LETTER FROM THE EDITOR

From the Roots

T

he older I get, the more I cherish time with those I care about. I admit I’m a sap; a sap who loves the holidays. But, I know it’s all too easy to let our own lives and challenges steer us blindly through the holidays without a single good deed done for another. The next thing you know, it’s January and the magic is gone. I know I’ve done it. Have you?

What is this thing they call “the magic of the holidays”? Is holiday magic real? How do we experience it? Do we simply cast aside our hardships and fall into ignorant bliss like we see in movies? I was brought up to believe we have a choice every day: We choose either to live life in this moment…or not. We have a choice to be present and feel that magic. Why pass up the opportunity again this year? Maybe this holiday season, no matter your religion, it’s time we exercised the love in our hearts. Maybe it’s time the magic became personified in you and me. Could we make this practice second nature someday? Someone told me long ago – and it seems to ring true in so many contexts – that it doesn’t matter what happens to you, it only matters how you perceive and react to it. Do you agree? I have a couple of friends who inspire me daily. They both have life challenges that would make most of us want to say, “Why me?” But, they’ve made conscious decisions to perceive their situations in the most productive and happiest way possible. They choose to smile and enjoy moments throughout the day.

This holiday season, I hope you discover a little bit of that special something that helps you find the magic in your heart (it’s there inside you already), and choose to enjoy those around you. Take time to celebrate what brings out the best in each of us. We hope this issue of Aging Tree Illustrated and the insightful articles by our wonderful writers inspire you as well. In a time of year when we focus so much on family, I am grateful for all those who are a part of the Aging Tree family: staff, writers, partners, clients and friends. I sincerely thank them for the great work they have done for seniors. And, to our readers: Thank you for your continued support of Aging Tree Illustrated, and doing business with our business members and advertisers. We are here to help you when you don’t know where to turn next. Happy Holidays to you and yours! May you choose wisely this year and find the happiness that leads to holiday magic, and may that magic fill your heart all year through. Make your days great…you’re in charge of them.

The Magic of the Holidays

Kids Believing and the Joy that it Puts in Our Hearts

C

hristmas is a magical time of joy, a special season when the hearts of adults turn to thoughts of others and children look forward to joyful delights. The link with

childhood and memories of the season is at the heart of the holiday’s magic. Laura Ingalls Wilder, a writer beloved for her stories of growing up on the American frontier, wrote that at Christmas, “Our hearts grow tender with childhood memories and love of kindred, and we are better throughout the year for having, in spirit, become a child again at Christmas-time.” Although today the holiday is exploited for profit, and even though its sublime spiritual message is often corrupted, it is still the time of year when seniors think of others. Despite the holiday’s source as a religious celebration of the birth of Christ, Christmas is the most widely celebrated day all over the world. Christmas is close to the hearts of many people including seniors —whether they are observant Christians or secular enthusiasts.

Capturing Magic and Joy

It’s a holiday with a unique magic. As, Nor-

man Vincent Peale, an influential religious leader after World War II noted, “Christmas waves a magic wand over this world.” This inspirational clergyman and bestselling author advised that the “magic” of the

season would not be found in gifts under the Christmas tree. So from what sources does the “magic” of Christmas spring? Whether we see the secular celebration of Christmas as commercialism, the very products of commerce – feasting, wrappings, colored lights, and trees – can help us invoke the “magic” of the day. It’s images, ornamentation, films, and carols give us rich sources of imagining, experiencing, and hearing the timeless message of the birth at the heart of the day. For example, the secular story of Santa Claus can be interpreted also as an invitation to “return to wonder” and enchantment, that we might see the possibility of miracles once again. It is this sense of wonder – that seniors often observe in children – that preserves the “magic” and “joy” of Christmas by preventing the spiritual meaning of Christmas from being swamped by the materialism of secular culture.

By Carol S. Grigas, Ph.D.

Carol S. Grigas has a Ph.D. in history and writes about social and cultural topics for several publications.

Finding the Source of Today’s Magical Holiday

It’s unimaginable now, but in 1800, Christmas was hardly celebrated. Those first European Americans, the Pilgrims and Puritans, ignored the festive aspects of the holyday. However, in 1607, John Smith reported from the all-male settlement of Jamestown, those less religious colonists managed to make merry and consumed a bit of the grog. In the eighteenth century, even the endlessly sociable colonial Virginians limited their Christmas observances to attending church, dinner, dancing, some evergreens, and visiting, with the wealthy adding fox hunting and balls – all without the presence of children! In the early 1800s businesses continued to ignore the holiday. However by 1900, Christmas had become the biggest annual celebration and had taken on the form that we recognize today. The transformation happened quickly, and came from all sectors of society. cont. pg 9 |8|

In the 19th century the U.S. became industrialized and urbanized, moving from a rural and agricultural economy that required large families; it was this change that also transformed the idea of Christmas. Christmas was no longer centered on adults – with the church services and socializing – but focused on the family’s few children. The preparation and eating of the feast, decorations and gift giving, entertainments and parlor games - all became some of the hallmarks associated with a more festive celebration. Many factors produced this shift to a more “magical” and child-centered Christmas. One of the first to aid this reimagining was America’s first bestselling author, Washington Irving. In The Sketch Book of Geoffrey Crayon, Gent. (1820) published over 20 years before A Christmas Carol, Irving portrayed the harmonious warmhearted English Christmas traditions that he had experienced while visiting England. The Sketches had an immediate impact and Christmas celebrations became more festive. Adding to the transformation was the publicity given to the child-centered celebrations of Queen Victoria and her husband, the German-born Prince Albert, who imported the

custom of the decorated Christmas tree. The royals bedecked Winsor Castle with decorated Christmas trees surrounded by heaps of gifts – one for each of the couple’s nine royal off-springs. Also in the 1840s, Charles Dickens penned his immortal A Christmas Carol, the story of a lonely and mean-spirited wealthy businessman who – after visits from three ghosts – undergoes a Christmas conversion, enthusiastically adopts all the customs of a nostalgic English Christmas, and pledges his fortune to benefit the less fortunate, saying, “I will honor Christmas in my heart, and try to keep it all the year.” Both Irving and Dickens believed that a merrier and more convivial Christmas might restore social harmony and well-being lost in the industrialization and urbanization of the modern world. Dickens especially felt a special affection for the season’s moral lesson and its message of love and generosity. In A Christmas Carol, the tale of Ebenezer Scrooge, a man who is given a second chance to live a good life, Dickens was encouraging his readers to achieve a similar salvation despite the influence of a selfish world’s muting of their own generosity and compassion. Washington Irving and Charles Dickens did not invent the family-oriented Christmas, but their books helped to popularize and spread the traditions of the festival, by stressi n g themes of family, charity, goodwill, peace

and happiness, encapsulating the merry and festive ideal of Christmas and its “magic.”

Creating the Memories of Seniors

Spurred by the images created by Irving and Dickens – and following royal example – the U.S. adopted the features

of the traditional English Christmas. By 1856, President Franklin Pierce had installed a Christmas tree indoors in the White House. Others claim the first tree appeared during the presidency of Benjamin Harrison in 1888, or 1889, or 1891. Whoever was first, the Christmas tree became part of the U.S. holiday, a festive time also influenced by the customs of the millions of immigrants who arrived on our shores between 1865 and 1924, all of which combine to make up the joyful memories that seniors share today. Italians brought the custom of creating a presepio, or manger scene, which is set Aging Tree half page Ad_Layout 1 2/19/14 10:45 AM Page 1 out in the home on the first day of Advent

and is a focal point of prayer throughout the season. Mexicans contributed the custom of cutting intricate designs in brown paper bags to make lanterns, or farolitos or illuminares. Inside a candle is nestled in sand and the farolitos are set along sidewalks, rooftops, and outdoor walls to illuminate the community in the days before Christmas. Seniors may not have memories of a manger scene in their childhood home but delicious food usually plays a big role in their memories. Germans added the roast goose and red cabbage followed by stollen. Other desserts might include the Italian panettone and Greek baklava, all different and what makes Christmas food such a treat.

A Timeless Message for Young and Old

Achieving the truly enchanting joy of Christmas remain at the heart of contemporary life for young and old as addressed in compelling films and stories. For example, the true meaning of Christmas is the focal

point of Frank Capra’s film It’s a Wonderful Life (1946), and in Dr. Seuss’s How the Grinch Stole Christmas (1957). Dr. Seuss was probably influenced by Charles Dickens in creating the Grinch, who undergoes a Christmas conversion: “Then the Grinch thought of something he hadn’t before! What if Christmas, he thought, doesn’t come from a store. What if Christmas...perhaps... means a little bit more!” Some of the most astute comments about the joyful meaning of Christmas are found in the words of authors who write for children. The cartoonist Charles M. Schulz, originator of Charlie Brown and his friends in the beloved comic strip Peanuts, has defined the essence of the season as “doing a little something extra for someone.” Charles Dickens, a true believer in the “magic” of Christmas, gives the final words to a child, the story’s memorable Tiny Tim, who chirps the ultimate season’s greeting, “God bless us, everyone!” As the writer Mary Ellen Chase noted, “Christmas, children, is not a date. It is a state of mind.” Comedian Bob Hope extended that thought when he said “My idea of Christmas, whether old-fashioned or modern, is very simple: loving others. Come to think of it, why do we have to wait for Christmas to do that?”.

What Gifts to Get the Grandchildren for Christmas

Tech-toy Options For Toddlers Through Tweens

T

ech toy options can be a little overwhelming; the technology seems to change as fast as grandchildren grow! If you’re planning to purchase tech-related holiday gifts for your grandchildren, but aren’t sure where to start, we can help. When used in moderation and in conjunction with other types of play that don’t involve screens, tech-toys can open up imaginations, comprehension and worlds of fun. Keep in mind that many of the technology toys on the market for toddlers through tweens today interface with smartphone/ tablet applications (apps); something to remember if you’re purchasing techy gifts for the youngsters in your life. If apps are needed, be sure he or she will have access to them. Some popular and highly rated tech toys for giving this holiday season include these below. They can be found online through shopping sites such as amazon.com, or at major toy retailers:

Toddlers

• Numbers, letters, sounds - Toddlers ages 2 - 3 are starting to learn their numbers, letters, and letter sounds, so electronic readers (eReaders) have apps they may enjoy. Of course, several eReaders are on the market, but experts point to a couple that fill the bill well, including the LeapFrog Tag Junior Book Pal, or an Amazon Kindle. Many eReader titles

interface with “read-to-me” features and touchscreens for enhanced storytelling, too. • Little kid tablets – When they’re 3 - 4 years old, little ones may be ready to get more interactive with their technology. VTech has developed the InnoTab that has much of the functionality of the iPad, for example, without all the apps adults use (email, texting and web searches, for example). The InnoTab is loaded with educational games, and eReader and more. The folks at LeapFrog have something similarly interactive: the LeapFrog LeapPad.

Pre-School

• Interactive watches - With the Kidizoom Smartwach Dx, children can take video, photos and with its built-in motion sensor, engage in some action challenges, too. It’s preloaded with several touchscreen games and includes a watch, time and more, and is suitable for ages 3 - 5. • Active gaming - Pre-school-aged children have energy to spare, so why not get them moving with active video games such as Wii. Video games can be played as a family, and developmental experts recommend games like Just Dance Kids and Epic Monkey. This one’s best for children at least 4 years old.

Early Elementary

• Talking dinosaur - CogniToys has developed a soft talking dinosaur powered by IBM’s Watson computing system that can talk to kids about a variety of topics when they ask “who,” “what,” “why,” and “when” questions. Joined with an app, it connects to Internet and

stays alive through the power of Wi-Fi. It’s a fun gift idea for kids ages 4 - 7. • Music composition - Have a young music lover in your life? Thinkfun has created a set of musical cards – the Compose Yourself Music Card Game – that work in combination with a website that allow children to compose music in more than 200 million combinations! • Animation - Crayola is getting in on tech toys, too. The Crayola Color Alive Easy Animation Studio is a coloring system that ties into an app. Paired together, the animation studio and app allow children to color and animate characters.

Later elementary

• First tablet - If your favorite 9 - 12 year olds are ready for computer exploration, enter that complicated world with a simpler first step: a two-in-one-tablet. The Kurio Smart Windows Tablet comes with a Windows operating system, more than 40 pre-loaded apps, a 9-inch touchscreen and detachable keyboard. • Handheld games - Handheld gaming is still very popular with young teens, and the new Nintendo 3DS XL portable video gaming system is built to last. It offers 3-D technology, and games are available for solo or connected play.

Middle school

• Drones – Your teen will love being able to perform stunts and tricks from high above with the Sky Viper HD Video Drone V950 by Skyrocket Toys. This drone can record video and photos, too. • Tiny robots - Teen tech lovers would get a kick out of an Ozobot. It’s a small, programmable robot that measures just over one inch in diameter and height, and teaches the basics of computer coding and programming in fun, interactive ways. It works with apps for custom builds and games, too. Sources: Parenting.com, thetoyinsider.com, amazon.com

With all these errands going on let’s make this New Year’s Resolution; relax and have fun. Remember to take care of your body and mind. Making time to relax and do something nice for you. If we made a promise to ourselves like that, wouldn’t that be a wonderful gift? Below are ways DeLand Natural Market can help you to stay healthy and relaxed during the holidays. •

Studies show that consuming healthy food will keep your energy levels high.

Taking vitamins and minerals are great ways to stay focused and feel good.

Magnesium Supplements will help with digestion and low energy.

Drinking alkaline water helps to eliminate unwanted toxins.

Taking enzymes and probiotics will help with bloating and feeling tired.

Oregano Oil is an old remedy for when you feel a little under the weather.

Chamomile Tea will help with relaxation after a long day.

Using therapeutic oils such as Lavender is a great way to unwind and relax.

Using natural cleaning products around the house is proven to reduce allergies in children and pets.

Cooking with non-irradiated spices will keep you and your loved ones healthier and makes the food taste fresher and more flavorful.

How to Give the Gift of Yourself for the Holidays

L

ast holiday season we talked about the dilemma of being alone for the holidays and some of the opportunities this can provide for enjoying the holidays in unique ways.

ments with some of his siblings and children to keep up to date and for prayer time together. He is one of those super champions of phone talking that has a wireless hand-free headset.

Yet, what if you are on the other side of the dilemma? What if you have friends or family who will be spending the holidays alone? How can we be a good friend to those who need a good friend, this time of year?

So reaching out to our friends and family via phone is an option that most anyone can do, even if we are not phone talkers. It may be more out of our comfort zone, yet it can be done.

For some of us it is natural to reach out to friends and family. For others, it takes some planning and strategy. My parents are a good example of this phenomenon. My mom is not a phone talker. Now if you are fortunate enough to get her on the phone, it can be very rewarding, yet the chances are slim. My father on the other hand is a champion phone talker, in fact he has daily and weekly set appoint-

According to Counselor and Author Gary Chapman, there are five basic love languages, or ways to show others that we care about them. Phone calls fit into the category quality time. Quality time is being able to together in a way that facilitates communication and opportunities for creating memories.

Sorry! No Wi-fi Talk to Each Other.

By Loren Fish, LCSW Sadly, due to our society’s increased reliance on social media, these quality time interactions are happening far less in person. I am pained to see families out to eat at a restaurant, and each one is occupied by their mobile device. It seems to me that they are not taking advantage of these precious opportunities for making memories with their loved ones. The four other love languages are gifts, physical touch, acts of service, and words of affirmation. Now not everyone has the same love language as you, so don’t get frustrated if you are “talking” to them in one love language and they do not understand or appreciate it to the extent that you have given. Gift giving is something that everyone understands during the holidays, yet this institution has been taken over by commercialism and consumerism. This has led some people to change the way that they give gifts during the holidays. One family I was talking with recently said that they have decided to exchange names and then each family member was asked to “make” a gift for the name they had drawn. This has been meaningful for this family because the person giving the gift has to learn more about the person getting the gift and also they give a part of themselves when they give their home-made gift.

DECEMBER 2015 | ONE-STOP Senior Care | Aging Tree.com • 866-320-8803

A few years ago for Christmas, I took on the task of creating a photo album for each of our four boys including pictures of themselves through the years, from a baby to an adult. It was not only meaningful to them, yet it was rewarding for me to create. One of my father’s love languages is quality time, so during some past holidays, members of our family have given him “coucont. pg. 35 | 34 |

pons” for opportunities for quality time, such as doing yard work together, working on his antique truck, or spending time in nature. Of all the gifts he receives, these seem to be most cherished.

5 Healthy Living Tips for the Holidays

The next love language is physical touch. This does not need to be sensual, and can be meaningful and rewarding for both involved. An example would be a touch on the hand, arm or shoulder. Another example would be a handshake or a hug. Some people tend to be more natural with this love language, giving and receiving. For others, physical touch can be very awkward. So you may need to ask permission if are wanting to communicate your love in this way. For example, you might say, “Would you be okay with me giving you a hug?”

Quick

Tips

1. Tap into the fountain of youth. Staying well hydrated amidst all the extra activity will be important to for a happy heart, digestion and mind.

Another love language is acts of service. My wife tells me that I am “never more attractive than when found cleaning the toilet or doing the dishes”. For some, being the recipient of acts of kindness can speak volumes of words of love. I have many friends who unfortunately have gotten to the point in their lives where they cannot do for themselves as they used to, because of physical limitations. These friends also have a lot of pride, and may be struggling with not being able to do for themselves as before, yet with some tact and strategy I believe that these would feel very loved if offered some acts of service during the holidays.

2. Flood your body with health giving foods including fruits, vegetables and good grains to help support a balanced immune system. Allow room for those family favorites. Aim to support your food goals with a plan you have designed ahead of time. Smaller more frequent meals will keep your blood sugar, mood and energy levels in a good place.

Words of affirmation, is the last love language on our list. Words of affirmation can be spoken in person; over the phone; over the internet; recorded by audio and/or video, or put down in writing. If you think about it, a well-chosen, well written, personalized Christmas card or holiday letter can have the same desired effect, if not better, than of speaking words of affirmation in person.

And when thinking of the usual suspects on our list for gifts and cards and holiday goodies, how can we add another love language or two to that token of holiday cheer, to make sure we are heard loud and clear, “You are LOVED!”? Merry Christmas.

As you can already see, one of the joys of love languages is that they can be combined. A word of affirmation can be spoken along with a kind touch. Or if acts of service are done together it will most likely, also include, quality time. And as we mentioned earlier, a gift can be given in such a way that it can contain all the other love languages. What a wonderful opportunity this holiday season affords us to reach out to those who may need to feel loved. Take a moment at the beginning of this season to consider who you may be overlooking. Who is someone that only you can bring a ray of sunshine this time of year. DECEMBER 2015 | ONE-STOP Senior Care | Aging Tree.com • 866-320-8803

3. Stress less and sleep more. Taking a break is a great idea for everyone. Guard your sleep because that is when most of the repair and healing of our body happens. 4. Take time to stretch and enjoy the movement or exercise plan you have in place. Your heart, mind and joints will thank you. Don’t have one yet? This is a good time to begin planning. 5. Stay involved and connected with friends, family and your community. Holiday traditions will naturally grow and change as time goes by. Take this opportunity to write your new story. Cheree M. Wishing you a Merry Christmas … ORLANDO PHILHARMONIC ORCHESTRA New Music Director Passionate About Music And The City Beautiful In May 2015, the Orlando Philharmonic Orchestra announced it had appointed New-York-based conductor and cellist Eric Jacobsen as its Music Director, following a two-year, international search.

1101447.1

Jacobsen, 33, is the co-founder Artistic Director of innovative NY-based orchestral collective The Knights. Hailed by The New York Times as “an interpretive dynamo,” he has built a reputation for engaging audiences with innovative and collaborative projects. Jacobsen will serve as the Orlando Philharmonic’s artistic leader and primary conductor in the 2015-2016 season. “Eric is exactly the musician to lead the Philharmonic into the future” said Orlando Philharmonic Executive Director David Schillhammer. “His artistic vision, his passion for both traditional and new symphonic works, and his collaborative spirit embody what we want the orchestra to be for this community.” “From the first day I arrived in Orlando,” said Jacobsen, “I knew I wanted to find my place in this vibrant and beautiful city. The continued building of a great orchestra goes hand in hand with the continued building of Orlando—a city already rich in culture and art. “I’m continuously in awe of how our perception and appreciation of music—even that of the most beloved composers—continue to grow. This season and every season, the rich symphonic classical tradition will inspire our journey. Together, we can build on the classical tradition and give life to new works.” The 2015/16 season explores the Romantic perfectionist Maurice Ravel. “Ravel loved and championed American music,” explains Jacobsen. “My hope is that Ravel will be a ‘North Star’ guiding us through next year and opening us to new sounds, new connections, and new relationships.” “This season,” he adds excitedly, “the orchestra and I look forward to embarking on a musical voyage with our audience.” For more details on the entire 2015/16 Season, visit OrlandoPhil.org or call 407.770.0071.

Could You Use A Miracle This Christmas?

W

ith Christmas fast approaching I laid awake one morning and inspiration overcame me for this month’s topic. Christmas is all about the miracle of God showing up in the form of an infant to introduce himself to us and show us the way to heaven. Sadly far too many people believe that God is no longer in the miracle business today. We see him as detached and disinterested in our troubles and trials. The holidays seem to intensify feelings of loneliness and depression for many. I believe that some of you may be in need of a miracle this Christmas. I want to share a personal story of a miracle God has done in my life and hopefully it will help you to find a miracle in your life this Christmas or bring more joy into your Christmas.

In Early 2013 we were seeing the farm expand and being blessed in many ways. But at one point we began to experience some vandalism. Minor things like someone turning off water valves or cutting water lines but serious enough that it could cause major damage to the crops if undetected. It was at that point that the idea popped into my head, “We need a dog.” Where this idea came from I don’t know. This was not a thought I would have ever expected to have. It has always been my job to deal with the animals as they got old and died. After the last one I swore no more pets, so

 told us she had a friend who was looking to give up her Aussie. After some thought we told her to bring it by so we could meet her. On Mother’s Day they showed up at the farm with this 11 month old tricolor Aussie. We were a bit disappointed because we had been hoping for a merle (mixed and dappled coloring). That is when they began to tell us about the behavioral issues they were having with the dog. They had even tranquilized her for the ride up from Vero Beach. After some discussion we agreed to keep her for a few days to see how we got along.

I had experienced the miracle of May’s unconditional love and it changed me. I had thought I was rescuing her but she had rescued me.

I am in farmer but I am also a nurse. I know that once we reach fifty we tend to experience a season of life marked by loss and difficult changes. But I had never experienced it until a few years ago. Between 2010 and 2012 both my father and younger sister passed away. I had to let go of a career in nursing to follow farming. We went through the closure of our church and the loss of many friends as they scattered to other congregations. Our only child moved across country. These and additional other life changes hit us hard. I saw my wife grieving deeply but thought I was handling it pretty well. Little did I realize that I was sinking into a deep depression. In the midst of this God stepped into our lives with a miracle. It didn’t seem like much at the time but now that I look back at it I realize God used one of his humblest creations to pull me back into the land of the living.

for 9 years we were pet-free. But something in me was stirring a desire to get another dog. Our last dog had been part lab and part Australian Shepherd. We got her for my young

daughter because they make a great pet for kids. Since we have a farm with lots of children around getting an Aussie made sense. One day I was talking to my wife Pat about it when a farm member overheard us and

We renamed her May and she began to settle in immediately. She never gave us a moment of trouble that first night and slept quietly at the foot of our bed. The next day we went for a ride in my truck while doing errands and she sat quietly and enjoyed taking in the view and hanging her head out the window. Within 24 hours she had firmly attached herself to me and has been a faithful companion ever since. She is never far away and is constantly watching over me. I had grown up with dogs but never had one that I could say was my dog. There was something magical about the whole experience. She seemed so attuned to my moods and when I was sad would come over and curl up with me and even give me small kisses. I found great joy in watching her play and just being herself. Over the next few weeks people began to notice I was laughing more and in better spirits. The depression that had slowly settled in on me was lifting. I had experienced the miracle of May’s unconditional love and it changed me. I had thought I was rescuing her but she had rescued me. Anyone who has an Aussie knows they demand a lot of attention. When I could not give her enough attention she would get | 48 |

into mischief pulling sprayers out of pots and hiding tools left on the ground at the edge of the woods. May needed a play mate and my wife wanted a dog of her own. So we found a local breeder and in December of 2013 May and I made the trip to Sanford and brought Lily, our Blue Merle Aussie home. The rest is history as they say. It has been 2 years and they are the joy of our lives. They play and seldom get into mischief anymore. Lily has made it her mission to hunt out any critters that get into our fields. The rest of the time they frolic on the farm and chase the golf cart. I find myself laughing and enjoying them every day. I once read a sign that said that the best therapist cannot do as much in a year as

dog for you and your life-style, but take a chance and help some poor dog who needs a good home. I am guessing that soon you will be wondering who rescued who and you will experience a miracle in your life like I have. I wish you a Merry Christmas. Remember today is a good day to have a good day and make it a good day for some deserving dog. 1 cup finely crushed shortbread cookies 1/3 cup finely chopped pecans, plus ½ cup coarsely chopped pecans 2 tablespoons dark brown sugar 1/8 teaspoon, plus 1/2 teaspoon fine salt 2 ½ tablespoons butter, melted 2 8-ounce packages cream cheese, room temperature ¾ cup granulated sugar, plus ¼ cup sugar 2 tablespoons flour 2 large eggs 1 ½ teaspoons vanilla extract DIRECTIONS: Preheat oven to 300 degrees. Line 16 standard muffin tin cups with paper liners. In a medium size bowl, stir together cookie crumbs, finely chopped pecans, brown sugar and 1/8 teaspoon salt. Stir in melted butter until mixture resembles wet sand. Evenly divide in paper liners and press down firmly to form a solid bottom layer. Bake until set 6 to 8 minutes. Transfer pans to wire racks to cool completely. In a large bowl, using an electric mixer on medium speed, beat together cream cheese and 3/4 cup sugar until blended well. Beat in flour and remaining salt. Beat in eggs one at a time and vanilla. Divide filling equally among muffin cups. Bake until set 16 to 18 minutes. Transfer muffin pans to wire racks and cool completely. Refrigerate for at least 3 hours. In a small skillet, stir together coarsely chopped pecans and 1/4 cup sugar over medium heat until sugar melts and nuts are coated. Transfer to oiled parchment paper and separate nuts. Right before eating, remove cheesecakes from refrigerator, top with pecans to garnish. (Original recipe courtesy of Country Living Magazine)

VARIATIONS: I used Lorna Doone cookies for bottom layer.
