new season arrives! I always welcome a new season with excitement and hope that the changes open doors to glorious new possibilities.

Fall is my favorite season. Football, hearty meals, people gathering, pumpkins. When cool air begins to blow I can smell the excitement of the holidays looming. Change can be good and embracing change is key to growth as human beings. This month Vickie delivers us a wonderful story about Mr. Jim Johnson as one of the first black baseball players for Stetson University and how he overcame adversity. We learn about protecting our health during the flu season with Cheree; Scott helps us understand the importance of using an attorney to make sure your legal documents are in order, and so much more. This month we also welcome a new addition to Aging Tree Magazine. Evelyn Dedmon, RN from Atlas Care Management will be helping our readers understand more about dementia and Alzheimer’s each month. The giant panda… though the guide on any tour you may go on will tell you pandas are more “American” than Chinese. Germany? The golden eagle. Greenland? The polar bear. Scotland? The Unicorn.

es, you read that correctly! The plaided land of lore and legends, including Nessie, the Monster of Loch Ness and Gaelic Mythology, h as a national symbol of the unicorn. In fact, it has been their national animal since the 12th century. Scotland is famed for its long love of history and legends, so it’s not exactly a surprise they chose a mythical creature as their national animal, especially one that symbolizes purity and innocence alongside masculinity and power. Just imagine: A Unicorn spotting scavenger hunt through Scotland. What could be more fun than that? And there are over 1100 to see! First Stop: Edinburgh Castle – Scotland’s most iconic attraction. Located on an enormous rock looming over the heart of the capital city, this 12th century castle houses Scotland’s Crown Jewels, the Stone of Destiny, the National War Museum of Scotland and

much more…including our first Unicorn sighting. Next Up: Holyrood Palace Gates – Holyrood Palace is Edinburgh’s royal residence, and holds

This chivalrous group is made up of 16 knights and the country’s monarch. Tucked away on the right flank of St Giles' Cathedral is the immaculately decorated chapel, and it holds none other than, you guessed it—a Unicorn. And where do you suppose that unicorn can be spotted? Why, the Queen’s throne of course! Each member of the order is represented by a seat in the chapel, including the Queen, whose chair features an ornately carved wooden unicorn. Where else can you search for unicorns? • The Mason’s Pillars – Two stoned pillars are crowned with

Keeping His Eye on the Ball Jim Johnson marks history through confidence and focus In 1964, Jim Johnson wasn’t your typical college student. And, in 2018, he’s still not a typical husband and father. That’s because grit, resilience, determination, faith and interpersonal skills led

Johnson to not only advance race relations in DeLand in the early 1960s, but continued to define his character 50 years later as one of the few African-Americans who

graduated from Stetson University in 1968. When Stetson University was one of the first private universities in Florida to admit African-American students, Jim Johnson of DeLeon Springs was one of the first to accept the offer. But, he hadn’t aimed to be a “poster student” for desegregation of the school. He had a more personal goal in mind. "I was interested in education," Johnson said. "I had already had water and ice cream poured over me at Woolworth and Penneys in Downtown DeLand during sitins, and I wasn't interested in that at Stetson. I just wanted an education." Simply put, Jim Johnson was looking for learning and the funding to get it. Johnson was a football player and team captain at the all-black Euclid High School in DeLand, and graduated valedictorian of his class. Upon graduation, he was offered a scholarship to play at Florida A&M University, a

When Stetson University approached Johnson about attending its school, he wondered if he could get an offer comparable to that of Florida A&M. He knew what he’d need: a full scholarship. Ultimately, that’s what Stetson offered, while also giving him an opportunity to try out for the baseball team. Johnson’s matriculation benefitted him and the university. By enrolling African-American men including Johnson (and a year later, women), Stetson not only would be progressively and lawfully moving forward – after all, segregation has been deemed unconstitutional for more than a decade – but also would be eligible to receive federal grants for infrastructure projects. Johnson’s family was a bit worried about his attending the newly integrated university, though not concerned that he'd be physically harmed. But, by all indications, it would be bumpy. "My father was very protective of me and taught me where to go and what things to do (in town), and how to interact with other races,” said Johnson, and he moved forward confidently because of it.

Johnson recalls that he and his fellow black students largely were ignored by other students on campus (at least not directly confronted) and received some pushback by administration, but were received well by faculty. Every group appeared to be in a different phase of acceptance. Johnson made the baseball team at Stetson. He played the game well and helped the team win, which earned him respect on the field. "They did some things (to me), but mostly off the field because when we were on the field they found out I could play; that I could hit the ball. They liked that because we won,” he said. Johnson didn't know at the time, but research he conducted only last year for a three-part Stetson Magazine feature, revealed he not only was the first ever African-American baseball player on a predominantly white Florida college or university team, but the likely first in the entire Southeastern United States. Indeed, Stetson was on the early curve of college desegregation in the region. Johnson graduated in 1968

from Stetson University and was sweat within minutes. Johnson interacted with others of different races. "I said, 'I went to Stetson, what do you expect?’” recalled Johnson. “And, he said, ‘But you're black!'" It wasn't always smooth sailing in the corporate world, though Johnson knows his experience at Stetson helped him become comfortable with being uncomfortable. A salient memory illustrates one business manager's reluctance to purchase from IBM because of Johnson's skin color. The man wanted another salesman and then he'd buy. "Jim is your salesman. There's nothing to work out," said his Johnson’s manager. In the end, Johnson closed the deal and thousands thereafter, during his decades in corporate sales at IBM. He retired as an executive with the company. The determination and confidence with which Johnson has pursued his goals is nothing short of supernatural. In fact, Johnson and Dottie’s faith in God is why they’re still here, he said. "Our faith in God has made us stronger and able to endure harsh circumstances,” said Johnson. “We keep our focus on our goals and never give up.” Have you considered what your legacy will be? Another Reason to Celebrate

Staying Well as We Head into the Fall Holiday Season

S

taying well as we head into flu season and the holidays may pose a special challenge depending on your experiences in the past and your current state of health. This time of year offers the opportunity for increased travel as well as entertaining guests from places where the weather is rapidly becoming colder. A common theme with my clients concerns strategies to be well and stay well especially when the routine is changed up a bit. What can we do? The need to invest into your Plan for Health, that we speak of often in this Living Well Branch, is especially important. Eating a diet rich in fresh fruits and vegetables especially those which are rich in nutrients such as vitamins C and E, beta-carotene and zinc. This includes a wide variety of brightly colored fruits and vegetables, including berries, citrus fruits, kiwi, apples, red grapes, kale, onions, fresh garlic, spinach, sweet potatoes, and carrots. Healthy whole grains, complex carbohydrates that support a steady supply of energy, and lean proteins that are minimally processed without harmful additives like antibiotics or excess salt and healthy oils are a great start. Avoiding processed foods that contain increased salt and sugar, especially high fructose corn sugar

will decrease the stress on your immune system when exposed to a cold or flu “bug”. We often see evidence of the sugar and immune function connection at the end of this month with the increased consumption of treats at Halloween. Consult a licensed health care professional to learn if there are

any specific supplements that may be required, for example vitamin D to support an optimal level in your body. Vitamin D can play a key role in fighting infections and regulating autoimmunity in addition to other important functions. Sleep 7-9 hours every night as your body relies on sleep to restore and repair from the daily exposure to stress and toxins. Chronic sleep deprivation can significantly reduce immune function. Staying well during travel requires some extra awareness and planning but the results are well worth the effort. To minimize your risk of illness during air travel, researchers with the Universi-

Plastic trays and bins used at airport security checkpoints had the highest level of viruses in this study. Results found proof of viruses on 10 percent of surfaces, with security trays as the most common culprit. Viruses were also found on payment terminals, staircase rails, and passport checking counters. This study found no respiratory viruses on toilet surfaces. Inside the airplane be mindful that the flu virus can live on a hard surface for about 24 hours, so wiping down tray tables and arm rests could help. Tray tables are reportedly cleaned once daily at night but may not be cleaned between flights. Turning on the air vent to allow for circulation of the air in front of you, choosing a window seat where there is less traffic, avoiding caffeine and alcohol to limit risk of dehydration and using a nasal spray are other strategies. To stay well while traveling on a cruise ship seize the opportunity to continue an exercise routine or try a yoga or stretching class. Keep well hydrated with non-alcoholic | 13 |


fluids. Unplug from the phone or computer to relax and give your mind a vacation. On the seas, in the air or on land, thorough handwashing is the number one way to prevent the flu and other respiratory infections. This simple tool is often overlooked but remains an essential line of defense. Scrub your hands thoroughly with soap and water for at least 20 seconds to remove viruses and bacteria. Twenty seconds is about the time it takes to sing the “Happy Birthday” song twice or the ABC’s one time through. Try it at home and see just how long 20 seconds can be. Avoid touching the eyes, nose or mouth without first washing your hands, as viruses and bacteria can be easily deposited in these areas. If it is not possible to wash with soap and water, consider using a hand sanitizer.

Did you know that stress can make you sick when exposed to a cold virus? Dr. Leonard Cohen, a renowned stress researcher for 30 years, explains that “when we are under continuous stress, cells of the immune system are unable to respond properly and…produce levels of inflammation that lead to disease”. “All disease begins in the gut” said Hippocrates nearly 2,000 years ago and this wisdom is an exciting frontier in medicine today. Our understanding of the digestive system as the “gateway to health” is supported by a growing body of evidence and the fact that an estimated 80% of your immune system resides in the gut. Chronic stress has a negative impact on digestive health and this gut-brain connection offers opportunity for improving health by managing

stress and improving the health of the entire digestive system. Stress management strategies include mindfulness activities, for example connecting with nature, prayer, meditation, massage therapy, aromatherapy, essential oils, and acupuncture to name a few. Exercise is a great stress reliever and enhances the immune system by slowing the release of stress hormones in the body. Be encouraged that the strategies you use to avoid getting sick during this flu season and beyond are the same tools that will support your health all throughout the year. Consider adding these to your Plan for Health to help you be well and stay well to the fullest extent possible.

A family came in to get my help with obtaining Aide & Attendant Care Benefits from the VA for their father, who suffers with Dementia. Which Room is the Worst Room of the House for Falls? As we age our ability to stand or walk over obstacles becomes more diďŹƒcult and our fall risk increases. There are simple steps that we can use to prevent falls. One universal issue that my customers had was throw rugs, these rugs should be thrown out. Clearing floors of all things that pose a trip hazard can drastically reduce the risk of having a walker or a cane catch an edge of a rug and causing a major fall. The next area that needs to be addressed is the furniture arrangement in the house, eliminating any unnecessary furniture in a room can improve the walk way and make getting a walker or wheelchair

through the home much safer. By far the worst room in the house is the bathroom, people fall in the bathroom more than any other room in the house. Taking time to evaluate your bathroom for hazards and having grab bars installed in key areas can give you a firm grip on your transfer into the bathroom. In the shower there are many options available, shower chairs fit inside the tub and give you a place to sit comfortably, transfer benches are a little bigger and they allow you to sit down on the edge of the tub

Communication – What's Really Important? Over the years I have noticed two missing, but important, components in Dementia Care. For a variety of reasons, patience and compassion are often ignored or forgotten. This is seen most often in the way caregivers communicate with those with dementia. My best teachers have been those who I cared for. My husband and I had two ladies with dementia live in our home who taught us valuable lessons. Our first teacher was a precious lady in her 90’s who we called Grandma. In the morning she would wake up asking for help to get ready for church. I would tell her that it was Friday and

she would reply, “it is?!” After a few minutes she would ask what she should wear to church, and I would again tell her it was Friday. This scenario continued until Grandma was settled in her little red lounge chair. She taught me that for her, it was the first time every time. We later had another lady arrive and she also became a part of our family. They each had their own room and soon settled in. I began noticing they were always in the same room and then their belongings followed. Thinking the changes were made due to confusion, I again separated their belongings into their own rooms. It all changed when they explained to me they

had been friends for a long time (they hadn’t) and wanted to be together. This was a lesson for me. Their reality made them comfortable and happy. They remained as close friends until Grandma moved to heaven. Over the years, I have gained practical knowledge that has allowed me to teach others. Two important lessons: listen as if it’s the first time you heard it and compassion is more important than reinforcing our reality.

In 2017, about 174 million people worked and paid Social Security taxes and about 62 million people received monthly Social Security benefits. We want you to understand what Social Security can mean to you and your family’s financial future. The publication, Understanding the Benefits, explains the basics of the Social Security retirement, disability, and survivors insurance programs. Some only have their public pension coverage, and other government employees have both a public pen-

sion and Social Security coverage. Medicare is the federal health insurance program for people who are 65 or older and certain younger people with disabilities. Medicare Part A (hospital insurance) helps pay for inpatient hospital stays, care in a skilled nursing facility, hospice care, and some home health care. Medicare Part B (medical insurance) helps pay for certain doctors' services, outpatient care, medical supplies, and some preventive services. Medicare Part C (Medicare Advantage plans) is a type of Medicare health plan offered by a private company that contracts with Medicare. Medicare Advantage plans provide all of your Part A and Part B benefits. Medicare Advantage plans may also include Medicare Part D

When you apply for Medicare, you can sign up for Part A (hospital insurance) and Part B (medical insurance). Because you must pay a premium for Part B coverage, you can turn it down. However, if you decide to enroll in Part B later on, you may have to pay a late enrollment penalty for as long as you have Part B coverage. Your monthly premium will go up 10 percent for each 12-month period you were eligible for Part B, but didn’t sign up for it, unless you qualify for a special enrollment period. Prep time 15 minutes  Serves 12+

1 can solid packed pumpkin 2 cups of sugar 1 cup vegetable oil 2 eggs 2 tsp vanilla extract 4 cups of flour 4 tsp baking powder 2 tsp cinnamon 1 tsp salt 2 tsp baking soda 2 tblsp milk 2 cups (1 small bag) semi-sweet chocolate chips.

My co-worker brought these cookies to work and had me try them. Wow! Yum! I just knew these had to be my October recipe! I haven’t tried decorating them but wouldn’t that be cute for your Halloween Party? Let me know how they come out!

DIRECTIONS: Makes abundant cookies depending on size Bake at 375 degrees for 10-12 minutes making adjustments for your oven. � Mix pumpkin, sugar, oil, eggs and vanilla together in large mixing bowl. � Mix flour, baking powder, cinnamon and salt in bowl and add to pumpkin mixture.  Dissolve baking soda in the milk and add to batter until well combined.  Hand fold in chocolate chips.  Drop on parchment covered baking sheet by heaping teaspoons and place in preheated 375 degree oven. Bake 10 to 12 minutes, checking after 8 minutes.  Cool on baking rack
