As we go to print for this issue, the worldwide coronavirus pandemic dominates our lives, it has taken over the world and continues to turn people’s lives upside down. We’re living through a moment that future generations will be looking back on in their history lessons.
With all the uncertainty, worry and fear it is so important that we try to remain positive, hopeful and kind, that we find joy (even in the smallest things) in the world around us, which is why we here at Affinity will continue to bring you content that will inspire you, make you smile and encourage you to escape from reality for a few hours. When you’ve had a long day the only thing you want to do is to drift off to sleep and relax, but sometimes this can be hard. The two key steps to falling asleep is to relax your body and shut down a busy mind. In order for your brain to feel at ease, you need to detach yourself from the stressors of the day, if you are thinking about your day and what you have planned for tomorrow this can trigger the release of stress hormones.
Stress hormones can elevate your heart rate, blood pressure and body temperature. These elements all prevent your mind to switch off so your body can rest, so just how can we relax our minds before we sleep? The experts at Forest Healthcare have shared their top tips for clearing your mindset for an uninterrupted sleep. Pre-sleep Routine The same as you have a wake-up routine you should have one in place for winding down. Our body craves routines and likes to know what is coming next, by creating a pre-sleep ritual you can establish a clear link between certain activities and sleeping. For example, reading before bed will help your body know that reading means sleep, the aim is to relax your mind and body and set it up for sleep. Leave aside 30 minutes for pre-sleep time.
Mental Exercises If you are stressed or worried it can be hard to distract yourself from it. A mental exercise helps your brain to focus away from your worries, it can be as simple as ‘name every animal starting with B’. Another technique is to recite lyrics from a favourite song.
Relaxation Methods Methods which involve physical activities will really help you to reduce your anxiety and racing thoughts. The most effective method is progressive muscle relaxation, which is going through each muscle group, tensing and then relaxing it – this is followed by deep breathing which will help link your brain to calm settings. Write it Down Each day spend 10 minutes writing down what’s on your mind and what you’re doing about it. When you’re in bed you can use this to ask yourself what you’re worrying about at night. Any thought that has been dealt with in the day can be checked off – this will help to create a ‘sense of relief’ but avoid writing any lists before bedtime since you need the separation from these thoughts at night.
No Screen-Zone Any screens that are in your bedroom are a sign off distraction. Your phone, tablet and other screens can mess with your sleep. This is because the screens give off a blue light which signals your body to stop making melatonin (the hormone that controls when you feel sleepy). This light is keeping your brain alert alongside any noises the device is making. By having a no screen-zone you can rid any disturbances.
Warm Milk Milk contains an amino acid called tryptophan; this nutrient is critical in helping the body to release a hormone known as serotonin. Serotonin is key to make you feel relaxed, the hormone aids the body to sleep and as milk is rich in calcium and magnesium it helps you to maintain that deep sleep all night.
Mental Vacation Picture your most relaxing place to be, it could be on a tropical beach or it could be in your family home next to the fireplace. Resilience is a word we hear a lot about these days but it is something that can often be misunderstood. The online dictionary defines it as “An ability to recover from or adjust easily to misfortune or change” The general narrative at the moment seems to involve an interpretation that adversity brings about resilience – somehow coping with difficulties makes it easier for us to cope with difficulties.
That might sometimes be true but there are a lot of factors that will impact on whether or not we get tougher or depleted by adversity.
Children are not born resilient. They gradually learn resilience by being supported by adults when they experience challenges and when this happens repeatedly, they will usually become more resilient, though it always depends on the number and type of challenges they face.
It isn’t so very different for us as adults. Some personalities may find change or even problems easier to handle than other but we generally all manage it better when we have certain strategies and supports in place.
Some events may be so life changing or traumatic that recovery may take a long time – there’s a sense that the event is so huge ‘damage’ is inevitable. But we also know that the same ‘event’ or trauma could happen to two people and the impact may be very different, some of that may be down to personality but part of it will be down to their resilience at that time. That is another fact that is not always highlighted in conversations about resilience – it varies. Some days we can cope with all sorts other days we can demolished by something really quite minimal.
One of the features that may influence our resilience is our self-esteem. But in a slightly circular way our resilience can also improve our self-esteem. If we feel good about ourselves, we are less likely to respond negatively to events that are challenging, but when we manage to cope with challenging events, we may feel more positive about ourselves. As human beings’ things are rarely straightforward.
The important thing though is to take any steps we can to build our resilience so here are a few ways in which we can all do that.
Develop a sense of purpose One of the things that helps people keep going even when things seem tough is having a sense of purpose. It doesn’t matter if its personal or professional challenge, things like running a marathon or a race for life, or maybe completing a course, buying a house, getting a particular job, making something, supporting a charity through
voluntary work or a sense of purpose and a reason for living does us all good. So, make a plan, devise something you can enjoy working towards and that will help you to build your resilience in a more general way.
Look on the bright side Sometimes this can be very hard and can almost sound a bit callous. But developing the habit of optimism can help us all. A good way to start is usually by being grateful for something. Obviously not the challenge but there is always something to be thankful for and somehow if we spend time developing the habit of being thankful it gets easier to be optimistic and think more positively about other things. It’s the idea of looking for something positive even in difficult times and making a conscious choice to focus on the positive not the negative – the silver lining rather than the cloud. It can be tough but he more you do it the easier it becomes.
Nurture yourself Especially when times are tough, we need to prioritise taking care of ourselves. We all know what to do but somehow when life gets busy or difficult, we do less of those things which take care of us. Also, when times are tough, we often seem to develop an inner bully that delights in telling us how we should be doing better, how we are useless or how others would cope better or whatever. But the fact is that we are doing the best we can and the last thing any of us needs is someone giving us a hard time – especially when that someone is ourselves! Watch your inner chatter and remember it’s your choice whether you listen to it or not – treating yourself with kindness and nurturing yourself will help you be more resilient. Gather your cheer leaders One of the things that can spur on sports teams is cheerleaders and as individuals they can help as well. Talking to a friend won’t make our problems go away but somehow it can help and of course they can help us make sure we are looking after ourselves. Spending time with friends is good for us, not just when we talk about problems but simply having fun is good. We are designed to have connections with other humans, the number we need might vary but almost all of us do better when we have regular times with friends who we find supportive. But perhaps the most important thing is that we don’t need to wait for a challenge or crisis to build our resilience we can start right now. Midlife Madness It would be fair to say that for 5 decades (as a child it wasn’t a concern) I have been aware of my weight and shape. Now I’m not saying this to start a rant about feminism and our bodies much of my motivation to remain a reasonable size and shape is do with that I want to be healthy! I fully intend to throw a big 90th bash for myself so keeping a check on my weight seems sensible. The problem isn’t the principle, the devil in this case is in the detail. As in you need a blooming degree to understand it. Generally, I think I have a reasonable idea of what healthy food is – fresh food, at least 5 portions per day of fruit and veg (of varying colour!) not too much processed foods, plenty of water, fibre and not too much alcohol, I have my own varying definition of too much. In the past I must confess to having tried a number of calorie counting programmes as well as Rosemary Conley and the Atkins diet, though I never embraced the Scarsdale, Macrobiotic, South beach, Dukan, Alkaline, Keto or Paleo and believe me there are many more!
Then apart from specific diets there are ‘trends’ like vegetarianism, vegan or plant-based eating and ideas like intermittent fasting and 5:2 and 5 factor eating plans. And we can’t leave out the celebrity diets, everyone from Jennifer Aniston (zone diet) to Nicole Ritchie (pressed juice diet) and Jennifer Lopez (freshology) endorsing a particular diet. The latter usually being delivered to your door and massively expensive. But if I want straightforward healthy eating advice where am I to go. For years I ate margarine, never a fan, but thought it was better than butter then read it has lots of
free radicals so shifted back to butter. I tried skimmed milk (yuk hate the stuff) but then read that people who drink whole milk have lower risk of diabetes! So, I switched back. I used to buy low fat versions of yoghurt etc but then read that while low fat might have fewer calories that means they fill you up less so you are more likely to eat more later! I haven’t eaten meat for years and generally enjoy fish but then Tuna fishing damages dolphins, cod have been fished to near extinction and even salmon that says it’s wild has probably been farmed.
Fasting seemed to make sense to me, but there are so many types of fasting, intermittent, 5:2 (fasting for 2 days) 6:1 (fasting for 1 day) alternate day fasting, and time restricted feeding (eating only between 12 and 8pm each day) and I’m sure many more – yes another head in hands what to do moment, and then I read that the problem with fasting is that it focuses on when you eat not what you eat. So maybe I’ll give it a miss.
Trust me I am trying hard not to increase in size as I (inevitably) increase in years but almost every time I go to eat something, I feel I have impossible decisions to make. Then there is the whole portion size dynamic. I love eating food but also, buying it, cooking it, thinking about it but when I go to a pub I often share a meal not because I’m stingy but because I hate wasting food and simply couldn’t get through the plateful. But if I go home for some simple toast to eat, is it fresh white bloomer, wholemeal or seeded with butter, olive spread or flora? Maybe an elongated fast would be the answer.

South African Roast Plum, Sweet Potato & Quinoa Salad “This healthy warm salad is sensational in colour and taste and is perfect for a springtime supper”
Ingredients
8 South African plums, quartered and pitted 500g sweet potatoes, peeled and cut into chunks 2tbsp olive oil 400g can chickpeas, rinsed and drained 1tsp cumin seeds 50g whole almonds 1tsp balsamic vinegar 250g pack cooked red & white quinoa 2 large handfuls young spinach Dressing: 3tbsp olive oil 2tbsp lemon juice 1tsp wholegrain or Dijon mustard Salt and freshly ground black pepper
Method
Preheat the oven to 200°C, fan oven 180°C, Gas Mark 6.
Put the sweet potato chunks into a roasting tin with the olive oil. Toss to coat, then roast for 15 minutes. Add the plums, chickpeas, cumin seeds, almonds and balsamic vinegar. Stir together and roast for a further 8-10 minutes. Cool slightly. Microwave the quinoa according to pack instructions. Add to the roast fruit and vegetables with the spinach leaves and stir them through. Mix together the dressing ingredients. Share the roasted fruit and vegetables between 4 serving plates and sprinkle the dressing on top.
Cook’s tip: For extra protein, stir through some chunks of marinated tofu when you add the quinoa. For non-vegans, try adding slices of dry-fried halloumi or chunks of feta cheese.

Bloody Mary Baked Eggs “Who doesn’t love a baked egg!?! An easy brunch to feed a crowd and this packs a real punch”
Ingredients
4 Clarence Court Burford Brown eggs 3 tbsp ‘Stokes Bloody Mary Sauce’ 2 tablespoons olive oil 2 red peppers, de-seeded and thinly sliced 2 red onions, peeled and sliced 3 sticks of celery, trimmed and chopped, reserve the leaves for garnish 40g semi dried smoked tomatoes, roughly chopped 1x 500g jar chunky passata 3 tbsp ‘Stokes Bloody Mary Sauce’ 1 shot vodka (optional) Sea salt and freshly ground black pepper 4 smoked bacon rashers 40g feta cheese, crumbled A few sprigs of coriander (optional)
Method
Place a large, oven proof frying pan on a medium heat and add the olive oil. Once hot enough add the peppers, onion and celery, reduce the heat to low and cook for 10 minutes or until softened but still with a little bite. Add the smoked tomatoes, passata, splash of water, Bloody Mary sauce and vodka if using. Bring to the boil and then reduce the heat, season and simmer for 10 minutes.
Meanwhile pre-heat the oven to 180C fan/ 360f/ gas mark 6. Once cooked, make 4 indentations in the sauce and crack in the eggs. Cover the pan with foil and place in the oven to bake for 15 minutes or until the white and cook but the yolk is still runny.
In the meantime, fry the bacon until crispy and make the toast. When the eggs are cooked remove the pan from the oven and chop up the bacon and scatter over the baked eggs with the feta, reserved celery leaves and coriander leaves. Bring to the table and serve with toast.

Lemon and Thyme Loaf Cake This yoghurt-based loaf cake is a perfect light bake. Lovely with a sour cream lemon icing but it works equally well as a drizzle cake or just a sponge.
Method Ingredients
140ml vegetable oil 300ml plain or lemon flavoured natural yoghurt 3 large Clarence Court eggs 1 teaspoon almond essence A few sprigs of fresh thyme or lemon thyme 280g self-raising flour, sifted 1â „2 teaspoon bicarbonate of soda 240g caster sugar 2 tablespoons runny honey Zest of 6 lemons 200g full fat cream cheese 150g icing sugar, sifted 50g sour cream
Pre-heat the oven to 165c/ 325f / gas mark 3.
Grease and line a 1.5 litre (2 lb.) loaf tin with baking parchment. NOTE (loaf tins differ in surface area, this recipe is for a high sided, traditional angled tin. As long as the raw mixture comes up 3⠄4 of the way up the tin you’ll get a good even rise when baked.) Place the oil, yoghurt, eggs, essence and few finely chopped thyme leaves into a mixing bowl and mix well until combined. Stir in the flour, bicarb and sugar until well combined then add the honey and the zest of 4 lemons.
Spoon the mixture into the tin and place in the oven, bake for 45 minutes or until risen and golden. Insert a skewer into the centre, if it comes out clean the cake is ready, if not return the cake to the oven for a further 5 Once cooked, allow to cool in the tin on a cooling rack for 45 minutes then remove from the tin and cool completely. Meanwhile make the icing. Beat the cream cheese and icing sugar together until smooth, stir in the sour cream a little at a time and zest of 1 lemon until smooth and spreadable. Transfer to a small bowl and place in the fridge until needed.
When ready to assemble, place the cake on a board. Top with the chilled frosting, scatter over a few thyme leaves and the remaining lemon zest. Slice and serve.

Fry’s Footie Corner
At the time of writing this column, we are in the midst of an epidemic that is affecting the whole world and we are living through unprecedented times. It has closed bars, restaurants, nightclubs, concerts and of course sport and we are feeling the full effect as one of the 71 remaining clubs in the EFL.
Make no mistake, these are tough times. The professional game has been suspended until at least the end of April and I think we are all expecting that to be extended further. The conclusion of the Premier League, EFL and National League right now is still up in the air as the law makers made the difficult choice to null and void any division below that level.
We very much want our season to finish. And not because we are in a good position in the league, but because it is very much important for the integrity of our game moving forward. Whether that happens behind closed doors or in front of supporters is very much a decision that changes every day due to the ongoing crisis.
For someone like me that lives and breathes football, it is tough. It is tough to be at home. It is tough without sport. However, I, like everyone else, know that my duty is to stay indoors and I urge everyone else to do the same so that we can beat this virus and get back to some form of normality. I think most supporters recognise that football plays a massive part in their lives. They might complain about a performance or a result, but they do so because they care. When their football club is not involved, they miss it and they miss it more than ever right now.
We are fortunate at Peterborough United that we have three co-owners who care deeply about their football club and they will do all they can to make sure we come back stronger. Some clubs won’t be so lucky and I fear what the picture will be like when we do eventually get back going. However, football is not the focus right now. Health is. We need to fight together to beat this virus and hopefully my next column will have a more rosier picture. Stay Safe

The Ballroom’s Ready for Kevin Clifton Former Strictly Come Dancing champion Kevin Clifton is to star in Baz Luhrmann’s smash hit Strictly Ballroom The Musical, coming to Milton Keynes Theatre this October. After seven glorious years on Strictly Come Dancing, last week Kevin announced his departure from the series and now he makes a full-time move into the world of musical theatre in a role that couldn’t be more perfectly suited. Kevin Clifton said: “I’m beyond excited to be finally fulfilling a lifelong ambition to play Scott Hastings in Strictly Ballroom The Musical. Eight years later he made his screen directorial debut with ‘Strictly Ballroom’, the first instalment in Luhrmann’s acclaimed Red Curtain Trilogy. The vibrant film enjoyed staggering success, winning three awards at the 1993 BAFTA awards and a 1994 Golden Globe nomination for Best Picture, going on to become one of the most successful Australian films of all time, earning more than $80 million at the box office. In April 2014 Strictly Ballroom The Musical had its world premiere at the Sydney Lyric Theatre.
