restaurant scene.

Luca Cocchieri was born in a small town at the foot of the hills in the Veneto region of Northern Italy. It was also here that his passion for the kitchen and food was born. He then moved around Northern Italy for his apprenticeship, growing his knowledge and skills while expanding his horizons from Switzerland to the USA. Chef Luca's style is a blend of home tradition together with a modern twist, which makes his style unique.

Ragazzi is an Italian restaurant owned and run by good friends Paolo Polloni and Andi Marcher. For years they worked in Europe and then Cayman, building up their ideas and doing their research, always knowing that their dream would be to one day open an exceptionally good Italian restaurant – a place where customers want to return again and again. In the summer of 1999, their dream became a reality and Ragazzi Ristorante and Pizzeria was opened.

With its vibrant colours, authentic wood burning pizza oven and central location, it has become a meeting point for family, friends and repeat customers many times over the years. Ask a local and they will say the food at Ragazzi is exceptional and consistently good. The wine list won the Wine Spectator Award for Excellence for eleven years, then in 2010 it won the rare accolade of Best of Award of Excellence, something that will not go unnoticed by Ragazzi's wine aficionados. The service is

warm and efficient and because of their convenient opening hours – 11.30am to 11pm, seven days a week – you can drop in and eat no matter what time you are hungry. Ragazzi (meaning ‘good buddies’ in Italian) is very popular for parties, whether small or large, especially for birthdays and Christmas parties. This is the Calypso Grill experience in West Bay, and what a charming and delicious experience it is. The Calypso Grill creators: Teresa Grimes, James Mason and Chef George Fowler, are 'the heart' of the restaurant, aided by their excellent kitchen and front of house staff. Menu favourites include the Tuna Carpaccio, Crispy Mango Shrimp, Wahoo Escoveitch and, of course, Sticky Toffee Pudding. The latter of which even has a road named after it. AGRICULTURAL INNOVATION & COMMUNITY CARE beacon Farms

In recent years, focus has shifted from relying on imported goods to creating self-sufficient ways to achieve food security here in Cayman. Islandwide, local farmers and fishermen are working to make our home a more sustainable, and more self-sufficient island. One of these organisations is Beacon Farms, located in North Side. Here, the team works to provide local produce and farming services for the Island’s inhabitants. But that’s not all they’re doing.

Beacon Farms, supported by the Beacon of Hope Foundation, is a registered non-profit organisation which offers job opportunities for those Caymanians who seek them as part of a “Continuum of Care” for recovery from drugs and/or alcohol abuse. The organisation provides a structured and supervised sober living environment and helps develop positive life skills and pro-social behaviours for their employees. Interestingly, most of the workforce have never worked on a farm before! Many have an interest in agriculture, some favour this simplistic way of living, and others desire to help feed Cayman’s community. But what all the farmers share is a common desire to remain clean and sober while improving their life through innovative farming and agricultural practices.

Beacon Farms does not only provide a social recovery programme. The organisation is also leading the way in agricultural innovation on the Island. In 2022, Beacon Farms harvested its first crop of Swiss chard and mangelwurzels, a large root vegetable from the same family as red and sugar beets. Commonly used as cattle fodder, both leaves and roots of the mangel beet are in fact edible by humans. Although mangelwurzels are typically grown in temperate climates, the Beacon Farms team successfully trialled a winter crop in their research and development garden in 2022 and have plans to plant more extensively in their commercial fields this year.

After investing in a state-of-the-art static aeration composting facility, Beacon Farms can accelerate the production of natural composting. Their goal is to triple the size of their composting facilities so that they can produce and supply compost to farmers, developers, landscapers and homeowners at a fraction of the price of imported fertilisers.

Additionally, Beacon Farms recently launched a new programme, titled Beacon Farming Services, which offers other farmers in the community the option to hire Beacon Farms’ equipment to improve soil quality and create commercial growing fields. Using their rock crusher, farmers can break down rock and earth which, when mixed with compost, becomes fertile soil. Beacon Farms has prepared five acres of fields in this way and wants to make this service available to the wider community to help increase crop yields, turning focus away from imported goods and instead increasing agricultural literacy and food security for Cayman.

The Beacon Farm Shop is open Monday-Saturday, 8am-5pm at their beautiful location at the northern end of Frank Sound Road, before you reach Jack's Esso gas station. There is delicious produce on sale, plus their popular coconut products such as oil, flour, lip balm and soap. As a non-profit, all the proceeds support the programme at Beacon Farms which provides jobs in agriculture to Caymanians in recovery.
