Capturing the Stories that Matter

H

appy New Year! I hesitate to start this month’s column by writing what everyone else is thinking, but it’s true: “I can’t believe it’s 2018! Where does the time go?” If only there was a way we could make time stand still. We can’t stop a ticking clock, but we can treasure life’s precious moments by honoring our collective past, individual memories and each other’s legacies. LEGACY…It’s a powerful word, and it can refer to anything handed down from the past. Legacies are the stories of our lives that encapsulate the moments that define us. They’re vitally important to celebrating fleeting experiences. And, they’re the result of taking care to translate these experiences into enduring stories of honor, courage, passion and compassion. Stories matter! Aging Tree Illustrated is now Legacy. Our new magazine format contains all the content you’ve come to love, such as, in this issue, folic acid awareness, Medicare deductibles information, travel tips, amazing recipes, computer know-how, and much more. But now, each issue will be kicked off with a feature that illustrates the legacy of a local senior whose story would be gone forever if we hadn’t captured it. We are proud and excited to have this important purpose. In Legacy magazine, we’ll tell timeless stories and share the lessons and experiences within them. In this issue, our feature story, “Wings of Love,” recounts the 56 missions that one local gentleman had to undertake to finally get home. This Air Force pilot flew President Johnson, and had many harrowingly close calls with death. His legacy is partly about these incredible experiences in flight, but also his dear family, including his 3 great-grandchildren. His wife of 65 years passed away after our interviewing process, and with her, his legacy has been further defined. It should come as no surprise that many legacies are enveloped in love and dedication. His is no different. So, join us on this important journey of preserving stories in 2018. As you read about others’ legacies, you’ll be compelled to further define your own. Make your days great…you’re in charge of them.

ave you ever been completely surprised by a destination? I am a lover of travel, but that doesn’t mean the picture of a destination in my mind matches up with reality. Spain is the perfect example of this.

visit is the beautiful architecture. It is nothing like any other part of Europe I have ever seen. The architecture is so whimsical, and interesting. La Sagrada Familia is a medieval cathedral dedicated to the Holy Family that was dreamed up by Antoni Gaudi. The cathedral has been under

My first time visiting Spain was the most pleasant surprise I could have ever dreamed of. I planned a Mediterranean cruise departing from Barcelona, and my focus was to visit France and Italy. Unbeknownst to myself and my husband, Spain was the absolute best country along our journey. Of course, the trip was spectacular, but our memories of Spain made us plan on going back again and again. I think what struck me first and has stayed with me since that first

construction for over 130 years, and is estimated to be completed between 2020 and 2040. Though this famous cathedral is still unfinished, over 2.8 million visitors per year go to see this spectacular sight, making it the most visited site in all of Spain. Gaudi is absolutely one of the most interesting architects I have ever had the pleasure of seeing the works of. I would have to say he is my favorite by far. So creative and unique. To me, La Sagrada Familia actually looks as

the most intricate and detailed work one could ever imagine. The windows of the cathedral allow light to bounce off of the tan stone in the most perfect way. The ceiling of the cathedral actually mimics bones (but if you want to see bones check out his dragon house). And carvings are literally covering the entire cathedral from top to bottom. Even the doors are carved in the most whimsical way, looking like ivy leaves. |6|


Gaudi did so much more than build a church...Though it’s the most visited sight in all of Spain, the other sights he had his hands and mind in were the Park Güell, a beautiful and vibrant park with ornately mosaicked lizards, butterflies, and walls. The park is a UNESCO World Heritage Site and is a pure reflection of Gaudi’s artistic gift. There’s also Casa Ballto, an entire mansion that is designed around the skeleton of a dragon. The roof has the shape of a dragon’s spine, the fantastical colors are shown through mosaicked stone and glass, and the inside twists and turns are like the mythical creature itself. This would be a perfect residence for the Mother of Dragons herself, Khaleesi, from Game of Thrones. There must have been some sort of magical inspiration from Gaudi

that inspired the GOT writers, as many more regions in Spain are filming locations for the show, too. If architecture and history are at all your thing, I highly recommend visiting Spain. I cannot wait to go back to Spain in Septem-

I guess you are all old enough to learn how “I won the War in Korea.” Why talk about an insignificant, senseless war so long ago? I now realize that I never fully explained my small role in the Korean War conflict to any of you. Not even your mother. The reason was because of the violence and loss of life and I was reluctant to talk about this unpleasant subject and turbulent time in my life. You should know that I kept a large framed picture of your mother in my closet of my living quarters. Married

We flew mostly at night with little visual reference and were often times not sure exactly where we were. Our mission was to force the North Korean/Chinese to keep their heads down, and slow the flow of equipment and troops to the front by inflicting as much damage to their supply system as possible. I remembered telling my crew, after one of our first missions in Korea, that “I didn’t see anything in North Korea worth our lives and all three of us have a lot of living to do after we complete our tour”. No greater words have been spoken in my opinion. I know that I have done a lot of living since that time, long ago, and I hope my two companions and friends have also. Millions of words have been written describing the Korean War

as a war that should be forgotten. I’ll never forget it, because I was there. I will always remember the great sorrow that 54,246 Americans died and 103,246 were wounded. 5,178 are still missing. Let’s hope that future generations learn about war from books. Since that time, the few remaining photos of my time in Korea are slowly fading away, along with the memories of my time served. A cheerful, spry man, now 91, Mr. Williams’ eyes smiled as he, surrounded by his family, proudly shared the events of his life as a young Air Force Pilot. After marrying his sweetheart, Helen in 1952, at the ripe age of 22, William obtained the rank of 2nd lieutenant in the Air Force. “When I flew Air Evac as a 22 year old First Pilot flying a DC3 and had 7 or 8 wounded patients in the back, that’s when I learned how to fly. I realized the terrific responsibility to get them to a burn unit, or wherever they needed to go so they could get home.” Shortly thereafter, while only 25 and Helen only 22, he was sent to Korea on a combat tour. He was unceremoniously assigned as a

B26 pilot in the Korean War. “As B26 crews, the group of us were a motley, disorganized, minimally qualified, cocky group eager to do our part in bringing this senseless and unpopular war to an end”, he proclaimed. “We each had to complete 50 missions to fulfill our deployment and return home.” A risky and life threatening task,

so we were sure to see our targets and limit movement of the N. Koreans. I never saw a train, never once. The whole country was devastated. There were just a bunch of bomb craters. This one particular night, my flight navigator was searching for our target. We spotted the bridge in a canyon we were supposed to hit. The navigator was in the right seat,

Folate Rich Foods

Folic Acid to the Rescue

N

ational Folic Awareness Week is January 8 – 14th. This nutrient is vital to the development of

healthy cells in the body. It is an important regulator of metabolism. It helps with the synthesis of proteins. Folate and folic acid are often used interchangeably though they are not the same. Folic acid, also known as vitamin B9, is laboratory created while folate is present in whole foods. Food sources of folate include dark green leafy vegetables, kale, spinach, broccoli, arugula, endive, green beans, asparagus, swiss chard, lentils, turnip greens and mustard greens. Strawberries, orange juice, oranges and other citrus fruits are also good but to a lesser extent. Avocados, soy beans, pinto beans, lima beans, chick peas, white beans, wild rice and peas contain folate. Cereal and grain products, such as

bread and pasta are also sources. Deficiencies may appear in seniors, alcoholics and persons taking select drugs, for example, trimethoprim, methotrexate and

phenytoin. Here are a few questions I often hear concerning folic acid: Doesn’t this have something to do with birth defects? Much of the conclusive research on folic acid applies to the time surrounding conception. The recognition that higher folate intake at this time greatly reduces the incidence of serious birth defects of the brain and spine, called neural tube defects, resulted in the mandatory fortification of flour and grain products in the United States in 1996. It was estimated that 70% of these defects would be prevented and in the 2 years following the start of fortification the rate of these defects decreased by 25%.

What is the connection between folic acid and the aging brain?

In 2002 neurologist Edward Reynolds published in The BMJ a review on folate deficiency, depression and dementia in the aging nervous system. Although this review identified the importance of folate in the nervous system of all ages he noted the need for more research identified to find a clear connection between folate levels and mood, drive, initiative, alertness, concentration, psychomotor speed and social activity. In December of 2005 Dutch researchers reported that older adults may get mental benefits, including better memory, by taking folic acid supplements. Researchers compared test scores after three years of supplementation to results after a placebo supplement in 818 older adults without low folate levels. Test scores showed memory improvements in the folic acid group. This group also had a slower decline in scores of other mental skills and muscle speed skills. In November of 2012 researchers in the Netherlands looked at the effects of taking supplements of two B vitamins for two years in nearly 3,000 healthy people who did not have a vitamin deficiency. blood levels of a protein building block called homocysteine, which has been linked to an increased risk of memory loss and Alzhei-

mer's disease. The results, published in the Journal of Neurology, showed that the people who took the B vitamins had decreased levels of homocysteine over the study period. However, the test scores didn't differ between the two groups, suggesting the supplements didn't affect people's thinking performance, according to the study.

concerned about getting enough folate you can increase the amount of the foods listed earlier. Low folate levels may occur when the diet is especially poor and is related to cognitive decline. Are there any risks from supplementation with folic acid? The recommended daily amount is 400 micrograms and is possible to obtain through dietary sources. The Upper Tolerable Intake level is 1,000 micrograms. Side effects when excessive amounts of folic acid are consumed include dizziness, sleeping problems, flatulence (gas), bitter taste, decreased appetite, abdominal problems, skin reactions and nausea. Excess folic acid can be excreted with proper kidney function. Too much folic acid can mask a B12 deficiency. While a diet high in food sources of folate is associated with a decreased risk of cancer, similar ef| 14 |


fects have not been reported with vitamin B9 supplementation with some additional concerns. To determine what supplementation might be appropriate consult your health care professional. Finding the optimal nutritional environment for a healthy brain is related to number of complex factors. The degree to which folate or folic acid contributes to this goal remains a keen area of research due to the connections found at times among mood, depression, cognitive functioning and dementia. We know that levels of folate in the blood and spinal fluid decrease with age and the level of homocysteine rises with age which is a concern given the connection between homocysteine and risk of heart disease. Given the mixed results surrounding the effects of folic acid supplementation on the aging brain what can we do that will make the difference? • Get adequate sleep. • More fruits, vegetables and healthy omega 3s • Don’t smoke, limit alcohol • Move your body/Exercise. Aim for 15-30 minutes daily. • Keep stress levels low. • Play board games, puzzles and word games. • Be social and stay connected. • Challenge yourself. New Year’s Good Luck Traditions Around the World

Within every country there are different traditions and rituals passed down from generation to generation, which are believed to bring good fortune and happiness in the year to come. I have compiled a short list of interesting cultural traditions from all over you probably didn’t know about. • United States: A kiss at the stroke of midnight signifies the purification into the New Year, and making deafening noise is said to drive away evil spirits. • England: The first guest to arrive at their home is believed to hold their good fortune. They believe it should be a man bearing gifts, such as coal for the fire or a loaf of bread for the table. The guest will enter through the front door and exit out the back. Any guest who shows up empty handed or unwanted will not be allowed to enter the home first. • Spain and Peru: These countries have similar traditions, in that they eat 12 grapes to bring good luck in the 12 months ahead. However, in Peru they eat a 13th grape to insure their good luck. • Japan: In Japan they decorate their homes with pine branches symbolizing longevity, a bamboo stalk symbolizing prosperity, and a plum blossom showing nobility. • Greece and Norway: Also having similar traditions, in Greece they bake a bread with a coin inside, and if the third slice has the coin, it is said that spring will be early that year. Similarly, Norwegians make rice pudding with one whole almond, and whoever’s serving holds the almond is guaranteed wealth that year. • Sicily: Lasagna is served on New Year’s Day, because any other noodle served is said to bring bad luck. • China: The Chinese New Year is not on January 1, but they still celebrate old traditions to ring in their new start. Every front door is painted with a fresh coat of red paint, symbolizing good luck and happiness. Also, families prepare feasts without using knives. All knives are put away for 24 hours to keep anyone form cutting themselves, because it is thought to cut the families’ good luck for the year. As the holiday season quickly approaches, we are sure to make plans for our New Year’s resolutions. Some people may choose to quit smoking and/or drinking, get out of debt, learn new skills, or lose weight and live a more active lifestyle.

Estate planning helps ensure your affairs run smoothly if or when the time comes that you cannot manage them yourself. Here are a few key elements of a well-rounded, thorough estate plan: 1. Durable Power of Attorney - A Durable Power of Attorney appoints one or more people to manage your finances and legal matters if you are no longer able to do so. Having a Durable Power of Attorney allows you to assign an “agent” to make decisions on your behalf, keeping your family from having to work with the legal system to appoint an overseer – a process that can be stressful, time consuming and expensive.

2. Health Care Power of Attorney - A Health Care Power of Attorney appoints one or more people to handle your health care decisions, and like a Durable Power of Attorney, only if you become unable to do so yourself. While you’re still healthy, it’s wise to communicate your health care and end-of-life wishes to your designated representative so they’re followed accordingly. 3. HIPAA Release - In addition to a health care proxy, be sure to complete a HIPAA release. HIPAA is a law that bars medical practitioners from releasing medical information to anyone, even a spouse or child, without your signed release/permission. 4. Will - Your Will says who will take ownership of your property and who will oversee your affairs upon your death. Expect that even when a Will is created, a probate process likely will follow

Although tobacco and alcohol are responsible for most oral cancers, reports show an increase in the disease in patients with little or no history of smoking or drinking. Oral cancer can occur anywhere in the mouth, on the surface of the tongue, the lips, inside the cheek, in the gums, in the roof and floor of the mouth, in the tonsils, and in the salivary glands. According to the American Society of Clinical Oncology, 48,330 Americans received a diagnosis of oral or pharyngeal cancer in 2016, and about 9,570 deaths were predicted. Mouth cancer mostly happens after the age of 40, and the risk is more than twice as high in men as it is in women. Symptoms may include a red patch in the mouth, ulcers that do not heal, pain when swallowing, poorly fitting dentures, jaw pain or stiffness, difficulty chewing, hoarseness, soreness. Having any of these symptoms does not mean that a person has mouth cancer, but can be life threatening if not diagnosed and treated early. The mouth can be examined by healthcare professionals with much greater ease and accuracy than many other parts of the body.

A Homemaker or Home Health Aide can be used as a part of an alternative to nursing home care, and as a way to get Respite Care

at home for Veterans and their family caregiver. The services of a Homemaker or Home Health Aide can help Veterans remain living in their own home and can serve Veterans of any age. Since Homemaker Home Health Aide services are part of a service within the VHA Standard Medical Benefits Package, all enrolled Veterans are eligible if they meet the clinical need for the service. A modest copay for Homemaker and Home Health Aide services may be charged based on your VA service-connected disability status. Homemaker Home Health Aide services can be used in combination with other Home and Community Based Services. Services are based on your assessed needs. Talk with a VA social worker to find out what specific help you may be able to receive. For example, an aide may be able to come to your house several times a week or just once in a while. Both laptops and desktops need their vents exposed. Laptops should sit on a flat, well vented surface – not a pillow on your lap! 6. If your system is running a bit on the slow side, you may not need a new computer, rather, just a good deep cleaning. Doing so can bring a lot of old systems back to life and run better. DIRECTIONS:

Place milk, ketchup, Worcestershire Sauce, allspice pepper salt egg and onion in a large bowl. Whisk together. Break up bread into chunks and add to mixture. Let set until soupy and soft. Add Hamburger and pork by breaking apart with your fingers and placing in bread mixture. Once all in, squeeze between fingers to mix together until all uniform. Melt butter and place in baking pan.
