THE ROTHSCHILDS & BATUMI

It is always a pleasant surprise for the majority of tourists fascinated by the unique nature of Ajara and beauty of Batumi to learn that the development of Batumi is connected with Baron Alphonse Rothschild, a French oil tycoon of Jewish origin, In the Nobel Brothers Technological Museum. The name of the Rothschild family was connected to the history of Batumi in the 1880s, when Batumi became more and more famous as a port marked on the world map. The most important thing for the economic development of Batumi was the railway, which would connect Batumi with Tbilisi and Baku and make the transportation of oil from Batumi even more profitable. Baron Rothschild understood the importance of the railway well, that’s why he financed the construction of the railway line for transporting oil to Baku in 1883 with 10 thousand US dollars.

“Caspia - Black Sea Oil Industry and Trade Organization” - was the name of Alphonse Rothschild’s company, which initially had an oil can factory in Batumi, and then the company expanded its activities and even had its own berths in Batumi harbor in addition to the factory.

In 1906, the first pipeline of 883 kilometers along the railway, the so-called “Oil pipeline” appeared. During the First World War and its aftermath, the South Caucasus became the site of international conflicts in

order to influence oil extraction and transportation. Then there was the Soviet period, during which, in particular, by 1941, Baku produced three-quarters of Soviet oil.

It should be said without exaggeration that the family influence not only extended on its economy but also beautiful architecture. One of the most beautiful and impressive buildings in terms of architecture and design in Batumi was built by Alphonse Rothschild at the end of the 19th century. To build the house, the baron brought building materials as well as workers from France. This beautiful building stood near the boulevard and overlooked the sea and the boulevard. The two-story house looked luxurious and still does. Rothschild’s house has withstood many tests of history and is still standing today in Batumi, on Rustaveli Street, where the Ioseb Charkvian Maternity Hospital of Batumi is currently located. (N39 of Rustaveli).

In the book “Reports of French authors about 19th century Georgia” we read the travel notes of Jules Napoleon Ney, where he also provides information about Batumi at that time.

“It was a wonderful view when leaving Batumi. The area of the city was given a very lively appearance by important oil refineries, a large box factory of the Rothschild house and many white-painted cisterns, numerous red-

As we learn from the book, the Batumi-Baku railway line and oil pipeline were opened in 1883 (1897-1907), which led to the growth of the city. During this period, industrial magnates worked in Batumi - the Swedish brothers Alfred, Robert and Ludwig Nobel and Baron Alphonse de Rothschild. In the house where the Nobels had an

office, there is now a technology museum named after the Nobel brothers (Tamari settlement, Leselidze 3a), and if you visit the museum, you will learn very interesting stories about the life and work of the millionaire oil tycoon, who left an invaluable treasure to the city in the form of the mentioned building.

5.8 km from Khinotsminda, in the vicinity of Mount Sarbiela, there is a crossroads, from where a 4.4 km hiking trail leads to the north to Lake Tbikeli, and a 9-km trail to Jvarimindori to the east. The trail from Khinotsminda to Lake Tbikeli is marked, its length is 10 km.

Lake Tbikeli, located between the mountains, fascinates at first glance with its oval shape and mirror surface. Around it you will find a very clean meadow and unspoiled nature.

The distance from the village of Akho to the beginning of the walking route is 11 km. This section of the route can be driven by an off-road vehicle. After passing 6.6 km to the north, the route enters the village of Khino. Only one family lives in this village, there is a monastery and the ruins of an old church. According to legend, the name “Khino” is associated with Queen Tamar. Once this village was visited by Queen Tamara and a big feast was held in her honor. Hence the name of the village “Khino” (Lkhini, Lkhena - feast / feast) originated.

The 4-kilometer section of the trail from Khino to Khinotsminda passes through the forest along a dirt road. If you accidentally bump into a vehicle while traveling on the road, you can take it and save your time.

Lake Tbikeli is located at an altitude of 2200 meters above sea level. If you look closely at the clear water, you will easily notice the Caucasian newts in it, listed in the Red Book of Georgia.

You can spend your second night in tents near Lake Tbikeli. It is important to know that there is no telephone connection or the Internet and you cannot contact anyone from here if necessary. In addition, the lake is foggy in the evenings and windy at night. Considering all of the above, it is better to return and spend the night in tents at the already marked place (in Khinotsminda).

Jvarimindori is a spacious alpine meadow, often covered with fog, with wooden cabins. A traveler who has come here from afar can relax in these houses and eat fresh local products.

TOP 6 REASONS TO VISIT AJARA

THERE ARE MANY REASONS TO VISIT ADJARA BUT HERE ARE OUR TOP 6:

1. GEORGIAN HOSPITALITY AND GOODWILL

Exceptional hospitality and the goodwill of the Georgian people make every trip to Georgia very special. According to an ancient Georgian proverb, God sends visitors to Georgia. As such, Georgian culture has developed a strong culture of hospitality. As a guest in Georgia, you will not only experience unparalleled hospitality, but you will also be astounded by the genuine kindness of the Georgian people.

2. THE CULTURE OF GEORGIAN SUPRA AND TRADITION OF TAMADA

3. HISTORICAL AND MODERN ARCHITECTURE

Batumi is one of the oldest cities in Georgia founded as before the Common Era. The initial settlement “Batus” is mentioned in sources from the 4th century BCE. The city’s unique history has contributed to the city’s vast architectural diversity. In the 19th century, during the “Porto Franco” period, European architects completed a number of interesting architectural projects. Later during the soviet and post-soviet times, Batumi was developed into a popular seaport and tourist destination. To this day, Batumi is still distinguished by a variety of buildings of different architectural styles.

The Georgian Supra (a traditional feast) has no equivalent around the world. The culture of toasting does exist in many cultures; however, the Georgian “Tamada” or toastmaster has no parallel. The role of the Tamada is to lead the Supra. The Tamada is considered to be the most honorable member of a traditional Georgian Supra. The ideal Tamada is well educated, has extensive knowledge of Georgia’s history and culture, is eloquent, is sociable, has a good sense of humor and has musical ability. The Tamada should be able to lead a series of toasts on a variety of topics. He should also be able to entertain guests with poems, songs and interesting stories. The Georgian Supra is a fundamental element of Georgian identity, which is why the tradition has been preserved to this very day. In total, there are approximately 300 different toasts, some of which are obligatory for each Supra, regardless of its duration.

In total, there are around 50 different grape species in Ajara that are still used in wine production to this very day.

Georgia is one of the oldest Christian countries in the world, which has had a significant influence on Georgian culture. Gonio, one of the oldest settlements in Georgia, is located in Ajara. It was inhabited in the 8th-7th century BCE. The Gonio Fortress, which was built by the Romans, has mythic ties to the legend of Jason and the Argonauts. Ajara is famous for its stone-arch bridges and different religious monuments. The monasteries, Gelati and Bagrati recognized by UNESCO as World Heritage Sites are located just a few hours’ drive from Batumi. Tbilisi, Mtskheta and other parts of Georgia are also very rich in unique and diverse cultural monuments. Want to start your official family life in an unforgettable way, experience emotional moments together without traveling the world and the seven seas?

Georgia is your best option then. Not just because you can register your marriage 24/7 in so called city of love, Sighnaghi. Love lives in every corner of Georgia, if you look carefully. And you can find a corner for yourself!

For extreme lovers

Together in the air, on the ground and under the ground? Easy. Try paragliding in Kazbegi or Gudauri, have an off road drive in Udabno semi desert, explore the down part of Okatse Canyon, swim in the mountainous rivers or try rafting on them.

Finally, book the wedding ceremony in one of halls of Prometheus Cave! Your feelings have never been deeper.

For romance lovers

Get lost and find yourself on the cobbled tiny streets of Old Tbilisi, have a funicular and Ferris wheel on Mtatsminda mount, and have a nice portion of typical Tbilsii doughnuts and Laghidze waters in a restaurant on the top.

Head to Kakheti, enjoy tete-a-tete on one of the lake resorts, walk on the stone paved streets of Sighnaghi, that town where brides and grooms are welcome anytime, taste wine in the small wineries or check out the cellar of Chavchavadze mansion in Tsinandali.

WEDDING & HONEYMOON IN GEORGIA

For food lovers

Dear friends who love eating and cooking, you have just found a place to be! Travel from East to West of Georgia, and feel the diversity. Of course, khachapuri will remain your true satellite, but be sure that in the East you have tried juicy boiled beef brisket (khashlama), meat barbeque (mtsvadi), stewed lamb with vegetables and spices (chakapuli), spinach and greens stuffed pie (pkhlovani), buffalo matsoni, which is made only in Mzisguli village in Kakheti, Pasanaurian khinkali and, of course, fresh Kakhetian churchkhela and pelamushi.

In the West you should taste tender cheese in milk-and-mint sauce (gebzhalia), boiled samp with cheese (elarji), different kinds of greens mixed with walnut sauce (pkhali), milky cheeses and super spicy Megrelian Ajika, lasagna with cheese (achma), borano (Ajarian omelette)…

Book or ask your host about a master class in Georgian cuisine, learn how to prepare things yourself. Buy spices and sauces on small local markets to bring Georgian aroma and taste to your home!

For relax lovers

Add Tbilisi sulfur baths to your must visit list, to relax your body and experience real Georgia. Try Kakhetian wine spa or treat yourself at any of Kakhetian lake resorts: Lopota or Kvareli.

Another smart decision is to go to Borjomi to relax in one of spa hotels or even guest houses there. Try one of the most effective mineral waters of the world, which is the most famous Georgian water ever. In the city park you can drink it from two springs, and in the hotels experienced medical staff will heal your body with this magic natural mean.

Try Georgian national costumes on, or be true to your style – your vacation together will be really unforgettable!

Natural diversity and wide range of activities can guarantee any kind of vacation: from relaxing romantic tete-a-tete up to more active holidays together.

WEDDING IN GEORGIA WEDDING TRADITIONS

Georgia is a bright hospitable country with beautiful mountain landscapes, the delicious variety of national dishes, ancient temples, and unique wedding traditions. Furthermore, the marriage registered in Georgia is valid throughout the world.

The real Georgian wedding is a bright bustling colourful event during which many of old traditions are respected. Traditionally, a huge number of guests is invited to the Georgian wedding – their number may exceed several hundred.

Of course, not all modern couples follow all the old national traditions of their ancestors. But most of the young still prefer traditional weddings. Before the ceremony, the couple must go through three stages: the courtship, engagement and wedding ceremony.

Earlier in the old days, parents were involved in the choice of the bride or groom. Now the young choose their life partners, following their hearts. The only important point is that marriage must be approved by the parents of both sides.

On the day of the wedding, the beautiful ceremony of entering to the grooms’ house is held. First, the groom goes up to the roof of the house and releases a white bird. Then he goes down to the bride, and they are treated to the glass of wine. The groom makes a sip and then puts the engagement ring to the glass of wine and passes it to the bride. In the end, the groom gets the ring, hands it to the bride and says beautiful words of love and fidelity.

Almost all couples get married at church and register their marriage the same day. The feast is often held in a restaurant because the house can not fit such a huge number of guests. During the celebration, the tables burst from a variety of dishes and drinks. Tamada says beautiful toasts – the first in honour of the bride and groom.

The guests present expensive presents or money for the newlyweds.

In general, the Georgian wedding is a colourful fun-filled memorable spectacle. If you manage to take part in it, you will definitely have a good time.

In recent years, many foreign couples prefer to celebrate their weddings in Georgia – to get married in beautiful churches, make great wedding pictures on the background of the Georgian nature and celebrate on Georgian traditions. (Source: mygeotrip.com)

STORY OF BCB MEMBER

Here, Chef Giga Simonishvili shares his recipe for DOLMA – CABBAGE LEAVES.

(Georgian: კომბოსტოს

ტოლმა

), known as Dolma in Armenia, Azerbaijan and Turkey, is a popular meal in Georgia and many other countries and there are many variations.

It usually describes a filled, hollowed-out vegetable or a filling wrapped in a leaf. Vegetables used to contain a filling include tomato, eggplant, pepper, apple and zucchini. Leaf wrappings include vine and cabbage.

AJARA Life Magazine 72 DOLMA
კომბოსტოს ტოლმა
CABBAGE LEAVES

So, prepare your apron and kitchen tools and here we go:

TOLMA ( DOLMA ) – CABBAGE LEAVES

Ingredients (up to 20 Dolmas):

1 medium size cabbage, 300 grams of ground beef/pork mix, 80 grams of rice, 2 cloves of garlic (we used 1 very large one), 2 large onions, 2 large tomatoes, 3 table spoons of sour cream, 3 bay leaves, black pepper, 1 tsp of blue fenugreek, 1 tsp of dried coriander, salt and 30 ml of oil.

Instructions

Add the garlic and all spices and salt to a mortar and crush with a pestle. Cut the tomatoes into medium slices and add to a mixing bowl with half of the crushed garlic and spice mixture, a bay leaf and sour cream. Mix all ingredients with a spoon, ensuring that the sour cream is thoroughly mixed in. Then add half a liter of water and 1 tbs of oil and mix again. When finished, put the bowl to one side.

Boil the rice in salty water, being careful not to over-boil it. Chop and fry the onions in oil. Add the cooked rice and onions to a mixing bowl. Add the meat and the remaining half of the crushed garlic and spice mixture. Mix all ingredients well.

Boil water in a deep (preferably a cast iron) pan, add 1 tbs of salt and add the cabbage. Leave in the water for 5 minutes. The aim is to soften the cabbage leaves not boil them. Rotate the cabbage to enable all of the leaf area to soften. Remove the cabbage from the pan and carefully peel off the leaves. Place 1.5 tbs of the mixture in each leaf and Wrap the sides of the leaf around the mixture. Line a deep pot with cabbage leaves to form a ‘nest’ that will protect the rolled up leaves and carefully place the rolled up tolma in the ‘nest’.

Cover the rolled up tolma with more cabbage leaves and cover with a bowl. Weight the bowl – we used a heavy pestle. Pour in the tomato and sour cream mixture and cover the pot. Boil the ingredients and then allow to simmer for 50 minutes. It may need a little longer (depending on the cabbage).

The stuffed cabbage leaves should be served hot or warm. Georgians eat them with sour cream.

Bon appetit!
